Ingredients for Chicken Handi:1 kg chicken 2 large onions chopped 2 large tomatoes chopped 200 grams curd 3 bay leaves 2 tablespoons cumin seeds 3 large cardamom 1 teaspoon black pepper 6 small cardamom 1/2 teaspoon cloves 2 inch cinnamon slice 1 teaspoon lemon juice 1/2 teaspoon turmeric powder 1 teaspoon Kashmiri red chilli powder 1/2 teaspoon roasted Kasuri methi 2 tablespoons coriander powder 2/5
3 tablespoons garlic ginger paste 4 tablespoons coriander leaves chopped Oil as required Salt to taste 2 teaspoons red chilli powder
Preparation of Chicken Handi:Step 1 Cut the chicken into pieces of your choice and wash it well in running water, then wipe and dry it. Add lemon juice, turmeric powder and salt in a small bowl, mix it well and then vessel it on pieces of chicken. We will leave the chicken covered for 30 minutes to marinate.
Step 2 Heat a pan on a flame and add bay leaf, cinnamon slice, black pepper, large cardamom, small cardamom, cloves and cumin seeds and roast it while it is dry. When the spices start smelling good or let it cool down after frying for 2 minutes, then put it in the mixer and make a fine spice. Take it out in a bowl and keep it aside.
Step 3 Now we will mix coriander powder, Kashmiri red chilli powder and curd in prepared spices. This will be our second marinade. Now, with this paste on the pieces of chicken, I will paint it very well. And wrap the chicken in a foil paper and once again keep it in the fridge to marinate for 45 minutes.
Step 4 Now put oil in a big pot and heat it, and after adding onion in it, stirring it in between and fry it till the onion comes in golden brown color. After frying the onion, add garlic ginger paste and fry for 15 seconds while stirring continuously. Now we'll put marinated chicken pieces with coriander leaves and roast it on high flame while stirring for 5 minutes.

Step 5 After frying, add tomato puree to it and add salt and mix it well. Cook it on medium flame while stirring it for 10 minutes or until oil starts leaving the edges. The chicken will be cooked in a total of 25 minutes. We will not put water in it at all, but if you feel the need, you will mix water according to the gravy of your choice but they will do it in the end. Before the last 5 minutes we will put roasted Kasuri methi in it and turn off the heat.
Step 6 Heat 1 teaspoon of oil in a small bowl and add cumin seeds to it and temper it. We will put the tikka in the chicken vessel and we will mix the chopped coriander leaves in it. Chicken Handi is now ready. Serve it with hot roti, Lacha Paratha or rice rice of your choice.
