summer The longer days of summer have arrived and we are excited to celebrate all that these sunny, warm days have to offer: picnics, farmer’s market outings, brunch dates, new summer wardrobes, and day tripping with family and friends. The summer season is also the time of year that we start to see vibrant fresh fruits and vegetables making their appearance at local markets, restaurants, in our own backyards, and at our kitchen tables. It’s a time to sit down and savor, and we’re here for every minute of it. For some, food is a way of life. Meals have always taken on a deeper meaning. They have become a reason to gather socially, a sacred blend of good food, good company, and good times. One thing I have always loved about Aiken’s culinary scene is that everyone can find something that they love to eat or drink. Whether it’s fine dining, freshly roasted coffee, decadent deli style sandwiches, or locally farmed meat and produce to cook in your own kitchen, it’s there and waiting for you to enjoy. Food, friends, and family is what this summer issue is all about. We are dedicating this issue to local dining, fantastic stylish wardrobe finds, and the best way to spend your summer days! Authentic | Leading the way through innovation and example
Authentic Woodland Valley Farms J U S T O U T S I D E O F A I K E N , you’ll find one of the most bio-diverse agriculture systems in the state: Woodland Valley Farms. Allyssa Ferguson and Chase Renninger, the husband and wife farmer duo behind Woodland Valley, are dedicated to maintaining their roots in permaculture, organic practices, and humane animal husbandry as they work to continually grow their farm to serve more of our community. Their farm was originally farmers market centric before the pandemic encouraged them to switch business models to become a Community Supported Agriculture (CSA) farm. In this model, families can pledge to support a farm and help the farm in return eliminate waste, save time, and have more control over their bottom line. Woodland Valley Farm raises 200 heritage hogs a year, nearly 1,000 free range conventional and heritage meat birds, 100 free range laying hens that provide fresh eggs, 40-50 hair sheep, a small cattle herd of about 20, and a small dairy goat herd. All of these animals contribute to the weekly “farm shares” that are built and delivered to the 40 family CSA that supports the farm. Typically, each share includes meat (chicken/beef/pork/lamb), seasonal vegetables, one dozen eggs, and a handful of fresh oyster/ shiitake mushrooms, all of which are produced and harvested on the farm. The variety from week to week is immense as Allyssa and Chase introduce their customers to new items while supplying many of their favorite ones, too. Allyssa and Chase are all in with their farm. Through their hands-on work, they are continually growing as people with the day-to-day challenges of farming, encouraging them to be innovative, to heal spiritually, and to strengthen their bodies while at the same time working to heal their land and harvest nutritious, delicious meals for our community. Woodland Valley Farm is about more than simply raising animals and harvesting produce. It’s about education, too. They both love to sit down with their customers and teach them how to cook the produce from their farm—including produce their customers may have never tried before—and educate them on how to choose healthier ways to eat.

A peachy state of mind
Ingredients: Q 5 peaches, peeled, cored, and sliced (about 4 cups) Q ¾ cup granulated sugar Q ¼ teaspoon salt For the batter: Q 6 tablespoons butter Q 1 cup all-purpose flour Q 1 cup granulated sugar Q 2 teaspoons baking powder Q ¼ teaspoon salt Q ¾ cup milk Q ground cinnamon Directions: Q A dd the sliced peaches, sugar and salt to a saucepan and stir to combine. Q Cook on medium heat for a few minutes, until sugar is dissolved and brings out juices from the peaches. Remove from heat and set aside. Q P reheat oven to 350° F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove pan from oven. Q I n a large bowl, mix together X the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth into an even layer. Q S poon the peaches and juice over the batter. Sprinkle cinnamon generously over the top. Q B ake at 350 degrees for 38-40 mins. Serve warm with vanilla ice cream.

In 1931, just two years removed from the Stock Market Crash of 1929 and in the heart of the Great Depression, JW Yonce Jr. borrowed money from his father, JW Yonce, to plant 25 acres of peach trees on land 30 minutes up the road from Aiken in Johnston, South Carolina, having no idea just how much his orchard would grow over the years. Today, the original 25- acre peach orchard has grown to an orchard with over 4,300 acres filled with peach trees. It’s been a family tradition ever since the beginning, too. Big Smile Peaches is currently a 4 th generationowned peach farm that will harvest 38 million peaches just this peach season!

Chris Yonce and Josh Yonce are cousins, and are a part of the 4 th generation that has worked on the family farm. They, along with their team, pride themselves on providing consistent, great quality when it comes to the peaches that they grow. It doesn’t matter if you buy a peach on the first day of the season or the 100th day of the season, the taste is Their peach picking season lasts for 16 weeks each year—May 1 through Labor exactly the same. They take great pride in Day—due to the fact that they grow the level of cleanliness and sanitation of over 41 varieties of peaches. One day can their operations that they have had since include picking up to 800,000 pounds of the beginning. After every shift, they peaches and packing over 15, 000 boxes spend an hour cleaning the entire facility
from top to bottom, and they send their peaches weekly to be tested by microbac labs to ensure customer safety. In addition to the peaches, Big Smile Peaches also grows, harvests, and ships out thousands of pounds of pecans from their farm. They’ll have between 80,000 and 100,000 pecans this year! Joe Cruz is a military veteran who has been a volunteer at Aiken Equine Rescue for the past year. “Being in the army, my life was structured and there was a set purpose. After retiring I lost that feeling of purpose. I have that back now as I interact with the horses and know I am making a difference in their lives and the Aiken community.” In addition to helping the animals onsite at the rescue, these Leisure Days also are about providing connection and fellowship between the volunteer veterans and active duty members, as well as those from the local community.
Social Mission | Making a difference in the lives of others “The chance to interact with active duty who come to the rescue volunteering their time gives us the same purpose which is to better the lives of the animals that live there” said Joe. “Being new to the area and being retired after 25 years in the army we have met many friends there. The rescue feels like a family now. It is a relaxing place to go to make a difference for the animals and the soldiers who volunteer. I know what they are going through as I have walked in their boots.” For active duty participants, the program provides an opportunity to escape from the pace of their normal routine and enjoy a well needed mental break. Horses provide a powerful healing ability that can help those
dealing with high stress levels as well as those who may be suffering from PTSD. Volunteers in the program often form bonds with the horses on site, leading to a connection that is meaningful and rewarding for both the volunteers and the rescued horses. Joe has formed a particularly strong bond with “B,” one of the horses at the rescue.“She bonded with me when I was clearing her paddock last summer. She followed me around observing what I was doing and waited for me. She looks for me now. She is not an easy horse, she came from the racing world and is feisty. That is what I like about her. When you look into her eyes you can see her intelligence and when I talk with her she really listens and she knows what I am saying. Some horses have a
hard time trusting at first and it is very rewarding to gain their trust.” Aiken Equine Rescue continues to make strides to help as many horses in need as they can, and in doing so they are opening their doors to help as many people in their local community as they can too.
