It’s a time when our beloved Goa transforms from the sunny, tourist-laden retreat to a mysterious, mist-laden haven. There’s something truly magical about driving through Goa during the monsoon. I confess these long drives on wet roads are my guilty pleasure. Watching the raindrops race each other on the windshield while the world outside turns a deeper shade of green is nothing short of enchanting. But let's chat about the elephant in the room—or should I say, the sluggishness in the air? Yes, the monsoon brings with it a certain laziness. There’s a coolness and dampness that almost commands us to slow down and perhaps even indulge in a nap or two. Yet, as much as I advocate listening to our bodies' calls for rest, I also have a few tricks up my sleeve to combat this seasonal lethargy. This month, I’ve also had the pleasure of stepping out to revisit some of our stalwart establishments that keep the Goan hospitality flag flying high, even during the rains. INGREDIENTS
1 cup masoor dal (red lentils), washed and drained
2 tablespoons coconut oil
1 medium onion, finely chopped
2 green chilies, slit
1 teaspoon mustard seeds
6-8 curry leaves
2 cloves garlic, minced
1-inch piece ginger, grated
1/2 teaspoon turmeric powder
1 tomato, finely chopped
Salt to taste
2 tablespoons fresh coriander, chopped
3 cups water
Juice of 1/2 lemon
Method
Ÿ In a pot, add the masoor dal and water, and bring to a boil. Skim off any foam that forms on the surface.
Ÿ Reduce the heat to low and simmer until the dal is soft and broken down, about 20-25 minutes.
Ÿ In a separate pan, heat the coconut oil over medium heat. Add the mustard seeds and wait until they start to pop.
Ÿ Add the onions, green chilies, curry leaves, garlic, and ginger. Sauté until the onions are golden and translucent.
Ÿ Stir in the turmeric powder and chopped tomatoes. Cook until the tomatoes are soft and mushy.
Ÿ Pour this tempering over the cooked dal, mixing well to combine. Add salt to taste.
