Ingredients For Orange Layer 1 cup grated carrot 1 cup khoya (reduced milk) 1/2 cup sugar 1/4 teaspoon cardamom powder A few drops of orange food color (natural or edible) For White Layer 1 cup khoya (reduced milk) 1/4 cup condensed milk 1/2 cup powdered sugar A few drops of rose water For Green Layer 1 cup spinach puree 1 cup khoya (reduced milk) 1/2 cup sugar A few drops of green food color (natural or edible) 1/4 teaspoon cardamom powder 1/2 teaspoon paprika Salt and pepper, to taste 1 cup chicken broth Fresh cilantro, for garnish
Method 1. Prepare the Orange Layer Heat a non-stick pan and add grated carrot to it. Sauté the carrot for a few minutes until it becomes soft. Add khoya, sugar, and cardamom powder. Mix well. Cook the mixture until it thickens and starts leaving the sides of the pan. Add orange food color and mix until the color is evenly distributed. Transfer the mixture to a greased plate and spread it evenly. Allow it to cool. 2. Prepare the White Layer In another pan, heat khoya until it becomes soft. Add condensed milk, powdered sugar, and rose water. Mix well. Cook until the mixture thickens and starts leaving the sides of the pan. Transfer the white mixture over the set orange layer and spread evenly. Allow it to cool. 3. Prepare the Green Layer Blanch spinach leaves and make a smooth puree. In a pan, combine khoya, sugar, cardamom powder, and spinach puree. Cook until the mixture thickens and leaves the sides of the pan. Add green food color and mix well. Transfer the green mixture over the set white layer and spread evenly. Allow it to cool. 4. Set and Cut Once all layers have cooled and set, cut the tri-color barfi into desired shapes, like squares or diamonds. 5. Serve Your Republic Day Tri-Color Barfi is ready to be served! A VISIT TO FISHERMAN’S W H A R F Embark on The Culinary Trail Fisherman’s Wharf needs no introduction, having been reviewed by numerous food bloggers from Goa, India, and around the world. However, We aim to provide a fresh perspective by sharing my personal experience, particularly if you're planning a weekend visit. Nestled in the extreme south of Goa, on the banks of a Sal River with scores of fisherman's boats anchored along the coast, Fisherman’s Wharf transports you to a completely different world. To truly immerse yourself in this experience, I recommend visiting during lunchtime, as the scenery loses some of its charm as night falls. Nevertheless, an evening visit also holds its allure, which I'll delve into in the following paragraphs. I have visited Fisherman’s Wharf on numerous occasions, both during the day and at night, and have had the pleasure of experiencing the unique charm of each time. Drawing from my encounters, I will share my insights, recommendations, and favourite specialities, as well as discuss the ambience of this delightful establishment in the following article. Starting with a daytime visit, you can anticipate immersing yourself in the mesmerizing surroundings along the riverbank where Fisherman’s Wharf is nestled. This setting provides the perfect backdrop for capturing memorable moments with your phone camera in the bright daylight. However, one potential challenge, particularly during the summer months, is the intense heat, as there are currently no airconditioned seating arrangements available.
