RISTORANTE INCROCI

Last December, Ristorante Incroci opened opposite the tree-lined river from ACROS Fukuoka as a higher-end version of the popular Osteria Incroci in Daimyo. Owner-chef Hiroshi Murayama’s specialty is homemade pasta taglierini. The firm, thin noodles come topped with a decadent mushroom sauce and shaved black truffles. Another exquisite dish is the white asparagus seasoned with lemon butter and a light sauce of egg yolks and white wine. Try a lunch or dinner course, or sample from the a la carte menu. And with cherry blossom season near, the terrace seats can’t be beaten.

다이묘에서 10년에 걸쳐 사랑받아온 인크로치의 맛을 한 단계 높아진 버전으로 니시나카스 인크로치에서도 만나볼 수 있다. 제철 재료를 적극적으로 사용하는 오너 셰프 무라야마씨의 간판 요리는 수제 생 파스타 탈리에리니. 쫀득한 얇은 면발에 버섯을 듬뿍 넣은 소스를 버무리고 블랙 트러플을 갈아 올린 메뉴는 많은 단골을 사로잡았다. 런치 및 디너 코스요리도 좋고 원하는 메뉴를 아라카르트 형식으로 즐길 수도 있다. 봄에는 벚꽃과 녹음이 우거진 공원을 향해 난 테라스석에서 스푸만테와 함께 여유롭고 평화로운 한 때를 즐겨보시길.

MASAMUNE KEISEI DAIREIMEN

In Jan. 2019, Namio Nakayama, who lived in Jixi, China until the age of 19, and his wife Liu Yang opened Masamune Keisei Daireimen. Their specialty is authentic Jixi-style noodles, which come in two varieties: daoxiao mian (“knifecut noodles”) and leng mian (“Koreanstyle cold noodles”). The noodles are homemade, but the robot cutter for the daoxiao mian is sure to catch your eye. Nakayama says such machines are commonplace in China to ensure uniform thickness, but his is the only one in Kyushu. The noodles come in a flavorful soup made from beef bouillon and red chili peppers, with a topping of cilantro. Although they aren’t as spicy as the daoxiao mian in China, they are authentic in every other way. The bouncy, thin noodles used for the leng mian pair well with the slightly acidic soup, which is hardly spicy at all. The a la carte menu also features many Jixi favorites, like the spicy beef stir-fry made with homemade chili oil.

마사무네 케이세이다이레이멘

19살 때까지 중국 동북에 위치한 지시시(鶏西市)에 살았던 오너 나카야마씨가 부인 리우 양씨와 함께 2019년 1월에 오픈한 가게로 그가 유소년기부터 즐겨 먹던 지시시의 면 요리인 도삭면과 중국식 냉면이 이곳의 2대 간판 메뉴다. 면은 모두 자가제면으로 도삭면은 두께와 굵기를 균일하게 유지하기 위해 로봇형 기계로 잘라낸다. 이 면에 소고기를 푹 끓여낸 후 고추 등을 넣어 매콤하게 마무리한 육수를 붓고 고수를 얹어 내는데 본토만큼 맵지는 않지만 지시시 사람들도 그 맛을 인정했다고. 쫄깃함을 자랑하는 얇은 면발이 특징인 냉면은 매운맛이 거의 없고 적당한 산미의 육수가 어우러진 담백한 맛이다. 현지인들처럼 면 요리에 각종 사이드 디시를 곁들여 즐겨보자.

正宗雞西大冷麵

到十九歲為止一直居住在中國東北雞西市的店主中山波多先生與妻子劉洋女士在 2019 年 1 月在福岡開了一間麵店。以雞西市家喻戶曉的刀削麵及冷麵為主打，使用專門的刀削麵機器自製麵條，削麵的過程可說是相當吸引矚目。此機器可切出剛好的厚度與寬度，在中國算是普遍的削麵機，但在九州這可是獨一無二的。做好的麵配上用牛肉熬成的湯頭加上辣椒、灑上香菜，雖然辣度做了些調整，但對於雞西人來說還是相當道地的。至於冷麵，使用帶有咬勁的細麵，湯頭不辣，反而帶點微酸，口味清淡。在這裡享用一碗麵之餘，再配上幾道道地的雞西小菜吧。

ODORU NIKU DANGO

Amid the rising popularity of standing bars in Fukuoka, Odoru Niku Dango opened in Kego this January. As the name implies, the specialty here is homemade niku dango (meatballs made from minced beef and pork), but the menu includes many other simple savory dishes that go great with a drink, like the mustard infused corned beef and potatoes. Each dish serves one and is reasonably priced at ¥400 ~ ¥600. Owner Kenzaburo Sakata busily tends to customers in the spacious shop, which makes for a nice pit stop, whether you’re on your own or meeting someone for, before or after dinner.

부담 없이 들러 선 채로 가볍게 한잔할 수 있는 선술집. 격식이나 매너에 구애받지 않고 편하게 술과 안주를 즐길 수 있어 최근 후쿠오카에서도 인기몰이 중이다. 올해 1월에 문을 연 오도루 니쿠단고도 그중 하나. 간판 메뉴인 고기 완자 외에도 콘비프와 감자를 머스타드에 버무린 감자 샐러드, 오이 절임 등 심플하면서도 정성껏 만들어진 메뉴를 제공한다. 혼자라도 여러 메뉴를 시켜도 될 정도의 양이라 부담 없고 400~600엔으로 리즈너블한 가격대도 매력적. 약속 장소로도 식후 2차 장소로도 부담 없이 이용할 수 있다.

Oto. It’s a huge cave with columned walls of pitch-black hexagonal and octagonal rocks. Measuring 64 meters high and 90 meters deep, it faces the rough waves of the Genkai Sea and it’s one of Japan’s three largest basalt (volcanic rock) caves. Between mid-March and November you

Kaori’s cakes look good. So good, you just know they're going to be scrumptious. Born in Kitakyushu, she spent a few years in Australia’s Gold Coast and then ran her own cafe in Kyoto before returning to Kyushu to open shop in Itoshima. Noticing how her family and friends loved sweets, and out of concern for their health, she perfected recipes for ‘crazy cakes’, cakes made without butter, eggs, and dairy. These account for about half of her lineup. Not only are they healthier but they’re guiltfree too! Kaori is also a coffee connoisseur. She pairs desserts to specific blends of organic, fair trade coffee which she also sells inside her shop. For her popular Banana Cake, it’s definitely Ethiopian. This train connects bustling Tenjin to Chikugo, a mostly rural area of southern Fukuoka Prefecture known for its farm produce and traditional craftworks, both well represented in the train’s furnishings and menu. COTO COTO TRAIN

This beautifully renovated diesel train rolls unhurriedly through the picturesque rural backcountry of Chikuho, a former coal producing area. Inside the train designed by Eiji Mitooka (of JR Kyushu’s Seven Stars fame), local materials and crafts including Okawa lattice are used throughout. The Japanese-French fusion meal is prepared under the direction of Tsuyoshi Fukuyama, owner-chef of La Maison de la Nature Goh in Fukuoka (one of Asia’s Top 50 restaurants). Using seasonal ingredients and served in local Aganoyaki ceramics, the food is not only delicious but a worthy match to the lovely scenery.

Aru Ressha (“a certain train”) is also known as JR Kyushu Sweet Train because passengers are served a five-course meal beginning with a savory gourmet bento made with ingredients from around Kyushu, followed by four elaborate desserts produced by Yoshihiro Narisawa (Narisawa, Tokyo). Currently, the train runs between Sasebo and Nagasaki stations, but from May there will be a new route and refreshed menu. With fine beverages and top-class service inside a gorgeous interior made from mostly locally sourced natural materials, you’ll wish the ride never ends!

VISIT IKI So much to see and do!

Are you the active type? Then Iki Island is for you! Spring is a great time to go, and one must-visit place is the uninhabited island, Tatsunoshima, located just off the northern coast of Iki. Join a 40-minute boat cruise (Mar. 21 ~ Nov. 30) around the island or land on the shore to enjoy hiking and swimming. Sparkling sandy beaches, crystal clear waters, and impressive views await!
