ROCCASHA

In Fukuoka, the basic ingredients of motsunabe (tripe hot pot) are simple—beef tripe, cabbage and chives—so the difference lies in the soup. Roccasha, which just opened in November, uses an original soup made from a mixture of fish and chicken broths and offers two flavor options: sesame miso and soy sauce. To finish off your hot pot, owner Munetoshi Yukitomo says noodles go better with the former, while rice porridge goes better with the latter. Try pairing a glass of sakura shochu, sweet potato shochu aged in cherry barrels, on the rocks with your piping hot nabe.

六花舍

牛雜鍋是福岡當地的鄉土料理，雖然是將牛雜和高麗菜、韮菜燉煮的簡單料理方式，卻可用湯頭和配料來表現出不同風味。六花舍於今年 11 月開幕，店內有用鰹魚、雞骨加上味噌做成的胡麻味噌湯底，以及口味鮮明濃厚的醬油湯底可供選擇。店長特別推薦在胡麻味噌裡加麵或者醬油湯底煮成雜炊來做收尾。從開放式廚房直接送上桌，衛生美味又迅速。另有提供酒精濃度 20% 的櫻燒酌，吃得正熱的時候來上一杯吧！

롯카샤

후쿠오카의 향토 요리 모 츠나 베는 곱 창을 양배추, 부추와 함께 끓여내는 심플한 요리인 만큼 육수와 재료를 통해 개성을 표현하는 경우가 많다. 11월에 오픈한 롯카샤에서는 가다랑어, 방어 등을 우려낸 육수와 닭 뼈 육수를 섞은 오리지널 육수에 각종 일본 된장을 섞은 뒤 참깨로 풍미를 더한 참깨 된장과, 깔끔하면서도 감칠맛이 느껴지는 간장맛 중에서 육수를 선택할 수 있다. 마지막에 면을 먹고 싶다면 참깨 된장, 죽을 먹고 싶다면 간장맛을 추천. 오픈 키친에서 조리 후 먹기 좋은 타이밍에 테이블로 서빙된다.

Okido’s Fukuoka shop has been serving Sanuki-style udon in Maizuru since it opened 11 years ago. Sanuki udon is from Kagawa Prefecture, which boasts the highest per capita udon consumption in Japan, and for many people, Sanuki means chewy noodles. However, Makoto Kimura, who runs Okido Fukuoka, serves a surprisingly supple noodle. The secret: curing time and temperature control. It was not long after opening that he decided to offer an udon more suited to local tastes. He maintains the distinct aroma by using only select domestic flours. His motto now: “Born in Sanuki, raised in Maizuru.” The soup is a mellower blend suited to the local palate, but he still uses the same Seto Inland Sea dried baby sardines and Hokkaido kelp that the main shop uses. Although he’s been here 11 years, Kimura says he’s still trying to make his udon better. But his loyal customer base proves he's been able to succeed in the gourmet mecca that is Fukuoka.

讃岐烏龍大木戶

舞鶴地區大受歡迎的麵店「讃岐烏龍大木戶」。從烏龍麵消費量日本第一的香川縣的本店裡吸收經驗，打算用讃岐烏龍的「嚼勁」來取勝店長木村真先生，在此為您奉上一碗口感扎實卻同時帶有「柔軟」的烏龍麵。創業初期雖然想著以本家真傳的口感來直球勝負，後來卻有了「生於讃岐，育於舞鶴」的念頭。於是保有讃岐烏龍的咬勁，但口感柔軟的一碗麵就這樣誕生了。秘訣就在其熟成時間和溫度管理。當然醬汁也是選用福岡這片土地上的食材。雖然追求獨特高品質到這個地步，店長卻仍說著「還說不上完美」，如此追求卓越的精神，正是被人們所喜愛的地方。

사누키 우동 오키도

11년간 마이즈루에서 사랑받아 온 오키도. 우동 소비량 일본 1위를 자랑하는 카가와현 소재 본점의 맥을 이어온 가게인 만큼 탄탄하고 탱글탱글한 면발로 승부하 는 전통 사누키 우 동 을 선보일 것으 로 생각하기 쉽지만 오키도의 우동은 놀라울 정도로 부드럽다. 숙성 기간과 온도 관리를 통해 맛있는 면을 만들고 있으며 엄선된 일본산 밀을 사용해 향과 풍미도 살렸다고. 국물도 후쿠오카라는 지역 특성에 맞춰 부드러운 맛이지만 사용되는 재료 자체는 본점과 거의 다를 것이 없다. 훌륭한 우동을 선보이면서도 아직 완벽하다고 할 수는 없다며 겸손한 자세를 보이는 오너 키무라씨. 오키도가 미식의 도시 후쿠오카에서 오랫동안 사랑받아 온 것도 그의 존재가 있었기 때문은 아닐까.

HIV= Human Immunodeficiency Virus AIDS= Acquired Immunodeficiency Syndrome This graph shows the number of reported cases of HIV and AIDS in Japan as well as the number of HIV consultations at health centers across the country. There were 1,011 cases of HIV infection and 437 cases of AIDS reported in 2016 - a combined total of 1,448 cases. For the past 13 years, the number of cases of HIV and AIDS has been over 1,000 each year. In Fukuoka City, there were 28 cases of HIV infection in 2016 and 35 cases of AIDS - a combined total of 63, a new record high. However, these figures include only those who were tested, meaning there are more people going about their daily lives unaware that they have been infected with HIV.

性交 ( 同性或异性 ) 是感染艾滋病的最主要途径！在某种程度上大家也许都知道，艾滋病毒 (HIV) 大多数通过性行为感染。但是，如果说 “自己仅有一位性伴侣，因此没问题”之类的话，那么应该好好思考一番。即使现在相互之间是一种“固定的性伴侣”关

系，但过去只要与一个人有过性爱经历，那么，感染艾滋病的可能性就不会为零。

주 감염경로는 섹스! (이성·동성 불문) HIV의 대부분이 성행위로 감염된다는 점을 다들 인지하고 계실 겁니다. 그러나 “내 파트너는 그 사람뿐이니까 괜찮다”라고 생각하신다면 다시 한 번 잘 생각해 보셔야 하겠습니다. 지금은 서로가 ‘특정된 파트너’라도 과거에 관계를 가진 사람이 단 한 명이라도 있다면 감염될 가능성이 0% 라고는 할 수 없지 않을까요?

A condom is an effective method of prevention.

A condom provides a physical barrier that prevents HIV from entering your body. Always use a condom when having sex.

Do you use a condom correctly?

Keep condoms in a cool, dark place and make sure they are not exposed to heat or sunlight.

Check the condom’s expiry date on the packaging before use.

Do not wear two condoms at once. Using two makes them more likely to break due to increased friction.

Only testing will determine if you are infected. Your privacy will be strictly protected, so if you’re worried that you might be infected, don’t hesitate to get tested. Testing is anonymous. You will not be asked for your name or address. ■ Testing for AIDS and genital chlamydia infections is free. You will have to pay for a syphilis test (¥570). ■ No reservation required (except for same-day testing at Chuo Public Health Center on Tuesdays). ■ Results must be collected in person about 1 ~ 2 weeks after the test. Results will not be given by mail or telephone.

Focusing on “the little things,” the husband-and-wife owners Atsushi and Tomoko Sugai serve fully traceable coffee and homemade seasonal fruit syrup (with club soda or hot water). Animals created from colorful ﬂowers will be reﬂected on the 20,000 square meter long walls. Touch them and see what happens! Approach the egg-shaped objects set up amongst the trees near the castle ruins - they’ll change color and omit sound. Be mesmerized by the graceful strokes of Japanese calligraphy on the walls, too. Don’t miss this beautiful and creative event at one of Fukuoka’s most historic landmarks.
