he irony of life. We all crave more time to ourselves; less stress and less contact with the outside world to give us some space. Or so we thought. We hide behind social media, emails and apps that don’t allow us to show true emotion. Give us a pandemic though, and all we want to do is see, touch and be with people. Human contact is what keeps us sane, stimulates our senses and makes us feel alive. We see how people feel and react to the spoken word and the human touch. Take that away and you have what we all initially thought we wanted – no real contact other than cyberspace nonsense. How much have we missed each other over the past few months? Talking had become such a chore. In business, hardly anyone answers the phone: ‘send me an email’, not ‘leave me a message’, should be the default reply on voicemail. Building and nurturing relationships was dependent on how much time we had between coffee breaks or meetings and being ‘busy’. Now, we crave talking and being social. More people are up for a call or video chat. It’s a positive out of all the chaos, and I hope we continue to lead with this change. I’ve always known in every aspect of life, be it business, family or friendship, it’s contact and communication that gives us a reason to breathe; it creates trust and allows our true selves to show – and shine. All long-standing relationships begin from these fundamentals. In 2020, I can’t get on the band wagon of, ‘this time has made me reflect on what I want and who I am,’ or, ‘this time has given me clarity’. Holy heaven, it has been really tough for so many of us! Granted, it’s worked for a fortunate few, but definitely not all. I will, however, get on the back of the wagon that has a sign that says: ‘Let’s get on with it’. Find a ‘something’ that makes you feel okay. Contact someone who makes you feel happier for chatting to them. That’s the only truth that we all have. As always, the Get it team is here to listen, to help where we can, and to support where we are needed. Together, let’s make 2020 the most ‘memorable’ year to date.

Five minutes with Destination Gold Coast CEO, Annaliese Battista

Given the impact of COVID-19 on tourism, what’s your vision for the Gold Coast this year?

WITH THE COVID-19 CRISIS, SEEING THE HUMAN COST TO THE TOURISM SECTOR AND THE THOUSANDS OF FAMILIES IT SUPPORTS ON THE COAST HAS BEEN VERY TOUGH.

Tourism is the lifeblood of the Gold Coast’s economy and every job is linked to its recovery. We need to be prepared for the recovery to take some time and have its challenges. We are therefore firmly focused on winning over the hearts, minds and tourism dollars of travellers in the immediate and longerterm to revive the sector. Destination Gold Coast adopted a multi-tiered approach to marketing recovery that we have had ready to activate for some months in time with the easing of travel restrictions intrastate, interstate and across the ditch to New Zealand. The Gold Coast’s competitive advantage is that we are undisputed as Australia’s favourite playground, which resonates with families in particular, who will be looking to reconnect after a period of prolonged restrictions.

What are you most proud of in terms of current work being done by your team? When I joined Destination Gold Coast in mid-2018, we set sail on a new brand and direction as Australia’s favourite playground, a position that no other GET IT August 2020

destination can lay claim to. A wealth of campaign research shows us that this rebrand is working very hard for the Gold Coast. In 2019, we broke all previous records for visitor numbers and spend on the Gold Coast and managed to turn around a 20-year trend in declining market share. Most recently, I am immensely proud of the Destination Gold Coast team’s efforts to support the tourism sector through the once-in-a-lifetime crisis of COVID-19. The team’s tenacity and hard work to come out the other side and thrive cannot be understated.

Best part of your job?

Worst part of your job? With the COVID-19 crisis, seeing the human cost to the tourism sector and the thousands of families it supports on the Coast has been very tough. My role is very privileged for the most part, though comes the serious responsibility now to revive tourism on the Gold Coast and in doing so, reinforce the city’s economy and community in the long-term.

I am privileged to work alongside a passionate team of 50 professionals who are committed to marketing the Gold Coast’s unbeatable attributes as Australia’s favourite playground.

I am fortunate to live within walking distance of some fantastic cafés and as a habitual coffee drinker, a go-to favourite of mine is BSKT Café in Mermaid Beach.

ey you cool cats and kittens! If someone had pitched the plot for 2020 The Movie they would have been rejected outright for outlining such a preposterous story. Bushfires, global pandemic, America tearing itself apart! … Tiger King? I must say that I personally have been pretty lucky. My daughter is in grade twelve and my son came back from interstate to study university online. They are both old enough to manage their study on their own. My heart goes out to all the people with younger kids who have had to home school. Actually, apparently, it’s ‘schooling from home’ not ‘home schooling’. At least we now all agree that teachers should be paid a billion dollars! (and that 11am is not too early for a ‘Quarrantini’). And toilet paper, what is with that? In a crisis you need to make sure you have enough food, water, warm clothing and wine! The hoarding of pasta and loo paper was bizarre. Although, if you had very small children ‘schooling from home’ you could always resort to endless pasta necklace and toilet roll craft. 2020 has also proved that we, as a society, can act for the greater good. The care shown to vulnerable citizens, the community pulling together and our slightly crazy larrikin spirit (check out ‘bin isolation outings’ on Facebook) have proven that Australia really is an awesome place to live. Hopefully, we can rebuild the economy, lift unemployment and also start paying teachers more so that they’ll be able to deal with the influx of ‘Coronials’ in about 3.5 years’ time!

here is no business, service or supplier on the Gold Coast that has been untouched by the COVID-19 crisis; trying to stay afloat while negotiating isolation, social distancing, shutdowns, border closures, a tourism downturn and employment uncertainty. It has impacted our local economy in untold ways. But amid the uncertainty and confusion is a silver lining. It has ignited imagination, vision, a can-do attitude in business and a genuine desire in the community to ‘support local’ – the benefits of which are long term and many. There is probably no better example of the positive outcomes in supporting local than the Buy from the Bush social media campaign launched in 2019 to help boost remote and regional economies during the drought crisis. Launched on Instagram, it featured 275 businesses who promoted a mix of products and services that reflected the strength, productivity and creativity of country Australia. It was hailed a success for featured businesses. It boosted sales by 300% within one month and injected five million dollars into drought ravaged regions. Flow-on benefits included increased revenue, access to wider markets, new jobs, new skills and improved quality of life and self-esteem. With a population of almost 700,000, imagine if a similar ‘support local’ effort – online and instore – was applied to backing Gold Coast services, operators and businesses. The benefits would be immeasurable. There are many ways to ‘support local’ whether face-to-face or online. An easy start might be to support some of the great local businesses who are supporting your local Get it mag. As with the COVID-19 mantra, ‘we’re all in this together’, the add on is ‘support local’ which, if the Buy from the Bush campaign is anything to go by, will benefit everyone in the local community.

Revenue: 300% increase in business in the first month. 2. Market access: 38% started shipping interstate and 19% started exporting overseas. 3. Employment opportunities: 21% boost in new jobs. 4. Entrepreneurial empowerment: 48% of business owners learned new skills including marketing and advertising, IT proficiency, and business and financial literacy. 5. Wellbeing: 90% of businesses said it improved their quality of life by improving self-esteem, reducing financial pressure and connecting them with a support network of other entrepreneurs.

There are many ways to support local. Here are just a few tips, which no doubt will lead into your own long list. • Tell your friends and family: word of mouth is great marketing. Better still, take them there. • Shop local: Gold Coast businesses have been innovative and creative. Check out what’s new or enjoy the familiar. • Explore: check your local magazine and social media for special deals and try something new. • Engage on social media: connect with local businesses – give them a thumbs up, check in and follow them. • Write online reviews: share your good experiences by leaving a good review.

Keep calm and plan for the future

Get it’s expert in financial matters, Les McGuire, offers must-read advice for anyone unsure about what to do with savings, investment and property in 2020 e live in a world of uncertainty, and as I write this, we are experiencing another wave of the COVID-19 virus that has changed the way we live, work and play. While constant fear and panic circles the world at the moment, we have to remember that we’ve seen many virus’ come and go; and indeed, this one has gripped the world with fear. Our reaction to the pandemic is driving irrational behaviour and panic, which leads to making bad financial decisions that can affect us not only short term, but for years to come. The decisions we make now can set us up for a better future when the virus is contained and becomes part of history. We need to make sure we are best positioned to deal with the recovery as it unfolds around the world. Recently we have seen people acting out of character buying large quantities of toilet paper, rice, flour, and this is driving fear among people in Australia and the world. Our world is not ending; it is merely showing us that we need to ensure our health, finances and essential needs are best placed to move through this latest scare with a limited adverse effect. My best advice:

Don’t panic

The first major lesson is don’t panic. Financially, we have seen significant market corrections before, and why is it that some people don’t learn from their previous mistakes? In GET IT August 2020

2008 we suffered from the Global Financial Crisis, which saw many financial and housing markets around the world drop significantly. We often hear people who are not advised say: ‘I lost money in super, or investments including property and shares’. When people panic and sell their assets cheaply when markets have fallen, it leads to them crystallising their losses by leaving money in cash when the financial markets rebound. Some people are invested in the wrong things; often in higher-risk assets, with limited or no liquidity.

Understand what assets you hold

I recommend understanding what investments are in your super fund, what investments you hold outside of super and seek advice before making decisions which can affect you for a lifetime. Some super funds in Australia have much higher exposure to growth assets, including private equity and infrastructure, which can create limited liquidity, and some assets can be frozen – be aware of what is under the bonnet to protect your retirement. 20

The most important thing right now is don’t panic. Control what you can, which is your hygiene, and health. soothers Holly Bartter’s got your guide to calming allergy-affected skin llergies aren’t always straightforward, and they’re not just associated with sniffles or watery eyes. Seasonal allergies show up on our skin too and can be extremely irritating. When treating skin for allergies or flare-ups, a holistic and gentle approach (supported by professionally prescribed products if required) will ensure your skin feels comfortable as it recovers. Here’s a hit-list of soothing and calming ingredients that will target allergy symptoms that wreak havoc with skin, so you’ll always know what to reach for. Petrolatum balms and ointments While it’s not the most glamorous of ingredients, petrolatum (or mineral-oil based products) provides much needed protection for skin undergoing all kinds of allergic reactions. Consider this unsung hero for contact dermatitis allergic reactions (this could happen simply from a few moments of contact with ingredients like a harsh soap or detergent), or skin irritation resulting from allergies. A thin layer applied over irritated skin (especially overnight) can significantly reduce trans-epidermalwater-loss and protect skin as it heals. Colloidal oatmeal Finely ground and boiled oats create an ingredient called colloidal oatmeal, filled with molecules that hold onto moisture, which assist in protecting the skin barrier. These skin-protecting lipids will assist skin with a rash, an itching sensation or even atopic dermatitis.

or many of us, the closure of gyms and fitness facilities has had us yearning to get back to training. Many people kept up great habits and adapted with outdoor, home or Zoom workouts, but some completely stopped altogether. Now with facilities back open and fitness events being re-scheduled, it’s vital we take proper care to ensure all goes to plan. We have some strong advice for all returning to training. If you took an extended period of time away, START SLOWLY. Loading the body with too much too soon (resistance or aerobic exercise) is a sure-fire way to quickly develop musculoskeletal injuries, niggles and pain. There cannot be an expectation that the workouts that were completed before COVID are going the be able to be performed now, especially if there has been an extended period between training. Reduce the total load of weight sessions up to 50% of what was previously lifted, then slowly build back up. Doing this will allow the body to reaccustom itself to enduring load and quickly build back up its former strength, power and endurance. Going straight back to 100% of previous load will likely cause injury and force even more time out from training. Working alongside your trainer and following a structured plan of progression will likely be the smoothest transition back to full fitness. Lockdown also brought out some different injuries than what was previously commonly seen by health practitioners. With people being forced to stay home, inactivity and working from uncomfortable makeshift offices have seen more sore shoulders and backs, tight hamstrings and even tennis elbow! By effectively rehabilitating these and communicating regularly with a physio and your trainer, this can be fixed and you’ll be back to normal in no time. A positive from time away from gyms is that we learnt to adapt. With reduced access to the gym, we have been walking, jogging, and cyclingmore than ever before. There has also been an increase in stretching, mobility and foam rolling. These low-moderate intensity and recovery activities are the perfect complement to any fitness or resistance training regime. By foam rolling or trigger balling just a few times per week, we see a drastic decrease in injury, soreness and increase in flexibility and strength. Being able to recover quicker allows us to progress to full fitness. About75% of all cardio based activity should be of a low to moderate intensity, so keep using those bikes purchased during lockdown. By combining low to moderate exercise with fresh air and Vitamin D, training stays enjoyable and hugely beneficial. As the saying goes, ‘exercise made fun gets done’, and by ensuring you follow these principles, not only will exercise stay fun but you will actually be able to stay injury free long enough to keep doing it!

NORTH AUSTRALIAN WILD BANANA PRAWN BISQUE Cooking time: 60 minutes Serves 10 This velvety prawn bisque is ideal to enjoy on a warm day. Serving up to 10 people, it’s perfect for a starter before the main event when hosting your next lunch or dinner party. With MSC certified wild banana prawns from Northern Australia, it’s an authentic taste of Australia’s stunning coastline.

INGREDIENTS 500g MSC certified banana prawns with shells 2 onions, roughly chopped 2 carrots, roughly chopped 1 celery stalk, roughly chopped 200ml white wine 3 star anise 2 lemongrass stalks, bruised 50g ginger, chopped 2 kaffir lime leaves 1 red chili 250g canned diced tomatoes 2 litres fish stock 200ml cream Finely grated zest and juice of 2 lemons To serve Salt and freshly ground black pepper White crusty bread

METHOD Preheat oven to 200 degrees Celsius. Peel the prawns and place the shells on an oven tray and roast for approximately 20 minutes, stirring often until golden. Place the roasted shells into a large saucepan with the chopped vegetables, white wine, star anise and half the lemongrass, ginger and lime leaves. Bring to the boil and simmer for 10 minutes. Add the tomatoes, stock and cream. Bring to the boil and reduce the heat to low and simmer for a further 40 minutes, skimming the surface occasionally. In a separate grill pan add your shelled prawns with a dash of olive oil, salt and pepper and cook until slightly charred, season with salt and pepper, set aside. Strain your prawn bisque and return the bisque to the pan. Add lemongrass, ginger and lime leaves and simmer for further 5 minutes. Strain again and you should have a smooth, creamy consistency. Ladle into bowls and to top add a few grilled prawns to each bowl, sliced red chili, lemon zest, a dash of lemon juice, and season with salt and freshly ground black pepper to taste. Serve with white crusty bread.

WILD TUNA FISH CAKES Cooking time: 30 minutes Serves 4 This is a treat for the whole family, it’s quick, easy and uses MSC certified John West tuna. Make this delicious recipe for an afternoon snack for the family or whip it up for a BBQ party while the weather is still good!

INGREDIENTS 1 x 415g tinned MSC certified John West tuna — well drained 500g white and sweet potatoes, steamed, cooled, loosely mashed 110g jar capers, well drained or 50g capers 1 bunch dill, leaves only, diced 5 lg spring onions, finely sliced 50g gherkins, drained, finely diced ½ bunch chives, finely diced 50-100g GF breadcrumbs, to add as you go 3 eggs, lightly beaten White pepper, to taste Salt, Murray River, to taste To fry 100g extra virgin olive oil 100g butter

METHOD Preheat oven to 200 degrees Celsius. Peel the In a large bowl combine all ingredients except breadcrumbs. Add enough breadcrumbs to just combine, not so much to make the mixture dry and crumbly — alongside the egg they act as a binder. Shape mixture into patties around 7cm in diameter, 4cm thick. Refrigerate for at least 30 minutes. Preheat oil and butter to medium high in a large heavy based fry pan. Have cooling rack and paper towel on hand to drain excess oil. Fry until golden and flip once in batches until cooked through. Drain well and serve whilst hot and crunchy on the outside.

CHERMOULA WILD BANANA PRAWNS WITH LEMON AND COCONUT TAHINI Cooking time: 45 minutes Serves 4 Host the ultimate BBQ get together with this simple yet delicious dish, using MSC certified banana prawns. Try this quick, easy and tasty wild banana prawn dish with lemon and coconut tahini.

INGREDIENTS 1 kg raw MSC certified banana prawns, shelled with tails left intact, deveined 3 tablespoons extra virgin olive oil For the chermoula 2 large handfuls of flat-leaf parsley leaves, finely chopped 2 large handfuls of coriander leaves, finely chopped 2 large handfuls of mint leaves, finely chopped 2 garlic cloves, finely chopped 1⁄2 red onion, finely chopped Zest and juice of 1 lemon 1 teaspoon ground cumin 3 tablespoons extra virgin olive oil For the lemon and coconut tahini 1 cup tahini 1 cup coconut cream 1 garlic clove, crushed Zest and juice of 2 lemons 1⁄2 teaspoon cayenne paper 1⁄2 teaspoon smoked paprika To serve Basil leaves Lemon rind Extra virgin olive oil Sea salt

METHOD To make the chermoula, combine all the ingredients in a bowl. Spoon two-thirds of the chermoula into a ziplock bag, add the prawns, seal and shake well to coat, then transfer to the fridge and leave to marinate for 15 minutes. Meanwhile, for the lemon and coconut tahini, blend all the ingredients together in a food processor until nice and smooth.

Heat the oil on a barbecue plate over high heat until smoking. Add the prawns and cook for 2 minutes, then turn and cook for a further minute, until the prawns have just changed colour. (You want them to be very slightly underdone at this point as they will continue to cook for a few moments after being removed from the barbecue.) Generously smear some lemon and coconut tahini on a serving platter and arrange the prawns on top. Scatter over some basil leaves and lemon rind, drizzle with olive oil and season well.

WILD SOUTH AUSTRALIAN PIPIS WITH SAFFRON BUTTER Cooking time: 20 minutes Serves 4 This quick and easy 20-minute dish is a delectable addition to any party menu. Perfect for a lunch or dinner, impress your guests with MSC certified sustainable pipis from South Australia coated in an indulgent saffron butter.

INGREDIENTS 500g of MSC certified South Australian Goolwa pipis 2g saffron thread 100g butter 1 large clove garlic, finely minced Âź teaspoon mild paprika Zest of 1 lemon Salt to taste To serve Lemon wedges Sourdough

METHOD Allow butter to come to room temperature and soften. Preheat oven to 200 degrees Celsius. Combine softened butter, saffron, garlic, paprika, lemon zest and salt. Mix until well combined. Place pipis in a baking dish large enough to ensure they don’t overlap. This is important to make sure the pipis cook evenly. Place a good spoonful of the saffron butter over the pipis and place the lid on top of the baking dish. Put baking dish into the hot oven for approximately 8 minutes or until just cooked through. Serve with a wedge of lemon and a chunk of good sourdough to soak it all up.

Sarah Blinco shares five fresh ways to travel without even leaving the city couple of years ago, Lonely Planet published a nice little guide for those of us who couldn’t travel at the time, but who were nonetheless pining with wanderlust. How apt in 2020. The book is called Everyday Adventures and it’s piqued my interest again lately – for obvious reasons. Of course, we’re blessed to be living in a destination that many do wish they could be holidaying in right now. In the spirit of being able to move about again, let’s not take that for granted. Take part in an ‘experience’ In recent years, my partner and I have taken to signing up for ‘experiences’ in any destination we visit. There’s walking tours, surfing lessons, cooking classes, sunrise Yoga… the list goes on! Let your dog lead the way A cute activity I have borrowed from the aforementioned Lonely Planet book – it’s simple: take your dog for a walk, maybe in a new environment, and let him/her lead the way! It’s an adventure for them and you too (as long as you’re not led across a highway, obviously).

Fresh food quest Make it your mission to shop at a nearby market soon; visit and support local trade. There’s nothing quite like wandering farmers’ markets for the freshest of the fresh. You could also pick up some art, craft and other lovely impulse-buys while out. Find regular markets in Surfers Paradise, Currumbin, Broadbeach, Burleigh, Coolangatta, Palm Beach, Carrara, Miami and Bundall.

Tram touring Ditch the car and go exploring like visitors to our city do – ride the tram from one side of the Coast to the other. This helps our environment and offers a fresh perspective of the city.

Lend a hand locally Another great way to see the city through new eyes, is to help out around your neighbourhood. There’s countless volunteering options here, from getting involved with the environment to helping people and animals. Put your hand up for a new experience today, make new friends and make a difference while you’re at it.

We’re blessed to be living in a destination that many do wish they could be holidaying in right now. In the spirit of being able to move about again, let’s not take that for granted. 33
