Here at Fresh State, we are always looking to the future and thinking of innovative ways to make the market more efficient. We have been working extremely hard during these past couple of months to get the ball rolling on several projects. From the beginning, one of our aims has always been to keep the central market system sustainable and prosperous for years to come. This magazine, in particular, will give you an insight into one of the extensive initiatives we are currently working on. Most of you may have heard of our intention of investigating a privatised model for the Melbourne Market, and the first two articles in this magazine will dive into the WHY and HOW we hope to implement this. I’m sure many of you will have further questions about this initiative, so please ring up the Fresh State office for more information. With many great reads — this magazine is one not to be missed. The Future of Purchasing the Market with Industry Investment Chairman’s Update (As seen in the FMA 2021 Yearbook) The Fresh State board are currently focused on projects that will change the future of not only the Melbourne Market, but the Fruit and Vegetable industry in Victoria.

Market Sale – as the only government owned Central Market left in the country, it’s no secret that Fresh State has made several attempts to encourage the government to review to current ownership structure of the Melbourne Market. Under a privatised model, other Central Markets around the country have achieved significant growth and we feel that the same could be achieved here at the Melbourne Market. While still very early in the process, it has been encouraging to see that the State Government has been open to looking at what shared goals could be achieved under a privatised model. Like in your own states, family businesses here in the Melbourne market, both generational and new, are the heart and soul of the market. Businesses want to continue to invest in their own future, and we think that the current ownership model is holding back much of that further investment. The example that I often use is the difference between renting a house or buying as house. Like us, the current government too want a prosperous, thriving Central Market in Victoria, with ongoing investment, innovation and even more importantly, long term sustainability of the industry. Given our shared goals, we have faith that our positive discussions will result in an outcome that benefits all stakeholders.

Over the past year a number of discussions and meetings have been held to explore this opportunity. As said by Shane in his Presidents message, one of Fresh State aims has always been to keep the central market system sustainable and prosperous for years to come. Wholesalers, Growers, Retailers and Providores have all joined us in diving into this topic and what the potential of looking into privatisation has for them. “There are several reasons behind the intention to look towards a privatised model at the Melbourne

Market. Among the many, financial return, business investment, sustainability, and flexibility play a significant role in providing evidence and feedback on where change needs to happen. The longevity of the Central Market System is a top priority, and this venture gives the Melbourne Market a real opportunity to achieve this in Victoria. If this doesn’t happen, the uncertainty of the sustainability of our market becomes very real,” said Jason Cooper, Fresh State Ltd CEO.

LOOKING TO THE FUTURE It is proposed that a new company be formed to give industry participants the opportunity to invest in their future by becoming shareholders in the purchase and privatisation of the Melbourne Markets from the Victorian State Government. It is proposed that the new company will be a consortium of investors who are industry-based. The range of investors will range from growers to wholesalers, to retailers, and many others within the Horticulture supply chain. It will give industry participants an investment into their futures by becoming shareholders in the purchase and privatisation of the Melbourne Markets from the Victorian State Government. The company’s board and management will consist of people with a cross-section of relevant industry experience to ensure the future of the industry is in secure hands. Following a smooth transition of market operations and other key responsibilities from the MMA to this new company, the short to medium-term focus will be on achieving operational efficiencies by leveraging the knowledge and skills within the new company. While slightly longer term, future growth within the market and greater industry investment will become key cornerstones in the way the market is managed and developed for the future.

Celebrating 50 years

Tony Nigro Celebrating a massive milestone of working at Fresh State for 38 years and in the industry for 50 years, Tony Nigro can still remember his first day at the Melbourne Market.

There is few in the market who don't know Tony. Nearly every morning, he is out on the Market floor liaising between grower organisations, transport companies, and the wholesalers to obtain Market Pricing Data.

HISTORY Tony’s father, Michele, came to Australia in 1951 to secure work and a home for his family. His mother, Ida, came with Tony, his brother Bill and sister Frances from Italy in 1957, arriving on Christmas Day. Tony attended Clifton Hill Primary for a short while until the family moved to Mentone, where he attended Mentone Primary School and then Beaumaris High School. Tony met his now-wife, Margaret, at a dance in St Kilda in 1968. We are told that he was such a great dancer and Marg couldn’t let him go so three years later in 1971 they were married. They lived in Mentone, where their daughter, Mandy, was born on the 6th of December 1972. Tony was headhunted by Agrep in the early ’70s and came to work with the market. At Agrep, Tony headed up the transport department, which put him in good stead for becoming a successful transition to Fresh State. On his 25th birthday, Tony Nigro began working at the Melbourne Market on the 21st of June, 1971.

In 1987 he was appointed as the Transport Manager of Fresh State and built a substantial business providing a freight forwarding service and the “essential” incoming figures that he is still providing to us all today. Tony’s role at Fresh State has changed slightly over the years. He is now doing price reporting, where he walks the market every morning, speaking to wholesalers and growers, gathering prices for all the major fresh produce lines sold in the market.

On his 25th birthday, Tony Nigro began working at the market on the 21st of June, 1971.

At 75 years young, Tony continues to wake up in the early hours of the morning to walk around and chat with the market community. Next time you see Tony out and about, be sure to congratulate him on this tremendous achievement.

Get It Right From the Start BY CORINA VUCIC, DIRECTOR OF FC BUSINESS SOLUTIONS

One of the most challenging aspects of being a business owner is being an employer. There’s recruiting the right people, and then there’s leading your team so that each member develops into a loyal, valuable cog in your business. The legalese around employment is daunting, but getting it right not only saves you from stress and a possible financial penalty but can reward you with employees who are confident in what you expect of them, are more productive, and contribute their ideas to improve your business. Once you have a successful candidate who has agreed to join you, you need to email them a Letter of Offer (or Engagement). This letter should outline: ¡ the job role ¡ who do they report to? ¡ what hours they work and where ¡ what they will be paid (do not forget to be clear as

to whether the pay is inclusive of superannuation or if that is paid on top).

In a nutshell, all their entitlements. There will be a lot of information in this document that covers you legally — so make sure that you have a good template. This is your contract of employment so ensure that both parties sign and retain a copy of the signed document. A position (or job) description should be included with the letter. This document is one of the most valuable you will produce. It should detail exactly what you require of your new employee, what

their role entails in good detail. This document will guide your new team member and give you a document to measure them against during their probation. And do not forget, probation is not a time to stand back and judge someone, but a time to help, assess and train if necessary, to give them the best chance of success in the role. Before a new employee starts, it is a good idea to email them all your manuals to read — employee Handbook, procedures, workplace safety, etc. Get them to sign off that they have read and understood the contents. When they arrive at your workplace, have a thorough induction process planned — this can be online or a combination of hands-on and virtual. Make sure they can hit the ground running and that they are not waiting for the basic tools they need to start being productive. Have a policy of respect throughout your business, have a robust complaints process, ensure that your documentation such as payslips, etc. are available on time — ideally through an online log-in portal, and you are a long way to ensuring that your new team member will be an asset, not a problem.

Fresh Start An International Women's Day event

On Wednesday the 10th of March, LaManna Premier Group and PMA A-NZ hosted Fresh Start, an International Women's Day event celebrating and empowering women in the fresh produce industry.

As a principal partner of the event, Fresh State attended the afternoon, filled with networking and hearing from a panel of guest speakers promoting women in leadership. Guest speakers included leaders in the industry; Jo Minton-Connell (Director, PMA A-NZ & General Manager, Human Resources & Communications, LPG); Monica Bratuti (President, International Trading, Turners International Marketing); Catherine Velisha (Managing Director, Velisha Farms) and Craig Taylor (General Manager Fresh Produce at Coles). The speakers shared their insight on diversity, leadership, and attracting talent to horticulture.

With around 150 guests attending the event, the Melbourne Market was transformed for the day.

We also heard from chef and author Alice Zaslavsky and cook and fruiterer Thanh Truong, who continued the conversation about growing our dynamic and diverse industry, especially women in leadership. Marketing Assistant from A better choice!, Elle Thielke, also discussed her 'Fresh Start' into the produce industry, showcasing an insight into her new role and a newfound love for the industry. With around 150 guests attending, the Buyers Walk at Melbourne Market was transformed into a great event space for the day. The team arranged a beautiful set up of white tables, a stage, and banners. And afternoon tea and drinks, along with take-home goodie bags, were enjoyed by all. Congratulations to all who were involved for putting on this fantastic event. Fresh State is exceptionally proud to have been a part of the afternoon and celebrating women in our industry.

Fresh State’s Special General Meeting Wrap Up On Wednesday, the 24th of March, Fresh State held their Special General Meeting (SGM). After a cancelled SGM the year prior, due to COVID 19, the team and Board at Fresh State were extremely glad to invite members to a face-to-face meeting. This year, the meeting was held at the Quest Hotel in Epping, where members enjoyed a catered breakfast before the meeting took place. We had a full house, with no empty seat left; Fresh State appreciates all the members who joined us at the meeting. This SGM was one not to be missed; very exciting topics around the future of the Melbourne Market were amongst the discussion. Constructive feedback from members was encouraged in this

meeting, and Fresh State delved into the opinions of the wholesalers and began a workshop on how we can make the Market a better workplace. This year's SGM was just the start of a bigger plan to be implemented in the future. What's in Season? You may have seen our Marketing and Comms Officer, Dee, and Videographer, Shravan, walking around the market every week to capture some exciting videos. The team has been focusing on ‘What’s in Season,’ where many wholesalers have been featured. These videos were posted on Fresh State’s social media pages and will continue throughout the year. So far, we’ve had Joe from L. A Produce introduce his stock of sweet and tasty Corn, which comes straight from the Grower in Whorouly near Bright. Joe’s Corn stock and others in the market will usually continue from April right through to September. Top cooking tip from Joe: Corn is excellent when cooked on the BBQ or steamed; it’s a great accompaniment to every meal! Tropical Queensland kicked off its Custard Apple season, which this year started as early as February. Peter from Produce of Virginia had a large stock of Custard Apples on display from Southern Queensland. The Grower in Glass House Mountains provides a sweet and juicy range of produce, a fantastic addition to your next fruit platter this Autumn.

Currently, what we can see in nearly every store in the market are Mandarins. Mandarins are available from April to October, and Imperials are the most popular mandarin variety. Jason from Ten Farms showed us their magnificent range of Imperial Mandarins that they currently have in the warehouse. The Grower in Gayndah, Queensland, provides a delicious stock to Ten Farms which don’t last long in stores before they’re all sold out! A better choice! Update

The A better choice! "Shop & Win" campaign officially kicked off at the start of March. Shop & Win is a national competition incentivising Aussies to support their local fruit and veg shop. A better choice! has a vast social media campaign aimed to drive consumers to shop at their local fruit and vegetable store or independent supermarket. Customers nominate their local store and upload a copy of their receipt through QR codes on the provided point of sale, putting them in the draw to win. There will be a new winner each week, and customers can enter as many times as they like but only once per receipt. Those who don't live close by to their favourite fruit and veg shop have the option of nominating their store online — customers can nominate online once a month. Customers go in the draw to win a fantastic range of technology, electronics, and kitchenware.

This year, Victorian stores have been decked out by our Merchandiser, Camille. Camille has been very busy visiting over 70 of our member stores in Victoria over the last month. The new A better choice! branding looks fabulous and has been well received by store owners; in fact, we have stores calling to ask for more. The Victorian A better choice! Committee is making it our mission to get 100% of our ABC retailers decked out with merchandise in the coming months. Inside the food hub that fuels the Melbourne kitchen FareShare’s new Melbourne warehouse was always predicted to be a gamechanger but it proved to be absolutely critical during FareShare’s response to COVID-19.

Almost every ingredient rescued or donated, and every cooked meal, now passes through the Derrimut warehouse which began operations in 2018. A committed team operates FareShare’s backend logistics in Melbourne’s outer west ensuring what we rescue, grow and cook is safely stored before being delivered to or collected by frontline charities as ready-to-eat meals. The facility includes a food preparation room where staff clean and chop vegetables in readiness for our chefs and volunteers in Abbotsford. “We haven’t had a quiet day in a very long time,” says logistics manager Patrick Lanyon (pictured at the Derrimut warehouse). “We wouldn’t have had a chance to operate like we did without it during COVID,” he says. “Derrimut gives us the space and capacity to deal with surprises. We can also handle big donations such as suddenly accepting 20 pallets of meat.” The day starts early with a team of drivers setting off to collect food from many different collection points. Meanwhile the chefs choose what to cook and place an order from an ever-changing stock list of ingredients. The kitchen order is loaded onto a truck for Abbotsford which will later return with the previous day’s cooked meals. Roughly half of these will be collected by front line charities and the remainder will be delivered as far afield as Gippsland, Ballarat and Shepparton. “There are lots of comings and goings every day,” says Pat. “We also need to constantly manage the chillers and freezers to ensure that they don’t fill up and stock rotates. “Derrimut has changed everything for me and increased the capacity of the entire organisation.” FareShare is now delighted to welcome corporate volunteer groups to our food processing kitchen at Derrimut from mid-May. Hort Connections 2021 The speakers are in! Hort Connections is back and will welcome delegates to the Brisbane Convention and Exhibition Centre from 7–9 June 2021. Still the biggest event in the Fresh Produce industry, this year’s conference theme, “Celebrating the international year of fruits and vegetables,” will recognise the horticulture industry and the important role fruits, vegetables, and floral industries have in human nutrition, health and wellbeing, and global food security.

Ingredients

Pork Ribs with Pineapple Salsa

RIBS ¡ 2 racks pork ribs (2-2.5kg) ¡ 2 tsp garlic powder ¡ 1 tsp onion powder ¡ 2 tsp paprika ¡ 2 tsp salt

Do you have a sweet pineapple sitting at home from this week’s shop? Why not try out our new Pork Ribs with Pineapple Salsa for dinner! The flavours in this dish are perfectly balanced and will have the whole family’s mouths watering in anticipation!

¡ 1 tsp black pepper ¡ 1 tsp cumin

Method

¡ ½ tsp chilli powder (optional)

1.

¡ 2 tbs olive oil

Combine the rub ingredients (garlic powder, onion powder, paprika, salt, pepper, chilli powder and olive oil), and rub onto both sides of the ribs. Set aside to marinate for a minimum of 20 mins.

¡ 2 cups barbecue sauce

2. Preheat oven to 180°C.

¡ 3 tbs garlic, minced

3. Place ribs onto a tray lined with foil (or baking paper), then cover tray

¡ 2 tbs olive oil ¡ 1 tbs Worcestershire sauce ¡ ½ tbs cayenne pepper (optional) ¡ 1 tsp salt

PINEAPPLE SALSA ¡ 1 medium pineapple, diced ¡ 4 medium tomatoes, diced

with foil and bake for 2 hours.

4. During the last 5 mins of cook time, mix together the sauce

ingredients (barbeque sauce, garlic, olive oil, Worcestershire sauce, cayenne pepper and salt).

5. Remove the ribs from the oven. Take off the foil, then spread the top

of the ribs with the sauce mix.

6. Increase the oven temperature to 240°C. 7. Return the ribs to the oven, uncovered, and bake for a further 10

mins. Change the oven setting to grill and grill the ribs for around 3 mins on medium to high heat until lightly charred and caramelised around the edges.

¡ 4 jalapenos, diced

8. Allow the ribs to rest for 10 mins before slicing.

¡ ½ small red onion, diced

9. While the ribs are cooling, add all the pineapple salsa ingredients to a

¡ ½ cup coriander, finely chopped ¡ 1 lime, juiced 26

bowl and toss to combine.

10. Divide the ribs between serving plates, then top with the pineapple

salsa. Enjoy!
