JUJUAN

Jujuan has created an original dish called seiro mabushi. Drawing hints from two types of steamed eel dishes, Jujuan uses brand name meat instead of eel. The Kuroge Wagyu beef comes served over rice in a deep bowl and topped with a tangy sauce. First, enjoy a piece of the umami-packed soft meat. Next, mix in the toppings to your liking. We recommend the simmered seasoned beef and the Japanese wild pepper. Finally, pour in the tea-based fish broth and finish the remainder ochazuke style. High-grade Hanamidori chicken and Kagoshima Kurobuta pork are also available.

Jujuan

坐落在櫛田神社附近的 Jujuan 是一間由古民屋改裝而成的原創蒸籠料理餐廳。淋上醬料的飯鋪上滿滿的極上黑毛和牛一起蒸，熱氣騰騰的端上桌。這一品三吃的第一種吃法是把肉飯盛在飯碗裡享用原味，然後再從 6 種藥味中選擇喜歡的藥味拌著吃。味道濃郁的牛肉與清爽辣味的有馬山椒特別搭配。最後，淋上以烘焙茶與多種食材熬成的湯頭以茶泡飯方式吃。和牛以外還有博多名產華味雞及鹿兒島的黑豬肉可以選擇。

YOKABAN NY Stephen Lyman (right), a Japanese government recognized shochu ambassador from New York, recently launched a company in Fukuoka to export craft shochu (Japan’s indigenous spirit) to America. Brian Dorfman (left), also from New York, imports craft wines, ciders, beer, and spirits from New York’s Finger Lakes. When the two met the synergy was undeniable, and Yokaban NY, a tachinomi (standing bar) in the back of New York Wines was built. Currently, they serve shochu from some of the smallest distilleries in Kyushu

and a traditional awamori from a 78-yearold one-armed master distiller in Okinawa for ¥500 ~ ¥700. For nibbles, they offer Kyushu specialty otsumami (snacks) for ¥100 ~ ¥600. As for wines, Brian offers Riesling, Cabernet Franc, Chardonnay and Pinot Noir as well as ciders, spirits, cans of IPA and a Milk Stout. Like what you tasted? Bottles of everything are available for takeout. Free live music every Friday night and the art exhibits lining the walls are two more reasons to visit Yokaban!

In Sep. 2018, chicken and soy sauce ramen purveyor Shinasoba Tsukiya opened a new tonkotsu ramen restaurant, Buta Soba Tsukiya. However the soup is not the milky white kind you’re used to seeing in Fukuoka; it’s transparent! Without letting it boil, the soup is slowly simmered and the film painstakingly removed, leaving behind a bold, pure pork flavor with no odor. The flavor is enhanced because the pork belly used to make the roast pork is cooked in the same pot. Some fatback is added to the soup right before it is served to ensure a bold yet light soup. The thin, straight noodles, which are specially ordered, are made from 100% Fukuokagrown ramen flour. The toppings of green onions and kabosu citrus are served separately because you should try the ramen as is first. The menu consists of just two dishes: buta soba (a.k.a. ramen) and butabuta soba (ramen with extra roast pork). There are also six sides to choose from, including steamed dumplings.

以雞骨高湯為主的人氣拉麵 Shinasoba Tsukiya 在 2018 年 9 月開設了第二品牌店 Buta Soba Tsukiya。這裏不使用福岡的經典濃白豚骨湯底，而是用透明的豚骨湯。以溫火熬成的高湯，不但沒有雜味，還保存豬肉特有的香味。店長富永先生解釋加強口味的秘訣在於把做成叉燒肉的五花肉一起放入鍋裡煮。此外，拉麵上桌前還會加上一點豬背脂，使清淡的湯頭口味更濃郁香醇。配上福岡產的小麥製作而成的細麵，不但有咬勁，跟清湯更是絕配。另外可以加上青蔥和青檸增加風味。這裏只有兩種拉麵可以選擇，豚拉麵，或是叉燒增量的豚拉麵。小菜有特大燒賣或番茄加醃姜等 6 種可以選擇。

닭 육수 베이스의 쇼유 라멘이 인기 메뉴인 시나소바 츠키야의 세컨드 브랜드인 부타소바 츠키야. 일반적인 유백색의 톤코츠 라멘이 아닌 투명한 톤코츠 육수가 이곳의 명물이다. 펄펄 끓이지 않은 상태로 거품을 걷어가며 푹 고아 낸 육수는 잡내가 덜한데 여기에 차슈로 쓸 삼겹살을 같은 냄비에서 익혀 감칠맛을 더한다고. 면은 후쿠오카현산 라무기를 100% 사 용해 만든 곧게 뻗은 면. 담백한 육수에 맞춰 밀가루의 향과 풍미가 더욱 돋보이도록 제면소에 특별 주문한 것이다. 라멘 메뉴는 부타소바와 차슈가 더 많이 들어간 부타부타소바 두 가지. 추가로 샤오마이, 데쳐서 껍질을 깐 토마토를 가리 (초생강)와 섞은 가리토마토 등 총 6 가지 안주 메뉴도 준비되어 있다.

For over 500 years, two teams of loincloth-clad men have braved the winter cold to scramble for possession of an 8 kg wooden ball in this unique New Year’s ritual. Victory for the Beach Team is said to ensure a plentiful catch for the coming year, while victory for the Land Team brings a bountiful harvest. 玉取祭

用來預測博多運勢的新年慶典 -「奪球祭」有 500 年以上歷史並且廣受歡迎。分成海灘和陸地兩組，競奪直徑 28cm 重 8kg 的木球，朝向本宮展開 250m 的激烈爭奪戰。傳說摸到球的人可以消災解厄並被賜予好運；而最後奪得寶球的隊伍就能大豐收。

This 1,600-year-old tsuina (ceremony to exorcise evil spirits) is one of Japan’s three main fire festivals. After being guarded for seven days, the “devil fire” is transferred to six enormous, 13 m torches, which are then carried around the grounds by men in loincloths. 被指定為日本無形文化財產的鬼夜火祭有 1600 多年歷史，是三大火祭慶典之一。每支直徑寬 1m、總長 13m 的六支巨大營火柱直上天際的火燄，加上約 400 人圍在其周圍繞行的場景可說是非常壯觀。據說掉到參觀者身上的大松明營火餘灰可以為信眾防病袪災。

다이젠지 타마타레구 오니요

약 1600년에 달하는 전통을 자랑하며 일본의 중요무형민속문화재인 동시에 일본 3대 불 축제 중 하나인 오니요. 지름 1m, 총 길이 약 13m 에 달하는 횃불 6개가 점화되며 장관을 이룬다. 이 횃불의 불똥을 맞으면 운이 트이고 무병장수한다는 속설이 있다.

A New Year custom in which people visit the small Sarutahiko Shrine from early morning to line up and buy monkey masks handmade by Hakata ningyo doll makers. 그 해의 첫 경신(庚申)일에 열리는 하츠코우신(初庚申) 축제. 하카타 인형 장인의 수제 원숭이 가면을 손에 넣기 위해 많은 참배객들이 방문한다. 이 가면을 입구에 걸어두며 복이 들어오기를 바라는 풍습이 있다. 작은 신사가 이날만큼은 많은 사람으로 붐빌 예정.

Como Es is a music cafe and bar that recently opened in Imaizumi. Inside the renovated 50-year-old house, shop manager Yosuku Nishida's record collection of 20,000-plus LPs features prominently. There are counter seats next to the DJ booth, which pumps music from ElectroVoice and Klipsch speakers, and tables upstairs if you need more room to chill. During the daytime, you can enjoy Canezees donuts and hand-drip coffee roasted by Coffee County. At night, Nishida mans the DJ booth as the space transforms into a bar. Music events and various workshops are held periodically.

Five years ago Hiroshi Nagahama moved his family and bread shop (Sana Bakery) from Tokyo to Nijo, Itoshima to be closer to the sea and countryside. Sana is Spanish for health, so it’s not surprising to learn Nagahama is fussy about ingredients. He uses only domestic wheat flour and no oil, margarine or butter. His “no oil” policy made us wonder if his bread might be dry, but they aren’t; they taste great, have plenty of chew and your stomach will thank you. Wanting to offer an eat-in experience, in September he opened Sandwich House, less than 10 minutes away by car along Imajuku Bypass 202 towards Karatsu. From inside the diner, you can gaze at the sea, Himeshima, and on a clear day, even Iki Island in the distance. They offer a variety of hot and crispy panini, New York style bagel, French and toasted sandwiches. From a classic Peanut Butter and Jam to a Honey

KENJI ODA’S OHAJIKI

The new year is approaching and we could all use some good luck, right? Well, Kenji Oda, a forty-year veteran Hakata doll maker with a studio and gallery in Maebaru might be able to help. Every year just in time for hatsumode (first shrine visit of the year) he produces a limited production of cute and collectible decorations known as ohajiki. These tiny handmade and painted objects were once used in children's games. Oda’s objects include six kyodo gangu (common

toys) such as spinning tops and drums as well as the lucky god of the coming year (Benzaiten for 2019).
