With months of celebrations ahead, the energy is infectious, and there’s no better way to ride this festive wave than by exploring some exciting trends, especially in the world of Indian alcobev. This season, we’re raising our glasses to Indian alcohol brands that are making waves both at home and on the global stage. Our homegrown labels are stepping up, offering world-class spirits with local flair—whether you’re a whisky lover or a fan of artisanal gin, there’s so much to celebrate!

With all this festivity comes the need for comfort, and we’ve got you covered on that front too. Our recipe line-up this month features cozy dishes like roasted veggie salads and creamy soups—perfect for those slightly cooler evenings as the season kicks in. And, of course, we had to tackle the ageold debate: wheat roti or multigrain? We’ve broken it down for you, so you know exactly which one to pick for your next meal.

Now, I’m super excited to share that I’m launching a new travel series where we explore the off-beaten paths of India, one city at a time. We’ll start with Amritsar, but not the usual sights. Instead, we’ll dive into the lesser-known spots—heritage walks, hidden culinary gems, and those quiet corners of the city that reveal so much more. It’s a journey we’ll take together, discovering the real heartbeat of India beyond the guidebooks.

And as always, you’ll find our regular features ready to inspire your palate and fuel your curiosity.

IHCL Goa Donates Garbage Truck to Candolim Panchayat

Marking 50 years of delivering exceptional hospitality and supporting local communities, Indian Hotels Company (IHCL), Goa, celebrated a significant milestone at Taj Holiday Village Resort & Spa, Goa. To commemorate this occasion, IHCL donated a fully equipped garbage collection truck along with 15 large-capacity bins (240 liters each) to the Candolim Village Panchayat. This initiative reflects IHCL's commitment to environmental stewardship and echoes Prime Minister Narendra Modi's “Shramdaan for Swachhata” campaign, which advocates for a cleaner, healthier India through collaborative efforts. " This description aptly encapsulates the method of preparing this delightful pastry, where a sweet coconut-based filling is encased within a dough, resulting in a crescent-shaped treat.

Historically, Neureos can be traced back to the prePortuguese era, when they were made during significant agricultural festivals. The practice of preparing sweets during harvest time signified gratitude and celebration, and Neureos quickly became a staple for various religious festivities. With the arrival of the Portuguese in the 16th century, Goa saw a fusion of culinary traditions. This crosscultural exchange led to the incorporation of new ingredients and techniques, further enriching the Goan cuisine landscape.

Neureos are particularly notable for their crescent shape, which symbolizes the moon and represents abundance and prosperity. They are traditionally prepared during key festivals such as Ganesh Chaturthi, Diwali, and Christmas, serving as both offerings and festive delights. Over the years, Neureos have maintained their cultural significance, becoming an integral part of community gatherings and celebrations in Goa.

Many Goans living abroad continue to prepare Neureos during festive occasions to maintain their cultural heritage and pass down the tradition to younger generations.

Moreover, the culinary landscape in Goa has seen a revival of interest in traditional recipes, with food bloggers or influencers and chefs showcasing Neureos at food festivals and culinary events. This renewed focus on traditional Goan cuisine emphasizes the importance of preserving cultural heritage through food. Neureos have thus become not only a symbol of tradition but also a culinary icon representing the rich flavors and history of Goa. Short Recipe for Goan Neureo

To make Goan Neureos, gather the following ingredients: 2 cups of all-purpose flour, 2 tablespoons of ghee (clarified butter), a pinch of salt, and water for the dough. For the filling, you will need 1 cup of grated fresh coconut, 3/4 cup of jaggery (grated or chopped), 1/2 teaspoon of cardamom powder, and a handful of chopped nuts (cashews or almonds).

Begin by preparing the dough. In a mixing bowl, combine the all-purpose flour and salt, then add the ghee Mix until the mixture resembles coarse crumbs. Gradually add water, kneading the mixture until a soft, pliable dough forms. Cover the dough with a damp cloth and let it rest for about 30 minutes.

Next, prepare the filling. In a pan over low heat, combine the grated coconut and jaggery. Cook while stirring until the jaggery melts and the mixture thickens, which should take about 5-7 minutes. Once thickened, add cardamom powder and chopped nuts for flavor and texture. Remove the mixture from heat and let it cool.

Once both the dough and filling are ready, proceed

to assemble the Neureos. Divide the rested dough into small balls, roughly the size of a golf ball. Roll each ball into a small circle, approximately 4-5 inches in diameter, on a lightly floured surface. Place a spoonful of the coconut filling in the center of each circle. Fold the dough over to create a halfmoon shape and seal the edges by pressing them together. You can crimp the edges for a decorative touch, or even press it down with a fork to form an attractive design. Finally, heat ghee or oil in a deep frying pan over medium heat. Carefully add the filled Neureos to the hot oil, frying in batches to avoid overcrowding. Fry until they turn golden brown on both sides, which should take about 3-4 minutes. Use a slotted spoon to remove the Neureos and drain them on paper towels to absorb excess oil. Allow the Neureos to cool slightly before serving. They can be enjoyed warm or at room temperature, making them a

delightful addition to any festive table.
