THE DUTCH OVEN March 2013 What’s Cooking in the Newsletter STATE OF THE OVEN Letter from the President –Patti Corcoran Greetings All: As the newly elected President of the LSDOS, I look forward to serving you and the LSDOS to the best of my abilities. I want each of you to feel free to contact me. I am following in the footsteps of some very special people that have given years of devoted service and many hours of unselfish time. When we began in 2007, people like Gale Merriwether, Jim Lewis, Greg Petrey, Mansel Clay, Larry Kendall, Mary Merriwether, Yvonne Newton and many others were there to lead and assist us any way they could. It is my goal to continue the goals these folks had and to bring the LSDOS into a stronger organization. I hope that we can improve communication between officers, board members, advisors, and most importantly to the members. I feel that a speedy response to any communication is of common courtesy, and I will try to return any source of communication as quickly as possible. Through our communications, we can make sure that ideas can be developed, everyone can share their thoughts, and the LSDOS will grow. This is an open minded Board that will listen to members before voting on issues. Only through the members dedication and involvement can we, the Board, know what you would like to happen in the LSDOS. We have very strong and devoted officers. At the Officer Installments each of us promised to LOVE the LSDOS, HONOR the LSDOS By-Laws, and always follow the LSDOS motto of FUN, FOOD, and especially FELLOWSHIP. These

To all LSDOS Members, It has been my honor and pleasure to serve as you President for the past two years plus when I became President, I saw a few things that I wanted to change and with your help we have accomplished that. No. 1 was getting LSDOS involved in supporting the National DOG. No. 2 supporting out of state members more and No. 3 getting our membership more involved in decision making. I feel that we have made great strides in all of these areas. We have also had several new chapter join us, statewide and out of state. November 17th was a beautiful day for our DOG...You couldn't have asked for better weather. There was a total of 38 attending with 6 of those being visitors. We had a nice fire in the stone fireplace and when we weren't cooking, many were enjoying visiting around the fire. Foods prepared today included: Easy Chicken Casserole, Egg Plant Lasagna, venison sausage, Dirty Rice, Carrots My Way, Sweet Potatoes, Corn Casserole, Sweet Potatoes & Onions, Chickadilla Soup, Roast Pig, Rice Dressing, Squash Dressing, Fresh cranberry sauce,Jalapeno Cheese Pimento Bread, Stromboli, Horsecanyon Stew, Garlic Rolls, White Chili, 2 Apple pies, Almond Cake, and Chocolate Cake. Danny Paul and Sally Windham who have visited and cooked many times have joined LSDOS this month. We do not have a DOG in December, since it is so close to Christmas. January 19th DOG was a little nippy this morning at 33 degrees, but the sun was shining and no wind. It wasn't long before some were shedding their jackets. We still had a nice fire in the fireplace. We had 17 cookers and 6 visitors today. There were about 19 pots on the table ..some of the delicious foods were: Spaghetti, Chili & Cornbread, Cheesy Chicken Casserole, Chili Con Carne, Cowboy Stew, Carrots My Way, Chicken thighs w/sweet Baby Ray's

We are proud to have two new members join this month, Bill Rich and Charles Wheeler. We are looking forward to having them cook with us. We started November, 2012 with a visit to the Village Creek Chapter as they hosted the Kountze Syrup Festival. We were warmly greeted by Bo and Jackie Clark (chapter advisor) and Dee and Mel Sims (co-advisor). They followed their tradition of serving chili to the Festival visitors while the syrup was being prepared. We assisted them in making Dutch oven cornbread and peach cobblers. We learned a lot about syrup production and met a lot of good Dutch oven cookers. November 17 we joined the Sam Houston Chapter as they held their Thanksgiving DOG. We camped, cooked, played games, and had a wonderful time. We are truly blessed and so very thankful for the many things GOD has sent our way through the LSDOS. On December 8, we once again met with our Sam Houston Chapter to close out 2012. We had a smaller group for the Christmas DOG, but we relaxed, visited, and had time to remember the wonderful times we shared during the year. January 17, 2013 found Wayne and I traveling to Grapeland, TX for the LSDOS Board Meeting. We had two other families from the Travelers’ that met us there. We enjoyed sharing time with ten other LSDOS Chapters as we all gathered to attend the Meeting. If you have not been able to join any of the scheduled activities, please be sure to check the LSDOS website calendar for events that are planned in your area. It's a new year with new beginnings with the Rio Grande Chapter. We held our first DOG of 2013 on January 12th in McAllen at West Side Park. We had a chili theme and a friendly contest to see who had the best or preferred chili. There were three entrees traditional all meat, chili with beans and rather modern recipe with beans and assorted vegetables. Our esteemed judges went with the all meat no beans entry. All entrees were deemed winners in their on categories and received a new ladle as prizes. In a short business meeting at lunch a new slate of officers were chosen with Mike Key as our new Chapter Advisor, Dennis Burleson as our Treasurer and Randy Ashley as Secretary. The best news of the day we had three new members sign up! Our next DOG will be March 9 in San Benito as we try to spread our activities around the valley to help share the joy of Dutch oven cooking and attract new members. We will be working with the City to help celebrate Texas Independence and conduct demos on Dutch oven cooking. I do not have all the details yet but if you are in the Rio Grande Valley on March 9th then San Benito is the place to be.

Rio Grande Valley Chapter [Continued] I have attached the first place chili recipe for everyone to try. It's not too hot but does have a real nice Chipotle flavor. So until we meet around the fire, keep your pots oiled and don't burn your biscuits! See our recipes below. Mike Key, Chapter Advisor

Pan de Campo Antonio Quintanilla, Jr 8 C unbleached flour 8 t baking powder 4 t salt

Cowboy Chile Rio Grande Valley Chapter

4 t sugar 3 C milk 1 ½ C vegetable oil

3 # ground meat 1 15oz can kidney beans, drained 1 15 oz can baked bean, molasses 1 14.5 oz can tomatoes/chili

Preheat Dutch oven to 375 – 400 degrees. In a bowl add flour, baking powder, salt and sugar. Add vegetable oil to mixture. Add milk one cup at a time, dough should be a little sticky. Dust your surface and begin to knead dough. Form 4 round balls. Roll out with rolling pin on a dusted work surface to 1/2 “ thickness. Place in preheated lightly oiled Dutch oven. Bake 10-15 min and turn for another 5-10 min until brown.

1 large onion, diced ½ C chili powder 6 cloves garlic, minced 1 t cinnamon

In large Dutch oven over medium heat combine meat, onion and garlic until browned. Stir in both beans and tomatoes. Add chili powder and cinnamon, salt and pepper to taste. Cover with water if needed. Bring to a boil, reduce heat And simmer for 30 – 40 minutes, stirring occasionally.

Texas Chipotle Chili Rio Grande Valley Chapter, Serves 8 4 slices bacon 2 onions & 8 cloves garlic, chopped 2 t dried oregano 1 t cayenne pepper

4 # boneless beef chuck, cut in ½ “ cubes 4 canned chipotle peppers in Adobo sauce, seeded and minced

1 15 oz can tomato sauce

4 ¾ C water 1 -12 oz can beer 3 T paprika 2 T cornmeal

Cook bacon in Dutch oven over medium heat until crispy, stirring occasionally. Drain off excess grease leaving enough to coat bottom of pan. Add onions and garlic, cook and stir until onions are tender. Season with oregano, cayenne pepper, paprika, chili powder and cumin. Cook and stir for about 30 seconds to toast the spices. Add beef, water, beer, chipotle peppers, cornmeal and tomato sauce; bring to boil. Reduce heat to low and simmer, uncovered until beef is tender, 2 ½ to 3 hours.

Saltgrass finished 2012 with our traditional Annual Holiday meal with Harris County Bear Creek Park staff. This is our annual se an event that we all enjoy on the first Friday in December. Since we missed last year’s event (due to drought and fire ban) this was especially fun this year. We had nine members who prepared several items to enjoy which included ribs, chicken, fresh bread and a large array of deserts. Carol’s pumpkin spice cake was especially well received. This is a service project and is always a fun event. The weather was great and we had a good turnout of grateful and hungry part staff. January was the start of our new year which was enjoyed with good weather and typically great fellowship; For any that come by on the third Saturday each month, we WELCOME visitors and there is always plenty of food. Our meeting is at Bear Creek Park Shelter #7 with pots on table at 4pm (see LSDOS calendar). Gary and Mary also traveled to Grapeland, TX for the Annual January LSDOS meeting. This was a first for Gary and Mary and we met several new friends.

Our December demo DOG was held at Tractor Supply in Sherman, Texas. The weather was just right for cooking out. We had a drawing for a 12” Dutch oven with the proceeds going to charity. We had 6 people cooking in 10 pots of out of this world dishes. Dave Fox, Mike Churchill, R J Bails of Collin County Cookers helped to make this a successful demo DOG. Sharon Sutherland and Kay and Paul Martin made up the rest of the cooking team. We had a lot of people looking us over and hope to get more awareness of our local Dutch oven cooking chapter in the Sherman area. December 22, 2012 – We had our regular DOG. Had 6 pots on the table from ham ‘n beans with corn bread, pizza, BBQ pork loin, fried potatoes. Eight people showed up, really had a good time. We had a fire all day to keep the chill off. A good time was had by all. January 18, 19,20 – Grapeland, Texas. Great camping, wonderful food and fellowship. Made new friends, playing cards and dominoes. Also enjoyed the cold nights and foggy Sunday morning. We welcome the new president. We all support her in the next two years.

Our monthly DOG was as always a lot of fun with good food and sitting around a big roaring fire, coffee, hot and coals getting ready to fill up them Dutch ovens. We had our normal friends with 3 new members, making it 11 people and 6 pots on the table of savory beef stew, goulash, Mexican corn bread, noodles, apple dumpling dew, fruit cocktail cobbler. Our next DOG will be February 16, 2013. Hope to see you there. April 27, 2013 – we are greatly excited about doing a demo with some of our Dutch oven friends. Words from Wildflower We had our holiday DOG early in December on a nice warm day in Georgetown. It was a small group due to a lot of folks out with illness and family events. Nonetheless, we had a great meal and camaraderie. A friend of Karen's took photos for a project she was working on. Hopefully the photos will inspire people new to dutch oven cooking to join us or at least try a black pot dish. Here's the stuffed holiday turkey:

Wildflower was invited to cook for the Texas Outdoor Women's Network in January at the South Shore of Lake Bastrop. This is the second time we've cooked with this group and it's always a lot of fun. The weather was a little damp and overcast but actually perfect to put the heat to the black pots. As chapter advisors, Dan and I went to our first LSDOS Meeting at Salmon Lake in Grapeland, Texas. It was a beautiful spot and quite a learning experience with the usual display of black pots with new dishes to sample. We encourage all members to join any of these group events for the fun and fellowship. We will be meeting in February at McKinney Falls State Park on the 3rd Saturday of the month and March will be at San Gabriel Park in Georgetown on the 3rd Saturday. Pots on at noon. The Central Arkansas Dutch Oven Group (C.A.D.O.G.)is moving forward on the plans for the 2013 National Dog (2013 N. D.O.G.). Between meetings and phone calls we still have been able to enjoy our DOGS which are the third Saturday of every month. If you would like to join us we do move it around so check with us for location each month. November 17th members Dale and Linda Newell hosted our Thanksgiving D.O.G. WE had beautiful weather and lots of fellowship with 18 pots on the table, we have so much to be thankful for. On January 19th ( C.A.D.O.G.) met with the staff and management of DeGray Lake Resort State Park to coordinate wants, needs and desires to make the N.D.O.G fun and enjoyable for everyone. On that same date Mary Anne and I were at the L.S.D.O.G. meeting in Texas. We had a great time, met lots of folks and learned a new Domino game. Thanks to L.S.D.O.S. for all the help towards the N.D.O.G. in October. February 1st (C.A.D.O.G.) we had a dog for a young couples retreat at Paron Arkansas Baptist Camp, with 7 teams we had 19 pots on the table and fed 40 plus . Feb 2nd some of the group went over to Morrilton AR and helped our neighbors the River Valley Black Pot Cookers Chapter celebrate their one year anniversary. Congrats to Ray and Alta Pruitt for putting that group together. Come join us Friday April 19--20 at DeGray Lake Resort State Park. It is our DRY RUN for the N.D.O.G. River Valley Black Pot Cookers held their January DOG on the first Sunday at the Morrilton VFW. It was a beautiful day. The seven members present, with five guest and 9 pots on the table. Patrick Ricks and Mary Ann of the Central AR group visited and brought Mary Ann's mother and brother. We enjoyed our guest. On January 18th Ray and Alta traveled to Salmon Lake in Grapeland, Texas for the LSDOS yearly business meeting.. On February 1st and 2nd River Valley Black Pot Cookers had their 1st anniversary DOG with Rhonda and Terry Cobb of Ponca City, OK., John and Lyla Bybee from Wichita, KN and Bear Hood from Whitehouse, TX. attending. We had several other visitors including Patrick and Mary Ann Ricks and Erick McCallister and family from the Central AR group. We discussed The AR State Dutch Oven Cookoff June 1st and the two new categories we have added which are the "Wild Hog" category with the AR Game and Fish and hopefully a people’s choice for the Boy Scouts. We also discussed the 2013 NDOG at Lake DeGray with Lynn Edgerton of Petite Jean Meats. We had 26 people present and 20 pots on the table. We have made arrangements with the Corp of Engineers to have 18 campsites with full hookups at Cherokee Park at Lock and Dam No. 9 in Morrilton for our cookoff in June. The campsites are $5 a night if you have a senior pass and $10 a night without and we can have the sites starting on May 28th thru June 3. The Sam Houston Chapter has been very active in 2012, and we have many events planned for 2013. Hope you will make your plans to join us for FUN, FOOD and FELLOWSHIP. The November DOG at the Willis American Legion was attended on November 17 by 43 members. We had ten campers and more members joined us on Saturday. Since this was our Thanksgiving DOG, holiday dishes were prepared for the festive event. We had three turkeys fixed in a trash can, a Dutch oven, and smoked on a pit. There were three different styles of dressing/stuffing, and many traditional holiday sides. Thirty dishes, in all, were on the table at 1:00pm, so no one went hungry!!! Our December DOG had to be scheduled earlier in the month because of Christmas. This date, as all weekends in December, were filled with many conflicting family events and traditions, but we had five campers that arrived on Friday. There were thirteen members that celebrated together on Saturday with great food and cherished friends. Sam Houston members voted that the LSDOS Board Meeting in January 2013 at Salmon Lake in Grapeland would be our monthly DOG. We were well represented with eight campers gathering at Salmon Lake on Thursday and Friday, and one family joined us on Saturday. There was plenty of food, friendship and fun that we hated to see end on Sunday. The LSDOS Membership Meeting will be held at Tyler State Park in the Black Jack Area on June 22, 2013. We look forward to seeing you there!!! Please call for reservations so that you will be sure to have a spot. Tell the park that you need reservations at the Black Jack Area. There are no tent campers allowed in this area, but there is tent camping elsewhere in the park. The park also has nice screen shelters. Looking forward to seeing everyone there.

Sweet and sour pork Total Time: 1 hour, 20 minutes Ingredients: 1 1/2 pounds boneless pork loin, sliced 1/2-inch thick 1 tablespoons vegetable oil 1 can (20 ounces) pineapple chunks in juice 1/2 cup maraschino cherries with juice 3/4 cup water 1/4 cup vinegar 1 tablespoon soy sauce 1-1/2 tablespoons of plum sauce 1/4 cup brown sugar 1/2 teaspoon salt 2 tablespoons cornstarch 2 tablespoons water 1/2 cup thinly sliced onion 1 green pepper, cut in thin strips 2 cups hot cooked rice Preparation:  Cut pork slices into 1 inch cubes .Sauté pork in hot oil over medium heat until lightly browned & drain.  Drain pineapple & cherries; reserve juice. Combine pineapple & cherry juice, 3/4 cup water, vinegar, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 1 hour, or until meat is tender.

Heart of Texas Chapter [Continued] ďƒź ďƒź In a cup, combine cornstarch and 2 tablespoons water; stir until smooth. Add cornstarch mixture to pork mixture. Cook over low heat, stirring constantly, until mixture is thickened and bubbly. Add pineapple chunks, onion and red & green pepper. Cover and simmer sweet and sour pork for 10 minutes longer, or until vegetables are tender. Serve sweet and sour pork over rice. Sweet and sour pork recipe serves 4 to 6. (We tripled our recipe) Cast Iron Rust Removal Using Electrolysis http://www.wag-society.org/Electrolysis/rust_redct_elect_setup.php This is a great site on the Internet for cleaning anything made of cast iron using your battery charger. This waffle iron we did and it came out very well using a 50amp battery charger.

ZUCCHINI LOAF (BREAD) 12 Inch DO

Rack Bundt Pan 325 for 45-60 min

DRY 3 c flour 1 tsp salt 1 tsp baking powder 1 tsp baking soda 3 tsp cinnamon

WET 1 c oil or (1/2 oil & 1/2 applesauce) 3 eggs 2 1/4 c sugar or ( 2 c) 3 tsp vanilla or (2 tsp Mexico vanilla)

2 c grated zucchini (3 c) 1 c chopped nuts ( walnuts OR 1/2 c almonds & 1/2 c pecans) In one bowl mix together DRY ingredients Set Aside. In one bowl cream together WET ingredients. Mix dry into wet ingredients in 3 batches. Stir in zucchini and nuts. Pour into a greased bundt pan. Place in 12 in preheated DO with rack in bottom. 7 briquettes on bottom & 1 ring on top. Rotate pan & lid every 15 minutes till done. 45 - 60 minutes. COOL 20 minutes - flip to platter.

The Second Annual "Coosie’s Birthday Bash" was held at Melton Hill Dam campground on Nov. 10, 2012. Everyone had a great time with members of the TN Tearjerkers Assoc. joining us for the festivities. We had a fantastic holiday meal with turkey roasted in a Lodge 16" deep and all the trimmings. Wade Stevenson cooked with his homemade rocket stove. The Little House Cookers Chapter started of 2013 with our Annual Mid-Winter DOG on January 5th in Rochester, MN at the BSA Gamehaven Council Boy Scout Camp. Setting up we had a balmy 14 degree morning with a wind chill of 3 degrees. By the time the food was ready to eat at about 2:00 PM the temperature was up to about 27 degrees. During the morning we snacked on appetizers of Fruit Pizza, Brie Cheese, Extreme Pepperoni Dip and chips, and Taco Oyster Crackers. For the main meal we dined on Vegetable Beef Soup, Lasagna, Polish Casserole, Rosemary Rolls, Bacon Wrapped Asparagus, French Onion Casserole, Oriental Pho Soup, Marinated Chicken Legs with Rice, and Chocolate Cake. The Prairie Dogs had a great time January 12 for our fifth year in a row at the Log Cabin Village in Fort Worth. This year we had six cook stations set up with 19 Prairie Dogs cooking in 21 black pots. The staff at Log Cabin Village were thrilled that over 70 visitors came out despite the weather forecast for rain and cold temperatures. We were fortunate that the temperature stayed at mid 60's throughout the demo and didn't drop to mid 40's until we were packing up to go home. We welcomed several new folks: brothers Steven and Craig Sick, Stacy Sick (Steven’s wife), and their parents David and Deborah as well as John McNama and Jay Clark.

Many visitors appreciated the information shared during the demonstrations. Greg Sheehan presented information on temperature control, Jay Clark shared the history of the Dutch oven, Larry Swinea demonstrated the tools and equipment for outdoor cooking, and Steve Lovett explained how to care for cast iron. Greg explains temperature control. The Prairie Dogs had a great time February 9th at Cedar Hill State Park despite a very pesky wind and a huge bicycle race. At lunch, there were 25 pots on the table and we had 38 hungry folks to eat all that great food! Paul L. Martin and Katy, from the Sherman Dutch Oven Cookers, cooked up some great chow and invited us to join them up near the Red River in April. Several new folks joined the group including Russ Singleton and his family. Dennis and Robin Clute set up their outdoor kitchen with us for the first time and had fun successfully putting two pots on the table for lunch. Jay Clark won a lid lifter and Dennis Welpe won a lid stand in the raffle. We were delighted to have Bruce Bonnet join us to share his wisdom and love of Dutch ovens – we look forward seeing him again next month. The Prairie Dogs have a vibrant conversation on Facebook with a growing group of 78 members. We share photographs of our Dutch oven creations, answer questions, and encourage one another. Join us! We will meet at Cedar Hill State Park on the second Saturday of March, April, and May, then we will take a break for summer and return in September for more food, fun, and fellowship! The Brazos Valley Chapter of the Lone Star Dutch Oven Society met in the parking lot of Hillcrest Baptist Church on Saturday, February 16 for their February DOG. New member, Ronnie Allen prepared a meatloaf topped with bacon and a pineapple glaze that was fantastic. He also prepared a lattice top peach cobbler from his mother’s recipe. When our usual meeting place had a scheduling snafu and we moved to the church parking lot, Ronnie saved the day by running home to grab tables and a canopy to set up the cooking and eating area. Due to the chill in the wind, everyone chose to sit in the sun just outside the canopy for warmth. His wife Annette came to join us for the meal. Shervonne Smithey prepared a Cheeseburger casserole. Her husband David also brought a table to help with setting up. Bill Chance made a pork tenderloin with a raspberry chipotle glaze, Italian herbed bread with real butter and an Italian vegetable dish with layers of zucchini and yellow squash topped with slices of tomato and mozzarella cheese. Even the people who hate vegetables enjoyed this dish. Kathy Maurer also attended. Some church members stopped by to visit and sample, including Billy Trimnal, Jess Trimnal and Marilyn Brown. Members discussed ways to grow the group and want to do a large demo somewhere that will have a lot of people, especially those who enjoy outdoor activities. We plan to coordinate with other chapters to see if a date can be found that will enable them to help us with a large turnout to draw interest. Once it is set, we want to notify the local newspaper and suggest an article for the Wednesday food section. The next meeting is scheduled at the Brazos Valley Museum of Natural History Pavilion (behind Target on Earl Rudder Freeway) on Saturday, March 16. Hope to see y’all there! We’ve had so much gathering over the past few months. I had the pleasure of flying to National Dutch Oven Gathering, Canton TX with Chuck Frost from Winchester, Illinois. We had so much fun cooking together in the Breakfast and Dessert Competitions. Chuck and his kitchen partner, took 6th place in 3pot competition. Lesley Tennessen and Omar Alvarex, took 3rd place. Quite the surprise for both teams! We met so many great friends and are looking forward to 2013 National DOG in Arkansas. The Blackhawk chapter gathered for a Holly DOG in December at the Tirk home in Woodstock, IL. We had several new cooks join us that day. That’s what we are talking about…bringing the work of the Black Pot to the masses. We had meatloaf, breads, peppermint angel food cake. Cheesy, potato chowder. Chicken with a balsamic honey gravy. Good chili! And enough cold weather to keep us moving. January 1st, New Year’s Day is a traditional gathering at Lesley’s home. We had 2 pots of collard greens/ham/beans, a duck chili, pheasant over wild and brown rice, sourdough biscuits, asparagus crescent rollups, beefy tortilla rolls. Our weather started at about 9 deg above zero, not too much wind chills and a little snow flurry. Hearts R Healthy is another one of our traditional gatherings. We celebrate Heart Month or February as making our dishes just a little bit healthier! We had some grilled turkey rollup made with honey oat tortilla, cheese, turkey, cranberry sauce. Jambalaya. Falafel in pita bread with a creamy yogurt dill sauce, spring greens, fresh cut tomatoes and cucumbers. Gumbo. Roasted potatoes and onions. Chicken piccata. Chocolate Red Wine cake served with strawberries. Okay..chocolate and red wine are good for you, right? Weather was 2 degrees at sunrise, but quickly rose to 20 for cooking. By the time the pots were ready, it was a balmy 30 with beautiful sunshine. Great cooking weather! Our next gathering is on March 17..Go Green is our theme! Keeping the coals hot!, Lesley Tennessen

We are planning to cook at the Allen Texas Earth fest again this year, as well as an event in between Sherman and Denison on April 27th at their pioneer village with the Sherman group. I attended the board meeting at Salmon lake. Very cool place. Thanks for the stress free change of officers. Sorry I couldn’t stay there longer and cook with everyone. Three of us went up and cooked at a demo at Tractor Supply with the Sherman group. It was lots of fun. We were able to get some Camp Chef stuff for the LSDOS booth at the 10th annual National DOG. Gloves, Texas 12” DO, Texas skillet, C.I. conditioner, and a lid lifter. This should make for some good renewals and new memberships with LSDOS. I keep meaning to add some recipes and pictures to our reports, but I am too busy to take any pictures until it is too late!! 2 c flour . ½ tsp. salt 4 tsp. baking powder 4 Tbsp. butter or shortening 2/3 cup buttermilk Mix together flour, salt, and baking soda. Cut in the butter with a fork. Slowlyadd the buttermilk. Turn out onto a floured board and roll out ½ “ to 1” thick. Cut biscuits. Bake with 2/3 coals on top and 1/3 on bottom in a 400 degree oven for 14 to 18 minutes.

LSDOS Winter Board of Director’s Meeting January 19, 2013 Salmon Lake Resort Greg Petrey and Shervonne Smithey certified proxies as follows: Ronda Barnow, Amber Waves, to Rhonda Cobb Bill Ryan, Bayou Pots, to Rhonda Cobb Lyla Bybee, Southern Kansas Dutch Oven Wranglers, to Rhonda Cobb John Frerichs, Little House, to Rhonda Cobb David Jones and Bo Clark had not yet renewed their memberships as of 1/19/2013, so their proxies were not counted. The meeting was called to order at 3:04 p.m. by President Mansel Clay. Ye began with a welcome and asked that anyone from out of state chapters, please stand and be recognized. From the beginning of his presidency, Mansel wanted to recognize and promote the out of state chapters and recruited his 1st Vice President from Oklahoma. Rhonda Cobb asked that everyone sign in on the two sheets being passed around: one for board members and one for members in attendance. Minutes: Shervonne Smithey presented the minutes from the 2012 Board of Director’s meeting held in January 2012. It was noted that it had been suggested at a previous meeting that minutes of both Winter and Summer meetings be presented at future meetings. They had both been presented for printing, but the Summer minutes had inadvertently been missed. Dan Poggemiller made a motion to accept the minutes as presented. Patti Corcoran seconded. Motion passed unanimously. Reports: Trustee Reports: Greg Petrey noted that the General Membership and Board had approved a $500 cash donation to the 2012 National DOG and $500 in merchandise for the booth. It was a very prosperous booth. We gained 40 new members, a plethora of renewals and over $700 in sales. Patti and the others need to be applauded for their efforts and success. We are up 132% in memberships for this point in the year, largely due to early renewals. There is also an increase in royalties on cookbooks which had previously plummeted. We went slightly over budget for postage due to postage increases. Greg strongly recommends that we go to producing the newsletter electronically only. Someone asked about international postage for those members. Greg noted that we have one member in Australia and one in Canada. We are up 112% in income with $3200 in net income and have used 70% of the budgeted amount on expenses. Membership Guidelines: Dave Fox would like more discussion on the findings of the committee who looked at membership guidelines and how to help struggling chapters as well as have more representative voting. He doesn’t think that anything has really been done about the ten recommendations made at the Summer General Membership Meeting. (The recommendations were listed in the minutes.) The first few are just general points but the 5th and 6th need to be discussed. Rhonda reminded us that at the Summer meeting, Lyla had expressed concerns about the future of her chapter. Shervonne noted that she had heard from an advisor in Louisiana with similar concerns. They are trying hard but no one joins and we could lose them. Discussion from members included past issues when a vote was coming up and someone would gather proxies from all of the small chapters to carry the vote. Some chapters are headed by lifetime memberships who are inactive and non-dues-paying. Another concern is for potential negative consequences of making changes. One of the recommendations that was discussed was the possibility of putting chapters with less than three members under the oversight of a stronger chapter during the time it takes to grow the smaller chapter. This would allow them to have the greater enjoyment of gathering with more people. Discussion included whether that chapter advisor would still have a full vote or if all of the combined members would be represented by the larger chapter’s advisor. Some felt that it may not be fair for a chapter with one member to have an equal vote with a chapter that represents many people. No one wants to do anything to offend anyone or hurt a chapter but it is difficult to know what can be done to help support smaller chapters. Patti mentioned that many of the people in the room would be willing to go visit another chapter to help them with their local DOG’s or demos if they are contacted. Shervonne confirmed that the Salt Grass Chapter and Sam Houston chapters had both helped her chapter with events in the past, including a joint event hosted by the Brazos Valley and Tejas chapters in a central location. Dave Fox made a motion to modify policy to require 3 members to start a chapter and that a group must have three meetings before becoming a chapter. This is the way the policy had been in the past before a change that made the language vaguer. Leslie Lovett seconded the motion. Motion passed by unanimous vote.

LSDOS Winter Board of Director’s Meeting (continued) A member asked Greg what happens when a chapter has no members and no advisors. Greg said that a chapter in that situation would be eliminated. If there are still members but no advisor, the chapter would continue to exist. Dan made a motion to amend the bylaws to state that the Board of Directors is made up of elected officers and the Chapter Advisors from each chapter that has at least three active members. Leslie seconded the motion. The motion passed by unanimous vote. Since this is a change to bylaws, it will be presented to the General Membership for a vote in June. New Chapters: Mary Merriwether noted that all the new chapters are now active and there are no new pending chapters. Membership: There are 147 paid memberships including ten lifetime memberships. Some members renew later or throughout the year. Mary will send out a a list of current and a list of last year’s members to each chapter advisor so they can contact anyone who hasn’t renewed to encourage them to renew soon. Dave Fox had a question about LSDOS booths at National DOG’s. He noticed there was one in Louisiana and in Texas and thinks there should be one at all DOG’s. Someone noted that the one in Louisiana in 2011 was the first one. He noted that the society benefited from new memberships and thinks the booth should be available at all events beyond regular meetings. Discussion included the need for adequate LSDOS members at the event willing to work the booth. Some people spent a huge amount of their time at the booth and not getting to participate in other activities at the DOG’s. In addition, someone has to acquire merchandise and possible giveaways, including shipping, inventory, etc. This is something that should be discussed further, possibly during New Business. Website: Greg said the website averages over 40 thousand hits per month which is down 6% this year. One thing affecting the numbers is that as a website is improved, it takes less recordable “hits”. Bandwidth is actually a more accurate measure of usage. Our site averaged slightly less than one gigabyte of usage each month. We can compare to this measure each year. In 2012, we had 36,475 people (computers) visit the website for the first time and the average time spent on the site is just over two minutes. Recommendations for the future include investigating “404” errors on website; a complete redesign of the website; identify a :Content Management System” that will enable Chapter Advisors to maintain their chapter sites, if desired; encourage advisors to give updated info to Greg for inclusion on the site; maintenance of site including pursuit of hackers and spammers; and research the best method to post and maintain the newsletter. Lesley asked about a more robust “members only” section on the website for information available to members, which also provides another benefit to becoming members and encouraging new memberships. Some ideas mentioned included exclusive recipes and contact lists. There was discussion regarding the potential savings by going to an electronic-only newsletter. We spend approximately $600 per year for postage. There are about 120 being printed and mailed at almost $2 each, not counting printing costs. According to the bylaws, the ballot must be sent in the fall newsletter by mail, but that is only every other year. The printer folds them, but Mary has to put seals on the open edges or the post office won’t accept them. Someone mentioned that the people who serve are volunteers and spend hours and hours producing the newsletter, taking it to the printer, picking it up, sealing it and delivering it to the post office. Someone asked about finding a secure on-line voting tool so we could change the bylaws to allow on-line voting. It could still be set to allow one ballot per family membership. Newsletter: Mary reminded us that the newsletter belongs to us and that she can only put things in the newsletter if we send them to her. Please send pictures and write-ups about your activities and include recipes. Be reasonable about how long your articles are, though, please. Dave Fox made a motion to go with an all-electronic newsletter for everyone except for those who do not have electronic means, effective with 2014 memberships. Leslie seconded the motion. Motion was approved by unanimous vote. Leslie wanted to thank folks for the emotional, financial and physical help. There were more than 200 registered participants and they made approximately 550 name tags. She couldn’t have done it without the help she received.

LSDOS Winter Board of Director’s Meeting (continued) 2013 National DOG: Patrick Ricks said they had met many times with the state park people and they were meeting again today. It will be a little different from Texas but the park is pulling out all stops to help us have a great event. They are even installing sidewalks to make it easier to get from one area to another and moving giant boulders lining the roads to increase parking space. He said to make our reservations soon and be sure to say we are with the National DOG because the entire park is being held for our reservations until September, when they will open the reservations to non-DOG users. They can provide overflow sites, as well. He closed by informing the group that people in Arkansas are no longer called “Hillbillies” but are now known as “Ozark-Americans”. Old Business General Membership Meeting Site: Steve and Leslie Lovett proposed two potential locations for the meeting: Burns Run West at Lake Texoma or BlackJack Loop at Tyler State Park. There were six votes for Burns Run West and 8 votes for Tyler State Park with 4 abstaining. Joe Huber called Tyler SP and confirmed that it is available for June 22, 23 and 24th so that is where the General Membership Meeting will be held. The park only allows RV’s in the Blackjack loop but they also have screened shelters, cabins and tent camping close by. There are new shower buildings available, as well. New Business Board Insurance: Greg received the annual renewal quote for the board insurance and there is a 30% increase. Since there is no time to explore alternatives, he went ahead and included the amount in the budget but we need to explore other options before next year. He would like to hear from anyone in LSDOS who is an insurance agent to explore options. We need to evaluate the coverage and whether it is meeting our potential needs. If we renew, we need to do an in-depth study before next year. It is due on Monday. Patti said there’s not much we can do in a couple of days. It has cost us $900 per year each of the past three years, but this year will cost $1135. We have never filed a claim. Vote passed with 17 votes. Greg abstained due to his involvement in the process. 2013 Budget: Greg expects an increase in revenue due to an increase in membership anticipated and in cookbook royalties. He expects a continued decrease in chapter sales of merchandise. He predicts a $250 increase in income, estimating $9800. There is an adjustment in expenses. There should be a one to two cent postal increase announced soon and we expect to sell less cookbooks and print fewer newsletters. There is also a $1000 filing fee for the 401c3 non-profit application listed as miscellaneous. The process is still making slow progress. Patti made a motion to accept the budget as presented. Rhonda seconded. Motion passed with 17 votes. Greg abstained due to his role in the budget process. Lifetime Memberships for Past Presidents: Mary noted that in 2009, a policy was approved to give free lifetime memberships to past presidents after their terms are ended. This includes a free newsletter. Currently only one of the ten past presidents is active. Discussion included the postage costs for mailing newsletters but remembering that we are about to go to all electronic anyway. Mary noted that we would not be changing the lifetime memberships for existing past presidents, only for future ones. Mansel said that he didn’t see any reason for him to get a free membership and that only $20 per year per family it really isn’t that much. Rhonda said she also didn’t feel that she should get something for serving. Dave said he’d rather see us give an appreciate plaque or something. Dan Poggemiller made a motion to end lifetime memberships for former presidents in the future and substitute an appropriate recognition for all outgoing officers. Patty seconded the motion. Motion passed unanimously. Camp Chef Sponsorship of LSDOS Booth at 2013 National DOG: Camp Chef wants to support the 2013 National DOG with merchandise and also provide something for the LSDOS booth. Last year they provided the Texas Dutch Oven that was given in the drawing for those who joined at the booth. We discussed what we would like to give this year. When you are traveling, you can check to see if anyone is having an event in the area. Rhonda Cobb thanked Mansel for a great 2 years. Mansel told her thanks for sticking with me! Oath of Office Mansel issued the Oath of Office to Patti Corcoran as the new President for LSDOS. Patti then issued the Oath of Office to the remaining board members who were re-elected: 1st Vice President, Rhonda Cobb; 2nd Vice President, Mary Merriwether; Trustee and Webmaster, Greg Petrey and Secretary, Shervonne Smithey. Robert asked if we needed to bring up as new business whether the ballots being sent in newsletters needed to be voted on to amend the bylaws and whether we need to vote about electronic voting so it can go to the General Membership. Greg made a motion to propose a bylaw change to allow the Board of Directors to be elected by acclamation if there are no contested races and if there are contested races, then we would vote electronically. PRAYER CORNER Ronnie Brown--after long back surgery, now faces long hours of rehab to set, use legs, and get back to everyday living. Also add Cyndie and his family as they work with him and the medical staff to help speed his recovery. Randy Hebert—is doing well after is surgery in October. He is getting around and back to doing some cooking. Keep the them in your prayers as he continues his recovery. Friends, I just wanted to let you know our dear cooking buddy, Eddy Shannon, has gone to be with the Lord. He departed 9:00am Sunday, February 10th from his home with sweet Julia by his side. Please keep her and the family in your prayers. There will be a memorial service to be held at a later date. .
