Tamanini

At the “tender” age of 31, Jason Tamanini, general manager of The Manor Entertainment Complex in Wilton Manors, already has an impressive list of accomplishments. And with ten years of restaurant, nightclub, and bar management under this belt, Tamanini has no intention of slowing down. A Philadelphia native, Tamanini took accelerated classes in high school, and graduated at the age of 20 from the University of Pittsburgh, with a major in psychology and a minor in business administration. At Pitt, Tamanini became vice president of Alpha Epsilon Pi, the international Jewish fraternity; and during his senior year, came out to his fraternity brothers. “They were very accepting,” he recalls. “I was really nervous and I ended up coming out to everybody in one day. I just ripped off the bandage and, thankfully, everybody was accepting. Some of them said they weren’t surprised and were just waiting for me to say it.” As a summer job, Tamanini went to work at the Hilton in Key West, which gave him an opportunity to study their business model as well as to put his degrees to good use. They could come in handy again when he moved to the Boca/Delray area to attend FAU, to study for his Master’s. To earn extra money, Tamanini got a job at Dakota 624, an upscale steak house and nightclub where he accepted a management position at the age of 21. While Dakota 624 closed not long after, Tamanini barely paused to catch his breath, having been introduced to the owner of the about-to-open China White, a youth-oriented nightclub in downtown Fort Lauderdale. “It was a learning curve,” admitted Tamanini, “but I think he was impressed with my work ethic. Some people live to work, others work to live. I work to live. I enjoy setting a concept, a goal, and moving forward with it.” Tamanini believes his own youth at the time had something to do with getting the general manager’s gig at China White. “I was young. Older managers

bring older habits with them and [the owner] wanted to start fresh, young, creative, and fun.” Tamanini started at China White in 2002 and remained there until 2006. Essentially a straight club, China White had a number of successful weekly gay nights. While still at China White, Tamanini was contacted by the management of Halo nightclub in Washington, DC., who convinced Tamanini to join them in opening their Miami Beach location on Lincoln Road in 2007. Tamanini remained at Halo for two years until October 2009. It was then that he was contacted by Paul Hugo, The Manor’s co-owner (with business partner Brett Tannenbaum), and offered the position of general manager at the soon-to-be-opened entertainment and dining complex. “I had heard about the project and found it interesting,” remembers Tamanini. “Rarely does a 16,000 square foot restaurant, bar, and nightclub open, and I knew it would be an interesting opportunity for me.” That opportunity has taken him to the present, with The Manor building an impressive following both from within and outside of Greater Fort Lauderdale where Tamanini serves on the board of the Rainbow Business Coalition (RBC) as its co-chair. Where does Tamanini see himself 15 years from now? He says he would like to own a venue that he can call his own, as well as have children— two of them, not for the legacy, but to help him settle down. “I would like to get them soon,” said Tamanini. “I don’t want to be in my 70s with two 18 year old kids.”

Philip Alexander:
Soulfully, and Full of Soul by CLIFF DUNN
(Full Disclosure: I have had the pleasure of singing a “duet” of the Frank Sinatra classic “All the Way” with Philip Alexander, whose true “gift” in my estimation is the generosity of spirit and craft with which he makes his performing partners sound so damned good! But I digress…) Philip Alexander is a familiar face to South Florida’s LGBT community. Whether he is jogging on Fort Lauderdale Beach prior to a personal training session, or shaking the rafters during local open-mic and karaoke nights in the Gayborhood, the 6’5” Alexander is a ubiquitous presence with a signature smile, style, and voice that are very much his own. MARK Magazine Editor Cliff Dunn spoke with Alexander about his Gospel music roots and why the artist loves to be in love. MARK Magazine: Trace the path that your music has taken, personally and career-wise. Philip Alexander: I was singing before I could speak. I believe it’s something I was born to do--THE ONLY THING I was born to do. I sang gospel growing up, [laughs] with a little Whitney Houston and Anita Baker mixed in for good measure. I was very sheltered as a young kid. My mother is very religious, so my music selection was very limited to artists in the Gospel scene. It wasn’t until I was 10, when I moved to Turkey with my father, that I learned about “secular” music. The first artists I was exposed to were Tevin Campbell and the girl group “Xscape.” After traveling all over Europe, we moved to Guam. That’s when I fell in love with Brian McKnight and basically most love ballads. We moved back to the U.S. for my last year and a half of high school, to Panama City, Florida. It was there that I came out of the closet, and the artist that helped me do that was Celine Dion. During that time, I sang every song she made. MM: Who would you not like your style to be confused with? PA: You know, I don’t really know or care who people confuse or compare me to. [Laughs] I think it’s kind of hard to mistake me once I hit the stage: I’m

a 6’5” “Blatino” with blond hair. At this point in my career, I think to be compared to an artist who has already made a name is an honor. MM: This is a year of great change in the music industry, some of it quite sad, including the loss of Whitney Houston and Etta James. But great change brings great opportunity, as well. What do you think 2012 holds for you professionally? PA: Along with my team—my manager, Brian Ferber and my agent, Corri Boyd—I believe that 2012 has already been a BIG year for me. I’ve been approached by Broadway producers, I sang with Brian McKnight’s music director, and I am in talks with a big R&B producer. It all seems like a lot of “hurry up and wait” right now, but it will undoubtedly bare some fruit. MM: From where do you find your “artist’s voice?” PA: It comes from a deep desire to fall--and stay--in love. My close friends would say, “Philip falls in love every three weeks.” But actually I don’t. I want my music to make people feel real, raw emotion. I think that we are seriously deprived of genuine emotion today. Everyone has a guard or wall up of some kind. And this defensive layer displays illusions of emotions, until we find out whether or not the object of our attraction is true. The problem is that by the time we relax and let our guard down, it’s too late. So when I sing, it’s my raw emotion, my true desire that you hear. I put myself in that “what if” place. “What if” I didn’t have my guard up all of the time? “What if” my true love was sitting right before my eyes? “What if” everyone listening was falling in love with someone right now? This is where my artist’s voice comes from. MM: Where would you like people to see Philip Alexander’s career in five years? PA: Five years from now I’d like to be touring. I plan to start opening up for major artists within the next couple of years, so five years from now I want it all!

bytes& Pieces Got Gas? ast week I couldn’t even spell “apoplexy,” but I almost had an apoplectic seizure when I saw the price of gas. In the Gayborhood, the average price per gallon compares with the price of a Happy Hour drink! What’s a budgetconscious boy to do? If you’ve driven around South Florida, you know that fuel prices can change frequently, and may vary by as much as 20% within just a few blocks. Although there’s little we can do about the price of gas--unless you happen to be on the board of OPEC, in which case, what the hell are you thinking?!?— there are a number of smartphone apps to help you stay informed about the cheapest places to buy gas locally, wherever you happen to be.
too, are a customized savings calculator that bases its data on your car’s tank size, miles driven per year, and MPG rating, as well as an “assistance” mode that helps you connect with emergency roadside service when you need it most. Last year, CBS News called Fuel Finder one of the “Best Apps to Save at the Pump.” There’s lots more in terms of features, except for maybe the most important one: finding someone to get out and pump the nasty stuff for you (boyfriends take note). From what I can tell, Fuel Finder would appear to be the most comprehensive source of gas prices in the US and Canada. Like similar apps, these prices are compiled from reports submitted my millions. Among its exclusive features are an easy-to read list arranged by three color-coded categories (high, medium, and low), complete information on gas stations, including other services like ATMs, car washes, and food marts, stats on distance, driving directions, and the estimated drive time. Notable,

gas app for harried motorists-at-the-pump, the GasBuddy.com app locates gas stations that are close by and showing their current gas prices. As its Web site promotes, GasBuddy. com is a community of users who work together to update gas prices in real time. App users are encouraged to report accurate gas price info, and they earn points that are redeemable towards prizes in the site’s give-a-ways. It is not as sexy or slick-looking as Fuel Finder, and has far fewer prices. On the other hand, it’s FREE, and how many other things associated with the price of go-go-juice can that be said of? till Killing Us Softly more than forty years since the release of her first album, Roberta Flack--who insists she was destined “to be the first short black girl from North Carolina to be applauded for her knowledge and ability to play [Russian composer Alexander] Scriabin,” has turned her attention to the Beatles. On “Let It Be” (429 Records), the diva who ruled the 70s and 80s pop charts leaves her distinctive mark on a dozen classics originally introduced by the classic British Invasion foursome, renewing and refreshing them in ways that only Roberta Flack possibly could. MARK Magazine’s Gregg Shapiro spoke with Ms. Flack this month about her new album and her iconic career. MARK Magazine: With such a vast array of material from which you had to choose, what was your process for selecting the Beatles songs on “Let It Be”? Roberta Flack: I think there are 1,088 or more of them, and it wasn’t so easy. What was involved was my commitment to do something that I thought the songs deserved, [and the Beatles’] work deserved, in terms of my musicianship, my musical abilities, and whatever musical decisions I would make. I have two versions of “And I Love Him.” The first one is strictly jazz, in the sense that the melody is improvised. But I felt when I said “And I Love Him,” I wanted to express an ageless attitude of a woman who loves another person. So we went with an almost Brazilian feel. And that’s how I got to this little arrangement we did for “And I Love Him,” which I think is perfect. Great question, Gregg! MM: Looking back at your catalog of studio albums, were you surprised to discover that you hadn’t included a Beatles cover on any of them until now? RF: I wasn’t “surprised.” You probably know that I came up through the clubs. I had artists in the audience at all times handing me songs and telling me about stuff that wasn’t even known by the general public. They would say, “Why don’t you sing a Spanish song? Here, I’ll give you the words to ‘Angelitos Negros.’” Or they would say, “Bette Midler is doing this song, why don’t you do that one?” I had that kind of support. But I did do “Here, There, and Everywhere,” “Let It Be,” and “Yesterday,” all of the obvious ballads. Because I was in a club where people adored me and let me do that, I could try anything. I’m the kind of musician that if I hear it in my head, my fingers somehow can find the notes. I had a lot of fun at a time when the Beatles were in my and everybody else’s heads. [When I sang] “I Want to Hold Your Hand,” people would substitute the word hand with another word--I won’t say what [laughs]. Everything that I do on my earlier albums is from that period. MM: Talk more about the diverse arrangements of the songs--from the bluesy treatment of “Oh Darling” and the acoustic reading of “Hey Jude,” to funky renditions of “I Should Have Known Better,” “In My Life,” and “We Can Work It Out.” Did the songs go through different interpretations before you arrived at the versions that we hear on the album? RF: [Laughs] That’s another good question. That’s basically the scenario. I had the idea for “We Can Work It Out,” but I didn’t commit to it. That was the case with all of the songs. The one thing I could say with finality was I don’t want it to sound like “Roberta Flack sings ‘Let It Be.’” I wanted it to sound like Roberta Flack is singing “Let It Be.” The difference being, when you say “Roberta Flack sings,” I would interpret

that as I’m singing the Beatles songs the way the Beatles sang it. It started out as just me and the piano and I thought that was so beautiful and sacred. And then I had this idea that we should do something based on the world in which we live. I hope that when people sit down and listen to the words to “Let It Be,”—“when I find myself in times of trouble”--it doesn’t mean that it has to be “mother Mary,” it can be some other source that replenishes your spirit and revitalizes you and makes you get up off your butt and keep going. MM: That’s why those songs have endured. Had you recorded this album 10 or 20 years ago, do you think the song selections would have been different? RF: No, because I think you like what you like what you like. I love everything the Beatles have done. It might’ve been different to the extent that I wouldn’t have taken liberties the way we took liberties with George Harrison’s song. I’m committed to the music that moves me that I can interpret in a way that people say, “that’s Roberta Flack, I love the sound of her voice, I love what she’s done to the songs.” MM: The album closes with a live recording of “Here, There, and Everywhere,” from 1972. Where have you been keeping it all this time? RF: It was a live concert that I did at Carnegie Hall and we just snatched that one off of the reel because it was a Beatles song. It was a song that I was [already] doing in my live performances. As a classically-trained student of classical piano--at that point in my life--my dream was to be at and to play Carnegie Hall. And here I was at Carnegie Hall playing “The First Time Ever I Saw Your Face”--songs that were in my repertoire at the time. When we had a chance to stretch our limbs, I said I’m going to do “Here, There and Everywhere.” It worked and it was wonderful. MM: Reading what Yoko [Ono] wrote in the liner notes, it’s clear that she gave you her blessing for the project. Was it important for you to have that? RF: [Laughs] Yeah, as opposed to something else, whatever that might’ve been. Yoko and I have a very nice relationship. I had just come back from Iceland with her where she goes every year since John’s death to light the [“Imagine”] Peace Tower, this incredible light that goes up to the sky. She lights it on his birthday, [and] it stays lit until the [anniversary of the] day he was assassinated. I was so moved by her invitation to come. A lot of serious music industry people were there, as well as people who love her son, Sean--young musicians around his age. I was overcome and overwhelmed. I thought, “I’m going to ask her.” She had heard a little bit of the album and she said, “Oh Roberta, I like that.” When I asked her, I fixed my mouth--as my mama would say, “Did you fix your mouth,
girl, to ask her?”--and I asked her to write the liner notes and she sent me back a note saying, “I’m tired, but I’ll listen to the album and I’ll make a comment.” And she did, it was just wonderful. MM: When I moved to Washington DC for grad school in the mid1980s, I went to “Mr. Henry’s” on Capitol Hill, where you performed early in your career. Was that where you developed your gay following? RF: Yes. The people in my audience were gay and straight and undecided--especially back in the 60s--and telling and not telling. But it was wonderful because the one thing that we all had in common was our love for music. That’s how I got “Ballad of the Sad Young Men.” Somebody came up to me one day and said, “Roberta, there’s a show on Broadway called “The Nervous Set,” and here’s a song from it, “Ballad of the Sad Young Men.” And I embraced it and embraced me back. I got a lot of response from my audience for that song. It would not have had the kind of reading that I was able to give it had I not had that kind of response from my audience. People would come up to me in tears. I didn’t get paid:[a salary], I had a little brandy snifter [on top of the piano for tips], and they would come up to me and say, “I don’t have any money, I get paid on Saturday or Sunday and I’m going to give you some money when I see you next time.” And they meant it. It was a great education for me. At Mr. Henry’s, I had a chance to sing for the first time. I had a chance to sing “Let It Be Me” and “Until It’s Time for Me to Go.” Please! There was not a dry eye in the house when you sing songs like that. I had people doing my hair for free, making my clothes. These were young, primarily gay artists who wanted to be in on it, who wanted to help, and they did. I began to be aware of what being in this business meant. MM: In 1982, you recorded the theme song to the gay-themed movie “Making Love,” which could be considered a daring move at the time. RF: It was a daring move to make the movie. We were still living in the dark ages. I don’t know if it was “don’t ask, don’t tell” or “don’t think about it.” As an artist, you took chances if you did something like that. People have asked me, “Roberta, what were you thinking when you recorded ‘The First Time Ever I Saw Your Face?’” I was actually thinking about my cat. I had come home after my first job away from Washington, DC, at a club in Detroit, and my cat was in the yard, dead. I was so torn up about it. It was a little black cat that I had named Sancho Panza. I really adored that cat and he adored me. When you can sit down at the keyboard or at whatever your instrument is and sing the song that interprets exactly what you feel-but at the same time, giving everybody else the chance to say “I know what you mean.” MM: Making it universal. RF: Yes! And that’s what music is. My point is there’s nothing sacred about creativity. Once it becomes something that’s in the universe, that palpitates and has heartbeat and pulse, it’s up for grabs. The thing that makes being a musician and being a person with creative energy and spirit so wonderful is that there’s a great big part of it that you can smother and hold close to your chest and say “this is mine,” this is the way Roberta Flack sounds. But there’s also part in all of that that makes you feel like these kids on “American Idol” or “America’s Got Talent” or “X Factor,” because they want to do it too! That’s the universality of it. The point is everybody can understand it and move their heads. MM: Have you sung at any same-sex weddings or civil unions? RF: No, but I would sing [if invited]! If you know somebody who’s getting ready for one, [tell them] “have I got a surprise for you!” MM: Well, I just had mine on Sunday. I wish I would have known. RF: You should have waited! You could have called me and asked me. Well, congratulations to you, my love.

The Most Elegant Sunday Brunch in Fort Lauderdale ichele’s Dining Lounge, a haven of fine food and jazz music that recently celebrated its first anniversary on Oakland Park Blvd., has added a classy Sunday brunch to its assortment of weekly culinary events. With a single stroke of his wide-blade spatula, Executive Chef Michael Kridlow has re-written the stylebook for all-you-can-eat Sunday Brunch in the “Venice of America.” The atmosphere at Michele’s is refined sophistication— the beige and chocolate seating mixed with its soft lighting and dramatic water wall. Jazz music wafts through the place, caressing the mind into cool fantasy, removing any suggestion that you are still in Oakland Park, Florida. Think upper-Eastside Manhattan and you’d be closer to the truth. There is no denying that stretched before you is a colorful and elegant display of taste temptations. The Caesar and Mixed Green salads alone are so garden crisp that we were tempted to check under the serving table to make certain the lettuce wasn’t still rooted in the ground. While a smoked fish dip with flat sesame crackers was too light on the smoke and the fish to create much of an impression, any disappointment was quickly replaced at the first taste of the colossal shrimp (the size of small lobsters) with a cocktail sauce that smacks of homemade and delicious. You’ll want to grab a plateful, since no one is counting—but save yourself. This is only the start of the foodarama second-to-none. There are delicious bowls of penne pasta tossed with spinach, red onion, tomatoes and olive oil, in a mix so delicate as to demand seconds. Three chafing dishes are keeping watch next in line, and are tempting your taste buds with flat sausage, bacon, pork links with peppers, ham and onions, plus delicious potatoes, light and roasted in a secret seasoning that dares you to fill your plate. After all, you have to save some room for the smoked salmon, sliced paper thin (with chopped egg and capers on the side), or the oysters on the half-shell, wet with flavor and just-shucked freshness; the cheese platter with an assortment of imports; and assorted fresh fruit. We returned to our corner table in time for our server Darren to ply us with complimentary champagne,

mimosas and some bloody Marys that may just be the best we’ve ever tasted (it’s the celery salt, we’re told). No sooner had we convinced ourselves that we had died and landed smack in heaven, then we spotted the “real” menu. No kidding. The feast had just begun. Chef Kridlow, it seems, had been marinating his prime rib for the past two days, in expectation of Sunday brunch. Add that to your plate and plan on moving right into the kitchen—it’s that good, served medium rare and drizzled with au jus. And as if that’s not enough protein, order from the omelet menu: ham, ham and cheese, Western (with ham, pepper and onions) or vegetable (a scrumptious mix of broccoli, mushrooms, peppers and onions) and expect to receive a portion that is big enough to split three ways. Lest we forget: for the truly gluttonous, there is also Eggs Benedict on the menu—or rather, a menu just for Eggs Benedict. In this case, the regular (with Canadian bacon), Michele’s (with beef tenderloin—our favorite), Country (with a sausage patty) and Blackstone (with tomato and bacon). To be honest, the Hollandaise sauce overpowered the dish, so if Eggs Benedict is on your wish list, order yours with light sauce and you’ll be very pleased. An assortment of chocolate mousse, whipped creams, strawberries and assorted pastries complete this indulgence, leaving only the belt to be loosened and the check to be settled. Yes, there is a price to be paid for this pleasure. In this case, it’s $29.95. That’s a healthy chunk of change for an extended lunch, to be sure. But, take it from us, it’s the best deal in town—and the most elegant. Enjoy it from 10 a.m. to 2 p.m., and tell them Mark Magazine sent you.

I’m too young to remember the wild 1960s portrayed in TV’s “Mad Men,” or to have enjoyed the original vinyl records of Frank Sinatra and the Rat Pack, but I am a Marilyn-junkie so I do have a fully-stocked CD collection of the greatest hits of Frank, Sammie, and Dean, and an equallystocked-and-loaded home bar. I like knowing that a fully-stocked bar waits for me after whatever a given day holds: schmoozing a client, romancing a squeeze, impressing a boss, or enjoying a friend. You don’t need to live in a Space Age-inspired midcentury home to have what it takes to entertain the Rat Pack on the fly. It does require an investment to stock a home bar, but you can start small, with a few “pricier” selections backed up by well, or non-name, brands. Don’t go overboard and get more booze than you could ever hope to pour. This is especially helpful if you are just getting familiar with the art of mixing drinks. A good rule here is that whenever you entertain, email your friends first and ask them to tell you their favorite cocktails. This will allow you to get a general idea of what are most popular among your peeps, and you will learn about mixology in the process. ALCOHOL Bourbon whisky: The essential American whisky, especially for the Southern gentleman, it is great for both sipping by itself or as an ingredient in numerous classic cocktails. Jim Beam and Wild Turkey are two standout brands of this spirit, which has been produced in the U.S.—and only the U.S.—since the 1700s. (Incidentally, although Jack Daniel’s generally meets the legal criteria to be classified as a straight bourbon, the distillery disavows this classification and markets the brand simply as Tennessee whisky, not Tennessee bourbon.)

Gin: The base spirit in many popular cocktails. Gin comes in four varieties: London Dry, Plymouth, Old Tom, and Jenever (or, for the English-speaking world, “Holland Gin”). Start your bar off with a London Dry gin, adding a Plymouth later. Vodka. Seriously, the foundation of Modern Drinking, it is excellent for doing shots or for mixing into popular cocktails. Distilled variously from potatoes, grains, and sugar cane, vodka doesn’t have a strong color, taste, or aroma, which is why it makes the perfect mixing liquor. Different vodka brands do have different textures. Absolut, for example, has a silky, oily, texture while Stoli (“Stolichnaya”) has a watery, medicinal finish. For many of my friends, Grey Goose is the standard. Things can get a little complicated when you throw all the flavored and infused vodkas that are available on the market. My boyfriend and I have sweet tooths (okay, only I do), so we keep “Cake,” “Marshmallow,” and “Whipped Cream”-flavored vodkas around for those times when he (I mean, me) wants to imbibe his (my) comfort food in a glass. Rum: This tasty staple of the American Revolution comes from the Caribbean and is distilled from molasses. Of the two kinds, dark rums are best in punch-type drinks, while light rums are best for mixing cocktails. Start your bar with a light rum brand and add dark rum when you throw a party and serve punch. Scotch whisky: I’m like Alec Baldwin’s character on “30 Rock”: I enjoy staring intently out a window, holding a glass of scotch in hand. It puts me in touch with my inner manly self. As the name implies, Scotch is whisky that’s made in Scotland. The first written mention of Scotch is in the Exchequer Rolls of Scotland for the year 1495, in which John Cor, a friar, was named as distiller at Lindores Abbey in the Kingdom of Fife (friars and their stills!).
Scotch is divided into five distinct categories: single malt, single grain, blended malt, blended grain, and blended. Confused? Add to that the fact that there are two basic types of Scotch, from which all other blends derive: single malt Scotch whisky, produced from just water and malted barley, and single grain Scotch that--in addition to water and malted barley--may include whole grains of other malted or unmalted cereals. “Single grain” here means that the Scotch was made at a single distillery. (Ironically, making a “single grain” requires using a mixture of grains.) Among the most popular Single malt Scotches are The Dalmore (12 and 15 Year), The Macallan (12 Year), The Glenlivet (12 Year), Glenfiddich (15 Year), and Laphroaig (10 Year). I especially like this last one as Laphroaig lacks the “kick” evident in many Scotches (and certainly the ones on the lower rungs of the Scotch ladder. Did I mention I’m a bit of a Scotch purist? If you can afford it, get one of the nicer Scotch brands mentioned here, or if you’re not too concerned (or not entertaining an over-35 crowd), get something with a recognizable name and you should be fine, Precious. Tequila: Taking a trip anytime soon to Margaritaville? This is a staple for most bars, and especially for the under-35 set. The type of tequila you stock really depends on how you plan to use it. Get “gold” tequila if you plan to make mixed drinks, like margaritas. It’s usually cheaper. For straight up shots, “silver” tequila is the agavebased drink in its purest form. Other Liquors: Since you’re likely starting small, don’t get too caught up in the minutiae of Canadian or Irish whisky, or infusions and boutique liqueurs such as Hpnotiq, Hennessy, and the like. You will eventually experiment with and add these, but in this case, to start, don’t go bananas. Before I host a party, I usually have a bottle or two of wine and some craft brews on hand. And because a good host is always thoughtful of ALL his guests, have some craft soft drinks and other non-alcoholic beverages on hand. MIXERS These will depend on what you are stocking in the hard drinks’ portion of your bar. Mixers include such basics as club soda, tonic water, cola, Sprite or 7-Up, ginger ale, and orange, cranberry, tomato, and pineapple juice. Angostura bitters aren’t actually a mixer, per se: splash it in to add some extra flavor to certain drinks.
GARNISHES It wouldn’t be a “fabulous” home bar without these edible decorations to give your drinks some visual assist. Your choice of garnishes will depend on the drink. Gin-based cocktails use olives and onions. Tequila drinks often include a citrus garnish like a lime or lemon. Never add a garnish to Scotch. Ever. In the broadest sense, garnishes include the following: Cocktail olives and cocktail onions, horseradish, limes, lemons, Tabasco sauce, salt, pepper, sugar, and ice. Ideally, you should prepare or put out your garnishes on the day of a cocktail party (nothing says you’re a considerate and on-top-of-things host like fresh fruits—wink). GLASSWARE AND ACCOUTREMENTS An apothecary of invigorating elixirs requires the right tools. Some basics: martini glasses, rocks glasses, red and white wine glasses (yes, Sugar, there are two different kinds), highball glasses, beer mugs and pint glasses. You’ll also want to have a martini shaker and strainer, as well as a supply of napkins and toothpicks for the olives and onions. A good mixologist drink recipe book will also come in handy. Google this, as there are a million titles and you can get “Mixology for the Addle-Pated” or something similarly-titled on-the-cheap online. MUSIC Three words: Francis. Albert. Sinatra. Invoke that hipster loungey vibe with Frank, Dean, and the other classic American crooners, and throw some lounge and electronic music into the fray to mix things up. PARTING SHOTS Something to keep in mind as you build up your home bar is the amount of space you have allocated to store all this booze. If your space is cramped, keep the bar “inventory” to a few different liquors. Remember, too, that you don’t need to keep enough liquor on hand to paralyze the Joint Chiefs of Staff. If you don’t have a party coming up, there’s no reason to stock enough ice in your fridge to sink the Titanic. Now drop a few rocks in a glass, and pour yourself two fingers of Laphroaig. You’ve earned it, baby!

Castles in the Clouds Part I:
tremendous pride in facilitating an all-encompassing sojourn far back in time while dutifully attentive to the whims and wants of today’s discerning and pampered traveler.

Ashford Castle Once upon a time, in a reality of fairy tales and fantasia, medieval nobility and majesty prevailed throughout the emerald green island today known as Ireland. During the High Middle Ages, the Norman invasions gave way to settlements such as Ashford on the island’s far west, peppering the landscape with towering castles that epitomized power and period-appropriate ostentation. Nearly 8 centuries after its naissance in 1228, Ashford Castle (ashford.ie, 1-800-346-7007) triumphs as a functioning hotel and historical link to Ireland’s tumultuous past, a splendid adaptive reuse of the fortified residence built by the Anglo-Norman de Burgo family following their defeat of the native O’Connors Connaught. (History lesson now over. Whew!) A top-notch hotel in every facet of design and service, Ashford Castle keeps history in style deep in the remote stretches of western Ireland, about a two-hour drive from the nearest major airport, Shannon. Any one individual cannot, and should not feel they must, fulfill every sexual desire for a partner. I believe most of us would much prefer that a partner use pornography and masturbation over choosing sexual infidelity. Sometimes mutual masturbation with pornography can be very exciting and gratifying. That being said, if your inadequacy and feelings of infidelity are due to diminished sexual attention to you, this is unlikely due to the pornography and masturbation. It is much more likely that the use of “habitual” porn and self-sex is the result of a decreased desire for sexual connection within the relationship. Lack of or diminishing desire for a partner is the number one reason couples come in for sex therapy. This diminution may be due to a multiplicity of factors, but the primary reason for diminishing intimacy is a lack of communication about feelings. If you and your 54 | mark magazine
boyfriend do not regularly and continuously address the conflict, hurt, anger, and frustration in your relationship, you are building a barrier to intimacy that will inevitably result in poor sexual relations. Talk about your feelings about the sexual relationship with your boyfriend. An inability to communicate our needs is the primary cause of many couple conflicts. If you are not feeling resolved through one-on-one talking, I would suggest counseling as a way to facilitate better communication and improve the emotional and sexual intimacy in your partnership. ust when you think that you can hardly lift another pound for one more rep of your last set, that’s when you need to give it just a little more. This is the point when real muscle growth can take place if you are up for the challenge. That’s the idea behind forced repetitions – one of the best ways to power through a plateau and gain size. A knowledgeable spotter, workout buddy, or personal trainer can help you go the extra mile and assist you when you lift heavy weights. By far the best partner training strategy is forced repetitions. This mode of training is based upon the idea that when you lift weights, the final few repetitions of your last set, which you have to summon all of your energy to complete, are the most beneficial, because the muscles targeted are being pushed to exhaustion. While one guy does the lifting, his partner places his hands in the proper position to help him finish one or two more reps he couldn’t have completed on his own. If you’ve got a partner you can count on, try this program once a week. Using this strategy on a daily basis is too much and may result in overtraining and injuries like tendonitis. You’ll see gains in muscle size and strength in no time if you are safe and consistent. Here’s an example of a forced reps exercise for each muscle group. Barbell Squats: Grasp a barbell on the upper back, with feet shoulder width apart. Lower until your thighs are parallel to the ground, pause, then rise to starting position. At the end of your last set, have a partner stand behind you with hands around your torso and have him assist you in completing 2 more reps. Squats are one of the most effective exercises for the lower body, but make sure to keep you back straight and your toes pointed outward as you squat down. Triceps Skull Crushers: Lie on a bench and 58 | mark magazine
grasp an EZ curl bar at arms length over the chest. Lower the bar to just above your forehead, pause, then return to starting position. For your last set, have a partner stand over you and help you raise and lower the bar for 2 more reps. Biceps Partial Curls: Grasp an EZ curl bar with arms bent at 90-degree angles. Curl up until biceps meet forearms, pause, then lower to starting position. For your last set have a partner face you and help you curl 2 more reps. Barbell Bench Press: Lie face up and grasp a barbell with arms bent at 90-degree angles. Press it overhead, pause, then return to starting position. At the end of your last set have your partner stand over you and help raise and lower the bar for one or two more reps. Pull Ups for Shoulders & Back: Grasp an overhead pull up bar and pull yourself up so that your chin is at or above the bar, pause, then lower yourself. At the end of your last set have your partner grasp your feet and help you do just a couple more reps. Forced repetitions once a week for each muscle group will really maximize muscle size and strength. Break through that plateau in 2012 and tap into your inner brute.
