After honing his chops in Tokyo and France, Kazuma Kawase moved to Fukuoka in 2014 to open Yorgo, where he turns ordinary ingredients into exquisite a la carte dishes. The appetizers, such as the cured mackerel fillet with kumquat and carrot la paix, feature seasonal fruits, Kawase’s forte. But the star of the menu is the rare beef filet cutlet made from grass-fed Australian beef served with an old-fashioned Worchester sauce. Crispy on the outside, ruby-red and juicy on the inside! Choose from a selection of mostly natural wines and try the fondant au chocolat, which he mastered in France, for dessert. Welcome to one of Fukuoka’s tastiest trendsetters.

In December 2017, Hakata Ozora was opened by Yasuki Matsumura, a disciple of Ginza Ozora—a tan tan men shop with roots in the long-standing Western-style restaurant Candle in Tokyo's posh Ginza district. The soup looks innocently creamy, but be aware, it packs plenty of punch! “Ozora turned tan tan men on its head,” says Matsumura. The rich soup is made from a mixture of chicken bone broth and a secret-recipe sesame paste. The “spicy hot” flavor is from the Sichuan pepper, while the “spicy aromatic” flavor is courtesy of the handmade chili oil. One taste of this combination and you’ll be hooked. The coriander and peanuts add extra flavor and texture to the mix. If you’re not a fan of spicy food, the staff can turn down the heat. Or for a different meal altogether, try their soupless sesame tan tan men, developed especially for the Hakata shop. Ordering is a breeze with the ticket machine and the shop is conveniently located behind the Hotel New Otani.

The main venue is filled with attractions including stand-up bars, a taiko drum performance, a sake-themed folk song rendition, and food stalls. And don’t miss out on the limited edition sake from the eight participating breweries! Take the free shuttle bus between breweries and enjoy the scenery as you sip Jojima’s best sake!

Ensa specializes in a unique combination of Japanese sweets and liquor. Owners Nobuaki and Chika Yamashita serve up a delicious ichigo daifuku, a juicy strawberry wrapped in subtly sweet bean paste, and a cinnamony apple ukishima (steamed cake), based on a recipe handed down from Chika’s father, minus dairy products. The kurohon warabimochi is also popular. The gelatinous mochi balls are made only after you order them to ensure the best flavor and texture. This relaxing café is one of only a few places in town where you can enjoy a drink during the day, with Japanese sweets to boot!

ITOSHIMA STRAWBERRY PICKING IN ITOSHIMA
Well known for high-quality vegetables and fresh produce, Itoshima also has plenty of strawberry farms. At three of them, you can pick your own berries, while at some others you can buy by the box. The season runs between January and early May. It’s fun for families, a date or a dessert after visiting Itoshima’s oyster huts. Here are two farms.

Yoshitaka Kanki has been growing strawberries here for six years and is proud to use organic fertilizers developed by Kyushu University. Ten new bicycles have been added to the City’s rental fleet (six crossbikes and four regular-size electric pedal-assist bikes). These bikes can be rented at two new locations along Itoshima’s Sunset Road: Honey Coffee at the 4-way intersection in Nogita and at Itoshima Picnic Village near Keya no Oto. Three years ago Keita Yamada and his wife Saori moved from Hokkaido to Itoshima with the dream of opening a cafe and roasting beans. On Jan. 11 they proudly opened the doors to Mori to Coffee, a customized trailer containing two roasting machines and just enough space for a few customers to sit and sip freshly made drip coffee. Alternatively, relax campsite style on their garden covered with woodchips. They roast 11 varieties of beans of which 3 or 4 are kept in stock.
