Welcome to the February issue of Coffs Coast FOCUS. hen I first moved to Coffs Harbour back in October, we quickly sourced a rental property and hit Bunnings Warehouse in search of 3M adhesive hooks. Approaching the registers, I spotted Terasa Reynolds. Bright, vibrant, cheerful – happy! A fashion enthusiast myself, I gasped and said to my fiancé, “Oh my God! I love her. We are lining up here; we 100% need to be served by this epic woman!” When Terasa buzzed my shopping through, I said to her with a big smile: “I lined up especially to be served by you; I think you look fantastic!” Terasa responded with a big hug and kiss, “God love ya!

Aren’t you beautiful!” She went on to explain that she was having a bad day, and my simple comment made her day a little more bright. Upon reading Terasa’s story, you’ll learn that she believes the key to a happy community is kindness. Terasa believes that smiling or simply saying, “Hello” to a complete stranger can actually make someone’s day! Here at FOCUS we highlight that it’s wonderful women like this who make the Coffs Coast community the fantastic place it is! C r o s s l a n d I recently had the pleasure of catching up with Michael Crossland to find out about his latest accomplishments, and he has had an amazing 2012. Many of you will know Michael’s story, which was shared in FOCUS 12 months ago. Michael was diagnosed with an incurable cancer at just 11 months old and only given 3 months to live.

knowing I had the great blessing of spending a special piece of time with Kai and that he is now pain free.” Michael still can’t believe that he has these experiences, and words can’t describe how it makes him feel inside. Talking of emotional topics, Michael presented to the children and families of the 911 attacks in New York late last year, and their stories were also life changing for Michael. “I was speaking to a gentleman after my event and he shared his journey being on the 47th floor, being told to stay in his cubicle, to stay calm and not move. He went on to say: “There was something telling me to get out, take the stairs and run”. He ran down 47 flights of stairs and whilst in the stairwell, he heard a massive explosion and assumed that the building was about to crush him, but he kept on running. When he finally reached the ground floor, he ran outside and saw what looked like a war zone. He looked over and saw that the explosion he heard earlier was the 2nd tower that had been hit. He ran from the building and heard a loud slapping noise. He got far enough away, turned and saw that the slapping noise was sadly people hitting the pavement, trying to escape the burning building.” Michael says: “These stories should be reminders to people that life is such a gift; we need to embrace it and enjoy it whilst we can. Our lives can be turned upside down with just one phone call, one bad decision, one act of terror, and it may never be the same again. I am a strong believer that it’s not about the amount of years you live on this earth, but rather what you fit into those years in making the world a better place that really matters.” Michael and his friend Simon O’Dell travelled to Haiti in August and filmed a documentary of Michael’s humanitarian work. They helped rebuild a new roof, shower and toilet and provide beds and mattresses for all the children at the Love Orphanage. They also hand delivered some beautiful quilts made by some
lovely ladies in Coffs Harbour and knitted blankets from the special ladies at Boambee Gardens. Michael said, “To see the smiles on these beautiful children over something so simple, something that we all take for granted every day, like a roof over our head, food in our stomachs, a blanket and clean drinking water is unbelievable.” Michael is passionate about his humanitarian work in Haiti and is planning another trip that will see him and his fellow Frontier project team head back over to build the top storey of the orphanage, an outdoor undercover play area and kitchen at the school that he and his team helped build in January last year. They will be holding a Hope 4 Haiti dinner at the Osprey Restaurant (Coffs Harbour Education Campus) on 23 February. Tickets are only $50, and for this you will be spoilt by a mouth-watering 3 course meal, entertained by some amazingly talented local artists and be the first to view the documentary of Michael’s humanitarian work in Haiti. There will also be raffle prizes, lucky door prizes and a live auction. back bone of who you are. I think a lot of people often forget how important family really is. And I think it's very important to have an open mind to the world and its colours and everything that surrounds you each day. The world is such a beautiful place; a lot of people get caught up in the mainstream media's outlook on a lot of things. I think the mainstream media puts a lot of negativity into people’s thoughts and minds. Being negative and having a narrow mind is a very contagious thing to be a part of, so I like to keep an open mind to everything I see and hear and to all of my surroundings. What was the starting point for your feature film? And what is it about? I was approached by a young man by the name of Patrick Pearse, who does a lot of documentary work. He put an idea on the table, and that idea turned into a year long project which took us all over the world. The film is an honest betrayal about punk meets surfing, the feature character being myself. It’s basically just about my character in and out of the water, something fun to watch and something different to experience. It’s a very dark, lifestyle heavy film with fast music, soft music, fast surfing ... a bit of everything all flowing together. Why did you choose to feature it at the Hoey Moey as opposed to a cinema? Corona are sponsoring the premieres, so there will be free beers. I don't think the cinemas on Bray St would be too stoked on
Corona throwing free beer around, ha ha! The Hoey is a great spot! The showing of the film will be in the beer garden at the Hoey. It’s a cosy little spot, and we love the Hoey. What’s been your best decision? The best decision I've ever made would be having my son. It’s a hard thing to get your head around being 21 and finding out you’re going to have a baby, let alone whether or not you’re making the right decisions on keeping the baby etc. I'm so grateful he's a part of my life and I'm a part of his. We get to grow old together and experience the world side by side. Who inspires you? I find my inspiration from a lot of different things. My son inspires me before anything. He's my biggest motivation, but in saying that, my wife Renee (Daisy) is another big inspiration, my mum and dad, my brothers and sister, my family. My good friend Ozzie. The ocean, the land, the wind, the sun, the colours of the earth. Everything that gives me a sense of belonging and a sense of freedom inspires me. What dream do you still want to fulfil? I'd love to own a cute little house near the beach on a bit of land. I'd love two more little kids. I'd love to learn how to play the piano. I have a lot of little dreams I'd love to fulfil. All in good time, though. What are you reading at the moment? I read anything Eckhart Tolle puts on paper. That guy has a very special way of thinking. Thanks Otis.

How long have you been on the Coffs Coast? 10 years.
One definite use we need to be making of this gem in these hot summer months is the cocktail! And with an average of nine lychees being all an average person needs to consume to meet their daily vitamin C count ... we can certainly justify this drink! I know ... an unusual topic of conversation for a chef (for those who don’t know any chefs) would be drinks ... but drinks are just flavour and texture combinations as well, and honestly in this recent heat ... drinking anything is easier than eating it!
What’s you favourite thing about this area? The beautiful people and the magnificent year round gardens.

What’s the best thing about your job? Being able to provide healthcare workers and the Coffs Coast community with a decent meal and coffee. What keeps you motivated? I try to think on my feet and just keep doing what I do without thinking about the movement too much – I’m more a big picture girl. Having been a Registered Nurse in the Army and many hospitals over 24 years, I
want to be near the patients – that’s what I call home. There are a lot of moments in life where success for me walks alongside faith and hard work and the vision to improve life for others. What does the future hold? The great thing about life is that the future holds the unimaginable. I think there will be a return to healthcare, but in the meantime I am looking forward to managing the Rainforest Café. Its close locality to our regional hospital keeps me close to my healthcare comrades and helps me to understand the needs of our patients when the health ‘chips are down’ ... and hopefully provide a pitstop when they need it.
One of the first things you need to do is fill a bottle of vodka with just the zest of 8 limes ... and leave it for a week ... to make your own infused lime vodka ... then you can make a bloody eyeball cocktail. In a tall high ball glass, fill alternatively with chilled lychees and ice cubes, finishing with a lychee. Then place half a shot of lychee liquor, and half a shot of lime vodka into the glass, top it up with lemonade, then using a dropper insert a couple of millilitres of blue curacao into the bottom of the glass. Using another dropper, fill the top lychee up with grenadine. While sounding incredibly sweet at first, the zesty lime vodka really cuts through all of the sweetness! If you like things with a little more of a savoury twist, simply rub the rim of the glass with lime juice and roll it in sea salt first! Drink up and protect yourself from this heat!

And you have 8 children? How do you manage that? I think that may indicate my addictive personality! Whenever I do anything, I tend to do it thoroughly! (Laughs.) People often ask how I manage to find the time to paint. When you are passionate about something, you make the time. Actually, I think painting has kept me sane. I am 'in the zone' when I paint. Hours slip by very quickly. It is a lot like meditation. Plus, the kids love it. They have access to all the art supplies they could ever dream of. It is also getting easier as the kids get older. The youngest are at school, so I have all day, between cleaning and cooking, to paint! Where can we see your work? As a member of Nexus, I always enter work into the members' shows, as well as being on the waiting list for solo shows down the track. Last year I was lucky enough, thanks to Jackie Lee, to have a solo exhibition at The Federal Hotel in Bellingen, and currently you can see my art at The Little Red Kitchen in Hyde Street, Bellingen. I also have a website: www.paulabrading.com where my work can be seen (soon to be sold) and also through which I can be contacted. What are your plans for 2013? I am really excited to be starting a Diploma of Visual Arts at Coffs Harbour TAFE. This is a full-time course run over two years, and I suspect it will keep me fairly busy. I am really looking forward to learning more about art and painting with a group of other students, as well as having interaction, as I have been a bit insular. Apart from that I will continue to paint so I am ready for those future exhibitions, amongst the chaos that is my family. My mantra is to always stay curious, be willing to keep an open mind and continue to learn and enjoy the ride. Thanks Paula.

ell us a little bit about yourself ... Hi, darlings. My name is Terasa Reynolds, and I live in the most gorgeous place in the world – Upper Orara, Coffs Harbour. My family consists of my spunky husband, John, and my beautiful daughter, Jemimah MaryRose, who is 18. She has just finished her HSC. I’m very proud of her. Tell us about your upbringing... I come from a very big family: two brothers and three sisters. I have 27 nieces and nephews! My mum, Mary, and my dad, Eric, gave us all an amazing life. They loved and cared for us so much; they taught us to love each other and care for others. It was important for them to ingrain strong values in us, in the way of always treating others how you would like to be treated. We lost Dad three years ago. It broke my heart; the pain of losing someone you love so much is extremely hard. He was such a beautiful man. I miss him very much. I’m so grateful to have been given the privilege of having such a beautiful,
amazing family. On a happier note, I’m nearly 47 and I need a new set of teeth, plus I’m going grey. I also need glasses, but I am really loving life! I have three chooks, a rabbit, and a turtle named Kev. My favourite things in life are sitting at the Happy Frog in Park Ave, having a coffee and a yogurt with my wonderful hubby, John. Where do you work? What do you like about your job? I have been working at Bunnings Warehouse now for almost 12 years. I absolutely LOVE my job. I get so much enjoyment every day. What I truly love about Bunnings is the people – all of the customers and my gorgeous work colleagues. I have met such amazing people through Bunnings. It’s a great company to work for. They have looked after me and are actually really great to their staff. I meet people from all walks of life, in all different shapes and colours, from all over the world thanks to my job at Bunnings. It’s a fantastic place to work – I have laughed and cried! I especially love the little kids who come in. I love giving them stamps and balloons. Their gorgeous

Something many people don’t know about me is I suffer from severe anxiety and panic. Thanks to my supportive family and friends and doctors and my true faith in God, I have been able to conquer my fears. Because of this, I want to give back to others. People have shown me so much kindness and love. I have perfect strangers come up to me and tell me that I have made their day, just because I smiled at them, or people say to me that they love what I’m ‘wearing’. It makes me cry with joy and gratitude. It’s because of
the kindness of others that I am where I am today. I believe with all of my heart that we can make someone’s day a better one, just by a simple smile or a hello. All of those people who tell me they love what I’m wearing really do bring me so much joy. So thank you to all of the gorgeous people who have been so kind to me. GOD LUV YA, DARLINS’! What would you do if today was your last day? The first thing I would do would be to kiss my husband and daughter and tell them I love them, then ring my family and friends and tell them I love them! Then I would eat so much chocolate! What do you do in your spare time? On my days off, I spend time with Mum visiting family and seeing the little kids in our family. They make me laugh. Also, I spend time going for coffee with friends. There are many beautiful rivers in Upper Orara, so I try to swim when I can. I also read. I have to have a book at all times. I like to op shop and hunt down bargains. Pushkar is my ‘go to’ place for necklaces and unique jewellery. What are five words that best describe you? Honest, stressed, vibrant, colourful, passionate! What’s your vision of a perfect community? I’m really passionate about justice in communities. I don’t have any tolerance for racism. Since multiculturalism has entered Coffs Harbour, the culture here has really come alive. I think that other cultures joining our Coffs Coast community is a wonderful thing! Another example is the Indian culture in Woolgoolga with the Bollywood dancing, the delicious food, the colourful and bright community – I just love it! I also like that Coffs Harbour is becoming cosmopolitan. With the new alfresco restau-
rants – Pansabella, Cocoa – people sitting outside, eating, drinking and actually spending time together, Coffs Harbour is really coming alive. What were your dreams as a young child? Well, I think that I always wanted to meet the man of my dreams. All I wanted was to be happy. I did actually want to be an artist and a hockey player; I also wanted to be a missionary, to go to India and work with impoverished people. But ultimately, I had such a beautiful childhood, that all I really wanted was a gorgeous husband and a wonderful family. Now, all I want is for my daughter’s dreams to come true. I want her to find the happiness that I have found. Jemimah is a really good singer – brilliant. She got her first gig the other day; I’m so excited. S e r i e s Teams of surf boat crews will contest Round 10 of the North Coast Surf Boat Series (NCSBS) at Coffs Harbour on February 16. Deane Crockett, Boat Captain from the Coffs Harbour Surf Life Saving Club, shares some history about the Series, which promises a day of action on our local waves …
H
ow long have you been involved with the club, and what is your role there? I started with Coffs Harbour SLSC when I was 8 as a young nipper and have been a member for most years since. I became involved in surf boat rowing in 1980 and have been involved to some degree since. I became a sweep of surf boats in 1986, and over the last 2 years have been the Boat Captain of our club. Where is your club based, and roughly how many members do you have? Our club is located at Park Beach in Coffs Harbour, and at present we have 4 boat crews competing and another girls’ crew which competes on and off (depending on whether it’s a bad hair day or nails need to be done!) We are lucky that all our rowers are a good bunch and it’s such a great environment to be in. I think this is a common feeling for most of the clubs in the North Coast Boat Series. Apart from boats, we have approx. 30 board, ski and beach competitors in our club (who secretly want to be boat rowers). What is the North Coast Surf Boat Series? The North Coast Surf Boat Series is a roundrobin competition of surf boat racing that generally runs over 9 - 10 rounds at various beaches on the North Coast of New South Wales. The series was the brainchild of Michael (Cactus) Moran from Scotts Head Surf Club and Greg (Whale) Coleman, both now have unfortunately passed on, in 1994-95 and now involves crews from Forster in the south to Cudgen in the north. In the past, clubs would have to travel to Sydney or the Gold Coast to get good competition in an attempt to have an idea of how competitive they were in preparation for state and Australian titles.

How much of a part do these craft play in our local waters – are they used extensively for rescue these days, or more for competition? Originally they were a rescue craft, but these days with jet skis and rubber ducks being so efficient, surf boats are now solely for competition purpose only. What do you see as being the main aim of the North Coast Surf Boat Series? Our main aim in the series is to bolster the strength of our local crews and improve results at major carnivals. The series has created a better camaraderie between local crews, which has created a great support network at these major events; in the past, country crews were the regarded as the poorer brothers. As a result, a lot of North Coast crews have gone on to ‘kick some city butt’. Who can readers contact if they’re interested in learning more about the event at Coffs Harbour, or the club? ell us about your business – how long have you been operating? Big Garden Furniture was founded in 1996. We took over the business in October 2008, moving the operation to Woolgoolga to be closer to home and utilise our existing factory space. We opened the showroom/display centre in 2009, which became an instant success. I remember moving the furniture in on a Sunday morning, and a local lady came in and ordered a 7 piece setting off us within 10 minutes!

K I , Introduce yourself and tell us a little about your career to date? My name is Aki Nishikura. I am 21 years old and have recently moved here from Melbourne. I have been around hospitality my whole life; my father has been a sushi chef for over 35 years, and my family own a Japanese restaurant in Melbourne called Shira Nui. You head the food at Ye Olde Bottle Shop. What can we expect on the menu? Constantly changing, seasonal menu using local produce. You will see a bit of everything! The food will be mainly focused on small bites that go well with a cocktail, glass of wine or a beer.

What is your cocktail specialty? Not sure if I have a specialty cocktail, but I have really been enjoying the odd Pisco Sour in this amazing weather here in Coffs.
L U K E , you've had extensive experience in the bar and restaurant scene that spans across the country and also overseas, with your career really taking off in Melbourne. Tell us about this ... Yes, I was lucky enough to be involved in some award winning cocktail bars in Melbourne that led to me working in bars and restaurants in Singapore and also travelling the world giving presentations in Sweden, Spain, the US and Germany. How have you translated your skills into your work at Ye Olde Bottle Shop? Getting back to basics, actually. Working in Melbourne and overseas, I was very spoilt and had some pretty crazy equipment at my disposal, so I have very much made a point of going back to the old way of doing things. A lot of people forget that some cocktails are over 200 years old; however,
they are still very relevant today. In saying that, there are a couple of things I couldn’t resist using, like liquid nitrogen! But your career doesn't stop there! Tell us about your consulting business '-ism' ... Yes, I am very excited about our new concept, and it is only early days yet but -ism will be a consultancy/ events company run by Aki and myself that will be doing some really cool things. We have some great people involved and have some very exciting concepts that I think people will be stoked on. The website is currently in development, but in the meantime you can follow us on Facebook, Instagram and Twitter. M A X , you have had a career based on making fabulous cocktails! In your opinion, what makes an epic cocktail? To be honest, at the end of the day even if it's the best drink in the world, it is only as good as the company you are in and the atmosphere that comes with it. That, and a cheeky smile. What should people expect at Ye Olde Bottle Shop? Hopefully something a little different. A fun, friendly atmosphere and some quality food and drinks. The interior of Ye Olde Bottle Shop is certainly worth mentioning. What inspired this design? My time travelling and working in Melbourne and Europe has definitely had an influence. Also credit must be given to Monique Crawford from Collective Space, who helped a lot with the design. Liquid nitrogen and sorbet cocktails, made to order; how does that work? Yeah, it will definitely be something new for Coffs! Basically we are using liquid nitrogen to freeze cocktails and make them into edible cocktail sorbets. There are also a couple of other interesting uses for the nitro to create really cool garnishes for cocktails, but you will have to wait for that! On February 22, one of the premier charity events of the summer will be staged at C.ex Coffs – the KIDS Foundation Charity Ball.. he ball is the brainchild of two ordinary local blokes, Paul Courtney and Andrew Wellington. Paul and Andrew, who are both members of Coffs Harbour Triathlon Club, came up with the idea of a ball to further support the KIDS Foundation following Paul’s successful fundraising efforts in the lead up to the Melbourne Ironman last year. Both Paul and Andrew are again competing in Ironmans in March and May this year. “I had the privilege of meeting some of the children who benefit from the foundation in Melbourne this year and was motivated to come up with the idea of staging an event such as the ball. A true iconic member of the Australian music industry, with a career spanning five decades. ell us about Rock Revolution? Rock Revolution is a progression from the Rock Show and Rock Show More, which were very well received by audiences all around Australia when we toured them. We won a Mo Award last year for the ‘Best Rock Act’ and also got nominated for an ARIA for the Rock Show double CD soundtrack. People are always asking me, "When’s the next one?" So due to the staggering amount of material available in the period we were concentrating on (i.e.1963 - 1980), we decided to put on a third show. This time we’ve embraced a few more genres like Motown, Metal, and the Blues influence, as well as the artists that went over so well in the previous shows like the Beatles and the Stones, Queen and the like. The idea to call it Revolution was based on a theory of mine that popular culture seems to re-invent itself (or ‘revolve’) about every 15 - 20 years. Rock Revolution is dubbed as a ‘theatrical concert’ and has quite a big stage set, so we only normally ever play theatres. Sawtell RSL is the exception to the rule, as it’s my hometown and a local gig for me. We cut it down a bit to fit the stage, and I get to go home and sleep in my own bed! There are new faces in the show. Tell us about them ... Well after 3 years of touring, some members of the original Rock Show have now moved on to other things, but we’ve found equally talented young people to take their place. The amount of undiscovered young talent out there, with nowhere to play, I might add, is truly amazing. Andrew, Joe, and Jonno are still with us, as am I of course, but we’ve also got
a great new line up of multi talented girls (Christie Lamb, Emma Barlow and Gab Steele) who all sing and play multiple instruments, including violin, guitar and piano. It gives us a lot more scope. What songs will you be performing? Not to give too much away, but we’ll be doing a whole new swag of songs by the usual suspects (Beatles, Stones, Hendrix, Kinks, Led Zep, The Who, Queen, Bowie etc.) but also some stuff from The Doors, Crosby Stills Nash and Young, Tina Turner, Stevie Wonder, Carly Simon, Black Sabbath, Credence, Eagles, Billy Joel, even T Rex gets a look in with Children of the Revolution. Plus me, of course! Hopefully we will get to see a lot more of you. What are your plans for 2013? To stay healthy and happy, mainly. Actually, Rock Revolution is finishing its tour in mid-March with a final hurrah at the State Theatre in Sydney. Then I’m in the midst of planning a bit of a reunion tour for Jon English and the Foster Brothers for a couple of months, before heading off to perform at ‘The Sweden Rock Festival’ in June and touring Scandinavia. I’ve got quite a big fan base over there because of the TV series Against the Wind. Six Ribbons was a number 1 hit single in Scandinavia, and it’s been 30 years since I last performed there. I’ll be playing with no-name bands like KISS, Status Quo, and Rush, but it should be quite a hoot. The second half of the year I’ll be doing another musical for a bit (Hairspray), and then going out on the road again. I’ve also finally made a start on my book, which I’m getting mildly excited about. One thing I know for sure: I won’t be sitting at home bored anyway!

It ticks all the boxes of real sustainability, and by that I mean environmental, social and economic. Shopping locally, of course, means less transport miles, fresher food and most times cheaper prices. It also means that you are helping create employment in your community. Dollars spent in locally owned businesses, that in turn spend those dollars locally, make us all wealthier financially. But the biggest bonus, I think, is the social impact – the feeling of being connected with each other. People say The Happy Frog feels 'happy'. I hope so. We love it that people feel welcome and comfortable there. I reckon you can shop, feel relaxed, keep your dollars local and save money. And feel happier because of it. Do you think that people are becoming more community focused as opposed to consumer focused? I do … though I hope it’s not just wishful thinking. I think even unconsciously we are full of consuming. And perhaps there has been a bit of an addiction with it. Clothes, shoes, big screen TVs and white goods just don’t satisfy for long. It’s not sustainable and like any addiction, you have to keep getting more and more in order to feel OK. It may be that there is a hunger in us that we have been trying to fill with stuff. So maybe it’s time to experience things differently instead. Simple things like meals with friends or walking your dog. Talking to your neighbour or joining a hobby group. It seems that people who are community minded and participate seem happier. Also, I notice people starting to appreciate where we live rather than grizzling about it. My pet annoyance is the phrase,”They should do something about ….” Who are ‘they’? It’s us, silly, I want to say. Well known chiropractor Lois Clark has had a career that's spanned Australia. Now, 47 years after graduating in the USA, she has seen many changes in her time – but the one thing remains the same is her unwavering commitment towards helping people manage their health. hen did you decide to become a chiropractor? Nursing was my first career choice, but having completed high school at age 15, I had a few years before I could enroll at RPA in Melbourne. I became a legal secretary and met my future husband. I married and left work to start a family. It was then I took a parttime position as a receptionist for a chiropractor who visited my town of Terang, Victoria. I didn’t even know how to spell the word, let alone know what it was. After seeing so many wonderful results over the next year, my husband and I decided to sell our new self-built house and all our possessions to enrol at Palmer College of Chiropractic in Davenport, Iowa, in the United States. The degree course was 4,500 hours and was timecredited, so from 8 - 2.30, Monday to Friday, we attended college. The first year, we attended for 51 weeks (so different to the university system in Australia). We lived in a basement apartment with an Australian couple next door, Mexicans in one apartment upstairs and a Spanish couple in the other apartment. There were 37 nationalities at our college, and the education we received there was not confined to the classroom. With such an intense schedule, we were able to finish the course in three and a half years, during which time we became parents to our daughter, Lisa. By then, we had a work permit. My husband worked as a pizza cook at an Italian restaurant eleven nights a fortnight, and I worked as a proofreader at the local newspaper four nights a week. Our shifts were 4.30 ‘til 1am. We had moved to another basement apartment and were janitors of the building, which housed a medical practice upstairs and two apartments on the top floor. I did the

cleaning, and my husband did the gardening and shovelled the snow in winter. Study and sleep time were squeezed into our busy schedule. On returning home in December 1965, we purchased a practice in Warrnambool, Victoria, where our daughter, Sandy, was born. It was my intention to be full-time mother this time, but in 1967, my husband was diagnosed with melanoma and died in 1969, so I have been practising since that time.

How has your career tracked to date? I have practised in every state and territory of Australia except Tasmania over the years, mainly as a locum. When I remarried, I moved to Inverell, where I practised for almost 20 years until my associate bought the practice and after the sale, I ‘retired’ and moved to Coffs Harbour. For 5 years I did locum work, which included many trips to Darwin, where I gained invaluable experience seeing patients in Kununurra, Nhulumbuy and Katherine on weekends, with a portable adjusting table, a receipt book and a roll of paper towel, working out of a motel room. After five years of travelling and living out of a suitcase, I bought Fran Newman’s radiology building in Toormina and began practice in January 1993, so I have just celebrated 20 years there. During the l970s and l980s, I travelled to the United States over 20 times to do postgraduate work, mainly learning what you don’t have time for when studying for your degree. I took over 200 others in my profession with me at that time, as there was nothing available in this country. Some of those I took are now teaching it, so today you don’t have to make that long trip. In 1973 I received the

International Chiropractor of the Year award for my service to the profession. After working in this field for such a long time, what inspires you to keep helping people? After 47 years of seeing patients, the ‘miracles’ I have seen are far too many to share, but the 28 year old farmer I spoke to in Inverell told me that but for chiropractic, he would be dead. I had forgotten his case, as I had been away for a few years. Michael was a hemophiliac and was sure that “he would have received bad blood, got AIDS and be dead by now”. He has been a patient since age 6 and had not had a bleed since his parents brought him to see us. Does chiropractic ‘cure’ that illness? No! Try telling that to Michael. His body corrected a dysfunction, and that was the result. I continue to be amazed and thrilled at what
the body can do if there is proper neurological function. I have seen a three-year-old girl with migraines, I have taken care of a four-year-old with antalgic sciatica. Leanne was looking at kidney surgery about 18 years ago. Her kidneys are still working. Why am I still in practice after over 50 years? Seeing the restoration of health in people gives me a great deal of pleasure. There have been so many cases – each one reinforces my knowledge of the body’s ability to heal itself. We often have more confidence in the pill bottle than the body’s healing powers. Have you any plans to retire? When am I going to retire? I cannot imagine my life without practising, but when I can no longer give my patients the care they deserve or if I ever lose my love and passion for my profession – that is then the right time. In fact, the effects of excessive exposure of fair skin to the harsh Australian sun compounds the effects of ageing. Initially, the changes are noted on the surface as blotchy, pigmented marks and fine blood vessels on the face. Later, skin begins to thin and sag due to collagen in the dermis (deeper part of skin) losing substance and the thinning of the fat layer beneath the skin. Social/scene. Summer is well and truly here! Extremely HOT days and the humidity is a brain drainer ... I used to drive around in a car without air conditioning ... really don’t know how! It sucks up fuel and many I know torture themselves by driving with the windows down trying to pretend that they are not sitting in a hotbox which is being attacked by 500 hairdryers on HIGH! Driving in 35 degree heat and trying to concentrate ... impossible! ‘The Husband’,I might add, is one of these people! He never uses the aircon and then during the summer he constantly forgets to pick up his tools, gets ratty and even forgot to pick up ‘The Son’ from school on one occasion! He says he’s OVERWORKED ... more like OVERHEATED! ... for sure ... stubborn!

ne of the events that kick started 2013 was the La Bal Masque de Française NYE Event. The eventess for the ball was Tegan Ewart from 400 Management and was sponsored by Bellbowrie European, La Fleur D’Alyse and Le Dãin Designs Jewells. For this occasion, ‘The Husband’ got all suited up and looked gorrrrgeous (if I say so myself) as one of the drivers for the VIP Motorcade. This swish affair was held at the fabulous beachfront Opal Cove Resort. Guests arrived dressed in their finest to enjoy a night filled with entertainment and delicious food. Supper (banquet style) was served late into the night to keep the partygoers dancing and a prancing! Some, I might add (not mentioning any names, Miss R and Mr S ... and the fabulous SAM WARDMAN – she’ll throttle me for this!) lounged around on the antique bed ... in the POSH area (supposed to be a prop for Trudy Smith’s body painting) loudly demanding that champagne and Wicked Berries be delivered to them at a snap of their fingers! HILARIOUS ... especially as it was me she was bossing around! The ball had a beautiful opulence as the guests arrived, with the sounds from Heartstrings and songs from Millie O Rourke to set the mood. Jules Faber was there, along with Sammy Hart from Coffs Harbour High Teas. Sammy and her mysterious ladies sat and read tea leaves to excited guests. The queue for this nearly stretched until midnight! Definitely something different! Finally, when the party room was opened, ‘Special Occasions’ had worked their magic. The room was transformed into a twinkling ballroom. Chandeliers, candelabras, cocktails and a spectacular irresistible tower of Wicked
Berries with a flashing eyed mask towering on the pinnacle of the chocolate masterpiece ... woohooo ... FABULOUS and edible! What a night! DJ Jordy then revved up the mood to get the guests on the dance floor ready to ring in the New Year. To make it a bit more special, funds were raised and donated to the children’s ward of our local hospital. Opal Cove Resort was absolutely the place to be for such a fabulous affair. Still at Opal Cove Resort, local artist Jeffrey Baker was exhibiting his work, and as usual it was sensational. I would like to mention a special thank you to Jeffrey, who not only incorporated his artwork into the dressing of the La Bal Masque de Française’s Opening Room, but helped Le Dãin Designs Jewells set up and display their new collection, ‘Opulence’. We had reserved a couple of tables upstairs and sat inside in the air conditioned comfort to enjoy a scrumptious lunch, some bubbles and a bit of a bet on the ggs. Of course, there was Fashions on the Field, and a sea of fabulous ladies in pink attire swept across the stage. We had a couple of winners on our table, with Rebecca Hope from Coco 39 winning Best Millinery and Elyan Shotbolt from ‘My Sister’s Wardrobe’ winning Most Classic Lady. What a lovely day ... and for a great cause. On 22 February, the C.ex Coffs will be the venue for the KIDS Foundation Charity Ball. This will be another chance to get dolled up and raise much needed funds for this worthy cause. Guests can
enjoy a three course meal and be entertained by sounds from local band ‘Forward Groove’. There will be a fundraising auction with a novel ‘Dressing Gown Drive and Lucky Dip’. Tickets are only $77 pp and available from C.ex Coffs or online: www.cex.com.au On 18 January, The Coffs Harbour Regional Gallery held its first opening of 2013, when it featured work by Canberra based war photographer David Hempenstall. Also, regional artist Angela Tay exhibited her works on paper and installations. Guests got to enjoy recent acquisitions, an exhibition of new work from the permanent collections. The following day the Gallery was open for a delightful morning tea, where visitors got to meet both artists, who discussed their work techniques and inspirations. I’m always saying support the local theatre, so we took the kids to The Coffs Harbour Jetty Memorial Theatre to see a show. It was produced by Seacrest Productions and was called The Sea Witch and the Magic Cave. Written by Amanda Scott and Dircted by Belinda Lemair, the story was in the tradition of a classic pantomime. Bursting with colour, light hearted and fun! Double whammy of the theatre in one week. The next night, a group of us all went to see Sleuth. This show was also produced by Seacrest Productions and was directed by Michael Hetherington and Amanda Scott. It was touted the world’s greatest thriller. It definitely kept us mystified right to the end! Le Dãin Designs had the pleasure of starring on stage as ... the Jewells to be stolen ... rubies actually ... lots of fun. Still on the Jetty Theatre, book your tickets to see 1920s Chicago, the musical. You will be guaranteed a night of nonstop entertainment. This show is produced by Curtains Up Productions

ell us about your connection to Coffs Harbour? Coffs Harbour has always been a special place for me. I was born here and every holidays growing up we spent at Nan and Pops’ place. Some of my best childhood memories were created here in Coffs Harbour. I have a lot of family and friends in Coffs Harbour; it will always be my home. How did you and Ben meet? Ben and I met whilst we were both serving in the Royal Australian Navy. We met years before we actually started seeing each other, but one State of Origin night a mutual friend re-introduced us, and if it wasn’t for Ben begging my mother (who was also out with me) to make me stay out, I am not sure we would be where we are today. Tell us about the proposal? I have a large obsession with sharks, so Ben surprised me with a Shark Dive at Manly Aquarium. I had been sick with a cold that week, so I came home to have a sleep, while Ben went to our local Irish bar; I had no idea Ben had actually gone to have a few drinks to get the courage to call my dad and ask for his permission to marry me. Ben then took me to a beautiful dinner on

Marriage Celebrants are people who are legally allowed to perform marriages in Australia. However, Sam from Married By Sam takes it even further and becomes an integral part of your special day! hat is Married by Sam? Married By Sam is my business name, and I am in the business of marrying people! It was born out of my desire to become a Marriage Celebrant. I love the idea of being able to be involved in couple’s big day. I am a huge fan of marriage and commitment, as well as love and romance. I decided that once I was qualified, I would be true to who I am and let people know that I am all about making their day exactly what they want: your wedding, your way – plus a fun and easy experience. I then decided I needed to develop a plan, so I engaged the talents of Giant Media and developed my own logo, which led to my website. I then popped the logo on my VW, that Geoff King Motors kindly sprayed pink and between the car and my website, couples can decide if I am the right Celebrant for them! Why did you decide to become a Celebrant? I hired the services of a Wedding Celebrant myself over 20 years ago, and she was so lovely and really worked in with us to create the vows and ceremony we really wanted. I knew I wanted her job back then! I have been happily married for over 20 years now to Scotty, and we have three gorgeous teenagers. I also believe that Celebrants can provide couples with the service that they want to tailor to them. What is your background, and does that play a part in being able to be a Celebrant? I started my professional working life as a Registered Nurse training at Royal North Shore Hospital in Sydney. I met my husband there as a patient. I travelled Australia, ending up in a career in hospitality and then fell into a career in television. I was lucky enough to work on a children’s television show and became the producer of the show. I worked in the TV industry for over ten years. This job involved travelling to remote Australia performing shows live and also organising all the show’s content. I had to be on stage and be able to commentate, dance and sing (badly) to our children’s album that we produced, and that made sure I lost any form of shyness!
I had to liaise with all sorts of celebrities to entice them to be a guest on our show too. I have always had an interest in the fashion industry and having worked in and behind the scenes, I always wanted to pursue this type of career.
Although you face challenges, Cerebral Palsy still allows you to have a normal life... I face many challenges on a day-to-day basis. Something so simple (like opening a jar) can seem impossible. The thing is, nothing is impossible for anyone. I am so fortunate that my CP is diagnosed as Hemiplegic/Hemiparesis Cerebral Palsy, which is just one type of Cerebral Palsy. Only the right side of my body is affected. You wouldn’t even know by looking at me.

The idea started from drawing with my children. I was drawing fashion figures in body suits and swimwear. I had an urge to bring what I had drawn to life and before I knew it, I was making it happen. How old are you? What motivated you to start your label? I am 28 and to be honest, my main motivation was money and the drive to get off welfare payments! I so desperately wanted a full-time job, but due to the commitment and love of being a mum, I was restricted. I figured I would create my own job, and being a single mum, it had to be from home with flexible hours. I wanted to start a career, not just have a casual dead end job, be self independent and have something I created for myself and family – something to be proud of. My motivation now is the passion I have for creating beautiful pieces – there is nothing more satisfying seeing something you designed in your head and on paper come alive. It’s even better when someone puts on a piece from the collection, and they fall in love with what you have produced. One of my highlights last year was seeing one of my designs on models walking down the catwalk at the 2012 Coffs Coast Mercedes Benz Fashion Gala. Tell us about your collection ... The CARMEL SIMÕNE Collection started from an ambition to create an exclusive swimwear label away from the mainstream market. Each design is unique 54 coffs coast focus.

But as I get older, it becomes more of a strain physically on my body and effects not just my right side, but my back and my whole body. There is very little professional help in the area, and the cost is very expensive to travel to specialists. So I really just have to help myself, the best that I can. So for me, my life is completely normal. I wouldn’t say I have more challenges than anyone else, but definitely different challenges to most. It just gives me the determination to get up and give everything a go. I don’t see myself as being any different to anyone else. I have achieved so much already, and I still have so much more to accomplish. I’d be beat to let CP defeat me!

It’s been a very exciting ride to the top for you guys, but take me back to the beginning. I wouldn’t exactly say we are at the top, but it’s been a really fun year or so for us! We started making music maybe 3 and a bit years ago and as soon as we had a set together, started touring and haven’t really stopped since! We’ve had a few line-up changes along the way, but the line-up we have now is really settled and I feel works really well! When we first started, as I said before, it was more just my solo songs with a backing band, but now everyone has more input in the writing process, so the songs have become a bit heavier and more cohesive.

I had heard the local church had a large band, so I approached their sound guy and asked if he could teach me how to use a sound desk, EQ bands, singers, drummers etc. In 2007, I moved to the Gold Coast, along with a handful of other musos from the Coffs Coast. Over three years I explored the electro music scene and returned to Coffs Harbour in 2010, armed to the teeth with fresh new tracks and a new perspective of dance music .

Having loved and listened to so much music over the years, we wanted to use it all ... not limiting ourselves to one particular style or genre, putting old classics over raunchy electro and taking samples from adverts and movies. Growing up, we all came from different musical backgrounds, listening to a lot of Rock, Funk Hip Hop, Grunge, which definitely comes across in our sets, but to play in Coffs, you have to be commercial – a line that we do get very close to sometimes, but only ever to get into the clubs. Where do you draw inspiration from? There is a place in my heart for most music, be it Classical, Rock, Dance – even Opera. I’ve always been interested in the different moods music evokes in people. Artists like DJ shadow, John Hopkins, UNKLE, Derek Hess, GiRLTALK, DJ Yoda ... the list goes on. For me, inspiration is a constant, but the true inspiration comes from the sea of happy faces and fists thrust into the air when we play. And I

A lover of vintage glamour, I’m a collector of old sewing machines, dress patterns, Home Journal Magazines, hats and gloves. My family actually prefer the term 'hoarder'. If I had the money and knowledge, I’d drive a classic car too! Sewing and designing are my passion. At age 7, I was finally allowed on a sewing machine. I sewed many a doll’s outfit on Nana’s old kneelever Singer … and we also had the best dressed dogs in town! In my spare time, I attend nostalgia festivals. I started Rock’ n’ Roll lessons when I was 15 and quickly found myself in the competition scene. From that, I have made the most wonderful friends across the country. Fifteen years later, we all still meet up at festivals, some of us own vintage-inspired boutiques, some are in bands, some are pinup models, some own classic cars, but we all share the love of the 1950s! What does fashion mean to you? Fashion is an opportunity to express myself, represent myself and reflect my personality.

How would you define your personal style? A classic, sophisticated style; I take on a vintageinspired look. My wardrobe is a mixture of full skirts, petticoats and wiggle dresses. I like a feminine touch, whether it be floral prints, red lipstick or a flower in my hair. This is reflected in my Fashions on the Field entries and my store, My Sister’s Wardrobe.
Recognised for my style and personality, I was honoured to recently be asked to be Le Dãin Designs' Ambassador and Promotions Manageress. I continue to wear my style, but I’m now also adorned in the fine jewels designed by Carole Beros. Where do you get your inspiration? I draw inspiration from many places. Sometimes it’s as easy as seeing the right piece of fabric, and a whole outfit comes together instantly. I enjoy browsing my collection of Home Journals and dress patterns, old Hollywood movies are great, and there’s also a lot of reproduction vintage clothing labels around now. PLUS, I enjoy entering and being a spectator at pinup competitions. Being around like-minded gals is not just inspiring, but a real confidence boost as well. Tell us about Miss Pinup Australia ... I have entered the world’s biggest Pinup Competition, Miss Pinup Australia! After submitting 3 photographs, answering a few questions and writing a short bio under the pinup name, Miss Lily White, I have made it through the first round and I’m currently a NSW finalist in the under 30s category, 'Miss Perfect'. On March 16, at Penrith Panthers Club in Sydney, the NSW finalists from 'Miss Perfect', 'Miss Vava Voom', 'Miss Illustrated', 'Miss Neo', 'Miss Classic', 'Miss Prestige' and 'Mr Pinup' will all take to the stage, bringing a vintage photograph to life – as founder Miss Pixie of Boogie Bop Dames describes it. As a destination, we have two significant opportunities to invigorate the tourism industry this year. The first has been announced; now all we need to do is use the airline services on offer. The second has been a topic of debate for many years, and finally the wheels seem to be in motion to beautify the Jetty area. he announcement of Tiger Airways is significant in that it not only means additional daily flights to our region, but it also means that we’re finally on the Tiger Airways map. This will mean increased exposure for our region and an opportunity to leverage space for our region on their marketing collateral. Assistance to market the Coffs Coast as a holiday destination is a major coup. As an industry we would like to see support for these routes and enough support to see the flights extended to Melbourne and Brisbane, which will only occur if there is adequate support for these services.

ou’re originally from Jindabyne, in the NSW Snowy Mountains. What was life like before you made the move to the Coffs Coast? Awesome. I love the Snowy Mountains; it’s one of my favourite places in Australia (and the world). You can ski and snowboard in winter, wakeboard, fish, hike, bike in summer – there’s always something to do. I love being outdoors, so it was a great place to grow up and one that will never be too far away for a visit. How did you come to choose the Coffs Coast to start your career in pharmacy? As I mentioned, I love being outdoors, and I also love the beach, so Coffs offers the perfect blend of both! I wanted to try something a bit different to Sydney after spending around seven years there, and I had a few options – moving to Jindabyne, the South Coast, Newcastle or the Central West. It was really the ethos of CHC Pharmacy which made my decision and once I’d met the proprietors, it was pretty clear to me that I’d really enjoy it up here. The patient-centered care that CHC Pharmacy provides is exactly what I was looking for – it’s really the reason I got in to pharmacy in the first place. I think a lot of people get in to certain lines of work for the wrong reasons – be it family pressures, financial gain, societal views – and I think that is a huge mistake. If you choose a career that you enjoy, you will always be better at your job and benefits will follow. For regional professionals, don’t be scared to give it a try. I’ve always found regional communities to be incredibly friendly and embracing, which is endearing. It’s nice to walk down the street and get a nod and smile from a stranger, which very rarely happens in cities. Finally, there is a HUGE amount of opportunity in regional areas for young professionals who are good at what they do – anyone who tells you that you need to be in a big city to succeed is kidding themselves. As winner of Coffs Harbour Sunny’s Business of the Year in 2011 and 2012, Handybin are an Aussie owned, local company employing over 60 people. ocally and globally, how important is recycling? On a local level, recycling has been made simple with the use of the state’s best practice waste management system for the three bin system of recycling, organics and garbage and for the frequency of collection. The reasoning behind this system is to maximise the capture of recyclable (and organic) materials, thus reducing the amount of waste going into landfill. The obvious positives for correctly recycling and composting greenwaste material are reductions in carbon emissions and saving space in landfill. Using the green lidded organics bins for food and garden waste has a direct benefit to locals through the availability of low cost, high quality compost. A lesser known benefit is the associated cost savings. The rates to dispose of waste materials to landfill has escalated dramatically over the last 5 years, and is set to continue to rise with State Government Levies, the Carbon Tax, CPI and cost increases across the board. These increases reflect on ratepayers, business owners and rental tenants as rises in waste disposal rates. On a global scale, landfill space is diminishing, and illegal dumping is on the rise. The New Year is always a great time to reflect on the achievements and lessons learnt from the past year and begin anew with restored inspiration and a fresh perspective for the coming year. 2012 was an ambitious year for the Chamber, with achievements like: joining the NSW Business Chamber Alliance; the launch of nextgen leaders; distinguishing top five priorities; and supporting business leaders to on-board industry cluster development. This year’s goals will be equally ambitious, with an emphasis on Chamber’s top 5 priorities, increased member engagement initiatives, exciting developments with nextgen leaders and reviewing Councils Economic Development Strategy due out this month. The Chamber will continue to advocate and lobby on behalf of the local business community in matters of regional development, economic development, community sustainability and growth. Of recent interest, the Central Business District (CBD) Masterplan has been on public exhibition from 14 December 2012 to 28 January 2013. Aimed at repositioning the City Centre to attract investment, new business, new residents, and reinvigorate the centre of cultural life and events, the plan includes key elements such as pedestrian links, a skate park, entertainment centre and cultural precincts. At the time of going to print, a community workshop on the Draft Plan is being hosted by the Coffs Harbour Think Tank 2050 group and the Coffs Harbour City Council, to discuss the proposed CBD plan prior to the end of January closing date for submissions. The Chamber is actively engaging in discussions on the proposed plan, and more information will follow as details or outcomes materialise.
Destination NSW is introducing a new industry workshop program that will run over 18 months from early 2013. A series of workshops will be held in Sydney and across regional NSW and will be tailored to meet the needs of the tourism industry, with topics including domestic and international marketing, digital opportunities and event development. Destination NSW has concluded an information gathering exercise from business that chose to participate in providing feedback on what type of workshop topics would be the most beneficial and important to them. This feedback will now assist Destination NSW to create a tailored workshop program that best meets the needs of operators in a range of locations around NSW. Destination NSW will announce a full program of workshops and dates in early 2013. The Mid North Coast regional action plan has been released, which aligns with the NSW Government’s 2021 strategy. Aligning with the state infrastructure strategy, transport master planning, land use and service planning across the region, the plan identifies Mid North Coast priorities. Mel: How do you keep pace with rapidly changing technology in your own business?
Matt: Yeah; we just live and breathe this stuff. And it’s not just David and me – we also encourage our staff to read constantly, and we send them to training programs regularly. Mel: You mentioned involving your staff. How important do you think staff training is for capitalising on new technologies? Matt: Vital! If we are implementing a new project with a business client, the difference between success and failure inevitably lies with the degree of staff involvement. If people don’t understand technology, then they will be scared of it – and ultimately avoid using it or use it improperly. Mel: What advice would you give a small business on how best to keep pace with technological change? Matt: Business owners need to be careful not to assume that the latest and greatest is always the best or most appropriate. It’s important

Mel: We hear a lot about the Cloud. Is this something small business should be learning about? Matt: They should be aware of the Cloud, but I’m not sure they need to invest a lot of time learning about it. Cloud technology is opening up a wide range of solutions that make it easier to share information – but it’s in the background making new ideas possible. David: Matt’s right. What businesses should be learning about are the solutions. For example, we have recently discovered a fantastic software solution from NZ called GeoOp, that makes it incredibly easy to run a mobile workforce. Another example is Xero, which I know MJ Accounting has recently partnered with. Xero finally makes it easy to manage your accounts from your iPad. It’s the solutions the Cloud makes possible that business needs to be learning about.

The truth is, we are human and sometimes we have no clue what the next step for our lives is. We know we need to sell for a multitude of reasons – perhaps the children have left home (hallelujah!) and it’s time to downsize, free up capital and cut down on maintenance; or, you might be needing something that has the potential to extend as your family grows. Here are some things to consider to allow for more detachment when selling your home. 1. Are the memories holding you back? Many older homeowners are hesitant to sell their home, because it’s where their children grew up and it’s filled with memories. This reasoning may be keeping people in homes that are too large and too expensive for them to maintain. If you know someone in this situation, it may be helpful to encourage them to do what they need to do. 2. Are you hesitant to sell because the housing market’s down? Thing is, most people buy and sell in the same market,

I’m not going to lie – selling a home is not always a bowl of cherries. The process can be stressful and frustrating, even when the mechanics of the transaction are going smoothly. Your home cradles many of your most sensitive emotions; you have countless memories and moments of wistful sentimentality, while preparing the way for someone else to take this house of yours and make it their home. When you are still emotionally tied to your home, it is difficult to remember to not take things personally. Whether it’s less than friendly feedback or whether it is an offer that you find ridiculously low, it is important to remember that this is not a personal stab at you but a business transaction. The buyers and their agent are not emotionally tied to the home like you are – they didn’t grow up there. They didn’t watch their child take his first steps in the living room; their dad wasn’t constantly tinkering in the shed. They are looking at your home as a commodity.
