Goan Cuisine: A Culinary Melting Pot Goa is renowned for its picturesque beaches, vibrant culture, and delectable cuisine. Its culinary heritage is a testament to its rich history, influenced by Indian, Portuguese, and African traditions. But what truly sets Goan cuisine apart is its deeprooted alignment with the principles of Ayurveda, the ancient system of holistic medicine that views the universe as interconnected, including the food we consume.

Ayurvedic Balance Through Goan Flavors Ayurveda categorises human constitution into doshas—Vata, Pitta, and Kapha—and prescribes balanced diets to harmonise them. Goa's culinary tradition weaves this concept into its very fabric. Take rice, for example, a Goan staple. It's considered sattvic, signifying its power to calm and balance all three doshas. Coconut, another key ingredient, boasts sattvic qualities as well. Be it in the form of coconut milk or oil, it helps maintain a cool and hydrated body—an ideal antidote to Goa's tropical climate.

The Gift of the Sea: Fish in Goan Cuisine Fish, a protein-rich delight frequently found in Goan dishes, has its own place in this Ayurvedic mosaic. It's particularly beneficial for individuals with Vata and Pitta doshas, showcasing how Goan cuisine caters to the nuanced needs of its patrons.

The Healing Touch of Spices Goan cuisine's spectrum of spices offers more than just flavour. Turmeric, cumin, coriander, and ginger, with their anti-inflammatory and antioxidant properties, add a healthful dimension to the gastronomic experience.

Dosha-Based Delights In the nuanced world of Ayurveda, specific dishes suit particular doshas: For Vata dosha:Khichdi, ghee, and spiced vegetables. For Pitta dosha: Fish, yoghurt, and sweet potato. For Kapha dosha: Spiced vegetables, dal, and brown rice.

Holistic Well-Being: Beyond the Plate Yet, the connection between Goan cuisine and Ayurveda extends beyond the choice of ingredients. Ayurveda underscores the importance of a holistic lifestyle for optimal well-being. In Goa, this means combining your flavorful meals with regular exercise, restorative sleep, and effective September 2023 - Food & Hospitality - 37

stress management.

Goa's Indigenous Remedies In addition to its Ayurvedic alignment, Goa boasts a treasure trove of indigenous remedies for various health conditions. These include coconut milk for burns, turmeric for inflammation, ginger for nausea, garlic for colds, and aloe vera for wounds. These remedies are a testament to the age-old wisdom and resourcefulness of the local culture.

A Celebration of Food and Ayurveda in Goa In Goa, food and Ayurveda seamlessly come together to create a soulful harmony. By savouring the delicious flavours of Goan cuisine and embracing the principles of Ayurveda, visitors can experience a unique blend of taste, culture, and well-being. SPAGHETTI CARBONARA Spaghetti Carbonara is a classic Italian pasta dish that effortlessly combines simple ingredients to create a rich and satisfying meal. Originating from Rome, this dish features perfectly cooked pasta coated in a creamy sauce made from eggs, grated Pecorino Romano cheese, pancetta, and black pepper. The result is a harmonious blend of flavors and textures that is sure to delight your taste buds. Follow this recipe to create an authentic and delicious Spaghetti Carbonara in the comfort of your own kitchen.

Ingredients 12 ounces (340g) spaghetti 4 ounces (115g) pancetta or guanciale, diced 3 large eggs 1 cup (about 100g) Pecorino Romano cheese, grated Freshly ground black pepper, to taste Salt, for pasta water Fresh parsley, chopped (for garnish, optional)

Method Prepare Pasta: Fill a large pot with water and bring it to a boil. Once boiling, add a generous amount of salt to the water. Cook the spaghetti according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta. Cook Pancetta: While the pasta is cooking, heat a skillet over medium heat. Add the diced pancetta or guanciale and cook until it becomes crispy and golden brown, about 4-5 minutes. Remove from heat and set aside. Prepare Carbonara Sauce: In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and a generous amount of freshly ground black pepper. The cheese will provide saltiness, so you may not need to add extra salt. Combine Pasta and Sauce: Once the pasta is cooked, quickly transfer it to the skillet with the cooked pancetta (still warm, but removed from heat). Toss to combine and evenly distribute the pancetta. Add Sauce: Pour the egg and cheese mixture over the pasta and quickly toss everything together. The residual heat from the pasta and pancetta will gently cook the eggs, creating a creamy sauce. If the mixture seems too thick, you can add a splash of reserved pasta water to achieve the desired consistency. Serve: Plate the Spaghetti Carbonara immediately, garnishing with additional grated Pecorino Romano cheese, freshly ground black pepper, and chopped parsley if desired. Enjoy: Serve the Spaghetti Carbonara while it's still warm. The dish is best enjoyed right after preparation to savor the creamy, cheesy goodness. Note: Traditional Spaghetti Carbonara does not include cream or onions, focusing instead on the simple and delicious combination of eggs, cheese, pancetta, and pepper. Whether you're cooking for yourself or sharing a meal with loved ones, this Spaghetti Carbonara recipe is a timeless and delightful choice. Bon appétit! September 2023 - Food & Hospitality - 55

CHOCOLATE MODAK Modak, a sweet dumpling filled with a variety of fillings, is a beloved traditional treat often associated with the Indian festival of Ganesh Chaturthi. While the classic modak is filled with coconut and jaggery, this recipe puts a delightful twist on the traditional by incorporating the rich and decadent flavor of chocolate. These Chocolate Modaks are not only a delicious offering to Lord Ganesha but also a delightful treat for anyone with a sweet tooth.

Ingredients 1 cup grated dark chocolate (semi-sweet or bitter) 1 cup condensed milk 1 cup powdered biscuits (such as digestive or Marie biscuits) 1/2 cup desiccated coconut (optional, for texture) 1 tablespoon cocoa powder 1 tablespoon butter or ghee A pinch of salt Chopped nuts (like almonds, cashews, or pistachios) for garnish Modak molds (for shaping)

Method Prepare the Filling: In a medium-sized saucepan, melt the butter or ghee over low heat. Add the grated chocolate and stir until it's completely melted and smooth. Add Condensed Milk: Pour in the condensed milk and mix well with the melted chocolate. Keep stirring over low heat until the mixture is well combined and forms a thick consistency. Add Cocoa and Biscuits: Gradually add the cocoa powder, powdered biscuits, and desiccated coconut (if using) to the mixture. Stir vigorously to incorporate all the ingredients until you have a cohesive mixture. Cool the Mixture: Turn off the heat and let the mixture cool slightly. It should be cool enough to handle. Shape the Modaks: While the mixture is still warm, take small portions and shape them into modaks using your palms or modak molds. The modak molds can help you achieve a traditional and intricate shape. Garnish: Once the modaks are shaped, gently press chopped nuts onto the top of each modak to add a delightful crunch and flavor. Set and Serve: Place the shaped modaks on a plate lined with parchment paper. Allow them to cool and set at room temperature for a couple of hours or in the refrigerator for faster setting. Serve: Your delectable Chocolate Modaks are ready to be savored and shared. Arrange them on a decorative plate and offer them as a sweet treat to family and friends, or as an offering to Lord Ganesha during Ganesh Chaturthi. Note: Feel free to customize this recipe by adding flavors such as cardamom powder or even a pinch of saffron strands to infuse a traditional touch.
