Run by yakitori veteran Tsukasa Ito, Ibushiza uses high-grade binchotan charcoal to grill its skewers. In true Fukuoka style, your meal starts with a plate of cabbage lightly seasoned with a vinegary sauce. The roughly 20 skewers include tsukune (chicken meatballs), negima (chicken thigh and welsh onion), and sasami (fresh chicken tenderloin), all flavored with natural salt . For spice, add shichimi as you like. Another popular item is the pancetta-wrapped cherry tomatoes coated in basil sauce. A good finisher is the pork miso grilled rice ball wrapped in a shiso leaf.

ENSEI

Opened in April 2018, Ensei brings a new style of udon to the table. After running a branch of the popular udon shop Josui in Saitama for over eight years, shop manager Iwasaka moved to Fukuoka because he wanted to challenge himself in a city with a different udon culture. Ensei takes an innovative twist by using a broth made from dried baby sardines instead of the standard kelp and fish flakes. Dried baby sardines offer a unique aroma and flavor

profile, but if they are not prepared right, they can turn a soup pungent. But Iwasaka knows his stuff: he used to work at a ramen shop that used copious amounts of these sardines. He also trained in the udon mecca of Kagawa, where he learned to create wheaty yet supple handmade noodles. His unique menu includes beef broth udon, a favorite from the Saitama shop, seared pork udon, which is topped with roast pork, and a curry udon made with no broth and 16 varieties of fresh fruits and veggies.

円清

「円清」手打烏龍麵店在福岡算是獨創一格。店主岩坂先生在埼玉 8 年半經營了一間人氣烏龍麵店，為了挑戰福岡式的烏龍麵，2018 年 4 月在福岡開店。「円清」的特色是湯底只用小魚乾熬煮成，不加昆布或其他魚節。有多年拉麵烹調經驗，店主對於如何單用小魚乾熬出獨特風味的湯底頗有研究。此外，在讃岐學了一手好手藝，店主的烏龍麵不但帶有小麥味道還保有特別的口感。菜單的主打都是店主的獨創，如從在埼玉時期就受歡迎的肉汁沾麵、加了烘烤叉燒的烘烤肉烏龍麵（下午 1 點開始才有），還有不加任何高湯、使用 16 種果菜製作而成的濃郁香醇的咖哩烏龍麵。

엔세이

사이타마에서 8년 반 동안 인기를 떨쳤던 우동 전문점 죠스이를 접고 2018년 4월에 후쿠오카로 이전해 온 수타 우 동 엔세이. 후 쿠오 카의 우동과는 달리 니보시(멸치 등의 작은 생선을 삶아서 말린 것)로만 육수를 우려낸다. 니보시는 독특한 향과 감칠맛을 자랑하나 자칫하면 아린 맛이나 쓴맛이 나기도. 하지만 니보시를 많이 사용하는 라멘 전문점에서부터 요식업 경험을 쌓기 시작한 오너 이와사카씨는 니보시의 특징을 잘 알고 있어 맛있는 육수를 뽑아낸다. 한편 우동의 메카 사누키에서 배운 수타면에서는 밀의 풍미가 강하게 느껴지며 식감은 놀라울 정도로 부드럽다. 사이타마 시절부터 명물이었던 육즙 츠케 우동을 중심으로 아부리 니쿠 우동(13시 이후 한정), 카레 우동 등을 제공한다.

12/2 (Sun.) OYAMAZUMI SHRINE OSHIROI FESTIVAL

This 300-year-old festival is held annually to give thanks for an abundant harvest and pray for next year’s crop. To honor the shrine god who is believed to be a woman, worshippers grind fresh grains of rice into powder and paint their faces white. This is the only festival of its kind in Japan! 白粉祭典

有三百年歷史的朝倉市大山祗神社的白粉祭典。祭典的源由是坐鎮大山祗神社的女神在化妝時會用白粉塗在臉上。當地居民為了感謝女神的保佑讓大家無病無災並年年五穀豐收，每年舉行祭典時會用新米磨成粉再與水攪拌在一起抹在臉上。這獨特的當地風俗，千萬別錯過哦。

오시로이 축제

오야마즈미 신사의 300년 전통을 자랑하는 오시로이 축제. 햅쌀을 빻아 만든 가루를 물에 풀어 얼굴에 새하얗게 칠하는데 이것이 얼마나 잘 묻었는지를 보고 내년의 작황을 점치며 풍작을 기원한다. 일본 내에서도 좀처럼 찾아보기 힘든 풍습으로 유명하다.

Atago Shrine holds this festival for visitors to purify their bodies and ward off misfortune. Write a wish on a gomagi (wooden stick, ¥500), throw it into the bonfire, and then walk barefoot across burning coals. This festival is the start of the shrine’s New Year celebrations and all are invited to participate! 愛宕神社火祭典大柴燈護摩供

大柴燈護摩供是愛宕神社年尾的最大活動。把願望寫在「護摩木 ( 御天供 ¥500)」上，投入御神火裡以實現願望。在燃燒的炭火上赤腳行走，是消災解難、清淨身心的儀式。此活動不但是愛宕神社迎接正月的重大節目，更歡迎大眾參加一起淨身迎接新的一年。

This graph shows the number of reported cases of HIV and AIDS in Japan as well as the number of HIV consultations at health centers across the country. There were 976 cases of HIV infection and 413 cases of AIDS reported in 2017 - a combined total of 1,389 cases. For the past 14 years, the number of cases of HIV and AIDS has been over 1,000 each year. In Fukuoka City, there were 39 cases of HIV infection in 2017 and 15 cases of AIDS - a combined total of 54. However, these figures include only those who were tested, meaning there are more people going about their daily lives unaware that they have been infected with HIV.

Testing methods and treatment technology have improved over the years. But still, early detection is key to successful treatment. Anonymous testing for HIV and STDs is available at every health center in Fukuoka City.

HIMESHIMA - PRINCESS ISLAND

Mention Itoshima and people unfamiliar with the area might assume you’re referring to an island called “Ito.” While that’s not the case, there are some islands within Itoshima and Himeshima (Princess Island) is the biggest. Currently just 175 people live there and most earn a living from fishing. The island measures 3.8 kilometers in circumference and there’s a paved path around about two-thirds of it. but be careful of the tide! What’s there to do and see? If you’re an angler, then fish! There is at least one minshuku (inn) offering overnight accommodation, but otherwise Himeshima is just a nice place to putter around and enjoy the view of Itoshima from afar. Another attraction is the cabin in which the poet Botoni Nomura was exiled to in the late Edo period. She was exiled there for her political activity, but was rescued within a year by supporters. The other attraction on the island is the cats! The island is filled with

friendly furry felines, and it’s just a matter of time until cat-loving tourists discover them. Photographing the cats is fine, but please do not feed them! Himeshima is just a 16-minute ride on a comfortable boat from Kishi Port. Stand outside on the boat’s stern and catch some sea spray and magnificent views! • Boat Service between Kishi Port and Himeshima Port. After renting a plot of land for years to grow vegetables for their Italian restaurant in Fukuoka, Chef Hiroshi Fujita and his wife Hiroko moved their kitchen and home to Itoshima. They had become hooked and wanted the full countryside experience, and now they offer that to their guests. Open for lunch and dinner, fabulous Italian dishes made with vegetables fresh from their fields are offered a la carte or as full course meals. Their hens provide the eggs, milk is from their goat, fish from the nearby fishermen, and gibier from the local hunter. On the second floor there are two tastefully appointed and spacious rooms with ensuite baths and views of the valley and distant seaside. Guests interested in getting a closer look or connection to their food are welcome to pick fruit or help with vegetable planting. The Fujitas love to give tours of their grounds and introduce their animals. There might not be a better way to experiences the charms and flavors of Itoshima.
