Food brings people together, like good ingredients come together in a soup. That is what Curaçao’s own soup queen wants, unity and good times. Vanessa Abad, also known as Ness, owner of ‘Soup at Ness’, has brought a simple yet addictive concept to the masses. Every other Saturday, she serves up healthy soups in a very special way and Go Weekly came to get a cup. By: Hayson Nicholls | Photography: Nestor G. Zavarce

Who is the woman behind ‘Soup at Ness’? "I am 36 years old. I have a bachelor’s degree in Law and a Management Assistant degree. None of these have anything to do with cooking, but I have learned a lot about myself during these studies which is helpful until this day. After living for fourteen years in Rotterdam, and after a long vacation on the island, this funny feeling that I’ve never had before came up. That feeling that it is time to return to Curaçao. And so I did."

How did the concept of ‘Soup at Ness’ come about? "I love the world of art. One day I heard of this open air art expo at Sint Joris called 'Bizar Bazar'. One of the organizers heard I could cook, so he asked me to bring something to the event. I decided to make some soup. I sold all my soup and people kept asking when I would make some more. This was not the initial plan, but due to the high demand, I started doing it every other Saturday, but then in my front yard."

Is this also a consequence of your passion for food? "Not really. It was more so that I thought people should be eating healthier and for a good price, because eating healthy in Curaçao is quite expensive. It should be accessible to everybody, especially kids. Good food is essential. Besides that, I am a nature lover who believes that we should do more to preserve our envi-

ronment. I use wooden and recycled materials instead of plastic. Lastly, togetherness is also what I aim for. People coming together to have a good time, share stories and eating a healthy bowl of soup. That is why I really do it."

Why specifically soup? "Soup has so many ingredients that make it a healthy meal in one bowl. And like I said before, soup or food in general brings people together. I remember this from when I was

What types of soups are on the menu? "There are always 2 soups on the menu, one veggie and a non-veggie. Our pumpkin soup is almost always available. Next to this vegetarian soup we serve meat soup, dhal soup, or ginger chicken soup."

What sets you apart from other people selling soup? "The fact that I don’t use any packed or processed products. I strive to make the soup with as many fresh products and as organic as possible."

What does a Saturday at ‘Soup at Ness’ look like? "We start at 11 AM. Music is a very important factor in the ‘Soup at Ness’ experience. We don’t play mainstream music. It all depends on

my mood. You may hear jazz, reggae, hip hop, bossa nova and so on. You should experience it as a get together of friends and family with great food and good music."

Any plans for the future? "I am afraid to answer that question. You can have as many plans as you like, but if things have to go another way, they will, regardless of one’s intentions. My philosophy is to keep it real. Listen to what’s around you and react to it." In need of something sweet to go with your soup? Spicy corn and avocado soup Ingredients • • • • • • • •

¼ cup olive oil 1 yellow onion, roughly chopped Kernels from 2 ears of corn 4 cups organic free range pacific chicken broth 1 large avocado, peeled and pitted 1 fresh jalapeno, roughly chopped Kosher salt Optional garnish: avocado, corn kernels, chives and olive oil

Carrot soup with almonds and feta

500g of carrots 1 large onion Piece ginger 5 cm 750 ml vegetable stock 400 ml coconut milk Fairtrade Juice of 1 lime 100g toasted almonds 200g feta Coriander

In a medium-large pot over medium-low heat add the olive oil and the yellow onion. Cook while stirring often for 7 minutes, and if you need too lower the heat to keep the onions from browning, do so. The onions should be soft and translucent when you add the corn kernels. Stir them into the onions and then add the chicken broth. Bring to a simmer and cook for 10 minutes. Remove the soup from the stove and transfer it to the jar of a blender. Add the jalapeno and the avocado and puree on high until the soup is smooth and creamy. Season to taste with kosher salt. I garnished with slices of avocado and some raw corn kernels and chives plus a drizzle of olive oil.

Instructions

sauté 2 minutes. Add chopped carrots, tomatoes and lemon peel; sauté 1 minute. Add 3 cups stock and bring to boil. Reduce heat, cover partially and simmer until carrots are very tender, about 20 minutes. Cool slightly. Puree soup in batches in blender. Return soup to pot. Mix in lemon juice. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.) Bring soup to simmer, thinning with more stock, if desired.

Melt butter in heavy large pot over medium-high heat. Add onion; sauté 4 minutes. Add ginger and garlic;

Ladle into bowls. Top each with sour cream and grated carrot.

The restaurant When I think of casual fine dining, I think of restaurant Fort Nassau. Their menu has a large variety so that means you can re-visit multiple times and not be stuck with just two options. If I want to witness the sunset while enjoying a delicious meal, this is definitely my go to place.

Views at Fort Nassau Wonderful view Since Fort Nassau is located on a hill, you will have a 360°C view over a great part of the island. It’s amazing to watch the sun go down and see Willemstad slowly turning on its lights. And for the early birds among us, you can have a great morning hike and enjoy the beautiful sight once you finish! I’m off to unwind at Fort Nassau… see you there!
