elcome to the August edition of Get It magazine - my first at the helm as Editor since taking over from the lovely Elizabeth Campbell. As the new girl around here, I’m super excited and buzzing with ideas for the team and I to continue to bring you everything you love about Get It! Now to tell you a bit about me. I started working in media 16 years ago – winning three national journalism awards by the age of 21 – and absolutely adore working in magazines. I’ve worked as a newspaper journalist and magazine editor across various publications and also have a passion for the digital space. I’ve interviewed or rubbed shoulders with everyone from small business owners and international business executives, to politicians and celebs (hello Hugh Grant and Chris Martin!) and have abseiled down cliffs and suffered through international business class travel (gah, I know!) in the name of work. I’m a mum of four young children (including toddler twins who keep my husband and I on our toes) and love living on the Gold Coast after having moved here five years ago from Sydney. I look forward to getting to know many of our loyal readers and advertisers and would love to hear from you regarding anything you’d love to see in a future edition. This month, we feature the delightful Wendy Kingston, Nine Gold Coast News newsreader and journalist, and a busy mum of three children under the age of four – the youngest is seven months. As part of our Luxe for Less special we chat to local fashion designer Leina Broughton and Sea FM radio announcer Bella Frizza. They’ve revealed their top picks on the Coast to score the best bang for your buck. A Gold Coast mother-daughter duo reveal how they’ve managed to travel the world on luxury cruise liners and have visited some fabulous destinations – including an overnight stay in a castle, while still managing to watch their pennies. We also welcome our new Get It columnist Anna Davies. With her sassy style and quick wit she’ll talk about everything that’s on her mind. GET TO THE POINT with Anna Davies

He loves me? Who cares New Get it columnist Anna Davies will grace our pages each month with her sassy style and quick wit to talk about everything that’s on her mind. Join her as she gets to the point e loves me, he loves me not. Since a young age, we’ve been taught to sit and wait around for a knight in shining armour. We’ve all spent hours picking petals off flowers as a cold-blooded sacrifice to the gods of love. But let’s get real ladies, it’s less of a sacrifice to the gods of love and more a sacrifice to the goddess of repressed emotion. As a strong contender for the title of ‘Goddess of Repressed Emotion’ let me tell you this, it will come out one way or another – and it wont be pretty. As it stands, I love my family, my dog and Netflix. “Why is this cold-hearted idiot writing a column on love?” you ask. Fair enough, my heart is as black as night. But for the record, I’ve not always been a cold-hearted shewitch. On the rare occasion that my ice-heart thaws, my natural instinct is to repress my feelings and from past experience, my repressed emotion comes out in a plethora of concerning ways. Whether it’s plotting to marry my dog, or whispering those three magic words into my boyfriend’s unconscious (and unsuspecting) ear - the more I’ve bottled up my romantic emotions, the creepier they get when unleashed on the world. On both of these occasions, things turned out surprisingly OK, but they really shouldn’t have. So why do I do it? Why do I bottle it up only to assault some poor unsuspecting victim with a tidal wave of feelings? Why do I let my emotions stew to the point of insanity? It’s fair to say that subtlety is not my forte, but it’s more than that. It’s the fear of rejection. You know, the fear you’ll be left alone, listening to Adele songs and eating your way into oblivion. That old chestnut. In the past I’ve been lost in a sea of red wine and takeout Chinese, it sounds good on paper, but one day you wake up to find yourself neck deep in dim sims and regret. So instead of diving in head first, I tend to sit and wait for a man to make a move, just like I’ve been told to do my whole life. But here’s something I’ve come to realise since I decided to write my two cents on love - waiting for a man to do something is like waiting for a thong to sit comfortably. It’s a rare occasion and you shouldn’t really count on it. After much red wine, embarrassment and careful consideration I’ve decided to make a change. Here’s my advice. Instead of obsessing about what he might be feeling (and repressing your own feelings in the process) think about how you’re feeling - and express it. Don’t wait for the thong to sit right, take the thong off and throw it in his face (that’ll get his attention). In all seriousness, it will either get the ball rolling or prevent the ball from flattening you in an Indiana Jones type situation. Either way, you’re a winner.

Nine Gold Coast News presenter and journalist Wendy Kingston sits down with Get It’s new Editor Lauren Paris to discuss all things GC, her love of coffee, babies and work itting by the window at a Palm Beach café, wearing an army green jacket over a “so Gold Coast” shirt featuring stripes and sequins, Wendy Kingston fits in with the locals. She’s enjoying a coffee and skimming over a newspaper while playing with her baby girl who’s perched in a high chair beside her. Up close, Wendy’s warm and friendly demeanour is endearing and her professional tone sets her apart from the rest. With more than 16 years of experience working in the media under her belt, it’s no surprise that Wendy is easy to get along with and is as pleasant in real life as she is on screen. Effortlessly glamorous, she’s intelligent, charming and graceful. After working from Channel Nine’s Sydney newsroom for 11 years, where she presented afternoon and evening bulletins as well as appearances on the Weekend Today show, Wendy has spent the last few months on maternity leave with her three children – baby Mia, 7 months, Josh, 4, and Sam, 2. The 35-year-old is now gracing our screens five nights a week on Nine Gold Coast News, alongside Bruce Paige, to present the 5.30pm bulletin. “This opportunity was too good to refuse,” Wendy says.“It’s an afternoon shift that suits my family. With three little ones, I wanted to ensure that I can be a mum first and put my family first. I’ve been really fortunate as the network has been really accommodating and flexible.” Wendy’s new colleagues have welcomed her with open arms and they’re settling in well to the new-look studio. Prior to going on maternity leave to have baby Mia, Wendy was commuting to Sydney to work on the Weekend Today show and other Nine programs such as Chatroom and the Afternoon Edition. “After finishing Weekend Today, I’d drive straight to the airport and be back home around lunch time on Sunday. I didn’t mess about. It was a quick trip,” she says. Wendy appears to have mastered the work-life juggle that is a challenge for many families. With her stockbroker husband David working full time, the couple have childcare arrangements in place for the afternoons while Wendy is now back at work. “I head into work, in Surfers Paradise, mid-afternoon,” she says. With baby Mia still being breastfed and not so keen on any alternatives, Wendy manages to be home in time to read the children stories and get the kids off to bed. Wendy says her strong support network, including family members who live nearby, are her saviour. Coffee also rates highly. “My parents bought me such a good coffee machine. Now August 2016

that I have three children, I have a coffee a day per child. So three coffees a day. I know, that’s so bad. I used to only have one. But I cannot survive without coffee,” she says. “Wendy’s a huge fan of the coffee at Espresso Moto Café in Palm Beach where the interview took place. “This place makes the best coffee. I buy the beans because they do such good coffee!” Her biggest tip for others also trying to juggle it all:“Just realising that you can’t do it all, all of the time. “Sometimes you finish the day thinking, ‘Oh, I mastered that’. And then on other days, you may end up feeling like a complete failure.” With so much going on, Wendy says she loves taking her dog for a walk and getting some fresh air and the odd coffee or dinner with friends from her time at Somerset College and Bond University. At other times, she can be seen pushing around a double pram with a scooter on the back. “We love getting out and about on the Coast. I’ve been hitting the theme parks recently as part of our weekly ‘Adventure Tuesdays’ with the kids,” Wendy says. “We also love going to Byron – we recently spent a weekend at Broken Head in little cabins. We also love The Farm and day trips to Hastings Point,” she says.

Most of the world’s most famous brands started out because its founder had a passion that grew from a humble kitchen, garage or bedroom into a hugely profitable business. Examples include Microsoft, KFC and Boost Juice just to name a few. Think about it. Do you enjoy photography, repairing cars, building and inventing cool gadgets, baking cupcakes, designing and sewing dresses, playing the piano and so on? Now imagine if your skills and this hobby of yours could be nurtured to become a business, one that could eventually see you supplement, or maybe even replace your day job income. Online surveys like SurveyMonkey are great for getting quick feedback. Timeframe assessment: Are you in the right time and place to be offering your product and/or service? Is the market ready for what you are offering, is the timing right? How are your time commitments for making this viable? Will it support your lifestyle and help you escape the rat race? Once you know where you stand by doing the above assessments, you are ready to take your hobby to the next level. The following ideas can help you to monetise your hobby and maximise your potential. Teach others the ‘art of doing’ what you do Whether you enjoy teaching the piano, how to play tennis or how to make clay pots, there are many ways you can do this. You could take the formal approach, get accredited, publish a book, speak at 13

industry events, become a local expert teaching in colleges, or run your own private classes and workshops. Be an ‘evangelist’ by speaking, writing and promoting your hobby/industry For example, if you love baking and you also believe in eating healthy, you could devote your time and energy into educating people on ways to bake with a focus on choosing healthy ingredients. That way you’d be satisfying both your passions. You could interview chefs who also resonate with your philosophy, create your own recipe books, have your own website, videos and blogs. Teach others the ‘business’ of your hobby You can impact others who share the same passion as you by teaching them ways to turn their hobby into a viable business and thereby be an instrument of change in their lives. For example, you may be a great piano player and enjoy teaching as well. Using both these skills you could help teach up and coming piano enthusiasts how to setup and run their own piano teaching classes and get them on the path to success. Whether it is in a home office or a high flying corporate office, there are people slowly dying behind their desk. Dying of a broken heart from missed opportunities. Wasting away because the work is more important than their health … and sitting for longer than is healthy id you know sitting for eight hours or more and living a sedentary life is putting more and more of us at risk of cancer, cardiovascular diseases, type 2 diabetes and an early death. Nicole van Hattem is on a mission to end this epidemic of death by desk, surviving beyond the 9 to 5. For Nicole, the latest stats on the health impact of sedentary life are a concern; many workers spend 76 per cent of their time sitting – that’s approximately six hours a day. As a former corporate high flyer, she knows what it is like to give your all to the organisation you work for. Yet, despite loving what she did, Nicole found herself sick, stressed and spent. “I started my career fully dialled up. I was fit, healthy and in love with my work and my life. I knew what I wanted and where I was going,” she says. “I was at the top of my game, working for big name organisations. My life was hectic and filled with excitement but I did not stop to ask myself the important questions about my health and relationships. “What I now realise is by filling my time with work I was really distracting myself from myself. But as you look at Nicole’s career and life, it is easy to be blown away by her achievements and adventures. She has worked at the highest levels of business side by side with powerful CEOs, walked the hallways of palaces, rubbing shoulders with royalty and is one of a minority of Australian civilians to receive a Chief of Defence Force Commendation, for her service in the Middle East. Yet, she looks back on her life and realises she was slowly dying. “Here I was at the top of my career and I was not happy, I was not thriving, just barely surviving,” she said. “I decided something had to change. So with my girlfriend, we went off to a weeklong detox health retreat. It was a hard slog for me to let go. By the end of the retreat I was blown away by how good food tasted, how beautiful the world was and how everything looked clear and fresh. “Even me. For the first time, in a long time, I felt totally dialled up. “I had energy. Every cell was nourished. Alive, de-stressed and vibrant. I felt phenomenal. Things looked different.” Nicole rang her boss, mentor and close friend. Eager to share her experiences with him, he told her to tell him all about it when she saw him the next day. 14

Sadly, at 49, her boss died the next morning from a heart attack. His life spent dedicated to his work, eating poorly and not exercising had taken its toll. “Our work life was long hours, bad food, alcohol and cigarettes,” she says. “I did not get to tell him what I had learnt so my drive is to have that conversation with everyone.” Nicole quit her job, giving up the corporate world and trained as a health coach. Based in the Middle East, Nicole cemented her place as a key influencer in the health and wellness space, driving significant change in many organisations. “I now work with people as a holistic success coach, guiding them towards a life that serves them,” she says. “I want to serve those people in suits; the people behind the desk who may feel stuck or know something has to change. This Gold Coast mother and daughter duo have managed to see the world while enjoying luxury cruises, overnight stays in castles and experiences some of us dream about

or the past five years, Rebecca Thomsen and Jacqui Sault have spent a few months of each year living the high life. Mixing with some seriously wealthy people, happy to fork out many tens of thousands of dollars to travel aboard luxury cruise liners whilst visiting some of the world’s most desired destinations, the pair has managed to tick off many items from their bucket list, while still managing to watch their pennies. “Most of the world is pretty expensive to travel around. We've managed to travel to so much of the world for a fraction of the price,” Rebecca says. The pair has just returned from a two-month working holiday in Europe. They spent time in Monaco, around the same time as the Grand Prix, and even managed to view part of the race, stayed in castles and enjoyed an all-you-caneat and all-you-can-drink cruise. “While we were in Monaco, we found a great spot to view some of the practice laps for the Grand Prix. We’re not huge fans, but it was a once-in-a-lifetime experience to check it out and see what all the fuss is about,” Rebecca says. According to Rebecca, she and her mother – who turned 80 this year – have been very fortunate to either work on or volunteer their services on cruise ships. "Cruise ships have the normal paid staff such as waiters, room stewards, DJs, bingo callers, shuffleboard directors, entertainers and so on,” she says. “There is the spa staff – including hairdressers and nail technicians as well as a masseuse and acupuncturist. There is also the casino staff, sales people in shops, dance instructors, photographers and videographers. All of the people in these roles get paid to travel the world while working on the ship. There are also various other jobs on board that aren’t well known.”


According to Rebecca Thomsen, the key to travelling on a budget is planning and timing. 1. TIMING. Peak season and national holiday times will be expensive. If you don’t need to travel then, don’t. Go a little earlier or later, and you could possibly save a bundle on airfares, hotels and attractions.

Rebecca said she and Jacqui have cruised around the world with people who teach art and handicrafts, direct bridge games, instruct tai chi, and lecturers who may deliver a talk each day on their speciality subjects. There are also older men who travel as dance hosts to dance with the ladies of an evening, to ensure all guests have an enjoyable time. People holding these positions may have arrangements in place with cruise companies to receive a discounted cruise in exchange for their services. The mother-and-daughter duo have also enjoyed accompanying tour groups on day trips when the ship has docked, as representatives of the cruise liner. “We stay with the group, count everyone on and off, and enjoy the day. On one occasion, this involved swimming with manta rays – a fabulous experience!” The pair say they often bump into fellow Gold Coasters who also love the lifestyle that cruising brings. “It’s great as you can socialise as much, or as little, as you want, can enjoy the fine dining and entertainment, and visit different destinations at your leisure," they say. “We’ve enjoyed voyages around South America, Antarctica, Europe, America, the Mediterranean and more. When we’re staying on land for an extended amount of time, we always manage to find hidden gems and great accommodation deals as we’re mindful of our budget.” At the beginning or end of each cruise,

Rebecca and Jacqui choose to spend time at or near their arrival or departure location, and have come across some wonderful bargains over the years. “Last year our cruise ended in Civitavecchia, Italy and we wanted to go to Venice for a week. The cheapest way to get there was by train from Rome, so I started watching the train websites for specials and advance booking deals and bought tickets for 19 euros instead of 130 euros to travel on the high speed train,” Rebecca says. “Venice itself is notoriously expensive so we decided on a unique accommodation option. We booked to stay in a convent (Istituto San Giuseppe in Venice). It was a quarter of the price of any hotel nearby, in a fantastic location right on a canal and had lovely rooms. It was quite an experience, one we’ll never forget!” When the pair recently visited Ireland, they looked to stay at a convent or monastery. “This time it was a beautiful abbey. We also treated ourselves to a night in a castle. This can be an expensive stay but we booked at a very reasonable price through Airbnb,” Rebecca says. “We have booked many great places to stay though Airbnb, from a quirky apartment in Nice, France to a country estate house in Ireland. “It is a great alternative to standard hotels. Not only do you get different types of accommodation, but you meet the nicest people in their homes. We thoroughly enjoyed staying at Killyliss Country House in Ireland on our most recent trip. It was a pleasant surprise.” 17

2. PLAN. Once you have a main date set, like the cruise dates, or the event you want to attend, or just the airline tickets, start planning everything else. Look at hotels, Airbnb, car hire, and train tickets. You can get great discounts simply by booking a long way in advance. This is also something travel agents are able to help with. 3. LOOK AT ALTERNATIVES TO THE ORDINARY. From monastery stays to discount long distance bus companies, think of alternative ways to travel and stay. 4. LOOK INTO SMALL DETAILS AND FINE PRINT. We had travelled to Venice – from a cruise – with two large suitcases and two carry-on bags. The cost to take us and the luggage to our accommodation by water taxi was around 130 euros each way. Instead of carting the luggage around, we put the big cases in storage at the bus station for 70 euros for the week which was a much better option for us. 5. READ REVIEWS. All hotels have reviews these days, so be sure to read them. Don’t just choose where you are going to stay just due to its location or the photos. 6. BE ADVENTUROUS. Use the local public transport. Not only will you save money but you may enjoy places out of the tourist spotlight. We have taken local buses, trains the underground and ferries all over the world and never had an issue. Often we are looked at with amusement; two ladies on their own, who don’t speak the language. With sense and forethought, we always manage. Sometimes the hiccups add to the fun of the holiday. Bad taste make-up mistakes Sometimes it’s just better to know what not to do... here are some tips from our resident makeup guru Foundation mismatch: Do not have a different colour foundation on your face and neck. Foundation is so important, if the shade or tone is wrong, it’s all wrong. So often when buying makeup women test on their hand or on their face when, in actual fact, the area you need to match is your décolletage or, in layman’s terms, your chest. This is the key to not having a ghost face in photos. In this day and age where we 50+ our face every day, the skin on our face can be vastly different to the rest of our body, so choose a foundation wisely. Outlined lips: Gone are the days of an actual lip line, let’s move forward and use your lip liner to colour in the whole lip and choose a matching shade of gloss or lippy go over the top. You can even get creative and fade a lighter shade of the same tone in the mid-section of the lips to create dimension and fullness, but ditch the outline.

Over bronzing is a sin: We all love a sunkissed look, but ease up on the twice-fried feel. Go for a glow not a chocolate war-paint scenario. Remember less is best, especially with this one. Strobe, strobe, strobe: Although it is a recent trend there is no need to look like you’ve dipped yourself in shimmer. Strobing is a technique designed to give a more luminous glow, which personally I am a fan of, however, it can go horribly wrong when in heavy hands. Go really, really easy with this new-found technique. To be safe, strobe first then apply your liquid foundation over the top for a much more subdued feel. Eyebrow central: Crazy overdone eyebrows are equally as bad, if not worse than over plucked and drawn on crazy “comma” eyebrows. I personally love a good eyebrow, however, they should not be entering the room before you do and should most definitely not be the main attraction on your face. Fill them in to frame,

do not paint outside the lines and if you are suffering from a lack of brow, get professional feathering. It looks amazing and much more natural that the old tattooing. t is exactly that. Cheap! If you aren't getting the results you want, even a personal trainer at $20 an hour is going to be a waste of money. If you really want value for money, you should be getting more than just a person counting your reps. It is amazing how many people call around to different fitness businesses trying to find out their prices so they can compare them.Taking care of your body and your health shouldn’t be a luxury, it should be something you do no matter what. Unfortunately that isn’t the reality for the majority of Gold Coasters. It’s upsetting when I ask new people if they are currently exercising and their response is: "no… but I have a gym membership". Some people get great use out of their gym membership (on average about 30 per cent of the members), however most people don’t. The trouble is; you might have saved $50 by not going to a more boutique and high service facility, but it has cost you even more in the end. And that’s not to mention the time you lost. Are you paying for a workout or a result? When it comes to deciding where you will go it is important to decide what you want to get out of joining a gym/personal training studio. Are you paying for an exercise session? If you are, the workout needs to be so much higher quality than what you could ever do on your own. Or, that you are getting super specialised exercises that only a professional could give you. If you are paying for a result it is important to work out what exactly it is that is going to get you to your goal. If you think it only takes 30 minutes or an hour of exercise here or there to get a result, you are not seeing the whole picture. What you do in your week when you are not working out (the other 167 hours) has a massive influence over your result. A few things your trainer should be doing: 1. Measuring. If you aren’t tracking and measuring results, it is

impossible to see if you are making progress. Feeling better and having loose-fitting clothes is great, but your trainer should be able to give you hard evidence that what you are doing with them is working. 2. You should be following a program that is repeatable. An old trick that average trainers use to confuse you is variety. If you never do the same workout, how do you know you have improved? Changing the session every week is the easiest way to hide the lack of results. I recommend changing the workout monthly. 3. Helping you keep focused. Awesome trainers set you homework, follow up on your actions, check in on you between sessions, stalk you on Facebook (anything to keep you on track!) and ask you about your week.We have an amazing app that tracks what you are doing with your food and exercise and makes it super easy to get results. All you have to do is open the app and follow the day’s program. 4. Guarantee your results! A trainer can sit down with you, set goals to – for example – lose nine kilos over the next nine weeks, provide a list of what to do and a personal workout plan, measure where you are at and say “if you follow this plan you will succeed”. So what happens if you follow that plan diligently over the nine weeks and only lose four kilos? We believe they should give your money back! You paid for their advice, they didn’t deliver… easy. For most people, spending money on eating out, wine, beer, cigarettes, and fast food, all adds up. By redirecting that spending into your health you will feel better, have more energy, be more productive and really make the most out of your personal trainer. any people are surprised to learn that the hearing industry is unregulated and there is very little to no consumer protection to ensure they are seeing someone with appropriate qualifications and adequate standards of clinical practice. A recent ABC Radio National documentary revealed that the public has no protection from business practices that involve undisclosed business ownership, sales targets and commissions even though they may be referred to such practices by their general practitioner who may also be oblivious to these practices. Most people, rightfully so, expect services to be regulated to the same standards that apply to other sectors of healthcare, says Grant Collins, Owner/Principal Audiologist, Clarity Hearing Solutions. “In the absence of a registration body, you cannot verify if you are receiving services from qualified audiologists or unqualified staff employed in some businesses,” he said. “Ultimately, and unfortunately, anybody can call themselves an Audiologist or hearing specialist and sell hearing aids. “Probably the biggest concern is the lack of disclosure by audiologists if they are receiving commission for the device they are recommending. Common practice is for the commission to be linked to the price of the device.” Mr Collins, says there is also no regulation to ensure that evidence-based practice is applied to the decisions taken by clinicians. “This is particularly pertinent when most independent research suggests there is little significant difference between many of the levels of technology (and subsequent price) of hearing aids. “The largest factor in success of hearing aids is, not surprisingly, the Audiological assessment and rehabilitation accompanying

away from ‘selling hearing aids’ to focus on providing Audiological services at an hourly rate and only charge minimal amounts for the hearing aids themselves. “This means there is no reason to prescribe anything other than what is required. “Consequently hearing aid prices at these practices are now among the lowest in the country and patients can trust they are only receiving the highest quality evidencebased ethical care. “To me, regulation is the obvious answer and I urge the public to contact the ACCC and speak to their federal and local politicians to raise awareness of the issue.”

ASIAN NOODLE SALAD INGREDIENTS DRESSING • 1 garlic clove, finely grated • 1cm piece fresh ginger, finely grated • 1/2 spring onion, finely sliced, green part only • 1 fresh red chilli, finely chopped • 1 lime, juiced • 2 tbsp fresh mint leaves, shredded • 1 tsp sesame oil • 1/4 cup soy source or tamarin • 1 tbsp honey • 1 tbsp extra-virgin olive oil SALAD • 100g thin rice noodles • 2 tbsp sesame seeds • 1 cup snow peas, blanched, trimmed and sliced thinly • 1/2 cup bamboo shoots • 1 cup red cabbage, thinly sliced • 1/2 spring onion, finely sliced, green part only • 1 medium carrot, cut into matchsticks • 1/2 capsicum, sliced thinly • 1/2 cup fresh coriander • 200g eye fillet steak • Salt and pepper • 1 tsp Chinese five spice seasoning METHOD Mix all dressing ingredients together in a small jar with a lid, shake well. Set aside while you prepare the salad. Place the noodles in a large bowl together with a pinch of salt and cover with boiling water. Soak for 5-8 minutes or according to packet instructions. Drain, rinse under cold water and set aside. Heat a non-stick fry pan over medium heat. Toast the sesame seeds, tossing regularly, until golden. Place into a small bowl and set aside. Mix together all the salad ingredients and set aside while you cook the steak. Remember to remove the steak from the refrigerator 30 minutes before cooking. Heat the oil in a large non-stick pan over high heat. Rub the streak generously with salt, pepper and Chinese five spice seasoning. Cook for 2 minutes on one side, then turn the steak every minute until cooked to your liking. Rest for 5-10 minutes before cutting into 1cm thick slices. Mix the noodles through the salad ingredients and toss with the dressing. Arrange the sliced beef on top and finish with extra chilli and sesame seeds. August 2016

ALFREDO FETTUCCINE INGREDIENTS CREAMY CAULIFLOWER SAUCE • 2 tbsp extra-virgin olive oil • 3 garlic cloves, finely chopped • 1 head cauliflower, cut info small florets • 4 cups vegetable stock • 1/4 cup parmesan cheese • Black pepper to taste FETTUCCINE • 500g fettuccine • 100g thinly sliced prosciutto • Chopped chives, to garnish METHOD:

Heat olive oil over a medium heat in a large saucepan. Sauté garlic until fragrant, about 3-4 minutes. Be careful not to burn or brown the garlic as this will result in a bitter taste. Add the cauliflower and cover with vegetable stock. Cook for 10-12 minutes or until cauliflower is tender. Meanwhile, boil the pasta until al dente. Cook the prosciutto in a small pan with 1 tsp olive oil until crispy (about 5 minutes). Set aside. Using a slotted spoon, carefully transfer the cauliflower to a food processor or blender and add 1 cup of the vegetable stock. If you eat dairy, add 1⁄2 cup milk for a creamier taste. Continue to add more liquid (stock or milk) until a sauce consistency is achieved and it is smooth without any lumps. Add the savoury yeast flakes or cheese and black pepper to taste. Toss through the cooked fettuccine and top with chives, crispy prosciutto and extra cheese if desired.

SPELT RICOTTA PANCAKES INGREDIENTS • 125ml buttermilk • 100g ricotta • 2 eggs separated • 1 tsp pure vanilla extract • Finely grated zest from 1 lemon • 3⁄4 cup blueberries • 3⁄4 cup white spelt flour • 1⁄4 tsp baking soda • 1⁄2 tsp baking powder • Pinch fine sea salt • 1⁄4 cup rapadura sugar • 1 tbsp butter or coconut oil, to grease • Maple syrup, fresh lemon and blueberries, to serve METHOD: Into a large bowl, place the buttermilk, ricotta, egg yolks, vanilla and lemon zest. Mix well or until no large chunks of ricotta remain. Stir through the blueberries. Sift in the flour, baking powder, baking soda and a pinch of salt. Add the sugar and mix until just combined. Beat the egg whites in a clean, dry bowl until stiff peaks form. Fold the egg whites through the ricotta batter with a large spoon. Heat 1 tsp butter or coconut oil over medium heat in a large non-stick fry pan. Use 1⁄4 cup batter per hotcake and cook in batches for 2-3 minutes each side or until puffed and golden. Repeat until completed. Serve with fresh blueberries, lemon juice and maple syrup. 39

ocialising and staying on point can be timeconsuming and expensive. “Hey Liz, do you want to come to a gig tonight and have a few drinks?” Pause conversation here. You see I get invitations like this daily. I can be out every night of the week – and don’t get me wrong, I love it, but it can be a drain on the bank account. Ordinarily, I’d just say “yes” and work out the money scenario at a later date. I might even put it on the old credit card. Like I do (strike that out, I mean like I did) with those gorgeous heels calling my name… in every shop. Shoes are my weakness. But this new fin year, I decided I needed to turn over a new note and get good at money. Period. So play conversation. “Normally, I’d say yes, you know me, I don’t say no too much. But I’m saving for my holiday in Vietnam, plus various other things…like life or a rainy day.” The phone goes dead. Hello. Hello? I know, even I was shocked at what was coming out of my mouth. So I stayed in that Friday night, hung out on the couch in my PJs and watched a movie. It was very un-Liz. I also turned down another dinner that weekend. “A few of the girls and I are going out for drinks and dinner. Wanna come?” Me:“Yeah. I mean, no. I can’t, I’m saving.” Plus, I got another invitation to go to the movies. “Can’t. Saving.” I told them. So I stayed in all weekend and “saved”. For me, it’s been about the mindset. Do I really need that beautiful sparkly top from Alannah Hill? And those pretty Dorothy shoes? Of course, you do...n’t. Once I started asking my other personality questions about my money and what I needed and what I didn’t, I realised it wasn’t that hard. Plus, I gave myself a budget on entertainment spend. Something I haven’t done for a long (long) while.

There are plenty of ways to save your hard earned. Here are some I’ve tried so far: Business mentors and coaches will tell you to take a portion of your pay for yourself first and put it into an account specifically for you. Some say it should be 10 per cent of your earnings. So I started doing this. Find things to sell around your home. I’ve moved about eight times in the last two years, so I have basically got rid of everything I don’t need. There’s a TV cabinet I’d like to sell on Gumtree though. Might fetch $200 for it. Winning. I’ve gone through all of my financials and had a look at which areas I can cut back on to save some cash. My job for this month is to look at my health insurance and electricity to see if I can get a better deal anywhere else. I’m also off my phone plan and in the market for either a new plan. Or maybe I’ll go pre-paid. There’s a huge trend in people going to pre-paid plans at the moment because of the deals available. They are the responsible things I am doing. I’ve also got some other ideas to make and then save my “shoe money”: Join the “Save EC Fund” and start a crowd funding page. This is a funny story between my family and I. But I could extend it out to the wider community. I’d always say to my family, “Anyone want to donate to the Save Elizabeth Campbell Fund?” It’s now a running joke. 43

Do something crazy and become a media celeb to have my 15 minutes of fame. Some internet whiz kid would make a rap of it and I’d hire an amazing PR guru to shamelessly plug me. Chick. Chick. Boom! Find a sugar daddy – (get 15 minutes of fame and leverage my media attention with a book deal). Start scrapbooking and have a market stall. Is scrapbooking still cool? Make jam… there are lots of people who like jam and plus the ABC just did a 45-minute segment on it, so it must be cool. Buy the contents of an abandoned storage shed and sell them on Gumtree. Dog-sit. Babysit. No, let’s stick with dogsitting. Dog sitting is easy because you can let them out to do their business. Grow all my own food… might be a bit hard to tend to my crops being inner city though. Create an augmented mobile reality game called Pokémon Go… oops, that’s already been done. I could be wrong here and not getting something, but Pokemon don’t actually go places, you do to catch them! Get my bike out of the garage and do a paper run. I’m pretty sure I could compete with all of these 15 year olds. Whichever I choose I’ll be able to save money for jam and that’s the goal. August 2016
