By CLIFF DUNN Has it already been five years since Mel Gibson (who by then had already gone from Gary Busey-to-Charlie Sheen mode in the quantum of Hollywood weirdness) gave us a taste of “Mesoamerican Things to Come” with his nightmarish vision of Central American “history” in Apocalypto? The movie was thrashed and trashed by critics and scholars for

perceived inaccuracies and insults to Mayan culture. (Critic William Booth at The Washington Post heroically used such evocative words and phrases as “psycho-sadistic society,” “ghoulscape,” “reckless sewage treatment,” and “bad rave dancing,” all in the same review.) Whatever your own personal thoughts about the merits of historical


Central American culture, or the fine art of human sacrifice--real or imagined—the dawning of 2012 brings with it a stark reminder that the Mayans were less than optimistic about the future of the calendarmaking industry. No anticipated “2013 New Year’s Rockin’ Eve Celebrations” for the followers of the Great Snake (no, not Jeff Stryker: the god named Kukulkan). As the Real House-Wikis of Wikipedia note: “December 21, 2012… is regarded as the end-date of a 5,125-year-long cycle in the Mesoamerican Long Count calendar,” with some scholars suggesting

SnowBizNow By NICHOLAS SNOW The Gospel According to Peter Zaproš Peter Zaproš grew up in Vienna, Austria, once also lived in Italy, Portugal, and Romania as well, but now calls the U.K. home. As a child, he wanted to grow up to be an explorer and archaeologist. And yes, he’s gay. “I came out to my family when I was sixteen but they dismissed it initially as a joke, persuading me that people’s minds change with the course of time and that I should be patient before reaching conclusions about my identity,” Peter explained. “They clearly hoped that I would not be gay. My parents’ main fear was not to have grandchildren and the loss of their prestige in their social circles that were mostly formed by people from the world of sports.” Peter is well-prepared for his lifelong dream of exploring, as he speaks multiple languages. “It has always been about a struggle to communicate with people and be understood,” said Peter. “I had probably the false impression that speaking one’s native language should be the key to their heart. I started learning languages as a child. My family setting also helped. It is formed by people from diverse linguistic backgrounds. Both my dad and mom are bilingual and they used German as common language between them—that made five languages spoken at home during my childhood.” “My family always wanted me to pursue my own life away from them and their dream was the UK,” Peter continued. “I resisted enough. I wanted to live in Portugal or Italy. After a few unsuccessful attempts to establish a serious career there, I decided that English should be the language that could help me reach more people throughout the world. I managed to get a scholarship for a degree at Cambridge University and that’s how my life in the U.K. started. I chose to live in the most accessible big city in the North of the country, i.e. Leeds, because of its good background in community arts for and with disabled people (with whom he works). It’s a vibrant place with a lot of campaigning going on constantly.” Peter, who teaches languages, further explained, “I specialize in autism and also worked with disable children and adults in educational settings. In the past, I worked as a dancer and actor for small theatre companies across Europe.”

Peter singlehandedly translated “The Power To Be Strong” HIV testing/safer sex awareness song into three languages (Italian, Portuguese and Romanian) and found volunteers for two more (Greek and Arabic) and explained that he likes “supporting friends’ efforts” in the battle against HIV/AIDS. “I have been involved in the past during summer voluntary work, when I lived in Italy and Portugal. I helped with campaigns, preparing leaflets, distributing, organizing events and happenings to attract the public interest and raise awareness.” He continued, “I love working in a team, getting to know my colleagues by being united for a common cause. I have learned a lot about HIV/AIDS and have met wonderful and strong people and listened to their amazing but sometimes sad stories.” In contrast, he added, “I felt frightened when I faced homophobia and negative comments. I faced suspicion when I tried to approach people with leaflets out in the streets. I saw people running away with fear or disgust, probably because they thought I had some highly contagious disease.” “In the past, I had resisted being involved in gay activism,” Peter confided, “because of fear of harming my career with children and vulnerable adults. I soon realized my error when for the first time I timidly took part at a local gay pride event in the North of England. There, I met the parents of children I had worked with and was so relieved to see there can be also accepting people in this world. Soon afterwards, I took part in several LGBT conferences for students and trade unions.” As to who inspires him, Peter responded, “Mahatma Gandhi has been a role model for me since childhood. I always liked bringing peace and reconciliation. I hated violence and always reacted to it with passive resistance. Similarly, I admire the educator Maria Montessori who was the first person in the world to let disabled people discover and unfold their potential. Dining By TIM SLIVINSKI Everything Old is New Again at Tap 42 Those of you with a history in Fort Lauderdale will remember the old Brownie’s on South Andrews. It was legendary; it was an institution. The old Brownie’s is now the new Tap 42, opened since mid-November. For years burgers were relegated to fast food spots. That was then. Tap 42 serves new style burgers, truly gourmet. In the 40’s and 50’s, classic cocktails made with bourbon, such as the classic Manhattan, were all the rage. Then vodka took over. Bourbon is new again--42 varieties in fact--at Tap 42. Beer was once America’s drink of choice. Then wine surpassed it. At Tap 42, 42 draft beers, most of them craft beers and small production, have all the nuances and flavor profiles of fine wine. Everything old is indeed new again. On a recent Monday night with a slight chill in the air and a rather strong breeze, the b/f and I decided to check out Tap 42. We had heard great buzz about it and decided to go see for ourselves what was all about. First, the renovation on the old Brownie’s is nothing short of stunning. A long bar with several high top and dining tables along the wall give Tap 42 a very urban, sleek look. There is an outdoor area of the bar along with a patio in the back for taking advantage of our great South Florida winter weather. First impression: Excellent! We decided on two stools at the outdoor bar, and soon after claiming our spot, Savannah greeted us with a warm smile and inquired about our choice of drinks. I am a bourbon fanatic, so I asked to see the bourbon list. The list not only indicates the name of each bourbon, but it further describes individual flavor profiles. I was like a kid in a candy store. I asked for Savannah’s help, and she pointed out a couple that are customer favorites. I selected her first suggestion, and she sent off to mix me a Manhattan. Meanwhile, the b/f was drooling over the selections of craft beers from the U.S. and around the world. He decided to try a pomegranate beer--no joke. Once we had our drinks in hand, we relaxed and took in the cool vibe surrounding us. Feeling famished, we decided to order a couple of bar snacks from the menu. Do not--I repeat do not--overlook the starters at Tap 42. They are creative, interesting, and unique with each one sounding as delicious as the next. We decided on the Berkshire Crispy Pork Belly ($13) and the Wild Mushroom Tostada ($8.50). Savannah assured us we had made wise choices. Indeed, we had. When the appetizers arrived, we were taken in immediately by the creative plating and the outstanding aroma of each dish. The pork belly, melt in your mouth tender, was glazed with

huckleberry jam and sherry vinaigrette, sitting atop a salad of farro—another old/new grain—and watercress. Outstanding! The portion was ample enough to easily be a small plate meal for one. The Wild Mushroom Tostada offered a blend of earthy, aromatic mushrooms in a creamy mushroom sauce sitting on a toasted baguette. Comforting and delicious. Too messy to eat with your hands, it was nonetheless a flavorful dish that fits the heartiness of both bourbon and beer. Needless to say, we cleaned both those plates. I ordered another Manhattan with a different bourbon, while the b/f selected another craft beer. Reading the descriptions of the 9 oz. Gourmet Burgers, I began to narrow down my selection. I finally opted for the Drunken Goat ($14). It offers a beef/lamb blend burger topped with tomato jam, arugula, bourbon red onions, goat cheese, and Dijon on brioche. All burgers are served with fries. My partner’s eye was caught by an Herb Marinated Skirt Steak ($19) near the bottom of the menu. It was a 10 oz. skirt steak served with steak fries, Brussels sprout hash, arugula salad, and beef jus. Creative fun plating came through again when our entrees arrived. My burger offered an array of flavors with the sweetness of the bourbon onions playing off the tanginess of the tomato jam. The burger itself was perfectly grilled to my medium request—juicy and full of flavor. A beautifully medium pink sliced skirt steak graced my b/f’s plate. It was spicy, but not overly so, still allowing the flavor of the beef to shine through. He particularly enjoyed the Brussels sprout hash, saying it was different as well as delicious. Between mouthfuls we assured Savannah that we were greatly pleased with our choices. Will we go back to Tap 42? Most definitely, and that’s perhaps the highest compliment a patron can give a restaurant. It has a friendly staff that fit the high energy, urban vibe of the room. The bourbon and craft beer list have thought, whimsy, and creativity behind them. The food was creative, fun, and, most of all, delicious. I look forward to my next visit.

TRAVEL By PAUL RUBIO Utah Unleashed Part I: Capitol Reef + Torrey A ruddy, rugged land imaginatively painted by the geological time clock, Utah boasts some of the world’s most unsurpassed natural beauty. Though the homophobic rhetoric of the LDS church and HBO’s Big Love have made Utah a household name for the GLBT community, there’s far more to the Mormon-centric state than meets the cautious queer eye. The all-welcoming, towering collections of weather-torn sandstone that have formed nature’s Wild West playground of canyons, arches, and promontories are indeed some of Earth’s most breathtaking landscapes. A land of “cowboys and Indians” comes to life traversing the great distances between hamlets dotting the sparsely populated state, with historic trading posts and random watering holes revealing glimpses of a time bygone. Rustic lodges dole out world-class luxury amidst the craggy, mountainous terrain. And trepidation of Salt Lake City fades after experiencing the silent GLBT revolution of the state capital, where a blossoming gay population is successfully making its way with a mini-gayborhood, awesome gay bars, trendy hotels, and plenty of fair-skinned hotties eager to unbutton their “magic underwear” (Google for added explanation).

Capitol Reef National Park In the heart of southern Utah’s canyon lands, Capitol Reef National Park (nps.gov/ care) comprises 378 square miles of multihued canyons, ridges, buttes (pun intended), and monoliths, doling out spectrums of reds and oranges in coral-reef like formations you never dreamed possible. These jagged edges of glowing sandstone, defined by a 100-mile long warp in the Earth’s crust known as Waterpocket Fold, begin to take center stage heading towards the town of Torrey, reaching scenic Highway 24 roughly 3.5 hours south of Salt Lake City. One of Utah’s lesser-known national parks, Capitol Reef is a prime opportunity for personal bonding with Mother Nature. In what feels like your own private land of canyons, ridges,


and domes, Earth’s essence proves boundless - whether hiking the steep 3.5 mile trail to Chimney Rock, a weathered layered sandstone obelisk, capturing the sun’s late PM radiance at Sunset Point or traipsing through the beginner’s 1 mile path to Hickman Bridge, an impressive natural arch in a scenic side canyon far above the Fremont River. Blink quickly and you might miss the chipmunks, squirrels, birds, hawks, eagles, and lizards, eager to greet you or soaring above you. Or you might overlook the stunning petro glyphs, linking the park to its rich NativeAmerican history. More experienced hikers will be handsomely rewarded with Capitol Reef’s near-dozen moderate and strenuous hiking trails. But even keeping to the Capitol Reef basics--the winding

roads, hairpin turns and short trails of the park’s ten-mile paved “scenic drive”--you’ll experience exquisite rock formations producing an array of vibrant and contrasting earthly colors. Some of these rock formations have been weathered to resemble their given names of “The Castle” and “The Egyptian Temple.” These natural formations play out like works of natural art, easily venerated for hours and photographed ad nauseam. Torrey Post mind-boggling days exploring Capitol Reef, the superlative way to relax in comfort and share your Utah experience with other fellow travelers is an overnight stay or two at the nearby Lodge at Red River Ranch (redriverranch. com) ($150-$245 per night) along Highway 24’s Pony Express Route. Here, an old farmhouse has been transformed into a bed and breakfast with an irresistible “how the West was won” ambience and the full gamut of ultra cozy, period furniture circa late 19th century. Come evening, the foyer and living room come alive with guests returning from the day’s outing, eager to indulge others in their stories. The Lodge at Red River Ranch offers breakfast, lunch and dinner for their guests at the dining room, the breakfasts particularly satisfying before hiking the beautiful trails of Capitol Reef or a day of ATV off-roading. Hands down the best place to spend your evening in Torrey is at Café Diablo (cafediablo. net), with its fanfare of eclectic southwestern appetizers and dishes. Not sure how this innovative farm to table restaurant has fallen off the Anthony Bourdain radar, but the Rattlesnake Cakes ($9), the Coconut Calamari & Marmalade Salad ($10), and the Marinated Loin of Utah Lamb ($28) are the stuff of Travel Channelmeets-Food Network dreams. Meals are capped with homemade ice creams and gastronomic ingenuity from the in-house pastry team. Of note, Diablo remains open only during peak season from mid-April to late October, so plan accordingly. Resolutions for a Healthy, Hunky New Year As we say good-bye and good riddance to 2011, let’s really get psyched with the prospects and promise of a great 2012! So why not start by making a few resolutions that will guarantee your chances of living a happy, healthy life. Sure, quitting smoking, cutting back on internet hook-ups, and eating less junk food are cool places to start. But instead of dwelling on doing without, why not accentuate the positive. So here’s to the New Year and a happier, more youthful new you! Resolution #1: Eat a Healthy Breakfast Breakfast eaters are champions of good health. Research shows people who have a morning meal tend to take in more vitamins and minerals, and less fat and bad cholesterol. The result is a leaner body, mountains of energy, a lower cholesterol count and less chance of over-eating later in the day. The Mayo Clinic (prestigious!) recommends eating a variety of foods (steel cut oatmeal, whole grain toast, yogurt, fresh fruit) rich in protein, carbohydrates and healthy fats. Resolution #2: Reassess Your Training Regime Periodize your training schedule for optimum results this year. Look upon the year ahead as one big macrocycle with goals and objectives such as getting your body fat down below say 18% and putting on maybe 5 lbs of muscle. Break down the bigger cycle into mesocycles of maybe 3 to 4 month periods of time. Assess your progress, vary your workouts, and stay consistent with your workouts. Read, take measurements regularly and fine-tune your goals throughout the year. This way you won’t get bored, you’ll see progress and you’re sure to get the most from each hour in the gym! Resolution #3: Get Some Sleep Getting 7 to 10 hours of uninterrupted sleep is essential to your physical and mental health. Besides making you cranky and exhausted, other symptoms of poor sleep or lack of sleep can be depression, memory loss, migraine headaches, weight gain and paranoia. So why not relax, take a load off and hit the sack early? Resolution #4: Stay Active It’s a given that physical activity has a bounty of benefits, so why are 60% of all Americans couch potatoes? You don’t have to be a marathon runner or a muscle head who lives in a gym, but at the very least, get up and do something! Regular exercise (anaerobic weight training and aerobic cardio training) helps control weight, maintains healthy bones, muscles and joints, reduces the risk

of high blood pressure and diabetes and death from heart disease. Besides these bonuses, exercise is the only way to get a tight, toned body and have fun at the same time Resolution #5: Protect Your Skin Your skin begins to age the moment you are born, so the best way to protect it and look younger is to stay out of the sun. In order to avoid some of the sun’s harmful ultraviolet rays, which can cause wrinkles and skin cancer, observe the following: always wear sunscreen with SPF 15 or higher; wear a hat and other protective clothing; don’t deliberately sun-bathe; avoid sun exposure between 10 AM and 3 PM. Resolution #6: Snack Healthy and Often Remember to eat frequently throughout the day, several small meals consisting of a 3-2-1 ratio of carbs, protein and healthy fats. Avoid monster meals especially late in the day. Eat several servings of fruit and vegetables early in the day. Make sure to eat protein after your workouts which facilitates muscle recovery and growth. The New Year ahead is filled with possibilities and excitement.
