The Skempi Caribbean Music Awards On December 23, The Skempi Caribbean Music Awards took place at Cinemark Sambil. It was a night to remember. Skempi Caribbean Music Awards is an event to honor artists for their contribution to local music. There was in total nine awards in Caribbean excellence, each with four nominees.

Pharrell Williams views collaborations as a “crash course” in learning new skills. The multi-talented star is not only a successful singer but he’s also an accomplished producer, most recently creating the music for upcoming movie Hidden Figures alongside celebrated composers Hans Zimmer and Benjamin Wallfisch. The trio’s songs for the film have earned them a Golden Globe nomination and it proved to be an eye-opening experience for Pharrell. “Collaborating allows me to channel and learn new ways of working, new ways of thinking, new directions. This is all an education. Life is an education, so every time I collaborate with somebody it’s like a crash course into the way that they work, into this new moment that we are sharing and into uncharted territories.”

Singer Nick Lachey and his wife Vanessa are celebrating a "Christmas Miracle" after welcoming their 3rd child on Christmas Eve. Baby boy Phoenix arrived just in time for Christmas and his proud mum took to Instagram to introduce fans to the latest addition to the couple's family. "It's a very Merry Christmas indeed!" Vanessa captioned a sweet picture of the premature tot's tiny hand wrapped around his mother's fingers. "We had our Christmas Miracle," she continued. "Phoenix Robert Lachey decided to show up early and was born on Christmas Eve. Mommy, Daddy, Camden & Brooklyn LOVE you very much!"

Roast Beef and Horseradish CanapĂŠs Bacon wrapped dates stuffed with blue cheese

Ingredients

1 pound sliced bacon, cut in half 1 pound pitted dates 4 ounces blue cheese

30cm long baguette thinly sliced into 20 slices Olive oil spray 1/2 cup lite sour cream 2 tablespoons horseradish cream Salt and pepper. 130g sliced rare roast beef, cut into thick strips 20 basil leaves and cracked black pepper, to serve

Preparations

Preheat the oven to 375 degrees F (190 degrees C). Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease. Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

Preheat oven to 180°C. Place baguette slices on a baking tray. Spray with olive oil spray. Bake for 5 minutes or until light golden. Meanwhile combine sour cream and horseradish cream in a small bowl. Season with salt and pepper. Set aside. To serve, spread each baguette slice with a little sour cream mixture, and top with a strip of roast beef. Garnish with a basil leaf. Season with cracked black pepper and arrange on a serving platter.

24 wonton wrappers 2 tablespoons olive oil 24 medium shrimp, peeled and deveined 1/2 tablespoons salt 1 teaspoon chili powder 2 limes, juiced Non-Stick Cooking Spray 1/2 c. guacamole 1/2 c. Pico de Gallo 2 tablespoons chives, chopped

Preheat oven to 375 degrees F (190 degrees C). Spray wonton wrappers with non-stick cooking spray. Arrange in 24 mini muffin cups. Bake in preheated oven for 5-7 minutes or until edges are just starting to brown. Remove from oven. While wontons are baking toss the shrimp with 1 Tbsp. olive oil, salt, lime juice and chili powder. Cook in skillet over medium heat, about 5-7 minutes or until they are opaque throughout. Fill each wonton cup with guacamole, then Pico de Gallo and then top with one shrimp. Sprinkle chives on top of shrimp.
