Summer Corn Salad

Ingredients
Instructions
• 2 ears of fresh corn
1. Cut the corn kernels from ears.
• 2 Roma tomatoes, chopped
2. Toss the corn kernels with the Roma tomatoes, green onions, and jalapeno pepper in a medium sized bowl.
• 2 green onions, thinly sliced • ½ jalapeno pepper, seeded and finely chopped • 2 tablespoons of olive oil
3. Combine olive oil, lime juice, salt and pepper in a small bowl.
• 1 lime, juiced
4. Pour the olive oil mixture over the corn mixture.
• ½ teaspoon of salt
5. Toss and chill.
• ¼ teaspoon of pepper
6. Serve (and watch the smiles appear!)
