A Beer Lover’s Delight Opens on Wilton Drive This Saturday is the grand opening of Wilton’s Bier Garden, the Island City’s newest spot, located on the corner of Wilton Drive and N.E. 6 Avenue in Wilton Manors. For those familiar to the local watering holes and eateries, Wilton’s Bier Garden offers something new to “The Drive” with an international-style menu and just a touch of Las Olas Boulevard. In addition to an indoor restaurant and bar, Wilton’s Bier Garden features a large outdoor patio that is situated close to curbside, with umbrellacovered tables and a seating area that includes comfortable white couches and something unique on Wilton Drive: an outdoor fire pit. “When we light those logs,” said Wilton’s Bier Garden owner Paul Saar about the fire pit, “the smell of the fire burning drifts down through the courtyard. Customers sit out there, cuddle, and drink their beer-- it’s the concept of relaxing outside. It’s something truly different.” In addition to 16 beers on tap, Wilton’s Bier Gardens will feature over 100 different beers from around the world and, Saar emphasized, its own micro-brew beer in the not-too-distant future. Saar also said that Wilton’s Bier Garden serves food, but not the usual fare one is accustomed to finding at most bars. The menu offers a selection of foods from across Europe. “We don’t want to be known as a German Restaurant,” said Saar. “We have food from Germany, but we also have selections from Italy and Spain. We want to be known as an international restaurant with a little flare for everything.” Saar notes that already popular are items including sandwiches, Panini, appetizers, and salads. Wilton’s Bier Garden also will feature dancing and entertainment on Friday and Saturday nights, live music on Sunday afternoons, and a Sunday T-dance. Starting next month, local beer companies will have beer tastings and give out free samples of their brands. “We will be a nice addition to the area,” said Saar. “Everybody likes beer, and with over 100 beers from around the world, we will make a lot of people happy.”

New Year Entertaining: On-the-Go and On-the-Cheap Everyone knows that the holidays are both the best time to entertain, and the best time to dig yourself into an entertaining-expenses hole from which it will likely take the rest of the year to recover. Let’s face it: the glitz and glamour of night-life, whether the clubs, the bars, or happening restaurants, can become a tad blasé, not to mention a major expense. Plus it’s normally time-consuming. Now that we have been slammed ‘gracefully’ into another New Year, I know that the temptation is great to “go hermit” and take a long hibernation from home entertaining. The question is: do you really want to divorce yourself from the fun of spending quality time with friends because of a little case of post-holiday low-cash blues? Good news, gay guys and girls: there are many low-budget, low-impact, and low-maintenance ways to enjoy a fun night at home with the friends throughout the year. To get things rolling, pick a theme. It could be a choice of places: Brazil, India, South of the Border (in this case Mexico, not Dania Beach), Greece, or anyplace that’s exotic and fun, and likely to get your guests in the mood. If it’s been a while since you broke out the Monopoly game board, or invited another couple to come over for a fun night of Taboo or Scattergories, “game night” makes for a great theme that’s both fun and thrifty, and can be combined with cocktails or served dry. (Mormons have made a great, nonalcohol-fueled success of “Family Home Night” for years; why should they have all the laughs?) A fun night of Yahtzee (or “strip Stratego,” for that matter) lends itself to quick and easyto-prepare dishes from which your guests can “graze,” the very idea behind the whole tapas concept. Rachel Ray has a wonderful recipe for Stuffed Portabella Mushrooms that makes a great appetizer that will establish your “cred” as a Host-with-the-Most, and it doesn’t break the bank in the process. Here’s what you will need to serve for you and three guests:

12 to 16 baby portabella mushrooms 1 pound ground chicken or turkey 1 teaspoon fennel seed 1 small, finely chopped onion 3 garlic cloves, grated or finely chopped Zest from one (1) lemon 1 cup shredded Asiago or Parmesan cheese 1/2 cup breadcrumbs 1 10-ounce box frozen chopped spinach, defrosted and wrung dry Salt and pepper 2 tablespoons extra-virgin olive oil 1/4 cup pine nuts or chopped almonds Preheat your oven to 400 degrees (Fahrenheit). Wipe the mushrooms clean using a damp cloth. After removing the stems, finely chop them. Using a large mixing bowl, combine the ground chicken or turkey with the fennel seed, onion, garlic, lemon zest, half of the cheese, the finelychopped mushroom stems, breadcrumbs, and spinach, and season with salt and pepper. Brush lightly with extra-virgin olive oil, and stuff the mixture into the mushroom caps. Arrange the stuffed mushrooms on a rimmed baking sheet or in a baking dish. Make sure you leave a little room around each mushroom so the caps will bake evenly. Sprinkle the remaining cheese and the chopped nuts over the mushroom caps, and pop them into your preheated oven. Bake them until the mushrooms are tender and the filling is cooked all the way through. This should take a total of about 25 minutes. Now put on something comfortable to wear (unless you’re playing a board game with a military theme like RISK --then it’s olive drab and soft-soled combat boots all the way), and enjoy a fun evening and the satisfaction that your rep as a party-planner has withstood another January, and the scrutiny of your pals.

J-Mark’s Has Left Its Mark on the Fort Lauderdale Dining Scene It is nearly a rhetorical question: Have you been to J Mark’s yet? After all, on any typical evening, it seems that you run into several of your friends and acquaintances when you walk in. And that, of course, is a testament to the appeal of this popular dining spot. It is a place that makes every guest feel comfortable and important—from the minute they enter. There are always smiles at the hostess stand, and Rebecca, with her infectious smile and graceful charm, is sure to stop by your table for a chat at some point. The bar is always humming with conversation and peals of laughter, and very soon, one of the best dining patios in Fort Lauderdale will be crowded once again. Liking the hubbub and friendliness of the bar, my partner and I often opt for a seat there. J Mark’s is one of those places where the appetizers can easily constitute a meal, so after ordering a drink, we peruse our options. Though sliders have become a bit ubiquitous, I am a huge fan of the A-hi Tuna Sliders. At $13.99, they are a great deal and superbly delicious. Perfectly seared tuna with a zingy Cajun crust arrives on freshly made mini-buns. Avocado, red onion, crispy wontons and a remoulade all combine with the tuna to make a wonderful explosion of flavor in the mouth. Turn up the heat by adding a bit of wasabi and soy ginger. These sliders never fail to please. My partner prefers the Prime Rib Sliders ($12.99), though claiming not to be a prime rib fan. He loves the texture and perfectly cooked temperature of the prime rib and how it is layered on the mini-bun. They arrive with basil pesto and creamy horseradish, which kicks up the heat a bit. Dip them in warm au jus, and don’t worry if it dribbles down your chin. Sliders are plated with a small batch of fries, so it is easy to make them an entrée. When my appetite is a bit more on the hearty side, I tend to opt for J Mark’s Rib-eye ($24.99). It is an ample portion of steak, and it consistently arrives at my requested temperature. The menu serves it with Yukon Gold Mashed Potatoes, which are terrific and enough to feed four, but I often ask for a baked potato instead, highlighting another fact that makes J Mark’s so popular: They gladly and willingly make substitutions. There is never a quibble. The boyfriend leans toward the pasta portion of the menu. He is particularly fond of the Veggie Lovers Pasta ($11.99). It offers an array of vegetables: broccoli, sun-dried tomatoes, roasted eggplant, peppers, and kalamata olives. Tossed in

an olive oil and walnut basil pesto with penne, it has become a “go to” dish for him. Half of the overly generous serving almost always goes home for the next day’s lunch. One of the newer offerings at J Mark’s is Saturday and Sunday brunch, featured from 11 a.m. until 3 p.m. Spicy bloody Marys or mimosas at $3.00 each get your late morning started in just the right way. Brunch offerings are listed on a separate menu and tempt with some unusual preparations. On a recent slightly less humid and cooler Sunday, our gracious and exceedingly competent waiter, Ralph, kept us well liquefied in brunch cocktails and coffee. I have fallen in love with the Filet and Eggs ($12.99). Certified Angus Beef Tips are grilled to your desired temperature, and the dish arrives with beautifully poached eggs, homemade Hollandaise sauce, and breakfast potatoes, which are crispy, but not too much so. It is a hearty way to get my day going after a late Saturday. (Dining hint: I love to dip my breakfast potatoes in the Hollandaise. Yummy!) For something completely unusual, try one of my partner’s favorites: the Cheese-burger Bennie ($13.99). Two superbly grilled patties, again done to your desired temperature, with cheddar cheese placed atop toasted English muffins. They are then finished with poached eggs and Hollandaise sauce. It sounds messy, and it is, but it is oh so good! I would never have believed it if I had not tried it. Other brunch choices include an egg white omelette ($9.99), an egg croissant sandwich ($9.99), breakfast egg rolls ($9.99), and several more variations on the traditional eggs benedict ($11.99-$15.99). A comfortable bar and dining area, many menu options and price points, attentive and well-trained servers, great cocktails – it is all a part of the winning formula that keeps customers coming back to J Mark’s. Whether you want to enjoy a drink and an appetizer or a full-on meal, you will be graciously cared for. J Mark’s does it and does it well.

Travel Utah Unleashed Part II: Monument Valley

Near the Utah-Arizona state border, Monument Valley (navajonationparks.org) has long served as Hollywood’s quintessential Western back lot, beginning with John Ford’s Stagecoach in 1939 and continuing to more modern blockbuster films such as Mission Impossible II and Back to the Future III. This vast expanse of unique sandstone formations and historic home to the Navajo Indian Nation rises dramatically from the ground, far and away from any major town or airport in a place void of most links to modernity. Connecting this time warp to a lucrative tourist industry, the Gouldings Lodge (gouldings.com) offers dining, overnight accommodations, day tours and activities to dutifully experience Monument Valley. Goulding’s safari-style tour trucks navigate the bumpy, roller coaster trails through the Valley with the help of an experienced Navajo

driver and guide. The open-aired truck makes stops at superlative locations to photograph the most famous rock formations like the Three Sisters, the Eye of the Sun, Submarine Rock, and the Mittens. Inside the Valley, descendants of domestic sheep and horses from the conquistadors’ days roam freely. Those hoping to explore the valley on their own should think twice. Most rental vehicles struggle to handle the terrain, and the majority of the Valley is restricted to use by official tour and park vehicles. Through Gouldings, it’s possible to arrange Monument Valley activities in advance, like the tour described above, horseback group rides, and also ATV or hiking excursions to other near sites outside of the Monument Valley Preserve. While Monument Valley consummates a childhood fantasy of playing “Cowboys and Indians,” getting to this clandestine destination is half the adventure. When planning a Utah tour de force, the most logical and spectacular way to reach here is via Bicentennial Scenic Byway 95, coming from Hanksville, 45 minutes east of Capitol Reef National Park. Pictures, pit stops, deep thoughts and all, this drive could easily take all day. Indeed, it’s likely that you will hope this road trip will never end.

The byway passes through Bridges National Monument, the world’s largest display of natural bridges clocking in at 225 million years old, as well as the aquamarine oasis of Lake Powell. Veering south at Highway 261, the valleys of Southern Utah paint a jaw-dropping panorama as you descend the Moki Dugway, an 11 percent grade, gravel zigzagged road lowering 1000 feet to the valley floor. It is here on Moki Dugway that the greatness of the Monument Valley first comes into view. Whether overnighting in Bluff or heading all the way to Gouldings in the same day, take a short detour west before reaching the town of Mexican Hat (appropriately named for the rock formation that forms a figure resembling the profile of a Mexican sombrero on the head of a serape-covered person) and you’ll soon arrive at Goosenecks State Park (utah. com/stateparks). Over 300+ million years old, the San Juan River has carved out a stunning

display of a rare labyrinthine geologic formation known as “entrenched meander.” As you exit your vehicle and grow mesmerized by these natural “goose necks,” not having seen more than a dozen vehicles in the entire day, enjoying nothing but the sounds of wind and rock in a land void of radio and cell phone coverage, the epiphany hits. Utah’s sandstonestrewn canyon lands have become the pages of your personal Choose Your Own Adventure Book, each detour or turn another page number, leading you to our bespoke conclusion. Put Your Best Ass-ets On Display! As a New Year unfolds, I thought it would be nice to throw in a few new routines to make it easier for us to tackle our collective resolution to get to the gym more regularly and to get the most out of the time we spend in those hallowed halls. I thought a great place to start the year would be the derriere, often described as your “glutes,” or, more crudely, your “ass.” There is nothing new about any of these exercises, but as far as shaping, building, and strengthening your butt muscles goes, these can’t be beat. The basic muscles that make up your butt— at least, those you can see--are the gluteus maximus and minimus. The glutes are the strongest muscles of the body. They help you walk, run, jump, and move into an upright stance from a sitting or squatting stance. Regular cardio like stair-stepping and running will give you a strong, tight ass, but weight training will insure you the bubble butt that will turn heads and cause a sensation. For building gorgeous glutes, you can’t beat lunges. I prefer step-up lunges: Stand facing an aerobic step or stair of about mid-shin height, or a little higher. Your feet should be a long stride away from the stair or step. Begin by taking an exaggerated step forward with your right leg, and stepping with your foot onto the stair or platform. Bend the forward knee in line with the floor, but keep your rear leg as straight as possible as you drop it down to stretch the glutes. Push back off the front foot (the front leg does all the work; the back leg merely helps your balance), and return to the starting position. Now step forward with your left leg onto the platform and repeat the exercise. Alternate your legs, performing 12-to-15 reps of two-to-three sets per leg. You can perform walking-lunges using the same exaggerated lunge movement if you have the space in the gym, or if you have access to a parking lot or track near your 52 | mark magazine

home. Hold a dumbbell in each hand while you lunge to add resistance to the exercise and make it tougher. Doing lunges like these will get you outdoors, and help get your heart rate up a little. Another great glute-buster is the widestance squat. While any type of squat is sure to work your lower body, wide squats target the glutes most effectively. Here’s how: Stand erect, holding a barbell positioned on the back of your shoulders. The “Smith” machine can also come in handy if you are doing squats on your own. Assume a stance with your feet spread wide apart and your toes pointed outward. Squat down until your upper legs are parallel to the floor. As you descend, keep your chest elevated, with your shoulders back and your abdominals tight. Push back to a standing position immediately upon hitting the low point, pausing when you reach the top to squeeze the glutes for one to two seconds. Perform three sets of 10-to-12 reps. Here’s an ass-shaper that requires no weights, just a flat bench: Kneel on a flat bench with your left knee, holding the bench with both hands for stability. Hang the right leg toward the floor with your knee bent 90 degrees, keeping your back flat and your head up. Pause with your leg lifted as high and as straight as possible, and then lower the leg back to the starting position. After 10-to-12 reps, switch legs and repeat the exercise. Perform several sets per leg. These exercises are not only great for your glutes, they are excellent overall exercises for your entire lower body. Remember that squats and leg presses--the backbone of any leg routine--are great butt-builders, too. Just be careful about maintaining proper form when you’re doing them. Fighting Cancer with Nutrition Cancer is such a common word in society anymore that people do not even pause when they hear it. This is not a disease to down play by any means. Cancer is one of the leading killers in the United States and around the world. One thing that is increasingly clear is that diet does play a major role in the promotion of the spread of malignancies, while some foods block tumor growth. Foods that prevent and provide the most ample nourishment to fight cancer come as no surprise, namely fruits and veggies. These foods are rich sources of plant chemicals, fiber, antioxidants, nutrients, vitamins A, C and E, selenium and bioflavoniods. These substances aid in slowing, stopping or even reversing the process of many cancers. The substances in the body do so by several protective mechanisms: by detoxifying or neutralizing cancer-causing agents; by preventing precancerous changes in normal cellular material due to carcinogens, radiation and any other hazardous environmental factors; and by reducing hormonal actions that stimulate tumor growth. Citrus and a variety of other fruits, as well as dark green and yellow vegetables are high in vitamin A and C, bioflavoniods, beta carotene and many other plant chemicals that fight off carcinogens. Cereals, whole grain breads and other high fiber foods help promotes smooth colon function. These are some of your best options in the prevention of cancer’s adverse effects. Limit your consumption of dietary fats and always eat in moderation. Ample nutritional studies have linked a high-fat diet and obesity to a plethora of various cancers of the breasts, colon, prostrate, uterus and skin. No more than 20% of your diet should come from fats. Simple dietary changes can help reduce fat intake and improve health. Choosing lean cuts of meat and cutting off visible fat helps reduce saturated fat levels. Substituting vegetarian and raw food dishes several times a week are great ways to cut down the fat. Pasta a few nights a week is another great alternative to consuming fatty meats or other fried foods that spike the body fat levels. Also limiting oils, margarine, shortening and mayonnaise can help tremendously in the reduction of fat intake. Doctors warn against heavy alcohol use and smoking since these are two major precursors to many different cancers. These cancers can include mouth, esophagus, larynx, liver and breast cancer. Excessive use of alcohol or tobacco products reduces the body’s ability to

absorb nutrients that fight off or prevent carcinogens throughout the body. Eating cruciferous vegetables is your best defense to offset these cancers if you do drink and smoke. Members of the cruciferous family include bok choy, broccoli, Brussels sprouts, cabbage, cauliflower, collards, kale, kohlrabi, mustard greens and rutabagas. When cancer strikes, diet plays a major role in the recovery and healing process. Cancer patients need a highly nutritious diet to recuperate from not only the cancer itself, but the deficiencies that it can be attached with it. For example, colon cancer will often cause anemia, an iron-deficiency, because of chronic intestinal bleeding. Loss in weight or anorexia is a common problem with all cancer patients, due to the loss in appetite from the radiation treatment. A dietician is routinely involved in the patient’s care after being diagnosed with cancer to ensure food related treatment options and for future disease prevention. The dietician uses different guideline for the types and stages of the cancer for each individual patient. Diets are generally advised with very low fat, high in pasta and whole grain products, as well as lots of fresh fruits and vegetables. No one ever plans on getting cancer. But if it should strike, know your options are many including the food you consume every day.
