Summer Corn Salad

Ingredients
• 2 ears of fresh corn • 2 Roma tomatoes, chopped • 2 green onions, thinly sliced • ½ jalapeno pepper, seeded and finely chopped • 2 tablespoons of olive oil • 1 lime, juiced • ½ teaspoon of salt • ¼ teaspoon of pepper
Instructions
1. Cut the corn kernels from ears. 2. Toss the corn kernels with the Roma tomatoes, green onions, and jalapeno pepper in a medium sized bowl. 3. Combine olive oil, lime juice, salt and pepper in a small bowl. 4. Pour the olive oil mixture over the corn mixture. 5. Toss and chill. 6. Serve (and watch the smiles appear!)
