Easy Beef Enchiladas Ingredients: 1 lb lean ground beef or turkey 20 ounces of enchilada sauce (recipe on our site) 1 cup green chilis, seeded and minced 8 soft flour tortillas 2 cups shredded Cheddar cheese Optional- sour cream, chopped green onions or more cheese Directions Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray. In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles. Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/4 cup beef mixture down center of each tortilla; sprinkle with 1 tablespoon cheese. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese. Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving. Add sour cream, chopped green onions or more shredded cheese. Yum!

October 2017 Dear Our Towne Readers, Happy Fall! It is officially upon us, even though as I write, I have the air conditioner running on this hot afternoon. This October issue is absolutely packed with great community events such as, fall festivals, corn mazes, hay rides, recycling days,car shows and craft fairs. What a beautiful time of year to enjoy living in Our Towne. The many family farms and greenhouses in Our Towne count on your patronage. They are paying local taxes and live in your community. Remember this before buying local produce or seasonal products like pumpkins, mums, apples in a big corporate store. The advertisers in this issue absolutely need your support if they are to survive. Think about how much power you yield when you spend your hard earned money. Small, local businesses will not survive if you choose to spend money at large, chain stores. Jewelers, Florists, Hardware Stores, Tire & Auto Centers, Bakeries, Pet Stores,Gift Shops... they need our business to keep going. Please think about how you spend your hard earned dollars. Local businesses such as the staff at Pondview Pediatrics, Drumm Vet Clinic, YMCA swim club, many churches and organizations have filled thousands of boxes. The boxes go to over 90 different countries to children suffering from war, famine disease, natural disaster and poverty. Each gift (box) is a tangible expression to a hurting child that they are loved ad not forgotten. You can even track the boxes and find out when and where they were delivered! Millions of volunteers take part in this program each year; and it is growing rapidly. How do you fill a box? First, select boy or girl and one of the 3 age groups: 2-4,5-9,10-14. Then fill the (shoe or plastic) box with school supplies (use for all age groups), hygiene items and something fun like a stuffed toy, balls, jump ropes, toy cars. Include $9 donation to help with shipping. There are also boxes available at Hobby Lobby that can be filled. Filled boxes are to be dropped off at The Immanual Church behind Speedway (the old Hess) at 1955 Ferndale Road in Schodack. The collection schedule is as follows: 11/13 from 10-2, 11/14 from 2-4, 11/15 from 4-6, 11/16 from 4-6, 11/17 from 4-7, 11/18 from 10-12, 11/19 from 12-3 and 11/20 from 9-11. 7 Tips for Packing and Moving By Cathy Graziano
Hopefully when you move, you'll have lead time – and a lot of help. But in case you don't, here are a few tips to help maximize what time you do have. 1. Gather your tools Pick a place to be your packing station so you don't waste time constantly wandering the house, hunting for your Sharpie or the right-sized box. Stock it with plenty of tape, boxes of various sizes, bubble wrap, newspapers and markers. 2. Stick to a strategy Pack vital things together, in specially marked boxes. This includes what you'll want on your first day, like sheets, pet food, electronics chargers, toiletries and a change of clothes. Then pack one room at a time and label boxes by room. It's helpful to color code rooms, whether with markers or strips of duct tape. 3. Use plenty of trash bags To avoid confusion, buy them in two colors, one for packing and one for throwing things away. Don't be afraid to pack clothing and linens in the big plastic bags. You can squish them in between boxes to save space. 4. Fill your drawers If you're using professional movers (and not friends with sensitive backs), pack your dresser drawers full. Otherwise, you're wasting space. 5. Watch your weight Fill big boxes with lightweight items and small boxes with the heavy stuff. It'll help prevent the boxes from breaking down. 6. Don't get hung up on clothes Wardrobe boxes make it easy to simply transfer your clothes on hangers rather than bothering with unhanging and folding.

PREPARING FOR THE UNEXPECTED
The recent Harvey and Irma hurricane disasters serve as a reminder that natural catastrophes can occur any time. While we are fortunate in upstate New York to not be vulnerable to some disasters, such as hurricanes and earthquakes, where our pets are concerned, we do not know where and how tragedy may strike. Lost pets account for its share of unexpected misfortune. The American Society of the Prevention of Cruelty to Animals conducted a survey and found that 15 percent of lost dogs were recovered because they were wearing an ID tag or were microchipped. Their survey also found that only 6 percent of dog owners and 2 percent of cat owners recovered their pets at shelters. The ASPCA estimated about 710,000 shelter dogs and cats were returned. Those returned pets were among the approximately 6.5 million animals that enter shelters nationally. Those numbers highlight the importance of permanently identifying your pet. Attaching an engraved tag to a collar is probably the least expensive identification method. However, it’s temporary. If the dog or cat becomes separated from the collar, perhaps it gets snagged on a fence, the pet no longer has identification. Microchipping is permanent. A microchip, the size of a rice grain, is injected under the skin, usually near or between the shoulder blades. A handheld scanner passed over the area will detect the microchip and display the chip’s unique code. If the owner has registered the microchip, which is as simple as filling out an online form, the pet can be identified. The importance of registering the chip cannot be overstated. Frequently we see dogs with chips that have not been registered, which is as ineffective as no chip at all. Some owners are concerned microchips are not reliable or local shelters will not have a scanner to detect all chip types. While these may be valid concerns, according to the American Veterinary Medical Association, the benefits outweigh the risks. A microchip increases the chances your pet will be identified. Microchipping a cat may seem like odd, but it’s a good idea. Even strictly indoor cats can slip outside and, arguably, they need it the most because they are not outdoor savvy. The ASPCA estimated that while annually slightly more dogs enter shelters than cats, 860,000 cats are euthanized compared to 670,000 dogs. It’s not as expensive to microchip a pet as one might assume. Depending on the type, it may not cost more than a dinner for two at a casual chain restaurant. Talk with your veterinarian about the microchip he or she carries. There are brands with an all-inclusive single fee, which includes the chip as well as a lifetime registration for your pet. All you need do is keep your contact information up to date (including new owner information). In most disaster preparedness plans for pets, microchipping is a recommendation. It is a simple way to permanently identify your pet should your dog or cat become separated from your family. Disasters are never planned; you can only prepare for them. —Florence Sanford, CVPM

Kristy’s Barn has been apart of Schodack for three generations. Kristy’s Barn was established as Glenwood Fruit Farm in 1910 by Kris’ grandparents, Fred and Jessie Lemka. In these early days her grandfather sold water, honey, planted fruit trees, milked cows and had an egg route. In 1951 Kris’ parents, Ray and Sue Lemka, bought the farm and increased the orchard, started pressing cider, and purchased the First United Methodist church’s former building on Rt 9 and 20 and opened a retail market, Appleland Farms. In 1994 Ken and Kris Johnson bought the farm and moved the retail market to the farm on Brookview Road and opened Kristy’s Barn. Since then the farm has continued to take many different directions adding pastured raised chickens, farmers’ markets, vegetable production, U-Pick , 100% solar energy and a CSA (Community Supported Agriculture). Our farm’s enterprises have continued to change as our community needs and farmers’ desires have changed but our incredible view of the Helderberg has remained a constant! The North Chatham United Methodist Church will be holding their 69th annual Lord’s Acre Auction and Sale on October 14th. The church is located at 4274 Route 203 in the hamlet of North Chatham. A Family By Any Other Name By Daryl Bart
I didn't get to see my grandma before she died last month. I mean, I meant to. There were alway so many excuses for not going down to NYC more frequently. It had been a few months. I definitely didn't call enough. The news was sudden yet not unexpected. She spent a decade battling various ailments, diagnoses, injuries and unidentifiable symptoms. Her decline seemed lengthy and I wished she could be more comfortable, her body being ravaged daily by the unyielding tremors of parkinsons, or something like it, while she stoically endured other things too, too private to share. It was her way. She wasn't related to me by blood. Not my “real” grandmother. My grandfather had married her the year I was born. So you know that was almost 50 years ago. I don't know how I'd consider her anything but my grandmother, although truthfully we always called her by her first name. Maybe that was her choice. The kids called her great grandma, and that was our choice for sure. I know she loved the distinction. The day after she had passed away alone in her apartment, I was saddened to learn that the state doesn’t consider us related, by law. Although she was in my family longer that I was, we have no civic connection. Only a pile of forms, red tape and stress, for something we could have never even imagined, were there for us to navigate, to see her to peace. The stress and ridiculousness of the “system” got me thinking about family, my family, my idea of family. Most of our own special events have a variety of “usual cast mates” that range from immediate relatives, in-laws, aunts & uncles, ex-step parents, current significant others and friends. I have nieces and nephews that are born of my sisters in-law and some that are adopted from other countries. All family. Not all blood. A tapestry of colors that makes a rainbow pale by comparison. There are the family friends, those that are often at the table, on vacation or who we reach out to first in every situation, crisis or success. They are most certainly family. And as close as all of our kids have been over the years, hey, you never know, maybe becoming ”real” inlaws one day is in the cards (a girl can dream). My sister has another mother. Both are cherished beyond words, my family. My brother has a son I don't know very well, due to circumstances, and states that separate us. He is family. In our life, the people most important to us are different. Some are churchgoers while others have turned their backs on religion, not finding the answers they need under that umbrella. Some have moved away to find their fortune leaving us to glean what’s happening thru facebook posts and random updates. Some have such opposite opinions about politics that the topic is forever off the table as there is absolutely no common ground. They are still family. So, while we lost a special person, I’m comforted that my grandmother is no longer in pain. She missed my grandfather everyday for a dozen years. She never forgot a special occasion and always cheered us up with a sweet note. She was the first person I knew to protect the environment, care for her pets into double decades and watched as she planted trees and grew a garden. She taught me to cook when I was little and trusted me to flip the pancakes. She was the good guy to my grandfathers more strict rules, and gave us a secret wink when we didn’t quite have the table manners they expected. I love that they came to my first play in summer camp, shared stories and photos of their unique and far away travels, encouraging me to be adventurous, and even visited me in Albany to see my very first apartment. They got to see me graduate, become a business owner, build a house and get married, in that order. They met my children and had tears in their eyes because family is that important and that special. She was always supportive, never negative, always hopeful, had seen the world and loved deeply. I never realized how much she shaped me and the way I view the world, and regardless of what the state says, my grandmother was my family and she will be missed.

Martha Lasher Warner, founder of the non-profit organization, began the program after the tragic murder of her daughter, Liza Ellen, by her husband in their home some 11 years ago. Joining the Family and Friends are members of the Bill Hart family whose daughter, Nikki L. Hart, was also a murder victim at the hands of her boyfriend in 2012. Funds from the event go to Troy’s Unity House program for domestic violence awareness which offers educational presentations to middle school and high school students, as well as to Nikki’s daughters’ educational fund. Nikki left behind a one and two year old at the time of her death. The looked-forward-to event begins at 6pm that Saturday evening and will begin with a cash bar and auction followed by dinner at 7pm. The implant saga continues. It’s not too dramatic but going from having a tooth, to losing a tooth to planning and getting an implant is definitely a process. While I help my patients plan for implant placement and restoration every day, now that I’m doing it, I’m simply sharing the experience, so you can see what it means and maybe answer some questions you have about implants. So let’s recap. Last you heard, I broke a rear molar. That tooth needed to be extracted because it was what we call “non restorable”. There was not enough tooth left to hold a filling or a crown, and we detected an internal defect. This is the most common situation I see in my office. A tooth that has had repeated fillings over the years, gets weaker each time it’s repaired. Then if something happens to it, sometimes there is no structural hope for restoring it and a decision is made: wait and see, extract it, replace it with an implant. In my case, it was sharp. I had to do something. I had it removed (no I didn’t do it myself) and have planned for an implant. After the extraction, where I also received a bone graft in the space left behind by the big ol’ tooth, I returned to the surgeons office for follow up. We took a 3-D image of the area to see if the healing and if there was sufficient bone present to safely place an implant. There are guidelines on how wide and thick the jaw bone has to be in order to place the appropriately sized implant. And we are talking millimeters here, so it’s important to be as accurate as possible. An implant is basically a screw that goes into the bone, so it needs to be solid like wood, not thin or soft, like drywall. In my case, the width is excellent, but there is not enough height to place an implant. Plan B. I’ll be undergoing what is called a sinus bump or lift at the time of implant surgery. This will create more height for the implant by lifting the lower wall of the sinus which is right above the space where my upper molar used to be. So my dental adventure continues and I will keep you posted as to the next steps. As always, ask your dental professional. We are here to keep you smiling. Q: I feel my hearing aids aren’t giving me the benefit I was hoping for, is there anything else I can do to help achieve more? A: Many patients get new hearing aids and experience significant improvement in hearing. Hearing aids are finetuned instruments taking into account the shape and size of patient’s ear canal, and communication needs. He or she should hear better in most situations. The patient may find he or she continues to have some difficulty hearing in groups or when in background noise. This is a common experience for hearing aid users of all ages and experience levels. We counsel our patients to use good communication strategies: face the person you are speaking to, reduce the background noise whenever possible, and know the topic of conversation. These are helpful strategies for difficult listening environments in the moment. Is there something a patient can do to prepare the brain for listening before entering into a difficult listening environment? Using hearing aids and learning to use sound in a productive way again is a process. Once a patient has adapted to hearing aids, he or she may find that the benefit from the has aids plateaued. If this occurs, auditory training can be a productive step in the rehabilitative process (Ross, 2011). Auditory training is considered to be any focused listening activity, with the goal of optimized speech perception (Ross, 2011). The idea behind auditory training is that the brain continues to change and learn based on the input it receives. Research has shown that an auditory training program that is appropriate for the listener and sufficiently intense can be beneficial for hearing aid users (Ross, 2011). With the availability of the information through the Internet, several auditory training programs have become more widely accessible. The idea is training the auditory system in a structured environment will generalize to a person’s everyday listening situations. Some auditory training programs that are available include Listening and Communication Enhancement (LACE for short), Angel Sound, and ReadMyQuips, among many others (Olson, 2017).
