Cooking Up Something Special

IT’S SUMMER and Lancaster City is abuzz with exciting new culinary concepts just in time for our annual summer food and drink issue. We’ve dubbed this the Open Kitchen issue because we’d like to think that when you page through this edition, you will not only be hungry, but you’ll meet some of the talented people who are baking, cooking, mixing, and plating Lancaster City into a food lover’s dream.

Here at Fig, we’ve been cooking up something special too. After page 38, you’ll find our first-ever Lancaster City Restaurant Guide, brought to life by our sponsors: Lancaster City Alliance, Kegel’s Produce, Brubaker Inc., and SERVPRO. Tear it out (it’s designed to be your traveling food guide) and make your way to all 150+ restaurants and cafes. We’ve even added icons so you know what to expect

from each local business for breakfast, lunch, dinner—and of course, brunch. For those of you who need a little boost to get going, we’ll keep you fully caffeinated with a guide to 12 city coffee shops on page 58 and a feature on local coffee roasters to finish out the book on the inside back cover (p.s. it folds out).

In between all that eating, make more summer memories with the whole family by exploring the brand new Lancaster Public Library, taking a trolley ride on First Fridays, or downloading the Discover Lancaster Ice Cream Trail for dessert. The kids will love it too!

We hope you enjoy this issue as much as we enjoyed creating it.

See you in the city, Deborah

A fond farewell

Thank you to Kathy Frey for bringing joy, energy, and style to Lancaster City and the pages of Fig for nearly 20 years through Festoon. She has fulfilled her mission: to awaken and inspire, with passion, the creative spirit within all those we serve. Read Kathy’s entire message at figlancaster.com/articles.

A MESSAGE FROM KATHY:

It has been a wonderful journey filled with amazing memories. The original Festoon was in the Hager building, with a second location that opened in Lititz at Brighton Village. The best was yet to come when we moved to the Firehouse on Duke Street— where our brand grew to heights I never thought possible. My love and passion exploded as we were able to design our own line of clothing called Selga, highlight many local artisans, and create our line of personal care called Brio with the expertise of a local professional. All of this came from a fearless approach, with God revealing his gifts to me along the way while I shared them with all of you.

From day one in 2004, we adopted the Golden Rule of kindness and courtesy, love and respect which has led to our relationships with all of you, our treasured customers. Many of you are now my friends, and I consider you my family. Your ever-present enthusiasm and response to our curated products has been overwhelming, and I am honored by your patronage for almost 20 years. Thank you from the bottom of my heart. I will greatly miss seeing you on a day-to-day basis, and I will hold close to me the many memories we have made together.

With so much love and appreciation,

Kathy

Stop by the store for special deals all summer long. Festoon will be happy to honor all gift cards and store credits dating from 2018 through August 1.

Fresh Face: Passerine

AFTER NEARLY A DECADE of investing in Lancaster’s food and beverage scene, Passerine Owner Kyle Sollenberger has launched a new venture on the corner of Orange Street and Gallery Row. Kyle and Passerine co-owner Dr. Jonathan Shirey envisioned a place where patrons could experience exceptional cuisine in a casual environment. With a desire to create exceptional experiences, Kyle is establishing Passerine as an all-day cafe, restaurant, and bottle shop that celebrates the hard work of regional producers and the fresh produce that abounds from Lancaster and surrounding lands. “Passerine is a place

where people can come in and grab bottles to go, or just come in and hang out,” Kyle said. “We generally make smaller plates that are meant to be enjoyed or shared. You’re going to sit here with a group and fill the table with plates and glasses and have a lot of fun.” Passerine is powered by a team of people who are passionate about their craft and will use their fine-tuned skills to establish the cafe as a mainstay in Lancaster City’s food scene. Executive Chef Joshua Manny crafts exquisite French and new American dishes with vibrant flavor infusions while General Manager Steve Wood develops Passerine’s wine & beverage menus.

Passerine’s ethos is: “Just like the mighty songbird, we are united through our ability to act as storytellers in the space.” From management to the back of house, they are invested in creating an outstanding experience for patrons, drawing them into a narrative that extends far beyond the food.

The table is set for you! Visit cafepasserine.com to explore the menu.

WHEN JEAN AND BRYAN

DOWNSIZED and relocated to 101NQ, they asked Henrietta to help transform their condominium into the contemporary space of their dreams. The original floor plan lacked natural light in the primary bedroom and offered limited storage. The solution: Creating two ombre windows that flank the fireplace, allowing natural light to flood into the interior suite from the living room while providing

necessary privacy in the bedroom. With custom cabinetry and custom furniture throughout the condo and a crisp blackand-white palette, Henrietta and her team created innovative solutions to exceed expectations, elevate, and brighten the home. Fresh Face: The Urban Farmhouse

MELISSA HOUSER’S PASSION for baking developed during childhood, with afternoons spent alongside her grandmothers—proficient bakers on their own—in their farmhouse kitchens. After college, Melissa pursued a career in social service work, but she never stopped baking.

“My favorite dessert has always been cheesecake,” Melissa said. “And when I decided to open a dessert shop, I knew I needed something to differentiate myself from other local bakeries.”

The Urban Farmhouse, or TUF, opened in December 2022 at 60 North Queen Street. The storefront offers a rotating

selection of 60 cheesecake flavors, many stemming from favorite childhood recipes. However, Melissa is quick to share that TUF is more than cheesecake.

“Yes, it’s a cheesecake specialty shop, but it’s also a place for people to connect and find common ground,” Melissa said. Through TUF, Melissa combines her passion for baking with her commitment to uplifting communities. Her goal is to launch a program for teens with increased risk factors that would afford them an opportunity to learn about business, food safety, and the farm to table experience in “homemade.” The TUF Project, her forthcoming initiative,

is a title reflecting the resilience in the kids she’s worked with throughout her previous career.

Find the weekly selection of by-the-slice flavors or reserve whole cheesecakes for pickup at theurbanfarmhousepa.com.

Spice up your summer

WITH A GENEROUS SPRINKLE of smoked sea salt—welder, amateur chef, and The Spice & Tea Exchange enthusiast Guy Treszi is ready to dazzle guests at his next backyard barbecue. From high-quality salts and spices to inventive flavor combinations, The Spice & Tea Exchange will step up your grilling game this summer.

Guy’s Grilled Steak

INGREDIENTS:

• Two New York strip, ribeye, or top sirloin steaks (1 lb per steak & 1 1/4 inches thick)

• 1/2 tbsp vegetable oil, canola oil, or extra light olive oil

• 2 tbsp The Spice & Tea Exchange smoked sea salt (any flavor)

• 1 tsp black pepper, freshly ground

• 2 tbsp unsalted butter

• 2 cloves garlic, peeled and quartered

• 1 sprig fresh rosemary

INSTRUCTIONS:

1. Pat steaks dry and generously season with sea salt and black pepper.

2. Heat cast iron pan, then add 1/2 tbsp oil over medium-high heat, swirling to coat.

3. Once oil is hot, add steaks to pan. Sear steaks for 4 minutes on each side. Using tongs, turn steaks on sides to render the fat and sear the edges (1 minute per edge).

4. Reduce heat to medium and add 2 tbsp butter, garlic, and rosemary. Spoon the butter sauce over the steak, tilt pan and spoon butter sauce over steaks. Continue this for 1 minute.

5. Transfer steaks to cutting board, loosely cover and rest 10 minutes before slicing. Spoon extra butter sauce over sliced steaks to serve.

Fresh Face: Dimension Scent Studio

SYDNEY MILLER’S CANDLE MAKING BEGAN IN HER HOMETOWN of Indianapolis three years ago at a class with her sisters and her mom. While her mom seemed to have a knack for the craft, Sydney admittedly wasn’t very good in her first attempt.

But the process reignited her creative spirit amidst the pandemic and a work-related move to Lancaster.

“I think a lot of people dug back into their creativity during the pandemic and had a bit more time to go back to things they really love to do,” Sydney said.

“That was definitely what found me here. It’s been a lot of fun—it was one of those things that once you turn it on, it’s hard to turn it back off luckily.”

After practicing and practicing, Sydney honed her skills and began making so many candles, she had nowhere to put them all.

In 2021, she launched Dimension Scent Studio out of her spare bedroom. After building a faithful online following, Sydney decided it was time to move production out of her house while also convincing her sister Haley to move into her spare bedroom and join the team.

They found a spot on Columbia Avenue, moving production for their busy holiday season into the space last winter.

As spring came, the sisters set their sights on turning the space into a place where people could experience their candles and the art of pouring.

Their candles are 100% clean and vegan with a portion of their proceeds going to youth and education nonprofits.

With the studio now open for retail as well as pour-your-own classes, they invite you to find (or make!) your new favorite candle.

Love Your Neighbor

JENNA WAS AT A SOCCER

SHOWCASE during her junior year of high school when she heard her leg snap—her season over just like that. Instead of receiving letters from college recruiters, she was recuperating from a torn ACL and counting herself lucky she could move her leg a little.

In what she called her toughest mental state, Jenna found a way to share light with others. She called her soccer coach with an idea for a league-wide fundraiser. From her recovery bed, she dreamt up and planned a tournament that included over 30 teams.

Jenna and her soccer league raised over $12,000! The proceeds were split between Water Street Mission and Manheim Central Food Pantry. “It was great to bring light and joy to other people when I wasn’t feeling it most,” she said.

“It’s really important to open up your perspective a bit and see there’s a bit more than just your individual self.”

Jenna found a way to love her neighbors, even in a challenging situation. If you would like to do the same, join Water Street Mission’s summer Love Your Neighbor campaign. Learn more at wsm.org.

Fresh Face: Bloom Pediatric Therapy & Wellness

MARLA DAVIS’ EARLIEST MEMORIES are of her father tending to his landscaping business. She spent her childhood immersed in nature and observed when a flower is planted in a nurturing environment, it grows to its full potential.

In high school, Marla volunteered at a summer camp hosted by Schreiber Center for Pediatric Development and fell in love with the world of occupational therapy. After graduating from Elizabethtown College and launching her career, Marla discovered the same phenomenon she saw with her father’s flowers applied to the children she was working with. When children are given a nurturing

environment and a reliable support system, they have the chance to bloom.

Marla used this concept to develop a mobile pediatric occupational therapy service, Bloom Pediatric Therapy & Wellness.

“After working in various traditional therapy settings, I felt there was more I could offer if I could connect with families and really serve my clients in a more personalized way,” Marla said.

Marla’s entrepreneurial spirit and medical expertise are strengthened by her fierce passion for serving people and meeting them where they are. Marla works with each family to ensure they are supported and given

the tools their child needs for success. She uses Bloom Pediatric to celebrate neurodiversity and empower the children she has the privilege of working with.

“Children have such amazing minds,” Marla said. “Getting to know their interests and learning about the child creates a safe and trusting relationship. That’s where you see the most growth, that’s when you see those wonderful moments of success.”

Fresh Face: So Organized

LISBET BYLER WAS AT A CROSSROADS in her career, longing to make a tangible difference in people’s daily lives, when a loved one passed away. Known by her inner circle as an organized person, Lisbet was asked to help as her family sorted through the loved one’s belongings.

Decluttering can be mentally and emotionally overwhelming, especially in the wake of grief. While sorting piles, choosing what should stay and what should find a new home, Lisbet realized her organizational habits and empathetic presence were the skills that would unlock the door to a new career path.

As the only certified KonMari Consultant in Lancaster, Lisbet offers in-person and virtual guided sessions where she works directly with her clients to achieve their goals. Lisbet knows it’s easy to fall back into old habits so she creates a supportive environment where longterm and sustainable change can happen.

“Simply organizing what you have tends to lead to a relapse in clutter,” Lisbet said. “If you don’t get to the root of why you have the things you have and let go of the items that no longer serve you or bring you joy, you’re less likely to stay organized.”

No matter what stage of clutter someone is in, Lisbet is confident applying her expertise to both residential and commercial spaces will transform the way daily life is experienced.

“Getting organized frees up your time in the long run. It saves you money because you aren’t buying things you already have,” Lisbet said. “When you let go of clutter, you can focus on what truly brings you joy and welcome in a more peaceful and fulfilling life.”

Bring on the flavor! Hammond’s seasoned pretzel pieces have a taste for every palate including garlic parmesan, cheddar ranch, cucumber dill, honey mustard, sweet & spicy, cinnamon & sugar, and more.

IN 1931 WILLIAM HAMMOND AND HIS GRANDSON TRANSFORMED the garages behind their adjoining homes into a bakery where they would churn out delicious Pennsylvania Dutch-style hard pretzels. Nine decades later, Hammond’s Pretzels is the oldest continuously-operated family-owned pretzel bakery in the United States.

PHIL WENGER

REACH HIGH

A series brought to you by High Foundation that introduces you to business and nonprofit leaders who are thoughtfully innovating with a spirit of servant leadership.

When you ask Phil Wenger about the story of his career, you’re in for a journey. From his first job in sales for a local greenhouse to founding Isaac’s Restaurants to serving on notable nonprofit boards, Phil has had the unique opportunity to impact Lancaster in most community sectors. His most recent position as President of the Lancaster Conservancy felt like a full circle moment to his days in the greenhouse.

“The latest chapter of my life was defined by this environmental passion that was buried deep inside me,” Phil said. “Our planet is in peril. And I got an opportunity to say, ‘Look at all this land we protected. Look at all this nature we’re going to give a chance to thrive.’”

Throughout his story is this common thread— a passion for living things. Whether it be the plants he sold, the employees he invested in at Isaac’s, the people he has mentored, or the land he has stewarded and protected over the last eight years at the Conservancy.

“You can have a tremendous amount of success in your life by following your passion,” he adds.

As someone who credits himself fortunate to spread his passions around in many areas, Phil has wise words for the next generation of people who care about this community.

“I like to encourage young people to learn as much about the community as possible,” he explains. “Because I think you can actually have a bigger impact if you’re knowledgeable about more than just one focused area. You should find something you want to know more about—how it works and where you can make an impact.”

With a new transition on the horizon for Phil as he steps down from the Conservancy, he is looking for new challenges and opportunities to lend his skills to in addition to consulting with the Conservancy on special projects.

Whatever is next, one thing is certain. Phil has planted deep roots in Lancaster County—investing his time, his passion, and his unique leadership style into things that will last for years and years to come.

An inside look from the Fulton Theatre

AS THE FULTON THEATRE PREPARES TO BEGIN its 2023/2024 season in September, have you ever wondered how the magic happens?

Here’s an inside look from the Fulton Theatre into how they will get to curtains up for the first show of the new season: Something Rotten, opening September 15.

Availability | Two years out

A variety of licensing companies own the rights to the productions seen at the Fulton. Our first question: Is it available for us to produce in 2023?

Artwork | One year out

We partner with local design team, Kinectiv, to design and create artwork unique to each title—making sure it is cohesive in the look for the entire season. Look closely and you might see Easter Eggs for each show. This process takes about six to eight months.

Design and Creative Team | Six to nine months out

Once the budget is approved, we start hiring our team—set designers, costume designers, video designers, lighting designers, directors, and choreographers!

Casting | Four to six months out

We audition actors both locally and in New York for each production. We hire around 250 guest artists throughout the season. They are with us anywhere from four weeks to three months! The Something Rotten cast will be in Lancaster for seven weeks.

Rehearsal | Three weeks out

The cast and crew arrive. The set is being built and painted. Dance steps are being learned. Costume fittings begin. The orchestra starts to rehearse. It’s almost showtime!

Performance | September 15 is opening night!

The cast, crew, and Fulton Theatre teams will be ready to welcome you to the first opening night of our 2023/2024 season. Join us for Something Rotten !

Strengthening small business

YORGOS IS A CORNERSTONE in Lancaster City’s business district. For owner George Katsaros, working with trustworthy people is essential—especially when it comes to banking for his business.

“Personality is very important,” George said. “At PeoplesBank, they are good people, they are professional, and they explain things to me.”

And the trust goes both ways. Kathy Thorne, AVP, Financial Center Manager at the PeoplesBank Lancaster City Connections Center, and her team enjoyed grabbing takeout or spending team Happy Hours at Yorgos even before George was a client. As an organization that prides itself on supporting its neighbors, PeoplesBank was thrilled when the opportunity to work with George came about.

“One of our core values is to support local businesses and support our community,” Kathy said. “When we build relationships with our clients, we feel like we are building relationships that last.”

Experience, Above All™

The Armstrong World Industries Foundation Better Building Grants are awarded to nonprofit organizations in locations where employees live, work, learn, heal, and play. The AWI Foundation believes in supporting communities in creating healthier, safer, and more sustainable buildings.

Armstrong World Industries and the Armstrong World Industries Foundation envision a world where people can be healthy, happy, productive, and safe in the environments built around them. That’s why they partnered with Lancaster Public Library, as they moved to a new state‑of‑the‑art building in Ewell Plaza in Lancaster City, to create a space for the community to gather and be inspired.

Salena Coachman, VP, Talent Sustainability, Diversity & Inclusion, Armstrong World Industries, Inc. and President of the AWI Foundation, fell in love with the project, understanding how a space like this can benefit the community.

“Just like the Lancaster Public Library, Armstrong has a rich history in Lancaster County, dating back more than 160 years. As we both move forward toward a thriving future, it was important for the Armstrong Foundation and Armstrong World Industries to be a part of this project,” Salena said.

The history of the Lancaster Library as a staple of service to the community coincides with the focus of the AWI Foundation. Renovating buildings where organizations operate improves their spaces and the quality of service provided to the people they benefit.

“We are excited to invest in the new Lancaster Public Library because of its important role in our community,” Salena said. “Beyond the books, this is a place people come to learn, build community, access technology, and many other services. The library serves all generations and all walks of life, and we knew we could contribute to making the space more functional and beautiful.”

Armstrong products were incorporated into the new design to allow for better acoustics in common areas of the library, including the staircases, children’s library, young adult library, and common reading spaces.

Armstrong World Industries and the AWI Foundation supported the new Lancaster Public Library with in-kind ceiling solutions throughout the building in addition to a monetary grant.

THE FIRST ART FESTIVAL HELD IN LONG’S PARK IN 1976 inspired the Long’s Park Amphitheater Foundation to bring the community together around a love of art and investing in the park. They held their first Labor Day show in 1979, and the Art Festival now welcomes thousands of visitors each year over Labor Day weekend. Returning for its 45th year this Labor Day, each Long’s Park Art Festival is a once-in-alifetime gathering of 200 artists. HOSPITALITY

CRYSTAL WEAVER AND KYLE SOLLENBERGER co-founders of Commons Company

REACH HIGH

A series brought to you by High Foundation that introduces you to business and nonprofit leaders who are thoughtfully innovating with a spirit of servant leadership.

Commons Company co-founders Crystal Weaver and Kyle Sollenberger have a knack for creating inspiring spaces where the community can gather around food. Their mission statement says, “We belong to and nourish our communities through inspiring concepts, thoughtful hospitality, and meaningful employment.” In a city that takes pride in its wealth of local eateries, food enthusiasts can grab a rich cup of coffee from Passenger, order delicious catering from Merrymaker, or sit down to eat in the beautiful Prince Street Cafe in Lancaster City.

“I always explain this to new hires—inspiring concepts just means that we care about how things look and feel,” says Crystal. “We make spaces nice for people because it implies that you’re important as a customer and worth it.”

Crystal handles the daily operations and management tasks, while Kyle handles most of the finances, marketing, and technology functions. The two own and operate multiple businesses across Lancaster County, and they offer operational consulting services.

All Commons Company businesses are Certified B Corporations—companies verified to meet high social and environmental performance standards, transparency, and accountability. While Crystal and Kyle’s roles in the company are very different, they connect around their shared value of hard work, continuous improvement, and respect for their staff.

“We want to treat our employees well so others can see an example of that ethos that requires a level of commitment to the idea that a rising tide lifts all boats,” says Kyle. “It’s not necessarily about direct competition or needing to win. It’s about working as a community of businesses to help everybody do better.”

Regulars of Commons Company spaces are filmmakers, business owners, young professionals, and locals acting as tour guides for out-of-town family members. These community hubs manifest Crystal and Kyle’s shared vision—a business that positively impacts the community.

Visit figlancaster.com/articles to read more about Crystal and Kyle’s leadership journey and Commons Company history.

CULTIVATING COMMUNITY CARE

When making tough financial decisions, most will prioritize keeping a roof over their head, even if that means sacrificing some groceries. As cost of living continues to rise, and subsidy benefits are reduced, many Lancaster residents are wondering how to afford their next meal.

For more than 75 years, the Lancaster County Food Hub has been a consistent source of help in making ends meet with free food, clothing, shelter, and outreach services.

Through its organizational endowment at the Community Foundation, they will have a consistent source of funding to support the critical impact they make for as long as there is a need.

THE LANCASTER COUNTY FOOD HUB didn’t start with a pot and a stone, but their beginnings relied on small contributions of many. More than 75 years later, they still rely on their “village” to help address poverty in the Lancaster community. I love it here!

“We love it here!” is a special series spotlighting Garden Spot Village residents and their love for Lancaster City and County.

JAN HELLER HAS FOUND a new knack for making stained glass art. She learned stained glasswork in a sixweek course in one of the many classes offered at Garden Spot Village, a licensed, nonprofit, faith-based continuing care retirement community in New Holland, Pennsylvania, where she resides. The retired nurse and mother of four has now made several pieces, each increasing in detail and intricacy as she has grown in skill. One is a beautiful bird that catches the light in the window and adds a bright pop of yellow color to her room.

Garden Spot Village

Jan has lived in New Holland since 1970. She and her family lived right up the road from Garden Spot. Jan visited the community for many years before becoming a resident, using the swimming pool and Wellness Center.

“In a way, I’ve watched Garden Spot grow up,” says Jan. Now a resident for two years, an active volunteer, a member of the apartment council, and one of the tour guides to prospective residents, she knows a lot about Garden Spot and its history.

Some of her favorite tour stops include the Wellness Center and indoor pool, the beautifully designed library with a view into the lobby, and the Art Studio, where she learned to make stained glass.

“Your life isn’t over when you move to a retirement community. There are so many good things in your present and future,” says Jan. Like the art she creates, Jan’s future at Garden Spot is beautiful, colorful, and full of light.

SHARING GOOD FOOD AND WARM HOSPITALITY

was a cornerstone of Woodcrest Villa resident Loretta DiFuria’s family. A lifelong baker, Loretta shares her love for others through food—including her granddaughter Blayre.

Blayre is the owner of Flouretta Sweet, a Manheim-based wedding cake and dessert business, and she credits the start of her successful baking career to afternoons spent in the kitchen with Loretta.

“I was raised standing at the kitchen counter of my Grandmother Loretta’s kitchen, concocting ‘magic potions’

and becoming well-versed in the Food Network’s afternoon lineup,” Blayre said. “When I was 14 years old, my Grandmother took me on a trip to visit The Culinary Institute of America, and my career path was laid before my eyes.”

Loretta is proud of all her granddaughter has accomplished, and she is thankful for her spacious kitchen at Woodcrest Villa where her and Blayre continue to make memories and good food together.

Design that Lasts

INFLUENCED BY HIS GRANDMOTHER’S IMPECCABLE TASTE, Norman Kohl discovered a love for well-curated spaces early in life. After graduating from design school in York, Norman spent 30 years as a professional interior designer in Philadelphia and Lancaster before launching Norman Kohl Interiors in 2020. Specializing in kitchen and bath design, Norman takes a thoughtful approach to each project, seeking out local vendors to fulfill his clients’ vision. Every step of the way, Norman dedicates himself to creating a space anchored on timeless design principles that will evolve and mature as his clients do.

Let Norman help you dream up a space that will put you at ease and delight your senses.
