uite frequently I find myself thinking about technology when I was growing up. I know that age makes this reflection different for everyone, but my thoughts on my time as a ‘90s/early 2000s kid goes a little something like this:

• I’d like to shoot a quick “rest in piece” to our family computers that met their demise at the cost of downloading music from Limewire of Kazaa, and a shoutout to the first terrible mix of songs I burned (with awe) onto a CD. • I will probably never figure out the trick to beating Minesweeper or have a Tamagotchi wake me up in the middle of the night ever again. • Dial-up internet meant that I could browse the world wide web until someone in the house was expecting a phone call. • I wish I could remember my first AIM (AOL Instant Messenger) username. • I wonder if my dad still has that stash of floppy discs in his desk. • Time flies when you wonder how long
your cassette tape hasn’t been playing because you have to flip it over to the other side. • I’m well aware that my collection of VHS movies is taking up unnecessary space, but I’ll never get rid of those ancient relics. On that note–be kind, rewind. • And today, nothing truly frustrates me more than running into a banana in MarioKart, Nintendo 64-style. This is just the tip of my nostalgia iceberg, really. Yet here I am, still heavily invested into “The Sims” computer game franchise (going strong since it came out in 2000, mind you), while putting together stories about drones, virtual reality and people who can create video games at the snap of a finger. In my interview with Botlink’s Alex Kube this month (page 23), he said, “View this as an opportunity, not a threat,” while talking about drone technology. I think that thought is something that resonates deeply with where technology will take us in the future, even though sometimes
we can be weary about change. Kube’s quote also, randomly, makes me think of Walt Disney. If you’ve ever been to a Disney theme park, the title of this letter might seem familiar. When Disneyland was built in the '50s, Walt Disney designed the Tomorrowland section of the park and its attractions to show the public his futuristic views and fascination with how the world was moving into technology in the time of the Space Age. If you visit the park today, Tomorrowland seems to be mired in the past. The rides are still fun, but it’s never going to be renamed “Yesterdayland,” therefore I think it will always be a reminder of the technology and ideas that lie ahead for our society in addition to how far we’ve come (hence my childhood reflection). So, think about this: What would Tomorrowland look like if it were built today?

And you might not have known it, but these industries are exponentially growing right here before your very eyes. We dove into a few of these popular sectors of the technology industry that are being developed locally and making an impact all over the nation– not just for businesses, but for people just like you, too.

As one of the cofounders and the chief strategy officer of Botlink, a local drone start-up, Alex Kube is well-versed in the current and future state of drones, their use in the business world and how everyday consumers like you can benefit from this current (and important) rise in technology. Botlink’s Role
Botlink is a Fargo-based company that provides hardware and software systems that allow drone users to collect, distribute and act on drone data. Once you actually have a drone, 23

Utilizing Drone Technology
The drone industry, as a whole, is moving very quickly. Kube explained that drone technology is one of those things that North Dakota isn’t behind on, and the state has been very heavily invested with making drones available here. But how about the rest of the world?

what do you do with it? How do you use it without completely disrupting your existing business workflow? Although they’re not an actual drone manufacturer, (the drones they do build are used for testing), that’s where Botlink comes in. And not just in Fargo, but all over the nation. “Really, what people want to do with drones is use them to make their existing business more efficient. The value in a drone is using it to capture data. So we (Botlink) want to make that process of capturing data, processing that data and actually using it to make business decisions more effective,” said Kube. Instead of flying your drone and waiting for it to come back to upload your data, Botlink provides value with hardware called the Botlink XRD, which is a small cellular device that sits on the back of your drone and allows users to send and receive data in real time. “We can start processing the data faster and then with our cloud services, we can process it faster than you could just on your desktop. Another thing that drives a lot of value is that we’ve connected our software with existing industry software. For

“What we’re looking at is similar to the time right after the iPhone launch. People think it’s cool, but there were so many articles about if we really needed all of the technology in it and what we would even do with it. And now, eight or nine years later, it’s completely ingrained in our lives,” said Kube. “I think we’re a couple years into that cycle with drones, where we’re seeing that interest take off quite a bit, but it’s still anyone’s game. It doesn’t matter if you’re in North Dakota or California or the Ukraine–it’s a very democratic marketplace and whoever has a solution can bring it to the table and make an impact.”
By now you might be wondering what drones can really be used for. Kube explained that the two biggest markets Botlink has catered to so far are agriculture and construction. Imagine being able to survey massive amounts of land to find out crop health in a matter of hours, or being able to gather construction site information such as land elevation surveys, virtual building walk-throughs or safety investigations. Time-consuming tasks can be made more efficient with the use of drones and the services Botlink provides to operate them. “Agriculture is really where Botlink got its start. It was one of the orderly adopters of drone technology just because they were able to operate a little bit under the radar and they were further away from airports,” said Kube. “It was just a safer way to get this technology out in the marketplace. And, quite frankly, they had a good use case, which was crop health analysis.” Kube stated that because drone technology is growing so fast, there are two other industries that he thinks drones have growing potential in: insurance and real estate. Let’s think about insurance for a second and imagine you run an insurance company that has to do inspections after a hailstorm. “In the situation of a roof inspection, time equals money and then there’s that huge safety aspect for employees. There’s a time frame after storms like that where they can’t even legally send that person up there for safety reasons. But if you use a drone to take those photos, count those impacts and have software that can automatically analyze all of that data, it saves a lot on cost and time and
increases safety for workers,” said Kube. And with real estate, using drones to capture even better and more thorough photos from all angles for listings only makes sense for customer satisfaction.
For People Like You
Maybe you’re not a business owner, but as far as the average consumer goes, how can your everyday Joe Schmoe or Jane Doe benefit from drone technology? The answer is rather obvious, and probably something that you interact with on a daily basis. “I think that one of the coolest things that I’ve seen from that consumer standpoint, personally, that has nothing to do with business, is that drones are allowing us to explore and experience the world in ways that we couldn’t before,” said Kube. “Drones, on the consumer level, allow us to continue sharing a deeper experience with each other as a society–another way to share information and participate globally with each other.” Think about something like Google Earth or Street View, but with even better and more elaborate views. Drones have the ability to broaden our experiences even further if we’re not in a specific place, especially when paired with technology such as 3D cameras or virtual reality. Sure, you can share the world easily if you have a smartphone and Instagram, but imagine if you can get a shot of any place in the world, from any angle or height, and have those shots constantly updated. Who needs a helicopter when you can do it easier and cheaper with a drone?
Be Informed Before Investing
“That’s one of the issues you tend to run into with the drone industry, is that there are a lot of places that you would want to legally fly a drone that you still can’t. You can get exceptions in certain cases, but right out of the box, you still have to follow the rules. The FAA* does a great job of listing all of the rules so you don’t have to worry about stepping on someone’s toes if you don’t know. It’s all written down,” said Kube. Due to the public space nature of drones, they come with government regulations, so Kube said that there are few things you should consider before investing in a drone. Will you use it commercially or as a hobbyist? Here are a few rules and tips to keep in mind, from Kube’s view, that apply to many consumers. ӽӽ If you’re going to be a commercial user and use the drone to make money, you’d have to get your FAA Part 107 cerficiate, which will allow you to legally fly a drone for commercial use. ӽӽ Remember that you are liable for anything that your drone causes from an accidental standpoint. Even if you have personal insurance, you’d also need business liability insurance for commercial use, an aviation policy and more depending on the use. ӽӽ Stay updated with current events and what’s going on with the FAA on a given day. The FAA may issue a TFR (temporary flight restriction) on a space that would normally allow flight. Kube gives the example of, “Maybe it’s Wednesday and the President is going to be in town, so you’re not allowed to fly drones over that area while that’s happening.” Another example is that you also can’t fly over a stadium when there’s a sporting event or similar activity going on. ӽӽ You can’t fly your drone within five nautical miles of an airport. Unfortunately, that means most of Fargo is off limits. You also have to keep your drone flying under 400
feet, which is easily tracked with the software you’re using. ӽӽ “I would also caution that if you’re using drones commercially and charging people for a service, to do it right. Make sure you know what the regulations are and be honest about what you’re doing,” said Kube. In other words, you can easily get into big trouble if you’re claiming to use a drone recreationally but then use it for commercial purposes.
Drones Can Make Your Life Easier
As a whole, don’t let the regulations or precautions become so daunting that they turn you away from utilizing the power of drones. “I think that the biggest thing I would want to make sure people understand is that drones are a tool that can make their lives better. They can help with efficiency and lower the cost of doing business, which also gets passed on to consumers,” he said. “I think it’s one of those things, too, that creates a ton of new opportunities for people to start their own small businesses around drones. View this as an opportunity, not a threat.”

irtual reality is a noun defined by dictionary.com as “a realistic and immersive simulation of a threedimensional environment, created using interactive software and hardware and experienced or controlled by movement of the body.” Not long ago, virtual reality seemed like something only seen in movies and you’d never think it was being developed right here in town. Jesse Hoffart, the Gravity Gaming manager at ByteSpeed, deals with the virtual reality industry every day and knows exactly how it can change our lives in multiple ways.
Bytespeed and Gravity Gaming
ByteSpeed is a Moorhead-based company that, since 1999, has custom-built desktops, laptops and servers for various uses and companies–such as education providers, financial institutions, city governments and healthcare facilities–all over the nation. Gravity Gaming is a sub-company developed by ByteSpeed that offers custombuilt PCs for gaming and other various uses, and provides the same type of warranty and support for different markets. “We do so much work all over the nation right here from our location in Moorhead, but we’re still pushing locally. It almost seems harder to do local work than it is nationwide, because people just don’t know what is really here locally for this industry. There’s so much in FargoMoorhead, and the gaming community is really growing in this area and getting bigger,” said Brenda Clifton, ByteSpeed’s marketing manager.

It’s not hard to get your hands on an actual virtual reality headset, but what to do once you have one is where Gravity Gaming comes in. Although they don’t regularly supply VR headsets, they’ll provide you with a VRready PC that is specifically designed to support your specific VR needs, whether you’re an average consumer or not. “There’s a certain level of performance that you need to run VR, otherwise you’ll have stuttering in the images. One thing that’s important to think about when it comes to virtual reality is that you want to make sure you have enough power behind it because you can’t just have a headset, you have to have a PC too,” said Hoffart. “That’s where Gravity Gaming comes into play. We’ll make sure you have what you need to use that headset. It kind of gives the average consumer a gateway to do a lot more than what a laptop can, and it’s not just for gaming.”
Utilizing The Benefits
Hoffart explained that there are three industries that Gravity Gaming currently caters to the most: education, gaming and business. The gaming benefits of virtual reality are a given–a more immersive experience while fighting off robots or realistically shooting a bow and arrow in virtual reality is truly a one-of-akind. And even in the business world, Gravity Gaming sees companies such as engineering firms using virtual reality to design buildings and give clients an actual walk-through of their building for a better sense of scale, as opposed to just seeing a 3D image. But education is a market that Hoffart says he’s seeing major growth in when it comes to utilizing their virtual reality-ready systems. “We deal a lot with education and it’s currently an exponentially growing market. You’re basically able to transport yourself and do something like view the anatomy 29

of a person, visit the Great Wall of China or have a virtual science lab right in front of you so you can mix chemicals to solve problems or identify minerals,” said Hoffart. “There’s this huge education side where people are actually learning by using virtual reality.” Education might not be the first thing that comes to mind as an industry that would benefit enormously from virtual reality, but it only makes sense. Can you imagine being able to immerse yourself in a historical event instead of just reading about it in a textbook? In fact, this has been seen in the last few months with Time’s recent “Remembering Pearl Harbor” virtual reality experience–an interactive roomscale experience that transports you back to that unforgettable 30 | FEBRUARY 2017 | FARGOMONTHLY.COM
“Through ByteSpeed, we do trade shows around the country and see all of the potential. So, we’re pushing that to our current customers–to try out VR for education. We stick to what we know when it comes to the hardware side, because other people know how to do software development way better than we do. We know how to build the PCs and support them and keep them going,” said Hoffart.
Future Realities
“I haven’t seen much else for rapid growth except those three markets. If you think about it, your casual life, your business life and your educational life take up a lot of your life, so I do eventually see it being used quite a bit in everyday life. Where it goes will be interesting,” said Hoffart. After visiting numerous trade shows over the years, ByteSpeed’s staff said that they have also seen the possibility of virtual reality being used in the
medical world when it comes to something like being able to learn surgical procedures and functionally use those tools to do so in a VR space. Even something like augmented reality (AR), which is an entirely different concept, is something that can take things to another level in the future. Hoffart explained that there are just development kits for AR and no consumer-level business products for it yet. “Imagine you wear glasses and you’re looking at a table and suddenly you can just put something on top of it. Unlike VR, where you completely black out your vision, AR allows you to still be in your environment but it can transpose objects right in front of you,” he said. “I see that one being used a lot for something like a trade profession. Let’s say you’re a mechanic and you can have step-by-step instructions appear right in front of your face or something like that.”
The Reality Of Virtual Reality
When it comes to virtual reality headsets themselves, Hoffart explained that the two “juggernaut” consumer-grade headsets that Gravity Gaming deals with are the Oculus Rift and the HTC Vive. Although they each have exclusive features, both are extremely comparable in the sense that they both track the height of your eyes for 360-degree room viewing, have full room-scale capabilities and controllers that allow you to also use your hands in virtual reality. “I honestly think, in the future, virtual reality will definitely become more in-place in our lives. Getting the hardware cheaper is going to be the next step because we’re only really on the first generation of headsets. I see the resolution inside the headsets getting better and even the price going down as they keep coming out,” said Hoffart. “Overall, it looks very much bright to the future that most people are going to see and use it at some point in their life.”

The area is quickly becoming a hotbed for video game developers who are living out their dreams. As the founder of PODS Game Design, a business dedicated to teaching the next generation of video game designers, David Binkard has taken the future of FM's gaming scene into his own hands.

“Making video games was always in the back of my mind as one of those dream careers that just seemed so inaccessible,” he said. While teaching creative writing classes at MSUM’s College For Kids & Teens summer camp program, Binkard hatched an idea for the program to offer kids classes on video game development, an opportunity he always wished he had as a kid. It finally gave him the chance to improve his video game-making skills while also introducing the possibilities to the future generation of developers.

PODS Game Design Presses Play
When David Binkard was asked as a kid what he wanted to be when he grew up, he always responded with what he believed was a more “practical” career choice: a writer. But it wasn’t the only path he was interested in pursuing. With every word he wrote, he continued to wonder if his immense interest in video game design would ever be more than a hobby.
“I thought it would be cool to put together a class that showed them just how accessible video game design really is, that it’s something they can do,” said Binkard. “Anyone can play video games, but when it comes to making one, that’s something kids often don’t get to experience.” He played around with RPG Maker MV, a role playing game (RPG) software that simplified the designing process for kids, and tried to figure out how he could take what he knew and adapt it to a lesson plan.
In 2015, Binkard pitched the idea to the College For Kids & Teens program’s director and it took off. But what started with Binkard only teaching two classes of 20 kids grew to over 100 eager students requesting more. He believed the only way to meet the demand was to offer classes outside of College For Kids & Teens. It was then that Binkard created PODS Game Design, an educational group dedicated to teaching kids ages 9 to 18 how to create video games.

From Perham, Minnesota, to Belcourt, North Dakota, and every town in between, PODS travels to bringing video game design classes to interested kids through community educational programs, schools and park districts. Without a designated business location, PODS is able to pack up its own laptops with the necessary software and provide pop-up courses anywhere. “We found we had more success bring our classes to the students rather than having people come to us,” said Binkard. PODS offers roughly 12 different types of classes ranging from beginner to advanced, each teaching kids everything from coding and scripting to creating characters and storylines. “I tell my students after the beginner class that they know more than I did after six months of me just fiddling around with the programs,” said Binkard. Today, PODS' maximum class size is 12 students, said Binkard, and a “small class size means a better student-to-teacher ratio,” but the demand is still growing. He’s hoping to capitalize on the momentum and expand the business in the future. “Right now, we’re looking at just cementing ourselves more in this area and then we'll probably look at expanding more later,” he said. Binkard is quite surprised and happy with the support PODS

Not Just A Game
Each class teaches kids more than just how to build a video game. Binkard believes it helps strengthen other skill sets that can help them in school. “It opens up a whole new understanding of subjects,” he said. “Math, in particular, is a very interesting subject that works in conjunction with video game design.” Kids apply formulas and solve mathematical equations when designing, similar to those they learn in school. It’s simple enough that they can handle the math involved, yet difficult enough to challenge them. “It helps them understand that when you encounter a problem, you can work through it,” said Binkard. “It’s always amazing to see how sharp and experienced kids at different levels get.” PODS has designed four demo games it uses for instructional purposes before each class: "The Quest for the Bedazzled Mirror," "Mouse Maze," "Destructo-Ball" and "Donut Invaders." Binkard is currently developing an additional game called "Penguin Panic" to be released soon. Before each class, he has students play the demo games to provide an overlook at what is possible and introduce the basics. With guided instructions and live tutorials, he takes a step back and allows his students to take the reins. “As we get closer to the end, I start letting them try to figure out things on their own. It’s all just part of the learning experience,” he said. “It's interesting how quickly they pick up on it."
Binkard said he loves seeing what his students come up with when he gives them the freedom to create. At the end of class, students will transfer their game to a CD to take home and show off to their friends and family. “Once they actually took the class and started getting their feet wet with video game design, they got excited and continued to take more classes,” he said. “It’s rewarding to see the students get excited about creating their games.” Binkard thinks the FargoMoorhead and surrounding communities need to provide more opportunities for future generations of video game developers. Currently, PODS is the only company of its kind that offers in-depth courses for kids on gaming design.
Game Nowhere Near Over
Now that PODS has been operating for over a year and a half, Binkard has been looking back at how much it has already accomplished, guessing to have taught roughly 300 to 400 students.
“I’m interested to see how introducing all those students to a basic video game design program at a young age will impact the Fargo-Moorhead area in five to 10 years,” said Binkard. Binkard is working on creating a summer camp for kids to offer students more advanced classes and give them a chance to show off their work. q: What is Dakota Carrier Network?

amount of internet bandwidth that our users use as North Dakotans doubles every 12 to 15 months. Our owner telephone companies and DCN–we’ve realized that our customers needed a place to store their data. Most of us are most familiar with cloud storage in iCloud, whether it’s our phone, pictures or contacts. You’re putting it somewhere else to keep it safe and that’s what we’re doing with our commercial customers. They might have files, banking information or pictures, for example. For us, we have web design companies that can be stored in our data centers and accessed via our fiber network. "The other concern that customers have is that they want to have safe and reliable data storage, but they also need to have quick access to that information. What positions and makes DCN unique is that we have this fiber network that runs right to our data center, so the performances of the end user are exactly the same and sometimes even better as if it was stored in-house.
DCN started. It was building that fiber network and interconnecting all 15 of the independent telephone companies. DCN does tie all of those networks together. “We connect fiber to every K-12 school in the state, every higher-ed institution in the state and then we also connect all 54 critical healthcare institutions. Every hospital in the state is connected with DCN fiber, or one of our owner company's fibers that then comes back to the DCN backbone. That’s really the foundation for everything that is happening. Everything we do is reliant on the internet, whether we know it or not. Our owner telephone companies realized that shift and they’ve positioned North Dakota very well to compete in today’s economy. DCN is behind the scenes, in most cases, to make all of the communication happen and give access to it.” q: What is the purpose of data centers? A: “We’re seeing exponential growth in data and data consumption. The
"Our customers–whether it be the banks, the hospitals, the schools–they came to us and said, ‘We realize that you’re building your network in a manner that never goes down.’ We have five nines (99.999 percent) reliability and we build redundancy into our power and fiber paths, so there are protection mechanisms built into every aspect of our business. And they realized that and wanted us to house their data." q: How do data centers benefit the general public and consumers? A: “DCN has our fiber network in North Dakota and we connect to all of the homes and end-users through our owner companies. DCN itself doesn’t offer anything residential, but our owners do. Then, when you access the internet from your home, it more than likely is going through one of our data centers and our fiber network. That network extends from North Dakota to the major internet hubs in Minneapolis, Chicago, Denver and Seattle. The major internet content providers–such as Netflix or Google–they have actually realized that the majority of the internet traffic in North Dakota is coming out of DCN’s data centers and so, for
example, Netflix approached DCN, and they installed the entire Netflix library in our Bismarck and Fargo data centers. So when you access Netflix through any of our owner companies or DCN, you are actually going to hit a Netflix server right here in North Dakota, instead of in Chicago. That means you’ll get a better experience. “The other business continuity or disaster recovery exercise that a lot of our key commercial customers are going through is, what if something catastrophic happens in the city of Fargo? They want to have their data geographically dispersed from Fargo. So, a lot of our larger commercial customers have a primary copy of their data in our Fargo data center, and then we replicate that data as backup to our Bismarck data center location. Or they use our Fargo data center as their primary and then they don’t even have to have a server anymore.” q: What is DCN doing to provide state-wide Wi-Fi? A: “It’s an extension of everything that we’ve been talking about so far. In order for you to have and benefit from the DCN network, today, you would have to be a business customer or have internet from one of our owner companies. As users, though, our life is all about mobility. DCN realized that and we said you know what, in order for more North Dakotans to take advantage of our network, why don’t we just put access points throughout the metro Fargo area, major population centers and distribute it across the state with our owner telephone companies? “The general public will have access to it only if you are a broadband subscriber in your home from one of our owner telephone companies. It all depends on what you have at home. We’re hoping to have final jurisdictional approvals by the end of January and then start construction in Fargo in the spring. Hailing from New York and South Florida with roots in Guyana and the American South, Darrell and Celena Randle are bringing the flavors of soul food and West Indian cuisine to the area with their new food business. It all started when the Randles were living in Miami, Florida, where they began making home cooked Thanksgiving meals for the homeless each year, serving over 100 people by their third year. Despite the joy of giving, the Randles struggled to get by living in Miami. The couple spent time searching for cities with affordable rent, better paying jobs and low crime rates and kept stumbling upon Fargo on list after
list. Celena Randle also worked at a call center at the time and frequently talked to callers from Fargo, and she took it as a sign when everybody had nothing but good things to say about living here. “It’s (Miami) fun and the sun is nice and everything, but it’s hard living there. We struggled a lot. We didn’t live in a good neighborhood and it wasn’t an ideal place for our kids to grow up,” said Celena Randle. “It’s easy to end up in bad situations when you’re living around it, and we wanted to live somewhere that was safer–a place that we could live comfortably and not struggle.”
FINDING A NEED The family became Fargo residents in 2011 and quickly grew to love their new city, worry-free. However, the couple noticed a trend whenever they visited their family back in Florida.

There is so much stuff down there that we didn’t have up in Fargo, so every time we went home we’d devour everything we could,” said Darrell Randle. “I couldn’t help but realize that there really wasn’t a soul food restaurant in Fargo or the state of North Dakota, that we knew of.” The couple soon recognized that there was a need for the food they grew up with. “We just wanted to introduce that type of culture that we grew up in. Darrell grew up with a lot of southern roots and I grew up with southern roots and West Indian roots. It’s a beautiful culture that we wanted to share,” said Celena Randle.

“We never got to finish college, but that doesn’t mean you can’t make something of yourself. As long as you have a plan, stick to it and know exactly what you want to do, you’ll be successful. We want people to know that.” It’s clear that Celena and Darrell Randle aren’t in this for themselves. It’s to build an empire for their children, embrace culture and bring something great to the city they have grown to love so much.
GET YOUR FIX NOW The Randles officially launched Daran’s Southern Soul Food & West Indian Cuisine in Fargo on November 2, 2016 and have seen steady, and recently exponential, success and growth in popularity. Since they moved to Fargo to give their children a better life, it’s no surprise that the name “Daran” represents the first letter of each of their children’s names.
SO, WHAT CAN YOU EXPECT FROM DARAN’S SOUTHERN SOUL FOOD & WEST INDIAN CUISINE? Food from the soul. And not just because the type of food is widely recognized as soul food–it’s truly made from the heart. Their dishes come from family recipes or classic soul food and Caribbean traditions, all with the couple’s own twist. Both have experience working in fast food and have enjoyed cooking at home most of their lives, so it’s something they truly enjoy doing. FEEDING THE FUTURE Daran’s is currently operated out of Square One Rental Kitchen & Events, where the food is made and picked up by customers. When the business first started a delivery option was offered, but the Randles explained that with business getting much busier and only being operated by the two of them, delivery tends to be difficult until they can hire more help. But the couple has big goals and dreams for the near future. “Our goal is to have a restaurant open by April, before the summertime at least. We also want to start a foundation to keep giving back to the homeless, something we could bring back to Florida as well. We just want to help in whatever way they can,” said Celena Randle. “We’re trying to make this thing as big as we can because I really do feel like we’re on the verge of making history here. This is the kind of stuff that you normally have to travel to much bigger cities to get, but Fargo residents can have it right here in their own backyard,” said Darrell Randle.

Now, I suppose I could tell you to completely eliminate sugar by stressing how it will help to minimize the development of chronic disease, greatly assist with weight management, hormone regulation and cellular function. However, that probably won’t stick long, if at all, in your diet. So, what I hope to do is help you better understand what the ugly truth behind sugar is and how to fit it into your life in the smartest, healthiest way possible. First and foremost, there are two words that need to be clearly defined when talking about sugar: glucose and fructose. Glucose is found in starchy carbs and fruit. Fructose is found in fruit and anything with table sugar. Glucose can be beneficial to the body, as it can be used by muscles and other cells as immediate or stored energy. Fructose, on the other hand, takes a toll on the body because it requires the liver to break it down into either fat (think fat storage)

or glucose, which is not the best way to get glucose. For most, it’s difficult to metabolize. That being said, there is a hefty difference between natural sugars and processed/artificial sugars and sweeteners. While our bodies do register sugar as sugar, some sugars offer beneficial minerals and vitamins (think natural sugars) as opposed to those sugars that only wreak havoc on the body. Natural sugars can be found in fruit, maple syrup, honey and coconut sugar, to name a few. Harmful sugars that feed diabetes and other chronic diseases can be found in candy bars, sweetened beverages, soda and other refined goods. While there are more downfalls to sugar than I can list in this article, I will touch on a few biggies that will hopefully give you an idea of just how scary this stuff can truly be.
The Negative Effects of Sugar:

Sugar screws with your hormones, and trust me when I say hormones do not like to be screwed with. It provokes adrenaline and releases cortisol, which puts your body in a constant fight or flight state. This is a state that is extremely stressful for your body. We are not intended to function in this way for extended periods of time.

It thickens the blood, prohibiting steady blood flow that carries necessary nutrients.

Sugar decreases your natural leptin release. Leptin is your appetiteregulating hormone. If this becomes decreased, we eat more than our bodies need. This, in turn, leads to insulin resistance and potentially diabetes.

Sugar causes silent inflammation, which has been suggested to be connected to cancer and other chronic illnesses.

Increases fat storage and weight gain.

Aids in nerve damage and cardiovascular disease.
Disrupts the amino acid transfer to muscle tissue, which causes free radicals in your body and even more inflammation.

And there you have it, the scary truth about sugar. It’s essential to start looking at labels and be aware of the ingredients you are consuming. If you choose to consume fruit and other natural sugars, which have many benefits, be mindful about how much you are consuming daily. If you want to live a long, healthy life, sugar intake is something that needs to be addressed immediately. The longer you push it off, the longer it has to create toxic issues within your body.

Punchgut A Local Artist Within The Shadows Of Satire

keletal trees and white-washed roads plaster a North Fargo neighborhood on an ordinarily cold Friday the 13th. The clack of a retro door knocker is greeted by an eager dog and a relaxed man in a T-shirt and jeans. His home studio, a brazen room painted all black, is eased by frames filled with curious scenes and creatures that reverberate a singular noise: Punchgut. Under a deer mount baptized in the stream of three cans of black spray paint, his soft presence cuts the roar of irreverence. Fame-stricken melodies of Kanye West's "The Life of Pablo" play in the background as the local virtuoso attempts to summarize his work: a dark humor machine producing illustration, spray paint, collage, mixed-media and graphic design pieces.

"Black is cozy to me," said Punchgut in the warm room lit by flares of colorful desk toys. "I kind of bounce all over the place with styles and stuff that I like. There's stuff that I don't feel comfortable at doing or I'm not good at it, or I haven't put the time in. Oils are one of them, but I like my stuff a little bit messy when I do paintings."

Leaned over a bright green and pink wheel-less skateboard, he adds black to a monster sketch on the project he'll be donating to the Hawk's Nest, a local indoor skate park and skateboarding cooperative. Jabbing the tip of a paint pen into a piece of paper, he discusses different processes of transforming ideas
into physical works of art. "When I do illustrations, I like my line work to be clean, but when I get to make huge messes, that's nice too. And I like to make stuff look really beat up and old," he said. With a lineup of precision artwork and experience in varied mediums, Punchgut displays a wholesome appreciation for his following and impact on the Fargo art community. "I'm fine with wherever it is. If it's stapled up on telephone poles, which it had been for years, that part doesn't matter to me. If just one person sees it, that's okay," he said. His work reaches audiences online,

roberts alley on various places in alleys, in pop-up showings—such as his Wandering Ghost Gallery—and downtown bars with his unique mark seen in Würst Bier Hall and on bottle labels at Drekker Brewing Company. While he gains recognition in the community, Punchgut's desire to express himself begins with a comfort in the tranquility of creation. "That's all I really wanted to do. Sometimes I still question if that's what I should be doing. I mean, over 40 and being an artist sounds weird sometimes, but I feel blessed that I got to go this far as being an artist," he said.

Before he was the artist known by one name, Punchgut was Matt Mastrud, a chaos-fueled troublemaker who rode BMX bikes and found solace in drawing with his two younger brothers. The root of his irreverence is an anxiety that can be felt in the horror he fuzzes with humor.

"I haven't figured all of that out yet. I don't know if I ever will," Punchgut said about how anxiety influences his work. "I think it's just something I have to do, even if I'm just doodling or drawing, to me that counts. Or taking pictures for references to use for something else. Even with social media and taking a picture for Instagram–just keeping that creative part, whatever it is, keep something moving with creativity. If that becomes stagnate I get really depressed."

As with any art form, the experiences make the artist. But Punchgut has learned a thing or two from them, like sticking to sobriety and learning that his creativity isn't dependent on alcohol. "Once you get that reassurance that everything's going to be all fine and you can still create, I think you have less restraints," he expressed. "I've actually created a lot more sober than I have when I was using. And I'm willing to take

a lot more chances. I wanted to stay in my safety bubble, 'I've done this before, I've done this, I know I can do this.' Now I'll be like, 'let's see what happens.'"
Crafting a Community
A common thread connecting all artists is a harsh critique of their own work. Despite his insecurities, Punchgut retains a pure interest in other artists without opinion or ideology, only adoration. From musicians who are sewn into the process of his artistic expression to the artists he collaborates with, or memories of late souls who inspired his path such as Sharon Jones and Prince–he sees the inspiration behind the surface imagery. "People are embracing him to represent their town, which is cool. He's a good dude," Punchgut said about Minneapolis-based artist Adam Turman, whom he worked with in an online collaborative group called Squad 19. "It's good to see those people challenging themselves and it inspires you to do that yourself."
Among a vibrant group of creatives turning out inspired works in the area, Punchgut's minimalism, dark overtones and eye-addicting swirls of nightmarish detail have made a popular mark on the growing urban art scene. "One of my goals would be to just relax the art scene and make it more inviting to people, so it's not intimidating and they can go and enjoy it. I don't like that art got intimidating. It should be laid back where people can go and have a couple drinks, if they're capable to [laughs], and see what the people are creating locally," he said. Whether it's a large spray-painted masterpiece, a beat up old dumpster or a simple doodle tucked away in stacks of crumpled paper, a Punchgut original evokes a jumbled mass of emotions and connects to audiences with a distinct style and appetite for comic relief.

When I am asked why and how I got here in the Fargo-Moorhead area, my answer is pretty straightforward: Concordia College. Usually, this is followed by asking how I handle the weather and I spontaneously reply, “The glacial weather is balanced out by the warmth of the FM community.” Nonetheless, answering why I chose to stay here in the FM area after I graduated in December
2014 is when it gets interesting. I find myself constantly explaining these reasons to friends and family living in different areas of the United States or even those overseas that can barely put Fargo on the map. This is why I have decided to share with you my top five reasons why I whole-heartedly decided to stay in this emerging “Silicon Prairie.”
1. FRIENDSHIPS A woman from Kenya once told me, “Friends are the family you chose.” Since I am away from my biological Rwandan family, recreating a family in the FM area was vital. Guidance and extended open arms are paramount to friendship. The latter has been one of the core reasons why I am still here. Friendships, for professional and career growth, convert itself into mentorship, which solidifies your foundations in order to conquer the job market.
2. EXPOSURE The six degrees of separation theory in Fargo is taken to an even smaller degree because anyone can be one, at maximum two, persons away from their next business partner, mentor, employer or employee. This is a game changer for anyone graduating from college wanting to kick off their career simply by interacting with people that can connect them to the right person. What’s even better is that people are very accessible and getting coffee with almost anyone is possible here in Fargo.
3. AGENCY “Getting the job done!” should be a signature phrase of Fargo, because with the right people around the right table, you can overcome most of the challenges of the FM area. This empowers anyone who is lucky to be part of a cohort of community members devoted to making a

change. I am honored to be part of several circles and organizations in town making a tangible impact into the community.
4. GROWTH The rapid, dynamic and transformational stage of the FM area is mind expanding because these stages in other urban areas of the country are only seen in documentaries and books, whereas here, you can experience it live with your own eyes. Experiencing firsthand what developing a community looks like, with instances where you have a say as a community, is truly inspiring and empowering.
5. LEGACY Finally, as a lifelong nomad, a citizen of the world and a Rwandan, I truly hope that my brief passage in the FM area will impact not only the people in my entourage but anyone who truly believes in fostering a community where people’s differences are celebrated and provoke curiosity, resulting in the realization that futilities differentiate us–rather, we have more in common than we can imagine because all of us want to be loved and to love, to belong in a community, to be heard and understood, to share a meal, to celebrate one another, etc. This, to me, would be the legacy I would love to leave behind me when I venture toward another corner of this fascinating globe.

"The clientele. We have our regulars, but then every day is completely different. You don’t know who you’ll run into or talk to. You hear the best stories because people are traveling from all over the world. It’s exciting, and you get to talk to some pretty cool people."
Where do you normally get inspiration for new recipes?
"I would say that I’m more influenced by our kitchen staff and our chefs here. They’re very talented and I like watching them pair foods and flavors together. That translates so nicely into drinks. For example, a former baker had this awesome spread of cheesecakes with different flavors and I wanted to translate that into drinks, so we came up with an entire lineup of special ice cream cheesecake drinks."
What’s your specialty?
"I definitely like making more delicate drinks. I love making simple drinks perfectly. If you want a gin martini, I’ll make it for you spot-on. I like mastering those basics, and the fun stuff comes later. I pride myself in making a perfect martini, the best Manhattan you’ll ever have or a fresh, properly-made Old Fashioned, those kinds of things– being awesome at the basics and the thrills can come later."
Tell us about the drink you came up with.
"It kind of started out by playing around with the mojitos that we frequently serve here. I also got inspiration from a rose petal martini I had in Chicago that was so fresh and amazing. I became fascinated with pairing rose water. It’s not an easy thing to pair because it’s very fragrant, and not so much of a flavor. And then I got back to thinking about our strawberry mojitos but switched it to a Caprioska, which is similar, instead. So it’s a little take on that. With this, I decided to work the rose water into a simple syrup to add that aromatic feature into it."
“Strawberry Rose Petal Caprioska” • 1 ½ oz. Stoli Strawberry Vodka • 1 ½ oz. rose water simple syrup • Handful of mint • 3-4 rose petals • Half a lime • 2 strawberries (cut into quarters for easy muddling) • Soda Water
Why should customers order this drink?
"It’s different, but I think it’s a bold drink. It’s really refreshing and it’s a drink that either men or women can enjoy. It’s not a girly drink, which is something that people tend to think about mojitos or something similar. It looks great and tastes fresh. In the winter, a lot of people are making those rich, chocolate drinks but I’m providing a lighter palate."

Rose Water Simple Syrup: Use one part rose water and one part sugar. Bring the rose water to a slow boil and slowly whisk in the sugar until it all melts down and becomes saturated into the water. Muddle the strawberries with the fresh-squeezed lime juice and rose water simple syrup. Fontaine’s tip is to not muddle the mixture into a mushy clump, but just a little bit to get the juices going. “Twist and slap” the mint into the mixture to break up the veins (no muddling). Add the rose petals for garnish inside the drink. Fill the glass with ice and add the vodka before topping the drink off with soda water. Use a martini spoon to mix the ingredients at the bottom and lift them toward the top of the glass. Garnish with a lime wedge and mint leaves. 63
