Tom Starks Heads up readers! There’s a new kid in town and he’s planning to take over the world – one musical riff at a time.
E
veryone has a vice – whether it be chocolate cake, trashy TV soaps, or skinny dipping! For Tom Starks, it’s without a doubt his love for spinning “preloved” vinyl records. Once a self-confessed “suit” working in the optical industry, Tom stormed his way into the club scene in late 2006 with a thirst for success and an eagerness to impress, inspire and entertain crowds around the nation. With his finely tuned ear and deftly nimble fingers, Tom was quickly noticed by promoters and club-goers alike. But it was his distinct versatile style and knack for reading a crowd that made the industry’s greats stop and listen. Australian music sensation DJ Kronic was among those who saw such tremendous potential and, with one quick swoop, Tom was tucked tight under Kronic’s wing. Mixing the freshest R’n’B and hip-hop tracks on the 1’s and 2’s, the pair harmonised like Vegemite and cheese together hosting a regular set for the very popular weekly urban radio show, The Jump Off, on Adelaide’s Fresh FM. “Working with Kronic is great [and] after we started there, I got a lot of notice from other people; other DJs in the industry,” says Tom. It wasn’t long until “The Apprentice” became the master and Tom was elevated to become one of the most in-demand club DJs both locally and abroad, with frequent guest stints in Melbourne and throughout Queensland as well as a club tour in his home country, the Philippines, which included a 5000-strong street party. Now residing in Brisbane after a few years of constant touring, Tom has managed to bag supporting acts for some of the music industry’s biggest names – think Lil Jon, Pitbull, LMFAO, Akon, Naughty by Nature, Bone Thugs and Harmony, Ice Cube, Snoop Dogg and Sisqo – as well as performing at after-parties including; The Smoked Out Oz Tour, Justin Timberlake, Beyoncé, And

1 Street Ball Team and Roc Tha Bloc Tour. “Being alongside them is inspiring,” Tom says, reminiscing on all the fun times spent with these artist. “It makes you want to be the best you can be so that, maybe one day, you’ll be the big name everyone has come to see.” In 2012 however, Tom is burying the word ‘urban’. In as little as two hours, a trademark DJ Tom Starks set encompasses every crowdrocking genre known to club-goers. Drawing inspiration from Vegas mash-up DJs such as DJ Vice, DJ Five and personal icon DJ A-Trak, who is currently sighed as Kanye West’s offsider, Tom moves through hip-hop and R’n’B to house, electro and even classic rock to keep drinks in hand, and hands in the air. “I always love to see the crowd moving, dancing, going crazy while I’m on the decks. I’ll do whatever it takes to keep ‘em on the dance floor. [But] you’ve got to have the courage to play certain songs. One time I dropped the ‘Macarena’ in a packed nightclub while I was just playing R’n’B and it absolutely went off,” he laughs. “You’ve just got to believe in yourself.” Setting his sights high, Tom says Las Vegas is next on the radar. “Vegas is number one. That’s where I want to be.” And who wouldn’t? After all, it is the party capital of the world! But Tom admits it’s not going to be an easy climb to the top. “It’s definitely going to be a hard road. In this industry, it’s all about knowing the right people, getting your name out there, putting your mixes up online and networking as much as possible. You’ve got to be consistent and keep playing good music, day in, day out. You’ve got to stand up and get noticed,” he explains. “I’ll keep working hard and if it’s going to be, it will be.” Until then, you can find DJ Tom Starks raising hands and heartbeats on the Gold Coast holding down residencies at the two hottest clubbing destinations in town, SinCity and Vanity.

Why can’t we make these politicians legally bound to keep any promise they make during the election campaigns?. If I make a promise to anybody, I keep it. No matter what! These numb-nuts promise the world they’ll fix everything, they’ll build this and repair that, etc. But as soon as they win office, they cry poor and say mundane things like, “We misjudged on our budget calculations, sorry, we can’t do those things anymore”. Out and out freaking lies, and I’m not pointing the finger at anyone in particular, they’re all just the same! How come the Mayor of the Gold Coast warrants more pay than the Prime Minister of this country? If this were Denmark, I’d say something was rotten! Now we’re told on July 1 our electricity bills will go up by 16 per cent. Give me a break! Seriously, do any of you guys have a money tree in your backyard? Nah, me neither! Okay, so there’s this months gripe from the Short One. Still on the subject of money, I paid for something recently that I’ve never paid for before in all of my 56 years (get your minds out of the gutter, it wasn’t that!). I

was a Lotto virgin! I don’t gamble at all on anything, but I succumbed to the enticing $70 million up for grabs the other Tuesday night. I purchased a $14 QuickPick and walked away thinking how I was going to spend all that money. Just put it in the bank and earn $4 million per year interest. Yep, I reckon I could just about scrape by on that! I even consulted my work colleagues (drinking buddies) at my office (pub) and the only one that made sense was Simmo. He said: “Shorty, you could’ve bought three beers with that $14!” He’s right, I never got a cracker and now I’m thirsty. Hey Simmo, shout me a couple ‘til payday. See you next Tuesday, cheers buddy. Loving all the emails I’m receiving but, no ladies, I’m not on the market. I’ve been married three times, all to the same woman (Richard and Liz eat your heart out) and they all ended in grief…and left me poor! To the lovely 84-year-old who wanted to take me to Players, you’re a doll but my ticker is obviously not in the same league as yours. Keep them coming though folks and I do personally reply to each and every one. Aside from that, my money tree is a bit sickly and return cab fare from Hope Island to Surfers is $140 and that equates to 30 ales at the local. No contest! How do I make my budget work? I often meet people who tell me the reason they gave up, was ‘because it didn’t work’. So, how do you make a budget work? Once you’ve made a start and organised a budget the toughest part is sticking to it. And you have to stick to it for more than a couple of weeks! It won’t work with an on / off attitude. Think about it – this could be one of the greatest challenges you’ll ever face. Why? Because you’ll be changing some habits that you never thought you had; plus you’ll also have to row against the tide of ‘peer pressure’. What habits? Well – for starters, there’s the habit of swiping your plastic card without thinking about how much you’ve just spent. Then of course there’s the habit of ‘just buying it anyway’ because you’d ‘really like it as a treat’, or buying it just because ‘it’s cheap’. Throw in a couple of shopping sprees for June 2012
things you ‘just want’ rather than really need, add a few take-away meals each week as well as a sprinkling of nights-out and you have the makings of a short-lived budget. Apart from the changes in the way you spend your money, you also have to cope with well-meaning family and friends who sabotage your plans to get your finances back in shape. They don’t mean to – but let’s face it – it’s not in their interests for you to blaze a trail in the savings account department. It might make them feel guilty about their own financial shape. How to stay strong with all these adverse outside influences? One of the first things you can do is to write your savings goal on a piece of paper, and then stick it where you will see it several times every day. This will remind you what you’re working towards, and why you’re doing it. Then, make a promise to yourself that for the next three weeks, you’ll only go to

the supermarket if you have a shopping list prepared. Make a pact with yourself that you won’t have any unplanned shopping trips, and also make the tough decision to buy only the things that are on your list. Do some planning in advance: weekly menus, family activities, and ways to spend your time without spending loads of money. Getting your whole household involved will make things easier over the coming weeks. Focus on the positive aspects of what you’re doing rather than the negative things you perceive you’re missing out on. It takes three weeks to change a habit, so don’t expect to wake up on the second morning and have everything under control. Get yourself a coach, or mentor; someone to give you encouragement when things get a little tough in the first few weeks. Spend time with positive people, and others who are going the same path as you. Sharing the load is always beneficial.
Making your budget work is a lot like losing weight. It’s not about trimming some fat for a while then falling off the wagon until the next time you’re either on a guilt trip or everything is too tight again. It’s a lifestyle change and once you realise that you’ll move forward in leaps and bounds. Of course, the only way to make your budget work is to actually get started and if you don’t know how, or what to do next – find somebody that can help you. With the amount of information available these days there’s no excuse for saying you don’t know how!
Where’s your money going? Have you ever wondered where your money goes? Does it seem to disappear into a black hole and even though you know you haven’t spent much, it’s just vanished? Well, here’s a thought – go and have a look in your cupboards. Yes, that’s right – your cupboards. All of them. You’ll probably discover that while your wallet is empty – your cupboards are full. You’ll possibly even find that some of your cupboards are over-flowing. Let’s dissect a couple of the obvious money-eating cupboards. The bathroom cabinet(s): How many tubes of toothpaste are in there? How many bottles of shampoo? And how many of those bottles are still half full? How many razors, bars of soap, deodorants or jars of hair products can
you see? Of course – the really big one – how many rolls of toilet paper are there? I know many people who have a ‘toiletpaper-fetish’. One girl has a whole shelf in her linen cupboard to store the rolls that can’t fit into her laundry cupboard. Another family has 105 rolls. Now considering they only use four rolls per week, that’s a 26 week supply, which is six months! But they still keep buying it because “it was on special”. Let me assure you – there is a ‘special price’ on toilet paper every week. If you don’t absolutely need to buy it, then you are not saving anything. In fact – you are wasting money! Let’s move on… your pantry. How many bottles of sauce are in there? How many tins of fish, fruit, or beans can you find? Can you count the packets of biscuits, cake mix, cereal, jellies and pasta? When was the last time you saw the back of the shelves? Put your hand on something from the back of the cupboard and check the use by date. Is it still current? Your pantry might be ok, but how’s your linen cupboard looking? How many towels and sheets are sitting there, still in their packaging, waiting to be used (same goes for the wardrobe - aren’t we all guilty of buying clothes we never wear)? I know lots of people that constantly buy things they don’t need because they’ve found items marked at ‘a good price’ or ‘on sale’. How many cupboards are in your

house? How much empty space is in those cupboards? You know, it’s quite ok to have empty shelves. The world economy might be looking gloomy – but the supermarkets are not going to close down overnight. It is not necessary to have a mini-supermarket in your house unless there is a sign out the front that says “welcome to the XXXX Family supermarket”. A few months ago, I visited a family of ‘shopaholics’. They have a very large house, which also means some very large cupboards - the pantry being almost the size of the bathroom in my house. Apart from setting up a new budget, we also spent a day doing an overhaul of their cupboards. I won’t dissect what we found but suffice to say they didn’t need to visit the supermarket for a month and that alone saved $1,000 – just from using the stuff accumulated in their cupboards first. he Olympics came early to the Gold Coast as the students, staff, old scholars, and parents of Saint Stephen's College (SSC) Coomera met on May 20 for a sporting battle of their own. Under near perfect skies, all involved with the FARA SSC Olympics managed to bat, bowl, kick, hit, spike and lob their way to a total of $45,000 in funds raised – a monumental effort in anyone’s books. The Old Scholars were successful in raising the trophy again as the 'winning nation' for the second year in a row. The parent, staff, and student teams battled valiantly, but lacked the skill and speed of the Old Scholars this year. The success of the day proved to be a true indication of what a community can do when they band together. Saint Stephen’s College united competitors, officials, volunteers, organisers, sponsors and master chefs (the egg and bacon rolls were first class!) to support two former students of the college who live with a debilitating and life threatening condition – Friedreich’s Ataxia. Funds raised go directly to research into a cure for this condition, affecting some 300 Australians. And while not wanting to single out any individual, Humphrey Firkins must be recognised for his contribution of $20,000 to the total raised. In the three years of the Olympics, over $160,000 has been raised in funds that will go directly to research into a cure for Friedreich’s Ataxia. Almost 40 per cent of all of these funds came by way of the most generous support of Humphrey, and the community remains eternally grateful for his support.

Kick Gurry all tangled up The tangled web of family relationships and dysfunction becomes even more knotted in the latest series of Tangle. We catch up with cast member Kick Gurry to chat about the show.
T
he rambling house across the road from Black rock beach is not so much shabby chic as authentically shabby. The paint is peeling; the wallpaper is curling and the floors upstairs creak so loud you’d almost think they were crying out for help. But the sunlight shining in through the windows overlooking the water’s edge is, quite simply, magical. These quirky characteristics of a well lived-in home are what make the Blue Seas house such a perfect setting for the latest season of Tangle. Now well into its third season, the award-winning pay-TV drama from the makers of Love My Way centres on the rather complicated lives of a group of loosely connected 40-somethings – mainly three women; ally Kovac (Justine Clarke), Nat Manning (Offspring’s Kat Stewart), and Christine Williams (Rush’s Catherine McClements) – and their children. “a lot of australian family dramas show what the ideal version of an australian family is. Mum and dad love each other very much, the kids cheat on a test but learn their lesson and everyone hugs at the end,” says Christopher “Kick” Gurry, who plays Joe Kovac, ally’s brother-inlaw of sorts. “This show is a version of life that is very close to reality. When life breaks, which pieces of that broken life do you choose to
hold onto and which pieces do you choose to let go?” Best known for his roles in Garage Days, Looking for Alibrandi and the TV series The Alice, Kick joined the cast of Tangle in season two. Season three sees Joe move in with ally, his dead brother Vince’s wife and her children, romeo and Gigi. While Kick says he’s not too much like his character, Joe, he does admit his current living conditions are somewhat mirrored. “He’s pretty different to me actually. I mean, the situation he finds himself in is kind of similar to my life in that he travelling a lot for work and then suddenly he’s living in this house with people he doesn’t know very well and that’s how I’ve lived the last 10 years of my life as an actor,” he smiles. “I’ll go somewhere, shoot a movie, I’ll get to know a family there or someone really well and move in with them, and hang out with them…I kind of ingratiate myself into their lives.” Joe, who was absent for many years due to his troubled past, is still trying to find his place in the family. “He views ally and her kids and the life around her as the life he didn’t get, the life he missed out on,” Kick says. “He’s the dysfunctional brother-in-law who’s awkward and weird. He asks to stay and doesn’t leave.” His relationship with ally is complicated, but

Joe is enjoying being an uncle to romeo and Gigi. “That’s the part I find most compelling; the teenage kids stuff. a lot of TV and movies reflect teenage lives as this non-stop hurricane of debauched mania but it’s really not like that. If you think about your teenage years, so much of it is just sitting in a park waiting for something to happen, getting stoned or sneaking beers out,” Kick laughs. “I always laugh at my friends who have teenage kids. They’re always telling them off and I think, ‘man, we did this stuff, how come they’re not allowed to do it?’” Joe’s presence is especially important for the brooding romeo, played by Home and Away’s Lincoln Younes, who seems to be lashing out at nearly everyone. “He recognises in romeo that he’s reaching that fork in the road that Joe reached, and he probably thinks he can protect romeo from making that bad decision,” Kick says. “You get this sense through this series that romeo is in deep water and he can’t tread anymore and Joe can get him out of it. But is romeo going to reach out and let this uncle help him?” Hmm…we shall soon see. Catch all the drama of Tangle Sunday nights from 8:30 on Foxtel’s Showcase.

nce the bills have been paid and the grocery shopping done, most families don’t have a whole lot of money left over for savings or luxuries. By changing just a few of your habits around the home, it could free up thousands of dollars a year. these habits are easy to modify, in fact everyone can live a little more ‘frugally’ very easily – and you know, you might even enjoy the changes!
1. Start cooking from scratch
cooking has become a chore these days. Most mums are so busy the thought of cooking dinner at night is exhausting. Bring the fun back into cooking! Make time to cook – and cook something you really enjoy eating. there is nothing more therapeutic in the world than kneading your own pizza base and using all those leftovers in the fridge to top it. Best of all – it’s cheap. the average home pizza costs less than $4 – for the entire pizza! and it tastes delicious too.
2. Make your own cleaning products
cleaning products cost a bomb from the supermarket (and many aren’t environmentally friendly either), but you can make them June 2012
yourself with simple ingredients you probably already have in your cupboard. from just $20 worth of ingredients you can clean your entire house for a whole year! think of those savings. Get out the classic white vinegar, bicarbonate of soda, essential oils and old newspapers and start cleaning; and remember it’s easy to Google tips on how to best use these ingredients for cleaning if you’re unsure.
3. Be organised
Keep your filing up to date and maintain a calendar on the fridge. Know when your bills are due and pay them on time to prevent overdue fees and a bad credit rating. shop around for the best deal on insurance – it doesn’t pay to be loyal anymore. Many companies are always offering ‘new member’ incentives, so shop around and get the best value for your dollar.
4. Re-purpose items around the home
Before you throw it in the bin – can you use it for something else? Use the back of old paper as colouring-in-paper for the kids. Old formula tins can be turned into money boxes or hold odds and sods in the shed. Keep old

magazines for cutting out, or egg cartons for kids crafts. If you have too many to store – consider donating to a childcare centre. compost all your old vegetable peelings. think about it before you throw it.
5. Keep your wardrobe timeless
Rather than going out and buying the latest in fashion – fashion that will look passé in six months time – spend a bit extra and invest in some timeless pieces that won’t date. Keeping a very smart but basic wardrobe will save you thousands in the long run, and will ensure you always look fabulous. think good pair of jeans, good pair of slacks, a smart black skirt and a few mix and match blouses. Don’t forget a good coat or blazer too. If you just HaVE to spend your money on fashion, go for something that will match your key pieces or invest in some beautiful accessories that will stand the test of time. consider your habits and refine those that will increase savings and reduce waste. Do you know your business?
s a small business owner it’s important to understand and control the inner workings of your business. Being in control can also be a daunting task and it becomes easy to sit back and let the business run itself and it’s often hard to regain the control and passion you had when you first started your business. Control can often include words like finances, income tax and tax planning, marketing, managing your team, employment law, industrial awards, customer service, pricing points and the list goes on. So let’s get back to basics! I want to focus on helping you take financial control of your business, and the best place to start, in my opinion, is knowing what total sales (turnover) you need to make in a year, to at least cover your business costs and your living expenses. This is called a break-even analysis, and is a fantastic tool that can: • Increase your profit and put more money in your pocket; • Help you understand your business better; • Help you with your pricing points and make sure you are covering all of your costs; and • Identify if you have a viable business before its too late. I often take this journey with my clients, and it’s important to me that my clients understand what it is, that I am saying. The key (and you are probably sick of your accountant nagging you about this) is to make sure your books and records are up to date and are regularly kept up to date. There are some great accounting programs that really are easy to use (and even take information directly from your bank and automatically follow up outstanding accounts!). The right system can make it easier for you to keep track of your business and of course we are here to help you too. If you don’t keep track of your financial records, you can’t measure and budget, and you can’t make quick and informed decisions. Enough nagging. once you have your books up to date you need to: • Calculate your fixed costs (which are those costs that don’t change proportionately with your turnover) such as rent, bank fees, accounting fees, interest, and stationery
etc. It is also important you include financial commitments in this calculation; • Know your gross profit percentage (cost of sales); • How much money do you need to live on? • Know your teams productivity (which in this context means in a given work week what per cent of time is directly related to producing the thing your customers pay you for). The total sum of your fixed costs is equal to the amount you need to sell just to cover those fixed costs and then you need to add to this your cost of sales to get the total turnover you need to “break-even”. However, what is the point of owning a small business just to cover the costs? You need to live and enjoy your life too! A personal budget is an important planning tool and identifies in essence the profit your business needs to make for you. You can then start adding in additional income, employ growth strategies, and hopefully include a tactic for you to have a break once in a while. So yes, you need to start working on that personal budget! this is just the starting point. once you have this basic tool we can then expand it to: • Calculate how much each person needs to charge (or sell) an hour to cover costs; • Calculate how much you need to sell a product for; • Does the market allow you to sell your product at a price that covers costs? • What happens If you employ more staff? Can you afford it? To touch a little bit on productivity (my favourite subject!), it takes time to monitor your staff’s productivity and if you are not doing it, you really should be. It’s not hard, just time consuming, and your team needs to be behind you 100 per cent, because it means completing time sheets and job cards. You should understand the difference between productive time and non-productive time. Productive time can include the time it takes to manufacture a product, the time your tradespeople are out on the job, assembly and packaging work, your sales team selling to your customers. Non-productive time can include tea breaks, administrative tasks (such as bookkeeping), marketing, networking,

education and the time your team may spend, say, on Facebook or what’s the latest Groupon special. Your team need to honest in completing their job cards, and the task might just start to improve their productivity and making you more money. Once you know this you can start working out what it costs you per productive hour. Did you know there are only 44.4 weeks in a year for work after allowing for four weeks holiday pay, sick leave and public holidays! This equates to approximately 1687 hours per year each full time person has to do their job! Once you have done all the hard work, got your books up to date and gathered the information, all we have to do is put it together and you can start taking control of your business. ow much sodium are you are you eating per day? there is a commonality with most households kitchens, restaurants, cafes and food processing plants. What is this, you ask? A regular addition to the communal table where we all sit to enjoy food and life, it’s called sodium, commonly referred to as salt. not only is salt used widely in cooking and to add flavour but it is ‘hidden’ in a wide range of foods in which you purchase daily. the problem in Western society is, like many things, we overdo it. Many companies add high levels of sodium to commercial foods to act as a preservative and flavour enhancer; this is generally done to cut costs at your health’s (and your family’s health) expense. the fact is, in today’s society we are consuming an alarming level of sodium on a daily basis due to high consumption of processed/packaged foods. Don’t be fooled - even your claimed ‘health foods’ like breads, June 2012
canned foods, dairy etc. are actually very high in sodium. on a daily basis from all food sources when eating a wholefood diet you do not want to be consuming anymore then 650mg to a maximum of 900mg per day. the average Australian (including children) is consuming a staggering 4600mg 4.6g per day which equates to around three teaspoons of salt, and with a section of society consuming more than 6g of sodium per day! At breakfast alone you and your family are consuming nearly your whole daily rDi for sodium intake and that’s just in the bread! Wraps are also a danger being not only high in sodium but many brands which claim to be ‘healthy’ are actually full of chemicals and often have huge ingredient lists that contain preservatives and high amounts of sodium. Bang in the Middle Irish gal Jillian Godsil became a divorcee. Her ex-husband became bankrupt and she was left with a million euro mortgage on a house worth half that. This is her story.
H
ow do you know when you are in the middle? Is it by age, class, life experience or even weight? As the Ardal O’Hanlon joke goes, everyone wants to know your weight at birth but no one wants to know at death. So how can we tell where we are? Age is equally arbitrary; genes and luck count in unequal amounts; some of the healthiest people I know have been struck down in car accidents, lives wrenched horribly short. Or do the gods wait for us to complete our own personal bucket list? And what if we are too conservative or wildly over-optimistic? Does that have any bearing on what we get to finish and can we keep topping that list up if we’re lucky enough to reach those ambitions? I’m hoping I’m only at the middle. It feels a bit like the story of Peter Pan when Tinkerbell pleads for everyone to believe in fairies. I’m hoping the same goes for second chances. Our lives, if experience be the key, are
defined by markers; chance happenings, major events, goals achieved or dreams lost. My hope for a second chance comes after one of those life-changing experiences: divorce. It’s like the sea parting for Moses. There was a before, and now there’s an after. Of course, when you hit a major marker you think it’s the marker; the one that defines who you are as a person. I could list half a dozen markers all of significant importance; going to Trinity College Dublin, working in the city of London, moving to Sydney, getting married, living in Singapore, having children, returning home, losing my father, writing my novel and learning to ride a horse. I think divorce is perhaps one of the more significant markers possibly because of its proximity to the middle of my life (again with that hope), the point where I must start again. And also, aside from childbirth, one of the single biggest disruptions to my life across the

board; emotionally, financially and socially. I remember being 16 years old and thinking the world had suddenly notched up a gear and was spinning a little faster than before. I asked my mother if things slowed up at her extreme age (she’d only just celebrated her 50th birthday but at 16, even a 30-year-old was a grandpa!). “No,” she replied, “It only gets faster.” Thinking about this article, I checked in with her again, now a sprightly 80. “No,” she replied, “it only gets faster and more precious.” And so it seems. Trinity for me was one of my first major new departures – the stepping-stone from childhood into adulthood. For four years I lapped up the special atmosphere that is Trinity. Summers were spent working as a waitress in the States and, while I loved it, I ached for my return to Trinity where I could stretch my mind. Of course I spent most of my June 2012
time doing the mundane; attending lectures, eating chips in the Buttery, drinking coffee in the sunshine that came each May before exams. But each time I walked through the front arch and thought, “wow, I study here!” I recently returned to a Trinity english Alumni Talk in the Long Room Hub. After my nervousness of trying to find the new building built long after I graduated (teenage angst all over again), I slipped back into that thankful state in which I called the best four years of my life. London was another departure, a literal one. I remember 10 years previously my eldest sister left to nurse in London for six months. The entire family came to the airport in tearful support reminiscent of famine emigration scenes. Fast forward to my departure in 1987 and only my parents were there to see me off; travel wasn’t such a big deal then, or else the world had collapsed enough for the move to be seen as a minor one. London in the late ’80s was fast, furious and loads of fun. Sure there were hurricanes and stock market crashes, but the blows didn’t seem quite as bad with boozy lunches and champagne breakfasts. The UK was all about sweaty tube rides in summer and late night trips to the curry house. It was in London that made my first, and financially disastrous, foray into property buying a lovely Georgian flat with a friend. “You can’t go wrong buying property in London,” I told my parents. Words that echo to my present condition. Oh, if only I had listened to myself! London was also the city of romance one Christmas. I met my husband and we paired like lovesick swain. Of course, my stories from here on in have all to be rewritten a little. The victor gets to write history and the divorcee… well, she gets to look at the pursuit of love with a slightly cynical eye. As those endearing traits much loved in a new romance can fester into irritating habits, so too the path to true love seems a little less rosy when viewed through the mirror backwards. Three months together and he was posted to Australia by the bank we both worked for. I always wanted to go to Australia. So here I was, engaged, homeless after my apartment sold for a loss, estranged from my family again (although I do recall more of a send off as Australia was definitely a long way from home), and then I arrived in Sydney. Now, this was a marker! I stepped off the plane and into a limousine rented by my fiancée for the special occasion (it was a new beginning so why not kick it off with a bang?). If London was fast and furious, Sydney was hot and laid back. Here I learned to love Shiraz and that oaked chardonnay that is so uncool today. I still love both since I refuse to follow fashion. We sunbathed in winter, June 2012
barbequed all year round and modified our twang a little. “How are you going?” replaced “How are you doing?” and instead of finding a “parking spot”, we found a “park”. And in the middle (had we but known it was the middle) we flew off to Fiji to get married on Valentine’s Day on a little beach with only a Fijian choir for company. So, now I was starting to grow up. I was starting to accumulate those additions that separate a girl from a woman. I had a degree, owned a flat, worked abroad and now I had a husband. Whatever next? Singapore was next. This brief two-year period was lived in temperatures of 30 degrees day and night. And here I conceived and gave birth to my eldest daughter, Georgina. There was no getting away from the fact I was getting all grown up now – I had a baby to prove it! Becoming a mother also made me homesick. I wanted to be in the cool mists that descend

from the Kerry Mountains and to walk through the damp streets of Dingle. The fact that I had never been to Dingle was irrelevant, I just had to go back to Ireland. Motherhood and motherland were inextricably linked. So too was fatherhood, or rather my father. Worries about losing him brought me home too. I was lucky: we enjoyed many more years before he died in his 87th year. The tragedy was that my father-in-law died two days earlier. The double loss was terrible since two grieving people are often no good to each other. So, we returned to Dublin. This was familiar ground again and I loved having my family so close again. We bought a beautiful Georgian house in Rathmines, I gave birth to my second daughter, Kathryn, and settled in for the long haul. But I got it very wrong… again. I said I would be taken out of my lovely home in a box and, while fortunately I was not, sadly we did sell up.
Next stop: Raheengraney House, the reason for this voyage through my life. Here was a beautiful manor house in very poor repair sitting in a field, a bit like the house in Father Ted. Of course, to ardent restorers, the worse the repair the better the challenge. My mother fell through floorboards in the attic, not seriously, but that only made us keener. Both families felt we were a bit mad but appreciated the challenge. The move was precipitated by my husband’s desire to change careers. He was tired of banking and was an excellent cook and so we thought we’d run a guesthouse. What we didn’t factor in was my extreme dislike of chamber maid duties and his propensity to behave like Basil Fawlty. A c c o r d i n g l y , Raheengraney House, like Lady Havisham in all her wedding finery, was made up with all the bells and whistles that could be found. She sat there waiting for her guests and she waited and waited. Ah, the lack of guests. This can be explained in two ways, or perhaps three. For the first refer back to the reluctant chambermaid and the grumpy chef; I have been reliably informed since that all chefs are grumpy. Then there was the rude awakening to the fact that running a guest house does not pay very well. Finally, my fledging newly formed public relations business had taken off and the bills were better paid from the basement where I lodged my office than from the glorious bedrooms and their fine views. Around that time, my life settled into a rut. You might imagine that I would have welcomed such as rut after all the house-jumping and country-hopping I had experienced. And yes I did, although it was not without its complications. The most glaring disruption to our lives was the reversal of roles. Previously my husband had been the main breadwinner, although I worked furiously behind to catch up. Now I was the sole breadwinner and he diversified into other fields; gardening, construction of a guest cottage, green energy, furniture-making, even writing at one stage. Sometimes it’s only when roles get thrown up and reversed that cracks can appear. It took some time but our compatibility issues came slowly to the fore. even I, the most dreadfully optimistic person you could hope to meet, began to feel that all was not what it should be. I was horrified to discover I couldn’t see myself settling into old age with my husband, especially when the children
would have left home. It was a terrible feeling but one that I couldn’t ignore. I didn’t feel at all in the middle, it felt more like the end. But how does one begin the hardest journey of one’s life? One step at a time. With feet like clay, I began that process. I had no idea how hard it was going to be. I was so naive to think a marriage could be unravelled as easily as it was made. It was like going to see a romantic comedy only to discover you’d settled in to the dark thriller next door. And in that journey I lost my husband – albeit that I did the losing, all my financial security, most of our joint friends and my social status. There’s a powerful prayer often spoken at
funerals. It speaks of God and man walking hand in hand with their footprints together in the sand. At the darkest point, the footsteps reduce to only one set and the man asks, “Why did you leave me when I needed you most?” but you sense a ray of sunlight when God replies, “It was then I was carrying you.” So too is (or at least was) life. Of course journeys aren’t all gloom and doom, not all lost baggage and interminable delays in hot airports. There are many resting places, beautiful and unexpected vistas at the turn of the road or kind words spoken at the end of the day. Selling my house on YouTube has been one of the surprising vistas. If I may step back and explain. Alliteration is a funny thing. With divorce, comes depression, desperation and debt…lots of debt. As part of the divorce, our lovely Georgian manor house was put on the market. It failed to sell. My now ex-husband returned to the UK. The mortgage, with arrears, soared to the million mark. The house value, now with tenants installed, sank to the half million mark. My ex became bankrupt and kindly gave all the debt to me, every last cent. In desperation, I made a video and tried to sell the house. To my amazement the video went viral in April 2011. The interest and the coverage was shocking, amazing

and wonderful, if a little exhausting. There have been many remarkable moments in this episode and one of the best stories comes from Mark Little, journalist and cofounder of Storyful. He was in New York during the second week of the video going viral and got asked about my house from people in the The New York Times and The Huffington Post. Wow, I had arrived. Within two weeks I had a cash buyer for my house, but for half the value of the mortgage. I celebrated, prematurely as it turns out, and asked the bank to join with me in the sale. I waited and waited; they refused and refused. And after three long and frustrating months my patient buyer went away. So I was back to square one. I still own a lovely Georgian manor house but the grass has now grown up to the windows. I have sold the curtains from the rooms, the granite troughs from the gardens, the ovens from the kitchen. It hurts like a knife each time I take something away from my house but I have to live. It and I are in a state of stasis. The past four years have led me to the middle but it’s not all bad. As my mother reminds me frequently, “ever onwards and upwards, maybe sideways, but never backwards!” In my four-year journey from married woman to new me, I’ve had some of the most fantastic experiences, intense joys and discovered a sense of confidence I never knew existed. My first step felt like the first step of my last journey, but now I know and hope it’s only one of many, many more. I learnt to ride a horse (and have even won a national showjumping competition or two since); I wrote my first novel, Running out of Road, and have begun my second; I learnt to cook (before, my children said I burnt pizzas but, hey, four years on and they haven’t starved), I found beautiful new friends, watched my girls grow into little women and have recently watched my eldest learn to drive (which caused my heart to palpitate for different reasons); I’ve been signed up by Assets Modelling agency; learnt to love the treadmill at six o’clock in the morning, and I’ve taken the time to put my feet up and get stuck into a great book. I’m not saying I haven’t make a heck of a lot of mistakes along the, but I’m truly enjoy my life now and I get to laugh a lot. So where am I? I really hope I’m only in the middle. I
recently had the opportunity to experience the wonders of China with Kumuka. I have always wondered what it would be like to be but one person in a city of 23 million like Shanghai or Beijing and I got to experience the bustle of these two major metropolis’s. Beijing in particular is astounding with it’s huge cross-city highways and amazing architecture both modern and ancient. Actually, if you say “Beijing” (which means “Capital”) the wrong way then you are saying “Parking Lot” and that is an apt description that is! But getting out of town and up to the engineering wonder of the Great Wall you get to see where the modern day Chinese get
their inspiration for building amazing things. One of these was the fast train south to Shanghai which is over 1,300 kilometres away but only 5 hours at 306 kph on a smoothly curved elevated track. Don’t blink because you’ll miss villages with farmers tending their fields. Shanghai is the commercial centre for China and you can feel the wheels of business turning. The skyline is futuristic when viewed from The Bund where the western traders first set up shop back in the 1800’s. But nestled in between modern high-rise towers are temples and markets where you’ll find amazing shopping bargains
for silk, tea & jade jewellery. The end of my trip was the highlight as Shanghai Airport, located 30 kilometres outside of town, has a direct train link with a difference. The “MAGLEV” or magnetic levitation train is one of a kind in the world, this train does 431 kph making the journey time only 8 minutes! 8 Weight Watchers Choc Chip Cookies 6 white marshmallows, halved 4 squares (20g) dark chocolate 150g fresh raspberries
Method: 1. Preheat oven to 200C or 180C fan forced. Place half the biscuits,
top--‐side down, on a workbench. Place 3 marshmallow halves, cut side up, on each biscuit. Top each with a square of chocolate. Sandwich with remaining biscuits. 2. Wrap each biscuit stack in foil and place on a baking tray. Bake for 5 minutes. Carefully unwrap and discard foil. Serve with raspberries.

Chicken saltimbocca ingredients:
400g baby (chat) potatoes, quartered 2 x 250g lean chicken breast fillets, fat trimmed 1 tbs olive oil 4 slices (50g) prosciutto, fat trimmed, thinly sliced 1/cup fresh sage 2 tsp white wine vinegar Lemon wedges, to serve
Method: 1. Boil, steam or microwave potatoes until tender. Drain. 2. Meanwhile, cut chicken fillets in half horizontally. Cover with a
sheet of plastic wrap and use a meat mallet or rolling pin to gently pound to about 5mm thick. 3. Heat half the oil in a large non-stick frying pan over medium high heat. Cook chicken, in batches, for 3–4 minutes each side or until browned and cooked through. Transfer to a plate and cover to keep warm. 4. Heat remaining oil in same pan over medium high heat. Add prosciutto and sage and cook, stirring, for 2–3 minutes or until crisp. Add vinegar and cook, stirring, for 1 minute. Add potatoes and cook, stirring, for 5–6 minutes, or until golden. Drizzle chicken with any pan juices and serve with potato mixture and lemon wedges. serVe With: Italian salad made with rocket leaves, 12 fat free semi-dried tomatoes, 12 (45g) pitted kalamata olives and 5g shaved parmesan cheese.

1 sheet frozen reduced-fat puff pastry, just thawed 2 tbs almond meal 1⁄3 cup (85g) apricot jam 600g canned Weight Watchers Apricot Halves, drained 1 egg, lightly beaten 1 tsp caster sugar 1 cup (240g) low--‐fat vanilla yoghurt, to serve
Method: 1. Preheat oven to 200C or 180C fan-forced. Line a baking tray with baking paper.
2. Place pastry on prepared tray and sprinkle with almond meal,
leaving a 3cm border. Dollop teaspoons of jam over almond meal. Arrange apricots, cut side down, over tart. 3. Fold in pastry edges to make a border. Brush borders with egg and sprinkle with sugar. Bake for 15–20 minutes or until golden. Serve with yoghurt. tiP: You can use canned peaches, pears or plums instead of apricots.

asual by day, chic by night, Glass Dining & Lounge Bar has been created through an understanding of the Australian lifestyle, with grace, poise, flair and an excellent taste for the local market. Owners Patrick Gennari and Shanan Harmelin have partnered to shape and carefully perfect a sleek and sophisticated elegance at Glass which the Gold Coast has long been awaiting. With the eve of the restaurant’s third birthday looming, what better way to rustle up the Executive Chef, David Pommier, for a chat about his menu and the chance to visit the Oyster Bar and see his team in action. French food connoisseur David Pommier comes from a long line of foodies and has shaped his lifestyle around creative superb cuisine. After studying at the Culinary University in Auxerre, France, from the young age of 16, David was fortunate enough to experience many privileged opportunities travelling through his home country, as well as America and Australia, working alongside some of the finest and well-known chefs in the world. Now he’s treating diners of the Gold Coast to his modern Australian dishes, with a French twist, at Glass Dining & Lounge Bar. Where did your flair for food begin? At my grandparents’ home. They lived in a castle on a farm, which provided us with the chores of working in the vegetable garden and preparation of the chickens and rabbits. Cooking this traditional French cuisine from a very young age provided me with cooking techniques and a greater understanding of food to help put me where I am today.

Your first memory of food? There are so many! I would wake up with my Grandfather every morning and for 2 hours we would go out on the tractor to feed the animals. We would collect wheat from the dungeon and drive the tractor around the farm throwing the wheat behind us. It was such a site to see that we were being followed by a range of animals including deer and rabbits. Your culinary hero? Marc Haeberlim without a doubt. He has a cool temper and is straight down the line. I have never heard him even raise his voice – something which is very uncommon in a busy kitchen. His father Paul Haeberlim was a pioneer in fine dining in France. I respect their vision in the kitchen and everything they stand for. You can’t go past my wife’s cooking Other than my wife’s cooking you can’t go past Sushi for a good cheap eat. Your funniest kitchen moment? When I worked in Sydney, I went shopping with one of the chefs for a new mandolin. The chef opened the tool to test the blade and, with a clean swipe, chopped the top of off his four fingers. While it was a pretty serious injury, instead of worrying about it at first, he just looked up at me, smiled and said, “I’ll take it!” Your last supper would be…? Pan-fried fresh foie gras lobe with peeled grapes and sauterne sweet wine sauce – my favourite!

ransfusion, the latest production from Dracula’s madhouse cabaret, is set to open next month and as time draws near, the intensity rises as rumours of change waft through the air. Injecting each member of the audience with a hypnotic dose of 21st century pop-acid vaudeville, the new fast-paced variety show is a complete departure from the typical theatre restaurant table-slapping cliché. The launch of Transfusion also celebrates Dracula’s revamp of the popular venue’s long-standing dinner show format. This month we spent time with the delightful and insightful Madonna Williams - talent manager to some of our favourite celebs like Lincoln Lewis, and popular local yoga aficionado.
W
here did you grow up? In Brisbane, but I spent all my school and uni holidays on the Gold Coast, and Paradise Point is my home. My favourite memories on the GC are the Hollywell caravan park during the primary school years with best friends. In high school I’d stay with my mum at Mermaid Beach and discovered the ‘surfie chick’ days hanging with my friend, Cindy, who is still one of my besties living at Mermaid; and Laurel, now on radio and The Great South East.
Tell us a bit about your ‘day job’?
My day job for Williams Talent (www. williamstalent.com) varies from phone calls, emails to meetings, watching tapes and creating pitches/promotions. Most of all I deal with management, auditions and job bookings for Lincoln Lewis.
Any spectacularly surreal Williams Talent moments that you can share? The Logie wins are a highlight, including the Best New Talent for Lincoln Lewis. Also the 2011 Future Star of Tomorrow awarded to Lincoln voted by industry professionals at the Producers and Directors annual conference. Surreal as well to meet a few major celebs such as Cate Blanchett (class!), Hugh Jackman’s wife Deborah Furness (divine!), Eric Bana (solid!), George Clooney (cheeky), Chris Noth aka Mr Big (Umm...very healthy
ego!), and Heath Ledger (charming). In 2009 we hung out with Chris Hemsworth in LA and it was surreal to join him as guests on the red carpet for the premiere of Thor in Sydney in 2011. I also met producer/director icon Gary Marshall (Pretty Women, Valentine’s Day, Happy Days). We were invited to the private premiere of his son’s (Scott) film, All’s Faire in Love, and it was also Scott’s birthday which happened to be my birthday so I got all the well-wishes too! Most recently, Lincoln scoring a role on Will Smith’s film After Earth is definitely the pinnacle of my work so far!
You’ve been developing Zen Soul Yoga, tell us a bit about the concept?
Zen Soul Yoga is the fruition of my 15-year passion for Yoga (and 10 years teaching). Originally Yoga teaching was part of my goal to create balance in my life. After studying Yoga I now have a much deeper connection to the postures and the science. It never ceases to fascinate me the effects on people’s lives. Most recently I’ve learned that a world leading neuroscientist has included Yoga therapy for his clients and teaches the benefits of Yoga at international conferences. Ultimately my goal is to stream Yoga to the world as much as I possibly can. Apparently we all have a dharma (purpose in life) based on our passion and unique abilities and I think this could be one of mine.
What’s one simple yoga/meditative tip that you would encourage those new to yoga to adopt in everyday life?
Find a comfortable and relaxing spot in your house. Choose a time when others are preoccupied or out. Play some soothing background music, tune into any nature sounds or water features. Lie on your back with soles of feet joined together and knees open out to the side (Bhada Konasana/ butterfly legs) and lift upper back to tuck shoulder blades under (this seems strange but it draws shoulder blades down back and relaxes shoulders). Close your eyes and start to notice the natural rhythm of your breath, feeling the cool air expanding the nostrils, throat and chest as you breathe in, pausing at the top of the breath and then pressing the warm air through your nostrils as you breathe out slowly. Take each breath longer, deeper and slower into the body visualising your cells smiling with new energy on the inhalation and sighing with relief as you breathe out the toxins and stale air. Continue for 10 long, slow deep breaths with this awareness. After the 10 breaths, draw the knees together and lengthen the legs (still lying flat on the back) and allow yourself to be still. Listen, feel and stay present to how your body feels. Enjoy another 10 minutes of deep relaxation in this position.
