The Hottest Winter in the World Expected to Reach a Boiling Point

10,000 DESCEND UPON SOFLA FOR A SIX-DAY “PARTY WITH A PURPOSE” MIAMI BEACH — South Florida is preparing itself for an invasion by the most fun-loving army ever to storm a beach. Approximately 10,000 guests from the corners of the globe will pack their Speedos and cocktail party best as Winter Party Festival 2012, descends upon Miami Beach, Wednesday, Feb. 29 through Monday, March 5, with more than 20 pulse-raising events, including nine dance parties with world-class DJs and entertainment. Beyond the dance parties, Winter Party Festival features shopping, art and culture, a jazz brunch and cocktail receptions, all dedicated to fundraising for local and national lesbian, gay, bisexual and transgender (LGBT) equality efforts. For 2012, the can’t-be-missed Beach Party will feature legendary DJ Joe Gauthreaux spinning on the sand along famed Ocean Drive. Additional highlights of this year’s Winter Party Festival include the Under One Sun Pool Party and Boiling Point, a Sunday night dance party at the legendary Cameo nightclub with entertainment by Gay Village, Italy’s largest award-winning public event. The National Gay and Lesbian Task Force (NGLTF), produces the annual Winter Party Festival to raise fund for building a political power base, taking positive action, and creating meaningful change for the LGBT community. A majority of the net proceeds generated from Winter Party Festival go to work in South Florida through grants administered by The Miami Foundation, while the remainder supports the Task Force’s efforts nationally. Since assuming responsibility for the events in 2004, the NGLTF

has provided nearly $1.2 million from proceeds of Winter Party Festival and the Miami Recognition Dinner to LGBT organizations in South Florida. pple plans a summer release for their new version of OS X, which they have cleverly codenamed Mountain Lion. This new Operating System includes cool new features, like upgrades to Address Book, Mail, and the soon-to-be-renamed iCal (which will be redubbed Calendar—catchy, no?). Last week, Apple released a preview of the software, introducing several new features that move it closer to iOS, the software running on iPhones and iPads. These innovations include a new integrated sharing system for “tweeting”-at-a-click, and a unique notifications system. Although Apple is the world’s largest smartphone maker, it remains an also-ran in the PC market. Upgrading the OS is a “smart” way to market more computers. But summer is a long time away, and there are ways to juice up your Mac now. iPhone reminders are one feature that Apple’s new OS X will include. In the meantime, an app like RememberTheMilk is a Web-based and easy-toemploy answer for synchronizing to-do lists between individuals or linked-computers. Based upon Apple’s sneak peek, Mountain Lion will make it a breeze to share nearly anything on Twitter. For use with other social networking sites, AddThis allows you to share on Facebook, Digg, as well as Twitter, utilizing your

Chrome browser. Long the standard by which all OS X notification systems are judged, Growl works with almost every app, including Mail and Skype, displaying short messages when something important happens. Parting is such sweet sorrow: count on this one going “bye-bye” as soon as Mountain Lion hits the scene. No third-party app can send and receive messages using iPhone’s special text message service, but the Messages’ usefulness can be duplicated with some desktop apps, like the old faithful Adium. Otherwise you can download Messages now from Apple. Steve Jobs would want you to. FAX THIS! There was a time when a gay-on-the-go couldn’t function without the ability to fax important docs (I remember when this gay-on-the-go couldn’t function without a beeper, but that’s another column). For about the same price you’d pay to send a fax from a local copy store, you can purchase apps that scan documents, as well as build and export PDF files. Regardless of which app you are looking at, the scanning process for most of them is pretty consistent: take a photo of a page, preferably in good lighting. Scan the image and crop it if you wish before creating a version for sharing. The primary difference between the various apps is the level of ease or difficulty with which images can be adjusted. There are also differences in how the different apps work to export scans to various services such as DropBox. It is a pretty good idea to review the data on various apps so you aren’t overpaying for more than you need. Cost should also figure into this, with free apps such as JotNot Scanner available if you want to get your feet wet, and Apple-friendly programs with an ascending range of prices (if not difficulty), including JotNot Scanner Pro ($2), TurboScan ($2), and Scanner Pro ($7). There’s also CamScanner for Android devices (free for the limited version; $5 for unlimited). Once you get the hang of these, you’ll be just as entitled to your own fax as your own opinions.

DJ Maximus 3000: Tell us something about your roots and your current BOO (Base of Operations). Ray Guell: I was born and raised in Miami. My parents are from Cuba, and although I was born in the States, I consider myself bi-cultural: living and celebrating both cultures. Although I travel a lot, I am enamored of the city where I live, Miami. DJM3K: You were front-and-center during the legendary days of Freestyle. What’s the story with some of your biggest hits? RG: I originally got started performing musical theater while I was living in Los Angeles. When I returned to Miami, I got together with Tolga, who also produced Stevie B and Linear. I wrote some songs and we collaborated on the production of several commercially-successful Freestyle hits. Some of the most successful ones were, “Just Another Lover,” “You Took My Heart,” and “Giving Up.” DJM3K: Do you keep close to your Freestyle roots? RG: Although I am currently focused on my “Tribal House” productions, I make sure that my team includes Freestyle remixes for my diehard fans and the Freestyle community generally. I will never turn my back on Freestyle: it is embedded in my heart. What can I say? That old school kick still makes my heart skip a beat. I have a

huge following of Freestyle fans across the world that I cannot disappoint, from Europe to South America, and, of course, in the US. I am especially drawn to my Brazilian fans, who live and breathe Freestyle music. And I am very drawn to the Brazilian culture as well. DJM3K: You’ve had several tracks hit it big since your debut. Which would you say is your favorite and why? RG: Wow, you really want to put me on the spot. Well, my songs are like my children and each one of them is special to me, and I wrote each one because of what I was experiencing or feeling at the time. Obviously, the commercial hits strike a chord in me, but even those that were not hits or were more obscure are also special to me. “Just Another Lover” jumps out because it put me on the map, and also because I wrote this track when I was a bit heartbroken. That was followed by “You Took My Heart” and “Giving Up.” These were autobiographical at the time. And others: “You’re My Inspiration” and “Let Me Go,” off my “Inspiration” album. I am very fond of that album because it allowed me to record some ballads. I actually thought I was going to be more of a ballad recording artist in my early years, but that took a back seat when I was infected by the “bass kick.” I must confess the kick hit me before that: Disco was huge in my musical development.


DJM3K: Tell us how hooked up with Giuseppe D. RG: I met Giuseppe many years ago, while in the Tolga ‘camp.’ We have remained friends for all these years and I think he is a great producer. And we work very well together. He beats me up in the studio all the time and we argue about everything. [Laughs] In the end, it all comes together. DJM3K: What artists influenced you in the beginning of your career, and who inspires you now? RG: I have an eclectic mix of influences, so I am just going to drop some names. And these are not in any specific order. Donna Summer, Giorgio Moroder, Stephen Sondheim, Celia Cruz, Gloria Estefan, Madonna, Barry White, John Legend, Kander and Ebb, James Taylor, Stevie Wonder, Ella Fitzgerald, Stylistics, Beyoncé, Sade, Pavarotti, David Guetta. Many others. I like to listen to the current string of new artists, and I enjoy a lot of the new up-andcoming remixers and producers. DJM3K: Where can we see you perform next? RG: I will be performing next weekend at PrideFest in Fort Lauderdale and also at the Winter Music Conference in Miami Beach. There are other upcoming performances in New York, Chicago, Brazil, Colombia, Panama, and Ibiza in the summer. DJM3K: What’s next, big picture-wise, for Ray Guell? RG: I am currently promoting my latest release, “You Don’t Know Me.” I am flying to New York City tomorrow for a couple of shows and getting together with Giuseppe D to lay down the vocals for what could be my next release, “Haunting Visions.” I am also writing new music. I will begin working on an independent film shortly—which I am contractually obligated to keep quiet about, but I will say I am very excited about getting my acting groove back on. DJM3K: Tell us your most insane live performance and record label stories, and how can we stay in the know about Ray Guell? RG: [Laughs] There have been many. Most recently, I was in Rio De Janeiro, Brazil, stretching out and warming up with my dancers right before a show when I pulled my hamstring muscle literally seconds before I had to go on stage. The stage had many levels and

the choreography called for climbing up and down all those damn stairs. At that point, no one had any idea what had happened to me, and let me just say I had to be very creative in changing the choreography instantly. My poor dancers had a “WTF?” look on their faces which in retrospect was very funny. It was actually one of the scariest moments I have ever had on stage. I was basically crippled and in a lot of pain during the entire performance. But as the saying goes: the show must go on. As for a record label stories: I am presently recording on my own label, RG Music. Read between the lines. Magical Martinis A

classic American cocktail, the martini is one of the best-known mixed alcoholic beverages, called by writer H. L. Mencken “the only American invention as perfect as the sonnet.” Many variations exist, but in modern practice the martini is a mix of gin and dry vermouth, usually mixed in a five-to-one ratio. That being said, nearly any “adult” beverage can serve as the basis for a martini. Vodka, rum, bourbon, brandy, tequila, sake, and even wine can be used in mixing the concoction that fictional spy James Bond, ordered “shaken, not stirred.”(Martini purists would argue that shaking one’s martini will cause the ice to prematurely melt, giving you a weak drink. The “Savoy Cocktail Book,” written in 1930 by the legendary New York bartender Harry Craddock, prescribes stirring for all of its martini recipes.) A martini’s “dryness” refers to the amount of vermouth used, with a “very dry martini” containing little or no Vermouth. By contrast, a wet martini is drowning in vermouth. The 20th century playwright Noel Coward suggested making the perfect martini by “filling a glass with gin then waving it in the general direction of Italy” (one of the two major producers of vermouth, along with France). Coward, a fan of the dry martini, advocated adding the least amount of vermouth to the gin for a better-tasting drink. A dirty martini contains a splash—or more--of olive juice. The drink was popular with such luminaries and icons (gay as well as straight) as Truman Capote and F. Scott Fitzgerald, not to mention President Franklin D. Roosevelt (who wasn’t gay, but his wife, Eleanor, probably was). Here are a couple of slick and sexy recipes for gin and vodka martinis, as well as a variant that uses a “non-traditional” base for this most traditional of drinks. Enjoy!

The Classic Gin Martini 1 dash dry vermouth 2 oz gin, chilled Pour a little dry vermouth into a chilled martini glass and swirl it around in order to coat the inside of the glass. Dispose of the excess vermouth. In a shaker full of ice, gently swirl or stir the gin before straining it into the glass. Serving suggestion: Garnish with olives, lemon twist, or cocktail onion and add rocks if you like.

Knickerbocker Martini One theory holds this to be the original martini recipe, served by a bartender of the same name (“Martini,” get it?), at New York City’s Knickerbocker Hotel sometime in 1911 or 1912. 2 dashes orange bitters 1 dash orange liqueur 1 oz vermouth 2 oz gin Pour into a mixing glass filled with ice, and stir well. Strain into a chilled martini glass, add a twist of lemon peel, and serve.

Neopolitan Martini 1 oz vanilla-flavored vodka 1 oz orange-flavored vodka 1 oz orange liqueur 1 splash lime juice Pour vodka, orange liqueur, and lime juice into a mixing glass with ice. Stir and strain into a chilled cocktail glass, and garnish with an orange peel.

Cosmopolitan Martini 1/2 oz orange liqueur 1 oz vodka Juice from ½ of a lime 1 splash cranberry juice Pour all ingredients in mixing glass half filled with ice, shake and strain into chilled martini glass

Saketini I recently enjoyed a delicious variation of this tasty drink at the popular Galanga in Wilton Manors. Try this one on for size. 2 ½ oz gin 1 ½ tsp sake rice wine 1 cocktail olive In a mixing glass half-filled with ice cubes, combine the gin or vodka with the sake. Stir well. et’s face it: the Gayborhood--a Mecca for nightlife, outdoor activities, guest houses, and living La Vida LGBT--can sometimes feel like a two-square-mile Sushi Emporium. I realize that this is a “high-class” problem, but when swimming in a sea of seafood doesn’t quite feed the need, it’s comforting to know that a familiar friend stands ready—at all hours, no less—to provide the right guilty pleasure at the right time. Courtyard Café is the flagship restaurant of Shawn Bombard and Nick Berry’s Comfort Food Empire. Open for five years, the café offers a wide selection of traditional American cuisine and bistro fare, with breakfast, lunch, and dinner cooking fresh at all hours, including all 24 of them on Thursdays, Fridays, and Saturdays. In an extremely competitive “gay ghetto”-market, the business duo of Bombard and Berry (known to friends and likewise “branded” as “Shawn & Nick”) have to offer potential new customers an enticement to come through the doors and regular patrons a reason to come back. There winning formula proves to be a menu that is both familiar and fluid, coupled with late hours, friendly service, and the comforts of home cooking. A tour of the week’s dinner specials at Courtyard Café include their Monday Night Burger Madness, with 14 “guest” burgers joining their regular dozen classic-takes on the American, and Gayborhood, fave. That’s 26 mouth-watering burger varieties ($7.50-$8.26)--and a free soda or iced tea with the purchase of one between 4 and 11 p.m. On Tuesdays, your hosts invite you-plus-one to a $20 dinner-for-two including your choice of appetizers, and entrees including delicate Lemon Pepper Haddock, succulent Yankee Pot Roast, a

Castles in the Clouds Part II: Glenapp Castle and the Edinburgh Stopover

C

ontinuing with last week’s castle theme, we’ll examine the jewel of coastal Scotland, Glenapp Castle, and the magic city that lies between all of these storybook fortresses – Edinburgh.

Glenapp Castle High on the lush hilltops of Ballantrae, Ayrshire, gazing over Scotland’s pristine southwestern shores, Glenapp Castle (glenappcastle.com, +44-1465-831-212) embodies the mystique and the magic of the illustrious British castle experience. Glenapp’s 36-acre estate is a multihued wonderland of lavish walled and tiered gardens, reflection ponds, extensive moss-clad forest trails, and breathtaking panoramas of the Irish Sea. T

here is no doubt that our thoughts, emotions, attitudes and moods, as well as control of our nerve and muscle function, are all centered in the brain. The food we eat directly affect all organs in your body, but none more so than the brain. The link between a poor diet and poor emotional health is not only real, it’s common. Deficiencies of certain vitamins and minerals are extremely deleterious to the body, and even more so to the brain. A varied diet of complex carbohydrates will supply the brain with amino acids to help it perform at its peak function. Eat too few, and risk depression, headaches and fatigue. Because of the fortification of grains and abundance of food in industrialized countries, we don’t often see mental and emotion disorders due to famine. Unfortunately, there are still plenty of cases of mental and emotional disorders due to poor diet, anorexia, obesity and people with special nutritional problems, such as alcoholics, however. Having any one of these disorders can severe affect your moods and the way you act and react towards others. All of the most basic brain and body functions in life are sustained by oxygen, water and food. Messing with your diet can cause these primal functions to literally short circuit. The brain works by chemical, electrical and hormonal interactions. Chemical neurons in the brain communicate messages constantly to each other. These compounds are synthesized as needed from amino acids and other components consumed through the diet. Tryptophan, an amino acid, is found in all complete proteins such as meat, eggs and milk to aid the

brain in producing serotonin. This neural transmitter regulates quite a few functions, such as sleep, pituitary hormone secretion and pain reception. Despite what you may have heard, there are no truths or evidence to prove food additives or junk food instantly affects your mood and the way you behave. Even with the justification of the “twinkie defense,” your diet does not control your immediate actions and reactions. Only a poor diet prolonged over time can create the deficiencies related to emotional and behavioral disorders. But don’t think it can’t happen to you. It takes less than 90 days to see a significant change in mood and behavior if you deprive yourself of certain vital nutrients. Lacking B vitamins can cause memory loss and various other behavioral and emotional changes in a very short amount of time. Eating a variety of seafood, dark green leafy vegetables, nuts, liver, eggs, soybeans, whole grain breads, cereals, and pastas is a great way to give the body and mind what it needs for fats, amino acids and B group vitamins. Cutting down on sugary carbohydrates and replacing them with high protein at lunchtime is especially helpful. Caffeine is one of the best-known mood altering dietary items. This stimulant can be found in teas, colas, chocolate and particularly coffee. Alcohol is the next best-known mood-altering substance and the most toxic on the organs and brain. Be aware that alcohol depresses many functions of the brain, causing depression, anxiety, sleeplessness, and unexpected irritability. Knowing that what goes in your mouth in the way of food can directly affect what may come out of it in words, be wise in what you choose to eat. A varied diet of healthy foods will keep your moods and energy up. Choose poor ingredients, processed foods, or nothing at all, and be prepared for low energy, moods swings, anxiety, sleeplessness, and possible depression. P.S. If you must drink—eat. The merry part will handle itself.
