G R OW I N G U P on a small, organic farm in Lancaster county, I was raised with an appreciation for the dedication it takes to nurture something from a seed. My parents taught me the value of hard work, the importance of discovering what you believe in and sticking to your values. They believed in pure food grown from the earth without chemicals and manipulation. They understood the value of our rich Lancaster County soil and what it could produce. In the `80s, my parents were ahead of their time. Now, “Farm to Fork” and organic lifestyles have found popularity and status in metropolitan areas around the country and a niche in popular culture. In the years between my childhood and today, Lancaster County has embraced its agricultural roots and the City of Lancaster has flourished as a haven and creative space for artisans of food. Artists trained as Chefs have found in our City a welcoming and appreciative audience for their artful plates.
At Fig, we are proud of our county's food heritage and honored to elevate the voices of those in our City who bring fresh, authentic, creative vibrance to our palates. In this issue, find the plates they have artfully created for you to experience this summer. With the bright colors of fresh, home-grown ingredients, and the cultural fusions of different ethnicities, time periods, and cooking styles spanning the menus of our City, it’s no surprise that foodies flock to Lancaster from neighboring areas to experience the colorful, cultural, and creative compositions of the chefs, restaurateurs, and artists of our city. Joe Shoff, owner
Fresh Face: The Classy Crab J O E S H O F F is a Lancaster native who dreamed of owning his own business where he could supply his hometown with high-quality, fresh crabs. With a refrigerated truck of his own, and a determination to cut out the middleman and ensure the highest freshness, Joe set out for Louisiana to buy blue crabs directly from the waters they’re pulled from and bring them back to his storefront on Ruby Street. Joe promises, "It's my goal every week to offer the best crabs available anywhere!”
He started with Louisiana because they have the longest (year round) harvesting season. When the season allows, he also gets crabs from the nearby waters of Maryland, New Jersey, and others. Although he carries a small, rotating seasonal menu of seafood in his market, he is excited to be your “go-to” place for crabs! Customers at the Classy Crab can view and select their fresh, live crabs from the cooler to be steamed in-house. Joe prides himself on being the face of his business and wants his customers to
know they can expect to see him behind the counter and manning the steam pots when they come in. Open WednesdaySunday, the Classy Crab has customers knocking on the window as soon as they turn the lights on. In a short time, locals have already come to expect quality, freshness, and hospitality from the classiest crab place around! Stop in to learn more and experience it for yourself!

AUTHENTIC Leading the way through innovation and example. Casey Spacht, Executive Director of Lancaster Farm Fresh Co-op, standing in a field of garlic.
Authentic: Casey Spacht FOR AS LONG AS HE CAN REMEMBER, Casey Spacht has been fascinated with the natural world. Always feeling at home in and connected to nature, he was drawn to forests, creeks, and the idea of foraging the land. As time went on, Casey became more aware of the connection between people and nature, and more in tune with the ways that nature sustains life. He also found himself disheartened as he dove deeper into the processes that most Americans use to get their food. He knew he wanted to be a part of something more authentic and sustainable. “I really think the biggest aspect of when I came full circle as a person was growing up in touch with nature, losing touch, and then rediscovering that connection through food. In 2006, Lancaster Farm Fresh Co-op, a non-profit organic farmers' co-op, was born. The Co-op started with about six farmers banding together to take the power back into their own hands and create and control their own destiny. Today, the Co-op has grown to over 300 farmers who provide Community Supported Agriculture (CSA) members and wholesale customers with local, organic, humanely-raised products directly from the farm. One of the primary objectives of Lancaster Farm Fresh Co-op is to keep farmers on their farms in profitable and sustainable ways. Casey is motivated by the outcomes of this goal. He takes delight in the real and meaningful connections that spring up in educating people about sustainable farming and in exposing the community to the bounty of our natural world. He is humbled and inspired by a legacy of second generation farmers enabled to do what they love because their parents, original LFFC farmers, were empowered through this program to thrive and pass down the legacy of living in harmony with the land entrusted to us. GIVING BACK Making a difference in the lives of others.
Giving Back: Sam and Cindy Guo FINDING THAT SWEET SPOT where your passions collide and channeling that into your way of life is something to which most people aspire. Through Silantra Asian Street Kitchen, Sam and Cindy Guo have accomplished just that.
Their initial dream was brought to life in the form of their Asian fusion eatery. The vision was to bring healthy, quality, local, hormone-free ingredients into customizable wraps and bowls that are as light and fresh as they are delicious.
Their two passions, food and philanthropy, come together and bring joy and connection to everyone who walks through their doors at 101 East King Street. An energetic and genuine couple, Sam and Cindy take pride in making an impact on their customers and their community. Their drive and zeal for life and business is propelled by the simple concept of “Do Good, Feel Good, Eat Good, Live Good.”
Sam and Cindy's mission to feed people well grew into a drive to give back to their community. The idea was born to donate their tips to a worthy cause, and now each month the couple donates all of their tips to a non-profit that is making a difference in the lives of others. Since opening a year and a half ago, Silantra has donated about $14,500 to charities like Power Packs, Water Street Mission, and 2 Seconds or Less, and they plan to

keep giving. Sam and Cindy are passionate about what they do. They have a drive to pour who they are and what they believe into their restaurant, their work, their customers, and their community. “We love the connection we feel to our customers and they love feeling connected to giving back!” Want to be a part of eating good and doing good at the same time? Sam says getting people through the door for the first time is the first step. “Just try it. Once you do, we know your body and your soul will thank you and you’ll be back.”

A Monumental Project of Historical Significance
SINCE 18 6 0
The Armstrong World Industries Foundation and the Armstrong Flooring Foundation are coming together with LancasterHistory.org to preserve the Armstrong archive, a rich treasure trove of documents, photographs, artifacts, and multimedia from 1860 to present day. On these pages, find just some of the incredible artifacts that are being uncovered and archived as part of this historically significant project.
Founder, Thomas Morton Armstrong
72
“THIS ARCHIVE REPRESENTS AN I R R E P L A C E A B L E L E G A C Y T H AT S PA N S T W O C E N T U R I E S A N D C O V E R S T H E G L O B E ,” said Robin E. Sarratt, Vice President of LancasterHistory.org. “Armstrong has been a pioneer and leader in industry, product innovation, marketing, and interior design as well as one of the largest employers in Lancaster, contributing to the business and cultural community of the county. We at LancasterHistory.org are honored to help safeguard this rich resource and ensure it is part of the Lancaster story for generations to come.” The separation of Armstrong World Industries and Armstrong Flooring into two companies in 2016 served as a catalyst for their philanthropic foundations to preserve the Armstrong legacy —a remarkable story of a two-man cork cutting shop that grew to become an international powerhouse that played a role in world events, manufacturing innovation, and technological advancements. For example, during World War II the company served as a manufacturer of munitions, camouflage materials, and other supplies to support the war effort. Later, Armstrong was a pioneer in marketing via new media such as television, sponsoring dramas under the banner of Armstrong Circle Theatre and popular programs such as the “Danny Kaye Show.” And that’s just a small sampling of the historical riches that will emerge and become part of a well-organized, professionally catalogued, digitized collection accessible to the county, researchers, academics, and hobbyists. The project is underway, with completion expected in late 2018.

T H E D E S I G N T E A M at RLPS knew the ceilings could make or break the look and feel of the environment they envisioned for the new home of the Lancaster Chamber of Commerce and several other businesses and non-profits in the county. They also knew they could rely on Lancaster-based Armstrong World Industries to help them create ceiling solutions throughout the building that delivered a contemporary, elegant, bright aesthetic while maximizing natural light, integrating LED lighting and technology, and managing acoustical stability. Whew! A tall order, yes, but that’s what Armstrong is all about: making a difference where people live, work, learn, heal, and play by providing ceiling solutions that make spaces great…and comfortable…and quiet…and efficient….and more.
78
“Between the financial support from the Armstrong World Industries Foundation and the outstanding Armstrong ceiling solutions that are on every floor of the building, the company was a great partner in the success of our new facility. On behalf of the Chamber and our partners, I would like to thank them for helping us to create a beautiful space for the business community at 115 East King!” tom baldrige president & ceo lancaster chamber
T H E C U S T O M S TAT E M E N T C E I L I N G — tapered,
linear wood plank clouds painted in custom platinum— is the first and only of its kind and an incredible point of interest…a suspended conversation piece that does double duty by helping to manage noise levels. Throughout the rest of the building, there is a combination of standard and large format Armstrong ceilings, which truly impacts how people experience the space. For example, most of the ceilings are white with “highlight reflectance” properties which means they reflect, and therefore make the most of, the natural light from the windows. The ceilings also have Armstrong’s Total Acoustics™ performance to help reduce sound room to room and within a room, so office neighbors can’t hear each other through the walls and corridor and common space distractions are minimized. In conference rooms and meeting spaces, the ceilings seamlessly integrate LED lighting and AV and mechanical systems while maintaining nice, clean design lines. The executive conference room on the top floor changes up the design rhythm with a taupe-colored ceiling solution called Calla that has a smooth, refined appearance and noise reducing and sound blocking performance. This surprise detail has received rave reviews for being, somewhat paradoxically, warm, sophisticated, and forward thinking… just like the Chamber itself!
“We are so pleased to be part of the newly established 115 East King Street building in bustling and burgeoning downtown Lancaster. I am so impressed by what’s been accomplished here. The Chamber brought together so many local business and community partners to transform what was a rather neglected, uninspiring building into a magnificent symbol of what business and community can do together.” jennifer johnson director, corporate communications, awi
Armstrong World Industries, headquartered in Lancaster County for over 105 years, is now a standalone global leader in the design and manufacture of ceilings solutions. AWI, a 157 year old company, created the Armstrong World Industries Foundation in 1985 for the sole purpose of giving back to Lancaster and other communities where the company has employees and operations. Since then, the foundation has contributed well over $50M to charity.

The toast of Broadway for over two years, Newsies is based on the real-life Newsboy Strike of 1899. Day-in and day-out a young group of scrappy and spirited newsboys carry the banner, hoping for a major headline so they can sell enough “papes” to survive the harrowing streets of New York City… until they become the headline!
A carnival wish granted, young Josh Baskin’s dream to become “big” comes true at the hands of the Zoltar machine, and he is immediately thrusted into adulthood. Josh discovers being an adult is not all fun and games when he is forced to find a job and a girlfriend. In the end he learns we must all grow up at our own pace, in our own time.
Come swing with us back to an era when life was cooler, music was snappier, and everyone drank their martinis straight up and their bourbon neat. This swinging evening of singing, dancing, and fantastic fun features Jeff Coon and some of his most talented and entertaining friends from Philadelphia and New York along with an incredible 17-piece, live Big Band.

The Fulton’s Summer Lineup “LANCASTER IS A CITY that believes in community. And the arts represent what’s inclusive for everybody here.” Marc Robin, Artistic Director of Theatre in Lancaster, is proud to be part of a community that cultivates creativity and celebrates performance art. And this summer, the Fulton Theatre is going to be offering another incredible showcase of eclectic and dynamic productions you don’t want to miss. “We start the summer with Newsies,” said Marc, noting the popularity of the show based on the 1992 Disney film. “What’s really exciting about Newsies is there are only a limited number of contracts to do this show this summer and the Fulton will be the first theatre in the country outside of New York to produce this production in 2017.” In addition to Newsies, the Fulton is featuring a theatrical version of the classic movie Big that promises to be a fantastic show full of all your favorite moments from the film. But the opportunities for entertainment don’t stop there.
There are two events in August, starting with Summer Club—four shows of big band music with tunes from Frank Sinatra and the Rat Pack. Then, in an exciting new venture, the Fulton will be premiering a performance of a new musical neverbefore performed anywhere else. “This new musical is really bizarre, zany, and beautiful,” notes Marc. “It’s a 1950s horror film satire that’s actually really sweet.” The Fulton has featured premiere arts and entertainment in Lancaster for generations and is the nation’s oldest continuously operated theatre. The theatre develops and showcases Broadway-caliber shows right here in the heart of Central PA. “We are becoming a destination theatre,” adds Marc. “We want to be the absolute best so people come enjoy a show and then experience the entire Lancaster area too.” Mark your calendars now and get ready for a sizzling summer season of incredible shows from classic favorites to groundbreaking new stories. 2017 SOCIAL MISSION:
Clare House
Homelessness doesn’t take a summer vacation. Traditionally the busiest season of giving happens between Thanksgiving and New Year’s Day. But by the summer, new families who are experiencing homelessness have moved into Clare House and are starting the hottest and most grueling months of the year with nothing.
S U M M E R D O N AT I O N S C H E D U L E :
during the summer months , donor and volunteer
participation drops to a yearly low. This year, we’re inviting you to help change that trend! With our X-mas in July giving campaign, we invite you to provide donations necessary to support the new families at Clare House. We believe family is the best gift of all, so in exchange, join us in celebrating X-mas in July with themed activities you can do right at home. Keep an eye on our social media platforms for the release of new activities each week! Already planning to be on vacation in July? Make a meaningful monetary contribution on our website instead! Giving gifts is a loving thought in action and can
happen all year long—not just over the Fall and Winter holidays. It costs Clare House approximately $3,500 to sponsor one family for six months. Your donation makes that opportunity a reality for families in need. Call 717.291.8967 to arrange for donation drop off at Clare House. Or save travel time and list Clare House, Inc. as your Amazon Smile charity and ship purchased donations directly to us. To donate or learn more about Clare House, visit clarehouselancaster.org.

Coffee Culture
1
Cozy spaces and friendly faces—why do we love coffee shops and cafes so much? Coffee culture is more than the brew inside your mug. It’s not about whether you take two sugars or three. Or whether you like cold brew best or a mouth-watering macchiato. It’s a focus on what’s warm and welcoming. It’s taking a moment to connect with others or read a few pages of the next bestseller. It’s saying hello to a local barista on the way to work, or sharing a scone with a colleague for an evening social. Coffee has become a big part of the culture of Lancaster. Make your way around the City and taste each unique brew. Here are a few words from some of our favorites.

26 East King Street Q: What’s your most popular coffee drink? A: In the summertime, our most popular drink is our La Colombe Cold Brew iced coffee.
Inside Lancaster Central Market Q: What’s your most popular coffee drink? A: I’d have to say that our StarBarn dark roast coffee is our best selling item by the cup or by the pound in whole bean. It’s fresh roasted every day.

Q: What’s your favorite coffee house song? A: For those quiet mornings an obvious choice, "Black Coffee" as sung by Julie London. We get fairly eclectic though, so expect to hear a range from Buena Vista Social Club to Aaliyah.
Q: Favorite coffee pairing? A: Espresso milkshake. We replace half of the milk with espresso for a completely unique and delicious milkshake. Or an affogato, a scoop of ice cream with hot espresso poured over the top.

Q: What’s your most popular drink? A: Hands down, it's gotta be our 10-19 blend, our house coffee. It's a drip-brewed, post-roast blend that's proprietary to us. We're a coffee and street food window so our blend is perfect when you want breakfast or lunch on the go.
480 New Holland Avenue Building 6 Q: What’s your most popular coffee drink? A: Definitely the cold brew coffee. It's high-octane and really gives you a jolt of energy.
Q: What’s the most complicated coffee drink anyone has ever ordered from you? A: Nothing’s too complicated —just ask nicely.

For the love
OF
the City
Dear Lancaster, You are familiar and new all at once. Your history is rich, tragic, and complicated. You welcome all, wherever they are from. You are Namaste, prayer flags, American flags, rainbow flags, peace flags, and Puerto Rican flags. You are classrooms of children from across the globe—Rwanda, Burma, Syria, Puerto Rico, Dominican Republic, and Togo. You offer banh mi for lunch, dinner with injera or alongside rice and beans. You are whoopie pies and ice cream. You are Mennonite choirs and Hip Hop. You are Central Market and gardens growing. You are a work in progress—you challenge us, never settle. You make us want to be stronger, better as neighbors and a community. You are my home, and I am so grateful for all of you. —Love, Danene

W H E R E V E R you stand, however you vote—it’s important to invest in the community. Both Danene Sorace, pictured left, and Cindy Stewart, pictured right, are mayoral candidates for election this fall and have been impacted by Lancaster throughout their lives and careers. We asked both candidates to write a love letter to Lancaster City in fewer than 200 words. Here’s what they had to say.
Dear Lancaster, How do I know that I love you? Because I can be your harshest critic and biggest fan. I can complain about the sidewalks,

need to lift up our neighborhoods, and I have great concern about our youth and those families living in poverty. Yet I am humbled by the stories of success, our talented young people, and all those unrecognized volunteers who help their neighbors and work to make a difference. Even though I know we still have too much intolerance, divisiveness, and exclusion, I am lifted up by our faith communities, our cultural celebrations, and watching a diverse group of children playing in the Binn’s Park fountain. I love Lancaster—for better and for worse. Where else would I want to live, I ask myself, and I am at a loss for the answer. —Love, Cindy

Getting your life back on track After an X-ray and MRI the reports indicated no clear cause for his pain or numbness. As a colleague of Dr. Monacci’s through the Coatesville VA Medical Center, Sam sought his advice. Dr. Monacci reviewed his MRI and identified a pinched nerve, also known as Spinal Stenosis, causing his discomfort. I T WA S A YA R DWO R K A C C I D E N T that left former steel mill worker and 30year nurse Samuel Mohr with lower back pain, numbness in his leg, knee, buttocks, and big toe. Sam fell backwards, landing directly on his back, and immediately knew something was wrong. Ice and rest offered no relief so he consulted with his Primary Care Provider.

After little relief from two epidural steroid injections the decision for surgery at The NeuroSpine Center was made. After having surgery at larger institutions in the past Sam describes his experience at The NeuroSpine Center as “hands down the best surgical experience I have had.” He continues, “The appointment and procedure times happened when they were

supposed to. I was greeted like family and had a sense of belonging.” Dr. Monacci performed a lumbar laminectomy to provide relief to the pinched nerve and Sam has not looked back. The pain and numbness are gone and he is back to living his normal life! Sam speaks very highly of Dr. Monacci and his team, “I have never met a kinder, more caring person in the health care profession.” Sam offers some advice to those seeking care, “Always ask a nurse, “If it was you, where would you go to receive care?” Experienced nurses will never point you in the wrong direction.”
