IT'S OUR BIRTHDAY

We’ve just turned three! Happy Birthday to us! I cannot believe that we are celebrating our THIRD birthday. Which also means that I have now been living in Cape Town for just over that time. What an adventure and a rollercoaster it has been. I’d been in the magazine business for a while - working first as an Editorial assistant for Go Multi Magazine and then as a Graphic Designer for Mum’s Mail (Both in Durban). I had also run my own coffee shop magazine called Spill the Beans which I later sold. When I first moved to Cape Town I had no idea what I wanted to do and where I wanted to work. It was a particularly horrific first day at a job that I decided to start my own thing. And so... Flat White Concepts was created. Initially it was going to be a purely Graphic Design business with a small online magazine. But it has changed so much since then. Soon I introduced a Freelance Writing section as well as an Illustration section. A year later and my husband started Flat White Images - a retouching and photography business. The concept has grown and changed many times - including different logos and different websites. But that’s good - I want to see us evolving and changing where we see fit. I’m sure that in a year’s time I’ll be looking back on this with a whole new direction for the company. The magazine has by far been the most enjoyable. I have been privy to some amazing people, incredible products, interesting places and delicious food. People always ask me how I find content each month. It’s easy - it’s everywhere! We are so blessed to be living in a world that is so open to creativity and new ventures. Happy Birthday to myself and my team (Yes, two members are Guinea Pigs). The brainchild of Cape Town locals Tanya and Ella, JarBar was born of their daily struggle to find healthy, convenient and affordable food. Both coming from busy agency backgrounds and being very health conscious, this often meant that lunch time was filled with frustration as most business areas don’t offer free range meat options, the healthy options tend to be pricey, and the vegetarian options are often very limited. It was this frustration that prompted Ella and Tanya to start their own food business that not only makes healthy and delicious food, but also does daily deliveries. In addition to being healthy and convenient, JarBar also focuses on sustainability by serving all food in reusable jars and only using meat that is ethically sourced. JarBar caters for everyone - meat lovers, vegetarians, vegans and health nuts.

Take me through the process.. We work on a weekly ordering system whereby all orders for Monday & Tuesday need to be placed by 6pm on the previous Thursday, and all orders for Wednesday-Friday need to be placed by 6pm on a Monday.. Orders are then delivered between 8am and 12h30pm daily (provided you are based within our delivery areas CBD & Surrounds). This is to help us keep in line with our sustainability principles as we only order stock based on the actual orders that we receive.

BANANA MUFFIN CUPCAKES Monkeys aren’t the only ones fascinated by bananas. I think this boomeranged yellow fruit is a gift from the food gods. I’m seriously considering writing a book called 101 things to do with a banana! Apart from my Brown Butter Banana Bread and the equally delicious but healthier Fudgy Chocolate Banana Bread, these tender crumbed banana muffin cupcakes are my latest addition to the bananarama club. These dual purpose muffins step effortlessly onto the cupcake-grid once frosted with my Four Ingredient Peanut Butter Mousse. A feathery cocoa dusting adds a final flourish of chocolatey goodness.

Ingredients Makes about 16 (depending on the size muffin cases used)

• 1 cup (150g) self raising flour • 3/4 cup (100g) wholemeal flour • 1 teaspoon cinnamon • 1 teaspoon baking powder • 1/4 teaspoon bicarbonate of soda • Pinch of salt • 150g brown sugar • 80ml coconut oil • 2 eggs Can you ever have enough muffins recipes? • 150ml buttermilk Foolproof, simple and completely reliable ones, • 3 very ripe bananas that is. A note to coffee shop regulars.. If you’re a coffee shop regular then you too have probably picked up somewhat of a routine, a few quirks that make your coffee shop experience work for you. Over the years of visiting coffee shops I have definitely learnt a lot from the coffee culture and because I am intentional about visiting different coffee shops I have admired the nature of decor, set up and service. I must admit I love a coffee shop experience that is different to the rest.

These days it is not uncommon to see business men and women working at coffee shops, and by now I’m sure you have heard the term ‘Coffice’ used, implying a ‘coffee shop come office’ environment. As a freelancer I am very much aware of this term, and believe there is another side to just benefiting from a space to work that has great coffee. I am all for supporting local coffee shops and baristas. I see the value in adding to the industry and in essence spreading the word about great local coffee shops so that more people become regular supporters. So here is a note to all coffee shop regulars, which I believe if addressed will add greatly to the coffee industry in South Africa and around the world.

Give constructive feed back If you are always visiting a coffee shop and you order your same old order, but this time it tastes bitter or is too hot, speak to the barista. Don’t shout at them because www.flatwhiteconcepts.com | Issue 34


TASTE it’s not the usual taste, rather let them know your concerns in a kind manner so that they can make changes to the grind or the milk temperature. If you have built a good relationship with a waiter or barista this will come more naturally. I believe that we learn from constructive feedback and if no one says anything then how will the barista know what he/she can improve on. Im’m not implying going into every coffee shop ready to rate their coffee, or think you know more than the barista. However interacting with and encouraging the baristas in their skills will go a long way in improving our coffee culture.

Don’t abuse the wifi

One of the first questions I ask after ordering a coffee is “Do you offer wifi?” I am not rude about it or expectant, I don’t get angry at the waiter if his/her answer is no. Coffee shops that offer wifi are becoming more prevalent, and they have noticed the value in creating a space for the world to connect over coffee. I am a huge advocate of being aware of your time spent in a coffee shop with wifi. If you are going to spend from 8am – 12pm working in a coffee shop then out of courtesy one would either order breakfast and a coffee, or order a coffee/refreshment for each hour you are there. We are supporting our local baristas and coffee shop owners, not just using their free wifi.

Spread the word I have always hoped to be part of creating a culture of information in the coffee industry. My blog is a way to share all the great coffee spots around South Africa and the world. TASTE I visit I try take a good picture to share on Facebook, Instagram or Twitter. I like to take note of the coffee shops social media details so I can mention them and refer them to others. I want to spread the word. I started a hashtag #supportlocal because I believe that our baristas are critical to our enjoyment of coffee. The more support shown for local coffee shops the greater the growth and skills improvement. The next time you visit your regular coffee shop hangout take a picture with your favourite barista, and share the name of the coffee shop/barista with your social community. Let’s make much of the men and women who pour us our beloved coffee drinks.

Remember to tip

If you visit any specialty coffee shop/independent coffee shop those baristas have been trained extensively (for the most part) and a lot of their skill involves constantly checking the grinder, the coffee grind, checking that the espresso shots are pulling well, the milk is stressed to the correct temperature and texture. Their knowledge extends to the origin on the beans and some will even have been involved in the cupping process, so they will know what flavours you can get out of the coffee. The role of a barista is incredibly valuable so lets show our appreciation and support of their skills by tipping our baristas well when we visit our regular coffee shops. Being aware of these four points can make a major difference to the coffee industry. As coffee shop regulars it’s out responsibility and privilege to support and encourage, as we continue to enjoy coffee and the coffee shop space. My new favourite hangout: The Big Box Café

I am so excited that I discovered The Big Box Café. I’ve always been a big fan of boardgames and I’m obviously a huge fan of coffee - so combine the two together and you have the perfect place. We chat to owners Eric and Emilie to find out more:

Tell us more about the concept: The Big Box Café is a place where you can play different board games (for free) as many times as you’d like and where you can even enjoy a meal or drink while doing so. Gamers, whether beginner or expert, young or old, lonely hermit or clan of close friends, family or shy new couple are welcome! Looking for an ideal place for a coffee break? What about something to do on a rainy afternoon or even one evening? Then The Big Box Café is just the place; in it you will find a range of colourful items like card, dice, wooden, quick, solo and family games. TANDEM TRAVEL As much as I like traveling alone I must admit, I enjoy company far more. I like sharing travel memories with friends. Take photos together and have memories of adventures shared. We still joke about an accidental queer art exhibition we went to. (Accidental as in we were not meant to be there, but it was damn interesting) But with a travel partner comes travel stress. Even your favourite person in the world can get on your nerves when you have to drive together for 13 hours. Or share a secluded cabin for 5 nights. My husband always said he married me because I am that one person he wants to annoy for the rest of his life, so I guess I should have known. If you have a short fuse like me but still want travel company, here is my survival guide to not killing each other and actually having the best time.

you want to do together, it’s great to split up and go wander off on your own too. Perhaps you want to see a museum he doesn’t or he wants to go eat something odd that doesn’t impress you. Just because you travel together doesn’t mean you are joined at the hip. Go for unplanned walks. Instead of planning out every minute of your trip (making it even more stressful) just take a day to hop in the car and go for a drive together. You never know what you will discover. Or just go for a walk. Some of my best memories of traveling with Oscar was made on late night walks. Communicate.

Just laugh.

Don’t be one of those kak people that say “I’m fine” when you are about to commit murder. Talk, just talk it out. It’s that easy.

That moment when you feel like you are going to kill him. Laugh. Like cry of laughter. Its far better than a silly argument about who forgot to pack what.

Enjoy each others company. I mean it. Really enjoy it. Short camping trip or international travel, it doesn’t matter where you go. It’s always better together.
