THE FOOD WE CHOOSE to cook, eat, and serve says a lot about us. It’s an accumulation of our past experiences—where we have lived, what memories are associated with each dish, and what has brought us comfort and cultural identity over the course of our lives. I come from southern roots, so I’ve never met a casserole I didn’t love. The smell of freshly baked biscuits and gravy will always make me think of my mama. And when I was a little girl, I learned to love vegetables after eating my Popaw’s green beans, freshly picked from his backyard garden. We’ll always eat the foods that mean something to us. And now I’m proud to be raising my family in Chester County, Pennsylvania. With an abounding food scene, rich with history, culture, and personality, my children are tasting an eclectic mix of foods, uniquely ours, and informed by everything that makes this region so wonderful. This summer, I invite you to explore the dynamic and diverse food and drink scene in Kennett Square. Our goal with this issue is to celebrate our food heritage, inspired by the vibrant Mexican influences, the innovative mushroom industry, and the bountiful farm-to-table produce we get to purchase just miles from where it was grown. We have a lot to be proud of. Among these pages you will find a taco tour, a wine tour, a cocktail tour, and if that’s not enough, we’ve even included a tour of our epic mushroom history. And make sure you head to page 46 for a full listing of summer events in Historic Kennett Square, many of which involve eating (thankfully). As you gather with the ones you love this season, may you savor each bite, be grateful for the foods that sustain us, and toast to the ancestors who nurtured this land of ours. In a clean, elegant setting accented by simple lines, succulents, and sparkling glass, chef-owner Scott Morozin serves refined American cuisine with flavors and textures that are as intense and creative as his process. Morozin’s passion for cooking is singular. “I’ve always wanted to cook,” he says. Raised by a single mom in a small town in Delaware County, he recalls standing on a stepstool in his grandmother’s kitchen absorbing the aromas, tastes, and heat.
“Cooking saved my life,” says Morozin, a recovering addict and Culinary Institute of America graduate who has carefully chosen great chefs as mentors and worked in numerous kitchens to hone his craft.

He poaches, slow roasts, and uses every part of the plant in a never-ending quest

And he looks forward to contributing to Kennett Square and becoming part of this community that strikes the balance between refined and casual. “There’s a small-town feel, and everything is done well. Fresh Face: Braeloch Brewing I T ’ S A S U M M E R E V E N I N G , and you’re sipping a cool beer under a tree as the Red Clay Creek flows by. The beer is craft-brewed onsite, and the conversations—with old friends and new—are engaging. You’re not at home or at work—you’re in “the third place.” You’re at Braeloch. The two married couples behind Braeloch Brewing—Kent and Amy Steeves and Matt and Kathy Drysdale— met at their children’s swim meets 20 years ago. As their friendship developed, their dream to create a
community gathering place took shape. The Braeloch name, from a sign on a lamppost at Kent’s family lake house, reflects their vision to recreate that special place “away from it all” that so many of us cherish. In addition to the outdoor beer garden, a 3,900-square-foot taproom will feature a bar and a mix of casual seating arrangements. This inviting, light-filled space, with exposed brick and arched windows, also exudes a sense of its history as a trolley repair shop built in 1903. With great beer, small bites, food
trucks, and live music, Braeloch will complement its neighbor the Creamery and make Birch Street the place to be this summer. Braeloch will serve a cross-section of beers, from traditional ales and IPAs to an experimental brew, on 12 taps from its ten-barrel brewhouse. They’ll also offer tours of the facility, as part of what they call “curiosity-driven education.” The Steeves' and the Drysdale's love the forward-looking community in Kennett Square and look forward to welcoming you home to Braeloch.

Fresh Face: Revolution Fitness AT REVOLUTION BJJ, Boxing, and Fitness, everyone from kids, moms, and dads to the young at heart will find a warm welcome and classes to improve overall well-being, and whole-body, functional fitness. Cardio kickboxing, boxing, and jiu-jitsu all help develop confidence and self-defense skills in addition to strength, endurance, and flexibility. “It’s about training the mind and body through functional movement,” says co-owner Kevin Boyle. The five guys opening this new state-ofthe-art facility at Cannery Row—Jamie Weaver, Brandon Sheffield, Hughie Meehan, Paul Brown, and Boyle—met and became friends through jiu-jitsu. And they’re passionate about sharing the many benefits of mixed martial arts.
Revolution is bringing a fun, familyfocused culture to a non-traditional sport by offering a variety of classes for all ages and levels in a full-service martial arts gym that’s clean, safe, and inviting. All of the partners’ families—daughters, sons, and wives alike—train in martial arts together and have for years, most recently at Revolution’s current location in Nottingham. Brazilian jiu-jitsu (BJJ) is “the gentle art,” Weaver explains. It involves no punching or kicking—instead, participants grapple using leverage, technique, and positioning to neutralize opponents. Weaver likens jiu-jitsu to “human chess.” It requires mental acuity and skill, and it’s one sport in which a physically stronger person doesn’t necessarily have the advantage. “Jiu-jitsu is for everyone,” Weaver says.
“Those principles are what make BJJ so accessible,” adds Brown. “It brings together a diverse group of people— from all walks of life—united around a common pastime, that for most of us turns into a passion.” The highly trained and qualified instructors include Meehan, who teaches the children’s classes. He loves helping kids at every level improve their confidence, awareness, and discipline. Sheffield, a former professional boxer, teaches private boxing lessons as well as the high-energy kickboxing workouts. “Every class is completely different,” Weaver says. Revolution offers a free seven-day trial, and these five friends invite you to try something new, get in great shape, and become a part of Revolution’s family.

Giving Back: Brett Hulbert and Sandra Morris SANDRA MORRIS AND BRETT H U L B E RT, the husband and wife team behind Portobello’s, laugh as they describe the dance in their cozy restaurant on a busy night. Morris and her team weave between the tables as they welcome guests, open wine, and serve Hulbert’s classic dishes created in the trademark open kitchen from the best local ingredients. “It’s a family,” they say, “and we all work together.” Hulbert, an experienced executive chef, and Morris, a former realtor, first visited Kennett Square one sunny Farmers Market Friday in 2011. They fell in love with the town, and its people, and decided to open their restaurant here.
The community has since become their family too. They enjoy working alongside fellow business owners who all support each other—from bringing ice to one another when someone’s machine breaks to sharing ingredients if a restaurant runs out of something. “People don’t just shovel their own section of the sidewalk,” Morris says. They also enjoy giving time, energy, and food to support many local nonprofits, including the Kennett Library and the Flash, as well as charities such as Habitat for Humanity and Unite for HER. They wish they could do more—which is part of why they’re excited to be expanding into 108–112 East State Street this summer.
As Morris unfurls the blueprints, Hulbert points out the various intimate spaces in the new restaurant—the bar and lounge, the gallery and expanded open kitchen with lots of chef seating, the private dining room, and the collapsible wall that will lend a European feel with indoor/ outdoor seating. The menu will be larger and broader, featuring more small plate offerings as well as flatbreads baked in a Vermontbuilt pizza oven, along with wine pairings and craft cocktails. There will be blues, jazz, maybe even a story slam. “We’re growing with Kennett Square,” Hulbert says.

Li came to the United States from China in 2000 so that she could practice her faith freely. While working at a restaurant in New York, she visited Kennett Square. “I was impressed by the diverse community here,” she says. “I thought that I could make the community much more colorful if I opened a restaurant to serve delicious Asian food.” Li and her husband, coowner Tony Liu, purchased the building at 104 West State Street and opened Lily in 2011. They have two daughters, Christina Liu (15) and Lina Liu (11).
“I am grateful to all of my customers for their expressions of appreciation,” Li says. Over the years, she’s experienced both challenges and joys, “side by side,” and has learned the importance of sharing and positive affirmation. Li’s Christian faith is a central part of her life, and she makes time each day for Bible reading and prayer. It’s her sincerest hope that her customers will feel acceptance, warmth, and love when they walk through the doors of Lily.

Mushroom Heritage
E X T R AOR D I N A RY G ROWTH "One of the fun facts about mushrooms," says Lori Harrison, Communications Manager at the American Mushroom Institute, "is that they double in size every 24 hours." The growth of Kennett Square’s mushroom industry has been even more extraordinary. In 1885, florist William Swayne spawned the idea of growing mushrooms beneath his greenhouse benches. Encouraged by the results, he and Harry Hicks built the first mushroom house, at the corner of Apple Alley and Willow Street, in 1902. Swayne’s son eventually added a spawn plant and cannery. Others followed suit, including many Italians who were working in the stone quarries. Generations later, over 300 family farms have consolidated, and Pennsylvania’s 57 mushroom farms, most of them in Southern Chester County, produce 64 percent of all white button mushrooms consumed in the US. That’s 577 million pounds of mushrooms worth $560 million in sales. It’s now a year-round enterprise, thanks to climate control, and
growers have responded to consumer demand for more fresh mushrooms and exotic varieties. “There are lots of places where it’s easier to grow mushrooms,” says Jim Angelucci, general manager of Phillips Mushroom Farms, “without the seasonal temperature extremes, for example. But it started here.” He smiles. “And it’s mushroomed into what it is today.” This growth has been healthy and sustainable and has benefited from wisdom passed down through generations as well as from advances in technology. S U S TA I N A B L E A N D C O L L A B O R AT I V E “The mushroom industry is the original recycler,” Angelucci says. The mushroom-growing substrate is a blend of farming byproducts that provide the necessary carbon (e.g., from cocoa shells, many from Hershey), carbohydrates (hay or stable bedding), and nitrogen (e.g., poultry litter). If mushroom farmers didn’t buy and use these materials, most would end up polluting our waterways. After a few growth cycles, companies like Skyland repurpose the mushroom compost into a soil engineered for
green roofs. “It’s 360-degree sustainability,” Harrison says. Like the mycelia, the interwoven root-like web that spreads as the spores germinate, the mushroom industry is an integral part of the economic and social fabric of the community. Many local industries and businesses support and depend on it—from suppliers of machinery and materials to businesses patronized by employees. The growers are also interconnected. “We’re all competitors in the same market, but we collaborate,” Angelucci says. They sell to each other and work on common issues including transportation, labor, and industry standards. H E A LT H Y A N D O N T R E N D “The trend is to blend,” Angelucci says, and the recent enthusiasm for blended mushroom-beef burgers is good news for the industry, for the health-conscious consumer, and for the environment (growing mushrooms requires much less water than any animal-based food). Harrison says the Mushroom Council has done an exceptional job educating consumers—from students to suppliers—about the
many health benefits of mushrooms. The Woodlands at Phillips also offers a free mushroom-growing exhibit and museum. Mushrooms are rich in potassium, B vitamins, antioxidants, and vitamin D, and studies are finding some astonishing medicinal benefits as well. The pom pom mushroom has been found to mitigate dementia, maitake can relieve some side effects of chemotherapy, and shiitake can help protect the liver. STEEPED IN TRADITION, LOOKING TO THE FUTURE While many of the principles of mushroom farming are time-honored, the industry is so successful in part because of ongoing efforts to improve efficiency and productivity. Marlboro Mushrooms now runs on solar power, for example, and the newly expanded Warwick Mushroom Farms uses stateof-the-art climate control and communications systems. But none of this technology replaces the key role of growers, maintenance crews, and harvesters. All systems need to be constantly monitored, and every single mushroom is still picked by hand. “The mushroom industry is not a vocation,” Angelucci says, “but an avocation. You have to live it.”

And of that number, nearly half suffer from obstructive sleep apnea—a condition which, if left untreated, can lead to conditions such as high blood pressure, stroke, heart attack, and even death. Creating Comfort through Cuddling FOR THE MORE THAN 500,000 PREMATURE BABIES born in the U.S. each year, human touch can have a powerful impact on healthy growth and development. To ensure that all babies get the hugs they need to thrive, the Huggies’ No Baby Unhugged grant has awarded Chester County Hospital $10,000 to help establish a volunteer newborn-hugging program. This initiative will provide much-needed physical interaction for newborns that can help make their transition from the hospital to the home quicker. Research shows that ample human contact aids babies in their development of good clinical outcomes. Interventions, such as holding, rocking and soothing, as well as singing and talking to babies support weight gain, reduce length of hospital stays, improve brain development, and in the long term, enhance the development of trusting relationships.
“The Neonatal Intensive Care Unit (NICU) and Pediatric staffs at Chester County Hospital are honored to be chosen for Huggies’ No Baby Unhugged grant. The grant has been used to start a cuddling program in our hospital to benefit premature babies and infants suffering the effects of withdrawal due to maternal drug use,” says Stefanie Steinberger, DPT, Lead Physical Therapist for the NICU. Susan Cacciavillano, BSN, RN, Clinical Manager of the NICU, adds, “We serve some low socioeconomic populations who may not have reliable transportation to and from the hospital to see their babies in the NICU. Between these families and the number of babies admitted with neonatal abstinence syndrome (NAS), we believe that a Cuddler program will benefit our most vulnerable patients.”

The plan to implement a Cuddler program has been in the works for some time. In September 2016, Cacciavillano and Steinberger met with Penn Medicine colleagues from Lancaster General Health (LGH) to talk about their Cuddler program and how to bring it to Chester County. “All of our training practices, guidelines and implementation plans stemmed from LGH. Their team was instrumental in getting our program off the ground,” explained Cacciavillano. The shared information and implementation did need some amending, as Chester County Hospital planned to introduce the program not just in its NICU, but also in its Pediatric unit. The program launched in November 2017. “Our Pediatrics team helps a lot of babies with NAS, too. These babies are unable to self-soothe due to the painful effects of drug withdrawal. Cuddlers will be invaluable for keeping these babies calm and content while they are going through something so difficult,” Steinberger explains.

Chester County Hospital used the grant to launch the program and train the volunteers. The process to become a “Cuddler” includes going through an interview process, passing a background check and medical screenings. In addition, all volunteers must obtain child abuse clearances and attend both the hospital and volunteer orientation programs. Cuddlers must also be 21 years of age. Cuddlers will receive updated training as needed and will undergo an annual competency test. The Cuddlers played a large role in the hospital’s current NICU expansion, which began in December 2017. The unit will double in size and feature private and shared rooms as well as hybrid model rooms that allow space for parents to stay overnight with their infants. In preparation for the renovation, the NICU was moved to a temporary unit on the opposite side of the hospital to protect the infants from the noise and vibration of construction.
“Having Cuddlers in place before the transition to the temporary NICU was important. They were instrumental in creating smooth transitions for the babies,” said Cacciavillano. The Cuddlers will be equally as valuable when the renovation is complete later this year and it is time to transfer the babies to the new, expanded space. Cuddling occurs when parents or family members are not present to hold or calm infants. The volunteers work with bedside nurses to provide the appropriate comfort measures. Parents are taught the benefits of the program and why it is the standard of practice in the NICU and Pediatrics units to ensure that these vulnerable babies will have the benefit of human contact daily. Chester County Hospital is fortunate to have a full volunteer staff for the Cuddler program. However, there are other volunteer opportunities available.

Part 2: Patti Brennan COMPASSION, says Patti Brennan, CFP, President of Key Financial, Inc., means understanding someone’s situation, applying the right tools, and having enough perspective to gently guide them towards a solution. That deep sense of care and responsibility is part of what brought Brennan and her loyal team of employees through what she calls “the messy middle” of the financial crisis. In the first installment of our three-part series, we met Brennan in 1990, starting a financial planning company in what most people refer to as their “laundry room” with solid, clientfocused principles. As her young family grew, so did the company. When the financial crisis hit, Brennan made a promise to her 15 fulltime employees: “Nobody will lose their job.” It was not a pledge Brennan took lightly, and

it wasn’t one she could keep without personal sacrifice and working harder than ever before. “They were painful years,” she says, “and there was lots of uncertainty.” Through it all, she maintained faith and confidence. Weathering the storm required strategic thinking, conservative and creative planning, and a sustained focus on the clients and their needs.
