The 26th edition of the Spirits Selection by Concours Mondial de Bruxelles (CMB) was held this year in Guizhou-Renhuai, China, reaffirming its position as one of the world’s most prestigious spirits competitions. Recognized globally for setting the standard of excellence, the competition is renowned for unearthing exceptional spirits that reflect the innovation and diversity within the global spirits industry.

What sets Spirits Selection apart is its rigorous blind-tasting process, ensuring that each spirit is evaluated solely on its merit. The anonymity of samples guarantees an unbiased assessment, creating an environment where only the finest spirits

shine. This year, 130 distinguished international judges from 23 different countries gathered to evaluate over 2,800 spirits from across the globe, contributing to the event's hallmark objectivity and credibility.

Goa stands to be one of the states in India where shawarma is frequently found to be a street food staple, among the various other quick b i t e s s u c h a s r o s omelet, cutlet pao, and more. Other toppings generally include fresh veggies such as cabbage, carrots, onions, and more. Similar to the sauces, the marinate and the choice

of meats differ from region to region Most traditional marinates include, spices such as cumin, paprika for the spice and color, turmeric, and more. The dish can conveniently be made at home with available ingredients from the pantry. Instead of the vertical spit-roasting method one can choose the horizontal pan method, or even make use of a

Over the years, Goa has additionally added its personal twist to this item, by introducing the innovative ‘plate shawarma’, which is essentially a deconstructed version of the regular shawarma. Read ahead, to discover the roots of Goa’s festival-favorite delicacy, how it found its way within the coastal heaven, its preparation, and when it is traditionally consumed by fellow Goans. The origin of patoleo is considered to have stemmed from the influence of the Saraswat

monsoon season in Goa that lasts for roughly almost four months, this weather brings along with it several seasonal fruits and vegetables that the state of Goa consumes wholeheartedly. One such leafy monsoon blessing includes the turmeric leaves, which are found in abundance during this ideal season of the Goan monsoon. This leads to these leaves becoming an essential aspect of the festivals and rituals that find their way into the rainy months within Goa.

The preparation of this vegetarian sweet dish is quite uncomplicated, with certain fundamental ingredients, such as rice flour, jaggery, either

For the Hindu community, patoelos are a Shravan special food item. Individuals are also known to consume patoleos on the eve of Ganesh Chaturthi. According to mythological reasonings, patoleos are meant to be religious offerings to Goddess Parvati, the mother of lord Ganesha, who is known to have been craving patoleos during her pregnancy term.

Furthermore, the Goan Catholic community’s occasion for preparing this sweet treat arrives almost at the same period as that of the Hindus. There are multiple celebrations across the season of monsoon that bring forth the reason for indulging in this season's favorite dish. Firstly there is the festival of São João, which is a vibrant celebration of the Baptist St John, this festival which occurs towards the end of June is famously recognized as the celebrators jumping into a well in celebration. Moreover, mid-August brings the catholic feast known as the ‘Feast of The Assumption of Our Lady’, which is another event that encourages the consumption of the sweet dish patoleo.

In conclusion, it must be remembered that patoleos are not only common to the state of Goa, but these are a Konkan delicacy and can be found being a celebratory, festive food in many distinct states across the western coast of the state. This traditional dessert is not merely delectable, it also holds various hidden health benefits along with being a vegan dish. The turmeric leaves utilized for the cooking process emanate oils that are meant to be advantageous for purifying one's blood. It is additionally meant to possess anti-inflammatory properties and numerous other benefits as a traditional dessert. Hence, a sweet craving such as this cannot and must not be overlooked.
