Family Friendly Fargo Bars, music events and restaurants often steal the show in Fargo for leisure activities. However, this month we decided we wanted to highlight the amazing dynamic of family activities in FargoMoorhead. This is something we have always wanted to feature but never have. Shame on us! Most of you reading this are probably in the same scenario as me: no kids. Well, that’s OK. I’m still interested in how this area accepts the youngsters when it comes to leisure and entertainment. We wanted to provide our local moms and dads with a resource they can use to fulfill their kids’ need for excitement. Our angle with the feature was to find families in the area that know what they are doing and share their experiences with all of us. Rather than the boring directory list layout that first comes to mind, we look at it like a movie trailer. The commentator on the movie trailer tells us that it’s the best movie that has ever been made, but one friend we know says the opposite and guess who we trust? Obviously our friend. So we were thinking about our readers and figured why trust me – Mike with no kids – when you can trust local families that have been there and done that.

On another note, we added eight pages to the back of the magazine to expand on our research into what’s happening in this area. The extra pages include more events, live music shows and the all new bar and restaurant specials directory. We have a link on our website (fargomonthly. com) that holds the bar specials of most bars in town. Guess what page has the most traffic? That’s right, the bar specials page. So, we figured why not put them in the mag? Enjoy Fargo-Moorhead and thanks for believing in us and this city.

Some of our team at Spotlight Media attended the Minnesota Magazine Publishing Association Expo in Minneapolis last month. Wow, did that pump us up! Not only did our magazines impress, we took back some valuable knowledge from some of the industry’s most reputable figures like the Editor of Delta Sky Magazine and the Art Director of Texas Monthly. We are taking this information and expanding on it with our publications. Our goal is to double our impact with our magazines by year end. I think we are on the right track and we’re excited about what’s to come.

A Love-Hate Relationship AT ONE POINT DURING OUR COVER SHOOT with the adorable Will

and Ellie, I had to ask myself one important question: Is this the best job ever? I mean, come on, what other jobs do you get to spend a couple of hours with a family trying to make a kid laugh? It wasn’t a bad day. Those are the days I like. At one point during deadline week, after working a 12-hour day, I woke up around 3:30 a.m. for the fourth day in a row because I thought of one other thing I needed to do for the mag. I then asked myself: Is this the worst job ever? The deadlines are the worst part of the job. I’m sure anybody in this industry will agree with me on that. It’s weird the two extremes one job can cause. From the best job ever to the worst in a matter of a week. I’m sure most can relate to that. Many have a love-hate relationship with their job: they hate their job but they love getting a paycheck. Is that reason enough to work where you do? How many people out there are working for a paycheck? How many hate waking up and dread stepping foot in their job? While there is a week that is pretty stressful in my job, the other parts are great. Don’t get me wrong. There are parts that aren’t fun at all. You haven’t experienced tedious monotony until you’ve copied and pasted over 50 different bar specials into a magazine. Those aren’t my favorite days.

Bass of the Fargo Air Museum. This 92-year old is a World War II Veteran and is still extremely active with the Air Museum. He gives tours, is a maintenance man and even helped build a new office for new director Scott Fletcher. During his service in the war he received two Navy Flying Crosses. This is the highest award the Navy awards and is one step below the Medal of Honor. (You can read his amazing story in this month’s magazine.) It was an incredible experience to interview him. Despite the fact that it can be stressful and, at times, monotonous, I love my job. I’m passionate about what I do and I love getting to be creative each and every month, even if it does keep me up at night.

Where I’ll be this month My goal is to be outside as much as possible and there are plenty of events to make that happen. Fargo Marathon I will be running the half marathon as well as helping Spotlight Media produce its second Fargo Marathon Book. Runners, look for that to come to your home in early June. Cruisin’ Broadway I love ogling all the classic cars that line Broadway every year. This event always make me imagine that I’m in a time gone by when people would gather around their cars and go cruising Broadway. Fishing and Kayaking the Red River There is some great fishing to be done in the Red River. After a couple of hours of fishing I’m ready to get some exercise so I love getting out and going kayaking on the river.

Run 4 Change

About 500 people gathered together at the Scheels Arena last month for a good cause. This 5K and 10K was in honor of the Deutscher family who were killed by a drunk driver on their way to a family reunion. From college dropouts to international businessmen

How It Started

The story of how BNG started goes back to the NDSU Wellness Center. Buechler and Goodman were already friends before meeting Nash. One day, Goodman and Buechler were at the gym when Nash approached them. The three of them agreed to meet up for a poker night and the wheels started rolling.

“We started off in small towns and they were paying a lot higher rates and fees and it made no sense to me where I grew up in Lidgerwood, ND,” Nash said. “That’s where we started and then we started growing.”

“We pretty much started doing business immediately,” Goodman said. “Tyler and I were involved in a networking company and Brady had that personality of someone we wanted on that team. Shortly after that initial poker night that we had gone to, we had started working together in the network marketing business.”

The three of them started selling in September of 2005, but BNG incorporated in 2007. BNG Holdings covers many different services, but what it boils down to is that they are a credit card processing company. The company handles a number of different customers, with over 2,800 clients. BNG works with many restaurants like The Hub while they’re main business is done with online companies.

As all companies do, they started small and started expanding quickly.

in Canada but have recently started working in New Zealand and Australia. Over the last seven years, the company has grown rapidly. They now have 22 people working for them, although that is a difficult number to quantify as they have independent contractors across the country. Nash likes to believe that being located in Fargo is one of the reasons his business has thrived so much. “Fargo’s been great to us,” Nash said. “I can’t imagine it being better anywhere else. I don’t know what else I would expect. There’s a lot of things they’re doing to support the growing business.”

Challenges

All business owners grapple with the questions of ethics and morals in business, but, according to Nash, the payment processing industry is a ruthless business. It can get very competitive, which can be hard to deal with.


“In our industry it’s so competitive…” Nash said. “Our biggest thing was overcoming that by saying, ‘Hey, we provide that but this is what we’re really focusing on, which is solution, automation, integration and really being a consultant around a business solution space.” While the industry is cutthroat, Nash and the others are trying to be as morally upright as possible. Some of that morality comes from Nash’s strong faith. He has his priorities figured out. “For me, you have to put God first, family second and business third,” Nash said. “At the same time, you have to make sure you take care of your business, which takes care of your family.” That faith can make it difficult to run a business at times, though. Nash tries to keep God at the center of his life. He has been taken advantage of in the past and he recognizes that in the industry other companies can be dishonest and unethical, but that’s not the way BNG operates. “We probably could have made more money and done some other things if

we weren’t trying to do things right, but I don’t think we’d sleep as well at night,” Nash said.

Where They’re Going

With so much growth in a short period of time, they have no plans on slowing down. With the expansion into New Zealand and Australia and the continued addition of new employees, they are looking into building a new office. “In five years, I see us expanding even more,” Buechler said. “We’re always expanding and trying to bring on more services and more products that go along with our industry and skill sets.” Buechler believes that they can start getting into real estate, expanding the company to encompass more products and continue the growth of their software development. In fact, one of their most promising new creations is software called Connect Booster. This program is an online bill payment that works with customer relationship management sites. This allows businesses to set up an automated pay

Nine years in the business, thousands of satisfied customers and a company’s portfolio that is expanding, things are fabulous for BNG right now. “I really feel we’re going to be a powerhouse,” Goodman said. “You know how they say, ‘It’s the hardest to make your first million, but the next 10 come easy?’ Well, we’ve done number one and we feel the like 10 are going to flow in quickly over the next five years.’” 23

Connect Booster

One of their most exciting new products is a software that they developed called Connect Booster. According to Goodman, this product caters to IT service providers and top technology service providers. It allows customers to set up a payment online that creates reoccurring billing. “Ultimately, the goal of the product is to help these small to medium to even large size IT companies crush their average aging AR (Accounts Receivable)” said Goodman. “(Businesses) are doing all this work and sending out all their bills but if they’re not getting paid in a timely manner, they have this huge accounts receivable balance and it’s killing their cash flow.” More info on Connect Booster can be found at connectbooster.com.

BEING READY is the norm for Kayla Shaw, a paramedic at FM Ambulance. It’s what she and her co-workers do and they do it well. Needless to say, there isn’t a whole lot of down time when Shaw comes into work at eight in the morning for her shift. There are things to do and people to save. “Generally, when we leave the night before, we leave [everything] in good condition so if we do get a call right away we can just go,” Shaw said. She and her team still need to check to make sure they have stocked supplies in their ambulance and that their ambulance is safe to take out. “We’re checking all the fluids, we’re checking the oil, we’re checking the washer fluid, we’re checking the anti-freeze; we’re checking all that stuff so we are safe to go out right away. Then we check all of our medications, we check all of our bags so that those are ready [too],” Shaw said. When the calls come in, that’s when the jitters can get you. “In the beginning, when I started, you know, you always had that pit in your stomach that you’re so excited, or almost the angst, of not knowing what was going to happen,” Shaw said, “Now being a veteran, it’s gotten better. I’m a little more relaxed knowing that I might not know what’s coming.” 26

Shaw and her team have tools to help them feel prepared. This includes their garage of 14 ambulances, a computer system to help track where potential calls will be coming from based on previous data and strong relationships with the Fargo Fire and Police Department. Even then, “I can’t say I’ve seen it all because if I say I’ve seen it and I haven’t, I’ll never have seen it all,” Shaw said. Some calls will always be harder than others. “Often times we end up being the bad guy,” Shaw said. It’s a part of the job and it’s worth it. “Every one of us that are in EMS is in it for a reason. We didn’t just wake up one day and say, ‘I wanna be a Paramedic.’ There’s a reason.” And, for Shaw, there is always a call or two she can look back on with fondness. “I delivered a baby a couple years ago. Talk about a life changing experience. I will always remember that new baby and the new mommy. Day in and day out we are involved in so much of the negative part of people’s day. Generally, nobody wants to go by ambulance to the ER, but to bring a new life into the world, that’s an amazing day.”

A Paramedic’s process THE CALL The calls come in through the radios attached to their uniforms. Dispatch gives the team the location of the call and any other important information about the scene.

SHOOT TIME The team has just 30 seconds to get into their ambulance and start driving.

GETTING THERE "We have 8 minutes and 59 seconds to get a call if it's an emergency," Shaw said. That means with lights and sirens they have less than eight minutes to get to where they are needed.

ON SCENE Depending on the situation, the crews can be on the scene for any amount of time doing whatever they can to save lives and help.

Fishing The Red River The Red River is bountiful with walleye and catfish, and acts as a great spot to fish. The best news is that kids 16 and under in North Dakota and Minnesota don’t need a fishing license. With plenty of catfish and walleye, fishing the Red River is a fun and cheap family outing.

This free event is put on regularly by the Plains Art Museum. Every Kids Quest is different and aims to draw kids into art. The kids go through the museum and fill out a passport while creating their own artwork at different stations. Watch the website for dates.

With three libraries and activities happening everyday, there’s too many things happening at the library to list. One of the largest events going on throughout the summer is the Summer Reading program. This year’s theme is Fizz, Boom, Read and will be focused on science. There will be a kickoff party on June 2 featuring Mad Science, a group of scientists out of the Twin Cities.

They are kept quite busy by 9-year old Will and 7-year old Ellie. In the midst of hectic daily schedules, the family still manages to find time to get outside together now that temps are rising in the Valley.

Each year, the family enters Will and Ellie into the Youth Run. This youth run put on by the Fargo Marathon is one of the top five largest youth runs in the country and is the perfect way to get kids involved in the festivities of the Fargo Marathon.

“My favorite thing is that I get to run and I get a medal!”

Family Workout Will and Ellie love riding their bikes or rollerblading while their parents jog on paths or around neighborhoods in Fargo. Bill and Steph also try and make it to the YMCA where their kids either read or play in the XerZone, which has Dance Dance Revolution, Wiis, climbing walls and other interactive games.

“Usually they’ll take me there and if I have homework, it’s usually on the weekend, I’ll do my homework and then I read.”

They say home is where the heart is, but for the Gordons, the Hawthorne neighborhood is where their heart is. Parents Dan and Gayle live there with their three sons Ivan, 14, Gus, 10 and Bruno, 16. Downtown’s vibrancy spills over into their community, and when the Gordons aren’t on the road for hockey or hanging out with friends, that’s where you’ll find them.

Biking the trails The Gordons love staying active and being outside. Located just a short distance from their house are the bike trails that follow the Red River. They love taking out their bikes, walking their dogs or running the trails to burn off steam or train for the Fargo Marathon.

“We know we could live anywhere, but after we talk about it, it’s that romantic notion of going, and then as we start to talk it out, we’re like, ‘We’re not going anywhere. Let’s travel. Let’s go see all those places.’ But this is our base; this is where we want to stay.”

For a cheap night out, the Gordons will walk or bike the short distance from their house to Spicy Pie. The service is quick and the pizza is good, and the whole family loves to chow down on some cheese tostadas to start.

Hanging with friends

Music is big in their family, and we mean big. Dan drums for a couple of area bands and their youngest son Gus is beginning to dabble in electric guitar.

Some of the most important people in the Gordons’ lives are their friends. Their friends, the Wargos, have children the same ages as Ivan and Gus. They’ve become so close that they refer to each other as their “second families.” But that’s nothing abnormal for the tight knit Hawthorne community. In fact, the Gordon family is close to a lot of their neighbors.

Living History The Fargo Air Museum’s closest connection to World War II The Fargo Air Museum holds plenty of priceless treasures, but one of its most valuable assets may not even be a plane. It might be a volunteer. Meet Stew Bass. BY

Bass was born on May 25, 1921, in western Montana. He enlisted in the Navy in 1941. On Dec. 7, 1941, Japan attacked Pearl Harbor thus beginning the United States’ involvement in World War II. Bass’ enlistment was quickly passed through the ranks and he soon found himself in the U.S. Navy. Once in the Navy, he joined the V-5 Program to become a pilot. He joined the squadron Air Group 9 and was stationed primarily on the U.S.S. Yorktown and Lexington. During his time as a pilot, he went on 77 strikes, 25 of those being “vicious” as he described it. One of his most impressive accomplishments during his service was receiving two Navy Flying Crosses, which is the highest award the Navy hands out.

We caught that at sea.” On April 7, 1945, Bass and his crew, who were flying a torpedo bomber, and a number of aircrafts, took off for Operation Ten-Go. There were dive-bombers that were attacking the deck of the ship but Bass’ mission was to sink the ship by firing torpedoes at its hull. Many of the planes were firing torpedoes set for a depth of 12-feet. This was doing little damage against the massive armor plates of the ship. Bass and the rest of the crew came up with a plan. “None of the rest of them had figured it out, but we had cut a hole in the bomb bay of the plane and the radioman could reach his full arm length in

and get to the spot where we set the depth of the torpedo,” Bass said. “We set it (the depth of the torpedo) down when we saw what was happening… When the torpedo went into it, in less than two minutes it hit the magazines and blew sky high. You can’t believe it. It was over a 2,000-foot mushroom that went up like an atomic bomb and it rolled over and sank.” After the sinking of the Yamato, Bass and his squadron went after a cruiser and destroyer, sinking them all. According to the official award citation from the U.S. Government, Bass’ “skill, daring and utter disregard for personal safety were in keeping with the highest traditions of the United States Naval Service.” He was then awarded his second Navy Flying Cross.

He received one for a series of raids he made on Tokyo, Japan, especially for destroying an aircraft factory while the other was received for a number of assaults on the islands of Iwo Jima and Okinawa, and especially for helping sink the Yamato, the largest battleship ever built. “The idea was almost like a kamikaze run for it,” Bass said. “It was going to beach itself and

While Bass’ schedule changes throughout the month, he is usually at the museum in the mornings on weekdays. He happily gives tours and talks about the planes and tells his countless, interesting stories. At 92-years old, Bass is a sharp as people half his age. Here’s his secret to a long, happy and healthy life:

“I enjoy life. I get up in the morning and say, ‘I’m going to make it a good day, whether it is or not.’”

The end of the war was not too far away. August 15, 1945, brought the end of World War II and the end of Bass’ involvement in the US Navy. After returning to the states, he enrolled in college and began to raise a family. He eventually began working for American Crystal Sugar Company and did so for the next 32 years. He came to Fargo in 1973 and set up a life here, eventually retiring in 1986. Despite the fact that World War II was almost 70 years ago, some of the memories are still real for Bass, but he has learned how to live with them. “As far as the combat itself, I could think of a lot of things that I can picture real easily,” Bass said. “It wasn’t good, but I did my job as I was supposed to and I can’t sit here and say, ‘I wasn’t scared to death sometimes.’ We were trained so well that we just did it… When you look down, you see all these bodies floating around in the blood red sea and guys running on the deck and you realize how damn many people you killed, it makes you think the other way. We did what we were supposed to.”

In fact, in Bass’ opinion, the fact that war is such a horrible experience is one of the most important reasons the Fargo Air Museum is around. “I have a tremendous respect for our desire to stop wars in any way that we can do that,” Bass said. “One way, of course, is through a museum like this. Just let them look at planes and talk to them about it.” That’s what Bass is doing at the Fargo Air Museum. He goes by a first name basis with all of the workers at the museum, he does maintenance work and even recently built a new office for the new CEO, Scott Fletcher. “We’re just lucky to have Stew here,” Fletcher said. From World War II to the Fargo Air Museum was a long road for Bass, full of many decisions, but he will always wonder if he should have stayed in the Navy.

“It’s a decision I had to make at that time and I can look back on it now and say it was a good one or a bad one,” Bass said. “I don’t know which though. I certainly have had nothing but a good life.”

About The Fargo Air Museum The Fargo Air Museum was opened in the fall of 2001 with the mission to “provide aviation education through restoration and preservation.” They have about 20 planes on display that rotate throughout the year. MIXOLOGIST In her 17 years in the service industry, Sara Oltve has seen everything. With her infectious smile and skills behind the counter, she has made herself into a must-visit mixologist inside the Hotel Donaldson lounge.

ltve has spent her entire mixologist career at the HoDo, and has witnessed a whole new wave of cocktail-drinkers enter her bar. Over her eight years at the HoDo, Oltve has noticed an entire new landscape of young people igniting a comeback to classic drinks. “People that are freshly 21 are coming in and asking for Old Fashions and Negronis,” Oltve says. “I don’t know if I would have ordered at 21, so I think it spans all ages now which makes it a lot of fun.” It’s difficult not to have fun when the electric blond hair and pearly smile of Oltve greets you at her counter. She believes it’s the best part of her job and the reason why she may never leave the field of mixology.

in terms of regional origin and ingredients used in the stuffing. However, today the two terms are quite synonymous. Basically they are petite pasta “pillows” stuffed with a filling of your choice. They are made by laying out a long rectangular piece of pasta and piping a line of the cheese filling across the entirety of one side. You then roll the pasta and use your fingers to pinch off pillow looking pieces before cutting with a knife, dough crimper or pizza cutter. You then quickly boil them in salted water and toss in a sauce of your choice.

suppose my wife and I often take for granted the fact that good food comes easily to both our four kids and the two of us. Our kids love Indian food, sushi and prefer their steak to be cooked no more than medium rare, no doubt a reflection of their parents’ food preferences and culinary mindsets. I wonder if our kids realize how good they have it. Understanding the basics of food early on will certainly benefit them later in life. Occasionally, I try to persuade our two oldest to help out while I’m cooking at home. Of course, they only seem to have interest when it’s their idea to assist. I suppose that’s the norm with other projects as well. When they do decide to assume the title of “sous chef” for an evening it’s always a fun time, none better than when we make pasta from scratch. Maybe it’s the floury mess of it all that creates enjoyment for them. We all know that our kids love mac ‘n’ cheese, but why not give them a bit more credit and broaden the repertoire a bit. Once the pasta itself is prepared so many possibilities exist. A simple pasta Carbanara (A.K.A. Roman mac ‘n’ cheese) is the perfect cooking experience for any kid. You’ve got bacon, cheese, a little fresh herb and some egg yolk to emulsify it all together. Best of all you get to toss it all in the air in order to make sure the eggs don’t scramble in the heat. That’s as fun for any adult as it is for kids. But if you’re going through the trouble of making pasta than why not make ravioli?

That’s when ingredient possibilities really start to get fun. Mascarpone cheese is still a bit unfamiliar to some but those who know it, love it. Its creaminess and subtle sweetness makes it the perfectly versatile cheese for ravioli. This Italian cheese can be mixed with savory or sweet ingredients depending on the desired end flavor result. I personally prefer to sauté a little garlic and shallot, deglaze with dry white wine and fold into the Mascarpone. Add a pinch of nutmeg, salt and black pepper and a bit of egg to bind and that’s it for the filling. The ravioli can be formed a variety of different ways but we prefer a style known as “Agnolotti.” In a classical sense, Ravioli and Agnolotti do have distinctive differences

MASCARPONE AGNOLOTTI PUMPKIN FILLING

Serves 10-12

Ingredients • 1 Cup Mascarpone Cheese • ½ Cup Ricotta Cheese • 2 tbsp. Parmesan Cheese, Freshly Grated • 1 Egg Yolk • ½ tsp. Lemon Zest • 1 Small Garlic Clove, Minced • 1 tsp. Fresh Thyme, Chopped • 1 Pinch Cayenne Pepper • 1 Pinch Nutmeg, Ground • 1 Pinch Cloves, Ground • Kosher Salt & Fresh Ground Black Pepper, As Needed

Instructions Combine all ingredients in a mixing bowl and incorporate.

PASTA DOUGH Ingredients

• 2 ½ Cups Flour

In an electric mixer fitted with a dough hook, combine all ingredients and mix on low speed until mixture is incorporated and free of lumps. Remove from bowl and knead on a clean counter top until dough is completely smooth. Wrap dough and refrigerate for 2-4 hours.

• 8 Egg Yolks • 1 tsp. Kosher Salt • 1 tbsp. Extra Virgin Olive Oil • ½ cup Water

Roll out dough to thinnest setting on pasta roller. Pipe filling from a piping bag onto pasta. Brush the pasta with egg wash and roll pasta over the filling. Crimp dough into approximately ½ inch pieces with your finger. Cut the pasta and place in salted boiling water until they begin to float. Remove from water, drain and place on a serving dish. Garnish with toasted pine nuts, fresh basil, fresh shredded Parmesan and browned butter.

The Secret Ingredient Despite being around for 18 years, there’s no secret to their success. If you had to define it though, one of the things that makes the Front Fenders different from other bands is crowd interaction. Paul Bougie is the frontman for the band and is an expert at getting the audience involved in the show. Part of his job is to go into the crowd and encourage crowd members to come up and sing and play with the band. Lee Massey summed up one of the important aspects to a successful show. about the crowd having fun.”
