Iam so glad to be bidding farewell to the scorching days of high summer. And, while autumn in our part of the world might not be a season of mists and mellow fruitfulness, the faint chill in the air is more than welcome.

This is the time of year, with a new school term just started, when we traditionally welcome lots of fresh faces in our midst with families arriving from across the world to join the burgeoning workforce. So, in an effort to help them settle in, our cover story this month introduces a few of our favourite ways to spend our downtime in Qatar. We had some fun discussions deciding our top 10, I hope you agree with at least some of them.

It's also the season when we can, once again, embrace all things al fresco and, in our case, that often means dining. Our second feature highlights some, but by no means all, of our top outdoor dining spots. Give them a try and let me know what you think. For our regular dining section, we stayed inside to visit some fabulous restaurants serving up everything from Brazilian barbecue to a taste of Beirut – it’s certainly been a flavourful month. And one of my colleagues went on a gastronomic journey through the eateries at Marriott Marquis City Center Doha Hotel during a fabulous staycation –she didn’t want to leave.

Our travel pages take you to some gorgeous destinations that truly come into their own during autumn and we’ve got seriously cool seasonal vibes in this month’s Fashion Focus.

ROLL UP, ROLL UP

Get ready for a traditional-style circus experience as the Big Top comes to Porto Arabia’s open-air amphitheatre with The Pearl Cirque.

Staged at La Croisette by United Development Company (UDC), from October 17 to 26, the event will transform the amphitheatre into a whimsical circus arena, featuring a vintage-inspired tent adorned with nostalgic circus posters and illuminated by enchanting fair lights. The venue will host up to 240 spectators per show, ensuring an intimate and immersive experience for all.

The audience will be treated to a series of mesmerising daily performances, with three shows scheduled at 5pm, 7pm and 9pm. Each show will run for an hour and 30 minutes, featuring an incredible lineup of international acts.

From daring acrobats and skilled jugglers to hilarious clowns, mysterious mimes and captivating fire dancers, The Pearl Cirque will showcase a wide range of breathtaking performances.

At the heart of the spectacle will be a charismatic ringmaster, who will orchestrate the evening’s excitement, guiding the audience through a magical journey. A worldclass magician will also perform spellbinding tricks, while lively bubble performers will add a touch of enchantment by filling the arena with shimmering bubbles. In celebration of local heritage, The Pearl Cirque will feature

a special performance of the Qatari Ardha, a traditional sword dance that honours Qatari culture.

In addition to the live performances, families and visitors can enjoy a variety of fun-filled fair game booths set up around the venue, ensuring entertainment for all ages.

Get ready to welcome the cooler weather with the new menu from Jamavar Doha, which will be unveiled under the watchful of Michelin-starred Chef Surender Mohan.

The renowned pan-Indian dining destination will welcome back its Culinary Director and Executive Chef Surender, of Jamavar London and the newly opened Jamavar Dubai, to unveil its eagerly awaited winter menu on October 4. A distinguished figure in the culinary world, Chef Surender’s career spans almost three decades. His cooking, deeply influenced by India’s royal heritage, seamlessly blends traditional techniques with modern flavours and under his leadership, Jamavar London reclaimed its Michelin star in 2022.

Chef Surender’s visit to Doha offers a rare opportunity for food enthusiasts to experience his exceptional culinary skills firsthand. As well as launching Jamavar’s winter menu, he will also offer the opportunity for guests to enjoy an intricately crafted three-course Chef’s Tasting Menu, available exclusively from October 2 to 4.

The art of Hanadi Al Darwish is the inspiration for a limited-edition afternoon tea experience, A Canvas of Flavours, at Duchess at Four Seasons Resort and Residences at The Pearl-Qatar.

This captivating experience, running until October 31, features the artworks of renowned Qatari artist Hanadi Al Darwish, set against the elegant backdrop of the tea lounge. Her work has also been featured in numerous local and international exhibitions, and she has served on several art juries both in Qatar and abroad. Hanadi Al Darwish’s works are deeply rooted in the poetic nature of memory, with her artistic world woven from the threads of an ancient past. Through her technique of layering and accumulation, she evokes a sense of the possible disappearance of all things beautiful. Layers of fabric emerge within the frame and the movement of the brush across the fabric collages creates a game of concealment, inviting the viewer to engage in the act of discovery. Her pieces reflect her deep connection to Qatari culture

and artistic heritage, serving as the muse for this unique culinary offering. Guests can indulge in a selection of finely crafted teas and delectable treats that echo the colours and intricate designs of Al Darwish’s creations. A SENSE OF BELONGING

New Artist in Residence Exhibition explores the idea of home.

Fire Station: Artist in Residence’s latest showcase, A House Overlooking the World, features the work of 17 artists who were part of the residency programme from 2023 to 2024. On view until December 31, A House Overlooking the World is a metaphor reflecting the need to find a sense of self in a fast-changing world. It delves into the idea of a home within the contemporary realm raising questions of identity and belonging as seen through the eyes of the artists who got to showcase their artworks at the 65sq/m Garage Gallery.

The artists share rich and diverse narratives and emotions through three main themes: environmental, social and cultural explorations. And the exhibition aims to highlight the link to a person’s relationship with their environment. The exhibition showcases works by Somaia Dorzadeh (Iran), Hannah Fakhri (Qatar), Abdulla AlSallat (Qatar), Oleksandra Umanska (Ukraine), Charlotte Rodenberg (United States), Shuaa Al Kuwari (Qatar), Noora Al-Hardan (Qatar), Marco Bruno (Italy), Simone Carena (Italy), Aljaze AlNaimi (Qatar), Zainab AlShibani (Qatar), Aisha Al-Abdulla (Qatar), Mohammed AlEmadi (Qatar), Alkhuzama Alharami (Qatar), Ann McNally (Ireland), Alanoud Alghamdi (Saudi Arabia) and Maryam AlTajer (Bahrain).

The Fire Station is a world-class artist residency programme for residents of Qatar designed to nurture, energise and

promote the country’s artistic and creative community and enrich the art scene. Founded in 2015 and located in a fire station repurposed by Qatari architect Ibrahim Mohamed Jaidah, it offers a nine-month programme for creatives across all disciplines, enabling young artists to cultivate their talent through production support, curatorial advice and expert mentorships. During the residency, artists engage with professionals from all over the world who recognise Qatar as a growing centre of artistic talent and creativity. Over the past six years, the programme has welcomed 92 artists and expanded its duration to include a three-month stint at the prestigious Cite Internationale des Art in Paris and in New York City at Studio 209 NY, which is part of the International Studio & Curatorial Program (ISCP).

A FEW OF OUR FAVOURITE THINGS

Summer is finally over, the autumn school term has started and it’s the time of year when we traditionally welcome lots of new arrivals to Qatar. So, to get the newcomers off on the right foot – and maybe provide some inspiration for those of us who’ve been here a bit longer – we’re sharing our top 10 favourite things to do around the city and across the country.

A Flying Visit

We reported on this one when it launched back in June and we think it’s a great option for newcomers to get their bearings. You can get a real feel for the capital by taking to the skies in a Qatar Airways Cessna 208 Caravan for a 45-minute tour taking in some of our most iconic sights. Taking off from Doha International Airport Premium Terminal, you’ll fly over Al Thumama Stadium, Aspire Zone and Education City and then move towards Lusail Stadium, Al Bayt Stadium and Thakira Mangrove Forest. The journey will continue with flybys over The Pearl Island, Al Safliya Island, Katara Cultural Village and West Bay. Before heading back to the airport, you’ll also take in the Corniche, National Museum of Qatar, Museum of Islamic Art and Stadium 974 for a grand finish.

Cheer For A Robot Jockey

Did you know that racing camels can run at speeds of up to 65kph in short sprints? And camel racing is such a national obsession that Qatar even has a TV channel dedicated to showing the races. If you want to witness it in person, check out the camel racing at Al Shahaniya Racetrack. The season runs from October to February with races on Friday and Saturday afternoons – big events are usually scheduled late on in the season. The camels are ridden by toddlersized, robot jockeys, decked out in colourful silks, with remote controls operated by the owners, who can often be seen driving in their cars on the road that runs alongside the track, shouting encouragement. If you’ve never been, it’s quite a sight to behold. Around the track you’ll find a veritable camel city and it’s possible to visit the stables to encounter some of the most expensive camels in the world.

Down On The Farm

Don’t get us wrong, we love the hustle and bustle of the city with its huge range of arts, culture and happenings but, just sometimes, we feel the need to get away from it all. And, when that happens, there are a couple of places guaranteed to recharge the body and soul. Heenat Salma Farm, in Al Shaniya, is definitely one of them. It’s a serene space to reconnect with nature that offers lodging in elegant 40sq/m tents, a gorgeous handcrafted majlis area –it was built with materials from the farm – and great farm-to-table food crafted by the in-house chef using home-grown, organic goodies picked right on the doorstep. Take in artisanal workshops and educational programmes, learn about organic farming or just enjoy the chance to chill out around the fire pit in the evening. Pure bliss.

For The Footie Fans

OK, we love football (that’s soccer to our cousins from across the pond) and we know lots of you do too. We were lucky enough to visit several of Qatar’s iconic stadiums during that small event the country hosted in 2022 – yep, we’re talking about the FIFA World Cup, what else? But, we love going back to some of those same venues to take a look behind the scenes. At USD550, it’s a bit pricey, but it’s possible to take a fullday World Cup stadiums tour through viator.com. There’s also an official tour, running throughout October from 9am to 11.30am every Monday and Wednesday through Qatar Olympic and Sports Museum that takes you on a guided visit to the museum followed by an insider’s trip to Khalifa International Stadium. Or why not just set aside some time by yourself to visit each of the stadia, take your time and absorb the atmosphere – you can still feel the excitement.

There’s loads to do at Katara Cultural Village, from beach activities to walking tracks in the Katara Hills but we would strongly suggest you take time to explore the amphitheatre.

Spread over 3,275sq/m, this classical Greek-style amphitheatre reflects Islamic influences, particularly in its arched entrances. Walking there, when it’s quiet, gives a similar impression to visiting ancient Greek and Roman ruins – you can almost hear the crowds of yore shouting. But, if you can catch a live performance there, it’s really something special. Built to hold up to 5,000 spectators, the amphitheatre boasts gorgeous sea views on one side and looks out to the cultural village on the other. And don’t forget to check out The Force of Nature II statue, by Lorenzo Quinn, a huge art installation depicting Mother Nature holding the world in a sling, which stands between the amphitheatre and the water, showing humanity’s powerlessness in the face of nature.

Ogle An Oryx

The Arabian oryx is not just hardy, able to survive in our inhospitable climate, and beautiful, it’s also the national animal of Qatar, a prized symbol of our desert home. These animals are endangered but, thanks to the country’s conservation efforts in Operation Oryx, they were reintroduced to the wilderness in 1982 and several species now roam wild in Qatar’s remote places. The heart of the breeding programme is the Al Maha Sanctuary in Shahaniya. Call 4471 9632 to find out about a tour. These remarkable animals, with their long horns and distinctive white coats and markings, can also be found at the Al Samriya Oryx Reserve, which is dedicated to protecting Qatar’s national animal alongside other species such as gazelle, ostrich and peacocks. The estate also has a rather gorgeous hotel, a farm, an impressive museum and horse-riding school – it’s one of our favourite places to spend some quality downtime.

Paint The Town

We have to admit, this one is new and we haven’t tried it yet but it comes highly recommended and we can’t wait to go – we can’t think of many better ways to bash out the stresses of the work week than daubing paint on everything in sight. You can do just that at Rush Paint House, in Msheireb, where you don a plastic cover (but be warned, you may get paint on your clothes and though it washes off the skin, you’d be well advised to wear something you’re not too fussy about) and splash the colours to your heart’s content. It’s an activity suitable for those aged three and upwards and they cater for birthday parties and offer workshops. But we think it looks like a great way for adults to let off some steam, too. Take That Tour!

No, not the famous British boy band, rather our exhortation to take a professional guided tour. It’s something we always do when we have visitors staying and there’s really no better way to get acquainted with lots of what Qatar has to offer. You’ll be shown the sights by a really knowledgeable, often local, guide and finish up with a water tour on a traditional dhow – take in Doha’s futuristic skyline from the comfort of a traditional Qatari wooden boat. The tour takes around four-and-a-half hours and we’ve used Doha Transit & Tours, they come highly recommended and not just by us. And, if you fancy something a bit more luxurious, we’re also hearing good things about the yacht cruise from Golden Yacht.

Venice In Qatar

When we first saw this, we’ll admit, we thought it a bit bonkers but bear with us. If you want to go to Italy but life keeps you here in Qatar, you can have an almost Venetian experience at Villaggio Mall. As well as some seriously high-end stores, here you’ll also find a replica of the City of Bridges and it’s even possible to take a gondola ride on the river that runs through the shopping complex.

TIME TO TAKE IT OUTSIDE

Since we’re focussing on the new season and opportunities for getting outdoors, there’s no better time to look at some of the country’s best loved al fresco dining spots. And, being in Qatar, that means an abundance of sea views and gorgeous garden and terrace settings accompanied by great food and fantastic service. Read on for some (but by no means all) of our top spots to enjoy the cooler weather – make the most of it while it lasts, is our motto.

Boho Social, found on the top of the Katara Beach Club, is simply gorgeous. The stunning interiors are by award-winning designer Paul Bishop and the menu offers a culinary journey across the world from the Middle East to Europe, Asia to the Americas and beyond. There’s also the Espresso Bar, which brings a culinary approach to coffee from farm to cup. Truly one of our most loved outdoor spaces, we could happily spend an inordinate amount of time here and can highly recommend the Cassava Cheese Croquettes.

And, while we’re on the subject of Katara, make sure to pay a visit to the Cultural Village’s Tasty Street where you’ll find lots of food stalls at which you can choose to either drive through or take a scenic walk.

Chotto Matte, at The St Regis Marsa Arabia Island, is known for its Japanese-Peruvian cuisine and each visit offers a journey through a Nikkei-inspired menu where every dish tells a story. Having closed for the summer, since the terrace is one of the

best reasons for a visit, we’re happy to tell you that Chotto Matte has now re-opened and you’ll be welcomed with open arms and smiling faces to enjoy the gorgeous views.

Cipriani’s terrace is a Cuban inspired, palm fringed affair in West Bay. Serving up classic glamour alongside the refined Italian fare for which this generational restaurant is known the world over, it’s currently one of Qatar’s favourite places to see and be seen and the terrace is an excellent spot for people watching too.

For outdoor (and indoor that feels like it’s outdoor), Glass House, at Al Aziziyah Boutique Hotel, is simply stunning. Offering PanAsian cuisine, the setting resembles a giant, glass-roofed greenhouse with luxuriant foliage and great views over Aspire Park. La Mar Beach at the InterContinental Doha Beach & Spa is the epitome of a luxury beach lounge with chic cabanas, sunbeds and an exclusive pool area where you can sample food that offers a twist on the well-loved La Mar menu. We loved the old Veranda and now we love its replacement, Lucia’s, even more. Found at the Sheraton Grand Doha Resort & Convention Hotel, its lemon-scented terrace gives the feeling of being on the hillsides of Capri, which we love. And the menu offers a genuine taste of Italy, right here in Qatar. We recommend the lobster linguine but, to be honest, everything here is pretty fab and the service and ambience are second to none.

Orient Pearl, next to the National Museum of Qatar, is a name that cropped up several times when we asked for outdoor dining recommendations. Serving up a Syrian menu that combines authenticity with innovation and a comfortable balcony that faces a dancing fountain, it’s not hard to see why. With an indoor/ outdoor capacity for 1,500 diners coupled with live music, you’re guaranteed a buzzing atmosphere, where the food speaks loudest and the views are the brilliant supporting act.

Sel & Miel at The Ritz-Carlton, Doha, is not just one of our favourite French eateries in the capital, it’s also one of several great outdoor dining spots at The Ritz-Carlton. And, though we love Lagoon, Sel & Miel gets a spot on our list because it is just so very pretty with its abundant flora which attracts bees and other friendly bugs.

Thai Snack is the place to go if you’re looking for a great budget option that also serves amazing Thai food, particularly seafood. You’ll enter through a traditional pagoda-style gate and the charming garden area offers a great option for a gathering with friends that won’t break the bank.

We couldn’t talk outdoor dining without mentioning the highest terrace in the whole of Doha. If you’ve got a head for heights and love a great view, then Tropicana 360 is the place to head to enjoy the vista of the skyline from the 48th floor. The menu

Twisted Olive offers a fusion between modern comfort food and innovative fine dining (not to mention some of the best dynamite shrimp we’ve ever tasted). The venue’s outdoor space is a great favourite, partly because it’s pet friendly and we love a pooch party now and then. But we’ve got the skinny on the new al fresco area that’s about to open. We had a sneak peek on a visit earlier in the year and it really is rather gorgeous. Hidden up the stairs outside the main restaurant, it’s a veritable secret garden of soft, glowing lantern lights and exotic, hand-crafted umbrellas sheltering a limited number of tables. We promise you’ll love it as much as we do.

FACT spent the day in the new Geely Preface, a stylish and spacious saloon, full of modern tech that is more than capable of delivering an efficient on-road performance.

In recent years, China has established itself as a real contender in the global automotive industry. During this time, we have had the privilege of test-driving an array of these new offerings emerging from the Far East and, we have to say, many of them have proved rather impressive. Recently, thanks to the team at Geely Qatar, FACT got the chance to spend time with the new Geely Preface. This impressive mid-sized saloon merges an attractive exterior, a luxurious interior, high-end tech and satisfying on-road performance capabilities.

Eye-catching Exterior

First impressions matter, a fact Geely has taken to heart with the exterior design of the new Preface.

We found the vehicle’s bold and sophisticated exterior greatly enhanced by the superb composition of the sculpted bonnet.

The attractive design continues into the front face, featuring a cascading waterfall-shaped, bold front grille, inspired by the picturesque Iguazu Falls in South America. Its horizontal slits draw the eye to the perfectly placed Geely crest located in the centre, while sleek daytime running lights further add to the appeal.

As we made our way around the car, we noticed the strong lines running from tip to boot, effortlessly merging the beauty of the front end with that of the back.

At the rear, we appreciated the striking, integrated LED tail lights that stretch the width of the back end in a graceful line. We also

found the inclusion of quad exhaust tailpipes a great touch, adding to the sporty appeal of this finely constructed vehicle.

Luxurious Interior

The moment we entered the Preface, we were taken by the roomy and luxurious nature of the cabin. This alluring space is illuminated by natural light shining through the class-leading 0.5sq/m panoramic sunroof.

As we carefully surveyed the interior of this spacious five-seater, we felt enveloped in an environment where every detail has been crafted for comfort, safety and aesthetic pleasure.

The six-way power driver’s seat with four-way electric lumbar support proved exceptionally comfortable and provided a cool ride in the summer heat with its effective ventilation functionality – a feature shared by the front passenger seat. The effective Dual Zone Auto AC further enhanced our comfort throughout the stifling day.

Two of our favourite internal inclusions were the beautifully crafted, multi-functional steering wheel that felt great in hand while delivering electrical power steering (EPS), along with the perfect placement of all touchpoints.

High-end Tech & Infotainment

Delivering a harmonious blend of technology and luxury, the Preface showcases a range of impressive modern features. These include the best-in-class 13.2-inch floating centre console and a high-definition infotainment screen. This convenient and

intuitive interface provided us with first-class connectivity and entertainment while stationary and when on the move. One of our must-mention features of this new saloon is the outstanding 12-speaker auditory experience it provides. Elevated by a Harman Infinity deluxe headrest audio system, we felt this set-up delivers nothing less than an immersive soundstage for all occupants.

We were further impressed by the class-leading 10.2-inch, full-colour LCD dashboard that acts as an interface and as a proverbial window into the car’s soul. This high-end inclusion offers seamless integration of both functionality and elegance. Lastly, the advanced CN95 antiviral, high-efficiency filter and air quality management system ensures an experience that is comfortable, clean and safe, no matter the exterior environment.

Satisfying Power & Performance

As soon as we took to the streets, we were taken by the stable and responsive nature of the drive.

The new Preface houses an impressive 2.0TD engine paired with a seven-speed Dual-Clutch Transmission that can generate a maximum horsepower of 215hp and 325Nm of torque.

Throughout the day, we discovered this car to be a beautiful blend of power, high performance and dynamic handling. Enhanced by the intelligent Drive-E technology, we appreciated the various driving modes on offer. These included ECO, Comfort, Sport and Intelligence – one to suit every preference. Both ECO and Comfort modes proved perfect for city street cruising, while Sport mode provided extra verve, resulting in a more exhilarating experience. The effective braking system ensured we felt in complete control at all times. When testing the acceleration capabilities of this spritely saloon, we sped from 0-100km/h in a respectable 6.9 seconds without the car seeming to take any strain.

We were informed by the team at Geely Qatar that the superior performance is further enhanced by an exemplary 98% transmission efficiency.

Extensive Safety Features

Geely has equipped the top-of-the-range GF trim Preface model with a full suite of intelligent driver assistance and safety features

designed to keep you and your loved ones as safe as can be. Included in this setup are the pioneering L2 ADAS (advanced driverassistance systems) and Bosch ESP 9.3 edition. This state-of-the-art technology, combined with six airbags, delivers a cocoon of safety. What first attracted you to the hospitality sector and has it lived up to your expectations?

My passion for hospitality began at a young age when I worked at food and beverage outlets and hotels during school breaks. I remember seeing business travellers in their elegant suits and being captivated by the grandeur of the meetings and events that took place. It was a world that fascinated me and it ignited a spark that has stayed with me. This early exposure led me to pursue a Bachelor of Arts degree in Hotel Management, a decision that has shaped my career.

Looking back, the industry has far exceeded my expectations. I’ve had the privilege of working across various international markets and winning accolades along the way, such as the Best General Manager of the Year award from Haute Grandeur Global Awards. Every day brings new challenges and rewards, and it’s that dynamic nature that keeps me passionate about this field.

You’ve been in your current post a while now, how are you finding it and what are your future plans for the properties? It’s been a journey of immense growth. Managing two distinct

properties, each with its own identity and clientele, has provided me with the unique opportunity to refine our offerings to meet evolving market demands.

How do you navigate managing two very different properties with a wide-ranging clientele?

The Qatari hospitality market is diverse and evolving, and managing two properties that cater to different audiences requires a tailored approach. Each attracts distinct clientele, from business travellers to long-stay guests, and I don’t believe in a ‘one size fits all’ approach. Our goal is always to create customised experiences that meet the specific needs of our guests.

Understanding the nuances of both allows us to anticipate guest needs and deliver exceptional service. It’s all about paying attention to the details and continuously adapting to the market trends.

One of the philosophies you believe in is: "Each morning presents a choice: slumber with your dreams or rise and pursue them." How does this play out in your own life and how do you communicate it to your team?

This philosophy is something I try to live by every day. In hospitality, like in life, success comes from a combination of passion and persistence. I always tell my team that while working hard is important, working smart and being passionate about what you do is equally crucial.

Our collective success has been reflected in the numerous awards we’ve received, from guest satisfaction accolades to operational excellence awards. I also believe in the saying, “if you want to go fast, go alone; if you want to go far, go together” which essentially means that a leader is nothing without their team. My role is to inspire, guide and provide the resources needed for my team to succeed. We emphasise respect for diversity and inclusion, which fosters a family-like atmosphere where everyone feels valued. Together, we rise to pursue our collective goals and the results speak for themselves.

With a quarter of a century of experience in the hospitality field, do you have any interesting experiences you can share with our readers?

With over 25 years in hospitality, I’ve had my share of memorable experiences! One that stands out was the challenges faced with the onset of covid-19 where we had to accommodate a full-house of quarantine guests with minimal resources. It was a logistical challenge, but the team came together with incredible creativity to make it happen. ✤

What attracted you to the sweeter side of kitchen life?

My journey into the world of pastry began at the tender age of 10, when I started working weekends with a close family friend who ignited my passion for the art of sweets. For me, each day as a pastry chef offers a new opportunity to unleash my creativity, bringing my visions to life. There’s an unparalleled joy in transforming simple ingredients like flour and sugar into stunning, mouth-watering creations that captivate both the eyes and the palate.

You began your career with the legendary Michelinstarred Chef Georges Blanc. How did you secure such a prestigious opportunity?

I owe my introduction to such a distinguished establishment to the unwavering belief and support of my pastry teacher, who recognised my potential and encouraged me to pursue my childhood dream. At the age of 18, I spent three unforgettable months training under Chef Georges Blanc, an experience that profoundly shaped my career.

You were Head Pastry Chef for the Saudi Royal Family. Could you share some memorable moments from that time?

After five years in Saudi Arabia, I could write a book of experiences! (Laughs) One of the most surreal aspects of my time there was working on royal projects under intense pressure, surrounded by bodyguards, military personnel and often with doctors from the

royal family requesting samples of everything I created during the day. It’s not every day that a pastry chef operates in such a high-stakes environment, and those moments were a true test of skill and composure.

What have been your proudest achievements since joining Raffles Doha and Fairmont Doha for the pre-opening?

Being part of this project from day one, opening not just one but two hotels simultaneously ahead of the FIFA World Cup in November 2022, is something I’ll always be immensely proud of. Getting the pastry kitchen up and running two months before the tournament was a monumental task, but we made it happen. The entire team can take pride in what we accomplished – it was truly a feat of teamwork and dedication.

What is your signature dish, and what makes it stand out?

For me, signature dishes are a reflection of a chef’s origins, skills and philosophy. They tell a story that extends far beyond taste. As a French pastry chef, I love working with classic French pastries – like Mille-feuille, Paris Brest, éclairs, and Fraisier – and infusing them with Middle Eastern influences. Incorporating ingredients such as dates, pistachios, apricots and rose allows me to create unique textures and flavours, weaving a narrative into each creation. Each dish is an expression of both tradition and innovation, a fusion of my heritage and the rich cultural tapestry of this region. ✤

Executive Chef Foong Wai Loong (Lucas), of Kai’s Songbird, The Pearl Island, explains the elements of Nanyang cuisine and talks local inspirations and passion for his art.

Kai’s Songbird delivers a refined interpretation of Nanyang cuisine – please explain, what is the essence of Nanyang and how does it differ from classical Chinese cooking?

Nanyang is the south seas region in Asia, mostly referring to Malaysia, Singapore and Indonesia. This liberating concept allows us to cook without boundaries, respecting the past but also innovating and bringing a different approach to our traditions.

You are known for blending local and global influences, how is this, particularly the local element, reflected in the menu at Kai’s Songbird?

We respect the local culture and try to blend the local cuisine with our own cuisine, using a few elements in some of our dishes that allow us to build a bridge with the local community. Also, we try as much as we can to source local products buying from local farms and suppliers.

What first inspired you to pursue a life in the kitchen?

When I was 14, I began working as a waiter at a small restaurant in Kuala Lumpur. I was captivated by the dynamic environment in the kitchen and the creativity of the chefs. One day, I asked the head chef if I could join the kitchen team. I started in an entry-

level position, but my enthusiasm and motivation were driven by my observations and the inspiration I drew from chefs on television. This early experience ignited my passion for cooking and set me on the path to pursue a career in the culinary arts.

If you were not creating Nanyang cuisine, which other style of cooking would you most like to explore and why?

If I weren’t focusing on Nanyang cuisine, I would be exploring Cantonese cuisine. Having cooked Cantonese dishes for the past 30 years, I’ve developed a deep appreciation for the rich, diverse flavours and techniques. Cantonese cuisine is renowned worldwide for its emphasis on freshness and its intricate preparation methods, which I find both challenging and inspiring.

What is your signature dish, how was it created and what makes it popular?

My signature dish is Sea Bass with Black Bean Sauce and Mandarin Peel. This dish stands out because of its harmonious balance of flavours. The black bean sauce provides a rich, savoury depth, while the mandarin peel adds a unique freshness and a subtle citrusy note. The combination of these elements creates a well-rounded and flavourful experience that resonates with many people.✤

Walking into Rodizio, we were immediately enveloped by the warm, vibrant atmosphere that hinted at the evening of indulgence to come. The rich red tones on the walls, accented by soft, amber lighting, created an inviting and intimate space. The décor struck a perfect balance between modern and traditional, with a distinct Brazilian flair that made us feel as though we had been transported to the heart of South America.

As we stepped further in, we were greeted with broad smiles from the staff. There was an unmistakable energy in the air, one that promised a dining experience that was both lively and comforting.

Our server, Manish, welcomed us with a friendly and attentive demeanour. He showed us to our table with genuine enthusiasm, setting the tone for what would be an unforgettable evening. From our seats, we took in the subtle charm of the restaurant, where everything from the vibrant hues to the contemporary furnishings reflected a blend of authenticity and sophistication.

A Light Yet Flavourful Prelude

We started with an array of appetisers that arrived just at the right moment. The coxinha, a traditional Brazilian croquette, had a perfectly crisp exterior encasing a tender, seasoned chicken filling. The pão de queijo, small cheese bread balls made with cassava flour and cheese, melted in our mouths with their soft, chewy texture. The plantain fritto, sweet and lightly fried, offered a pleasant contrast to the crispy fried cassava, which had a starchy crunch. The highlight of the starters, however, was the seafood

and mango salad. The delicate seafood paired beautifully with the sweetness of the mango, while the touch of habanero in the dressing added a refreshing, spicy kick.

A Celebration Of Brazilian Barbecue

The real essence of Rodizio, however, lay in its churrascaria-style service. For the uninitiated, this means an endless parade of skewered meats, served at your table by attentive waiters, until you signal you've had enough by turning over a small card. It’s an interactive and indulgent dining experience where the meats keep coming until you say “no more”.

The selection of meats on offer was nothing short of impressive, each expertly grilled over an open flame and presented with flair.

Chef Dany, originally from Peru, personally visited our table to explain the dedication behind sourcing only the finest cuts of meat from the US, Argentina and other countries. His passion for quality was evident, and it set the tone for the feast that followed. The picanha, Brazil’s prized cut, was undoubtedly the standout. Its rich marbling and melt-in-the-mouth tenderness left us speechless, while the smoky flavours of the rendered fatty cap were simply divine. Every bite lingered long after the plate was cleared, a true testament to its excellence.

Next came the maminha, a leaner cut from the rump. Its subtle seasoning allowed the meat's natural flavour to take centre stage, with each slice juicy and satisfying. The flap steak was a revelation – robust, hearty and packed with deep, rich flavour. Though slightly chewier, it offered a rewarding bite for those who love a more textured cut.

The beef rib-eye was another favourite, its fat marbled perfectly throughout, making each bite succulent and full of flavour. The tenderloin, as expected, was buttery soft, delicate on the palate and a great contrast to the richer cuts.

As we savoured these dishes, a saxophonist played cool jazz numbers in the background, subtly enriching the experience. As midweek diners poured into the restaurant, we got the distinct feeling that Rodizio was the go-to venue for authentic Brazilian dining and expertly cooked meats.

Beyond the beef, the variety continued to impress. The lamb leg was beautifully tender, the herbs and spices subtly enhancing the meat's natural sweetness. The chicken drumstick, with its crispy, golden skin, was a comforting and familiar addition, its

interior juicy and full of flavour.

Accompanying the meats were traditional Brazilian sides such as farofa, a savoury cassava flour mixture, feijoada, a hearty black bean stew, and fragrant garlic rice. Each side added its own depth to the meal and, when mixed together, they created a perfect harmony of flavours. These sides not only grounded the meal but added a further authentic touch.

Just when we thought we'd tasted the best of the selection, the roast pineapple with cinnamon made its entrance. Its caramelised edges and sweet juices provided a refreshing interlude, cutting through the richness of the meats and preparing us for the next round.

Throughout the meal, Manish made sure we were enjoying the experience, offering recommendations and keeping our plates full with a smile. His attentiveness and friendly approach made the evening feel personal and engaging.

A Delicate And Indulgent Finale

While the meats were the stars of the evening, the desserts provided a delightful conclusion to the feast. The Brigadeiro cake, rich and decadent with layers of Brazilian-inspired chocolate, was an indulgent treat, perfectly paired with chocolate chip ice cream. The highlight, however, was the lemon crème brûlée. Light, delicate and airy, it delivered a refreshing citrus lift, with a crisp caramelised top that gave way to a silky lemon custard beneath. It was the perfect way to balance the rich flavours of the preceding courses. For a more traditional ending, the flan de leite offered a smooth and creamy finish, complemented by the tangy brightness of passionfruit sauce. The curau, a caramelised corn custard, provided a uniquely Brazilian twist with its blend of sweet and savoury, leaving us intrigued and satisfied.

Rodizio wasn’t just about the food; it was the atmosphere, the service and the experience that made the evening so memorable.

The dedication of the staff, particularly Manish and Chef Dany, transformed what could have been a simple meal into a journey through the flavours and traditions of Brazil. This restaurant is a true celebration of food, hospitality and warmth. ✤

trip to the delightful Morimoto, at Mondrian Doha.

From the moment we arrived at the Mondrian Doha, it was clear we were in for something special. As we stepped through the doors, we were greeted by an impressive display of gold – a dazzling, elegant space that immediately captured our attention.

We were welcomed with a glowing smile by Favour, a member of the team, and ushered inside where the interior exuded opulence and warmth, with stunning gold lanterns casting a soft, amber glow. The curved booths provided an intimate yet stylish dining experience with the open kitchen adding a touch of theatre.

Our meal began with the spicy shrimp tempura, a dish that crackled on the tongue with each bite. The light, crispy coating was just enough to complement the juicy shrimp inside. The gochujang sauce lent a vibrant heat, cutting through with a deep, fermented tang. Each mouthful was tempered by the cool, creamy Morimoto ranch.

Next came the whitefish carpaccio, a dish that seemed to melt the moment it touched the palate. The yuzu soy brought a delicate citrus brightness, lifting the buttery richness of the fish.

The ginger added a slight warmth, while the garlic offered a hint of sweetness that lingered long after each mouthful.

The tuna pizza was an unexpected delight. The crunchy, paperthin base held the silky tuna in place, each slice delivering a punch of bold flavours. Anchovy aioli brought a salty, umami richness that intertwined beautifully with the sharpness of the jalapeño.

A Delicate Craft

No visit to Morimoto would be complete without sushi. Every

piece on our sharing platter was a delicate morsel packed with flavour, but the highlights were the fatty tuna – each bite practically dissolving in the mouth – and smoked salmon with its subtle, depth. The eel, glazed with a light soy sauce, delivered a caramelised sweetness and a slight chew. The selection – too large to mention all by name – offered a clean, natural taste, with each piece highlighting the freshness and quality of the fish –more akin to traditional Japanese fayre.

As we relaxed, the atmosphere buzzed with energy, the booths around us filled with families eating and talking excitedly, their laughter and conversation adding a lively warmth to the evening.

A DJ at the booth played skilfully, weaving a seamless soundtrack that paired perfectly with the upbeat vibe of the restaurant. Meanwhile, in the open kitchen, the chefs moved with precision, fully immersed in their craft. It was a space alive with activity.

A Feast Of Flavours

The centrepiece of our meal soon arrived with a flourish, beginning with the Wagyu short rib over coals. This dish was a visual and sensory triumph. The first bite was intensely rich, with the fat rendering into the meat, making it melt away effortlessly on the tongue. The subtle smokiness from the coals infused the rib with a deep, earthy flavour and each bite was punctuated by the crispy, caramelised edges. The robust, meaty essence lingered long after each mouthful, while a hint of char provided complexity, elevating the richness of the Wagyu to a level of pure indulgence. This dish was the embodiment of luxury – intense, tender and decadent.

Next, the signature black cod took centre stage. This fish was a revelation, almost buttery in texture and so delicate it barely needed coaxing with the fork. The miso glaze enveloped the cod in a sweet, umami-rich coat, which perfectly complemented the fish’s natural sweetness. The sensation was almost as if the meat dissolved on the tongue, leaving behind a deep, lingering taste of the ocean mingled with the sweet-savoury notes of the miso. The yuzu-dressed daikon provided a much-needed burst of acidity, cutting through the richness with its bright, citrus tang. This interplay between the rich fish and the sharp yuzu created a balance of flavours that danced on the palate.

The sweet potato dish, although an accompaniment, became a highlight, made even more special by Talia, our gracious hostess, who joined us to mix the components – chilli, garlic, ponzu butter, daikon oroshi and bop sauce. The roasted sweet potato, crispy on the outside and soft within, was elevated by the smoky heat of the butter and the bright tang of the daikon. The bop sauce added a sweet, umami depth and, with Talia’s expert mixing, each bite was a perfect balance of earthy sweetness, spice and richness.

Sweet Indulgences

For dessert, the chocolate fondant was a rich, indulgent finale. As the spoon broke through the soft exterior, the warm matcha ganache oozed out, its earthy bitterness perfectly countering the sweetness of the cocoa crumble. The white chocolate ice cream was a silky, sweet contrast, cooling the palate between bites of the fondant. Finally, the two Japanese ice creams, matcha and chocolate, were a delicate and refreshing way to end the meal. Each bite

was a burst of creamy, delicate sweetness, leaving a lingering taste of subtle, floral notes on the tongue.

In short, our evening at Morimoto Doha was a journey through exceptional flavours, all set against a backdrop of opulence. From the expertly crafted dishes to the impeccable table-side service, it was a magical experience – highly recommended to anyone looking for indulgent dining in Doha. ✤

best of Qatari and Indian cuisine during a trip to Al Terrace.

Al Terrace, nestled in Al Mirqab Boutique Hotel, at the heart of Souq Waqif, stood out with its inviting blend of traditional Qatari architecture and Middle Eastern hospitality. As we approached, the subtle warmth of hanging lanterns created a soft glow, gently illuminating the outdoor seating area. In cooler weather, the outdoor space offers a perfect vantage point for people-watching, allowing diners to enjoy the lively flow of passersby. Seated outside, one can observe the constant buzz of shoppers, tourists and locals weaving through the busy market lanes. A fusion of Qatari and Indian aesthetics was seamlessly integrated into the restaurant’s design – rustic wooden chairs, intricate latticework and touches of greenery added to the calm vibe.

The interior of Al Terrace is elegant and spacious, with an air of refined tradition. The polished marble floors gleamed beneath soft, ambient lighting, while intricately woven rattan-backed chairs and ornately cushioned seats offered both comfort and a touch of old-world charm. The high ceiling is adorned with geometric metalwork, adding a modern twist to the traditional aesthetic, while small, colourful lanterns cast a warm glow. Beautiful mosaic tile work in the centre of the room, along with subtle, arched wall niches holding delicate plants, completed the atmosphere, blending Middle Eastern sophistication with a welcoming, homely feel. As we took our seats inside, we watched as diners casually chatted, creating a soft murmur of conversation that made the experience feel intimate.

A Feast Of Flavours

For those unfamiliar with Indian and Qatari cooking, the menu is

a celebration of bold flavours and rich culinary traditions. Indian food offers vibrant spices, aromatic herbs and dishes such as biryani and tandoori that bring warmth and depth to the palate. Qatari cuisine, on the other hand, embraces hearty meals like machboos, a spiced rice dish with meat or fish, alongside lighter, fragrant flavours of saffron, cardamom and rose water. Together, these two cuisines create a delightful blend of hearty and aromatic dishes, making Al Terrace a perfect place to explore both cultures through their food.

Upon arrival, we were greeted warmly by Mars, the restaurant’s excellent manager, who immediately made us feel welcome. Originally from Morocco, Mars chatted with us about his journey to Qatar, sharing snippets of his experiences while ensuring we were comfortable and well taken care of. His presence set the tone for a relaxed evening.

Fresh Tastes

The meal began with a cold starter, the beetroot salad, a vibrant and refreshing dish. The earthy sweetness of the beetroot paired beautifully with the peppery jargeer leaves, while the crunch of caramelised walnuts and the chewy dates added contrasting textures. Every bite was brightened by bursts of pomegranate and the tangy orange dressing tied all the flavours together in perfect harmony.

Spicy Delights

For our hot starter, we tried the Punjabi samosa. These homemade parcels of crisp, golden dough were stuffed with a savoury mix of potatoes and Indian spices. Each bite was packed with warmth,

with the delicate pastry giving way to the rich, comforting filling inside. The balance of flavours was perfect, the spices bold without being overpowering.

Moreish Mains

When it came to the mains, the grilled lamb chops immediately impressed. Charred to perfection on the outside, yet tender and juicy on the inside, the lamb was richly seasoned and perfectly cooked. The smoky flavour of the grilled vegetables added depth, while the fresh cucumber and yoghurt salad offered a cool contrast, making every bite of lamb feel balanced and indulgent. We also enjoyed the paneer makhani, a comforting and mildly spiced dish of paneer cottage cheese. The rich tomato and cashew nut gravy was silky smooth, with a slight sweetness that complemented the subtle flavour of the paneer. The dish had a beautiful creaminess to it, making it impossible to resist dipping the plain and garlic naan into the gravy. The naan itself was soft, with the garlic version offering a fragrant, buttery hit that paired perfectly with the sauce. For a playful side, we opted for the dynamite fries, which were a fusion of creamy cheese and a Kashmiri chilli gravy. The fries were crispy and golden, providing a satisfying crunch beneath the rich, spicy topping. The combination was indulgent, with the heat of the chilli contrasting with the smooth, melting cheese to create a dish that was both comforting and exciting.

Decadent Desserts

Dessert was a delightful surprise. We began with the mahalabia balaleet, a sweetened vermicelli dish served with milk and topped with saffron and nuts. The delicate strands of vermicelli were soft and lightly sweetened, while the saffron infused the dish with a subtle floral note and the nuts provided a lovely crunch. To finish, we enjoyed the kulfi ice cream. This traditional Indian

dessert, made with full cream, was rich and decadent, with the pistachios and saffron adding layers of flavour and texture. The saffron brought a slightly earthy, aromatic quality, making each spoonful feel luxurious and exotic.

As our evening at Al Terrace drew to a close, we were left with a lingering sense of fulfilment from a meal that was as culturally enriching as it was delicious. The exceptional service, coupled with a vivid tapestry of flavours from India and Qatar, made our dining experience unforgettable. Whether it’s the intricate decor, the nuanced layers of spices in every dish or the warm hospitality, Al Terrace promises an immersive journey into two culinary traditions, making it a must-visit for anyone seeking a taste of the region’s best. ✤

A TASTE OF BEIRUT IN THE HEART OF DOHA

SD revisits popular Lebanese haunt Debs W Remman and discovers the freshest ingredients paired with imaginative touches.

Debs W Remman, in the heart of Medina Centrale at The Pearl – Qatar, is an easy choice when looking for an excellent Lebanese meal in the city. There's no dearth of great Lebanese options in Doha, but when we're seeking dinner at a multi-award-winning restaurant, it's undeniably our first pick. The restaurant has indoor and outdoor seating and with the cooler temperatures and outdoor cooler, the terrace is tempting. However, we opt to sit in the busy indoor area and enjoy the live music which has recently started and is on offer from Monday to Saturday.

The staff greet us with smiles and escort us to our table – a cosy nook in the corner right next to a beautiful, traditional dining console. We're immediately served zaatar sticks with a yoghurt dip and olives. This addictive little snack gives us time to admire the aesthetic surroundings. Everywhere we turn, there is something striking.

Little odes to Beirut are dotted around the restaurant. We could very well be in a retro movie set, but truthfully everything here feels very authentic, poetic even. Vibrant floor to ceiling drapes run across the length of the venue, beautifully complementing the rustic-style furniture. A mix of comfortable sofas and dining chairs livens up the space, right below a wooden ceiling with beams and spotlights. The restaurant is large yet homely, making Debs W Remman the perfect spot for a weeknight dinner.

The menu is vast and we're really spoiled for choice, so we decide to start with a salad – we need to get some fibre in. The Falafel Salad looks and tastes interesting – an elevated take on an otherwise simple iceberg and tahini mixture.

The selection of appetisers is extensive and we're unsure how

many we should order to taste. After all, one can't have a hummus without a muttabel to go along. After a long study, we pick a few dishes that we find most unique such as the Shrimp Muttabel (the popular Shrimp Provençal decked on a bed of the brilliant, smoky eggplant dip) and the Pesto Ras Asfour. Also, one cannot dine at a Lebanese restaurant and not try the Batata Harra.

The classic repertoire of hot and cold Lebanese mezze is proudly presented at our table, with extra lemon, of course. The Spicy Hummus is silky smooth and we throw dollops of it onto the pillowy soft, freshly baked bread. We also try the Muhammara, which doesn't disappoint with its perfect walnut-to-red-pepper ratio. The dish has the right amount of zing and is thankfully not over generous with the molasses.

The hot mezzes include incredibly tasty Soujouk – mini sausages – and a delightful Ras Asfour in Pesto. The meat cubes are highly flavourful with earthy notes from the pesto – a stellar combination. The Batata Harra, or potato cubes, are spicy, crispy and moreish. The portions are rather large – which means we'll have to skimp on mains to save space for dessert. We'll try the cherry kebab tonight – a surprising main with luscious chunks of perfectly moulded meat, floating on a bed of simmered, reduced cherries.

The thick, sweet sauce cuts through the savoury richness of the spiced kebabs. We don't even need bread for this, but piping hot

pitas arrive at the table in a traditional basket.

The Karabij is an excellent option for dessert – sugared almonds and pistachio with halawa flavoured ice-cream topped with cotton candy, or grandma's hair, as some call it. It's good for sharing, and we leave no evidence of its existence on the plate.

The attentive restaurant manager checks in on us after every course answering our questions and offering suggestions of things for us to try. He even makes the experience extra special with a personalised touch – sending orange, lemon and honey shots after our meal.

The service is friendly, knowledgeable and overall exceptional and the excellent live music uplifts the ambience entirely. Imagine dining on some of the best dishes in the Middle Eastern region as you're serenaded by soulful Oriental tunes.

AMS explored fabulous food and genuine hospitality during a remarkable stay at the Marriott Marquis City Center Doha Hotel.

As we arrived in the lobby of the Marriott Marquis City Center Doha Hotel, the gleaming marble floors and stunning, intricately designed chandelier signalled the start of an exceptional stay. The golden light bathed the space in a warm, welcoming glow, while the high ceilings and sleek, modern design lent an air of understated elegance. The check in process was smooth and efficient, with the attentive staff offering smiles and swift service. Within moments, we were guided toward the elevators, anticipation growing as we made our way to our room.

Stunning Views and Modern Luxury

On entering our room on the 41st floor, we were immediately drawn to the sleek, contemporary design. The plush kingsize bed, adorned in crisp white linens, was framed by a stylish headboard with geometric detailing. The rich, deep blue accents of the chaise longue and bed base contrasted beautifully against the warm golden tones of the walls and carpet, adding a sense of modern luxury. Floor-to-ceiling windows offered an uninterrupted view of the city skyline, bathing the room in natural light and creating an airy, open atmosphere. With 579 rooms and suites, the hotel offers many options from Deluxe rooms to the luxurious fourbedroom Penthouse Apartment, perfect for long stays. All rooms provide luxury amenities like Nespresso coffee makers, marble bathrooms and luxury Marriott bedding for a restful sleep

After freshening up, we headed to Cucina for an express lunch. We were seated quickly, and the simplicity of the Italian menu delighted us. The gnocchi was pillowy, delicate, with just the right amount of sauce – enough to cling to each bite but not overwhelm. Alongside, the burrata salad was a perfect accompaniment. The creamy richness of the burrata balanced beautifully with fresh tomatoes and basil, each mouthful a reminder of Italy's finest offerings. It was an ideal way to ease into the day, light yet indulgent.

Al Fresco Dining

As evening fell, we made our way to Tulum, an outdoor dining venue that turned out to be the perfect spot for a laidback yet vibrant night. The soft glow of lanterns reflected off the swimming pool as a DJ set the mood, blending chilled tunes with a backdrop of casual chatter. The tenderloin fajitas were a standout – juicy, perfectly seasoned strips of beef wrapped in soft tortillas, accompanied by all the necessary fixings. The fish tacos were crisp and fresh, each bite bursting with flavour, while the ceviche offered a delightful contrast, light and zesty. We couldn’t resist the nachos either, a mix of crispy, cheesy and tangy perfection. As we ate, the energy around the pool built up, aided by the sight of sleek Hummers pulling up, their presence adding an unexpected edge to the otherwise relaxed evening. It was a night that encapsulated the best of al fresco dining: good food, great atmosphere and a lively yet laid-back vibe.

Warm Hospitality

Breakfast the next morning was in Crossroads Kitchen, where we were warmly welcomed by Chef Abed. His hospitality was as memorable as the meal itself. Abed made sure we had fresh falafel and foul medames, a staple of Middle Eastern cuisine that was hearty and wholesome. His real pièce de résistance, however, was the Indian-spiced eggs and beans – an unexpected twist that combined aromatic spices with the comforting familiarity of a breakfast favourite. It was clear from his attention to detail that this was no ordinary buffet breakfast; rather, it was a thoughtful selection of dishes meant to invigorate as well as satisfy.

A Churrascaria Feast

Later that day, we found ourselves at Ipanema for brunch, where the churrascaria experience was nothing short of indulgent. Waiters circled with skewers of succulent meats, expertly carved at the table. From juicy cuts of beef to tender lamb and chicken, each was more delicious than the last. As we worked our way through the endless selection of meats, the accompanying salads and desserts proved equally enticing, a vibrant contrast to the richness of the proteins. By the time we’d sampled the final dessert, a decadent pastry, we were certain we could not manage another bite. Yet, the sheer variety and quality of the food at Ipanema had made it an experience to relish in every way.

By evening, we sought a more relaxed atmosphere, and Aqua Lounge was just the place. Situated on the rooftop, it offered a perfect blend of sophistication and chill, with the twinkling lights of the city below and the soft breeze cooling the terrace. We unwound with mini chicken schnitzels, which were crispy on the outside and tender within, alongside a medley of mushrooms, burrata salad and calamari. The combination of rich flavours, coupled with the serene setting, made it an ideal way to end the day. Aqua Lounge’s relaxed ambience made it easy to while away the evening, allowing us to fully take in the stunning cityscape while indulging in delicious bites.

A Hearty Breakfast

Saturday morning called for something hearty, and Quick Bites delivered in spades. We were treated to a full English breakfast, complete with house-made hash browns that were crispy yet soft, and slow-cooked beef bacon that was as tender as it was flavourful. The selection of pastries provided a perfect sweet note and, to top it all off, we indulged in a round of pancakes and waffles. Each bite was better than the last, the slow-cooked bacon a standout. The attention to detail in every element of the breakfast, from the crisp hash browns to the fluffiness of the pastries, was a delightful way to start our final day.

Immaculate Amenities

Given all the rich and delicious food we consumed, we couldn’t help but appreciate the hotel's extensive health facilities. The gym, equipped with state-of-the-art machines and a variety of free weights, was a fitness enthusiast's dream. After a workout, we made full use of the sauna and steam room, both immaculately maintained and offering a muchneeded respite from the city’s bustle. But the real jewel was the outdoor pool – an Olympic-sized expanse that invited us to swim languid laps or simply float in its cool waters. Its size and peaceful setting made it easy to feel miles away from the urban landscape and the poolside loungers offered the perfect place to relax after a swim.

Of course, no weekend getaway would be complete without a visit to the spa. Late Saturday morning, I indulged in a relaxing Balinese massage. The experience began with a streamlined arrival process that ensured my preferences were noted. This was followed by a soothing foot wash with avocado and almond oil, setting the stage for an hour of pure relaxation. The therapists were professional and the atmosphere was one of calm and rejuvenation. With every movement expertly choreographed to relieve tension. Afterwards, we couldn’t resist returning to Cucina. The burrata salad was a creamy, fresh delight, perfectly balanced with ripe tomatoes. The veal cutlet was tender and flavourful, while the risotto Milanese, with its rich saffron infusion, was simply divine.

Farewell Meal

For our final meal, we couldn't resist the allure of dinner at the New York Steakhouse for their renowned 'Entrecôte Night'. As we settled in, the convivial atmosphere, warm lighting and the hum of relaxed conversation made for an inviting dining experience. The highlight was the 180g entrecôte, perfectly grilled and paired with crisp, golden and unlimited fries. Drizzled with their signature secret sauce, the steak was a triumph of rich flavours and expert technique. Our evening was made even more special by Chef Ulas, who personally ensured each dish was presented with care and passion. Topping off the meal with a refreshing salad and indulgent crème brûlée, it was the perfect end to a wonderful stay.

On reflection, the hotel managed to strike that perfect balance between luxury and comfort, offering us gastronomic delights, relaxation and a few surprises along the way. Whether it was the expertly crafted meals, the impeccable service or the serene surroundings, it provided everything one could want from a city escape. We left feeling rejuvenated, with fond memories of each experience. It is, without doubt, a place we would return to, knowing that our next stay will be as exceptional as this one. ✤

One of the best activities during this time is visiting Namsan Park, the largest park in Seoul, which offers an awe-inspiring combination of scenic trails, cultural attractions and stunning panoramic views of the city. Those that don’t want to hike can also take the bus or cable car directly to the top of the mountain. Another must-visit location is the Changdeokgung Palace, a UNESCO World Heritage Site, which is one of the most well-preserved royal palaces from the Joseon Dynasty.

Also, the Biwon (or Secret Garden) to the rear of the palace complex is a true highlight owing to its serene atmosphere and exquisite landscaping. Guided tours here offer deeper insights into the rich history of the site. Additionally, the city’s numerous parks, such as Seoul Forest and Hangang Park, are absolutely worth the visit in autumn, as they transform into ideal spots for picnics, bike rides or just simply soaking in the mesmerising atmosphere. A day trip to Nami Island (an iconic setting for many famous K-Dramas) is a must do! Also, make sure to try seasonal treats like hotteok (sweet pancakes) from street vendors, enjoy a warm bowl of tteokguk (rice cake soup) at a cosy restaurant or visit the bustling Gwangjang Market, where you can savour delicious seasonal street food.

The French capital is the beating heart of this new interpretation of the Philippe Model ethos. An open and inclusive Paris: one of artists, breakdancers, skaters and classy passersby. The way they dress and the pieces they wear, are the expression of their personality, the language they speak.

A postmodern take on classicism, with bold new Big MODEL trainers to match, tailoring, shirting and knitwear unite men’s and womenswear. Regular seeming shapes are exaggerated with bold volumes and interesting surfaces and finishes. Sustainable credentials are introduced with dirt treatments on some of the fabrics and a taste for imperfection adds a zest life.

The expression is urban, unfazed, direct, undiluted and with a tongue-in-cheek twist. Even after Amazon shelled out a budget of over USD1 billion to bring this epic drama to life, season one received a mixed reception due to the showrunners’ choice to abandon a few of Tolkien’s lore points and make reckless changes to the storyline in the process. They only somewhat managed to stick the landing in the finale with Halbrand’s reveal as Sauron.

The story continues as Halbrand travels to Mordor to forge the One Ring but finds himself in a dreadful situation as he’s captured and enslaved by orcs. Elsewhere, Elrond absconds with the three elven rings, leaving Galadriel and Gil-Galad to hunt him down before it’s too late for all the elves. Things are only just kicking off!

Continuing the epic crime saga that filmmaker Matt Reeves kicked off with the global blockbuster The Batman, this eight-episode HBO Original limited series is now centred around Oswald 'Oz' Cobb (aka The Penguin), a character brought to life with remarkable depth by Colin Farrell.

Set one week after the final events of the movie, which on the one hand saw the Riddler’s final scheme to partly destroy Gotham city and, on the other, saw him shake up Gotham’s criminal network by killing mob boss Carmine Falcone, leaving behind a massive power vacuum in the city’s underworld that’s now up for grabs.

The series explores Oswald’s rise within Gotham’s crime syndicate and delves into his transformation from a low-level gangster into a formidable player in the city’s dark underbelly. The story is not just about power but truly an intriguing journey that raises questions about loyalty, betrayal and the price of ambition.

Penguin’s character, traditionally seen as a caricature, is given new life and showcases rare complexity in Matt’s vision that capably allows viewers to witness his struggles and motivations. This one’s most definitely worth tuning in for!

Imaginal Disk

Imaginal Disk is the second studio album by Los Angeles-based duo, Magdalena Bay. The pair comprises Mica Tenenbaum and Matthew Lewin, who write and produce together. Since breaking onto the scene with their first album, 2021’s Mercurial World , the duo steadily became fast favourites in the underground pop circuit.

The album begins on She Looked At Me , with Mica sweetly crooning over a bed of twinkling keys, that gradually goes on to burst with booming synths and makes way for a dazzling chorus. Moving on to Killing Time , this sharp and contemplative synth-pop bop with lush keys boasts one of the grooviest basslines of the year.

On True Blue Interlude , Mica, in an almost hypnotising manner, introduces the idea of reaching one’s true potential through a therapeutic procedure of unknown origins, known as the ‘True Blue’ process.

This leads on perfectly to the follow-up track, Image , which unmistakably sounds like a flawless piece of pop music.

On Death & Romance , Vampire in the Corner and Watching T.V ., you gently drift from one fever dream into another. Without a doubt, this album is truly special.

ALTERNATIVE ROCK

Romance

After the major success of their 2022 album, Skinty Fia, Dublin band Fontaines D.C. achieve an adventurous, frantic and sentimental triumph on their fourth outing, Romance, that strikes an even balance between tough and tender.

Opener and title track, Romance, begins with an ominous bass and xylophone melody, accompanying lead singer Grian Chatten’s almost sullen vocals that guide you through a feeling of impending doom on the verses to a necessary respite on the choruses.

The pace then picks up on Starburster, with Grian once again delivering a compelling sing/talk performance over the track’s engaging instrumentation, an easy favourite. On follow-up, Here’s The Thing, the heavy riffs and great grooves make it instantly catchy.

The gentle strings and intricate arrangement on Desire combine with potent lyrics, “Deep they've designed you, From cradle to pyre”, to paint intriguing, vivid imagery.

In The Modern World starts off steady and then dramatically grows into this massive wall of sound that’s audaciously gripping and anthemic, another favourite.

From Bug to Motorcycle Boy and even on closer Favourite, the album surprises and impresses effortlessly across its tight 37-minute runtime. An undoubtedly satisfying listen.

But while the internet laughed, the bigger issue was how quickly rumours morph into fact on some corners of the web. It’s a wild reminder that we live in an age where misinformation spreads faster than your uncle’s conspiracy theories. So, next time you hear something outrageous, maybe fact-check before starting a pet rescue mission.

Once in a Blue (Second) Moon The AI Diet Craze

Just when you thought 2024 couldn’t get any weirder, Earth’s got a new sidekick – well, sort of. In September, astronomers announced that our planet is getting a temporary second moon. Yep, that’s right, but don’t go expecting lunar eclipses with a plus-one anytime soon. Affectionately named, 2024 PT5, the so-called ‘mini-moon’ is a small asteroid temporarily caught in Earth’s orbit, kind of like a cosmic hitchhiker just passing through.

Naturally, the internet is having a field day. Some claimed it to be a sign from

above and a symbol of good luck, while others joked that Mercury in retrograde was calling in reinforcements. Astrologers, of course, were quick to weigh in, predicting everything from double the emotional baggage to an extra dose of moon-fuelled chaos in our daily lives.

As cool as it is to have a second moon, we’re holding out for one thing: if this new moon could influence the tides, can it also wipe out our work emails or at least tack on a few extra days to the weekend?

Once upon a time, we thought AI would be all about flying cars and robot butlers. But it turns out the robots are starting with our dinner plates. The latest diet trend sweeping social media isn’t a keto reboot or intermittent fasting 2.0, but AI-generated meal plans. Yep, folks are now asking ChatGPT what they should eat to shed those extra pounds. And you thought your fitness app was judgmental. A recent experiment had a food writer for The Guardian test out AI-generated recipes, and let’s just say, the results were… questionable. The menu included

culinary gems like shepherd’s pie sushi, an audacious Thai green curry lasagna and the ever-popular Sri Lankan currywurst curry. The highlight?

A Japanese hotpot that the writer labelled one of the most disgusting meals he’s ever eaten. “My children barely touch it, and I can see betrayal in their eyes,” he lamented. While we’re all for trying new things, letting a chatbot decide what’s for dinner feels like a disaster waiting to happen. One supermarket AI meal planner even suggested a recipe that would create chlorine gas – yikes! Our suggestion? Embrace your inner chef and leave the algorithms out of the kitchen!
