We had the people of FargoMoorhead nominate and vote for their favorite local dishes and drinks over the course of the last few months to find the best of the best in the local dining scene. FLAVOR OF LOVE f you’re a regular reader of this magazine, I don’t have to tell you that we love food and the local dining scene. If this is your first time picking up an issue, I hope you fall in love with something new. Creating an issue dedicated to local food is something we’ve been planning and looking forward to for months. Not just because we love food but because Fargo-Moorhead has something special when it comes to the dining scene. That’s why we’re so excited to have successfully launched Fargo Monthly’s first ever Flavor Awards, which is planned to be an annual event and issue to showcase the winners from our city-wide poll. We planned the nomination and voting process for months and launched it well in advance so that we could reach as many people in the area as possible to find out what their favorite local dishes and drinks are. Instead of taking a direct spotlight on the restaurants, we wanted to focus more on the actual items being created, which I think is something that sets these awards apart from others like it. 20 | JUNE 2016 | FARGOMONTHLY.COM

Although a little friendly competition never hurts, the point of this issue wasn’t just to highlight the No. 1s and declare a bunch of winners. Our goal for these awards and this issue is to get people excited about the wonderful food and drinks that are created right here in our community and to give credit and recognition to the establishments working so hard to keep our restaurant scene unique. I personally got so excited throughout this entire process that it took every ounce of my willpower to not blow my entire checking account on trying all of the great items that were nominated. If you submitted a nomination or voted for this year’s Flavor Awards, thank you. Since we’re usually the ones giving food and drink recommendations each month, we appreciate your suggestions this time around. Your nominations could easily be somebody’s new favorite thing. We know that it's dang near impossible to ask every single human being in Fargo-Moorhead what their favorite dishes and drinks are, but we did our best to come up with a survey method that would reach thousands of people. And it worked. Here are some of the details behind the Flavor Awards.

We had a few guest judges give their input for the Best New Restaurant and Best Overall Restaurant awards and weighed their votes with the public's.

The nomination process took place from March 30 through April 14, with hundreds of individuals submitting the names of their favorite local dishes and drinks based on a given category. Then, we took note of every single item that was nominated and narrowed things down to find the top five in each category with the most nominations. From there, the final voting round with the top five nominees in each category took place from April 18 to May 1.

This locally-owned coffee shop will warm your heart the second you walk in the door and smell the doughnuts. Local beer distributor Bergseth Bros. celebrates a family legacy


L

ast month, Bergseth Bros., a wholesale beer distributor based out of Fargo, had the grand opening celebration for their brand new 125,000-square-foot warehouse. But with the new facility comes change. Rick Bergseth, President of Bergseth Bros., who has been with the company since 1975, is retiring. But he’s leaving the company in familiar hands­– his son Keith Bergseth is the general manager and his other son Ryan Bergseth is the sales manager. Having a brand new facility and having a father hand over the company to his son is not unusual; in fact it’s happened before. “The old warehouse was done the day before I got there. So, all I had to do is pay for it,” Rick Bergseth joked. “So now, turnabout is fair play.” FOUNDATION Bergseth Bros. was founded in 1946 by Rick’s father Milton and his brother Arno. Originally, they were a wholesale fish distributor, but were interested in the prospect of distributing beer to local retailers. It took some time to find a brewery that would give them a product

to distribute, as there were a lot less breweries in the 1940s. But eventually, in 1948, they distributed their first product: Fauerbach Potato Beer. “The first carload came in and it sold like crazy,” said Rick Bergseth. “But then the big time breweries out of the cities, Grainbelt, Hamms, started coming in and the second carload hardly moved at all. So they kind of scrambled and were doing different things, and finally they got noticed by Schlitz, and Schlitz offered them a contract.”

Distributing Schlitz, a beer that they still distribute to this day, was the first big win, according to Rick Bergseth. Not to say that it wasn’t a struggle at times. “They got to a point a couple years up the line where they thought about resigning it,” Rick Bergseth said. “But Schlitz came back and said, ‘Hey, don’t. We’ll give you some more support.’ So they continued to work it, until it became No. 1 in the market.” Then, in 1975, Rick Bergseth, who had spent several years first in Milwaukee, Wisc. and then in Pittsburg, Penn., came back to the company. “My dad and I had been talking and it had finally got to a point that he was so ill with emphysema that he had to do something,” said Rick Bergseth. “Either I come back or they sell. So my wife and I evaluated the situation and decided to come back.”

FAMILY LEGACY The longstanding family ties in the company don’t just end at the top. Tim Rezac, inventory controller at Bergseth Bros., is one of many with his own generational history at the company. His father worked at the company and his son currently does as well. “I think you bring in good people,” Rezac said. “Because you’re bringing in your family.”


The importance of cultivating good people to work for you and taking good care of them came from Rick Bergseth's own father and his uncle.

“Pretty much all of us grew up around it,” said Joel Rehder, the Minnesota sales supervisor whose father also worked at the company. “If it was an unpleasant place to work, that generation thing would stop pretty quick. But since we grew up around it and got to see what it was like, it kind of draws you in.” Rick Bergseth talked about the effect this kind of generational history has had on the company throughout the years. “It adds tremendous value,” Rick Bergseth said. “It gives people a different concept for the business, understanding the challenges, seeing your dad go to work at it and, sure everything doesn’t go so well, but it stil, it looks like it’s a fun business. It’s not the grindstone thing, there are rewards and successes you can tout. But they also understand how much work it is.”

“My uncle Arno used to take great pride in how many of our people owned their own home,” said Rick Bergseth. “More than once he mentioned it to me. And he said, ‘Look at that parking lot! All these people have newer cars than I do!’ But he took pride in that. And that’s pretty neat. That’s important. That makes sense. That’s an honorable goal.” FUTURE Rick Bergseth is enthusiastic that the company he's leaving after so many year is going to be in good hands. “I’m pretty confident in our future. The people we’ve got, what they’ve done to prepare themselves for their jobs,” said Rick Bergseth. “What we’ve been able to put together in 70 years is the people, the brands, now, the facilities, and our reputation. I am not worried about this company. I am real confident we’re going to continue doing well. And it’s because they want to do well.” Looking into the future, Keith Bergseth, who has two sons of his own, when asked if he plans to pass the company to his own sons had this to say: “If they want it. But they’ve got to earn it.”

How long have you been in the bartending business? “About three years. I started at Applebee’s and I helped open a lot of restaurants in town like Sickies and The Blarney Stone so I worked at those places as well. And I helped open the Toasted Frog when it came here so I’ve been working here since.”

Where do you come up with inspiration for your recipes? “I kind of go off of whatever is going on that day or whatever I’m feeling. If it’s a hot day, I’ll want to do something refreshing. If it’s cold out, I’ll do something hot. Sometimes I’ll make things for certain holidays. For example, for the Kentucky Derby, we did the Juleps and all that with the crushed ice and copper cups.”

Blossom gin fizz • 2 oz. Dripping Springs gin • 1 oz. lime juice • ¾ oz. heavy whipping cream • ½ oz. raspberry simple syrup • ½ oz. blueberry simple syrup • 1 egg white • Soda water

Can you tell us about the cocktail you created? "It's a variation of a gin fizz. I made my own blueberry and raspberry simple syrups to go with the gin and I use a little bit of cream, soda water and lime juice. It’s summer now and we finally have nice weather, so I think it’s a great drink to sip on while you’re out on our patio."

What do you like most about being at the Toasted Frog? “The staff. It’s the best place I’ve ever worked, and I’ve been through a few restaurants. The staff, management and the downtown environment is great. With the downtown restaurants, we’re not so competitive and we’re more like a team. It’s super cool.”

Pour all contents into a glass and dry shake without ice, using a tumbler, until frothy (about two to three minutes). Tip: add a Blender Ball to the glass while shaking to speed up the process. Strain into a Hurricane glass, add ice and top with soda water for a little extra fizz.

I

n the spring of 2002, my wife went on a culinary trip to Oaxaca, Mexico. She brought back with her two of my favorite food concepts: Mole and Elote. Elote, of course, is much easier to prepare and requires far fewer ingredients and less patience. Plus, it is the perfect dish for a backyard cookout this summer.

Everyone loves sweet corn in the summer months so why not offer up a twist on an already simple preparation? Sure, sweet corn is delicious with butter and some salt, but when you brush it with sour cream, roll it in cheese and season it with chili powder it becomes a side dish that everyone remembers for years to come. Many traditional recipes suggest simply removing the husk and

silk, applying a little oil and grilling until caramelized. Personally, I prefer to simmer the corn until slightly tender and quickly shock it in ice cold water. At this point, I can place the corn in the refrigerator until it’s ready to be finished. You can now place the partially cooked corn cobbs on a hot grill and quickly caramelize without the concern of burning, not to mention the grilling time is cut considerably.

ELOTE: MEXICAN STREET CORN ingredients

• 2 Tbsp. vegetable oil • 4 ea. fresh ears of corn • ¼ cup mayonnaise or sour cream • ½ cup crubles Cotija cheese (sub Parmesan or Ricotta Salata) • ½ tsp. chili powder (preferably ancho or similar fresh product) • As Needed: fresh cilantro, chopped (optional) • 1 ea. fresh Lime, cut into wedges

Pull back the husk from the ears of corn and remove the silk. Keep the husk intact for presentation if so desired. Lightly bush the corn with oil. Place on a medium-hot grill and cook until tender and caramelized. Remove corn from the grill and brush each ear with mayonnaise or sour cream. Roll the ears in cheese and sprinkle with chile powder and cilantro. Serve while still hot with fresh lime.

To them I say, “Get over it already!” After that, sprinkle the corn with an authentic Mexican cheese or substitute a freshly shredded Parmesan cheese. Finish with fresh chili powder or smoked paprika, fresh chopped cilantro and a squeeze of fresh lime.

My version of Elote is somewhat different than many authentic versions, but who cares? The important thing is that it looks and tastes amazing. I just use a bit more cheese and seasoning. Use how ever much you prefer. The important thing is that you use great tasting fresh corn and that all your guests talk about it at work the next day.

yle Colby recently finished a month-long tour around the East Coast, which he realized was a little different than what he’s used to doing as a musician. In a good way, of course. “We did a lot of house shows and coffee shops, and I had never really done that before,” he said. “You show up and there’s 20 people slammed in a living room. It’s different from a regular venue because it’s dead quiet, and you can tell everyone is there because they appreciate it. And then you’re selling CDs off of their kitchen table.” Colby started getting into music in elementary school, but it was the ever-popular punk band Blink-182 that opened his eyes to the world of music. While growing up in Detroit Lakes, Minn., Colby started to attend local shows, played in various bands throughout high school and became involved in the Fargo music scene before his music career really took off. When Colby moved to Fargo after high school, he joined These Hearts, a local pop metalcore band, around 2009. Music, as he dreamed, all of a sudden became a full-time demanding gig after the band got signed to major label Victory Records. From then on, the five members quit school and their jobs to hit the road non-stop. But life happened, and These Hearts called it quits in 2013

after extensive touring and two full albums on Victory Records. “Our singer said that he was having a kid, and we knew we wouldn’t be able to tour as much. We tried it with a different vocalist, and it just wasn’t the same. And a few of us were getting married, and some of us wanted to go back to school,” said Colby. “Right away, I started going for this singer/ songwriter thing. I knew in the back of my mind I would do it one day because I knew it (These Hearts) wouldn’t last forever.” And that’s exactly what he’s been doing in the last few years as a solo artist. Colby released his second sevensong EP this spring titled “The Cadence Hoax,” which

is special for many personal reasons. “It’s a lot about life stuff. My parents split up about two years ago so I have a song about divorce. I’ve had a few times where kids will come up to me and tell me they cried because they went through that, too,”

work with Aaron because he’s really good at what he does and he truly cared.” Colby describes the genre of his EP as the obvious singer/ songwriter acoustic vibe with a little mix of pop, folk and full-band tunes. Though he’s flirted with the idea of doing full-band work in the future, he’s happy with what he’s doing and frankly, it’s easier.

said Colby. “So it’s songs that resonate with people I guess, whether it’s about something like that or a love song or just something fun.” But this particular EP holds another kind of special spot in Colby’s heart. He drove to Salt Lake City, Utah, last fall to record the album with well-known musician Aaron Gillespie, the drummer of popular posthardcore band Underoath and current touring drummer for the widely known band Paramore. “We played with Underoath in my old band, and I did play a solo show with him a couple months back in Minneapolis. He’s kind of like a childhood idol. It was cool to go from that to him now being a friend,” said Colby. “We talked on the phone a couple of times and he was really excited about it. I wanted to

And the only person you can blame if you mess up is yourself,” he said. When it comes down to it, Colby won’t stop writing music and playing shows for people. It’s unsure where his new career path will take him, but with all of his experience, talent and the connections he’s made so far, the future is looking bright. And he couldn’t do it without the support of his wife, family and a little piece of advice he would give anyone else pursuing the same dream. “It’s cliché, but you just have to do it. You have to fail so many times before you have success. You have to suck. You have to take criticism lightly. Be yourself and don’t go out there trying to be the next Katy Perry. There are thousands of kids out there who are far more talented than myself, but they just might not want it as bad.”

Finding a good location has always been a challenge for this theatre company. “For us, it’s huge to have a downtown location, said Domres. “We’ve never really had that before. This should help us grow a lot this summer.”

Barbacoa, Sanctuary Events Center, Fargo Brewing Company, Live Wire Entertainment Media Productions, CHALK, Notorious Signs and Hatch Realty are bringing "Brews on Broadway: a Pop Up Patio" to Downtown Fargo. Every Thursday, Friday and select Saturdays from May through October, Brews on Broadway will be open from 4 - 10 p.m. There will be live music and

cold brews on the spacious patio. The pop up is cash only and will operate rain or shine. "We saw this as a great opportunity to work with fellow local entrepreneurs to bring a unique experience to downtown Fargo," said Aaron Duma, director of events for Fargo Brewing Company. "Outdoor space is very limited downtown and with the Goodyear space currently unoccupied, we thought it would be a fun way to bring some energy to the corner of Fourth Avenue Broadway."

For more than 20 years, Brian Regan has been one of the most successful comedians in America. His style of observational and clean comedy has made him a favorite across the country. On Friday, June 10, Regan will be taking the stage at the Fargo Theatre. Due to popular demand, a second show has been added that night. We chatted with him about his upcoming show. We’re very excited for you to come to town. Have you ever been to Fargo? “I have been to Fargo. I’m trying to think of when I was but I have been there before and it’s my favorite place on Earth.”

Wow. That’s high praise. “Well, it’s in my top 1,000.”

How has comedy and touring in general changed over the years? “There are things that are the same from when I started and there are


things that are completely different. It’s like the comfort level, if you’ve been at it for awhile, you get to a point where you’re not staying in the worst hotels, you can stay in nice hotels. Maybe instead of traveling on Greyhound Bus, you can hop on an airplane every now and then. But, it can still be grueling, especially when you’re doing four onenighters in a row. I don’t complain about it. I’m very lucky to be doing what I’m doing and I love every part of it.”

Is there something that you particularly like or don’t like about the touring life?

“I told my manager, ‘If I ever quit comedy, it would have nothing to do with comedy, audiences or anything. It would have to do with hotels not having my room ready.’ The absolute most frustrating part of what I do is hotel check-in desks. Time and time and time again, they click on their computers and they look at you and you know that they’re about to tell you why there’s a problem.”

When you come to town, you’re doing two shows. What’s it like to perform two shows back to back? Is that kind of weird or do you feel like you’re repeating yourself?

“You have those moments where, all of a sudden, you start doing a bit and you think, ‘Wait a second, did I do this at the end of the first show or did I do it earlier in this show?’ You get those little paranoid moments but it’s just the nature of the beast. When I lived in New York City, sometimes you do as many as five to six shows in a night. You bounce around from club to club. Doing two shows is not a hardship. It’s fun to be able to do that and I’m lucky enough to be able to have to do two shows in some cities."

Tell us about your comedy style and who you are influenced by. “It’s hard to describe it. I heard an expression: writing about comedy is like dancing about architecture. It’s kind of impossible to put your hands around it. It’s also challenging to self describe it. There are descriptions that people

like to put on it but I find all of it limiting. People say that it’s observational. Yes, it’s observational, but what does that mean? People then say it’s clean. Well, yeah, it’s clean but I always like to use the analogy that the Beatles music was all clean but if you were to describe their music as clean, somebody would scratch their head and go, ‘What does that mean?’ I feel that way about my comedy. It’s always odd to me that it gets overly described that way because I feel like it sends a statement that I’m not trying to send. “I just tend to like to talk about things that are interesting to me at whatever point in my life I’m in. My interests change over the years so I’m talking about things that interest me these days.”

Do you have any recommendations for new comedians that you like?

“Oh boy. There are so many great comedians. There are people who don’t need help from me. You know what I mean? Jackie Kashian, a woman, is very funny. Taylor Tomlinson, she’s really young. I had her open for me a few weeks ago. She was on ‘Last Comic Standing.’ I think she’s got an interesting thing going on. The more unique somebody is, the more intrigued I am as a comedy fan. Those are two who I think will go quite far.”

What would you like to say to your fans in Fargo that are coming to your show?

“Thank you. Thank you for coming to my show. I hope I can bring some funny thoughts your way and I hope you enjoy it. I’ve never been good at selling myself. I wish I had that Donald Trump quality. I just say, ‘Come on out if you want to see some adequate comedy. If you like five out of 10, then I’m your man.’

URBAN DINOSAURS In June 2015, Rick Stenerson had visited a marketing and licensing expo in Las Vegas with the idea of starting a new project. He had ideas for a brand, but he needed help. “I had this dinosaur line in the ‘70s called Club Dinosaur, which was sort of a take on Club Med,” said Rick Stenerson. “When I looked back on the drawings to maybe reuse them, they were good, but there were a little dated.” His dinosaur idea needed some reinventing, so he collaborated with Noel “Scotch” Anderson, a long-time friend and local cartoonist. The pair met in the early ‘90s when Anderson worked for Rick Stenerson at Take 2 Video in Fargo and they had grown to work with each other frequently in the radio and advertising business.

A few sketches and comic cons later, Urban Dinosaurs was born, or rather, hatched. It officially became a company with trademarked illustrations at the end of summer in 2015 and the first round of clothing products was launched this past spring. To complete the company’s trio, Rick Stenerson’s son Jack Stenerson joined the prehistoric party after growing up working at Take 2 Video, starring in their commercials and also knowing Anderson for most of his life. Jack Stenerson currently operates Soundlife Music, co-owns a local music venue called

The New Direction and plays in a few local bands, so he’s using his networking and social media skills to oversee the marketing and online presence of Urban Dinosaurs. “Right now we’re just testing the demographic and seeing what’s the best. We don’t know who exactly is going to love it,” said Jack Stenerson. “My idea was from when I walked into an Urban Outfitters and saw every shirt had a random giant image on it. It didn’t even have to mean anything. I knew we could do that with our ideas too.” “It will be interesting to see

what kind of a reach we can get just online from Jack with the music promotions he does and knowing people all over the country,” said Rick Stenerson. So far the company has been able to launch a handful of shirt designs with the dino characters they’ve brought to life. The shirts come from collaboration with a whimsical, underground comic book that Anderson has created to portray the lives of the dinosaurs in relatable, funny scenarios. “It’s a bunch of Gen-X, coffee-swilling hipster dinosaurs. It’s a modern

“One of the reasons is because everybody loves dinosaurs. We have the youth, obviously, that’s a big market, but it’s really everyone,” said Rick Stenerson. “That’s going to be our new launch. We started marketing the adult shirts and now we just got a bunch of youth stuff printed,” said Jack Stenerson.

history of strong ties to Fargo, that doesn’t mean this project has to stay local. “It would be great if it could be national. I’m going to be doing another issue of the comic book and taking it to more conventions and comic cons, but there’s a lot of different possibilities, whether it’s putting the dinosaurs on buttons or skateboards,” said Anderson.

One of the most eclectic supergroups in recent rock and roll history is coming to the Scheels Arena on Monday, July 18. Alice Cooper, Joe Perry and Johnny Depp (yes, that Johnny Depp) have formed the band Hollywood Vampires. After debuting at the 2016 GRAMMY Awards, the band set out for their worldwide tour. I think I speak for the rest of Fargo when I say that we’re excited about your upcoming show.

“As it happened, this tour got booked so late, we were really lucky to even get a gig. Most people book their tours back in January or before that. Because of everyone’s schedule, it was so hard to organize this thing, we were just happy that we were able to put a tour together. Once you’re up on stage and the fans are there, it doesn’t matter. Everybody’s glued together by rock and roll. It’s going to be great to be there. That’s what I wanted to do when I was 18 and, you


know what? I’m still doing it and I still love it. I’m going to bring that to Fargo with the rest of the gang.”

After all these years, tours and bands, how does this tour compare to previous ones? “This tour is different. If it were an Aerosmith tour, there would be a lot of things that would be the same as the last one, at least as far as organizing it, figuring out what we’re going to play, what the set list would be and all that. From our end of things, just putting a tour together, that doesn’t change too much, but this is different.

"It’s kind of like we’re all up there for different reasons but the main one is to entertain our fans and also to play some rock and roll because that’s what we want to do. I know that Johnny (Depp) has wanted to be on stage with a guitar in his hand and he’s wanted to do that his whole career. At this point, he’s finally got a chance to do it. I’ve known Alice (Cooper) since way back. We’ve always said hi back stage and have said, ‘Someday we got to get together, record and write a couple of songs.’”

Johnny Depp is a respected musician in his own right but when you first started performing together, was there anything that he taught you or that you taught him? “Any time that you play with a musician who’s got chops, and even if they’re into this kind of music or that kind of music, you always learn something. I can remember that when I watched that movie ‘Chocolat,’ which was one of my favorite Johnny Depp movies, he plays guitar in that movie. When I found out that was really him playing – he was playing a style of music I never studied. I said to myself, ‘If I ever get a chance to meet him, I’m going to ask him for a guitar lesson because I don’t know that style of music.' “A few years later after finding out that

was him actually playing in the movie and it wasn’t a trick of the camera, we became friends, I did ask him, ‘Show me that riff. Show me how you played that.’ You always learn something one way or another from playing with different guys."

Your resume is a "who’s who" of rock and roll. Who would you love to play with next? “I’ve never met Bob Dylan. One of these days, I’m going to make that happen one way or another, either by synchronicity or whatever drives this big machine called the universe. Bob Dylan is a guy I would like to meet and, hell, if the chance came around that I’m able to play my guitar with him and sit in with him. He’s the guy that, there’s no one else like him. Someone like him happens once in a century.”

I’ll be the first one to buy tickets when you go on tour together. Final question, what would you like to do in your free time while up here?

“I’m not sure. It depends on how much time off we have off between gigs. I know what the countryside is like up there. It’s beautiful. I like to get out and go in the woods and see as many parts of the country as I can. We have everything from deserts to the arctic. This is an amazing country. I try to see as much of it as I can when I’m on the road. That’s one of the reasons I like traveling by bus. Even when you’re driving down the highway and you look out to the side and there’s something that you haven’t seen before, you pull over and hang out.”

We can’t wait to see you and rock out with you.

“We’ll give you every little bit of that and more. Like Alice said, ‘You may be leaving with a drop or two of blood coming out of an ear.’ I play every show like it’s the last and I’m going to bring that attitude to Fargo and we’re going to kick ass. We’ll see you there.”

is becoming a foodie hotspot of the Midwest. Chefs, cooks and culinary artists are experimenting and deliciously expanding our palate, creating amazing and extremely appetizing dishes. Of course, a lot of these incredible creations won’t always fit the “healthy” part of what I call the “fit life,” but finding balance is important. In fact, you should try something new and indulge a little every now and then, in moderation, which is key. After all, finding that balance is part of a healthy and fit lifestyle. Local restaurants have made great efforts to meet the many dietary concerns of the public and cater to making healthier options. The menus and food preparations are designed to bring out specific flavors, and it is truly an art. However, don’t hesitate to ask

if you can have your food prepared a different way or maybe have that sauce on the side. I’ve found that most restaurants will work with guests to make adjustments and make your meal your way. I enjoy what I call “fit food” and I am able to go out to eat and order food that fits my lifestyle. My definition of fit food is natural food: proteins, vegetables, fruits, complex carbohydrates and healthy fats. In other words, foods that are real with real ingredients that your body knows how to use and process, giving you the quality of life you deserve. This month, I’ll give you some examples of fit food options at local restaurants and what to watch out for. I’ll even share some examples of how I order my food when I go out to eat, how I structure my plate and meals, but most importantly, some of my local picks for you.

BREAKFAST

Protein and complex carbohydrates I love breakfast and it happens to be my favorite meal of the day. Start your day with some protein like eggs or a veggie omelet. Skip or ask for cheese on the side so you can control how much is added. You can even ask for an egg white omelet. Order a bowl of oatmeal, but skip the cream, sugar and raisins. Instead, top with a few chopped nuts and some fresh berries.

Protein, vegetables, complex carbohydrates or healthy fats Salads are great options, but be aware of added dressings and toppings as these add a lot of calories. Fill up with lots of greens and think lettuce and veggies. Add in lean protein like grilled chicken, but stay away from breaded chicken. If meat isn’t for you, look for other sources like black beans to get some protein. Make sure to order your dressing on the side and use sparingly (dip your fork into the dressing before taking a bite of salad). My favorite dressing is actually salsa or pico and regular mustard. If those aren’t options, look for a vinaigrette or oil and vinegar. Be mindful of what’s going on your salad and try adding some avocado, guacamole or a little mozzarella cheese. A broth-based soup also pairs well with a salad, but be sure to ask if it’s broth-based or cream/cheese-based.

Protein, vegetables, carbohydrates When you see the bread basket on its way, decide if you want the bread or if you want a different starch/carbohydrate such as rice or potatoes with your meal. If you want the latter, then order a side salad right away so you aren’t tempted or find an appetizer that is a good source of protein or a vegetable and share this with your party. When choosing a main course selection, look for lean protein such as steak, chicken or fish. (I understand there are plenty of vegetarians and vegans, so look for healthy and filling options like beans or quinoa.) Pay special attention to how the meat is prepared, choosing grilled or broiled over breaded and fried options. You can always ask for a different method of preparation and most restaurants will help accommodate your request. Also, look for vegetables that are raw or steamed and skip those loaded with oils, butter or sauces. A top pick of mine for a good carbohydrate option is sweet potato or potato – not the fully-loaded ones, but rather a clean baked potato.

Remember that little word “balance” I mentioned and how I talk about moderation being key? Give yourself permission to indulge a little. Choose one meal, but make it good. Have a meal at a new restaurant in Fargo or Moorhead this week. Maybe dining out is your one meal, so go ahead and order this meal “as is” on the menu. You’ll appreciate the meal when you make it special. The Fargo foodie scene should be discovered one bite at a time. Set that fork down between bites and allow yourself to fully and completely enjoy your meal. Fargo is home to many culinary geniuses and to experience their creations is an adventure in itself.

T

he key to crushing any job interview is always preparation. As with anything, the more prepared you are, the more focused and confident you will be when the time comes. Don’t start preparing the night before either, make sure to give yourself a few days to get organized and do all of the proper research beforehand, without being in a rush. Prior to the interview make sure you do thorough research on the company. Employers want to know that you want to work for them. They don’t want to hire people just because they are desperate to get a job somewhere. Demonstrating that you have a good amount of knowledge about their company shows that you are organized and are interested in working for their company. During your preparation do some research on the internet about common interview

questions. Most employers ask many of the same questions, some will most likely be general questions followed by job role specific questions and behavioral related questions. Research questions from each of those categories and prepare an idea of how you would answer them. Additionally, check if the company you’re interviewing with has a profile on Glassdoor.com as they have interview questions listed that were actually asked by the company in prior interviews. Lastly, you need to dress the part. The best guide for interview attire is always to go on safe side and dress professionally. Employers won’t look poorly on you for overdressing but if you underdress it could cost you. Find out what the dress code is on the job and dress up from that. Good luck!

o you’ve finally found a position that excites you. The next important step is preparing for the dreaded interview. We have all felt it: that sweaty-palm, tight-chested feeling of anxious anticipation before a nervewracking meeting. There are a few key things, though, that can be done to ensure that your impression sets you above the rest of the crowd. Many recruiters today have adopted an interview format where probing questions are asked to draw out previous experiences and predict future behavioral pattens. This method of questioning is extremely effective as it engages the prospective employee and encourages in-depth answers. A behavioral interview essentially requires you to tell stories about yourself.

Before the interview Think about it from the employer's perspective. Empathy, or the ability to put yourself in someone else’s shoes, is an extremely versatile soft skill that can be applied to almost any field. If you approach an interview thinking about how you can make this decision as easy for your potential employer as possible, you will have a greater chance of getting the job. Think about it from their side. As a company, what assets would you look for in potential employees? Research, research, research. It’s crucial to discover as much as you can about the company you are hoping to work for. Find out their mission, company culture and values, as well as any specific qualifications for the position you’re applying for. This will help you determine which stories and past experiences are relevant and can narrow your narrative so that it is clearly applicable to the position. Have a chat with yourself. Once you have researched the company, spend a few days constantly asking yourself what you bring to the job. By asking this of yourself everyday, you will be able to build up a repertoire of experiences and values that are fresh on your mind. They will also be easily remembered during a lengthy interview.

During the Interview Be yourself. One of the major attributes any employer will want in an employee is honesty. Being natural and relaxed will show that you not only handle pressure well but that you are truthful in your portrayals when answering questions. Be goal-oriented and articulate in your future plans. Clear communication is an essential skill to many positions. Informing your potential employer of future goals demonstrates that you have put thought into the application and, from an employer’s perspective, will be a sound investment of time and training.

If an issue with a coworker comes up, what steps would you take to resolve it and why?

These are definitely the most difficult questions to answer as you have to describe a situation that is less than ideal and showcase it in a way that shows you are an asset to the company. The most important thing to remember when being asked these questions is that everybody fails. In work, as well as your personal life, the most important thing about failure is the ability to learn, grow and discover the positive in every ‘negative’ situation. It’s extremely important that you prepare yourself ahead of time for these questions. You want to describe an experience that is insightful and demonstrates your talent for analytical thinking, as well as your ability to take responsibility for mistakes. This will show accountability to your potential employer. If you have made a mistake on the job, what are the steps you take to resolve it? What would you say are your biggest weaknesses? This position often times requires a heavy task load. How do you plan to achieve work-life balance while excelling in your position? What are some possible challenges you can for see yourself?
