ON THE COVER Nicole Kolbe has been running Gigi's Ice Lollies, a local food stand that sells organic, wholesome ice lollies, and making her grandmother's original sweet treats for the people of FargoMoorhead since 2013. Unfortunately, Kolbe hit a bump in the road when a fire happened at her production site, Square One Kitchens, earlier this past winter. Gigi's Ice Lollies has seen immense support from the community to keep it alive, however, you won't be able to find it daily at its usual spot in Downtown Fargo this summer. But you will be able to find this sweet stand at summer events such as the Red River Market, the Moorhead Farmers Market, FM Pride Week, RiverArts festival and more. ay is a great month for many reasons. The weather is finally starting to warm up as long as Mother Nature isn’t feeling mischievous, citizens are starting to be active outside (Fargo Marathon, anyone?), food trucks are hitting the streets, school is approaching its end for many and everyone’s mind is shifting into summer mode. While some ideas for summer activities might seem a little obvious – taking the kids to the zoo, swimming at a local pool, playing in the park, shopping at the mall on a rainy day – in this issue, we also wanted to give you a summer checklist that shies away from the obvious at times. For some, summer means no more homework,

spending three months at the lake and getting as much outdoor time as possible. For others, myself included, working 40 or more hours a week means we have a lot less time to cram in our summer activities, and we need options that are a little more weekend-friendly. Although we couldn’t list every possibility when it comes to summer activities (weekend getaways deserves an entire issue, really), I hope that the summer checklist in these pages gives you some ideas to try something new this summer, no matter who you are.

Aside from the heat, here are a few local things that I’m looking forward to this summer. I know that most of them are food-related, but can you really blame me? ROOFTOP HANGS After being cooped up inside all winter, I take every opportunity I can to patio dine. My favorite outdoor dining experience in town is the Rhombus Guys rooftop, where you can enjoy your pizza out in the sun and snag some great drinks from the full outdoor bar.

TACO BROS All winter long, I patiently await the return of food truck season. Being able to enjoy delicious Mexican street food from the Taco Bros. food truck behind the Empire Tavern is a summer must.

DOWNTOWN FARGO STREET FAIR Can you blame me for picking an event with fair food? The same goes for the annual Red River Valley Fair, but what I love about the Street Fair is that it’s right outside of our downtown office. I’m looking forward to taking breaks from work to check out the vendors and spending my lunch hours eating an unhealthy amount of cheese curds, gyros and sweets.

DETROIT LAKES A 45-minute drive to a beach and good food is well worth it for a relaxing day. I enjoy spending hot summer days on the weekends at Detroit Lake’s beach and following it up with a giant burrito meal and a margarita at Zorbaz.

Movie in the Park

Red River Kayaking From June 8 to August 28, explore the mighty Red River by renting a kayak from the Heritage Hjemkomst Center landing (202 1st Ave. N, Moorhead) or you can sign up to be a part of River Paddling Excursions hosted by Moorhead Parks & Recreation and River Keepers. Red River Zoo Junior Zookeepers Program

Lindenwood Park

This is a summer leadership program that is available for kids ages 11 to 17. The junior zookeepers help get the zoo ready every morning and they learn about the different animals at the zoo, on top of learning how to report information to the public and educate people. Sessions are monthly in June, July and August, and shifts are available in the mornings and afternoons. Participants must already be a zoo member.

Visit Fargo's largest park, where kids can play on a handful of playgrounds, including an adaptive one for those with disabilities. Rent a shelter or just find a grill and cook up some dinner in the great outdoors. Last but not least, rent bikes or pedal cars and take a few scenic laps around the park and down by the river.

Geocaching If you haven't heard of geocaching, it's time to set off on a new adventure with friends and family. All you need is a GPS or a geocaching phone app to discover more than 4,000 hidden gems throughout Fargo-Moorhead. Community Gardening Visit one of the many local community gardens to help with planting and growing. True community gardens are open to everyone and provide an area to grow fruits and vegetables, and sometimes they are divided into plots, which can be owned by individuals or groups. Restaurant Week first started in New York City back in 1992 and is now a major event that has been adopted by many communities around the nation. With the success of Fargo-Moorhead’s Restaurant Week in the last few years, it’s back again for thirds with just as many great participating restaurants. What type of spirits do you like working with the most right now? “Stoli, always. It’s my absolute favorite thing to work with at the moment, especially Stoli Peach. It’s probably my most-used thing right now. In every new shot I make, I start with that because I feel like it goes with a lot of the energy drinks we have, and it’s always great in drop shots. Stoli Vanilla goes with so many different things very easily as well, especially with dessert martinis.”

Where do you get ideas for new cocktail recipes? “The person that I learned most of my bartending skills from taught me to just use your nose and to put stuff together that you enjoy, flavor-wise. So, I always go off of my favorite foods or candies and think about how I can recreate it with alcohol. That’s why I like martinis, because you don’t have to mess around too much with mixers. It’s usually just straight alcohol and maybe some cream or something now and then.”

Can you tell us about your drink and why you’d recommend it? “I love making dessert martinis. I’m a sucker for a regular chocolate martini; those are my favorite to make. I wanted to put a little spin on that and come up with my own recipe that we can put on the menu here. So I thought mint would be a good addition, and of course, it’s that time of year for those delicious cookies. I wanted to make a mint chocolate martini that’s similar to a dessert and good for after a meal. People are really liking it so far.”

Start by coating the rim of a martini glass with chocolate and dipping in Thin Mint cookie crumbs. Add all spirits, half & half and chocolate syrup to a tumbler shaker with ice. Shake and strain into a martini glass. Garnish with a Thin Mint cookie and crumbs.

STRUGGLING TO FIND GOOD COOKS

xpect the worst and you’ll never be disappointed. Unfortunately, I’ve recently adopted this philosophy when it comes to hiring and retaining cooks for our business. Finding a hardworking, qualified cook has always been challenging in this town but now, with so many new restaurants, it’s downright depressing.

Only two years ago, I was writing columns and encouraging every young entrepreneur to consider opening a restaurant. This leads me to the next old saying I should have considered: be careful what you ask for becasue you just may get it. It seemed as though the possibilities were endless. And honestly, they are. Unfortunately, there just aren’t enough cooks to go around. It’s hard to keep the ball rolling with so few workers behind it. I certainly can’t be the only one feeling the crunch on this. Maybe it’s time

the entire restaurant community came together to figure out how to manage the problem, rather than continuing to recycle each other’s employees. Our culinary scene is growing quickly and that is a great benefit to the consumers of our area, but if we’re not careful, we are going to put the cart way ahead of the horse. We are soon going to realize that our foundation is weak. We can’t build a skyscraper on unstable ground and expect it to stand strong.


institutional jobs–jobs that certainly pay more and offer better hours, such as hospitals, food courts, chain restaurants, etc. But are these jobs really contributing to our culinary scene? The truth is that we need a balance of culinary students willing to accept jobs throughout a much wider range of our restaurant industry, not just institutional. We need to create a culinary culture in this town. Not just a “punch the clock” culture. Real chefs don’t work 9 to 5 Monday through Friday. Real chefs don’t go home after 40 hours. Creating a professional culture starts day one, whether it’s on the job or the first day of culinary school. We need to avoid going down a path of mediocrity and develop a path of professionalism and passion. Everyone who loves good food should get behind the concept of a local culinary institute, or get used to the idea of the same old cook making the rounds, punching the clock and simply looking for the next paycheck.

So what is the solution? In my world, it means putting the brakes on growth completely. Not only will we not grow our company anymore, we will consider cutting back in order to maintain the quality of our product and service. Outside of that, we need to develop a professional and respected local training program for chefs and cooks. A culinary institute, for example. As of now, most of our local culinary students are accepting

“A lot of people hear New Orleans and they immediately think Cajun food, and there certainly is some of that influence, but it’s not just Cajun food. New Orleans is really just a hodge-podge of culture, and it’s very heavily influenced by French, Italian and African,” said Hurder. “We wanted our menu to reflect the culture of New Orleans, not for it to just be a Cajun restaurant.”

Goodbye Monte's

The Name

The name of the restaurant stems from the Sazerac cocktail, which was invented in New Orleans and is the official cocktail of the city.

Aside from a completely different menu, Sazerac Alley is different from Monte’s in that it is meant to be a more comfortable, casual and affordable place to hang out and dine. “The vibe is more casual. It’s still elevated cuisine but at a reasonable price point. We’ll also be running some really aggressive happy hour and late night specials to fall more in line with what the rest of downtown is doing,” said Hurder.

Design

When you walk into the restaurant, you won’t see flashy Mardi Gras décor. The interior has exposed brick, ceiling pergolas, paver-like flooring, patio lighting and an open atmosphere to resemble that of an alleyway or courtyard commonly seen in New Orleans. Essentially, it brings the outdoors in.

Growing up with mother Adele as an artist and father Ron as a woodcarver, it comes as no surprise to learn that M. Koskela has been creating art since being able to pick up a pencil. Kaleb Koskela, M.’s brother, has also started a woodcarving business called The Karving Koskelas. Coming from a family of artists and creators, it’s safe to say that M.’s love and passion for the arts will never leave.

M

M.’s style is heavily influenced by sci-fi, fantasy and nature. Although skilled in many different mediums, working with ink, acrylics and charcoal is a favorite way to bring those ‘other’ worlds and portals to fruition. “I have a very vivid dream life. When I wake up, sometimes I have this image that won’t leave my head until I get it out,” said M., who also has two graphic novels on the backburner. But the creative juices don’t stop flowing there. “I was awarded a grant last year through Lake Regions Art Council and the McKnight Foundation. I was able to purchase a professional drawing tablet that has allowed me to create my first animations, graphic novel pages and has allowed me to work on graphic design projects.”

Inside the Studio

M. creates full-time but also finds time to write about local artists in the community through a blog section on mkoskelastudios.com called “Inside the Studio” that was started this past fall. “I felt a need to write about the unique artists I was running into. I started going to their studios, taking photos and talking to them about what they do and how they got started, what kind of artists they think of themselves as,” said M. “Everybody is different in what is important to them as an artist. I find their answers interesting and inspiring.”

Along with a full-time career in the art world comes a fair amount of public involvement for M., wife Sophia and their family. Artist and vendor events such as The Market/The Handmade Market showcasing artists and other vendors at Gio’s Event Center in Moorhead have

been going on almost every month since last September. “We have also held fundraising raffles for people in the community and included local musicians and spoken word artists on our stage there.” M. and Sophia Koskela are currently working on an event called Legends of Illustration: An Artist Con, which is a three-day event for visual creators that will take place July 21-23, 2017. “It’s a sci-fi convention geared more toward the creators, illustrators and visual artists. It’s something we’re really excited about,” M. said.

is the owner and operator of Lost in Fargo, a locally made clothing line that works to represent FargoMoorhead and cultivate a deeper love for it. After 12 years of managing a Moorheadbased company that creates promotional products, Hunstad took his love for screen printing and art and translated it into products that the Fargo-Moorhead community can embrace. “I really have enjoyed exploring Fargo, and I’m really into the screen printing and clothing thing. I wanted a shirt that represented Fargo, but I wanted a cool vintage look. So we played around with those ideas and it just kept growing and blooming,” said Hunstad. Launched in the fall of 2015, Lost in Fargo has seen rapid growth with the support of the community and local retailers. Aside from being sold in local stores after a short amount of time, the company has been holding events and forming pop-up shops around town to get the word out. And the great part about the clothing line is that there is something new on a regular basis. “We have an online store that has unique products, which can only be found online. We’re trying to keep our collections with our retailers or with our store. And from one popup to the next, you’re going to find completely new products,” explained Hunstad. But the meaning of Lost in Fargo goes far beyond a vintage shirt with a logo on it. Hunstad explained that the concept of the clothing line has spurred him to get out of the house and explore the city he grew up in, whether that’s finding a new street or

discovering a new part of town. The word “lost” has a more positive and impactful meaning in this company’s context. “The thing that I’m discovering with Lost in Fargo is the whole notion of being from another town and coming here but feeling lost. But there is something like this that can help express that in a way,” said Hunstad. “That’s the fun part about apparel. You can be walking down the sidewalk and see someone’s shirt and it can really affect you. We’re trying to have a positive impact with that and make stuff that helps people

uplift themselves and stay true to their roots.” Hunstad plans to have more events and get more involved with the community this summer and is in the works with giving Lost in Fargo its own home in a studio and shop space. That way, clothing can be produced more frequently and the company can branch out into making art and unique gifts. Lost in Fargo represents exploration and love for the city, no matter who you are or how long you’ve been here. It’s about time to start flaunting that in style.

riven by a cause and faith, local math teacher Paul Shol will journey 4,500 miles across the country by bike to bring support for a local nonprofit to our community.

How it all Started “The beginning starts in Norway,” said the Fergus Falls, Minn., native. He traveled to the Scandinavian country to visit some long-lost relatives and was amazed at how many people were on bikes. “We have a pretty good bike community here,” said Shol. “But it was incredible, in the big cities especially, how many people were on bikes.” Shol began to utilize biking as a way to commute among the various places he needed to be, and soon it became a daily activity. “I love it. It’s just so peaceful. It gives me a chance to decompress. I’m not fighting traffic. I just let my mind wander,” said Shol.

The Inspiration A fellow bike and fitness enthusiast was an integral push for Shol and planning his trip. Dave Jensen biked across the southern states a few years prior, but he wasn’t inspired to do the trip solely for his own personal benefit. “His inspiration was a little more

in the direction of making it worth something,” explained Shol. Jensen’s trip raised approximately $2,500 for the local community college in Fergus Falls. “Dave inspired me to think if I could do a bike trip, I should do it for something,” said Shol. “I feel like each day it’s important to make a difference for others. I think we’re all called to do that in big and small ways everyday. This is an opportunity for me to make a difference.”

The Cause Shol’s trip will raise money for a local nonprofit called Legacy Children’s Foundation, which was founded five years ago by Ben Franklin Middle School teacher Mary Jean Dehne. Dehne, who started the program to provide additional academic support to children outside of school. The direction and plan for the program was in part driven by kids Dehne worked with and the points they contributed to a discussion of what they thought they needed to improve. One part of the program focuses on motivation and incentive for kids to improve in school and provides rewards for their hard work such as monetary awards and trips for the students. Another goal of the program is to provide support through mentors who can help with their school work. “The real work of this organization is through college kids,” said Shol. “They are the academic coaches and mentors and are partnered up with the middle school and high school kids. They meet with them after school or before school.” Shol had worked with the program for several years as a volunteer and has worked with students in his ninth grade algebra classroom at North High School who are a part of the program. The program includes growth beyond academics. Volunteer service is required from the students once a week and the students must be involved in

activities at school or must share an interest they have.

mile races, and has even biked 600 miles to attend a wedding.

“As a teacher, as a volunteer, I see it working,” said Shol. “I see it make a difference in these kids’ lives.”

During his trip for LCF, Shol plans to stop in various cities. His mission is to speak to people about faith and a book by Sarah Young called “Jesus Calling.” The book has made a difference in Shol’s life and has inspired his own faith.

The Trip Starting July 5, Shol will take to the northern states for his 4,500mile trip. He will leave the coast of Oregon and make his way east. Shol will not train on the bike until his trip but has been running in order to build his heart, lung and leg endurance. Although a seemingly impossible task for the majority, this will be just one of Shol’s many physically demanding adventures. While pursuing his undergraduate degree at Concordia College, Shol competed on the football field, as well as on the track. He also trains for Ultra Marathons, which are 100-

“I really feel called to do this trip,” said Shol. “This is a God call. He’s giving me an opportunity to make a big difference. He’s given me the ability to do it, the time to do it, the passion to do it.” At each speaking event, he will provide listeners with copies of this book. He hopes speaking about the book will encourage people to think about God’s presence in their daily life. “I want to share this book with people who come to hear me, tell

them about what a difference it makes for me everyday,” said Shol. “I want to talk to them about faith and taking leaps of faith each day for God’s purpose.”

TV ads. Stump speeches. Endorsements. Conventions. Declarations and promises. All of these techniques have been trying to persuade me to pick a candidate to be the next governor of North Dakota.

None of these sound bites have worked on me. The literature and promises are falling on my deaf ears. The reason? My mind was made up seven years ago when I worked

flooding. The police had told volunteers they were not allowed into the area surrounding the school. It was said the area was unsafe, and the experts had been called in to evaluate the grounds. And yet, when I snuck over the mountaintop of sandbags, I joined a group of young people, none over 25, and one experienced person. That was Doug. He was dressed just like us and instantly became our leader. He didn’t have the time to put forth a long-term strategy to turn the situation around. He didn’t have time to recruit his team. He was handed a difficult situation with a small group and limited time. This is where the magic started to happen. This small town guy from Arthur, N.D., who had built a worldclass company in our state made us believe anything was possible. He sketched out a quick plan and assigned roles. I would be one of the guys running buckets out of the basement to save the pump. Others would check the dikes for leaks and run supplies to other teams. And where was Doug? He was in the most difficult spot, in a dark room filled with carbon monoxide, working tirelessly to preserve the school. It was during this day when I realized Doug was someone I would follow for a long time. This courageous, creative and work his butt off type man was willing to serve. I remember him consistently telling us, “We can do this.” He helped us believe in ourselves. He was prepared with a

truck full of supplies that we relied on throughout the day. His ability to prevent real damage in a critical moment was something I had never been part of, and it made me proud of my community. Doug was the leader we needed, doing the hard work when no one was watching, to make an impact for folks he had never met. Much like the flood in 2009, North Dakota has rising challenges that need to be addressed. Doug is the type of leader who will help all of us outwork our problems and invent new solutions. Like all of us who jumped the sandbag pile seven years ago, he is willing to challenge the system and the experts to do what is best for the community. Doug builds teams that defy the odds. If our state waits around for a market correction or a strategic plan to be built, we’ll lose the momentum our state has gained over the last 10 years. Talent leaves. Investment leaves. Schools shut down. Innovation comes to a halt. None of us want this to happen. We currently have an opportunity to have a governor who knows how to solve difficult problems in the middle of adversity. We have someone who is willing to serve tirelessly to help those in need. Farm in The Dell of the Red River Valley

arm in the Dell of the Red River Valley is a unique organization, and one of only a handful of others in the world. Board member Karen Urlacher shared the details about the organization as they work toward growing a rural environment for those with special needs in the community. Farm in the Dell is a nonprofit organization that gives individuals with disabilities the opportunity to live and work in a rural setting. About four years ago, Urlacher and a few other individuals made a road trip

What is a CSA?

CSA stands for communitysupported agriculture, and it’s a way for community partners to get a share of the veggies that are coming out of the gardens. You can pay a given amount to receive, for up to 12 weeks, a box of vegetables grown on the farm. Visit farminthedellrrv.org/csa to sign up and to learn more. Proceeds support the organization, members and other related community groups.

icnics are a great way to kick off summer and welcome the warmer weather. However, a traditional summer picnic menu doesn’t usually include the healthiest items. I had to venture outside of the typical picnic basket to come up with what I call “fit” picnic essentials. Two local stores helped me fill my fit picnic basket: Mehl’s Gluten-Free Bakery and Sydney’s Health Market. Both stores carry fresh, healthy and delicious products that will also help keep you on track with your health and fitness goals. I often say that food is fuel and being given only one body, it is of the utmost importance to take good care it. Ultimately, what you eat has a direct impact on your health, so it is important to make wise and healthy choices. When you properly fuel your body with healthy and natural foods, you will be rewarded with a body that performs well and feels good from the inside out. All of the items I have included and chosen for a picnic taste great and will not only fuel you but will also sustain you. Grab a blanket and fill your basket with my list of fit picnic essentials. Next, gather your family and friends and pick one of the incredible Fargo-Moorhead-West Fargo parks to enjoy your fit picnic. Make sure to include some physical activity to make this a complete (and fun) event so you can work up an appetite before feasting on your delicious and healthy picnic.
