Toriden: Carrying on a flavorful Hakata Tradition

izutaki (chicken hot pot) is a simple local dish, but with the Toriden touch, it becomes an memorable experience. Take a sip of the delectable white broth before you add the Kyushubred chicken to the pot. Don’t forget the locally grown green onions. Toriden makes

its own seasonings— a mild yuzu gosho paste and a mellow ponzu sauce—that you can either enjoy with each bite of chicken or mix into the soup. Next, add the tsumire, or minced chicken, to A the pot. The cabbage, kuzu-kiri and carrots round out the soup with a hint of sweetness. Finally, add zosui (rice porridge) or ramen noodles to the remaining soup for the finishing touch. Owner Hirokatsu Okutsu worked in French cuisine before entering the world of washoku. After studying in France, he launched a number of popular restaurants in Tokyo and Fukuoka. It was here in the culinary mecca of Fukuoka where he decided to open a mizutaki restaurant. Toriden’s mission is to introduce travelers and locals to the wonders of mizutaki while keeping a Hakata tradition alive.

FUKUOKA’S FIRST LGBT RAINBOW PARADE Openness and Equality in Fukuoka

n Nov. 16 Fukuoka hosted it’s first ever LGBT (Lesbian, Gay, Bisexual and Trans) Pride Parade. As parade-goers assembled in Reisen Park, a Drag-Queen competition kicked off the event in style, exhibiting spectacular outfits and even more spectacular heels. At 2pm, the parade marched from the park into the city, a streak of vibrant color against the streets of Fukuoka. Music blasted from support cars and an atmosphere of celebration ran through participants and spectators alike. The event was attended by an estimated 1,000 persons with 600 participating in the parade, some coming to Fukuoka from as far away as Tokyo. The parade’s success and its acceptance by the residents of Fukuoka is a sure sign of Japan’s shift in accepting LGBT culture.

upert Singleton used to live in Singapore as a graphic designer before switching to photography, eventually having his big break with a commission from the New York Times. Rupert has always loved Japan and moved here last year, joining a company called Artman Japan in Fukuoka which employs foreign artists to create art inspired by Japan. He is now a resident of Fukuoka and self-promotes his work. Shooting Japan in an alternative style, Rupert has his own unique brand of composition and aims to make a living shooting Japan his way. He is currently working on a photography series based on nature around Fukuoka, his passion for photography a personal response to the landscape around him. Developing an online following, Rupert’s photos are becoming increasingly popular on social media sites, a seasonal shot of sakura garnering 5,000 likes on a Japanese photography website this year. Yanagawa is referred as Japan’s Venice because of its long course of canals in which gondolas travel. The boatmen offer interesting commentary and sometimes sing songs as the scenery passes by. In winter, passengers stay warm with blankets, heaters and atsukan (hot sake!)
Atago Shrine’s biggest event of the year. Purify the body and ward off misfortune by completing a ritual that involves writing a wish on paper, throwing it onto a bonfire and walking barefoot across burning coals. With this festival the shrine enters into New Year period.

◊ Disposing Gas Cartridges and Aerosol Cans There has been a recent spate of fires likely caused by leftover gas inside gas cartridges and aerosol cans discarded as inflammable garbage. gas. You can buy a can piercer at a 100-yen store. Also, please remember to use the proper trash bag.
◊ Light Vehicle Tax Rates to be Adjusted Concurrent with revisions to the Local Tax Act that will go into effect in April 2015, light vehicle tax rates will increase. Taxes for mopeds and motorcycles with engine capacities of less than 50cc will increase from ¥1,000 to ¥2,000, while those with engine capacities of 50~90cc will increase from ¥1,200 to ¥2,000. ◊ Smile Project From 11/13 (Thu) until 12/3 (Wed), figurines based on children's drawings will line part of Hakata Ekimae-dori Ave., the street that runs from Hakata Station to Canal City. Several benches will also be installed along the street to provide rest areas for citizens and visitors—just right for a relaxing stroll.
YIPEE! FOR FREE! Christmas Illuminations in Tenjin and Hakata ’Tis the season! Winter illuminations will brighten up several areas in the city center from 11/14 (Fri) until 1/13 (Tue). In Tenjin, lights will bedeck Watanabe-dori Ave., Kego Park and Kirameki-dori Ave, and in Hakata, 120 trees along Hakata Ekimae-dori Ave. and Chikushi Chuo-dori Ave. will be decorated with glistening white lights.
