David Corsen David Corsen, is a young cake designer with a weakness for flowers. Four years ago, he got his first request to bake a themed cake. Now, he’s one of the most popular cake designers on the island. Here he tells us how he got his start in cake designing, about his appreciation for the beauty in flowers, his worst cake disaster and more! Editor: Sendeliz Gibbes | Photography: Nestor G. Zavarce How did you first venture into the world of cake designing? I always had an interest in baking as far back as I can remember. I used to experiment in the kitchen with cupcakes, and give my family and friends to try. I was always encouraged as they kept on telling me how delicious my cupcakes were. So, as a hobby, I kept creating new flavors that were not generic and

not sold on the island. It’s not till my last year at Radulphus College, my graduating class had to raise money for the yearbook, and I signed up for selling cupcakes. My cupcakes were a huge hit and the joy that I felt was amazing, everyone loved my cupcakes. After RC, I went to University of Curaçao to study law/international business. I promoted myself with companies to sell cupcakes

for me to have some extra spending money. It’s not till 4 years ago; I got my first request to bake a Sinterklaas themed cake. This was my first sugar art creation and I realized how natural it came to me and it was LOVE at first CREATION for me. And so I trained and challenged myself, without teachers, classes, to continue to grow in this form of creating art.

What’s the best part of your job? The best part of my job is that I’m doing something that I’m truly in love with. Besides that, when I deliver my cakes, and I get that wow reaction…. well that just puts me on a high! Getting complimented on how delicious and moist my cakes are with my unconventional flavors is what really makes my day. This perfect combination is worth the sleepless nights and all the stress every single time.

Can you tell us about the design process for creating your cakes and what’s your favorite design? Usually I’m approached with the theme and a design already in place. I don’t replicate cakes; I add in my own touch and personalize it for every customer. I always get a clear vision on how the final design should be, and keep on working on it till I am satisfied with the outcome. My favorite cake designs are always designs with different kinds of sugar flowers. I have an extremely high appreciation for the beauty in flowers. This explains my popularity on my sugar flowers realistic look. I have examined many fresh flowers (in Curaçao and in botanical gardens on my travels), how every petal is composed and how every kind of

flower is so unique. The forms of art I continue to master in creating all the many types of sugar flowers are endless. I try to keep myself as innovative as possible and I keep up with all the new cake trends.

We’ve all had a cake fail or two … Can you describe your worst cake disaster? My worst cake disaster was for BVLGARI’s 125th Anniversary event 2 years ago. This was a high profile event with representatives from Italy, and my cake was to be photographed for BVLGARI’s corporate offices, so this on its own already had a high level of stress attached to it. Freeport Jewelers had trusted me to create the design of my choice; with one requirement…the cake needs to be huge! I designed a 15

layer (1.80m) tower cake with a gold and diamond BVLGARI Serpenti watch wrapping around it. Cakes on this scale are transported loose and are stacked on site. Once the cakes are stacked, deco details, (in this case) the oversized Serpenti watch is placed wrapped around the cake on location. While stacking up the tower, the cakes started to collapse into each other, as I miscalculated the total weight of the cakes being supported by the bottom layers. With 3 hrs left for the event, I changed the design of stacking the cakes on location, made adjustments with support systems, and managed to deliver in the end. But those were 3 hrs that I never want to repeat again.

Whose wedding or birthday cake would you love to bake? I love baking and creating any themed cakes that I’m trusted with. Weddings, birthdays, bridal showers, baby showers, anniversaries etc. For my cake designs to be part of any event is an honor on its own. Davidcorsencakes

Aloë Vera Plantation The Plantation The development of the Aloë Vera Plantation started back in December 1999. Today, the plantation covers at least 10 acres! After the aloë plant has finished growing for 2 years, it is ready to be harvested. This is done manually by the workers of the plantation. The harvest consists of collecting 6 to 8 leaves from the bottom of each plant.

The Aloë Vera plant is no stranger to the homes of Curaçao. Many of us have the plant in our garden and use it for beauty and healing purposes. There is one place on Curaçao where you can learn all about it… By: Shari Jourdain
