B E T H L E H E M ’ S R E S TA U R A N T S C E N E is a picture of culinary diversity, bringing us more delicious options than ever before. I live downtown, and within an easy ten-minute walk I can happily find myself in front of a plate of anything from tacos to tapas, pad thai to pupusas, BBQ to burgers. And I love to go beyond the beaten path—there are delights to be found in the tiniest of Bethlehem’s neighborhoods, and many hidden gems have become beloved favorites. Looking for the perfect comfort food? You’ll find plenty of delicious classics around town. Feeling adventurous? Our chefs enjoy pushing boundaries, putting creative twists on old favorites, and trying new techniques. We’ve got fabulous brunch spots; creative roasters, brewers, and distillers; cafés and bakeries; plenty of dining al fresco; and then there’s the festival food. With outdoor events filling up our warm-weather calendars (sign up for our weekly Datebook email on our website to stay on top of it all!), there’s no shortage of summer treats to be enjoyed in this town. And, with a bounty of local farms, growers, and producers right here in the Valley, Bethlehem’s menus
A NOTE FROM FIG
A city with good taste are full of products from people and places we know. Knowing where our vegetables are grown, where our cheese is made, and where our beef is raised gives us a sense of place and community through our food. It makes eating locally even more meaningful.
This issue is all about good food, featuring some of the gorgeous dishes being offered in restaurants around town. We think you’ll agree that Bethlehem knows how to create mouth-watering works of art that are bursting with colors you can practically taste. Happy reading—and happy eating! AUTHENTIC Leading the way through innovation and example. Left to right: Colleen Marsh, Kathy Fox, and Nate Carpenter, of the Bethlehem Food Co-op
Authentic: Bethlehem Food Co-op I N 2 0 1 1, Jaime Karpovich of the blog Save the Kales! was in the middle of a recipe when she realized she needed a red pepper. By the time she left downtown Bethlehem and drove to the nearest grocery store on the edge of town to get the pepper, and finally got back home, nearly an hour had passed. Jaime took her complaint to Facebook, where it reached empathetic ears. A month later, a group of about 100 eager community members packed the public library to discuss the creation of a community-owned grocery store in their neighborhood, featuring local, sustainable, and humanely-sourced items where
possible. Later that night, Lehigh Valley native Colleen Marsh, who had been in attendance, launched the website for the Bethlehem Food Co-op. “The location will be downtown,” says Colleen, now board chair of the Co-op, “in an area currently facing low access to fresh food.” The Co-op’s timeline is dependent on membership growth but is in line with the typical timeline for start-ups of 5-7 years from incorporation (which was in 2013) to fruition. Members make a one-time equity payment, which gives them voting rights as well as access to a member’s benefit program that provides things like discounts at local businesses and
discounted access to Co-op programs. Currently there are over 420 households already as member-owners and the number continues to rise. But the fullservice grocery store will be for everyone, not just members. “It’s a collective, democratically-run organization,” says Education Committee member Kathy Fox. The Co-op’s ethos extends beyond simply owning a grocery store—it empowers people to take ownership of their community. As Nate Carpenter, cochair of the Education Committee, says: “It’s not about me, it’s about the LV.” Learn more and become a member at bethlehemfood.coop.

Not only does it have a diverse selection of great food and a tranquil terrace in the back, it focuses on employing and empowering those with mental health diagnoses. community and support each other daily. “Our program is really interesting,” says Ian Panyko, Program Director, “because we don’t say, here’s what you need to do. Instead, we ask, what do you need to do to be well?” For Ian, the connection to the program’s mission is personal. “I have a family member who has some pretty severe mental illness,” he says, “so there’s this natural kind of draw to it.” The Lodge itself is a housing program for 12 individuals in the community who

Its end goal is independent housing—while the end goal for the Café is to give people the skills for competitive employment in the community, whether in another restaurant or somewhere else. In the meantime, Ian is working on updating the restaurant space, getting some local artwork for sale through the Café, and growing their catering business. “The more business we can achieve, the bigger the program can get.” Learn more at cafethelodge.org.

The murmur of voices in a crowded lobby. These often unnoticed sounds create a sonic landscape that provides raw material for sound sculptor Scott Sherk. By chopping, compressing, and recombining recordings of these ambient sounds, Sherk constructs sonic forms that heighten the listener’s experience of space. His installation, SonanceZOELLNER, incorporates light, speakers, interactive monitors, and the natural resonance of the building to transform the Zoellner Arts Center into a sculptural sound environment. FIG VOICES New sounds of our city in partnership with Lehigh Valley Underground.
Christopher L. Moore Photography
Voices: Alex Mery & The Townsmen Written and curated by Gerard Longo, Founder of Lehigh Valley Underground
like Billy Bragg, Against Me!, and Blink 182, Alex Mery & The Townsmen have created a unique and versatile sound that straddles the line between folk storytelling and punk rock’s hard-edged melodies.
demo, “Safely on Your Way,” the band is now preparing its debut EP, Folklore. The five-track effort will be released in June, and will feature reworked demo tracks, a never-before-heard song, and the band’s signature single, “Lay Down Arms.”
The trio—consisting of Alex Mery (guitar/ vocals), Matt Anderson (percussion), and Kara Hartzell (bass/vocals)—came together via Craigslist. Mery and Anderson met each other using the platform to form a previous project, later forming Alex Mery & The Townsmen and adding Hartzell in similar fashion.
The release of Folklore will begin a big summer for Alex Mery & The Townsmen, who will embark on a 12-city tour this June and July. The band will then return home for the summer, with a big performance set for Musikfest’s Martin Guitar Lyrikplatz stage on Wednesday, August 9.
Having burst onto our local scene since the release of their September 2016
“We are beyond stoked for the opportunity to perform at Musikfest,” said Hartzell.

discover a brand new garden spot community!
Sycamore Springs is an expansion of Garden Spot Village where you will find some of the best farm-to-table experiences in Lancaster County. If you like to get your hands dirty you can step off the porch of your single family home and help harvest fresh vegetables at the Aeroponic Greenhouse in the morning and craft them into an ultra-fresh salad at The Harvest Table restaurant later in the day. Bee hives and fruit trees also add to the ultra-local flavor. If the ideas of opportunity, living with purpose, and community appeal to you, please do yourself a favor and visit Sycamore Springs.
