Pickleball Center St. Luke’s opens major regional

JEANETTE MASLONKAHARTZELL GOT HOOKED on pickleball the second time she played it. “You just fall in love with it,” says the Easton resident. “It challenges you and it lets you challenge other people.”

Jeanette is one of thousands in the Lehigh Valley who are flocking to the new St. Luke’s SportsPlex. According to Mary Jo “MJ” Cambridge, Director of Operations for St. Luke’s SportsPlex and Pickleball Lehigh Valley, “The best part is watching people connect with others. It is changing people’s lives physically, mentally, and emotionally. What a gift to us all.”

“Pickleball is this wonderful sport for

all ages and abilities. People from all different experience levels are coming together not just to play the sport, but to make friends and become a community at this amazing facility,” adds MJ, a Bethlehem Catholic graduate who worked for the U.S. Tennis Association and has fond memories of playing tennis when the facility was the West End Racquet Club.

The St. Luke’s SportsPlex on Crackersport Road in Allentown, visible from Route 22 just west of the Route 309 intersection, is poised to become the pickleball mecca of the Northeast, according to MJ, who is hoping to land a Pro Pickleball Association event in 2025.

St. Luke’s SportsPlex is a 75,000-squarefoot facility with 25 indoor courts plus a 22-court, three-acre outdoor area.

The indoor courts feature six majestic 8,000-square-foot Amish-built “barrels,” or bays, that sport 12 NBA-quality hardwood pickleball courts, 12 designated hardcourt pickleball courts, plus an event center lined for another indoor court.

“This is such a welcoming community, whether you have experience or no experience at all. Everyone is willing to help and play with you and teach you things,” MJ says.

Pickleball is the fastest-growing sport in America over the last four years according to the Sports & Fitness Industry Association.

Celebrating LGBTQ+ History

BRADBURY-SULLIVAN LGBT COMMUNITY CENTER fosters inclusion while honoring the past.

Their LGBT Community Archive collects, preserves, and provides access to the LGBTQ+ history of Lehigh Valley. In partnership with Trexler Library at Muhlenberg College, this archive includes publications, records, personal papers, oral histories, and artifacts documenting local and regional LGBTQ+ life and activism. The archives are in the process of moving into Bradbury-Sullivan Center, so the public will have the ability to celebrate a shared history while increasing the visibility of underrepresented individuals.

In addition, Bradbury-Sullivan Center creates community through its 14 community groups.

“Our community groups serve to create a safe space for LGBTQ+ people to come together and build community,” said Community Programs Coordinator Peter Flood.

“We serve both those that are local to Lehigh Valley and people all over the world through our virtual meetings.”

Bradbury-Sullivan Center brings everyone together, especially through their Lehigh Valley Pride festival.

“Pride is important to me because it allows me to see the work of centuries of queer history in action,” said Archive Coordinator Tiersa Curry.

Giving Back: Chad Butters

AS A RETIRED ARMY VETERAN,

Eight Oaks Farm Distillery Founder and CEO Chad Butters knows the importance of making an impact. “That’s what I’m here for. We’re all here to improve our communities,” Chad said. “My purpose in life is to leave the land better than I found it.”

Eight Oaks Farm Distillery was created when Chad’s wife received a cancer diagnosis. It was then that he and his family truly reflected on what they wanted out of life. From that contemplation, Chad and his family decided to start a business that allowed them to spend time together and have fun while also bettering the community.

At Eight Oaks, every decision is influenced by making a difference,

starting with their raw ingredients. Chad and his team have worked together to alter recipes so that the ingredients are solely coming from Lehigh Valley, letting their farm serve as inspiration.

“We should do things that are worth doing,” Chad said. “It’s worth doing when you’re making a positive impact on the community you live and work in.”

During their first year of operation, Eight Oaks received more donation requests from nonprofits than they could handle. Seeing the severe need inspired Chad to use Eight Oaks and partner with nonprofits that resonate deeply with them, including Second Harvest Food Bank, Cancer Support Community, and PA Veteran Farm Network. Eight Oaks recently hired a

director of community engagement, whose position is solely dedicated to connecting and maintaining relationships with community partners.

Through their partnership with PA Veteran Farming Network, Chad developed a grant program that offsets the extra expense that prevents farmers from taking advantage of government programs to develop their farms.

Eight Oaks Farm Distillery is committed to being caretakers of the community.

“Tomorrow is not promised, yesterday is already gone,” Chad said. “What are you going to do today to make a difference?”

A SHIFTING CULTURAL LANDSCAPE and growing awareness of healthy eating and environmental sustainability are influencing more people to seek out meatless dining options in the Lehigh Valley.

Despite the increasing demand, finding creative and high-effort vegetarian and vegan dishes can still be a challenge when dining out. Created by Derek Wallen and Shelli Adams, Roasted is the exception. No low-effort dishes are allowed and all dietary preferences are welcome.

Located on Fourth Street in Bethlehem, Roasted is a cozy space buzzing with chatter from the lunch rush. The coffee is always hot, and you will find an abundance of fresh, local, and scratch-made breakfasts and lunches with plenty of healthy vegetarian and vegan options.

“There’s something for everyone on the menu,” Derek remarks as Chef Chris McDermott plates a Vegan Scarlet (pictured), one of Roasted’s famed savory pancakes packed with broccoli, mixed peppers, onion, vegan cheddar, and topped with seasoned tofu. “We focus on sourcing our ingredients locally and supporting our neighbors. We’ve tried to create a menu people actually want to go through the trouble and expense of dining out for, and make them feel like they have a place at our table no matter their dietary needs or preferences.”

A few of the most popular vegan dishes on the menu include the Cooper, a roasted medley of broccoli, potatoes, onion, walnuts, and brussels sprouts, and the Five Points Burger (pictured) a house made black bean burger topped with delicious veggie chili, caramelized onions, jalapeño, vegan cheddar, and vegan chipotle mayo.

You can catch breakfast or lunch at Roasted in SouthSide Bethlehem. They are open Wednesday to Friday from 7:30AM to 2PM and Saturday and Sunday from 8AM to 2PM. On weekends, Derek recommends taking a walk down the Bethlehem Greenway after lunch to snag a pint of locally brewed beer from Country Club Brewing.

FRESH FROM THE FIELD and picked at peak ripeness, the vegetables grown at Mei Xiang’s Wonder Garden in Hellertown need to travel only 15 minutes before they are peeled, chopped, seasoned, roasted, or stir-fried into vibrant and comfortably portioned dishes at Wonder Kitchen, her small restaurant on the corner of Fourth and Adams in SouthSide Bethlehem.

Mei Xiang and her husband Yiting Hu purchased their 23-acre farmstead in Hellertown in 2018—about a year after they made the life-changing decision to move their family from Beijing to the United States. After certifying their land for organic farming, Mei and Yiting quite literally began growing their family’s new life from the ground up. The pair has invested their time, physical well-being, and passion into growing ginger and a variety of organic crops, which are all sold at their farm’s produce stand, purchased by local restaurants in the Lehigh Valley, or used to create the homestyle cuisine at Wonder Kitchen.

The menu at the restaurant is truly delightful, consisting of simple homestyle Chinese and Pan-Asian dishes that burst with the flavors of fresh ingredients from Mei’s farm, such as the crisp Kering potatoes (Indonesian-style potato chips served in a sweet and spicy sauce), Singapore Noodles (curried rice noodles stir-fried with veggies and meat/tofu) or Nasi Goreng (Indonesian fried rice with veggies and a sunny side up egg). Nothing is left to waste, with food scraps from the kitchen being broken down into compost that enriches the soil at Wonder Garden.

Patrons enjoy a curious satisfaction in their souls when savoring the first bites of a meal from Wonder Kitchen; the flavors are enriched all the more by the fact that the people behind this petite and unassuming Asian bistro are making great strides to further sustainable farming in the Lehigh Valley. They are minimizing food waste and enhancing the quality of produce available to our communities. Suddenly, every mouthful becomes just that more delicious.

Lindsay, with support from her mentor William Brown, co-founded FIA NOW after leaving her job on Wall Street.

“My business partner and FIA’s CEO, Bill Brown, has been a mentor to many over the years. It was his investment and belief in me that allowed me to become an entrepreneur through FIA!”

DOROTHY ZUG TAYLOR created a significant endowment to provide St. Luke’s nursing students with scholarships. Her longstanding ties to St. Luke’s University Health Network date back to her time as a 1957 graduate of St. Luke’s School of Nursing. “Dotty,” as she was known to her friends and family, passed away in July 2023 following a lifetime of accomplishment and service to her community.

The newly established Dorothy Zug Taylor St. Luke’s School of Nursing Scholarship Endowment Fund will be used to provide scholarships to nursing students with demonstrated financial need and an interest in entering a nursing career in acute care or behavioral health. Preference will be given to first-generation, post-high school students who intend to work at St. Luke’s following graduation.

Her original “Pay It Forward” endowed scholarship fund to benefit the St. Luke’s School of Nursing was created in 2007 to support and advance the education of students and faculty members.

The most recent endowment continues her longstanding commitment to providing educational opportunities for aspiring nurses.

“St. Luke’s and the School of Nursing deeply appreciate this latest example of Dotty’s commitment to the nursing profession. As a proud graduate of St. Luke’s School of Nursing, she has supported the school for decades. Through this most recent endowment, Dotty has ensured that countless students will be able to pursue a nursing education that would otherwise be out of their reach. Additionally, a nursing excellence award to recognize practicing registered nurses will be named in her honor,” said Carol Kuplen, former President of St. Luke’s University HospitalBethlehem and Chief Nursing Officer.

Following her graduation from nursing school at St. Luke’s, Dotty went on to earn a Bachelor of Science degree in nursing from the University of Pennsylvania and worked as a nurse in Philadelphia before settling in Bethlehem and raising three children: Dr. Kathy Zug, Marty Zug, and the late Charles Zug IV.
