Walaker to talk about Fargo entertainment. We also put together the first ever FM Burger Battle, which made for a fun photo shoot and interview process that turned into more of a carb-loading, diet crushing process. If you’re familiar with our sister publication, FM Stride, we made a big improvement to the size. We increased its height to make it more of a feature article
publication. FM Spotlight will be the same size as usual but will now start taking more of a resourceful role. Each month moving forward we are going to start incorporating more resource content. This month’s addition is the section called “Hot List.” It is a list of our picks each month for dining, nightlife, shopping and fun. In the following months we are going to add a Deals

ennis Walaker is a household name in Fargo. He led Fargo to victory
as a board member of the Plains Art Museum and Red River Zoo and
partake in the entertainment of Fargo. Mayor Walaker has been an integral part of Fargo’s development and was gracious enough to stop by FM Spotlight to talk about future of Fargo.

I keep telling my gran dsons, the day you quit lear ning and think yo u know ever ything ther e’s a big problem. FMSPOTLIGHT: How long have you been mayor of Fargo? MAYOR WALAKER: Six years now. I’ve got two more years of this term. A mayor can run for up to three terms. FMSPOTLIGHT: Did you always see yourself as being mayor? MAYOR WALAKER: [Laughing] I keep telling everyone that the main reason I ran for mayor was because my wife didn’t want me at home. No, I didn’t always see myself as being mayor. When Furness decided he didn’t want to continue, there was some controversy over who was going to be the next mayor. There was nobody who fully understood the city as well as I thought I did, so two weeks after I retired I ran for mayor. FMSPOTLIGHT: Reading any good books?
MAYOR WALAKER: Right now I’m reading Chris Matthews’s book on JFK — “Jack Kennedy: Elusive Hero.” FMSPOTLIGHT: Favorite area restaurants? MAYOR WALAKER: Well, there are a few. I like Maxwells in West Fargo, Sarello’s, the Hodo — best Bison Burger I’ve ever had in my life. There are a lot of good chains around the area but some of these locally owned are really very good. Today, there’s enough competition in Fargo that if you’re not good at what you do you’re not going to survive. FMSPOTLIGHT: Over the years, what has changed most about Fargo? MAYOR WALAKER: The renaissance of downtown is probably the most visible change. When you go in to most towns our size you usually see something other than a vibrant downtown. The housing in downtown didn’t used to be anything exciting…just marginal. Some people also forget there used to be the sound of the railroad – coal trains and lots of oil being shipped out. When the city went through the process of eliminating the train horns
that really changed things. One of the exciting parts about downtown Fargo is that we went from a 10 to 12 million dollar area 12 years ago to a well over 100 million dollar downtown today.

Ryan Nitschke has been cooking up a storm in the kitchen since high school. Now, with an Emmi Roth Award under that big white hat, Nitsche is one top-notch Fargo chef who knows how to slice, dice and add a touch of spice to the menu at the HoDo.
MONTH
How did you decide to become a chef?
Cooking was something I liked to do throughout high school so I decided to try culinary school at Minnesota State Community and Technical College-Moorhead. I worked my way through school and learned just as much working at the HoDo as I did during all of my schooling. HoDo is a great place to work. What’s the best part about being a chef? Getting to play with knives and fire all day long. You get to create
things and create experiences for different people. You get to see the smiles on people’s faces and make their evening. Creating food is kind of an art form; you have the ability to create something that wasn’t there before.
Any crazy cooking stories? It was very cool winning the Emmi Roth Award for our Black Sambuca and Buttermilk Blue Cake – which is now on our menu, so everyone can come try it. That experience, all together, was amazing.
Did you get your cooking skills from your mother? Haha, no! She is more of the Hamburger Helper box type cook. I would say I got my cooking skills from my grandmother. She was an amazing cook and she liked to cook the heart, the liver and all of those nasty parts … just like me
If you could only eat one thing for the rest of your life what would it be? Oh, wow, I don’t know. This is really hard. I guess something simple, like my mom’s cooking. Anything she cooks is good..

his month I traveled to Florida for a much needed vacation. By the end of the trip I was ready to come back to Fargo. It wasn’t just because my skin felt like leather and moths were flying out of my wallet. I began to wonder why I was ready to leave the land of sun and fun for Fargo. I soon began to realize that it’s because I actually began to care for this community. The people, the city, the Moorhead Dairy Queen finally being open — I missed it all. As you can see, our little magazine has grown up. With the new size comes the potential for much better content. Our

y dog, Dickens, is way ahead of the game for Earth Day. For the past month or so, whenever I take him for a walk he makes it a point to pick up EVERY PIECE OF GARBAGE he can find. In fact, Dickens hunts garbage so often that I’ve grown accustomed to his body language and can now translate dogspeak to English. Discoveries range from, “Hooray I found a Trident wrapper!” to “Yum, a greasy napkin with blobs of BBQ sauce!” to most recently, “Oh look what I found!… a half decomposed KFC chicken wing!” [Insert me screaming.]

So what do I think about my seven month old Cocker Spaniel’s garbage obsession? I usually react in one of two ways: 1)I yell “NO!”, Dickens drops the object and we continue another three feet to the next piece of garbage OR 2)I yank whatever it is out of his mouth, throw it onto the ground, feel an overwhelming sense of guilt because I just littered with someone else’s litter, pick up the piece of garbage, swear under my breath and carry it off to the nearest dumpster (which is usually located around every corner in the ghet—oh, I mean South Fargo). If you’re struggling to find

something to do on Earth Day pick up some garbage. Plain, simple, maybe even cliché for Earth Day, but hey, at least you’re doing something. Oh, and don’t worry about Dickens…he might be disappointed to find that the hunt for a wrapper is harder than before, but he’ll keep plenty busy chasing mosquitoes when they get in to town.

I’m told that when training for a marathon I’m supposed to eat more food. How do I do that without gaining weight -since my ultimate reason for training and running a marathon is to LOSE weight?
It’s best to eat balanced meals throughout the day to keep your blood sugar stable. For long runs cut up a balanced protein bar into little pieces and bring it with you on the run. This will help your body refuel and keep you from binging afterwards when your carbohydrates. It’s NOT necessary to eat a huge meal thon. THIS IS A MYTH. The idea was that your body would store the extra carbs and use them during the time of the run/race for the energy needed. This isn’t exactly how it works and you’re better off eating regular balanced meals or balanced protein bars during your long runs or races. Eating this way will also help you to lose stored body fat. When you eat regularly and feed your body well, it no longer needs the excess stored body fat so it will burn off in time.

Y
o u have a college degree in cial representative. Seems like a complete 180, right?
Well the biggest thing was that I got a job offer in the financial field in Jamestown when I was done with school in 2005. During college I really enjoyed teaching seventh and eighth grades but I just felt I couldn’t reach my full potential in a teaching career. So during school I applied at quite a few different financial firms and was lucky that Northwestern Mutual was willing to take a chance on a young kid straight out of school with no experience. You’re only 27, how’d you become so successful so quickly? I started in this business when I was 22. I had to act old and found out a $99 business suit goes a long way. I also found out real quick that if I wanted to be successful I needed to move up as fast as I possibly could. I needed to have a good sphere of people around me and sought out business owners to accountants to mortgage people. With my clients in mind I wanted to make sure that I was surrounded by the best of the best. Do you like managing your own business? I always wanted to be a business owner so I could run things the way I saw fit. I have a total of five representatives that I coach and mentor. What’s great
is that, in a sense, I’m still able to do some of that coaching and educating that I have a background in. So you basically went into the cial world not knowing much about it? I had no network and no experience, just a few friends and family friends in the Fargo area. I went through the training and got the licenses in the areas I needed. To help me grow my own business I really leaned on my family, close friends and the network I had built through school. I also joined the Kiwanis group and Business Networking International to try to expand my knowledge and meet as many people in Fargo as possible. Where do you see yourself in ten years? My main goal is to hopefully be viewed in the professional market as a valued resource when it comes to financial security planning. The more I can specialize in my field the more of a valuable resource I can be. How do you alleviate the stresses of the work world? Well, [laughs] when I’m doing it consistently, I’m a big believer in diet, exercise and living a healthy lifestyle. I hit up the gym and go to the wellness center. The biggest challenge for me is finding time and being disciplined. I enjoy traveling whenever time allows and also like to kick back at various events around

Peanut Energy Bars 1/4 c. dry roasted peanuts 1/4 c. roasted sunflower seeds or other chopped nuts 1 c. raisins or other chopped dried fruit 1 c. rolled or quick-cooking oats 1 c. toasted rice cereal, such as Rice Krispies 1/2 c. semisweet chocolate chips 1/2 c. creamy or crunchy peanut butter 1/4 c. packed brown sugar 1/2 c. honey 1/2 tsp. vanilla extract

Coat an 8-inch by 8-inch baking pan with cooking spray. Combine peanuts, sunflower seeds (or other nuts), raisins (or other dried fruit), oats, choco late chips and rice cereal in a large bowl. Combine peanut butter, brown sugar and honey in a small microw aveable bowl. Microwave on high for 1 to 2 minute s or until bubbling around the edges occurs. Add vanilla and stir until blended. Pour the peanut butter mixture over the dry ingredients and stir until coated . Transfer the mixture to the prepared pan. Press down firmly. (It helps to coat your fingers with cooking spray.) Let stand for about one hour to harden. Cut into bars.

on Offutt is a glass blower whose studio, House of Mulciber, is located in Fargo. “I primarily make what I want to make and hope people buy it,” Offutt says. Not only does he create his own work, but Offutt also makes commissioned creations and travels to various towns and cities with his glass studio on wheels to educate indi-
viduals seeking artistic knowledge. Offutt also provides education to FM residents by opening his studio to high school art classes and other groups. Each year, during the first weekend in October, Offutt participates in Fargo-Moorhead’s Studio Crawl, an event that allows the public to visit the studios of local artists. Currently, Offutt is working on a series of work titled “Dakota Horizons” to be displayed at the Plains Art Museum. hawna Davidson doesn’t need much space to create her art – her kitchen or basement, depending on her mood – serves as her studio. She makes jewelry pendants by placing sayings and photographs between glass and soldering a sterling silver frame around them. For some creations she recycles vintage buttons and rhinestones. Originally a painter, Davidson taught herself how to solder. “If I see something I want to figure out how to do, I just do it,” Davidson said. Davidson sells her creations at arts and crafts

In the summer, she sells locally at the Fargo Street Fair and the Island Park Show and travels to other arts and crafts shows in North Dakota as well as in Minnesota, Iowa, Wisconsin, Illinois and South Dakota. “I do shows because I like the direct contact (with costumers),” says Davidson. Her creations are also available on artfire.com under Live Out Loud Designs.

or Rheault, using a plasma cutter is “like drawing with fire.” Rheault creates metal sculptures at her Snowfire Studio (located in a shed next to her horse barn) on her country lot north of Moorhead. “I’ve been making stuff my entire life … I’ve dabbled in all different mediums,” Rheault said. A painter for 15 years until she took a “quick how to” welding class from a local artist, Rheault now creates wall sculptures, mirror and fireplace surrounds and other home decorations. She travels around the U.S. selling not only her sculptures, but also her jewelry, which she makes in collaboration with local artist Tara Argall.
