WASHINGTONS
IN YOUR POCKET
ere at Fargo Monthly, we love food. We especially love food in Fargo-Moorhead, and that’s something I’ll say a million times over. Back in June, we ran our yearly food issue to showcase the winners of our Flavor Awards, but we thought that one food issue a year just wasn’t enough to show appreciation to the area’s dining scene. That’s why we decided to showcase local food yet again, but better yet, delicious food that you can get one heck of a deal on. I mean, you can’t complain about saving some money, right? There’s some sort of deal or special going on every day of the week in FargoMoorhead, so we figured it was time to give some of them the spotlight. Of course, we’re aware that we couldn’t include every special in town, but I believe that we did our best to feature as many as we had access to and what our fans told us about. If there’s something we left out, let us know so that we can include it in the future. And keep in mind that these specials are always subject to change, so get your hands on them while you can. Aside from learning how to save money while dining out, here’s a little 18 | NOVEMBER 2016 | FARGOMONTHLY.COM

list of some of the things I’m thankful for after putting this issue together. The food, of course. I am forever thankful for the restaurants and chefs behind all of the great food in Fargo-Moorhead, and even more thankful that our photographer Paul Flessland and I were so graciously invited to try so much of it throughout this issue. I tried to come up with a rough count of what was consumed and it goes a little something like this: 9 tacos, 3 pizzas, 15 wings, 4 burgers, 5 appetizers, 2 sandwiches, 1 heaping, breakfast meal, 1 hot dog and a heck of a lot of fries. Okay, I will say that we’re not that greedy. We definitely shared with our colleagues when we had the chance. And let me tell you that there is not one food item from our cover story we tried that disappointed us. Everything in this issue is downright delicious. A New Office Space We have moved! Our company, Spotlight Media, is now operating out of the Bell Bank building at 15 Broadway North in Downtown Fargo. And of course, our company’s other magazines, Bison Illustrated, Fargo Inc! and Design & Living can also be found operating at our new home as well as one big happy family, along with our Bison clothing company One Herd. We are excited to have
a new space and so far, the change in scenery has been nice and our neighbors have been incredibly welcoming. Glacial Peak Cryotherapy This month my colleagues and I got to experience the services at Glacial Peak Cryotherapy, a new “health spa” in West Fargo. I will say that we were all a little skeptical about freezing cold chambers and chilly skin treatments, but Pam Bradow and her staff were so incredibly welcoming that our entire stay couldn’t have gone any better and we really appreciate her letting us try out the services. We learned so much from our visit, which you can read about on page 64, and are thankful for the great eye-opening experience. New Businesses Galore It’s been about four issues since we’ve run a “New in Town” column that typically features six new businesses in town. But in the last four months, the amount of new businesses exceeds a handful and we could have easily added a few more pages to include all of the great places that have recently opened their doors. I’m really thankful for all of the great new destinations that are making Fargo-Moorhead an even more enjoyable place to be. Read all about these new places on page 60 and pay them a visit.

SaveCoin is a local company and service that offers deals and coupons for businesses all over town so cofounder and owner Stu Stockmoe filled us in on how to save. How You Can Save *SaveCoin is also available in Bismarck-Mandan and Grand Forks/East Grand Forks in addition to Fargo-Moorhead. How it works for consumers is they can follow SaveCoin by going to the website to check out the daily deals, subscribe to the weekly emails, keep up with SaveCoin on social media for updates or download the mobile app. One of the more popular SaveCoin features is the daily deal, which is an

exclusive deal that you can purchase in full. Let’s say you buy a deal for some meals at a restaurant. Since you are purchasing a complete deal through the offer, your meals (that apply with the offer) are already paid for when you show up versus getting a certain amount discounted when you use a normal coupon. In addition to purchasing the daily deals, consumers can sign up to have emails sent to them with new campaigns each day Monday - Friday with instant printand-use coupons. Stockmoe said that they send out an email every Tuesday that has one coupon from each of the current coupon advertisers, and that every Wednesday they send a special email with just coupons for goods. Traditional coupons are also available in books, and can be printed from the website and used directly from the mobile app.

Merchant Benefits For businesses and advertisers, they’re really getting a full campaign with daily deals. Stockmoe said that they promote each merchant with their campaign for one week through emails, social media, on the website, app and more. “It’s unique for the merchant because we don’t charge any upfront advertising fees for the daily deal campaign. It’s all based 100 percent on the measurable performance. And by that, I mean how many people buy the deal. So if they don’t sell anything, then they basically got a bunch of advertising for free,” said Stockmoe. “It’s about reaching a lot of people with the daily deal campaign and then getting actual measurements. People see the deal and buy it on our website, I give the merchant a list of names of people who bought it with a unique tracking number and they have a web portal that they can log in real time to
track redemptions. It’s an incredible way–with no risk for a merchant–to advertise and reach many thousands of people without having to spend a penny out of their pocket.” Stockmore also went on to explain that this option is something that merchants typically do maybe once or twice a year because of its immediate and carry-over impact, which makes sense because not everyone uses their deals that they purchase right away, and there are always people who wait until closer to the expiration date. Businesses can also invest in the traditional coupon program, which is fee-based, or other forms of advertisement offers such as website, book and custom email promotions and more. COMMUNITY SPOTLIGHT
LET’S GET
BY Greg Tehven | PHOTO BY J. Alan Paul Photography
Greg Tehven is an entrepreneur advocate and one of the original founders of Emerging Prairie. 50 | NOVEMBER 2016 | FARGOMONTHLY.COM
On a beautiful Saturday in October, with the Bison playing out of town and my wife getting her flowers delivered early, we spent an afternoon consuming downtown Fargo. For the first time in months, we had plenty of time and some disposable cash, with no plans other than to discover our community. We spent our time wandering the streets and exploring our community while we each fell in love all over again with this amazing place we call home while spending some well earned time together. Our afternoon adventure reminded me of part of my role in the community, which is to spend my resources with the creatives and makers, the folks that have honed their craft to create materials and experiences that are memorable. These are the people that make our place special, who attract tourists and media from around the world, who make us feel special and cared for. The creatives whose work make up our shops that are what we show off to potential new
hires and their families, our out of town relatives and college friends that give Fargo a hard time and to those returning to visit our magical community. The time exploring downtown was a clear reminder to me, I don’t need to go to New York City or London to discover interesting gifts, fascinating shops and spaces that are designed with the intent of building community. A great day of exploring doesn’t need to have two Delta flights and a hotel added to the budget, it truly just takes a mindset and a bit of time to lose yourself in our community. My local adventure has inspired me to challenge you–yes, you the reader– to take a half day and join me on a scavenger hunt filled with fun. If you should complete this challenge, which I hope you do, I’ll treat you to the “Hit and Run” special at a hard-to-find coffee shop tucked away in an alley in Downtown Fargo (reveal of location found in the scavenger hunt).
Here is your list of challenges for your scavenger hunt: Meet an owner of a shop. Spend $20 in a pre-determined shop you’ve never been to. Take a photo on the amazing green couch at Mint and Basil. Taste a fancy drink at a local coffee shop. Find the remains of a trolley used by The Forum. Pop into the store that used to be the home of Leeby’s Grocery Store. Buy something at a shop where a portion of the funds support folks in need. Explore a gallery with North Dakota art. Find a store that is in a basement selling old school records. Eat something you’ve never heard of.
Welcome back the couple running a coffee shop who just came home from San Francisco. Discover the frozen patio (if it's cold out) or the magnificent gardens patio (if it's nice out). Sit in fancy furniture at a bagel shop. Eat something with too much frosting. Find out which tattoo artist designed Ashley Morken’s body art. Try on a tie at a shop that sells their work all over the world. Imagine a Peggy Lee Concert at the Power’s Hotel. Get a Hit and Run (and have Greg pay for it) at the hidden coffee shop with an alley entrance.

ove over pumpkin spice, bartender Shantelle Hohnadel at West Fargo’s new Brewtus’ Brickhouse is working with some different fall flavors. Her tasty apple and cinnamon creation is a cocktail that’s nothing short of creative and refreshing, and it’s sure to knock the tall socks and fall boots right off your feet.
By Erica Rapp | Photos by Paul Flessland
52 | NOVEMBER 2016 | FARGOMONTHLY.COM
Tell us about the cocktail you created. “I wanted to do something fall-ish, but I’m not one for pumpkin too much. Apple and cinnamon are great and especially lately, cinnamon has been a good go-to for me. I also like Jack Fire over Fireball, so I went with that. It can be a little much, so the vanilla kind of calms it down, and doing the half water and half apple juice to top it off helps with it not being overly sweet. It was nice because I had asked my coworkers for help on what they would want to try so everyone here helped me out a little with their opinions.”
What will people like most about this drink? “It’s easy to drink. Even though it’s whiskey, it’s a very drinkable cocktail and it’s the taste of the season. It’s unique, and we don’t have a drink menu here so it’s a nice cocktail for somebody who would want to try something new and different.”
What’s your typical spirit of choice and why? “As far as liquor goes, I found that I do prefer whiskey and the taste of it. Vodka can be a little aggressive for me, which is kind of the opposite for a lot of people. Whiskey can be a little more difficult to prepare with something because it doesn’t come in so many flavors like vodka or other spirits, but I like the flavor that whiskey has and the flavor that it can bring to a drink.”
"cinnamon twist" • 1 oz. Jack Daniel's Tennessee Fire • 1 oz. Dr. McGillicuddy’s Vanilla Schnapps • Dash of Fee Brothers Cardamom Bitters • Apple Juice • Caramel syrup, cinnamon and sugar for rim garnish
What’s a piece of mixology advice that has stuck with you over the years? “To be as efficient as you can. Try to be speedy, but also be thorough. If you have questions, always ask. Teamwork is really important and then everything else just falls into place. Also, know your products. Know what you have and don’t have because it saves a lot of time.” Start with a stemless wine glass, rim with caramel syrup and dip in a cinnamon and sugar mixture. Pour spirits and bitters into a tumbler shaker with ice and shake. Pour into glass over ice and top the rest of the drink off with half apple juice and half water.

itch Goldstein likes to drive.
With one of his daughters in college in Chicago and another in Montana, he spends a lot of time in the car. During his travels, Goldstein, who is a surgeon at Sanford in Detroit Lakes, Minn., continuously came across benefit flyers at gas stations for people who had gotten sick, whose house had burned down or any variety of tragic stories. He gave what he could but kept thinking that there had to be a better way to help out. “I’ve always wanted to give more and it just felt like it’s such a hard time for people. So a few years ago I came up with this idea to start a nonprofit just for that purpose: to help people who have come across unfortunate situations,” said Goldstein. “However, I like what I do. I love being a surgeon. Working at a nonprofit can be a full-time position, and I didn’t want to go and spend hours on end asking people for money. So I came up with this idea to create a selfsufficient mechanism where we could establish a cash flow into a nonprofit.” That idea led to the creation of the JTG Foundation. Standing for Just to Give, Goldstein decided to look at what people do on a daily basis and create a business where the profit would go back to the nonprofit. “The thing that I thought about was,
‘What do people do?’” he said. “I don’t just want to start a little store of some sort. I wanted to do something that people visit and do all the time. I came up with people go out to eat.” In fact, according to the U.S. Commerce Department, for the first time ever last year, Americans spent more at bars and restaurants than buying groceries. Knowing this, Goldstein believes he has found a sustainable business model. Still in its early stages, Goldstein launched the nonprofit in the spring of 2015 and is currently working on the capital campaign right now with hopes to raise enough money to get the restaurant off the ground. They have a ways to go, though. Thanks to a design from Wild | CRG in Fargo, they have a gorgeous concept for the

The idea being that we put 100 percent of the profit into the nonprofit and 60 percent will be devoted to dispersing to families and individuals that need it, and 40 percent will be reinvested into another facility in a different location.”
restaurant already made, but it will take about $4.5-$5 million to get the building off the ground. The reason for the high price tag is because Goldstein wants to own everything involved with the restaurant so that all the money possible would go to the JTG Foundation and wouldn’t be spent on rent or mortgage. The dream doesn’t just end with a restaurant in Fargo. He would love to franchise restaurants across the Midwest and the country that would be driving the JTG Foundation. “Don’t laugh. That’s how dreams start. If you don’t have a dream, you can’t do anything with it,” Goldstein said. “I’m
As far as the people the JTG Foundation hopes to help, Goldstein said it’s not just people going through medical needs. The idea is that they will help anybody who is going through a tough situation. They currently have an application process that will eventually decide who receives money. “It’s a pretty in-depth application process where we will pay the vendor. If you’re two months behind on mortgage, we’ll pay the mortgage company,” said Goldstein. “Up to now, I’ve given $100 or $200 here and there to people directly who have had unfortunate situations, but we’re trying to hold off on that because we’re trying to raise our money.” And while he has a long way to go, it doesn’t matter, because Goldstein and the board members of the JTG Foundation believe in their dream.

F
ood marketing companies have become cunningly clever in recent years at using labels to coerce you into buying a certain item because it looks or says something specific to make it stand out from the generic brands. They use newfound buzz words to make
it seem like something that might be healthier for you than the average Joe product that you’ve been buying for years. Some of these labels serve a valid purpose and shouldn’t be ignored, while others are simply a marketing ploy that aren’t really worth dishing out the extra change for.

Because I’m a health coach and not a food marketer, I want you to have the knowledge to make educated and informed decisions when stocking your kitchen–decisions that will benefit your health without emptying your wallet. With that, let us uncover the hidden lies and the truth behind all those deceiving food labels. Here is a list of commonly found labels and what they mean: • Pasture-raised: Pasture-raised animals are free to roam. They get to eat fresh grass and a wide variety of bugs and
grubs. Some pasture-raised critters are even supplemented with a high-quality protein source. Unfortunately, it’s very expensive to get certified as pastureraised, so it’s common for many small farmers to not acquire this certification. • Cage-free: Animals are technically raised without a cage but usually in a warehouse or barn. The catch? Beak-cutting is permitted and outdoor access is not a requirement. No-cage poultry can actually be found anywhere in the world, even those that are conventionally raised. The consensus: just a label to add to the packaging to up the price tag and make you, the consumer, feel better about the purchase. • Organic: Use of any hormone and antibiotics is forbidden, with the exception of sick animals. The upside is that the feed must be organic and outdoor access is required. However, does that mean that the animals use it? Not necessarily. Verification through third party auditing is part of the process. • Natural: I’m not going to beat around the bush with this one, it’s generally a
Therefore, it’s another marketing stunt. I’ve heard it compared to saying water is fat free–now that’s a good laugh.
• Fat Free: Let’s all say this together, “fat is my friend!” Basically, this is just a marketing ploy to use on foods that have never contained fat but because consumers like to hear it and companies jumped right on it. Eating healthy fats, which includes healthy saturated fats such as coconut oil and grass-fed butter, offer so many health benefits and keeps you satiated for longer periods of time.
cage-free?
organic?
fat-
• Vegetarian-Fed: The good part about this label is that it’s telling you that the animals aren’t fed animal byproducts. At the same time, the feed is also not inspected by the FDA. The best part is that chickens are naturally omnivores, not vegetarians. This is basically telling you that they are not being fed their natural diet. Cue palm to face.
free?
marketing ploy. “Natural” products don’t need a label. Think celery, apples or pumpkin. There are no FDA regulations around this label. You might actually find some artificial flavoring, coloring, pesticides, herbicides and trans-fats in these “au natural” products. Annoying, right? • Free-range: Fifty-one percent of the time, free-range animals are supposed to be able to roam free. However, beak-cutting is permitted and there are technically no restrictions on the animal feed. However, that’s not to say that this label doesn’t serve a purpose. Many local farmers raise free-range animals the honorable way you would imagine with this label. • Naturally-raised: This one sounds like fingernails on a chalkboard to me. There are technically no regulations for the diet or welfare of “naturally-raised” animals. To sum it up, this is pretty much telling you that they could be raised with growth-promoters or unnecessary antibiotics. What a crock of naturallyraised crap, right? • No added hormones: This label is usually found on poultry and pork. The kicker: it is actually illegal to use hormones.
• Gluten-Free: The burning question, what actually is gluten? It is a protein found in grains that can be particularly harmful for those with Celiac disease or gluten intolerances, which tends to be a majority of people. I suggest removing gluten for at least four weeks then add it back in to see how it sits with you. If you feel bloated or achy after adding it back in, you probably want to avoid it. However, this label doesn’t necessarily make the product much healthier than its glutenous counterpart. I have my clients avoid gluten as much as possible, for the aforementioned reasons, but that doesn’t give them free reign to eat copious amounts of “gluten-free” products. • No Added Sugar: This pretty much means one of two things. Instead of using a form of sugar, they used a toxic artificial sweetener. Basically, a pleasant-tasting harmful carcinogen. Or that there was no added sugar on top of the product’s natural content of sugar. They basically want you to think their product is free of sugar and that’s not always the case. • Zero Trans Fat: Companies are able to use this claim if their product contains less than .5 grams per serving. If you go over the serving size, that can add up quickly to something that you, quite honestly, don’t want to put in your body period. Decode labels by looking for the words shortening, hydrogenated oils, vegetable oils or partially hydrogenated oils. A word to the wise–if you see any of these words on the back of a label, slowly put the product back on the shelf and calmly back away.
• Nitrate-Free: Without going too deep into the “are nitrates harmful or not” debate, I’ll keep this about the label. When you see something that is “nitrate free,” it generally means that instead of using sodium nitrates, they have used celery juice or celery juice powder during the processing of the product. Celery juice still contains levels of naturallyoccurring nitrates and yes, nitrates occur naturally in vegetables and even in our bodies. That being said, this label doesn’t mean that the product is truly nitrate free, it is just sodium nitrate free. My suggestion is to just keep tabs on how much processed meat is in your diet and don’t go overboard. Fortunately in Fargo, we have an array of health foods stores that try to stay as close to their mission as possible by stocking products that have “cleaner and higher quality ingredients.” According to Crystal Nicklay, retail manager at Swanson Health Products, “For us to sell food items with junk in them would be a misrepresentation of who we are and what we want to be,” she said. I love local stores such as Swanson Health Products, Natural Grocers, Cash Wise Foods’ organic section and can’t wait for the new Prairie Roots Coop to open downtown in 2017. I shop at these stores to avoid all the marketing noise as much as possible. When I do my grocery shopping, I try to stick to the outside of the store. You’ve heard this one before and it always remains true. To avoid getting duped by false advertising, stick to mostly fruits, veggies and clean meat sources. If you have further questions about labels and want to clean out your cupboards, feel free to reach out to a nutrition coach, like myself, for guided assistance. 59

Owner Pam Bradow was living in Colorado Springs, Colo., after an accident, and was having a hard time getting back to work as a dental hygienist. She had been seeing a massage therapist for relief, but wasn’t getting the long-term results she sought. Her massage therapist recommended that Bradow try cryotheraphy treatment, and she said she immediately saw a big difference with her daily energy. Unfortunately, she was unable to get back into her job as a dental hygienist due to a concussion from the accident. She grew up in Fergus Falls, Minn., and wanted to come back to the area to be closer to her family, so she decided to start working toward her cryotherapy practice.
love oxygen. So, let’s give it to us systemically and locally. And this (cryotheraphy) is what I found to do that." Glacial Peak Cryotherapy opened this fall and Bradow runs the business with the help of her manager, daughter, nieces and her pup Tuffy.
“As a dental hygienist, you learn that there’s a lot of bacteria in your mouth and that’s why we always encourage brushing and flossing, because we want to get oxygen down to where the diseases are,” said Bradow. “Those bugs don’t like oxygen. And I’m thinking, there are a lot of diseases and illnesses out there that don’t
Although Glacial Peak Cryotheraphy technically the first place to offer these services in the state, Bradow said that she doesn’t consider her services to be in competition with anyone in town. She wants to enhance the efforts that are already out there and said that she has already had massage therapists, doctors and chiropractors send her clients.
“This isn’t just for the young athletes. I want to be able to help the elderly and the aging community as well. We are living longer and are having to deal with more aches and pains and some of us are sick of drugging it up. I want to be able to play with my grandkids. Dealing with pain long term is crazy. It hurts the family and it hurts a person’s social life and their daily activities,” said Bradow.

COMPRESSION
therapy
We started our visit by trying out compression therapy, which Bradow says is great for athletes and those going through post-operation recovery. Many professional athletes use this technology, NormaTec’s patented sequential pulse technology, for quicker muscle recovery and a decrease in muscle fatigue and stiffness. The compression sleeves are available for certain parts of the body, such as legs, shoulders, hips and more. McNamara and Kerlin both used the leg compression sleeves while I used the hip one. Kerlin is a runner and just recently completed his first full marathon, and was interested to see how the therapy would help his irritated hamstrings. He stated that after the therapy, his legs moved better than they had in weeks and he was able to stand up out of the couch faster than he expected. This therapy combines three distinct massage techniques: pulsing, gradient hold and distal release. The sleeves will inflate and go through cycles of progressively holding, releasing and pulsing over the course of 30 minutes.

For me, I have a hip injury that never healed right years ago and continues to cause me daily pain. I could definitely feel that muscle being targeted during the therapy and, although I felt a little bit of pain in that area immediately following the session, my hip didn’t bother me

though the sleeves couldn’t squeeze your body any harder. But in a fascinating way, the harder it squeezes you, the better it feels. I could have easily fallen asleep in that chair because I found it relaxing.
at all for weeks following. Personally, I would definitely consider this a relieving aid to the chiropractic services that don’t always work for my injury. “It’s almost like a massage but without all of the hands-on work. It kneads the muscles and joints gently and there are different degrees of intensity. It helps a little bit with your lymphatic system as well,” said Bradow. At times during the session, it feels as
“My toes feel like they’re getting a little crunched together, but overall, the tighter it gets, the better,” said McNamara during his session. Afterward, he stated that he could move better and felt more loose. Kerlin’s description was a little more light-hearted, but accurate nonetheless. “You know at Chipotle when you have so many ingredients in the burrito and they’re about to roll it up, and you give them that look saying, ‘You’re not going to get all that in there because you’ll break the tortilla.’ That’s how my toes feel.”

If you have a heart condition, you must be cleared for exercise from your doctor to undergo this treatment. Individuals must be at least 14 years of age and anyone under the age of 18 must have parental consent.
Let’s face it, we know that the idea of putting yourself in a freezing cold chamber sounds like something that would only happen in movies. Or maybe to Walt Disney. Or Philip J. Fry, “Futurama” style. But any skeptics should know that this is a safe and monitored process with gratifying health benefits. Upon entry of the pre-chilled cryosauna (to -170 degrees Fahrenheit), the floor will raise and you’ll take off your robe, leaving you in your underwear, gloves, socks and slippers. Liquid nitrogen is pumped into the machine and you’ll be surrounded by the vapor as it continues to chill the unit throughout the session. For the two to three minutes you’re in the chamber, your skin will be exposed to extreme cold temperatures sometimes reaching as low as -300 degrees. “There are some people who can’t tolerate the full three minutes, but I definitely want people in there a

McNamara went first, and his chamber got to -230 degrees Fahrenheit.
minute and a half. With as much skin exposure as you have, we’re tricking and encouraging the body to go into that fight-or-flight mode really fast. While it’s on that mode, you are cleansing your blood through your organs and your core, and you are oxygenating the blood,” said Bradow. “Once you step out, all that inflammation and pain that’s in your body is managed with this enriched blood that goes back out.” Despite living in North Dakota, it sounds a little harsh to be exposed to that kind of extreme cold, but Bradow continued to explain that having minimal clothing on in the chamber allows more skin receptors to be exposed and it tricks the brain into thinking it might be going into hypothermia. When the blood becomes more enriched throughout the process, nutrients get sent to more affected areas of the body to help cleanse it. “When that blood cycles back through the body, it can handle any inflammation that’s in the body, whether you’re aware of it or not. After a whole body session, you’ll notice that you sleep better and you won’t be as sore and achy. You’ll have much more energy for daily activities,” said Bradow. McNamara, Kerlin and Flessland all stripped down to try out the cryosauna for the full three minutes each. Bradow explained that the entire session is monitored and that a clinician is with you in the room the entire time. They
Flessland’s session reached closer to -250 degrees Fahrenheit at its coldest.
keep verbal and visual contact with you and watch for any body language or anxiety that might occur. There is also a magnetic latch on the inside of the chamber so you’re not locked in. McNamara went first, with his session reaching around -230 degrees. During the three minutes he grew noticeabley antsy and stated, “It feels like I just got out of a hot tub in the middle of January. My knees are getting a little antsy and my calves burn a little. It kind of feels like a freezer and that I might stick to the sides. But it’s incredibly refreshing and I don’t think I’ll fall asleep at the office later.” Afterward, he stated, “My upper body feels fantastic right now. My legs burn a little bit but it’s slowly going away and I already feel the difference.” Kerlin was noticeably shaking right when his session started, and had a hard time controlling it throughout the three minutes. The temperature during his session got down to -240 degrees, and he described it as being “uncomfortable, but not ice bath uncomfortable. It was
like walking to your car on a -30 degree day with extra wind chill.” After, he said that he felt like his body had generated adrenaline after thinking it had to go into survival mode, and got a great energy boost from it. Flessland remained calm during his entire session despite the temperature creeping closer to -250 degrees. He said, “It was bearable for the three minutes but that’s about the maximum amount of time I could handle. It was slightly uncomfortable at times but definitely tolerable. My calves started to burn near the end. Afterward, I felt incredibly refreshed and putting the dry, warm clothes on felt like being cradled by an angel.”

cryofacials
Cryofacials are delivered in a similar fashion to the cryosauna, but more locally. Liquid nitrogen comes out in vapor and it’s directly exposed to the face with the help of a technician. This technique is also used in another service offered by Glacial Peak Cryotheraphy, where they can deliver local treatment to specific muscles or joints, essentially freezing an area directly to help with pain and recovery. Bradow and the cryotechnicians explained that a cryofacial can stimulate hair follicle growth, help shrink pores, reduce inflammation and puffiness of the skin, build collagen in the skin to help combat the formation of wrinkles and can even be beneficial for those who suffer from migraines. They recommended waiting three days in between treatments to allow the collagen to rebuild after the reaction to the cold. For this session, I didn’t have to take my makeup off like I thought I would (which I consider convenient). I did have to remove my jewelry, but I wasn't able to remove my nose ring so the technician had to be cautious of that area. My face was exposed to vapor that got down to -247 degrees, but it definitely didn’t feel that cold. At the
Glacial Peak Cryotherapy
coldest point, my face felt more like it was wet versus freezing and overall the entire 10-minute session was pretty refreshing. The only discomfort I felt was the feeling of having my breath taken away right away (Dementor’s kiss, anyone?) in the beginning when the technician was directing the vapor closer to my nose and mouth. I quickly got used to that and felt rather relaxed for the rest of the session. Afterward, my ears slightly burned because I suffer from a circulation disease, but my colleagues that also did the facial did not experience that. Later in the day, I was told that my skin was glowing and the refreshing feeling lasted quite a few hours for me.

TO IMPROVE
COMPANY CULTURE
W
e know, culture is such a buzzword that it's almost become cliché. A simple Google search will yield hundreds of articles about how to create a fun and productive culture. Well, we skipped over those articles and went directly to the companies and people in town who are making their business a great place for their employees, as well as their bottom line.
78 | NOVEMBER 2016 | FARGOMONTHLY.COM
T
wenty Below’s mission has always been about people. The coffee is important, but our primary objective is to use it as a catalyst through which we cultivate community and make people feel valued. The value we place on people extends to both our patrons and our staff team alike. A company can run as a well-oiled machine—working in tandem and serving effectively—when well-maintained and cared for. Here are a few frugal ways we at Twenty Below care for that machine.
1
PEOPLE OVER PROFIT It goes without saying that a business needs profit to continue its existence, but what often goes unsaid and overlooked is that a greater importance exists. At Twenty Below, we strive not only to tell our employees that we value them but also to show it. We do this through our daily Community Lunch Hour, where we put coffee-making operations on hold at noon to allow everyone a break (which often includes some friendly table games); through potluck lunch Fridays, where both employees and customers contribute food to a communal meal; and through being closed on Sundays to offer a day of rest. These times of closure could surely be bringing in more money if we opened, but we value the times of rest they give our employees. We value the people over the profit. 2
FUN FUND A recent addition to Twenty Below, the Fun Fund is a pool of management’s tip money that’s used to fund something that the whole staff will enjoy (e.g., a pizza party or a camping trip.) So instead of management pocketing the tips accrued while they work on the coffee bar, it was unanimously agreed upon to put that money toward something that would benefit everyone.
3
NON-WORK STAFF FUN TIMES We’ve found that our team feels most connected and rejuvenated when we spend time together outside of work engaging in fun activities. For us, this looks like picnics in the park, campfires, movies together, grill outs, and, most recently, camping. Our annual staff camping trip just took place, and it was a blast! Living life together and building our relationships is undoubtedly worth the effort. 4
SNAP CUP Based on a sparkly idea from "Legally Blonde", our team has a Slack channel dedicated to encouraging and uplifting one another with praise and warm fuzzies. Praise that’s unspoken is no praise at all, and our aim is to ensure that each employee is valued, that hard work never goes unappreciated or overlooked. 5
OPEN COMMUNICATION, SOLICITED FEEDBACK AND VALUED OPINIONS A complaint commonly associated with job dissatisfaction is that employees don’t feel heard or listened to. We hope that’s never a complaint associated with our company. In order for our leadership team to avoid this blunder, we encourage direct communication, quarterly employee reviews, and an open feedback loop where employees are encouraged to ask questions and poke holes in our ideas rather than remain silent with discomfort.

OFFICE SIGN COMPANY
W
hen I first applied for a job at Office Sign Company, I knew nothing about signs. In fact, I hardly knew anything about what Office Sign Company did (I suppose the name of the company was a bit of a giveaway, but still, I had no idea). I found out about Office Sign Company at the 2015 FMWF Chamber Luncheon. I was working for a different company at the time, and Office Sign Company ended up winning "Small Business of the Year". Listening to Ryan’s (Fritz, founder) speech, and viewing the slideshow of images playing behind him, I was pretty amazed by how culturecentric this young company seemed. For companies that are budget-conscious, it may seem even more difficult to obtain the culture that your employees are yearning for. Trust me, that is just a misconception, and any money you do spend on culture is well-spent. Here are a few low-cost initiatives that we implement in our company to ensure that our culture is accounted for and that our employees are happy.
Photos by Bri Lee, Marketing Graphic Designer at Office Sign Company
1
POTLUCKS We like to eat. Why not reward that with a potluck? Our team of creative employees has quite a bit of culinary skill, and we love to see what each person can bring to the table. We’ve celebrated potlucks for holidays such as Halloween and Thanksgiving but also for everything from new hires to Star Wars appreciation. You should have seen the Chewbacca cake that Nate brought. The keg in our downtown location only makes these potlucks even more enjoyable. 2
BEING RESPONSIVE TO FEEDBACK An important learning lesson is that culture should be led by every individual within the company, not just those at the top. That way, everyone’s voice is heard and events are being planned that benefit the entire group. For this reason, every week we pose a random question to our team on a platform that allows them to reply anonymously. This ensures that we get the most-honest feedback from our team, and we can incorporate great ideas from every single person. Oftentimes, these ideas that are brought to light by employees end up being put in place.
3
OFFICE OLYMPICS In August, we held our OSClympic games. Our two locations came together at Gooseberry Park in Moorhead to compete in the first annual OSClympics, and it was an absolute blast. We shut down at 1:30 on a Thursday afternoon, put on our uniforms and headed over to compete. Six teams played games such as water balloon dodgeball, touch football, team relay and more. Regardless of athletic skill, everyone had an awesome time coming together as a unit, and our medal ceremony at the end of it really capped things off well. 4
CULTURE-BASED SOFTWARE At Office Sign Company, we use specific software in-house to help boost culture. TinyPulse, for example, is used to send “Cheers for Peers” to individuals in various teams that went the extra mile and helped each other out. Podio, our internal social media, is used to post events, customer testimonials, jokes and other musings from our days at the office. These really help to create a further sense of togetherness among our team members, especially now that we are split between two separate locations. 79

EIDE BAILLY
E Photos courtesy of Eide Bailly
ide Bailly LLP is a top 25 CPA firm in the nation, headquartered right here in Fargo. The home office houses almost 300 staff, including the firm’s administration team. Eide Bailly’s list of services boasts both compliance (we’re talking audit and tax) and consulting services (health care consulting, technology, forensics, outsourced CFO services and more) to help clients succeed. Equally important to the firm is the well-being of its staff. Eide Bailly was recently named one of the "50 Best Places to Work" by Prairie Business. The firm’s culture is the foundation of what it does, and that includes having fun along the way.
1
CELEBRATE SPECIAL OCCASIONS IN UNIQUE WAYS Following the recent promotion of one of our staff members, email “challenges” were sent out daily for a week celebrating different milestones and accolades leading up to her promotion. Even simpler, we recently had another staff member get engaged. We celebrated by giving her the opportunity to share her engagement story over coffee and water at the water cooler. Making employees feel appreciated goes a long way toward creating a positive company culture. 2
GET MOVING With more employees wearing technology to get fit, try incorporating challenges into your workspace. Eide Bailly’s Health Smart Committee created charts for staff to record their activity or steps for the week. Winners were chosen on a weekly basis and, in turn, received a health-themed reward. Creating motivation coupled with friendly competition all while bettering our health and wellness!
3
CREATE FUN CHALLENGES Setting and achieving goals plays an important role in a business’ success. Set a goal and the team that achieves that goal first receives coffee or lunch. Food can be inexpensive but incredibly motivating. But you can even take it a step further and have fun with the type of work you do. Annually, Eide Bailly holds a 10-key challenge, allowing anyone to participate in a March Madness-themed bracket for the fastest and most accurate 10-key skills. The winner receives (we’re not joking) a golden 10-key. Plus, staff fill out brackets and there is a prize awarded to the person who gets closest to guessing the correct bracket.
4
MAKE FUN EASY Create a culture where there’s not just work but also play. At Eide Bailly, our breakroom contains foosball and air hockey tables along with gaming equipment. It doesn’t have to cost money or take time away from work either. We have an annual Halloween costume contest and “Festive” holiday sweater days to ensure we keep it light yet fun. 5
GO FOR A WALK Allowing your staff to conduct meetings outside of the office allows for collaboration and a change of scenery. At Eide Bailly, our professionals are often seen walking the paths around the building together or grabbing lunch and coffee. Getting out of the office has proven to increase motivation and boost morale.

CONSISTENT & EFFICIENT MEETINGS What? Another meeting? Meetings might not sound like an innovative way to assist in establishing a great culture. But, with two offices 300 miles apart and many employees that work from home, it’s how we connect as a company and ensure that everyone is kept abreast of what’s happening. We have regular all-company team meetings every Friday. The team gathers in conference areas in our Barnesville and Minneapolis offices and anyone working from home or not in the office calls in. We start each meeting with employee recognition for demonstrating our company values. Business and project updates are covered as well as good news, best practice stories, company reminders and a Q & A session – all in 20 minutes. Each manager also has a recurring periodic one-on-one with each of their team members to check in, discuss goals and address concerns. Departmentally, each team has a periodic “Level 10” meeting to cover what’s happening across the team in a broader sense. These meetings are strategic in focus and follow a consistent format, keep everyone informed and head off any issues before they become problems.

2
BEER & PIZZA Nothing brings people together like food. We have a standing Thursday date at noon at the local pool hall. Everyone knows this is the day when the entire team goes to lunch together. Those who work from home or in other offices often make an effort to stop in on Thursdays to make sure they have the chance to hang out with the team. We also hold summer grill-outs and themed potlucks. A few fun potluck themes we’ve enjoyed: bacon, soup and Oktoberfest. 3
OFFICEVIBE (OR ANY ANONYMOUS FEEDBACK GATHERING TOOL) Everyone has a voice and wants to be heard but not everyone has the courage to speak up at the office. We use a web-based tool called Officevibe, which sends out a short weekly questionnaire to each person to answer anonymously. Any effort to provide this option in a company would be valuable, even if it were a piece of paper in a suggestion drop. Providing a channel for anonymous feedback gives everyone a voice and gives the company leadership a chance to keep a pulse on the morale of the team. We have gotten very valuable feedback from the team and use the reporting features of the software to identify areas we need to dedicate time and resources to.
4
WELLBEING A well-received effort has been our focus on employee well-being. Our Healthy Dynamics committee sponsors a different “challenge” each quarter to encourage weight loss, physical activity, healthy eating or meditation. It encourages the team to be mindful of our health and provides a little friendly office competition. Healthy snacks are stocked for purchase and company-sponsored meetings must always include a healthy option. Employees appreciate that the company cares about each person’s physical and mental health and not just their output at the office. 5
RECOGNITION Gratitude goes a long way and it's 100 percent FREE. Our company has a “Kudos” page on our SharePoint site where team members can enter in their thanks or congrats for a coworker’s job-well-done. New entries are highlighted at the weekly all-company team meetings. Work anniversaries are recognized each quarterly company meeting. And our annual company meeting features the “Stoneys,” which are peer-nominated nonsense awards such as “Most likely to leave the water cooler empty” and “Most understanding of millennials.” Some of these are a well-placed pat on the back and the others encourage light-hearted fun.
