F

irst off, their food is amazing, spicy or not, but I love spicy food and they have the hottest food in town. I once ordered a dish there that choked out the entire restaurant. Was it too much? Maybe. Was it the best thing I've ever eaten there? No. But I asked them to make the dish as hot as they could and they made a dish so hot it made everyone cough. That's commitment to customer service. (The food can be ordered mild as well and it is amazing.)" This paragraph about Everest Tikka House was featured in our December 2019 "Staff Picks" issue and was one of the very first things I wrote as a member of the Spotlight team. In the review, I was trying to be funny, but Everest is seriously a fantastic restaurant for anyone (regardless of spice tolerance) to experience fantastic ethnic cuisine. This is not to say that the other Indian restaurants in town aren't fantastic in their own right. India Palace is great, I ate there just last week. Passage To India is good enough to draw the attention of Guy Freakin Fieri and serves up fantastic meals as well. However, sometimes a restaurant becomes our favorite for reasons we just can't explain. And for whatever reason, the food at Everest Tikka House hits the spot for me every single time.

If Indian food isn't your jam (you won't know unless you've tried), get out and explore one of the many other options you'll find in this magazine. I didn't have Bernbaum's for the first time until a couple of months ago and I deeply regret not visiting them sooner. Plaza Azteca and Mango's offer another level of Mexican cuisine. Really, there are so many great restaurants in town, international or otherwise, I don't have space to mention all of them. Go out and let your taste buds explore!

A fair amount of people know about them. In a Facebook post we put out at the beginning of the month asking for people's favorite local international restaurants, they went far from unmentioned. However, I have to think that they would be more widely known if they weren't tucked away in the Moorhead Center Mall. In my eyes, they truly are a gem. I urge you to give them a try. Their Tikka Masala, Chili, Masala Wings, Saag and Garlic Naan all offer serious serious flavor!

Mediterranean Shrimp Pasta

T

here can be nothing quite as satisfying as a dish of rich and decadent pasta. The amount of comfort found in the carb loaded dish can leave you feeling like a nap is needed like after a Thanksgiving feast. It’s sort of what we like about pasta, full and content. The thing I love most about cooking and creating dishes, is seeing the joy on people’s faces when they take that first delicious bite and the look of wellbeing once they have finished eating. Cooking is my way of artistic expression and I really enjoy it. This dish was inspired to lighten up the load for a summery touch on the classic heavy dish. This recipe is for a single serving, though feel free to prepare it for the whole family.

Ingredients: • 1 tbs finely diced yellow onion

• 1 tsp chili flakes

• 1 tsp minced garlic (I prefer fresh, but you can use jarred)

• 2 oz shredded parmesan cheese • 6 oz fettuccine noodles

• 6 ripe grape tomatoes, halved

• Pinch of parsley to garnish

• 8 shrimp, veins and tails removed • 3 tbs white wine (any dry white will do, I use Chardonnay) • 1 tbs lemon juice • 1 tbs oregano


Preparation: Prepare pasta according to package instructions. This recipe calls for fettuccine, but a penne would be great too, or you could use a gluten free variety. In a lightly oiled medium frying pan over medium heat, saute the onion, and garlic until getting aromatic, then add the shrimp. Cook shrimp until turning light pink. Add the grape tomatoes when they start to blister deglaze the pan with the white wine and lemon juice. Toss with chili flakes and oregano, salt and pepper to taste. Dish up and garnish with parmesan cheese and parsley. I hope you enjoy this dish. If you have questions or if you prefer that I prepare it for you, come visit me at Boiler Room!

Tell us a bit about yourself: I grew up on a farm in western Minnesota and love the country-life. Being outdoors and working with our bees are some of my favorite things. I’m also involved in our church’s music ministry and enjoy playing guitar and singing.

Describe what you create at Three Bears Honey Company? From hive to bottle is our motto. Our honey is locally-harvested in the Red River Valley and is as pure as it gets. No questionable additives or added sugar, just 100% pure unfiltered honey. We are a family-owned business that enjoys what we do and takes pride in providing a high-quality product to our customers.

How did you get started with your business? When I was in my early 20s, I was intrigued with the idea of getting a beehive, so I took the plunge. I thoroughly enjoyed it, and soon what started off as simply a hobby, turned into a side-business and eventually the full operation it is today, where I work alongside my son, Travis.

Tell us where your name came from? Back when I first started Three Bears Honey Co., I wanted a way to differentiate our product from other honey jars on the

What's your most popular style of honey? Our clover, wildflower honey is often our customers’ go-to item. Additionally, our customers enjoy our raw, unfiltered honey. Raw Honey is the natural state of honey. It has a thick, crystalized appearance and is full of enzymes and minerals that can aid in the digestion of complex sugars. Our customers love that raw honey goes straight from the hive to the jar on their counter. What's your personal favorite way to use honey? Nothing beats honeycomb straight from the hive on a warm summer day. How has the honey and bee business changed over the years? It seems like the bees have a lot more challenges now than they did years ago with disease, chemicals and less flowers to forage. Especially in recent years, however, there is more awareness being drawn to this issue, so it has been great to see our community take steps to being more pollinator-friendly. On the honey side of things, we see interest in honey grown year over year. I think people enjoy having access to pure local honey and like to support local beekeepers.

Plus, studies continue to underscore the health benefits of honey, which I believe are encouraging people to look at ways to incorporate it more often into their diets, especially for purposes such as allergy relief. What is your favorite thing about having your own business? There are many things I enjoy, from having more freedom and working outside each day to getting to hear feedback from customers about how they enjoy and use our product. I especially treasure the fact that we are a family-owned business. My son Travis has worked alongside me since he was 13. I appreciate having the opportunity to grow this business with him and look forward to seeing how it continues to flourish—even my grandchildren have been able to get involved! It’s really fun to see. What is the most challenging thing? The unknown. Will we have a good crop? Will our bees remain strong? Ultimately, you just have to have faith and believe that you’re going to get a crop and provide for your family.

What is a word that best describes you? I’m not sure, but I do know I have a lot to be thankful for. What advice would you have given yourself 10 years ago? Don’t let fears and hesitation hold you back from promoting a product that you believe in. Where can people find your work? All WEBBLEN Warm Greetings This month I had the privilege to chat with the founders of Webblen: Sir Nathaniel Thoreson & Sir Mukai Selekwa. Nathaniel is an entrepreneur passionate about designing digital products that make the world a better place. Mukai is a digital entrepreneur and humane technologist with extensive experience developing software applications and internet marketing strategies. His passion for psychology and business has led him down a path focused on creating technology that provides real benefit to those that use it, not just those that have created it. With the next generation of Tech, his mission is to help create a world that is more rewarding for our humanity, our social life, and our environment. Where do you call home? Nathaniel: Born in Wheaton, IL but I have spent most of my life in Fargo. Mukai: Fargo, ND. However, I spent most of my early childhood in Tallahassee, FL. Can you share the story of your passion for giving back to the community? Nathaniel: I have a life philosophy that life is absurdly short. We only have ~100 years to live on this planet and it is our job as individuals to use every second that is given to us as well as possible. I believe that our time is best spent doing whatever we can to make the world a better place. Growing up as a member of GenZ in Fargo, I have seen firsthand the negative effects of social media on the well-being of people. In Fargo specifically, people often say there is nothing to do here so they spend their time at home scrolling through social media. My mission with Webblen is to show people that there is more to life than a screen while encouraging the people of Fargo to get involved in the community. Mukai: Living in Fargo, our team knows that there's a lot of different activities and events occurring in our community that people (including ourselves) are missing out on. Community engagement is one of the most important aspects of what makes a healthy community a "healthy community". However, it's one thing to have an event calendar that lets people

know what is happening in their area. There are many resources for that. The real issue is not necessarily having the information of what's happening in your community. The real issue is what is going to incentivize you to be engaged in the first place? What started the Webblen App journey? Nathaniel: Social engagement has been on a steady decline, especially in the age of social media and the COVID-19 pandemic. Because of this, we are seeing epidemic levels of loneliness, depression and anxiety. At the same time, local businesses have been in a decline. The solution to both of those problems is community. With an engaged population, people will be happier and healthier while helping local businesses. Mukai: This is a slightly similar answer to the previous one, but I'll touch more on how Webblen has become what it is today. Originally, back when we were in high school, there was a program provided by the FMWF Chamber of Commerce called the Young Entrepreneurs Academy (YEA). I joined the program and had a business focused on integrating all social media into a single platform... Facebook, Twitter, LinkedIn... you name it. Along with that, it would have an additional feature known as an "Event Notifier". The goal was to truly create the "end-


all social experience" platform. Most of the interest we received was from the Event Notifier and honestly, it's not wise to create a business that's too dependent on other businesses, so we scratched integrating existing social platforms specifically focused on our Event Notifier. I spent about two years developing the beta version of our event notifier and asked the rest of the team about an issue I stumble upon while working with our product. Outside of knowing about an event, what is going to incentive us to attend it? That's when we realized the problem we're solving. The problem that we're experiencing worldwide has to do with community organization and engagement. What is going to incentivize you to be engaged with the world around you? That was the beginning of what has made Webblen what it is today. Why should young professionals care about community engagement? Nathaniel: The younger generations grew up at a pivotal time in human history. We are more connected with the world but less engaged with our local communities than ever before. We have seen firsthand the problems that mega-corporations and social media platforms have done to mental health and the bottom line of local businesses. Webblen is a tool that can help with the three main values that every company cares about, profit, people and the planet. By creating a more engaged community, it helps companies and cities make more money, create a more vibrant community, and encourage people to care about their physical surroundings. Mukai: There are three keys to having a sustainable ecosystem. This is also known as the "Triple Bottom Line". Those keys are revenue, social life/ engagement and environmental impact. The next generation of businesses need to provide sustainable solutions. These

solutions must not only be competitively viable via revenue, but they must also provide positive results for your community and environment. Neglecting community engagement is to neglect what makes us who we are. We've seen and continue to see the consequences of a world where most of our social engagement is through the black mirror you have in your pocket. How can we fix this? Our team and young professionals should really be focused on all our communities' triple bottom line before it's too late. Because believe it or not: we're in a race against time right now. What are misconceptions of what it takes to be involved in the tech community? Nathaniel: A common misconception is that to be involved in Tech, you must be a developer living out in Silicon Valley. This couldn't be further from the truth. Webblen has gained massive traction in the Midwest by building an experienced team with a passion for our mission. In addition, coding isn't the only thing necessary to build a successful tech platform. For example, I don't code, I am responsible for design and marketing, two things that are vital for a platform's success. Mukai: There are two misconceptions of what it takes to be in Tech that irk me. First, it seems as though people find it difficult or feel they're "not smart enough" to get involved in Tech. I'll tell you right away that technology is flexible enough and fluid enough to be worked on by people with diverse skills, interests, and talents. The best part? It's only getting easier to get involved with the Tech community. It's the future so you better get with it sooner than later in whatever way makes sense to you. The second misconception... more so a motive I hate to see, is people getting involved with Tech for the sole purpose of monetary and personal gain. You very much can take that route and

perspective when it comes to Tech if you so choose. It's your life. If you do take that route, it will be hard to convince me and many others that what you work on or create makes the world a better place. Technology is only as moral as those that create and use it after all. So, before you get into Tech, ask yourself: what it is that you are passionate about and go from there. Become the technologist you were meant to be. Hopefully, it's one of the good ones. Can you share some of the work you do in the tech community? How can other young professionals get involved? One of our many ambitious goals is to make Fargo a tech hub in the Midwest. So far Fargo's tech scene has been primarily focused on AgTech and drones. We hope that by building a communitydriven platform, Webblen is a part of a place where Tech workers from all over the country want to work and stay. What is your vision for 2030 for the TriCollege community? I see the tri-college community as being a center for innovation in the region. By investing in our communities, I see our campuses attracting innovative people from around the country that want to stay and be a part of the innovation happening here.

5 Boxing Training Principles You Can Use to Boost Your Workout Routine

Most fitness enthusiasts out there train differently based on the sport(s) or activity(s) that they do the most. Someone looking to break weightlifting records is going to spend the majority of their time pumping heavy weights while someone hoping to complete their first marathon is going to be running in their free time. However, I’m a firm believer that a person can benefit from incorporating multiple training principles into their routine. This includes some of the training principles common to boxing, a sport that combines speed, strength and big time stamina. As a favor to the community, local boxer and boxing trainer Lorenzo Cardona Jr. wrote up five boxing training principles that he uses to achieve real results with his clients.

1. When it’s time to work, we work, when it's time to chill, we chill. When it’s time to train, nothing else matters. The only thing that matters is that you put in that work. Leave everything at the door outside of the gym. Or if you are at home, stay focused. Every second is crucial, don’t allow yourself to waste any time. In other words, don’t cut anything short and be ready to jump back in just as quickly as you stopped for a break.

2. Use the Jump rope. The jump rope is a classic tool used by many boxers to stay in shape. Many greats such as Muhammad Ali, Mike Tyson and Floyd Mayweather used the jump rope. For best results step away

from the traditional short intervals, such as 15 or 30 seconds. In boxing, rounds last three minutes with a one minute break between rounds. You should aim to incorporate three rounds of jump rope into your workouts as either a warm up or a cool down at the end of your workout with a one minute break in between each round. Remember if you mess up, don’t worry, just jump right back in in less than three seconds!

3. 30-minute jog If you’re not in running shape, you’re not in fighting shape. Incorporating 2-3 30-minute jogs per week is not only a great physical challenge, but a great mental challenge as well. Choose one pace, not too fast and not too slow, and stay there the whole time. Just focus on your breathing. This can be done either outside or on a treadmill!

4. Add some burpees/ bodyweight exercises These are fun because, again, they are both physically and mentally challenging! For the burpee, you will start by marching your feet in place. You will then perform a burpee, the cleaner the better! Go down without the knees touching the ground and throw your feet back in push-up position, do one to three push-ups and throw both knees back up and jump up as high as you can! You then return to

marching your feet for 1 to 3 seconds and then do another burpee. Continue this pattern for 3 minutes. I would use this as a finish to your workout routine, however, every now and then, it’s a great “preexhaustion” for you boxers and runners as well. Bodyweight push-ups and squats are also great exercises to include in your routine.

5. Be grateful Waking up every day is a blessing! You get to train today and get 1% better! An easy way to do this is to switch your mindset. Everyone always thinks of the bad, but they forget to look at the good in things. So next time you have a negative mindset, immediately switch that into something positive. We are blessed!
