nspired by Goddess Durga and traditional Assamese motifs like Singkhap – a royal motif that portrays two lions facing each other; the Kolki that is like the paisley motif; the Moourah that is the peacock, and the Pokhila that is butterfly, Sanjukta Dutta reflected true communal harmony and serenity of Assam in her designs with her collection called “Mekhela Chador” at The 6Degree Studio during Lakmé Fashion Week Summer/Resort 2017.

The designer experimented with different ways of draping the saree by using woven yarns such us ‘Pat’ that is mulberry silk, ‘Muga’, a very rare and high quality Assamese silk, which is naturally golden in colour and ‘Tussar’ that has a rich beige-gold colour and lovely texture. The highlight of the show was the traditional Assamese Mekhela Chador teamed with a contemporary blouse that added to the beauty of the entire look. It was a two-piece garment- ‘Mekhela’ that was the lower garment and the ‘Chador’ that as the upper garment. The Mekhela was pleated and like a sari, except that the pleats faced the right side. The chador was like a dupatta. It was draped after the Mekhela is worn. Bollywood’s dimple queen Preity Zinta looked stunning in a black and red, classic saree with highlights of gold motifs and temple border along with a backless choli, as she ended the show. Sanjukta Dutta revealed her magic with a stunning collection “Mekhela Chador” that was a perfect blend of tradition and modernity that added sparkles to a woman’s beauty.

The motifs ranged from the running forest squirrels to the holy cow from the ‘Pichwai’ paintings of Lord

Karn Malhotra Showcased a Budding Fashion Tale at The 6Degree Studio During Lakmé Fashion Week Summer/Resort 2017. 30 MARCH / APRIL 2017

Structured garments like jackets, button-down dresses and straight pants found their niche between the fluidity. The colour palette was imagined as a scenic view with all the elements like water, skies, sun, and greenery coming into picture. From muted tones of white and powder aqua blue, to flaming orange, shades of deep forest green, the collection covered the whole scene in hues ̶ at times with colour blocking. The two-tone diamond check print made an appearance through tailored separates. At the collection’s full bloom, Bollywood’s stunning starlet, Amyra Dastur, enchanted the audience in a one off-shoulder asymmetric gown. It was a shimmering number that had tones of powder blue and metallic grey cascading down the ensemble. “Bloom” by Karn Malhotra was not only a fashion expression but also an experience of the first signs of serene flora of summers, at The 6Degree Studio during Lakmé Fashion Week, Summer/Resort 2017.

T

he first blossoms of summer were captured exquisitely by Karn Malhotra through his collection “Bloom” at The 6Degree Studio during Lakmé Fashion Week, Summer/Resort 2017. The flourishing collection had silhouettes inspired by the summer blooms such as enchanting lilies, daffodils, and blue forget-me-nots. They were further subtly depicted through the use of ruffles, layers, frills, and glass bead tassels. Romanticising the first blooms, the collection was flirty and feminine, paying special attention to combining the vintage and modern eras. The mix of signature straight, clean cuts and flowing, fluid, forms was displayed through an array of high fashion silhouettes consisting of short evening dresses, jumpsuits, separates and gowns. These were crafted from fine summer silks like crépe and chiffon, along with polyester blends and georgette. It was hard to miss the delicacy of the flourishing ensembles through the ruffles and tonal fringe details.

A spectacular Grand Finale by Anita Dongre Concludes Lakmé Fashion Week Summer Resort 2017. rgan Oil, or ‘liquid gold’ as it is referred to in the beauty world, was the inspiration for Anita Dongre’s Grand Finale for Lakmé Fashion Week’s Summer/Resort 2017 edition. Set against the rustic backdrop of the Bandra Fort, it was a beautiful night under the stars, and a gorgeous setting for the finale. Anita Dongre’s nature inspired collection, called ‘Alchemy’ featured beautiful combinations of whites and golds. Looking every bit a stunner, new mom Kareena Kapoor Khan, the face of Lakmé Absolute, walked the ramp in a garment that embodied Liquid Gold in its fluid form. 32 MARCH / APRIL 2017

Anita’s designs were a perfect blend of Indian aesthetics and modern artwork. Drawing inspiration from Argan Oil, the Liquid Gold of the beauty industry, Anita’s fashion statement represented raw organic richness and exemplified sustainability. The collection was a reflection of soft silhouettes, contemporary gold threadwork and ‘unbleached and undyed’ woven cotton silk. It focusses on being timeless while personifying ‘simplicity and wearability’. “While it’s always great to be back at Lakmé Fashion Week, this season was extra special for me since it was my first finale. Lakmé’s beauty statement ‘Liquid

Gold’ and focus on Argan Oil, complements my ideology of organic sustainability perfectly. This collection represents who I am as a designer, and it was a huge pleasure and honor working with Lakmé to put it together” says Anita Dongre, Grand Finale Designer, Lakmé Fashion Week Summer/Resort 2017. Commenting on the exceptional finale show, Purnima Lamba, Head of Innovations, Lakmé, said, "Anita’s organic approach to the liquid gold theme was earthy and natural and it complemented the new Argan Oil Lipsticks beautifully.”

Kareena Kapoor Khan, Lakmé Brand Ambassador, who left everyone spellbound as she walked down the ramp said, “Walking for Lakmé at the Grand Finale this season was extra special as it was my first runway appearance as a new mother. I loved the way Anita captured the theme of Liquid Gold to represent Argan Oil. In this new phase of my life I’m inherently inclined to products that offer care along with colour and that’s why I’m so excited about the launch of the new Argan Oil Lip Colours by Lakmé. They’re all about rich colour and nourishment.” The man who recreated another beautiful version

of Liquid Gold, Donald Simrock, the Official Makeup Expert said,” I am always excited and happy to be a part of Lakmé Fashion Week and this year’s beauty trend of Liquid Gold is all set to create a buzz in the beauty and fashion industry. For the show, we used gold on the eyes and created a beautiful bee-stung lip by dabbing on the new Lakmé Absolute Argan Oil Lip Colour.” MARCH / APRIL 2017 33

Get Runway Ready with the Latest Hair & Makeup Trends.

J

ust like every year, fashion victims and beauty queens can’t wait for summer to wear the hottest outfits and makeup trends. Reviewing the fashion weeks, beautypress has collected the most beautiful looks for the upcoming season. Back to the 90s If it was up to Kenzo, summer 2017 will be nothing but a party - a party that will

be celebrated in a 90s style. The ladies go for dresses and tops with spaghetti straps, slip into metallic or leather miniskirts and lace their platforms. In proper style, the eye makeup is predominantly blue or green. Besides Niagara, a classic denim blue that stands for lightness and relaxation, the energetic Lapis Blue and the aquatic Island Paradise are also well-suited to create a stunning 90s look. Greenery, too, sets some fresh accents and highlights the sparkle of brown eyes. The colourful Life Maison Margiela’s new spring/summer collection will be anything but dull; this not only applies to the flamboyant and colourful couture that ensures cheerfulness. While the collection stands out thanks

42 MARCH / APRIL 2017

to the vibrant colours, the makeup, too, is characterized by vividness: makeup artist Pat McGrath used candy-coloured shades for dramatic cat eyes, whereas lips and complexion stayed natural. Natural Beauty The French lingerie label etam proved that nude is still en vogue this summer.

Make sure to have an even and flawless complexion as a base when copying the look. To begin with, the eyebrows are brought into shape, the eyes are slightly accentuated, here and there some metallic reflections shimmer. Last but not least, add subtle sparkle to the lids and apply a transparent gloss to make the lips shine.

Less is More The collection of Rick Owens is limited to the essentials and hence fulfills the demand for a clean look that is of timeless elegance. Behind the scenes, the makeup artists, too, have followed the same principles: The models’ makeup is puristic and natural. They walk along the runway just like school girls, wearing neatly parted hair, having a flawless

complexion, with a “touch of nothing” on the eyes and lips. Glow, Glow, Glow! Colourful, versatile and electric: This is the perfect description for summer when taking a look at Alexis Mabille’s collection. The French designer’s fashion is taylored to the romantic and sensual and, likewise, casual type of woman. Presenting outfits in yellow, red and white, the designer harmoniously rings in the summer season. The vibrant colours are combined with a healthy glow and a makeup that can be worn throughout the day. Matching the look, the hair is worn loose, the nails get a French manicure.

HAIRCARE

Smooth &Shiny No More Bad Hair Days.

H

air is one of the most important features for attractivity. Already in ancient Egypt, healthy and full hair has been a symbol for youth, strength and dignity. However, hair is always different: Be it straight or curly, normal or dry, stressed or quickly greasing: As very hair type needs its individual grooming routine, beautypress ex-plains how to prevent future bad hair days. Normal Hair Characteristics The hair is resilient, flexible, smooth and shiny. Those who have normal hair, usually have a sound scalp.

Curly, Unruly Hair Characteristics As it doesn’t lie flat on the scalp as normal hair and hence doesn’t get in contact with that much sebum, curly hair tends to be dry. Due to its natural flexion, curly hair has a less smooth cuticle layer, making it more brittle than normal hair. In addition to that, it reacts very sensitive to environmental influences, which makes it prone to split ends and hair breakage. Care Curly hair requires a rich grooming routine. Lipid replenishing and moisturizing in-gredient such as Avocado oil or provitamin B5 intensively nourish the hair and lay a protective film around it that prevents it from drying. Due to its sensitive hair struc-ture, the hair is only pat dried after washing and detangled with a coarse comb. A leave-in treatment that is aligned to the special needs of

44 MARCH / APRIL 2017

curly hair, gives shine and sleekness, and it improves elasticity. Damaged and Stressed Hair Characteristics The hair is weakened and looks dull. It gets split ends and starts to break. Chemical treatments or mechanic strains have damaged the hair structure so much that the lipid-rich binder between the fibers, that is responsible for having soft hair, has re-leased from it. The hair is hard to detangle and brush after washing. Care More is more: An intensively nourishing routine is necessary when having damaged hair. Shampoo, conditioner and hair masks provide the hair with essential nutrients that, thanks to their moisturizing effect, help smoothing the outer cuticle layer and repairing the damaged

Photos & Text: beautypress.com

Care Normal Hair is fuss-free: Clean the hair two or three times a week, using a mild shampoo. This way, hair and scalp get enough time to steady its acid-base balance. Despite its healthy condition, the hair can be pampered with a conditioner or tonic once a week to make sure it keeps being soft and easy to brush. Styling that in-volves hair straighteners or curling irons should only be used very sparsely.

hair structure. Apply some special serum to the ends; it is also recommended to apply a hazelnut-sized amount of hair oil to the dry or wet hair. Hair dyeing and permanent waves should only be done by a professional, and in large time intervals. To prevent further damage, hair straightener and curling iron should only be used for special occasions. Dry Hair Characteristics The hair is dry, unruly and feels straw and brittle. When having dry hair, the cuticle layer sticks out like bristles. Hence, light cannot be reflected, the hair

appears matte and dull. The scalp tends to be dry, itchy and flaky. This originates from a sub func-tion of the sebaceous glands; however, environmental influences, too, can cause dry hair.

Fine and Thin Hair Characteristics This hair type often struggles with static and flyaway hair. Whereas normal hair has a diameter of 0.05 to 0.07 mm, the hair thickness of thin hair is usually between 0.02 and 0.04 mm.

Care A mild shampoo as well as a moisturizing conditioner round out every hair washing routine. Make sure that the products don’t contain irritating agents and only little or no sodium lauryl sulfates (they make our shampoos foamy) as they additionally dry out our hair. Dry ends can be nourished with a hair oil or a serum.

Care Pump it up: A volume shampoo adds fullness to fine hair. Ingredients and volume forming properties are combined with nourishing components, making the hair light and fluffy. For those who still want to get some big hair, a volumizing styling mousse that is applied to the damp hair will do a good job. u MARCH / APRIL 2017 45

HAIRCARE

Greasy Hair Characteristics Greasy hair looks lank, flabby and unkempt: The reason behind this hair condition is mostly traceable to an inherited excess production of sebum. Environmental factors can lead to greasy hair as well. Care Contrary to the common belief that daily hair washing leads to even more greasy hair, indeed, it can be washed daily. It is important to use a shampoo that only con-tains mild substances, and not massaging the scalp too much as this would only en-courage the sebaceous glands to produce even more sebum. Essential oils and herbal essences balance the sebum production and calm the scalp. Lipid replenishing products such as hair masks and oils should be avoided since they weigh down the hair, 46 MARCH / APRIL 2017

making it appear even greasier. Some hair tonic instead refreshes the scalp after washing the hair and also in between. Hairspray, setting lotion and lacquer can be used for styling, whereas gel and wax promote the effect of greasy hair. General Haircare Tips Do‘s n Regularly cut ends of the hair n Use mild shampoos n Use coarse wooden combs n Use brushes made out of wood or wild hog bristles n Brush hair beginning with the ends Don’ts Brush hair extremly often Frequent blonde hair dyeing or other chemical treatments n Hot blow-drying n Daily use of hair straightener n Rubbing hair dry n Brushing wet hair n Using hair ties with metal n n

Spring/Summer 2017 Collection.

Men choose to dress in STEFANO RICCI because they are sure of themselves during every moment of the day. Then, the evening becomes precious with a dinner jacket coloured in black, white, blue Ricci, or royal red, all woven silk made with the mastery of the Antico Setificio Fiorentino’s mythical looms. These are true jewels, owned by the Ricci family since 2010, creating exclusive STEFANO RICCI designs: textile reproductions of the gods of the African dream, which the Florentine designer wanted to transform into virtuous fabrics, full of poetry. These are the dreams and desires of men who recall the style of the Poet, Gabriele d’Annunzio, a hero of the twentieth century who represented the soul of the dandy. Stefano Ricci regarded him as the Arbiter Elegantiarum, and after an exceptional and refined event, began to restore parts of the Vittoriale degli Italiani. An outfit was also donated:

en. Citizens of the world, lovers of the true beauty that lies in the details, in the caress of a soft fabric, in the unequalled techno-sauvage effect of crocodile, in the specialised weaves, in a perfect jewelled button, and in the cut of a lapel, which brings to mind ancient, and yet still very current, sartorial traditions. Men enamoured of true style, of the vestimentary system, which recounts individuality and personality, without ever transcending into ostentation as an end in and of itself, but rather jealously cultivating a hidden vanity. These elements are enhanced in the silk interior lining of the perforated leather jackets, light as clouds, in the unexpected materials, in the sneakers where comfort is never lacking elegance, and in the moccasins that embody a revolution of softness and lightness.

a modern, but faithful, reproduction of that which the Poet wore in his extraordinary haven. A real man’s three-piece suit, the jacket has round forms and structured lapels with handmade detailing, two buttons and a rough softness of wool, cashmere, and silk; this is still an ideal model today. It is a collection made of tactile sensations, sophisticated visions, a suffused game of micro-fantasies, the dare that is only revealed in the fairy tale interior, and in the fit of jackets and trousers revisited without excess in the equilibrium of exclusivity. The STEFANO RICCI world for Summer 2017 comes to life through the details which bestow both a stylistic and aesthetic substance. For some reason, some people address Chole as Channa and so this dish could also be called as Puri Channa. A variety of Puri’s could be made ranging from Palak puri, masala puri to the simple and most popular version of atta or wheat puri. Today we made the simple version. - Priya Kothari Puri Chole For Puri or Bread: (Makes approximately 20 puri’s) Ingredients: 1 – 1 & 1/2 cups whole wheat flour Milk to bind Salt to taste Oil for frying 1 tsp of Ajwain seeds Mix the flour with milk, salt and seeds such that dough has the consistency of almost a pizza dough. Make small balls from the dough.

Wheat flour made into small balls for rolling and making puri. Roll out the dough into 5″ inch round. In the mean while, heat oil such that if you insert a wooden spoon end, the air bubbles start to form around the spoon. Now drop the rolled out dough slowly into the oil. Within seconds, the dough fluffs and rises. 80 MARCH / APRIL 2017

Puri frying Now, turn the half cooked dough to cook on the other side or until golden brown. Your hot Puri is ready! See this was simple, isn’t it?

For Chole or Chickpeas Ingredients: 1 – 1 & 1/2 cup dried Chickpeas or Garbanzo beans soaked overnight, pressure cooked until soft or 2 canned beans – 12 oz each 1 medium size onion chopped finely 1 green chillie chopped finely or adjust the heat as per your taste 2 medium size tomatoes finely chopped or2 – 3 tbsp tomato paste 1 tsp Garam Masala powder 1 – 1 & 1/2 tbsp Dhania or Coriander powder 1 tsp Turmeric powder 2 tsp red chili powder or per your taste 1 tbsp Meethi (tamarind- date) chutney A few cloves, 1 Cinnamon stick, a few whole black peppercorns. Oil 1 tsp black mustard seeds Salt to taste Heat oil in a pan and add the mustard seeds until they splutter. Now add the cloves, Cinnamon stick, peppercorns, onions, green chillies and saute well.

Onions sauteing Add the spices mentioned and saute. Once aroma of the spices is released, add the tomato paste, little water and saute well.

Aloo Pala After adding tomato paste Now add the chickpeas and water such that water almost touches the surface of the chickpeas. Allow it to boil. The water will start to thicken after a few minutes. After adding chole or chickpeas Add salt, meethi chutney and taste. Garnish with cilantro if needed. Serve hot with puri’s and awaken your good old memories from Mom’s kitchen.

NOTE: If you would like to make your own Meethi (Tamarind-Date) chutney, it’s very simple. Mix tamarind paste from a 8oz can with 10 dates pitted and run it in a blender with some water. Add some jaggery to this. If you do not find jaggery, use brown sugar instead as per your taste. Add 1 – 2 tsp red chili powder, 1 – 2 tsp salt, 1 – 2 tsp roasted cumin powder and bring it a boil until you get that syrupy consistency. In the end add some golden raisins or kishmish.

Paratha If I was living closer to my Mom (lucky those who do) I know how much mouth watering food she would have made and fed me and my family especially even more during these cold winter days. But, life moves on and now I am making stuff that I have learned from my Mom growing up for my family. One such definite comfort food during this kind of weather is hot Aloo Paratha. Mouth watering isn’t it? I have learned from my mom not to waste food and to add as much vegetables as possible in any dish she makes. So I had some spinach leaves and decided to use them in aloo paratha. This is also a great way to make kids take a little more vegetables. - Priya Kothari

5 medium size aloo 1 small onion 1 tsp of grated ginger 1/2 bunch of spinach leaves 1/2 tsp haldi powder 1 tsp red chili powder or per taste 1 tsp amchur powder or per taste 1/2 tsp dhania powder A few sprigs of cilantro (optional) 2 tsp of cooking oil Salt per taste For the Paratha: 1 & 1/2 cups of whole wheat flour 1 tsp salt 1/2 tsp of red chili powder Water to knead

Mix the ingredients under paratha adding little water at a time so that no flour is finally stuck to the vessel. Make sure the consistency is tighter than a pizza dough. Your paratha atta is ready. Cover it and keep it aside for about 30 minutes. Pressure cook aloo and then remove the skin, mash it. Finely chop cilantro, spinach and onions. Heat oil in a pan, add the onions and ginger, sauté. Then add spinach and cilantro, saute well, add other spices too. Mix well and then add the mashed aloo, mix and taste. Adjust for seasonings. Let it cool. Roll out the atta just like you would for a pizza or a tortilla to about 5 – 6″ in diameter, place a spoonful of the stuffing in the center. Fold the atta from the sides to the center so as to cover the stuffing. Dip it in flour and roll out gently. It’s okay if the stuffing comes out a little, just dip it again in the flour and roll gently until the desired thickness and size is achieved. If too much stuffing comes out even before the atta is rolled out to a decent size, it means you have placed a lot of stuffing. Heat a pan, add this rolled out atta for a minute, then flip it. Add a drizzle of oil on top of the atta, flip it again and press it all over. Add another drizzle of oil on top of the atta, flip it again and press again until it golden brown on both sides. Aloo Palak Paratha is ready to be served as is or with a side of pickle or plain yogurt.

Ingredients: For Stuffing:

Paratha is a flattened wheat bread usually pan fried with ghee and served with either dahi, achaar or some vegetables. Parathas can be plain or stuffed with vegetables, paneer, or simple spices. It is wholesome and satisfies everyone at every meal. My mom always made paratha’s growing up and we never got bored of eating them. She knew how to make them interesting by making variations from plain to stuffed ones. My all time favorite was not one but a few varieties such aloo, mooli, gobi, methi. Every evening when I came home from school, my mom would make those delicious parathas. The aroma filled the air and melting ghee made the paratha turn golden brown and crispy too. Every bite of it would melt in my mouth. With a side of simple dahi or achaar would make it even more delightful. I would like you to experience this wonderful dish and pass it along to your family & friends and build memories as I did. - Priya Kothari Ingredients: Atta 3 cups Mooli 1 medium size grated 1 green chili finely chopped or as per taste 2 tsp red chili powder or per taste u

Mooli

Paratha Salt to taste 1 tsp garam masala 2 tsp jeera Dhania fresh chopped (optional)

Add salt to the mooli and keep it aside so that the water from mooli can come out. After say about 30 minutes or so, squeeze the water in the mooli by placing them in between your palms. This makes the paratha come out well and easy to roll. Add the spices and green chili, dhania, check for seasonings. Add little water and salt to the atta and knead it like a pizza dough. Let it rest for 10 minutes. Then makes small balls out of them & roll out a little bit as shown below. Place a spoonful of the mooli mix in the center and close the left over atta so that the mooli mixture is completely sealed. Roll out the stuffed atta. Add some atta flour if needed so that it does not stick while rolling out. Heat a flat pan and put this rolled out paratha. After a couple of minutes, flip it. Now add some ghee or oil on top of the paratha and flip again. Press it with a spatula so that it turns golden brown. Flip to cook on the other side. Serve hot with some chilled dahi and/or achaar.

Gobi

Paratha Mom-in-law made this delicious, flaky, melt in your mouth gobi (cauliflower) paratha the other day and it was so yum. I did not feel guilty eating an extra because I gave myself an excuse that it’s only made from whole wheat flour and cauliflower and not deep fried. Stuffed paratha’s could be eaten just by themselves or could be accompanied by pickle, dahi(yogurt) or a simple dal(lentil). I prefer it with simple home made dahi which again I learned to perfect it from my Mom-in-law that too from a low-fat milk. Now tell me, won’t I eat an extra paratha after all it is made from the goodies? - Priya Kothari

Ingredients: 2 cups whole wheat flour (Approx for 4 – 6 people) 1 tbsp oil Salt to taste 1 whole gobi or cauliflower – chopped fine in a food processor or grated 2 tsp red chilli powder or as per your taste 1/2 tsp turmeric powder some cilantro or coriander chopped 1 – 2 tsp Amchur powder 1 tsp Garam Masala (optional)

82 MARCH / APRIL 2017

Add some salt to the finely chopped gobi and keep it aside for about 30 minutes. Meanwhile add salt, water and oil to the flour and knead well to form a consistency of a pizza dough or Puri. Take a handful dough and make round balls. Coming back to the gobi, after 30 minutes, the gobi would have started to release some water. Squeeze all the water out of the gobi using your hand. Now add the cilantro and spices mentioned above and taste. Adjust if needed. Roll out the dough balls a little bit say about 4 inch diameter or whatever is comfortable for you and place the gobi mixture in the middle. Close the loose ends of the dough such that the mixture is completely sealed. Now roll out the dough. It’s okay if the gobi mixture comes out a little bit here and there. Use some flour to roll out whenever needed or if the dough sticks to the board or your counter top while rolling out. Heat a pan, put this stuffed dough for a few minutes. Flip the side. After a couple of minutes, add 1 tsp of ghee or oil and flip again. With a spatula press it all around for a minute until it turns golden brown. Again flip and repeat the above step on the other side. So it’s totally 3 flips only and your hot Gobi Paratha’s are ready to be relished with some dahi or anything that satisfies your palate.

A blend of cooked moong bean, whole wheat flour, aromatic spices and herbs all put-together and rolled into one heck of a paratha (bread) and pan cooked with just a drizzle of oil and eaten hot. Now tell me that doesn’t sound good to you? Most of the days my mom would make parathas with different kinds of stuffings, roll them and pack for lunch in my lunch box with a side of plain yogurt or ketchup and each day it tasted different. Hmmm… I wish I was a kid again and living with my mom! But I continue her tradition by making it for my family often. It’s the meal I have grown up eating and brings a lot of wonderful memories and want to share a piece of it with you all. - Priya Kothari

Directions: Soak moong dal overnight. Drain excess water. In a non-stick pan, add 1 tsp oil, add cumin seeds. Then add the moong bean, sauté, add 1/4 cup water, cover with a lid and let it cook until soft. Once cooked and water has evaporated, add the chili powder, dhania powder, lime juice, turmeric powder, salt, mix well and turn off the heat; let it cool. The add finely chopped onions and cilantro. Mix 1/2 tsp of salt with flour and slowly add some water to it until it forms a dough. Cover it with a plastic wrap and let is sit aside for at least 20 mins. Take a small piece of dough and place it between your palms, make a round ball. With a rolling pin, roll the dough, sprinkle some wheat flour if necessary to prevent sticking. Roll to about 5 inches in diameter. Place a spoonful of moong bean in the center of the dough, pull the edges of the dough and cover the stuffing. Roll the dough further into a thin round shape about 10 inches in diameter. Heat a pan, place the rolled paratha. After about 1 minute on medium flame, flip it. After about 2 mins, drizzle < 1/2 tsp oil on top of the paratha then flip it again. Press it with a spatula all over to form a golden brown colour. Flip it to cook on the other side and get golden brown. Take it off from heat and serve hot with a side of plain yogurt, lime or mango pickle or ketchup.

Mix all the ingredients with little water to get a pancake consistency. In a non-stick pan, pour a spoonful and spread it like a dosa or omlette. Let it cook, flip it and let it cook on the other side. The rice flour makes it a little crispy as well. Serve hot with dhania chutney or enjoy as is. Healthy Childa served with my Dhania Chutney for Breakfast. TIP: You can use a variety of vegetables like cucumber, cabbage, carrots, mashed peas, chopped spinach etc. So be creative and use any vegetable you like. NOTE: The ratio of sooji to besan is 2:1, so you can adjust for as many people. MARCH / APRIL 2017 83

ame one continent that conjures up the most superlatives. For starters, think coldest, highest, windiest and driest continent on the planet. You’re spot on if Antarctica comes to mind!

The preferred way to experience a plethora of additional superlative experiences in this bucket list destination is to explore Antarctica in the intimate way that only a small ship can offer. That’s where small ship cruise expert Adventure Smith Explorations (www.adventuresmith explorations.com) comes in. Their suggestions for layering in the “wows” add even more excitement to cruising the White Continent. 1) Stand-up Paddleboard in Antarctica: Sail on the 199-guest Ocean Endeavour

to experience the calming, surreal feeling of standing and gliding on the water's surface among ice floes. This is the only expedition ship currently offering stand-up paddleboarding as an optional (addedcost) adventure activity. The sport of stand-up paddleboarding, a hybrid of surfing and kayaking, provides a very personal perspective of Antarctica as you stand solo on the stable surf-style board, propelling your way forward with a single, long oar. Guides take out small groups of 10 paddleboarders in good weather conditions on calm bays and harbors. u

2) Go the Fastest: Choose the 148-guest National Geographic Explorer, which clocks in at up to 18 knots, for the fastest Drake Passage crossing. Or opt for an air cruise, like the Antarctica Air Cruise or Antarctic Express, to shave off the days-long crossing with one-way or round-trip flights. 3) Scuba Dive in Antarctica: Sail aboard the 114-guest Plancius or the 116-guest Ortelius to experience Antarctica’s underwater world of marine life: kelp walls, sea snails, crabs, sea butterflies, jellyfish, sea-hedgehogs, starfish, krill and giant isopods. Fur and leopard seals and penguins abound. Dive sites are varied and may include shallow ice diving and diving along a wall, and entering the water from a beach or from the zodiac. The maximum depth is around 20 meters (60 feet). Scuba diving incurs an added cost and is for experienced divers only who are familiar with cold water diving and dry suit diving (at least 20 dives). 4) Cruise on the Smallest Ship: The 72-guest Ocean Nova, measuring 240 86 MARCH / APRIL 2017

feet in length, is the smallest ship that AdventureSmith Explorations books for its Antarctica trips. This modern, Danish-designed vessel offers the most intimate of Antarctic experiences aboard a nimble ship. 5) Skinny Ski Antarctica: The 199-guest Ocean Endeavour is the only expedition ship in AdventureSmith’s catalog offering cross-country skiing as an add-on activity. Antarctica’s pristine snow makes it the perfect place to Nordic ski, with penguins providing the soundtrack. Crosscountry skiing is only available on select Antarctic voyages at the beginning of the season. 6) Travel with Famed Explorers and Scientists: National Geographic The White Continent and National Geographic Antarctica, South Georgia & Falkland Islands expeditions offer an extensive Global Perspectives program, with scientists, artists, historians, explorers and other influentials joining their Antarctic voyages as expert guest speakers. Sailing with you are the likes of Peter Hillary, the son of Everest’s Sir

Edmund Hillary; archaeologist Lee Berger, one of Time Magazine’s “100 Most Influential People in the World”; Frances Ulmer, the Chair of the US Arctic Research Commission; and Joe MacInnis, the first person to explore the ocean beneath the North Pole.

The short season matched with limited departures aboard small ships mean most cruises sail at full capacity. We suggest that travelers book nine to 12 months in advance for the best selection of cruises, cabins and activities. This also helps ensure the best price.” The urgency to travel here now is underscored by environmental threats in addition to global warming: overfishing,
