A TOAST To Fargo-Moorhead nce upon a time throughout the 1920s and the early 1930s, anything related to the manufacturing, storage, transportation, sale, possession and consumption of alcohol was completely illegal in the United States. I’m not a history buff, but I think it’s safe to say that this issue, and most of this magazine, would not exist if for some reason the laws of our yesteryears still existed. (Shout out to Franklin D. Roosevelt for his work in putting those rules to rest.) Fast-forward to present day in FargoMoorhead and there are multiple (legal, of course) breweries, a distillery and wineries all over the area, and even a meadery. And don’t even get me started on how wonderful our thriving bar and restaurant scene is. It’s not just the fact that we can enjoy our favorite beverages without speakeasies or bootlegging, but it’s about the establishments themselves and what they do for the community. These great local makers bring people together for happy hour, dates, meetings and all sorts of social activities, not to mention that they are heavily involved in community events and collaborate with a variety of businesses in positive ways. It’s exciting, and I think the best thing that we can embrace about it is that it brings people together, whether you drink alcohol or not. 18 | APRIL 2016 | FARGOMONTHLY.COM
On that note, I’d like to give a big thank you to the folks at Drekker Brewing Company, Fargo Brewing Company, Junkyard Brewing Company, Kilstone Brewing, Uncorked, Proof Artisan Distillers and the Prairie Rose Meadery for being so accommodating and fun to work with this month. These people and the work that they do – and being able to write their stories – is one of the many reasons why I continue to love my job (I promise it’s not because of the free beer samples.) The next time I have a drink in my hand, I’ll be toasting it to all of you. On that note, raise your glasses and celebrate these wonderful establishments we have in our town. rewery science comes naturally for Mark Bjornstad, Jesse Feigum, Darin Montplaisir and Mason Montplaisir: the owners and masterminds behind Drekker Brewing Company. Since its debut in 2014, their brewery has doubled in size twice and currently holds a list of roughly one hundred accounts waiting to get their beer on tap. It’s a problem they definitely can’t complain about, though. Once their homebrewing hobby began to take up all of Bjornstad's personal space, it was time to make years of talk a reality. “We were close to getting adult jobs and we asked ourselves what our dream jobs would be. We always talked about bringing something like this to Fargo, so Darin and I kind of shook hands on it. It’s about ten years later and we have that promise,” said Bjornstad.

With relationships as childhood friends, family and hometown buddies, each owner has a background that contributes greatly to the brewery puzzle. Combined, this team has specialties in production management, biology, science, design, marketing and engineering – a mix that is important to the success of their business in addition to their friendship. Now, their taproom serves 11 to 12 beers on tap daily and they debut a new brew anywhere from a weekly to monthly basis that’s fit for the Viking in all of us. In other words, they’ve got a pretty aggressive production level. And with their dream location in Downtown Fargo, they’re at a level of success they never thought they would be at so soon after opening.

hen you ask owner Joel Kath why he decided to open a distillery, he might tell you something along the lines of, “Beer doesn’t like me, and I personally don’t like it.” Kath began looking into distilling roughly six years ago, and with a strong background in engineering, he made his dreams into a reality with the help of his friends and “minions” (whom he later named Proof ’s gin after). Thus, Proof Artisan Distillers was born in fall 2015. Although in its earlier stages of operation, the distillery has doubled their number of products offered, with more on the way, and has increased their distribution level twofold. Beyond their
spirit selection, their taproom offers daily specials on high-quality dishes and appetizers, and has also started hosting live music and events. Plus, with award-winning mixologists and staff at hand, the mix of expertise couldn’t be better for business. But the success of these homegrown spirits has also come from the thriving, supportive community. “North Dakota is much more accepting and promoting of being local," said Kath. "I think in bigger states and bigger markets, it can be hard to get that support.” Aside from being the first distillery of its kind in the area, it's clear that Proof is something special and a nice change of pace for Fargo-Moorhead.

hen Aaron Juhnke started college, he had grown a strong liking for craft beer. While the selection of craft beer in his small college town didn’t always have what he wanted – and when it did, it wasn’t the friendliest to a college student’s budget – he decided that it would be cheaper and a better option to dive into homebrewing. “I just wanted to homebrew so I could try out different styles and I thought it would be a cheaper option," said Juhnke. "And then I taught my brother (Dan Juhnke), so he watched and learned how to do it himself. He got into that by making homemade wines out of fruit juice and it took off from there." Thus, the two brothers brought Junkyard Brewing Company to life in Moorhead. The best and most unique part about the brewery is their specialty in brew rotation and the ever-changing tap selection.

“It’s a constant discovery and an experimental adventure to come to Junkyard and find out what we’re brewing and taste something new every time you come in here,” Juhnke said. Juhnke and the rest of the Junkyard crew won’t hesitate to talk about the awesome group of locals and how most visitors compare it to a “Cheers bar experience” where everyone knows each other. And it’s no surprise, considering how close-knit they are with the community when it comes to hosting musicians, food trucks, events and more nearly every day of the week. Plus, their location is more than ideal due to the fact that the city of Moorhead has some of the best water around, so you know you’re getting products that are delicious from the get-go. t’s rare to walk into a local liquor store, bar or restaurant that doesn’t carry a delicious brew from Fargo Brewing Company. Aaron Hill, Jared Hardy, Chris Anderson and John Anderson are the founders and operators behind Fargo’s first current brewery, and it all really started from their time living in cities with booming craft beer scenes and finding the need for the same thing to happen in Fargo. “You had the Anderson brothers who knew how to brew but didn’t really know the business side of things, and then you had Aaron (Hill) and Jared (Hardy) who were good friends and they had business and sales degrees, but couldn’t really nail down a good beer recipe. When they all decided to come together they sort of had all the aspects they needed. Kind of like Captain Planet coming together to bring in different powers,” said Operations Manager Zachary Click. Since their debut in 2010 when they had to brew out of a third party brewery in Wisconsin, Fargo Brewing Company has come a long way. They’ve

been able to get past bank roadblocks and open their main brewing location and taproom off of University Drive, they’ve doubled their staff size, distribute their cans all over the tri-state area and much more. It isn’t stopping there, either. One of the more exciting happenings on the news front is the announcement of Fargo Brewing Company’s second location, an ale house that will be located at 4445 17th Ave. S, Fargo and plans to open this summer. Their main goal with the new brewing spot is to connect their beer with a wider audience and further advance the craft beer movement in town. It’s safe to say that this company is letting their local pride shine through their craft. “You don’t want to just have a cheeseburger every single day of your life when you can have steak and so much more. Why drink the same beer every day when we have all of these local brewing companies that can provide great options for you?” said Click.

hen Kathy Swiontek, owner and operator of Uncorked winery in South Fargo, and her husband were dating, they frequently visited a former Downtown Fargo restaurant called Vintner’s Cellar for wine. Their interest in wine grew to the point where they decided to make their own batch to hand out as Christmas gifts, and while the couple was bottling, Swiontek’s husband had made a custom wine label that popped the big question: “Will you marry me?” “That’s kind of where it all started. We were getting married, I was teaching in Valley City, N.D., at the time and he had a catering company when Vintner’s Cellar came up for sell, and we wanted to buy it,” said Swiontek. “So I bought all of the stuff out of Vintner’s Cellar. I trained with the owner on how to operate things while my licenses were getting in place and then once I took over the business in 2011, I just dropped the franchise and called it Uncorked. Then we moved to this location
in September 2014 as just a winery.” The great part about Uncorked for wine lovers is its hands-on, custom services. Not only can you come in to buy wine and sample, you can stop in and create a custom batch to your liking and much more. “We have people come in groups or parties and they’ll start a batch. People bring in all sorts of fruit or products or they can use what we have on hand. They’ll make the wine and we take care of it. When it’s done, they can come and bottle it and take it home and we do custom labels for them.” Swiontek is extremely passionate about wine and her business, but she never expected to gain so much knowledge from her local, loyal customers. “People come in and buy supplies and pick my brain about wine. I learn a lot from my customers, too. It’s fun, when people come in and tell me what they’re doing.”

hat started as a homemade hobby in the ‘90s turned into a full-fledged South Fargo operation in May 2015. Susan and Bob Ruud own and operate the Prairie Rose Meadery, the first of its kind in the region, with the help of their son and family friend. In the last near year of operation, the meadery has seen great success and has grown their inventory in ways they never thought they would. Unless you’re a “Game of Thrones” fan or a medieval expert of sorts, you might wonder what mead actually is. It’s simply a delicious honey wine and is a little different than regular wine because it isn’t all made with fruit, hence the meadery’s slogan of “From Bees to Bottles.” The Ruud family has brought a unique establishment to North Dakota, and what makes it even better is that they try to use as many locally

and regionally-grown products as possible. They’re currently able to ship to 35 different states, and went from three types of mead at their opening to now producing around 14. Their ginger mead also recently won a gold medal at the Mazer Cup International Competition in Colorado. When you visit the taproom, you’re in for more than just a glass of sweet honey wine in a multitude of flavors. They also make mixed drinks such as their own take on a mead Bloody Mary that they call a “Sweet Mary”, as well as fruit spritzers and delicious mead sangrias in the summer. And the best part about it all is seeing wine lovers and non-lovers coming back for more. “It’s always fun to have people in here. We still get people that have never had mead before and it’s fun to watch them try it and love it. Most people leave with a bottle or two or more. That’s really cool,” said Susan Ruud.

t’s a family affair of sorts when it comes to Kilstone Brewing, Fargo’s most recent brewery on the scene. Randy, Jan, Grant and Brock Wigen are the owners, founders and operators behind the young establishment.
“I had done homebrewing for several years. I was looking to make some sort of investment and the boys were looking for a livelihood to concentrate themselves on. So, I said I’d buy equipment and machinery if they learned how to brew. We jumped right in and started from scratch,” said Randy Wigen. With a unique, hand-painted taproom by artist Chuck Hues, eight beers on tap and over 20 different recipes completed in less than a year – the gang at Kilstone can safely say that things are bigger and better than what they planned for. They’re doing brew experiences for customers – where small groups can come in and brew with the Wigen sons – they’ve been involved

with numerous city-wide events and they plan to invest in new machinery in order to increase their capacity. Clearly, nothing is slowing down anytime soon for Kilstone. Despite the challenges of driving in traffic to their location, they have acquired a solid group of loyal regulars, supportive neighbors and many customers that come in by word of mouth. And of course, Grant and Brock Wigen’s dog, Bentley, loves the attention he gets from customers. To top it all off, the support from the local brewery community is something that everyone at Kilstone greatly appreciates. “I think one of the most rewarding things to see is the camaraderie with the breweries. Everyone supports each other and wants each other to be successful. It’s not a matter of who got here first or who’s better. It’s great to have that support and be able to return the favor,” said Taproom and Operations Manager Fallon Blank.

aybe you're an avid wine-lover that's looking to branch out to new flavors, or maybe you haven't the slightest clue what to do when it comes to finding the right wine for you. Martin Hayes has worked in the beverage industry for over 13 years and has spent the last six years educating others in wine. He is also a Wine and Spirit Education Trust holder and is currently working on his Certified Sommelier certificate through the Court of Master Sommeliers. Here's what he recommends keeping in mind when it comes to selecting wine.

Screw caps vs. cork. A "pretty" label is no indication of quality.
We live in a flashy, marketing-centric world. Often, the wines we choose have pretty artwork, cute animals or clever phrasing designed to draw us in. If we want to expand our knowledge and mature our palates, it is best to look past the flashy bottle marketing. Some of the most enjoyable wines I have found were bottled with simple, to-the-point labeling.
Screw caps say nothing about the quality of the wine. In fact, many highquality producers are beginning to use screw caps as the rate of spoiled wine is significantly lower. Screw caps are also less expensive to manufacture, which makes the inherent cost less than it would be with a natural cork.
Pairing doesn’t always have to follow the "rules."
While pairing red meat with red wine and fish with white wine is an understandable and commonplace “rule,” it is important to know that there are exceptions to those rules. Serving a lighter fish for dinner? Try a lighter-bodied red like Cru Beaujolais, particularly from Saint Amour. These are made from the Gamay varietal, and contain high acidity, supple earth tones and tart fruit characteristics.
Ask questions and try something new.
Regardless of the size or breadth of selection, the sign of a quality store or restaurant is a knowledgeable staff. A well-trained staff can help you find anything you may be looking for and many other things you didn’t even know you were looking for. I have found, for local retail shopping and dining, the staff at 99 Bottles, Bridgeview Liquor, Rustica Eatery & Tavern and Maxwell’s Restaurant & Bar to be knowledgeable, courteous and enthusiastic about their wine selections.
A high price tag doesn’t always indicate a quality wine. When looking for a wine that is focused, flavorful and impressive, you don’t have to spend a lot of money. There are hundreds of wines out there that can impress anyone ranging from a wine novice to an expert. Wines coming from Argentina, Chile and Spain almost always show incredibly well for the price point. Even some wines state-side that have a lower price tag can impress. Try a Monastrell from Jumillia, Spain or any wine from Shannon Ridge in California. These wines have power, elegance and a beautiful balance of fruit and tannin.

How long have you been in the bartending business? “Probably around seven or eight years. I bartended here for about four or five, I was at Usher’s House for a year and a half and then I was at O’Leary’s for another year and a half or so but now I’m back here.”
You just competed in the High Plains Reader’s Bartenders Battle. Can you talk about how that went? “It’s always interesting. They hit you with a bunch of crazy stuff. It’s nerve-wracking, but it’s awesome. This drink (featured) was an idea that I was able to come up with quickly, and that’s what the Bartender’s Battle is like. You’re literally on the fly. Unfortunately, I don’t feel like my drinks were too on point that night and I got eliminated in the semi-final round. But it’s fun and I like doing it.”
You were also involved with this year’s Whiskey Fest. What did you make for that? “Whiskey Fest was pretty simple. We got to pick our booth, and we wanted Jameson because that’s what a lot of us drink around here. That’s where I got the idea for the mango for this drink (featured). So for Whiskey Fest, I made a twist on an old-fashioned. Instead of just all orange and cherries I did a clove simple syrup, mango, Peychaud’s bitters, a sugar cube and a little bit of ginger beer to top it off. It was super nice. I got a lot of compliments.”
Can you tell us about the featured drink? “It’s super light. It’s great for the season. I love tequila and I love working with it, so I push it hard whenever I can this time of year. It’s a twist on a mojito meets a margarita type of feel. Even if you don’t like tequila, I think this could be a drink you’d still stand behind with the amount of sugars and the bitters to counter all that. It has a punch to it and it’s super flavorful.”
"THE BITTER TRUTH" • 1 ½ oz. Avión Reposado Tequila • Splash of Licor 43 • A few Dashes of Fee Brothers Barrel-Aged Bitters • 1 ½ oz. jalapeño simple syrup • Dash of lime juice • Muddled mango and mint • Sour Mix • Dash of Peychaud’s Bitters
Muddle the mango and mint in a cocktail tumbler and add tequila, Licor 43, Fee Brothers BarrelAged Bitters, jalapeño simple syrup and lime juice. Shake and pour into a tall glass over ice, and top off with sour and a dash or two of Peychaud’s Bitters.

The Subtly of Springtime Onions
O
ne of the most common cooking questions I receive is, “Why should I use a shallot or leek as opposed to a standard onion?" My response always involves the words “subtle” or “neutral." A yellow onion can certainly accomplish everything it’s asked to do: providing a backbone or structure for increased flavor and aroma. Leeks and shallots, however, will lend the same qualities with a far less dominating result.

When making soups, I prefer to use yellow or white onions. They are cost-effective and have the potency to season large batches. When making sauces and other delicate items, however, I’ll opt for shallots or leeks in order to allow other ingredients to take center stage. Onions are great for tomato sauce, stews and braising. Leeks and shallots are perfect for quick sauté items, sauces and delicate soups. Shallots are the preferred choice for most professional chefs during dinner service because of their neutrality and ability to provide structure while being relatively neutral at the same time.

Ramps, a wild form of a leek, are a unique and short-seasoned onion that will provide more pungency and garlic-like characteristics. Spring onions, or scallions, are a bit less pronounced in flavor and are typically served raw but are very tasty when quickly grilled. Chives are, of course, very subtle and should be handled delicately. Slice chives thinly and use to finish delicate fish and egg dishes. The handling of onions is just as important as how they’re used in cooking. There are so many theories as to how to cut an onion as to not induce a mildly embarrassing crying session. The one true technique

Serves 2
Leek Omelet with Smoked Bacon & Parmesan Cheese ingredients • 1 ea. leeks, standard size, washed, whites only, thinly sliced • 2 Tbsp. whole butter • 2 ea. bacon strips, crispy cooked and chopped • 4 ea. fresh eggs, preferably farm fresh, room temperature • 3 Tbsp. whole milk • To Taste: coarse salt • To Taste: black pepper, fresh ground • To Taste: nutmeg, preferably fresh ground • As Needed: parmesan cheese, fresh shredded instructions 1. In an appropriate omelet pan, melt the butter and sauté the leeks on medium heat until soft. Add the crisp bacon and continue to sauté. Using a fork, whisk together the eggs and milk until fully incorporated. Place the egg mixture in the pan and stir with a small rubber spatula until eggs begin to firm. Quickly season with salt, pepper and nutmeg. Reduce the heat to low and tilt the pan while lifting the edge of the omelet with the rubber spatula to allow runny eggs to redistribute in the pan. 2. Remove the pan from the heat and allow the omelet to sit in pan for approximately 30 seconds. Using the rubber spatula, fold the omelet into thirds and carefully roll onto a serving plate. Top the omelet with freshly shredded parmesan cheese and serve.
however, is to have a crazy sharp knife. A dull knife will bruise the onion and release aromas more quickly. So, slow and steady strokes with a nice sharp knife will insure a uniform appearance, great texture and flavor, and of course, less crying. With the exception of ramps, these springtime onions are available year-round. Using them in season, however, will ensure maximized flavor and integrity. As far as forging your own ramps is concerned, the best advice I can give you is to look near the morel mushrooms and fiddlehead ferns. Then again, maybe in the backyard of your lake house. to live a fit and healthy lifestyle doesn’t mean you have to skip out on Happy Hour. Of course, there are smart ways to order drinks and better options that can minimize the intake of empty calories typically found in alcoholic drinks. Being I am passionate about living a healthy lifestyle, I also believe in living a balanced life. If balance to you means having a couple drinks each week, then as long as your health and fitness goals are realistic, there’s no reason you can’t have a drink or two. Just be realistic about your goals and how soon you want to achieve them. There is a time and place for everything and in order to reach a goal you’ve never obtained, change will have to occur to get there – so at some point it may mean abstaining from alcohol. A couple drinks can easily add up to hundreds of empty calories, so be mindful of what you’re drinking, how your drink is made and don’t be afraid to ask the bartender to lighten it up. The following drinks are my "healthy" picks at some fabulous local bars.
hard alcohol My top "healthy" pick is hard alcohol with a light mixer. Water of course, in my opinion, is a great mixer because it hydrates you at the same time, however, this isn’t for everyone. Most drinks can be made with light mixers and even drinks that have a simple syrup added can be ordered without – just ask the bartender to go light on it. Fresh-squeezed juice as opposed to canned or bottled juice is a great way to give some added natural flavor without all the extra sugar.

beer Light beer sounds like the natural choice here. After all, light beer has less calories and less carbohydrates, so yes, it is a great choice. However, most people tend to order more than just a couple beers because the alcohol by volume (ABV) content is lower and it goes down like water. By the end of the evening, you’ve drank more calories overall. A dark lager is great if you’re going to have one or two drinks. Yes, there are more calories, but the alcohol by volume is also greater, so it’s more likely you’ll enjoy the full-bodied flavor and stick to less. The choice is yours, but the key is to be aware of how many you’re drinking.

wine I suggest choosing red over white wine for the added benefit of the antioxidants present in red wine. However, white wine typically has a few less calories. Because there is usually less sugar present, opt for a dryer variety as opposed to a sweeter wine. White wine and prosecco have fewer calories than red wine and these are always great spring and summer options. Keep in mind, a glass is five ounces, which is not really that much, but these calories can go up quickly if you order a bottle. One option would be to have a wine spritzer (club soda added to wine, so it’s actually only three ounces of wine), but I would only suggest this if it’s not a fancier, highend bottle.

So, what do I drink? When I choose to have a drink, I choose a vodka water or red wine. I don’t like carbonation or extra juice and sugar, so water is my go-to mixer. It also hydrates me, so it’s a win-win in my book. My favorite drinks are a flavored pear vodka with water, but again, I also enjoy fine red wine. ast year, professional soccer came to Fargo-Moorhead. With a successful first season under their belt, FC Fargo (FC stands for football club) only lost one game last year. We caught up with founder Tim Singleton to talk about what’s changing, their new home and what we can expect in 2016.

Going into 2016, what are you expecting?
Tim Singleton is the founder and CEO of FC Fargo. He moved to FargoMoorhead specifically to start a soccer team.
“It’s definitely going to be different this year because we’re now playing in the American Premiere League. We’re in a league with six teams. I’m sure it’ll be very competitive. We’re going to be playing for three pieces of hardware so that’s good. Tommy Nienhaus is going to come back as the head coach so that’s exciting. “When you join a league, you have a lot fewer headaches. The teams that you 81

How many games will you be playing?
“Fourteen or 15. We’ve got the 10 league games, which are five home and five away. We’re going to be playing two other teams from North Dakota and we’re going to be playing home and away with the new Minneapolis FC. We’re trying to work in one more friendly game.”
As far as the fan base goes, how did 2015 go and what do you hope for in 2016? “We were really happy with our fan base. We had about 250 loyal fans and most of them were very knowledgeable soccer-wise. We’re hoping to double that this year. We’re hoping to get

to about 500 fans a game through promotions and working with the youth clubs and a couple of other things we’ve got going. Hopefully, some people will bring their friends.”
Make the plea why FargoMoorheadians should come to a game.
“I think that one thing that people who aren’t soccer fans really don’t understand is the ritual and the event is just as much fun as the game itself. If you think of football tailgating and making a full day out of it. We kind of have that kind of feel to it. We’re going to be putting some money into sponsoring a tailgate so that people can come out and have a good time. The level of soccer will be really good and it’s just a very wholesome, fun time for the whole family.”

Throughout the process of founding this team, has the FM community been supportive of you? “Very much so. I’m not sure if you knew this, but I picked this spot away from the Twin Cities based on what I thought of what would work and I have no regrets on choosing the Fargo-Moorhead area. I love the small town feel, even though there’s about a quarter of a million people in the area. It feels very small town, even though there’s a lot of people there.”

With a 20-person choir adorned in church robes, a pastor who wants to change the philosophical direction of the church and the audience as the church’s congregation – “We’re going to transform Askanase into a church,” said Director Jess Jung. Jung first saw the play at a theater festival in 2013. “It was the world premiere and I thought, I need to

direct that play," said Jung. The play is written in a structure similar to poetry, pushing the actors to figure out what the playwright is trying to say with the indentations and use of space. “All of those little details are clues from the playwright,” said Jung. In other words, there is a question for the audience. The characters present two sides to that question in what Jung calls a “didactic way," meaning it is not trying to teach the audience a lesson. It’s there to make you think. “My question for the audience is, if we have different truths, can we still come together without having our foundation crumble?

NDSU’s presentation of "The Christians" will be North Dakota’s first production of the play, beating other regional productions by several months. For their April 28 presentation, the play will be performed at First
Lutheran Church on Broadway. “I’m hoping we’ll have a different audience than we usually would and see what that unlocks when we’re using a real church space,” commented Jung. Each performance will be followed by a post-show discussion to talk about the play and the two sides of the question presented.
The play will also be performed by Walking Shadow Theatre Company, presented in association with Mixed Blood Theatre Company, in Minneapolis May 20 - June 11.

torytelling is one of the integral elements that brought Minnesota State University Moorhead Director of Theater Craig Ellingson’s attention to the musical “Working." The production is a combination of music and monologue based on Studs Terkel’s 1974 nonfiction novel, which incorporates interviews with more than 130 people around the United States about their jobs.
These “three Es” of theater production make “Working” a portal through which the audience experiences the lives of an array of workers. “You really get into these people’s lives in a very short amount of time,” said Ellingson. The multitude of workers are reflected through the various lyricists and composers who have contributed to the musical, one of which is “Wicked” lyricist and composer Stephen Schwartz.
“I just love telling stories,” said Ellingson. “It doesn’t matter if it’s in the form of musical theater or straight play or the world of dance, they’re all telling stories; the narrative is just different. You can educate, you can entertain and you can enlighten at the same time.”
“I think one of the biggest things that I will try to get across is that everything gets done but it doesn’t get done magically. People do it,” said Ellingson. “I think that there are some really beautiful songs and monologues that will get people to think about that. That would be my goal – not only for the students that are involved but

also for audience members to realize 'Working' is about work and it’s about different types of working.” Another form of narrative that will be showcased for MSUM’s spring theater season is a showcase of student choreography called “An Evening of Dance.” The event is expected to be very eclectic, with choreography ranging in styles such as hip-hop, tap, modern lyrical and musical theater. “One thing that makes us unique in the area is also our focus on movement and dance. So many of our musical theater performance majors are also musical art theater dance minors,” said Ellingson.
Ellingson explained that through various choreography classes, students learn how to create strong narrative with their movement and gain an understanding of different techniques and skills associated with the world of choreography. Dance and movement works its way through all parts of the theater curriculum and challenges actors, as well as technicians, to find their personal narrative within theater. “Their voice may be in 'Working' or their voice may be as a choreographer in the dance show but pushing them to make a statement, to find their voice, to find whatever that narrative is – that’s what’s going to drive them and also hopefully fulfill them as artist,” said Ellingson.

Concordia College in Moorhead will be ending their Mainstage Season with a Spring performance of William Wycherley’s “The Country Wife”.
“
T
he Country Wife” was originally a 17th century play that was kept off stage and out of print due to its outrageous sexual nature. Today, however, the play has been revamped into a “restorative comedy on a modern fashion runway,” according to Director Christian Boy. The fast-paced plot presents a satirical look at gender roles and stereotypes by playing on exaggerated perceptions of the relationships between men

and women, bringing in the voices of “cuckholded husbands and underappreciated wives,” said Boy. Senior Alicia Auch described how this is conveyed through her character’s struggle to balance her relationship with her husband and her relationship with the man she wishes she was with. “All plays, whether they’re comedies or tragedies, are about two things: the human condition and relationships,” said Boy. Conventional love stories have proven to be one of the greatest, most relatable tales of the human experience. Jealousy, intimacy and faithfulness are several of the themes conveyed in “The Country Wife” and provide cast members with

scenes to express humor and double entendre language that speaks to the fun and edge of the theater experience. One other unique feature of this production is that several student designers are granted the opportunity to showcase their work. Seniors Brenna Frost and Melissa Thurn worked with set design and costume design. Their work was done in an effort to recreate the alluring, sensual appeal of 17th century anti-puritan ideology, boasting dramatically lush purples and vibrant magentas. As a student set-designer, Frost is in expert company with Director Christian Boy, who is a professional set-designer. When he is not directing on Concordia’s stage, he is designing either costumes or scenery for other
productions. He also works around the country designing scenery. The Fargo-Moorhead theatre community exemplifies the interconnectedness of staff and student and of lesson and expression, demonstrated through various modes of university collaboration. Boy has worked closely with NDSU costume designer Rooth Varland in what they termed as a “designer exchange." This year, the theater professionals collaborated on two projects where Boy designed the scenery for an NDSU production while Varland designed costumes for a Concordia production. “It’s a way for our students to be exposed to each other and for more networking in town,” said Boy.”
The Concordia Theater department has anywhere between 40 and 150 people audition for any given show.

alphie May is no stranger to the comedy industry, and that’s evident when you look at his vast number of comedy specials, his work on multiple TV shows and his extensive list of discography over the years. He’s got a foul mouth and loves making people laugh hard, and would love it if someone in Fargo-Moorhead could take him fishing when he’s here for his performance at the Fargo Theatre this month.
You’ve been to Fargo before. What do you like about our city? “I was there last year. I loved it. I wish that I could be there when it wasn’t snowing all the time and that I could actually check out the land. I want to go fishing so badly up there, or deer hunting."
You’ve been in the comedy industry for quite awhile now. How do you stay on top of things and keep your material fresh? “I draw from life, you know? It’s all from my life stories to the news to everything. It’s fun.”

After doing so many live shows over the years, embarrassing or awkward moments are bound to happen. Can you talk about some of those or a few favorite moments you have?
“Oh man, there are so many. I’ve had people go into labor during my shows. I’ve had like, 23 women have their water break. I’ve had a couple of near-conceptions at my shows where people got kicked out for a little too much rambunctiousness. But love is love, I don’t punish nobody. I have a great time. My shows are fun, but they’re all different because every audience is different. It’s awesome.”
You’ve been on a few reality shows in the past such as “Last Comic Standing” and “Celebrity Fit Club.” What is it like being a part of something that’s different than what you’re used to with live comedy? “There’s no reality in reality TV shows. That is the void of reality. It’s not real people, there’s nothing real about it and everybody is told what to do. For us, being comedians ... I always put the fear of God in it in order to give them so much material that they choke on it.”
I remember hearing about you performing at The Gathering of the Juggalos a couple years ago. That’s a completely different audience for you – how did you adapt? Did you see anything crazy?
“It was nuts, but it was great though. Everybody was worried because no comedian had apparently lasted at that for more than 15 minutes. I did two hours and 30 minutes. I went for a walk with my kids thinking, ‘Oh this should be fine, it’s a festival during the day time,’ and that walk lasted about five minutes before I saw a couple
[fornicating] and I turned my kids back around said, ‘Uh, okay okay, it’s time to go back in. Let’s go back to the bus and watch a video.’ It was one hell of a trip.”
You’ve had two new Netflix specials recently, correct? How are Netflix specials different than what you’ve done in the past with Comedy Central?
“Yeah, I’ve got six on there total and there are two newer ones. I love it so much more because you get to be free. You don’t have to be concerned with anything, it is what it is and it’s great that way.”
Do you have any big plans for the future or new material you’re working on?
“Tons, you know. Unfortunately, my personal life has given me too much material. My wife and I are getting a divorce, so I’m trying to deal with that while being a daddy and doing everything I can. It lends itself to a lot of material really. So, we’ll see what happens after this.”
What can guests expect from your Fargo show this month?
“Well, tell everybody that I’m a dirty, filthy animal because there are a lot of sweet people in North Dakota and I don’t want them to be shocked. I don’t want them to be offended or anything like that. As my granny used to say, ‘I’ve got a great heart but a foul mouth.’ I just want to make people laugh hard.”
Anything else you’d like to add?
“You know, I wish someone would take me fishing. But I love hanging out with people, so come to the show. I’ll make you laugh, I promise.”

THE HIERARCHY OF NEEDS FOR

W
hile in college, I was struck by one simple concept in my psychology class. It was the idea that you could break down a person’s basic needs in a simple pyramid. The psychologist Abraham Maslow broke down a person’s motivation into five areas: psychological, safety, social, esteem and self-actualization. His work challenged an assumption that people were motivated by things other than money or rewards. He concluded that they were motivated by basic needs and the pursuit of self-improvement. Maslow’s theory has continued to influence my work in experiential design. Over the last four years, I’ve been involved with several community events and gatherings that have helped me understand that people
have needs at events as well. Many events focus on the basics. The people planning them make sure that the date is set, the venue is booked, content is solidified, food and drinks are arranged and, if they have time, they spruce things up with decorations. These gatherings get the job done. They make sure folks are safe, know the details and get what they are promised. However, these events are often missing a bit of magic. They can lack an intention to detail that engage guests and help them create memories. I believe in experiential design. Just as a UX designer puts together a thoughtful user experience on their latest app, we as folks that host our community need to think through our

guest’s experience(s). In the middle of our startup community is a deep set of intention and detail planning that we hope matters to our guests. Our team makes sure to get the basics first. We lock in the date, figure out the content, ensure we have great food (vegan-friendly!) and let our community know when and where. After that, the real work begins. This is the moment that our creative juices begin flowing and we focus on two main objectives: wow-ing our guests and helping them build community. Here are a few fun examples that we’ve put together (or experienced as guests) that illustrate a commitment to experiential design.
Brunchin’: Artist-Designed Table
Drone Focus: Venue Selection
Over the course of the last three years, I’ve been part of experimenting with midnight brunches. Partnering with the great folks at ecce art + yoga, we created an experience with outstanding content, specialty-catered food and tasty desserts. During the 13 gatherings, we’ve had an artist or designer create the table in context with our theme, tie our drink and menu selections to the aesthetic and bring in musicians, magicians or performers. The best thing we did was invite folks to leave their phones at home and enjoy the time with people in the room.
Last year, Jim Sweeney of the Fargo Jet Center invited Emerging Prairie to host our first drone focus in the Jet Center’s new hanger. Our team had a once in a lifetime opportunity to use a unique space. It took a tremendous amount of effort from Livewire to produce the event, the folks at Field of View to create the drone derby activity and our caterers to set up a new space. The end result was a venue that illustrated the unique quality of the event – and the photos were fantastic.
TEDxFargo: Production + Aroma One of the unsung heroes of TEDxFargo has been the production team. The folks at Livewire consistently astonish the crowds with their creativity. During the 2015 event, their team reimagined the way the Fargo Civic Center could be experienced. The people in the room were able to watch from massive screens, see changing imagery above and watch light shows that they certainly were not expecting. Another experiment that Sue Gartin lead was to pump in wonderful smells in the lobbies and the bathrooms. Studies show that aroma can capture memories, and just like the folks in Vegas or dentists offices, we shared wonderful smells with our community in hopes of improving their experiences.
Mayor’s Summit on Entrepreneurship: Designed for Breaks Last summer, Fargo Mayor Dr. Tim Mahoney and Emerging Prairie partnered to host a small event with folks in our startup community and regional mayors. The content of the event featured a 20-minute presentation from a Kauffman Foundation research expert. After the talk, there were three short sessions with five presenters, who each shared a three-minute presentation about their work in the community. We had breaks in between and time after for folks to connect. Looking back, the total time of content was 60 minutes and we had 90 minutes of break time for folks to connect.
Fill the Dome: Student Engagement For the first three years of the Fill the Dome fundraiser, I served as the advisor. This community project has been one of my favorite projects to be part of. Who doesn’t love thousands of kids collecting food and dollars to support those in need? The design of the project is intentional. However, the project could seem cumbersome. The experience culminates after a day of schools dropping off their food into their squares and a press conference. The moment allows for the magical photo capturing the thousands of pounds of food before hundreds of volunteers back the food right up and send it off to the Great Plains Food Bank. The photo lives on in many of our heads.

o Fargo Jobs was created with the goal of making job seeking and recruiting talent simpler. The company was built with job seekers and employers in mind. In the employment industry, we noticed that there were a lot of dated and non-user-friendly websites with too many jobs that weren’t relevant. Job-seeking can be a full-time gig on its own and recruiting isn’t any easier, especially in the region’s current job market. Go Fargo Jobs aims to consolidate, simplify, and provide a channel for relevant quality jobs to FargoMoorhead and surrounding communities. Employers have many options when deciding where to advertise their open positions, and many of them can be quite costly. Our vision is to make that process cost-effective and get those positions in front of the right people. On GoFargoJobs. com, employers can place online listings, Facebook recruiting ads and listings in Fargo Monthly and Fargo INC! Magazines. Getting qualified applicants is ultimately what employers care about, and by using various digital marketing strategies and job syndication,

we can reach a very large and relevant audience. In addition, we recognized a need for a central platform for internship positions in our region. It can be expensive to post these positions, and with no dedicated place to advertise them, it’s often challenging for students or graduates to find these opportunities. This is why we allow employers to post internship positions for FREE on our site. It’s essential to get those positions noticed and give students and recent graduates one simple place to find them. Being involved and supporting our local community has always been important to us. Working with local companies supports our local economy and creates jobs. In our initial planning of Go Fargo Jobs, it was decided to use the company as a way to help support the community and give back. We decided Emerging Prairie would be a great organization to partner with to accomplish that. They have done incredible things by inspiring and highlighting local entrepreneurs like ourselves and have helped make Fargo a better place to live and work. Through our partnership, we will donate a portion of our revenues to help them keep doing what they do best: making Fargo great.

I think they’re just a body to do things, and here it’s completely the opposite. As an intern, we look at you for your opinions, your thoughts.
