July 2011 ISSUE #8 e are in the midst of summer here in the Red River Valley, and it is a great time to get your body into swimsuit condition. We have made it through the Fargo Marathon in May, and we dusted off the golf clubs to get our swing back in shape for June. July has been known for hot weather, the lakes, and other outdoor events. This month, FM Stride sits down with Dr. Abdullah, founder of the Lexli Skin Care Line, to discuss skin health and protection from the intense summer sun. We also hit the streets with the Fargo Street Fair and give you an inside peek of what is new this year at the 36th annual event. Baseball and softball season are well underway, and new to town is the FM Ball Yard—a facility focused on baseball and softball mechanics. FM Stride also gets a consultation from Spray Your Fat Away, a new weight loss treatment to the FM Area. The summer weather has the farming season in process and July kicks off the season with local farmers markets, and we have the resources to find your favorite stop. This month we continue to get inside tips from local golf pros and we feature an exclusive interview with NDSU’s All-American golfer, Amy Anderson. It has been an exciting summer so far, and we look forward to kicking off July with a bang!vities on the weekends. As we all know, exercise is just one aspect of being healthy. This summer, FM Stride is recognizing the local farmers markets in the area. Local food is not only proven more nutritious, but also supports the local economy. Summer Grilling Recipes Directions 1.Process all marinade ingredients in blender until smooth 2 Place steaks in a large baking dish. Pour marinade over; cover, refrigerate for 2 hours, turning occasionally. (Steak may also be marinated in a Ziploc bag). 3.Let stand 20 minutes at room temperature. 4.Prepare barbecue. When coals are white hot or gas grill has reached 400°F, remove steaks from marinade and grill until desired.

Buttermilk Chicken

Grilled Steaks with Lemon-Herb Marinade

12 Servings Ingredients 4 cups buttermilk 5 garlic cloves 1 cup fresh rosemary or thyme Coarse salt and freshly ground pepper 3 whole chickens (about 3 pounds each), cut into 8 pieces each (then halve breasts on the diagonal) Safflower oil, for brushing

4 Servings Ingredients 4 (1 1/4 inch thick) T-bone or Porterhouse steaks 1/2 cup vegetable or olive oil 2 tbsp. red wine vinegar (1/4 cup) juice and grated rind of 2 lemons 1 tbsp. fresh basil or 1 tsp. dried 1 shallot, minced or 1 large onion, minced 1/4 tsp. oregano 1 tbsp. soy sauce 1 tbsp. Worcestershire sauce 6 cloves garlic, crushed 1/2 tsp. black pepper Directions 1 Combine buttermilk, garlic, herbs, 2 tablespoons salt, and 2 teaspoons pepper. 2. Cover chicken with marinade, turning to coat. Refrigerate for at least 4 3. Heat grill to medium with direct and indirect heat zones. Brush grates with oil. Remove chicken from marinade, and pat dry with paper towels. Grill for 10 minutes. Flip, move to indirect heat, and grill, covered, until thermometer registers 165 degrees for 10 min.


Grilled Salmon

6 servings Ingredients 1 1/2 pounds salmon fillets lemon pepper to taste garlic powder to taste salt to taste 1/3 cup soy sauce 1/3 cup brown sugar 1/3 cup water 1/4 cup vegetable oil

Directions 1 Season salmon fillets with lemon pepper, garlic powder, and salt. 2. Stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours. 3. Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Southwestern Turkey Burgers

Directions 1. Heat grill to medium-high. In a medium bowl, place turkey, jalapeno, cheese, breadcrumbs, mayonnaise, 1 teaspoon coarse salt, and 1/4 teaspoon pepper. Mix very gently with a fork to combine, being careful not to overwork meat. 2. Gently form meat into 4 equal-size patties. Press thumb in the center of each patty to make an indentation approximately 1/2-inch deep. 3. Moisten a folded paper towel with oil; grasp with tongs and rub over grates. Season burgers with salt and pepper; grill until cooked throughout, 5 to 8 minutes per side.

Summer provides an excellent opportunity for everyone to get outside and enjoy the fresh air. However, before you start soaking up the sun, here is what you need to know about sunscreen:

Double Check Sunscreen

T

he Environmental Working Group, a Washington-based nonprofit, has released an investigation of nearly 1,000 brand-name sunscreens. The results revealed that four out of five sunscreens do not adequately protect consumers and may contain harmful chemicals. The group says that some of the products of the nation’s leading brands—I including Coppertone, Neutrogena and Banana Boat—are the poorest performers.

W

earing sunscreen effectively blocks your body’s production of vitamin D, which happens naturally when your skin is exposed to sunlight. In fact, sunscreens reduce vitamin D production by as much as 97.5 to 99.9 percent. That is why our first recommendation is no sunscreen at all. If you choose to use sunscreen, make sure to get one that blocks UVA rays, but allows UVB rays. Be sure to get moderate sun exposure without sunscreen to ensure vitamin D production—this means enough sun to make the skin barely begin to turn pink but not begin to burn (anywhere from five to 30 minutes per day, depending on your skin and climate).

f you are going to be outdoors beyond that point, find shade and use tightly woven clothing and widebrimmed hats for your first line of defense. When choosing a sunscreen, make sure to read the labels carefully. Avoid the top two chemicals dioxybenzone and oxybenzone, as these chemical toxins are absorbed directly into your bloodstream. Also, choose a product free of phthalates and parabens (PABA free), and use SPF values as general guidelines. Choose a mineralbased formulation over chemical blockers and apply it generously for full effectiveness, but only apply it to the skin that will be exposed. Common brands that are nontoxic choices are Baby Organics, Earth's Best, California Baby and Dr. Mercola, which have a natural sunscreen that blocks UVA, but allows UVB rays.

About the Course: Osgood golf course is a traditional links-style course with native grasses and rolling hills. The course offers five different tee boxes, so players of all abilities can play. Osgood also has a 3-hole practice loop, two par 3’s and one par 4 that can be played for only five dollars. The course also has the largest driving range in the area with over 25 available spaces from which to hit. In addition, Osgood offers a great short-game area with a sand trap and 50 yards of pitching and chipping to a beautiful horseshoe-shaped green. Best Practice Tip: The more you practice your pitching, chipping and putting, the lower your scores are going to be.

Teaching Philosophy: Relax and keep it simple. Any move in the golf swing can be made more difficult if you keep your arms stiff and tense. Relax, loosen-up and no matter what, have a good finish.

Driving Tip: Have a good finish! If your hips are pointing to the right when your swing is done, there is a good chance your ball is going to go in the same direction and vice versa.


Putting Tip: Keep the stroke even and have a consistent tempo. Try to get a song in your head that the clubs can stay on beat to.

Are there any upcoming women’s tournaments? I personally run a breast cancer awareness tournament called Rally for the Cure for the Susan G. Komen Breast Cancer Foundation. Iron Tip: Every shot from off the ground needs to have a divot after the ball. The best way to get a divot is to relax and make sure that all your weight is on your front foot when you’re done.

Recreation/Golf since the courses are situated along the river, I am in charge of a lot of flood recovery at the courses. When the water goes down in the spring, it’s our job to prevent it from coming back up. After the water recedes, the courses are left with debris of silt, sometimes up to an inch deep. We need to remove the silt and get the course in playable condition.

s the superintendent of Edgewood Golf Course and El Zagal, Mark Lindberg has a big job. Each year his courses are plagued with high winds, late springs and flooding. Despite all these obstacles, Edgewood remains a constant hotspot of area golf enthusiasts. Being the only tree-lined public course in the FM area and with no houses situated on the course, it offers

a much more secluded, private and peaceful atmosphere for its patrons. Lindberg shared his thoughts with FM Stride on how to prepare Edgewood for another successful season.

As the course superintendent, what are some of your responsibilities?

My main job is maintenance and caretaking of the grounds at both Edgewood and El Zagal. Also,

We have taken preventative measures the last couple years, such as the construction project to increase plumbing and raise the tee boxes. What are some of the big obstacles you encounter maintaining courses in this area? Weather is the biggest obstacle for us in this part of the country. We battle wind, rain and river flooding. The only time we have trouble with winter is when the snow stays on the course into late spring, this is typically a sign of major flooding for the course. Winter isn’t always bad for us. In fact, with the

perennial rye grass that we use on the course, the winter snow protects and revitalizes this specific grass every year. One of the biggest obstacles we face for course maintenance is financial limitations. It is expensive to restore the course from major flooding one time, let alone three years in a row. I guess it just comes with the territory!

I used to be an avid golfer, but the last three years have kept me busy maintaining the course rather than enjoying it. One time I shot a 74 at Edgewood, which is my personal best.

ALL AB T he best word to describe NDSU's stand out All-American golfer is unique. Unique in a way that she was home schooled and is now a junior in college at the age of 18. She’s unique in the fact that she won the National US Girls Junior Amateur Golf Event in 2009. And finally, unique in a way that she was named to this year’s National Golf Coaches Association All-American team while on her way to compete in the 2011 Women's US Open. All of this might not seem normal to the everyday person, but it gives us a new unique athlete to cheer for in Fargo-Moorhead. FM Stride sat down with Amy to find more.

Why did you choose NDSU?

I grew up in this area and wanted to be close to my family and swing coach. I also appreciate the support of this community and when they found out I was attending NDSU, the reactions were amazing. This made it worth it to me.

What challenges do you have golfing in a cold climate?

It can become challenging considering I can’t practice outside in the winter, but I make my way to the Sports Bubble in Fargo four or five times a week in the offseason. I try to take two months off, but after that, it is a very intensive training process.

Tell us about why you use a swing coach?

Dan Helm of Mayville ND has been my swing coach since I was 13-years-old. When I swing, it is difficult to tell what I am doing in each aspect of the swing. Dan helps to correct small mistakes and he notices things that I normally would not. This is important so that little mistakes do not escalate into big problems!

What is the ONE thing you focus on with your swing?

Keep my head back! When my head moves forward I tend to start spraying the golf ball all over the place.

Are you nervous for the US Open?

When I won the 2009 US Girls Junior Amateur tournament, I was able to compete against national athletes with the heightened media and attention. It was very nerve racking, but it gave me valuable experience that will help me in future events, like this year’s US Open (July 7-10th at the Broadmoor in Colorado Springs, Colo.).

Any advice for us golf wannabes?

Amy has been the Summit League women's golfer of the year for the second straight season.

Yes‌Practice! Seriously, it's free to chip and putt. Everyone wants to go to the range and hit the drivers and irons, but the real scoring comes down to chipping and putting!

Amy led the Summit League by more than two strokes with a school record 73.1 average and won the league championship by three shots after finishing second in 2010. Coming next for Amy is the Women's Open: July 7-10 at The Broadmoor in Colorado Springs.

Relax and let your big muscles take over like your hips. Use less of your arms because they are like ropes and inconsistent.

Remember you are not hitting for distance, you are hitting for direction. If you need the ball to travel further try another club.

Make sure you pause at the end of your back swing so you can continue a consistent pendulum swing. The pause must be the same each time.

n this part of the country, it seems like winter drags on much longer than it should. Coach Mike Skogen has solved this problem for area baseball and softball players. Fed up with the lack of baseball training facilities, Skogen founded the FM Ball Yard, which is an indoor training facility for baseball and softball. The Ball Yard is scheduled to open in July and is located at 1240 41st St. N. in Fargo. Check out what this new facility has to offer to the FM area. FM Ball Yard founder Mike Sogan has been baseball coordinator for Midway School District for 15 years, NDSU student assistant coach from 1999-2006, 2 years assisting the FM Redhawks, and is currently MSUM's club team head coach.

What do you offer at the FM Ball Yard? The FM Ball Yard offers up to five unique indoor batting cages with over 13 feet of clearance. Two of the batting cages offer the Pro Batter system, which is a pitching simulator designed

for anyone from tee ball to the professionals. The facility can be tailored for one individual or an entire team; the FM Ball Yard also offers personal lessons.


Who can use the facilities? The FM Ball Yard is for anyone who wants to improve his or her game. Let’s face it, batting practice at the park just isn’t the same as stepping into the batter’s box during a game. If you are struggling at the plate, the Pro Batter system offers a great alternative to game-time situation. This simulator can have you hitting the upper 80’s heater, or it can train you to keep your weight back on the nasty curve.

Where did you get the idea or inspiration for the FM Ball Yard?

“During the offseason, I was sick of wearing my winter stocking cap in some of the insufficient facilities around the area.” – Skogen

Coach Skogen has paid his dues to the tough baseball offseason in the FM area. After being fed-up with the lack of training facilities in Fargo-Moorhead, he decided to establish his own. As a baseball advocate, Skogen would like to see a greater push for offseason baseball and softball training in FargoMoorhead.

from all over the country the opportunity to sell their wares and showcase their talents to the public. For thirty-six years, the Street Fair has been an area hotspot for members of the FM community. It is a great way to see the talents of community members, as

well as stay fit by getting outside and walking the streets. Stephanie Holland, the coordinator for the Street Fair, is looking forward to another successful year and gave FM Stride an inside look at the fair this July. This year, North Dakota’s largest free outdoor event runs from July 14-16, 10am9pm.

6What can people expect at the Street Fair this year?

People can expect never before seen artists at the fair this year as it draws vendors from around the country. The fair offers creatively driven events for children, entertainment and of course, there is always good food. Some of the top entertainment events to look for are the theater productions, juggling and live music. You can also catch the concerts all day Thursday in the US Bank plaza.

This year there are going to be expanded booths for new artists and crafts.

6How many people are expected for the Street Fair?

• Through observation we estimate about 150,000-170,000 people will attend. Thursday is the busiest with spectators from around the area, and Saturday attendance pulls a lot of business in from out of town, especially Winnipeg.

6How long has the Street Fair been in Fargo? This will be the 36th year in Fargo, and it has always been downtown.

6How does weather dictate the turnout of the Street Fair?

6Can any vendor participate?

No, in order to be a vendor at the fair, our committee must select you. There is a group from the community composed of a novice, veteran committee members, crafters and artists, all of whom are anonymous. This group determines which vendors will be at the fair. It is competitive and around 25 percent of vendors that apply are not accepted.

6Future of the Street Fair:

Continue to attract the new arts and crafts. Continue to fight the down economy and work towards an exclusive child’s art area –such as a universal wall mural.

6Can you talk about coordinating the fair?

Sometimes the wind in the area can discourage vendors (especially artists) because of their delicate artwork. Nevertheless, the attendance from the area remains consistent. We have been fortunate with great weather the last couple years and we are banking on it again in 2011.

Some downtown businesses love the event, for others it can be a hassle. However, it is a big event for the community and it pulls in a lot of business from around the state and even internationally.

6How do you get vendors to the Street Fair?

6Is it a big hassle to shut down Broadway?

Most of our marketing is through word of mouth, but sometimes we place ads in art magazines around the country to draw national attention to the event.
