EDITOR
HELLO ! I am the Editor of Spotlight Media, the company that produces this fine magazine. I am an MSUM alumni. I LOVE food, music and running (which is really helpful considering I love food.) While we’re on the topic of food (which is, coincidentally, one of my favorite topics) let’s talk about food in Fargo-Moorhead.
It’s amazing that I haven’t doubled my weight after doing the research for this month’s magazine. This month we discovered 50 of some of the tastiest meals in the area. These meals ranged from lobster mac n’ cheese to peanut butter pizza. Needless to say, Fargo and Moorhead are food cities. (Afterall, we need something to do from November to April. Eating seems like as good as anything.)
DON’T WORRY Drago is still heavily involved in this magazine, but I get the honor of taking over this editorial. Although I’ve been acting as editor of Fargo Monthly for a while, let me introduce myself.

NP and 1st Ave. Switch-up
NP and 1st Avenues have functioned as oneway streets for decades. This year, it’s all going to change. Both streets will be converted to a

2+1 configuration, Gilmour said. NP will have two lanes going east, one heading west. On 1st, the setup will be mirrored. Work to install the new “intelligent” traffic lights was scheduled to start in March. Gordon

Hybrids for MAT Bus
Four more buses are joining the MAT Bus fleet. According to Gilmour, each newly-designed bus runs on a diesel-hybrid engine, is 40-feet-long and came with a price tag of $640,000. These new buses will be put to work on the most crowded routes, especially those connecting NDSU to Downtown Fargo.

Fargo’s First Panera
This fall, Panera Bread, a bakery-style cafe, will open its first North Dakota eatery near West Acres in the former Chili’s location. The Fargo Panera will feature newly designed production areas, allowing patrons to watch dough being shaped.

New Downtown Apartments
Want to live Downtown? Two new apartment buildings are on the way. One building, The Mark Apartments (Roberts St. and 4th Ave. N), will start leasing units in June. Construction is scheduled for another apartment complex on the south side of NP Ave., near the Plains Art Museum. (Contact JM Rentals for Mark rental information.)

University Dr. Bike Lane
This spring and summer, the city will finish the University Dr. bike lanes, further connecting NDSU to Downtown. According to Gilmour, University was wider than it needed to be, so the lanes were easy to add.

Mickelson Field Levee
When the Red River floods, a temporary levee usually needs to be built along a section of Oak
Street. This blocks traffic, creates headaches and leaves a big mess to be cleaned up later. The City of Fargo plans to build a permanent dike using part of Mickelson Field this year, said Gilmour, as long as a FEMA grant comes through.

I-94 Walking bridge
It’s hard not to notice the walking bridge straddling I-94 near the University Dr. exit. Sometime this summer the light blue overpass is going to be repainted to the Bison favorite... forest green. Some lanes on I-94 will be closed during the project.

Veterans Blvd. Construction
Veterans Blvd is a five-lane corridor connecting South and West Fargo, except for one section where the road narrows to two lanes. The boulevard will be closed from 32nd to 40th avenues in order to be widened and match the rest of the street. Gordon said the construction should be finished in late August.

Water Treatment Expansion
What does it take to upgrade a city's water treatment plant? For Fargo, it will be three years and $96 million. Gilmour said the project will treat an extra 15 million gallons per day and more efficiently purify the water while removing minerals.

New Sanford Hospital
Sanford is hard at work constructing their South Fargo hospital. "It will be 10 stories, and about 900,00 square feet, total... about the size of West Acres, I think," said Gilmour. These numbers are after the original plan was adjusted. Now, the clinic will stay on Broadway, and the new building will be hospital-space.

Kipp and Tony are, in a sense, heading up the rap scene in Fargo and they hope to keep on rocking for years to come.

Tony the Butcher Unapologetic Lyrics
Tony’s lyrics mean something to him. He always writes from the heart and hopes that other people might find something special in his lyrics. “I try to get pretty deep, where I say one thing but it has two meanings. It always means something to me. I don’t just say words to say words.”
A Crazy Name
Although Tony is actually a butcher, it took him a long time (and a little help) to figure out his stage name. At first he used cheesy stage names like MC Translucent. That’s when Kipp stepped in. Whenever they were at a party together, Kipp kept introducing him as Tony the Butcher. The name stuck.

Unpredictable shows Although they’ve been doing it for four years, Tony still feels like he’s learning everyday. “It’s all a big, long process… I’m still learning. It’s never ending.” And even though they have a blast on the stage, people can’t forget about the work that goes into every show. Countless hours of promotion, organizing, practicing and numerous other aspects that people would never think of. Most performers have booking agents who handle these tasks; they’re left to handle it themselves.

Kipp’s not your stereotypical hip-hop star. He doesn’t do any drugs and rarely drinks. This alone separates him from many of the other rappers. This can work out in Tony’s favor though. “I do like the fact that Tony does like to drink a lot because in the environment that I’m in with the shows, people are like ‘Yo! Here’s a drink for ya bro.’ I’m alley-ooping drinks to Tony.”

Kipp and Tony joined together four years ago but Kipp has been performing for the last ten years. Tony constantly attended his shows and he knew Kipp pretty well before teaming up with him… We’ll let Kipp tell the story of how they became partners. “One night he was drunk at this party and he said, ‘I got this verse.’ I get kids trying to rap at me so much that my patience was thin… He gave me this rap that we perform to this day. It was this “Black Hoodie” song. I was like, ‘Damn dude, you definitely got something there.”

Kipp has some wild stories to tell. Those stories are what most of his raps are based on. For example, on a way to a hip-hop show, a regular at most of their shows confessed something while drunk, “I’m probably an alcoholic because of your shows.” That affected Kipp and he wrote a rap about the experience. There was also the story of the girl that dumped him… literally. (You’ll have to ask Kipp to tell that story though.)

Portraits of Conductors
What kind of search? A search for their new conductor. This year marks the 82nd year of the Symphony and the search for their sixth conductor. “Searching for a new conductor is a three year process,� explained Linda Boyd, Executive Director. The search starts out by putting together a committee, which is made up of six musicians of the orchestra and five community or board members. There were 140 applicants from conductors across the world that were narrowed down to 30, then to 11 and finally, five remain. Pending smooth sailing, the new conductor will be announced in late spring. Here is a look at the candidates for the next conductor of the FM Symphony.

George Hanson obtained his formal training at the Vienna Academy of Music, the Curtis Institute and Indiana University, as well as Concordia College, right here in Moorhead. He served as the resident conductor of the Atlanta Symphony, assisted at the New York Philharmonic and led the Tucson Symphony Orchestra to international acclaim. Not only is Hanson a great conductor, he is also a popular speaker, television host, recording artist and pianist. He has worked with Yo Yo Ma, Tony Bennett and rock group, R.E.M, which brought Hanson “Triple Platinum” recognition.
Christopher Zimmerman’s musical journey started with his Bachelor of Arts in music at Yale and he later earned his Masters from the University of Michigan. Traveling the world, Zimmerman has conducted the Shenyang and Xiamen Symphony Orchestras in the People’s Republic of China, and was Music Director of Eleazar de Carvalho Summer Festival in Brazil. He also has a grasp on education, holding the Primrose Fuller Chair of Orchestral Studies and Music Directorship at the Hartt School in CT for ten years. In July of 2011, Zimmerman was chosen as the first prize-winner of the “American Conducting Prize” for a professional orchestra.

David Itkin’s exciting career has taken him to 44 states across the U.S. and 15 countries in Europe, the Middle East and Asia. He is not only an experienced conductor, but also a radio personality and speaker. Itkin has served as the Director of Orchestral Studies at the University of North Texas, Music Director and Conductor of the Arkansas Symphony Orchestra and Music Director of the Birmingham Opera Theatre as well as the Lake Forest Symphony Orchestra in Chicago. He was recently appointed Conductor Laureate of the Arkansas Symphony Orchestra following a 17-year tenure. Itkin was also made Honorary Lt. Governor for the State of Alabama for outstanding service to the Arts.

Darryl One started his journey at Illinois State University for mathematics, but quickly changed his area of study to music. He received his Undergraduate and Masters degrees in composition and later his Masters in conducting from Indiana State University. One is an arranger, composer and is committed to education, serving as the Music Director for the Rochester Philharmonic Youth Orchestra, conducting many all-state youth orchestras and being a professor at the University of Rochester and Stetson University. One founded the Modesto Symphony Chorus and began an annual local talent search in Modesto, CA called “Symphony Idol� focused on promising young musicians.
Kelly Corcoran got her Bachelor of Music in vocal performance from The Boston Conservancy and her Master of Music in instrumental conducting from Indiana University. She is originally from Massachusetts and was a member of the Tanglewood Festival Chorus for more than ten years. Corcoran has been all over the U.S., conducting in Colorado, Detroit, Houston, Memphis, Milwaukee, National and Utah Symphonies, the Louisville Orchestra, Naples (FL) Philharmonic, Canton Symphony Orchestra in Ohio and Orquesta Sinfonica UNCuyo in Argentina. She is also the founder of the Nashville Philharmonic Orchestra.
The FM Symphony is composed of local musicians and even some students. Auditions are held once a year. Some of these dedicated musicians travel from the Lakes-area and Grand Forks for rehearsals and performances. Most musicians have full time jobs in addition to being on the Symphony roster. The FM Symphony Orchestra brings in large crowds, anywhere from 1,200 to 1,700 people between two concerts in a weekend.

It’s a challenge running a restaurant. There are the endless hours in the kitchen, constantly having to order supplies, double checking the books or doing one of a million other tasks that must be done to successfully run a restaurant. Now imagine trying to manage eight restaurants. Well, that’s exactly what Dave Scheer and Keng Dechawuth are doing. These two are the head of the Scheer Group. You may know them better as the owners of Drunken Noodle, Thai Orchid, Wasabi and four other restaurants. Here’s their story.

THE BEGINNING Dave Scheer is a well-travled man. He worked as an engineer for many years and spent a majority of his life traveling around different countries. One day, while he was living in Germany, he was eating at a restaurant with some friends who were traveling to Thailand the next week. Scheer decided to join them. While staying at a bed and breakfast, a woman came in from her morning run and it was love at first sight. That woman became Scheer’s wife. Fast-forward several years, and many different countries, then they found themselves in Fargo. Once he came to Fargo, Scheer helped renovate the Theatre B building to what it had been like in 1882. In 2005, he found himself helping a friend open up Thai Orchid. That’s when Dechawuth became involved. After a few years they opened up LeeLa Thai and continued to grow.
BRINGING THAILAND TO FARGO One of the main purposes of their restaurants is to bring people experiences they might never have had. That’s why Scheer and Dechawuth are always traveling and trying to bring culture and originality to each of their restaurants. “We don’t just want to open the restaurant for the food side but we want to bring people experiences so we travel a lot and bring those experiences. We try to get people to have more culture, to learn the differences between the cultures. Our restaurants, like the uniforms, we want to express what’s the culture and why people eat this.” A majority of their restaurants are based on Thai cuisine. For example, at Thai Orchid they serve dishes like Roasted Duck Curry, Choo Chee Salmon and Crying Tiger.

CHALLENGES OF THE RESTAURANT BUSINESS There are the obvious challenges of running a restaurant: long hours, scheduling all the workers, ordering all the food, the endless hours of prep work. The list goes on and on. However, there are a lot of challenges that people may not realize. Food safety is one of the biggest challenges that they must tackle everyday. Scheer explained: “You have this responsibility. You’re serving several hundred people every day. What if we screw up? What if a knife is used that hasn’t been sanitized properly? You’ll kill people… It’s a heck of a responsibility.”

Are there any mistakes that you see people making in the kitchen? “Well really, you can make mistakes, but if you’ve been doing this as long as I have you really ain’t gonna make a mistake – if you do make a mistake, then you’ll do it over… if it comes to that.”

THE MAIN EVENTS We look at two of the hottest events coming to Fargo.
On April 20 the Scheels Arena hosts the Dakota Fighting Championship’s (DFC), Spring Brawl. Eight matches across several weight classes are lined up and ready to go. We interviewed two of those brawlers, Amber Stautzenberger and Jordan Gaza to talk about these two women’s upcoming bout. May the best woman win.

Jordan “Ninja Princess” Gaza You used to be a cheerleader. How did you go from that to being a fighter? “Well I started with jiujitsu when I was in middle school so I always did both... When I was in high school was when I started training in MMA more and in my senior year I had three MMA fights so I was already doing both so it’s not like I went from one thing to another. Once I graduated high school, I did strictly MMA.”
How do you feel about your upcoming fight with Amber Stautzenberger? “She’s wanted to fight me for a while and finally everything worked out right. We’re both from Texas and we both have the same amateur record and pro record… We’re both coming off a submission win. It’s kind of cool that we’re really matched up good. She has been around for a while but I don’t really know a lot about her. I know she’s a good all around fighter. I’m ready for anything… I know I can win this fight.”
Where do you think fighting will take you? “I will be World Champion. (Laughs)”
Amber “The Apex Predator” Stautzenberger How did you get involved in fighting? “I moved to Dallas for college and I was looking for a gym to stay in shape. I joined this one gym that had jiujitsu and kickboxing - I tried it out and I liked it!”
You and Jordan are both from Texas, do you feel any camaraderie through that connection? “I’ve been trying to fight her for two years and either she says no or her manager says no and it has just never happened. You would think it would happen in Texas because a lot of different promotions have tried for it - I guess Chris has a way with words and he made it happen. There have been times when she doesn’t have other opponents and they have asked me to fight her and I’ve said yes and she says no.”

Comedian, Jeff Dunham is coming to the Fargodome on April 28. We briefly caught up with world famous ventriliquist to talk about ventriloquism and inspiration.
Have you noticed a resurgence of ventriloquism since your act has become so popular? “I don’t think ventriloquism, per se, is popular... I think a few folks that are good performers as ventriloquists have caused a resurgence in the acceptance of ‘vent’ as a legitimate form of entertainment, and that there are a couple of generations right now who, up until the past couple of years, had never seen a good ventriloquist. Put it this way: If there was a plate spinner who was great and truly entertaining, plate spinning would come back too. The one thing I pride myself on, is I’m trying to put a fresh patina on an old, tired and sad art and make it hip and fun again!”
Where do you get your inspiration? “Just living life, none of the characters have a similar genesis. Ideas come from different places. The only thing that’s similar is that when something strikes me as being a good character and one that I could really write some good material for, then that’s what I go with.”
