Where were you married and why did you choose this location?
We were married at The Garden Bar and Kitchen, Frederickton. We chose this location for the price, convenience (ceremony and reception at the same place), stunning views and once I met Megan and Tom, I knew they were the perfect fit for our wedding.
Did you have a theme for your wedding day, if so tell us all about it. We didn’t have a theme as such, we kept it simple, but elegant - fresh flowers and greenery, candles etc.
What was your favourite part/moment of the day and why? My favourite part of the whole day was having all of our friends and family together and how much we all laughed.
What did you save money on and what did you splurge on? We saved money by decorating the venue ourselves. I used some rugs and pillows that we already had for the kids corner and hired some things like welcome signs.
We splurged on our photographer, I loved her style and her personality was perfect for our day.
What would you say to couples looking to hold their wedding at The Garden bar? I would highly recommend going to check out the Garden Bar and I’m sure once you meet Megan and Tom, you won’t go anywhere else. Their hospitality is next to none, the food is absolutely delicious and the stunning views of the river are unbeatable.
I cannot put into words the feelings and thoughts I have of Mindy. She created the most fun, loving and enjoyable atmosphere for our wedding. She helped me in times of stress- supplying me with confetti because I freaked out and forgot to buy more. She comforted me when needed throughout the journey and she was hands down the best celebrant and MC we could’ve asked for (ultimate hype girl). Every single guest commented on how amazing she was and is. So I highly recommend Mindy you won’t find another like her.

I never knew how special a great celebrant is until I met Mindy! She truly made our day perfect. The way she put together our love story and ceremony was magical. Everyone said that it was the most beautiful ceremony they’ve ever seen, thanks to Mindy. We were lucky enough to book her as our wedding coordinator as well. Mindy was the perfect puzzle piece on our wedding day. She were so much more than a celebrant – she was our fairy godmother, MC, timekeeper, pal, water (and champagne!!) waitress, emergency hair stylist & beyond. Mindy MADE our day what it was. She ran the show from 12pm when she visited me (the bride) getting ready, all the way through too late in the night when she said goodbye. She married us in the best way possible, with class, humour, fabulous storytelling - yet all the while being so in touch with the emotion of the day. i Stef and Liz! Thank you both for your time. Take us back to where it all began. Stef, you have over 25 years experience in the industry as a professional chef, has this always been a shared vision to run a successful catering company, and can you tell us what drives you on a daily basis?
Thanks Sarah! I don’t think we ever envisioned doing what we’re doing now. Liz and I have always been passionate and creative people, and when you combine that with our love for food and the joy of making people feel good, it just makes sense that we ended up here, doing what we love.
The drive for us comes from a deep appreciation for GOOD FOOD, good people, and good times. It’s not just about the food – it’s about creating experiences. We’re inspired by our clients, our

incredible team, and, of course, our family, who constantly remind us of the bigger picture. Being able to share our passion with others and seeing the joy it brings to people keeps us motivated every day.
Your approach is not a one size fits all package and you take the time to carefully ascertain what a client is looking for and ensure you offer a range of culinary options. This can include a sample menu to get a taste of the many delicacies Char Bar Catering can provide for a special event, whether it be a boho style relaxed picnic or a large scale corporate event with a fine dining service. What have been some of your highlights in business thus far?
Highlights have certainly been plentiful, but the ones that stand out the most are the moments when we touch base with our clients after an event. A typical Monday morning for us involves
calling brides after their big day or following up with clients from events we hosted over the weekend. There's truly nothing better than hearing the overwhelming gratitude and excitement from a bride and groom who are delighted with not only the quality of our food but also our customer service and the entire experience we’ve created for them. Those moments reaffirm why we do what we do –knowing we’ve helped make someone’s special day even more memorable is the ultimate reward.
Char Bar Catering has been recognised at local and international levels for your commitment to excellence in catering including Best Wedding Caterer of the Year for the past two years for the Mid North Coast and Northern Rivers regions. You’ve also been internationally recognised at the World Food Championships for your
Fried Chicken Burger. What does success look like for you both and how do these accolades reflect your hard work and commitment in the field?
When recognition comes our way, we certainly appreciate it. It’s a reminder for us to pause and celebrate the wins. But to us, true success isn't just about awards, it’s about the daily wins we experience. We celebrate small victories every day, whether it’s positive feedback from clients or seeing our calendar fill up with events. When we see that our clients are happy and our reputation continues to grow, that’s when we look at each other and think, 'Okay, we’re doing alright.' The real success, though, is the people we’re surrounded by, like our hardworking team, because none of this
would be possible without them. We believe in our brand, our team, and we know we deliver not only an incredible product but an experience that our clients won’t forget. These accolades are nice, but the real reward comes from the work we do and the relationships we build along the way.
My
approach is all about providing personalised service, where I take the time to understand each client’s unique needs, goals, and circumstances.
Can you tell us what a typical day might look like for Char Bar. I imagine each day could vary significantly from one day to the next.
Typical for us is different every day, and that’s what keeps it exciting! We both
wear many hats in the organisation. Liz, along with Megan, one of our amazing team members, takes care of our clients from first contact all the way through to follow-up calls after the event. On top of that, Liz manages all of our social media and marketing and the girls organise everything behind the scenes to ensure every detail is taken care of.
I’m also organising behind the scenes to handle everything, from planning menus and creating team rosters to food costing, sourcing, and ordering ingredients. Alongside our superstar apprentice, Jamison, and the rest of our crew, I’m involved in the preparation, service, and delivery on event days. Each day might look different depending on the event we’re working on, but it’s all about teamwork and ensuring that everything goes off without a hitch. It’s a busy, dynamic process, but we love it.

The fires, floods, and COVID-19 really tested
Beyond those major events, the biggest and most ongoing challenge has been finding a healthy work-life balance. The truth is success doesn’t happen overnight. It takes persistence, hard work, and a willingness to push through setbacks - but that often comes with long hours and time away from the people we love. It’s a constant juggling act, and it’s not always easy.
That said, we’ve learned so much about prioritising and being intentional with our time. Finding that balance is one of our biggest goals, and we feel like we’re getting closer every day. It’s a work in progress, but we know it’s worth it for both our business and our family.
Who or what inspires you creatively in the kitchen?
Everything from the season, trends, and friends inspires us to create “Good Food”.
For both of us, it’s all about the people we love - making them happy, excited about eating, laughing, and creating good memories together. Liz is always pushing herself in the kitchen, trying new recipes, and pleasing those around her with her love of food. Stef, the professional chef, might spot a photo online or in a magazine that sparks an idea for a menu item, or even an entire menu.
What is on the horizon for Char Bar for the year ahead and what can we expect from the team at your new permanent location at the race club, having now set up residency since late last year?
The future is as exciting as it was on day one! Alongside our original home at Moorebeer Brewery, we’re thrilled to be the exclusive caterers at the Port Macquarie Race Club. We started with the always exciting race meets, where we’ve introduced our popular smoked meats to the menu, alongside our renowned food truck offerings and the traditional preorder platters.
The race club venue has been hosting not only race meets but also musicians, markets, the upcoming Wedding Expo and more. It’s become a vibrant space for a variety of events, with more exciting (secret) events on the horizon! The venue itself is one of Port Macquarie’s best, featuring the Ivan
Livermore Stand with gorgeous glass windows that offer stunning views and can comfortably accommodate events with larger guest numbers. The Clydesdale Room also boasts a gorgeous deck, providing a breathtaking space for guests to enjoy during events.

You’ll find us here hosting private and public events at the incredibly versatile track venue. And being slightly out of the way only adds to its charm, offering a peaceful yet accessible spot for events. What inspired you to start Witt & Pearl, and how did your journey into the world of jewellery design begin?
The inspiration for Witt & Pearl came from a mix of personal passion and a desire for change. Just over three years ago, my husband and I relocated back to Australia after years in the UK, where I co-ran a family pearl jewellery business alongside my work as a TV producer. I’d fallen in love with pearls during that time - their beauty, timelessness, and versatility captivated me. Moving to Port Macquarie, I saw an opportunity to build something unique
and meaningful, combining my love for pearls and a more balanced lifestyle. Witt & Pearl was born as a boutique, familyrun business that celebrates elegant jewellery, heartfelt customer service, and sustainability. I’m so proud that this journey has also seen Witt & Pearl featured in British Vogue, which was such an incredible moment for us as a small business.
Why pearls? What is it about them that captured your imagination and inspired your designs?
Pearls are fascinating - they’re natural gems that carry an inherent sense of elegance and individuality. No two pearls are alike, which makes every piece feel special and personal. Pearls are incredibly versatile, transitioning seamlessly from everyday wear to life’s grandest occasions. They also embody timelessness; they’re classic yet contemporary, and they never go out of style. For me, they symbolise understated luxury, and I love bringing that to my designs.
How would you describe the aesthetic of Witt & Pearl jewellery?
Witt & Pearl jewellery blends minimalism with elegance. I focus on clean lines, delicate details, and modern twists on timeless styles. Our designs are versatilepieces that can be worn effortlessly every day but also make a statement for special occasions. I love creating jewellery that feels personal, whether through the use of natural shapes like baroque pearls or the thoughtful craftsmanship behind each piece.

Can you share the creative process behind crafting one of your pieces, from concept to completion?
The process always begins with inspiration - sometimes from nature, other times from customer feedback or classic design elements that I want to reimagine. Once I have a concept, I sketch the design, considering how it will look, feel, and wear in real life. Next, I source high-quality pearls and precious metals, ensuring they meet our certified quality standards. From there, our pieces are meticulously handcrafted, paying attention to every detail. The final step is quality control, ensuring that each item is perfect before it reaches our customers.
Sustainability is a key aspect of Witt &
Pearl. Why is this so important to you, and how do you incorporate it into your business practices?
Next, I source high-quality pearls and precious metals, ensuring they meet our certified quality standards.
From there, our pieces are meticulously handcra ed, paying a ention to every detail.
Sustainability is at the heart of Witt & Pearl because I believe in creating beauty without compromising the planet. Pearls are a natural, renewable resource, and we ensure all our pearls and precious metals are ethically sourced and certified.
We use eco-friendly packaging and shipping materials, and we offset our carbon footprint for every order. Additionally, we donate 3% of our annual profits to the Save Our Seas
Foundation, supporting ocean conservation and protecting the ecosystems that nurture pearls. For me, sustainability is about taking responsibility and making positive changes wherever possible.
Witt & Pearl has become a favourite for brides. What do you think draws customers to your designs?
I think brides are drawn to the timeless elegance and simplicity of our pieces. Pearls naturally symbolise love and purity, making them a beautiful choice for weddings. Our jewellery complements a wide range of bridal styles, from traditional gowns to modern silhouettes. We also pride ourselves
on offering competitive pricing while maintaining exceptional craftsmanship, ensuring each piece feels special for such an important occasion.
How does it feel to see brides wearing your designs on their big day, knowing they chose Witt & Pearl for such a momentous moment in their life?
I love seeing photos of brides glowing in their Wi & Pearl pieces - it’s so special. It’s not just about creating jewellery; it’s about creating memories.

We’re also exploring partnerships with other like-minded brands to highlight local talent and sustainable practices. On top of that, I’m working on a children’s collection to be out early this year. Where did you first meet? We actually met on Tinder but our first date was at Laurieton pub.
Tell us about the proposal? Jesse proposed to me at Tacking Point Lighthouse on 14th July 2023. We had a picnic dinner and totally took me by surprise! Did you have a theme for your wedding day, if so tell us all about it. We wanted something rustic and simplistic - greens, natural colours and wood.
Where were you married and why did you choose this location? We got married at Cobb and Coach Farm at Herons Creek. The have multiple options for the ceremony space under a big tree, and a rustic shed for the reception with balcony and lots of space for mingling and dancing! We chose this option as it suited our theme and we had the flexibility of decorating it how we liked. We were also able to bring in our own food and drinks which was a big bonus for us!
Who were some of the businesses you worked with to help create your special day? -We had Tru Blu Catering for finger food/ entrees and a good roast for dinner with lots of options!

What was your favourite part/ moment of the day and why? The favourite part of the day was the 10 minutes Jesse and I had together as bride and groom straight after the ceremony - time for us together to really let it sink in! We then got to mingle with all our guests before heading off for all our photos. What did you save money on and what did you splurge on?

We saved money on all the decorationsbought second hand or cheap from online stores. All the florals decorations as well as table centrepieces were done by myself and my bridesmaids. We splurged on really important things like photography and the wedding dress!!!
Looking back was there anything that you would do differently or change? There honestly wouldn’t be much we would change! Drinks were readily available for those that wanted them, and the music was pumping ready for the dance floor with strobe lights!
What advice do you have for couples who are getting married in 2025?
Don’t feel afraid to do some things yourself! Do them ahead of time to save some stress - I did all floral arrangements months before the wedding and put them in air tight plastic
containers to keep them from dust! Have a time line for the day for yourself and make sure other people know about it! Not just the celebrant and photographer, but also your mother and bridesmaids! Many hands make light work! Thanks Jessica.

STYLE: We're lucky to have so many talented wedding photographers in our area, each with their own unique style. Take your time browsing photographers' websites and social media to see the differences in editing (from dark and moody to light and bright) and approach (from candid to posed). Find someone whose style resonates with you.

RECOMMENDATIONS: Ask recently married friends, family, your venue, or your celebrant for photographer recommendations. Check online reviews and see if these align with your expectations.

Ok, you receive the exciting invite to the wedding, the first question we women ask ourselves is, WHAT AM I GOING TO WEAR?
Men get it easy, we all know that 99.9% of the time, they will wear what we tell them too and usually, the hardest decision for them is jacket or no jacket, right?
For us, it will depend on the weather, the location, how well do we know the bride and groom, our hormones, our bank account, “that time of the month” and what on earth does formal, semi formal or casual mean?
There are certain do’s and don’ts when it comes to wedding attire. Don’t wear white, off white, beige, ivory, even a light blue, they all photograph like classic white and well, you don’t want to be “that person”. Definitely don’t wear black, leave that to Aunt Gertrude who clearly hates the world, try to steer clear of the bridal party colours, don’t wear the outfit you wore to a Coachella themed party, don’t wear stilettos to a garden wedding, leave the spikes to the runners and definitely, do not wear jeans!
Generally you can tell the dress code of the wedding by the location, a formal wedding is usually at a luxury location or venue, in this case,
women should opt for a floor length dress, you may get away with a dressy cocktail dress but the mini’s should be left in the cupboard for this affair – pair your outfit with stunning heels, high end jewellery and a matching clutch bag, or a dressy pant suit can also be an option if a dress is not your thing.
Semi formal is the most confusing, I mean what is dressy casual, thongs and a ball gown? No. This dress code depends on the time of day, if it is a day ceremony, you can opt for floral or brighter patterns, the dresses can be maxi, midaxi, midi or even a nice subtle mini that holds a little modesty. Heels are still a go to here, however nice wedges or a fancy flat are also acceptable, and again, pant suits are an alternative - a safe bet for that one friend who devours the open bar and gets way too excited during the Nutbush.
Casual, hmmm, this one is a little tougher - t’s still a wedding right? Please hear me when I say, unless the couple state it openly, jeans, shorts, singlets, boob tube tanks, a Sabbi tee, sneakers or thongs are never, ever appropriate.

Hi Steve. Can you share a bit about your background and what sparked your love of photography and videography?
Silver Quinn Productions (SQP) was created when we relocated from Sydney to the Mid North Coast of NSW. We aspired to deliver an experience and bespoke service that no other local business was delivering, at the time. After working on film sets in New Zealand with Tom Cruise and red-carpet events in Sydney, I was hooked on the creative aspect of photography and film making. Inherently, I have always been a creative, with a love of

How would you describe your artistic style, and how does it differ when capturing weddings compared to your more commercial work? My artistic style is always changing, it is based on experience and quality production. I am always trying to improve and bring a difference to my artistic style which suits the brand, or the couple being captured. We have learnt over the years that aspects from shooting different commercials and the techniques applied in commercial business,

Other notable influences on the SQP style are the vibe of the day, the people and what the aim of the production, project or event is focused upon. Pre wedding discussions with the couple during consultation on what they really want for the special day and the ideas that I can add to their already existing plan, help the final package come together. What is important for the couple and families that I am working with along with the music, international influences and traditions are also key to delivering an amazing outcome for photo and video. This applies in both the wedding event space and the commercial business industry.

What role does technology play in your work, do you have a favourite piece of equipment or technique that elevates your storytelling?
I feel that having a finger on the styles and trends in the commercial and wedding sectors is the best way to ensure that we are ahead of the curve.
Technology is fundamental to creative success in our line of work! Building a library of photography and videography equipment over the years, has been part of the amazing journey and ensures that we are prepared for all conditions, all moments and shooting in the day or evening. For example, using a drone to set the scene for the day, to remind the couple of how beautiful their ceremony was, right through to ensuring that their heartfelt glance with their grandparents was captured, or that the detail of their cake and the guests was real and raw,
can only be achieved with the right equipment. Alongside our drones, we would have to say the gimbles, sliders, teleprompters for any pre-recording and lighting sets, mics and of course the amazing cameras that we are using....create the right outcome. Couple this with quality software and music for film, then the magic is created.
The other fundamental I have, is that we always use new batteries for equipment at each wedding or event...or ensure that things are fully 100% charged for cable-based tech.
How has your style or approach evolved over the years, and what continues to inspire you?
The SQP style is always evolving based on trends and technology....but also based on what our clients want to achieve. I feel that

Getting a sharper angle, ensuring transitions are crisp, being unique and most of all telling a story when it comes to motion and making that really bespoke cinematic experience for the couple and their family.
When it comes to wedding photography and videography, how do you collaborate with couples to understand their vision and ensure the final product reflects their personalities and love story?
The key differentiator with SQP, is how we understand and tailor the experience for the people we are working with. The quality of what we deliver is only ever elicited by ensuring that our couples feel comfortable, relaxed and connected with what we are capturing behind the lens. This comes
with trust and the willingness to be vulnerable and truly themselves.

I do a catch-up coffee, phone call or zoom meeting to have a chat about the feel and look of their photos or video. It is also a good opportunity to listen and to observe the couple's personalities.
What are your favourite moments during a wedding day to photograph or film, and why?
A big moment is the first kiss and walk back down the aisle together. There are great moments to capture and for a lot of couples you see the real joy of knowing that they are actually married! The rest sprinkles on top. Another moment I really love to capture, and which I encourage couples to do, is exchange cards the morning of the wedding day. Capturing this moment when they read words from their fiancé the day of their wedding day is so powerful.
What advice would you give to couples when choosing a wedding photographer/ videographer or planning for their wedding day?
Choose a photographer and videographer who is experienced and fits your style. I feel being passionate about wedding photography and videography is a must!
