IHCL GOA BRINGS IN THE YULETIDE SEASON WITH SPLENDOUR

The Indian Hotels Company (IHCL), Goa's largest hospitality company ushers in the festive revelry with much pomp and gaiety at their annual Cake Mixing Ceremony. The centuries old tradition which heralds the beginning of the merry season witnessed an assembled multitude of enthusiasts gathered in union to participate in the ritual of Christmas Cake Mixing, reflecting the true spirit of the season. Donned with Christmas hats, gloves and aprons, the crowd joined hands in mixing a colossal spread of assorted nuts, rich dry fruits and aromatic spices including cinnamon, cardamom and nutmeg with generous amounts of spirits. As several pairs of hands worked together, the air was punctured with a sweet-smelling fragrance and the festive ambience was accompanied with a melody of traditional carols. In line with Paathya, the company's ESG+ framework to drive its sustainability and social impact measures, the hotels incorporated an assortment of locally sourced ingredients and collaborated with non-profit organisations to share in the festive spirit. This ascent, though not an overnight phenomenon, marks a significant stride for Indian whiskies in the worldwide market. With a portfolio boasting over six distinct expressions of Indian single-malt whiskies and an impressive tally of more than 100 prestigious global awards, Dr. Mohan Krishna leads the Cheers group, setting a new standard for the aging and maturation process. This dessert is a celebration of textures and tastes, combining the richness of milk, the delicate sweetness of saffron, and the nuttiness of pistachios. Making Rasmalai at home allows you to savor the authentic flavors of this classic treat. Follow this step-by-step recipe to create delicious Rasmalai from scratch.

Ingredients 1 litre full-fat milk 2 tablespoons lemon juice or white vinegar 1/4 cup all-purpose flour (maida) 1/4 cup semolina (suji) 1/4 teaspoon baking powder 4 cups water 1 cup sugar For the Rasmalai Milk: 1 litre full-fat milk 1 cup sugar 1/2 teaspoon cardamom powder A pinch of saffron strands (soaked in warm milk) 2 tablespoons chopped pistachios, for garnish 1 tablespoon chopped almonds, for garnish

Method For the Rasgulla (Cottage Cheese Dumplings): Ÿ Ÿ Ÿ Ÿ Ÿ Ÿ Ÿ Ÿ

Boil the milk in a heavy-bottomed pan. Once it boils, add lemon juice or vinegar while stirring continuously until the milk curdles. Strain the curdled milk using a muslin cloth or a fine sieve to separate the whey from the paneer (cottage cheese). Wash the paneer under cold running water to remove any traces of lemon or vinegar. Squeeze out excess water from the paneer and knead it on a clean surface for about 5-7 minutes until it becomes smooth.
