LETTER FROM Nicole Editor

The sun shines a little brighter, the birds’ song is a littler cheerier.

People’s moods are better – there’s a spring in their step, an easy smile.

For me, it happens the moment the Christmas decorations come out, when the carols start blasting through supermarkets.

It usually coincides with the onset of the Queensland sun. It’s hot, yes, and I’m often tucked away in the safety of the air conditioner.

But there’s something about that blast of heat as you walk out the door that screams Christmas.

I work from home, and there’s something about the combination of artificially cool air, Christmas tree lights, and a festive tune, that makes working feel a little less burdensome.

Granted, I take things to another level, but at Christmas time, even my tolerance for cheesy rom coms gets a significant boost, and I’m all about those festive flicks.

Heck, I’m currently watching Christmas with You, starring former teenage heartthrob Freddie Prinze Jr.

So yes, the hectic buzz that comes with the end of another year, as we scramble to tie up loose ends can be stressful.

But for me, it’s countered by the magic of Christmas. And I really do believe it’s magic, because I can tell you this much, you won’t catch me watching Freddie Prinze Jr rom coms at any other time of the year.

From all of us here at Get it Mag, we wish you a MERRY CHRISTMAS!

Nicole Madigan

C is for Christmas (and Champagne)

‘I drink champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it when I’m not hungry and drink it when I am. Otherwise I never touch it – unless I’m thirsty.’ Lilly Bollinger (1899-1977)

My own love of bubbles and extremely refined palate was initiated with fine wines, such as ‘passion pop’ and ‘Asti Spumante’.

I was nearly disowned by my mother-in-law for polluting the heavenly nectar that is Asti by trying to add some orange juice (anything to make sure it wasn’t so sweet!). Passion Pop was a university thing and at about $3 a bottle inspired more holding back of hair than passionate holding of each other.

I do have a confession to make – I bloody hate Moët. I also hate that depending on the current fashion of wine snobbery it can be pronounced ‘mo-ette’ or ‘mo-ay’ and I am completely sure to have the wrong pronunciation no matter how hard I try. However you pronounce it – it is still expensive French cats’ pee (in my opinion). It is bitter, catches in the back of your throat and is as smooth as a rusty nail.

‘Tis the season for a drop of sparkling and I’m going to fill you in on one of my favorites. If you can find it, try a vintage Janz sparkling from Tassie. Bloody delicious, smooth as silk, without one hint of urinating feline. I’m thinking of applying for a job as a wine writer, I think my turn of phrase is more helpful than ‘hints of unripe pear’.

My other issue with celebratory bubbles is that the first sip, even the first glass, is divine. You’re all frocked up, perfect make-up, sophistication personified. By glass number five, you start tearily telling a stranger how beautiful they are and getting wet mascara on their blouse. Unless it’s good champagne it also bites me the next day and I spend the morning reminding myself that ‘bottomless champagne’ is always a bad idea.

I recently tried an ABSOLUTELY delicious sparkling Shiraz from Brockenchack Wines in the Barossa and it is 100 per cent going to be my Christmas morning drink. Actually, to be certain I still think it’s awesome, it may be my Christmas Eve drink, aaaaaannnd my lead up to Christmas (actually whole of December) drink as well. After an ‘unprecedented’ couple of years I hope your festive season is sparkly, fun and fabulous! I’m off to find some waterproof mascara.

Coping with the festive season

As 2022 is coming to a close, many of us will be feeling extra pressure; buying presents, attending social gatherings, coupled with expectations of what the festive season will bring, resulting in higher stress levels..

A few causes of stress during this time can be:

• Financial stress

• Family conflict

• Juggling work with festivities

• Isolation

Having a healthy body is the foundation of a healthy mind and maintaining good nutrition and being physically active can have a positive impact on your festive mood.

Below are a few tips for coping with stress and depression during the festive season:

• Eat well, exercise and relax every day, and enjoy alcohol in moderation

• It’s also important to get enough rest and put aside some time for relaxation and enjoyment.

• Enjoy a massage

• Set aside 15 minutes a day of personal time to take a break and clear the mind

• A good night’s sleep is also an important stress-busting technique

• Have realistic expectations – do you want to go to an event every night or do you need a break?

• Make a realistic budget and stick to it – work with your budget, not what you think someone else may need

• Develop strategies for coping with stress and depression

• ‘Cool down’ walk when conflict arises at a family gathering, or avoiding certain can help

• If you have lost a loved one, you are likely to experience feelings of grief and loneliness. These are normal but talking openly can be helpful. Consciously remembering your loved one with a special ritual or sharing warm memories, can maintain that special connection during this time

• Recognize the symptoms of stress and depression and seek help if they occur – talk to a counsellor and manage your feelings with some self-care – sometimes just being heard can alleviate your stress

Look ahead to a bright future – 2023 is around the corner and we all love a ‘New Year’!

It’s time to refresh

Record number of Aussies are turning to cosmetic injectables to look younger in time for this year’s festive season

More and more Australians are considering their outfit choices and appearance as they prepare for the holiday season festivities. In order to appear amazing at this year’s holiday activities, many are searching for a quick fix on how to turn back the facial clock and restore a youthful glow.

According to Dr Eranki of Cosmetique Cosmetic Clinics, while there is no substitute for a good diet, exercise and a good skin management regime, there are some things you can do cosmetically to help the face look younger and fresher.

Here are the most popular injectable treatments people are booking in for this festive season.

1. Fat dissolving injections Fat dissolving injections are an excellent way to freshen up the face and create a beautifully sculpted jawline that adds definition to your face, creating a regal and angular look. This treatment can easily be done within your lunch hour.

2. Brow lift A brow lift is an extremely popular treatment and delivers significant improvements to the youthful look of the face. It works by changing the tension of the muscle that closes the eye, creating a natural lifting effect. The eyes look brighter creating that youthful glow.

3. Dermal filler Dermal fillers are versatile and can be used to enhance your facial features with a completely natural substance that achieves a visibly long-lasting aesthetic result. We usually refer to dermal fillers as liquid facelift treatments as they provide almost instant results. Most women undertake dermal filler treatments to augment their mid-face and cheeks

4. Wrinkle relaxers Anti-wrinkle injections work to stop the formation of wrinkles by temporarily blocking the nerve signals that control muscle movement.

They can be applied in a number of areas around the face to address fine expression lines in the forehead, crow’s feet, frown area and around the nose giving you a fresher and younger appearance.

5. Lip filler Lips are the most expressive part of your face and Lip filler is a great way to emphasise your smile.

Lip enhancement is a simple process performed with minimal discomfort.

6. Jaw fillers Jaw fillers are dermal fillers that get you the look you want by adding shape, volume and definition to the jawline.

A Talk with Artist Tracie Eaton

Known as Australia’s “artist to the stars”, international contemporary artist and Gold Coast local, Tracie Eaton, sits down with Get It Magazine to talk about her signature ‘passion-art’, memorable moments in her career, and drawing inspiration from the world around her.

1. How did your artistic career first get started – did you always imagine yourself working in this field?

I have always been a creative person, but became rather obsessed with colour in my early 20s. I was working as an occupational therapist in paediatrics and forensic psychiatry and used art and creativity to help clients unlock their feelings and to communicate. It took another 10 years or so before I realised that painting was my true calling – the moment I first put brush to canvas I knew this was me.

2. How did your A-lister reputation develop, and what draws people to your work?

Being commissioned to paint for Academy Award nominees for three years most certainly helped me to gain traction and reputation as an artist. We are all drawn to things that make us feel connected, happy and engaged, and my work does this. From a purely art investment perspective, the value of my artworks have tripled in as many years, and continues to, so I’m sure that is an important consideration for some of my clients also.

3. Can you share about the term “passion-art” and what this means?

Passion-art, as described by the curator who used it regarding my work, essentially meant that everyone who views my work “falls in love with it”. For me, passion-art stems from the energy within the work –my artwork is colourful and I use colour very specifically to elicit emotion. By incorporating so many colours, textures, media and painting styles, my paintings are alive – I have never forgotten how to play! I am obsessed with colour and how it makes us feel, so I am inspired every day, doing everyday things.

Bold, Brave & Beautiful

4. Do you have a stand-out career story you could share?

One that does come to mind was when I was approached by Jim Carey who asked me what I thought of his art. It was very humbling to have a discussion around someone’s artwork who is so well established! Another stand-out moment for me was when, following one of my exhibitions, I was approached by someone there, who thanked me. He stated he had been colour blind for years, and therefore never appreciated art. However, one of the pieces I created, he sa perfectly. I was blown away that I had painted something that not only he could see, but one that touched his heart so much.

5. You’re based here on the beautiful GC – what are your favourite things about this part of the world?

There are so many wonderful things about the Gold Coast and I’m proud to call it my home. I love the climate, the energy and the vibrancy of the Gold Coast. I enjoy the contrast that exists. Where else can you see a surfer carrying their board, walking barefoot, and a business professional heading off to a meeting all at once?

6. For someone looking to get into the art world, what’s your advice for them to carve their own creative path?

I am self-taught, and I believe this is a fabulous way of working out what you want from creativity. My advice is to trust your instinct, remove judgement about what you are creating and simply do. Find a way to become business savvy – if you do not want to learn basic business, sales & marketing skills and process, find someone who can do this for you. Oh, and do not listen to people who say art is a waste of time – have faith, work hard and stay focused.

7. What’s on the horizon for you in 2023?

There are quite a few exciting things happening for me and the Tracie Eaton Brand in 2023 – most excitingly, there is significant movement on the international stage. I am excited by all this activity, as it will absolutely force me to be the best at what I do and ensure that my focus is on the creation of new, ever-expanding and changing artworks. I feel I am on the precipice of a new creative journey so I guess all I can say right now is “watch this space.”

with purpose Finding communities

Community is more than just sharing a common goal, living in the same region or having similar interests. A meaningful community gives its members a sense of belonging, a feeling of purpose and offers a safe and encouraging space. Within this unique atmosphere of respect and trust, community members get to create new relationships, expand their knowledge, open their minds and find opportunities that would not be accessible to them otherwise.

All these positive outcomes are even more notable within women-only communities, a growing trend that more and more females are choosing over mixed communities. This is for a simple reason – women understand each other and are happy to support, encourage and lift other women. When women connect, they look to create genuine relationships from which everyone can learn, grow and benefit.

A great example of community is the one Surf Getaways have created for female surfers over the years. Their female coaches and founders created a community for beginner women in the industry where one didn’t exist, and now have a thriving following in their learn to surf clinics and luxury holidays.

To allow more women across the world to benefit from this community the team have just developed and released a new Online Community platform. This unique space is available for existing members and women

around the world to connect, watch fitness videos, get surf tips, participate in events and access exclusive content to support their life journey no matter their age, location or background and regardless if they surf or not.

Blended Love:

Shelley & Ben’s Love Story of Business, Family & Fate

At the onset of Covid, Shelley Hammond picked up her life in Sydney and moved to the Gold Coast to be with her partner Ben Gawley. Today, the two sit down with Get It Magazine’s Holly Bartter to talk about juggling two businesses, a blended family and a love story that started when the two were just 13 years old.

While they reconnected just three years ago, Shelley and Ben’s relationship started long before, in the regional town of Benalla in Northern Victoria.

“We actually grew up there together,” Shelley tells me. “Ben was in the same year as my brother in high school – we only later discovered that our grandmothers were best friends too. I always had a crush on him but we moved in very different circles at the time.”

Three decades later, after going their separate ways in life, the two are settled on their acreage home on the Northern Gold Coast, but the couple aren’t fully in agreement about how their reunion played out. “He slid into my DMs!,” recalls Shelley, while Ben is sure Shelley was the one who made the first move. “We’re both kind of right – you commented on a photo and I messaged you on Facebook, gotta love Facebook!”

GET IT December 2022 16

Shelley, the founder of communications agency One Roof Agency, has six female employees across three states, while Ben runs his own plumbing and gas-fitting business as well as being a talented musician. Prior to joining forces, the two made long-distance work, but the arrival of Covid expedited their plans. Shelley explains, “Long distance is hard to say the least, then Covid turned the world upside down, our domestic borders were closing and I had to make the decision to stay where I was, or go north to take a gamble and be with Ben.”

Ben recognises the major life shift that Shelley undertook for love, telling me, “It was more of a transition for Shelley – she moved interstate from a city apartment to an acreage property, and I have three kids living with us the majority of the time. I also have two adult sons, so not only was it a location change but the past three years have been a complete lifestyle adjustment for her.”

been amazing accepting them and treating them like her own. “We all adore her and we’ve built this home and family life that is full on, but also full of happiness. We’ve both had previous marriages so we’ve learned a lot and know what we want in a partner, and we finally feel like we’re with the person we should have been with all along.”

Shelley feels equally fortunate to be a stepmum, and recognises she’s learning as she goes, adding, “Patience and kindness go a long way. Coming into the family in a stepmum capacity, I’m really just an additional support network. It’s such a joy to be part of their lives at such a young age.”

Both Ben and Shelley feel they could never have predicted how their lives would have panned out, with Ben sharing, “I never thought I’d settle down with anyone again until Shell came back into my life. We are aligned on everything. We were brought up the same way, share the same values and she even shares the same sense of humour, luckily! Being happy as a couple makes parenting so much easier too.”

With a love story that seems to have been written in the stars, Shelley and Ben are buoyed by their new takes on life and encourage others to be open to a new chapter.

“There were so many reasons for us to not explore our interest in one another – we lived too far apart, had both fairly recently come out of relationships, Ben had kids, I didn’t know what I wanted in life – but we knew we wanted to try. Don’t be held back by fear or obstacles, we’ve been through some really testing times but it’s all been worth it.”

For Ben, it’s all about taking the leap, as he adds, “I was adamant I would never settle down with a woman again, but Shelley and I truly complement and complete each other. We didn’t have a plan, so I’d say don’t overthink it, just go for it, what do you have to lose?”

It’s clear that the two have found their stride in life and love, with Ben sharing, “Today, we have my youngest son who’s seven years old, week on week off, and my 19 year old and 16 year old are with us full time. Shelley has

A feature of life today that the two both love is the warm GC weather and lifestyle. “The Gold Coast is just so diverse,” Shelley enthuses. “Wineries, beaches, shopping –what’s not to love?” For Ben who had made the Gold Coast his home a few years prior, this part of the world is still his dream home. “I love that we have a steady stream of friends and family who visit us throughout the year for a getaway. Everyone loves a holiday on the Gold Coast, we’re just so fortunate that we now live here.”

Discover La Sarda Home, the homewares brand bringing sardinian culture to Australia

For La Sarda Home founder Giuliana Manca, Sardinian heritage has been part of her story since an early age, with her Sardinian father inspiring a passion and appreciation for the craftsmanship and traditions of the island. We speak with Giuliana to learn more about the inspiration behind the brand, and what you can expect when you bring a piece of Sardinia into your home..

As the visionary behind La Sarda Home, Giuliana has an unwavering connection to Sardinia, which shaped her early years and is now the driving force behind her work.

“My childhood was spent between Scotland and Sardinia, and now with my base in Australia, I knew I wanted to showcase these incredibly unique pieces here,” Giuliana shares, “It’s so much more than just a product, La Sarda Home blends the stories and cultural significance of such a special place – I knew this range would resonate here.”

Spanning homewares, jewellery and even fragrance, La Sarda Home goes against the grain of quick consumerism, with Giuliana personally curating the range of products on offer, culminating in a brand that honours their values of ethically-sourced, sustainable and culturally significant items that elevate the home.

“As La Sarda Home has grown and evolved, I’m so proud of every piece. Everything is handcrafted and handmade, sourced from female artisans and crafters on the island with traditional methods and techniques – there is nothing mass produced, and when you bring home a piece of Sardinian culture, you’ll feel the story and the history carried with it.”

Bringing Mediterranean paradise to Australian homes, La Sarda Home features ceramics, pottery, candles and more, with striking designs that make every piece a focal point and conversation opportunity, something to be treasured and enjoyed.

“I feel when we showcase the work of these talented Sardinian artisans, we’re introducing these creators to the world and giving them a voice, telling their story. We’re supporting the work of small towns and small villages, and they pour their energy and love into their work – it’s more than just a vase, it’s about welcoming this unique history and culture into your home.”

A celebration of Sardinia, the magical Mediterranean island off the Italian coast,

SimplySardinian

La Sarda Home captures the vibrancy of its sweeping coastlines, ancient traditions and breathtaking scenery – a go-to location for writers, artists and poets looking for inspiration, it’s certainly inspired Giuliana, who has seen her brand move from strength to strength as her Australian following grows.

“Aussies are mindful about what they purchase and where their products come from – this desire for ethically-sourced, individual pieces that would last a lifetime has always been clear to me. I knew this way of curating my range would speak to the market here, and it’s been so affirming to see our products celebrated and loved,” explains Giuliana.

With this commitment to ethically-sourced wares, La Sarda Home ensures every piece is created, purchased and delivered to Australia in the most responsible, sustainable and ethical manner. “We recognise that we can be the difference in generating meaningful income for our makers and their families –everything comes from the island, and it’s so important to me that our processes remain authentic and committed to Sardinia.”

With such deep roots connecting her to Sardinia, Giuliana has been able to make an impact on the lives of Sardinian locals for years to come, with long-standing relationships with the artisans and creators of the island, offering them a chance to have their skills and stories amplified on an international level.

The complete La Sarda Home range is available to experience online, bringing the ‘Simply Sardinian’ magic to you anywhere in the world.

Heart failure is one of the biggest killers of both men and women in Australia, affecting more than half a million Australians.

Heart failure is one of the biggest killers of both men and women in Australia, affecting more than half a million Australians.

Of those, almost 160,000 will end up in hospital, and that’s because of a range of symptoms that result from their heart failure. At least that’s what they believe.

The key to heart failure patient wellbeing

But according to Cardiologist Associate Professor John Amerena, some of these symptoms could be avoided, or at least reduced.

Many people are unaware that iron deficiency can significantly exacerbate symptoms caused by heart failure.

But, what is heart failure?

Heart failure occurs when your heart is not working well enough to pump blood around to your organs and tissue within your body. It can result from conditions such as coronary artery disease, high blood pressure, heart valve defects, viral infection, or alcohol misuse. Heart failure patients can experience fatigue, shortness of breath, swelling and a racing heart, and these symptoms are often made worse by iron deficiency.

“Iron deficiency occurs when your body has insufficient iron stores and can no longer make enough red blood cells,” said Assoc Prof Amerena.

Around half of heart failure patients will be diagnosed with relative or absolute iron deficiency with and without anaemia.

“It’s quite common and we think it’s probably due to decreased absorption, as oral iron is not well absorbed in patients with heart failure” said Assoc Prof Amerena.

If iron is low, patients often feel lousy, tired and breathless. If it’s replaced, the reverse is true, with patience reporting improved symptoms and quality of life.

“We recommend replacing it up intravenously if iron stores are low in patients with heart failure with reduced heart function. Tablets are not effective, but intravenously, it can have consistent benefits and make patients feel better.”

Assoc Prof Amerena said heart failure patients’ chance of survival decreased with each subsequent hospitalisation, with research showing a 25 per cent chance of death within one year of their first hospital visit. So it is important to try to keep patients from repeat hospital visits. For more information please visit takeironseriously.com/au If you are concerned that you might be iron deficient, please speak to your doctor.

Surviving the party season

For many of us, the first Tuesday in November (Melbourne Cup) signifies the beginning of the party season leading into Christmas. With so many gatherings, catchups, work functions and end of year awards, this twomonth period can be filled with temptation. The positive aspect though, with a bit of forward planning and structure we can overcome the party period still on track to keep our health and fitness in order. Below are a few tips to help you not only survive, but thrive!

1. Plan ahead

The key to your success during the holiday season is to plan ahead. Make sure to write detailed grocery lists for all your meals and stock-up on healthy snack items that you can put together quickly to serve to guests or enjoy with your family. Meal prep is a great way to ensure you always have a supply of pre-cooked and prepared proteins and vegetables on hand.

2. Keep moving

We are truly creatures of habit so maintaining your normal routine as much as possible will help you stay on track. Don’t leave your fitness to chance! Schedule times throughout your holiday to be active. If you are travelling, find out where the nearest gym is and either work out independently or join a class or get the whole family involved by planning activities you can do together like cycling, swimming or walking.

3. Don’t forget to eat

Eat regular meals throughout the day to help regulate your insulin levels and keep food cravings at bay. Don’t forget that eating five or six meals a day will stimulate your metabolism into burning the equivalent amount of energy as 30 minutes of cardio! If your house guests are late sleepers or early dinner eaters keep to your regular schedule by having a healthy snack before they rise or before going to bed. Another great tip is to have a protein-based snack before going out for dinner so you don’t arrive hungry and won’t be as tempted to over-indulge.

4. Stay hydrated

Drink water to help you feel fuller and keep your body functioning well. Have a glass of water at home before heading out for a meal and if you are consuming alcohol, drink a glass of water between each drink. Try to keep your water intake up throughout the day especially in the summer heat so you don’t end up gulping down a glass or two before bed and disrupting your sleep by having to make trips to the bathroom at night.

5. Watch your alcohol consumption

It’s the time of year to be ‘merry’ but calories from alcoholic beverages, especially mixed cocktails filled with liqueurs, fruit juices, and syrups or creamy drinks like eggnog add up quickly. Try to keep to ‘single ingredient drinks’ like wine or beverages that use a water-based mix. Don’t forget that for every glass of red wine you drink it takes approximately 21 minutes of walking to burn off the calories!

6. Get some sleep

Sleep is so important to our overall health and research shows that we turn to sweets and carbs when we are over-tired. Getting between 6-8 hours of uninterrupted sleep each night will do wonders for your metabolism and will ensure you have the energy you need to get through busy days with family and friends.

7. Think before you eat

Sometimes we eat because we are tired, thirsty, bored or stressed. Take a moment before indulging that sweet tooth and determine whether you really are hungry and act accordingly. Think of cravings as a suggestion, not an order, and you have the final say!

10. Keep temptation away

If you are staying home over the holidays why not take advantage and avoid purchasing unhealthy snack foods and sweets. Having them in the house, even if you aren’t intending on eating them, means that you have to rely on willpower in moments of temptation.

11. Indulge selectively

Rather than consuming store-bought items, plan to selectively indulge in your favourite homemade holiday treats. It is too hard to deprive yourself completely over the holidays. By giving yourself permission to enjoy one or two special items, you will be able to maintain your will-power, enjoy them without feeling guilty and get back on track quicker.

12. Focus on fun, friends and family –not food

We know that for most of us the holidays are centred on special eating traditions, however, we hope you also remember to take time to reconnect with your lovedones and with yourself to ensure that your holidays are filled with happiness and joy!

Lemongrass Chicken with Honey Gold Mango Sauce & Salad

Mix up your BBQ with these chicken thighs marinated in lemongrass and kaffir lime leaves, accompanied with a simple side salad of Honey Gold mango, cucumber and coriander, all topped off with a good drizzle of a Honey Gold sauce that tastes light and fresh!

Recipe and photography by Bonnie Coumbe

Prep time 20-30 minutes

Cook time 10-15 minutes Serves 2-3

Ingredients:

• 4 chicken thighs

• 1 ½ Lemon grass stalks

• 2-3 garlic cloves

• 2 kaffir lime leaves

• Juice of 1 lime

• 3 tbsp olive oil

• Pinch sea salt

• Oil for cooking

For the Honey Gold sauce:

• ½ Mango flesh, roughly chopped

• ½ bunch coriander stems, rinsed

• 1 small Garlic clove

• 2 tbsp Olive oil

• 1 tbsp sherry vinegar

For the Honey Gold salad:

• 1 large mango cubed

• 2 cucumber sliced

• ½ Red onion finely sliced

• ½ bunch coriander leaves

Method:

Notes:

• This sauce is absolutely delish, and we highly recommend it as your Summer accompaniment to any future salad or meal!

1. Combine the lemongrass, garlic, olive oil, lime juice and sea salt into a food processor and pulse until it comes together into a smooth puree. This can also be done by hand, by chopping everything up and pounding it in a mortar and pestle.

2. Remove the stems of the kaffir lime leaves, roll them up into a small roll and thinly slice.

3. Slice the chicken thighs in half, add them to a medium bowl. Pour over the puree and add the thinly sliced kaffir lime leaves. Stir to coat all sides of the chicken, cover and place in the fridge for a 2-3 hrs.

4. To make the sauce, combine all ingredients into a food processor and pulse until combined, set aside. This can be made ahead of time and stored in the fridge.

5. Heat a cast iron grill to medium heat or a BBQ grill, brush off excess marinade from the chicken, brush with a little extra oil and place it on the grill. Gently push the chicken down into the grill, you’re looking for a golden colour and nice char marks. Once cooked on one side flip the chicken over and cook on the other side.

6. To make the salad, combine all of the ingredients into a salad bowl and toss to combine.

7. Serve with the mango sauce drizzled over the top of the chicken and the salad.

• 2 large mangoes, peeled and diced

• 1 extra mango

• 6 egg yolks

• 250g mascarpone

• 500ml pure cream

• 200g digestive biscuits

• 50g unsalted butter, melted

• 1 punnet edible flowers (optional)

Pantry

• 1 vanilla pod

• 200g caster sugar

Method:

1. Bring a small amount of water to a simmer in a medium pan. Put the egg yolks and sugar in a heat-proof mixing bowl and place the bowl on the pan, ensuring that the bottom of the bowl doesn’t touch the water. With a hand mixer, beat the sugar and egg yolks over the simmering water until thick and pale, then set aside to cool.

2. Remove the seeds from the vanilla pod with a small, sharp knife and add with the cream to a clean mixing bowl. Beat until firm peaks form.

3. Place the mascarpone in a third bowl, add a little of the egg yolk and sugar mixture, and mix using a spatula until combined, then add the rest of the mixture and combine. Add the whipped cream in stages, folding in with the spatula until well combined, taking care not to over mix, then set aside.

4. Place the biscuits into a food processor with the melted butter. Pulse a couple of times until rough crumbs form. Reserve 1 tbsp of mix.

5. To assemble the trifle, spread ½ of the biscuit crumbs over the base of your trifle dish. Slowly pour ⅓ of the mascarpone mixture over the crumb base and smooth with a rubber spatula. Evenly spread half the diced mango on top of the mascarpone layer.

6. Repeat the steps, adding the rest of the biscuit crumb, ½ of the remaining mascarpone and the rest of the diced mango. Top with the remaining mascarpone, smooth, and place in the fridge overnight to set.

7. Before serving, dice the extra mango and arrange on top of the mascarpone, then sprinkle with reserved biscuit crumbs. Garnish with edible flower if desired.

Notes:

• If you prefer a more traditional trifle, replace the biscuit crumb layers with sponge cake or pound cake roughly broken into pieces.

• You can sprinkle a little alcohol over the biscuit or cake layer for added flavour – Chambord and limoncello would both work well with the mango.

How to survivethe sillyseason!

The silly season is a time spent with friends and family. Whether you’re travelling or hosting dinner parties, there is always laughter and good times, but also stress. Particularly for those who are the organisers, rounding up the invite list and ensuring food and entertainment is at the ready. The stress can also lead to sleep disturbances and a sense of overwhelming emotion.

To make sure you’re enjoying the silly season, I’ve put together my top tips to get you through the busy period and help you feel rejuvenated as the new year sweeps through.

Managing Stress Levels

Christmas present shopping, cooking and organising everyone from the kids to the second cousins will fill up your to-do list quickly and can make you feel overwhelmed. Even though it may not seem possible with an endless to do list, it is so important to do what you can to take some time in your day to prioritise yourself. Going for a walk around the block, putting on your favourite playlist while you write your to do list or sitting down outside with a cuppa can make all the difference.

This is also your reminder to make sure you’re getting adequate rest and sleep to minimise burnout. After a good night’s sleep, the feeling of rejuvenation and energy is infectious.

Ashwagandha is my favourite herb that can easily be incorporated into your daily routine during stressful times as it offers support with physical and emotional stress.

Herbs to help:

I have already mentioned Ashwagandha as my go-to herb for stress and anxiety, however there are a few other staples that I have on rotation when the Christmas period planning is in full swing for myself and my family.

Magnesium is a fantastic mineral to help with supporting nerve, muscle function and energy production. Magnesium can be taken in a delicious powder form or capsule, once daily to give your body the boost it needs to get things done!

Milk Thistle is a herb I keep in my pantry for those times that I have overindulged at dinner with a few extra wines due to its ability to help with a healthy liver function, heart burn and an upset stomach.

B Vitamins can help those who are feeling and looking a little run down with all the late nights, social catch ups and Christmas present wrapping. A great dose of B vitamins will help your energy levels,

metabolism and even your skin’s complexion so you can feel and look fresh!

Routine:

It’s a given that your usual weekly routine can be thrown out the window when you’re planning your festive calendar, and that’s okay!

Where possible though, sticking to a routine over the Christmas months can help your stress levels immensely, even if this means creating a ‘new’ routine for this period. It’s important to not feel frustrated with yourself for not sticking to your usual routine, since your daily activities are not your usual anyway – it’s all about reframing your thoughts!

Instead of going to the gym, head outside and enjoy the warmer days in nature. Head to the beach for a game of cricket or flying the kite you bought your nephew for Christmas is a great way to move your body and create beautiful memories.

In relation to your eating habits, Christmas is all about enjoying the table full of food with loves ones and indulging in delicious meals – guilt free! My top tips for eating through the festive season is to try and eat your normal breakfast each day. Not only will this help with your daily energy levels, but it is a great way to start the day with the essential vitamins and minerals your body needs to feel great.
